At the same time, there are enough contemporary touches to keep the watch rooted firmly in the present, including the use of copper throughout the design. An unusual choice of metal for any watchmaker, the colour contrasts beautifully with the glossy ceramic black dial and bezel, and particularly well with the cognac-coloured calfskin leather strap. Complex calligraphy patterns, exquisite Arabesque designs and significant symbols of faith paint a beautiful picture of the diverse world of Islamic art

Majid Al Yousef thoughtfully contemplates his next stroke before the pen glides down the piece of paper one final time to complete his masterpiece. He carefully takes one last look and as he studies his own work of art, he says: “To me, calligraphy has always been a form of meditation and exploration. Back in the day, it was the only medium for preserving sacred texts and communication and so it was nurtured and developed through the centuries. Today, the art form holds immense value. It possesses this mystical quality that makes it so compelling and appealing.” Unlike in Western civilisation, where paintings and sculptures are often considered the two most important art forms, Islamic art has always followed a different form of hierarchy. The most revered of them all is written art, as this can be attributed to its use in the pages of the Qur’an as well as other important religious texts. During its prime in the Middle Ages, calligraphers were hailed as the most important artists and rewarded handsomely for their craft, which included everything from penning fine manuscripts to creating artistic inscriptions that would adorn the walls of mosques. Ibraheem Khamayseh, a local calligraphy artist, tells us: “In the days of the Ottoman Empire, Arabic calligraphy enjoyed a golden era and the art form could be found everywhere you looked. You could see it gracing mosques, libraries and cultural clubs. Also, as one of the main forms of self-expression, the style played a significant role in Arabic poetry. In fact, poems that were beautifully presented using calligraphy had more weight, were more appealing and easier for the common people to connect with than those simply written.” But Khamayseh believes that the art is currently enjoying a revival with Middle East nations like the UAE and the Kingdom of Saudi Arabia reinforcing calligraphy as part of the local culture. This treasured form can today be found masterfully inscribed on coins, paintings, sacred sites, architectural monuments and artistic works that have been preserved for centuries. “Sometimes, all you have to do is walk down the street and you’ll find a calligraphic piece of art or something inspired by it,” he says.

buildings and five-star resorts, almost every architectural marvel across the nation pays tribute to Arabic design in some form. Khamayseh adds: “Figurative paintings depicting religious themes, poetry books, the covers of Qur’ans, glass lamps as well as mosque fittings such as tiles and woodwork all have a special place in local culture.” Among other significant Islamic symbols, the star is a common motif in the Middle East. It is one of many shapes that recur in various works by Muslim artists, featuring prominently in art and architecture. The eight-point star, known to Muslims as the khatem, encapsulates many of the underlying principles that form the Islamic understanding of the universe. The symmetrical design represents the order and harmony of creation. Examples can be found on the walls, f loors and ceilings of buildings, etched into traditional ornaments, intertwined through carpet designs and celebrated in paintings. As such, the star reappears often, woven into the very fabric of the country, visible everywhere once you start to look for it. Alongside the khatem are various other motifs that recur in Islamic designs. The pentagon, octagon and circle crop up time and time again, piled into complex patterns that pay tribute to the infinite nature of Allah. Traditionally, the representation of Allah in figurative form, depictions of Prophet Mohammed and his family and the portrayal of all living beings is frowned upon as per Islamic teachings. Because of this, animals and people feature a lot less prominently in comparison to Western art. Instead, Islamic artists have focused on celebrating the gracious nature of Allah and his creations

through Arabesque shapes and geometric patterns. Many works combine the two styles to create beautiful and complex designs that are very distinctive to Islamic art and hence instantly recognisable. Patterns like these are acceptable because they honour, rather than imitate, the almighty and show no attempt at direct representation. This does not, however, extend to the portrayal of plant life. In fact, f loral forms are widely represented in Islamic art. Arabesque, a style widely associated with the art of the Islamic world, is characterised by f lowing depictions of leafy plants and f lowers. One of the most beautiful modern-day examples is the Sheikh Zayed Grand Mosque in Abu Dhabi, where the outstanding décor is characterised by f lamboyant f lowers covering the vast central courtyard and columns surrounding it. The theme is continued inside the building on the walls of the prayer halls and in the beautiful stained-glass doors and windows. The mosque is also home to the world’s largest hand-knotted carpet featuring an intricate Islamic medallion design. On April 27, the NSO Symphony Orchestra took to the stage at Emirates Palace Auditorium in Abu Dhabi to bow out in style with a musical spectacle to remember. The ensemble’s annual concert titled A Night at the Movies… The Final Curtain was to be its closing performance, after which, the orchestra would depart from the public eye. Although much to the delight of the UAE’s classical music fans, the troupe later withdrew its decision to disband and will continue to captivate audiences across the country with special events and private performances. Led by conductor and musical director Andrew Berryman, the NSO Symphony Orchestra delivered one of their best performances yet on what was to be finale night. The programme for the evening was designed to take the audiences on a journey through some of the most popular cinematic scores of all time, from the Star Wars title theme to the soundtrack of Pirates of the Caribbean. The evening saw the UAE’s finest maestros perform French composer Jacques Offenbach’s toe-tapping cancan from Moulin Rouge, the soulful Ladies in Lavender theme, German composer Carl Orff’s epic O Fortuna from Carmina Burana, Russian

composer Tchaikovsky’s 1812 Overture and the famous Die Fledermaus Overture by Viennese composer Johann Strauss featured in Tom and Jerry in the Hollywood Bowl. The power-packed performance was not only met with thunderous applause from the audience but also with an outpouring of support from dedicated patrons. Keen to ride this wave of success, the NSO Symphony Orchestra’s founder and executive director Janet Hassouneh decided to call off the wrap-up plans. Hassouneh says: “For the past seven years, we have endeavoured to present rich orchestral concerts with exciting and challenging music programmes that have delighted music lovers in the UAE, all organised with a small team of part-time supporters. Obviously, this level of organisation requires an enormous amount of hard work, dedication and goodwill, which we could no longer sustain. However, as our musicians would like to continue playing together, I will devote my time to running the NSO Music Agency, where I can advise clients on the perfect combination of musicians, with a suitable programme of music for any setting. We will also look into staging gala concerts, if logistics permit.”

The UAE is a country with proud ties to its national heritage. Reminders of tradition are everywhere, from architecture inspired by the courtyards and majlis of old to modern markets that nod to authentic souk experiences. Perhaps it’s partly because the region has evolved and grown so rapidly – from Bedouin settlement to global metropolis in a matter of just a few decades – but the past seems ever present, and keenly preserved. A modern love of traditional Emirati sports and pastimes, such as camel racing and falconry, is an integral part of the national identity. So much so that these animals have become symbolic of the region itself. Last year, one of the key events during the 46th National Day celebrations was the National Day Camel Marathon, which saw camels race across a testing distance of 25 kilometres. The annual event, which was overseen by the Hamdan Bin Mohammed Heritage Centre, an organisation dedicated to safeguarding the cultural heritage of the UAE and the Dubai Camel Racing Club, attracted more than 100 competitors. Camel racing is a decades’ old sport but it has changed significantly in recent years. Previously, children played the role of jockeys, thanks to their light weight. But nowadays, for their safety, they have been replaced by robot jockeys operated by competitors who drive alongside the racing camels, usually in an SUV, shouting and honking their horns to spur them on to even greater speed. It’s a high-stakes race, and the winners can claim a purse worth tens of thousands of dirhams. Despite these advances to the sport, one thing that hasn’t changed, however, is how cherished these

‘ships of the desert’ are. There is even a story in the Qur’an about the camel being a gift from the creator. When Bedouin tribes first roamed the UAE desert, they were largely dependent on camels for their survival. The animals provided transport across the unforgiving dunes and the tribes consumed their meat and their milk and used their wool to make clothes and tents. Today, no desert safari experience would be complete without a camel trek across the dunes, giving visitors and residents alike a small taste of this bygone practice. Falconry is another contemporary Middle Eastern activity that has its roots deep in the past. Like camels, falcons were essential to the survival of the region’s Bedouin tribes, mainly as they were used for hunting food. These days, falconers still take great pride in their ability to work with these wild birds, and many UAE adventure tours incorporate falconry into their activities. the desert dunes. Over the last decade, the Dubai World Cup has established itself as one of the premium horse racing events in the region, and one of the richest in the world. Recently, Dubai Ruler Sheikh Mohammed bin Rashid Al Maktoum stated that the total purse prize for the annual event would be increased to US$35 million (around AED128 million). While many of the Bedouin traditions have their origins in the desert, there are inextricable links between the UAE’s history and the sea. Dhow sailing and dhow racing are two national sports inspired by the region’s maritime heritage: they nod to the rich history of fishing, pearl diving and trading. Sailing these traditional boats is a skill passed down through generations. The Abu Dhabi Sailing and Yacht Club hosts regular dhow races throughout the year, and there’s nothing quite like the sight of the billowing white sails on the blue water, set against the backdrop of the city’s skyscrapers. How two high-flying brothers with a shared love of aviation are on a mission to revitalise the British horology industry and bring luxury watchmaking back to its roots

Ever wondered why we set our watches in relation to London’s Greenwich Mean Time? Surely Geneva Mean Time would make more sense, given Switzerland’s famed watchmaking industry. And yet, during the 17th century, Britain was a leader in the watchmaking world, pioneering some of the most important innovations in horology, such as the first marine chronograph. Created by Yorkshire-born John Harrison, the watch enabled sailors to navigate at sea. It was even used by the famous explorer Captain Cook. In 1800, around half of the world’s watches were produced on British shores. While that statistic has shifted somewhat significantly since then, a handful of watchmakers are hoping to put Great Britain back on the watchmaking map. Leading the charge is Bremont, the British luxury watch brand founded by brothers Nicholas and Giles English. Inspired by their late father Euan English and his lifelong love of mechanical engineering and aviation, the brothers, both pilots, set up Bremont in 2002. They then spent five years in Biel-Bienne studying the art of Swiss watchmaking before releasing Bremont’s first models in 2007. Despite these Swiss origins and the fact that the name comes, somewhat ironically, from France – after Antoine Bremont, a local farmer who helped the brothers following an emergency landing in

one of his fields – the brand’s British identity is at the core of its values. “Our goal as a brand is to reinvigorate Britain’s watchmaking industry, and we have invested heavily in machinery as well as training watchmakers to help us achieve this goal,” Giles notes. “The fact that we manufacture our watch cases and watch parts in volume in the UK is something that resonates internationally. “Every Bremont watch is made with the highest level of craftsmanship. All watches leave our workshop with a guaranteed accuracy of -4 to +6 seconds per day, which when you consider that there are 86,400 seconds in a day, is a remarkable feat of micro-engineering.” The family’s strong ties to the aviation world are woven into the very fabric of the brand’s DNA; Bremont watches are known for being put through their paces by the best military pilots in the world, and almost a quarter of the business is dedicated to making bespoke squadron watches worldwide. One of Bremont’s most specially designed, limited edition timepieces is the Wright Flyer. Created in collaboration with Amanda Wright-Lane, great-grandniece of Wilbur and Orville Wright (the brothers responsible for pioneering aviation as we know it today), the watch is named after the historic plane they flew and incorporates a piece of muslin material taken from the lower left wing of the original aircraft.

“Previously, the recovered materials had only been given to presidents or the likes of Neil Armstrong when he went to the moon,” marvels Giles. “We modelled the design of the watch on Orville Wright’s pocket watch and the priceless material is sealed inside, in a capsule in the rotor.” The funds raised through sales of the watch were used to restore the Wright family home. Like the Wright Flyer, many of the brand’s timepieces are inspired by a spirit of adventure. Despite their obvious luxury appeal, watches are created with the express intention of being able to withstand the most challenging conditions on earth. Hence the brand’s tagline ‘Tested Beyond Endurance’. “When we started, we had a very clear view of what we wanted to achieve – beautiful and classic-styled watches that looked great in the boardroom but were also robust enough to be used in any situation.” One of the most famous examples of this is the Limited Edition Bremont Endurance, which was created with Bremont ambassador Ben Saunders, a record-breaking polar explorer. The watch was tested during his attempt at the first solo, unsupported crossing of Antarctica, a 1,800-mile journey under punishing conditions. With its bright orange strap, light titanium case and the rotating, bi-directional compass bezel coated in Super-LumiNova®, the watch helped Saunders navigate the terrain even when visibility was at its lowest. timepiece for an expedition to the South Pole, which he undertook with the charity Walking With The Wounded. Meanwhile, Hollywood star Tom Cruise, a qualified pilot, and something of a daredevil himself, is known to favour the ALT1-C, which was the very first watch that Bremont produced back in 2007 (although the brand added two new models to the range earlier this year). Raising the steaks ——— Legendary butcher and chef Cüneyt Asan chats to Concierge about his Dubai restaurant Günaydın, the secrets to speedy carving and his favourite vegetarian dish

Günaydın Dubai might boast one of the city’s most iconic settings – right on the water promenade of Souk Al Bahar in Downtown Dubai with views of Burj Khalifa and The Dubai Fountain – yet the menu will transport you straight to Istanbul with its distinctive Turkish flavours. The restaurant, with roots that stretch back to a humble butchery in Istanbul’s Bostancı neighbourhood, was co-founded by chef Cüneyt Asan, a legendary chef renowned for his speedy butchering skills and for being the former mentor of ‘Salt Bae’, aka Nusret Gökçe. Was it always your dream to be a chef? I got into the industry at a very early age, working as an apprentice at the Bostancı Butcher’s Market in Istanbul. I immediately felt a connection to the world of butchery and it ended up becoming my greatest passion. By the age of 21, I had grown from an apprentice into a master of the craft. At this point, I had to delay my dream of being a chef in order to join the military. After I had served my country, I returned to the butchery, where I eventually became a partner. Today, I’m the owner of Günaydın Dubai, and I try to visit the restaurant regularly.

What is the best part of being a chef? It is very rewarding to do a job that speaks to my heart. As a chef, I get to meet lots of people from all walks of life, and it is so satisfying to see them enjoying my food.

What is the food philosophy at Günaydın? Our main concept and focus is meat, explored through the lens of Turkey’s flourishing culinary diversity. Our dishes are inspired by both the Far East and the country’s Mediterranean regions. Tell us about being ‘the fastest butcher in the world’. That’s a title that was given to me by my fellow chefs. They watched me play around with meat and they just couldn’t match my skill or precision, hence the title. Do you have any tips for people who want to improve their own butcher’s skills at home? The first step in basic butchery is to understand the anatomy of the livestock, to know what cut of meat comes from which part of the animal. Then there are the cutting skills themselves to master: slicing the meat, trimming the sinews, deboning the meat, and so on. I recommend using a medium-sized counter and a cutting board at all times. It’s also imperative to have a good knife – this is key to working with meat. 70

Order the rib-eye steak cooked medium, which is the best way to enjoy a steak. Our rib-eye is specially sourced and rested in a special chiller for 28 days. It’s seasoned simply with salt and pepper to let the natural flavours shine through, then cooked on a chargrill. What’s your favourite dish on the menu? The alinazik kebab is one of my favourites. If you could escape to anywhere in the world for a culinary holiday, where would you go? Japan for sure. I love its culture and history, and the fact that the chefs use fresh, seasonal ingredients to create truly authentic flavours. You’re known for your skills as a butcher, but are there any vegetarian dishes that you love? I really like lentils. They’re nutritious, balance your blood sugar and are simply delicious. But the stylish new trattoria at Grand Hyatt Abu Dhabi Hotel and Residences Emirates Pearl has so much more to offer. Perhaps it’s the soulful acoustic soundtrack in the background or the colourful homely touches in the décor, but the vibrant space evokes a sense of nostalgia. The moment you step in, you’ll find yourself instantly transported to an Italian countryside eatery. And after taking one look at the menu, it’s easy to see why. No frills and fancies, here it’s all about classic Italian recipes. It’s like walking into a kitchen, only to be surrounded by the most comforting flavours. Think mixed bean soup, clam linguine, gnocchi cooked in a thick tomato sauce and calamari risotto. And the more you peruse the menu, the more you’ll see why Verso is not just your average trattoria. We visited on a Friday evening, a few weeks after Grand Hyatt Abu Dhabi Hotel & Residences Emirates Pearl officially opened its doors to the public. We spotted a good mix of families sharing a meal with their little ones, couples in for an intimate evening and groups enjoying a night out. Clearly, the venue lends itself to a variety of occasions, be it date night, a birthday celebration or simply a leisurely afternoon lunch (book the poolside terrace during the cooler months). There’s plenty to enjoy even before your meal begins and if you’re anything like us, you’ll be keen to walk around the restaurant’s lush herb garden or take your pick of freshly baked bread lined up along the counter dedicated solely to bread and cheese with assorted varieties from focaccia to ciabatta. Sure to also keep you in high spirits throughout your meal is the restaurant’s extensive wine list, boasting the finest varieties sourced from premium vineyards across the globe. The sheer number of classic Italian favourites on the menu means you might need a little assistance when it comes to whittling down your choices. Fortunately, the restaurant’s warm and friendly staff are always happy to help by recommending

the most popular dishes. Based on our server suggestions, we opted to start with the artisanal selection of Italian charcuterie. With nine different choices on offer, we narrowed it down to the cooked veal ham, served with crunchy potato crackers and homemade pickles. Keeping things light and fresh (considering the decadence ahead), the garden salad completed our selection of starters. This healthy mix, packed with salad leaves, heirloom tomatoes, purple artichokes, walnuts and goat cheese imported from Italy’s Piedmont region, will tick three out of your five a day. For mains, we relied on the classic combination of pasta and pizza. The creamy tagliatelle with melt-in-your-mouth lamb and subtle hints of rosemary is a pasta lover’s dream while the diavola pizza, topped with hot beef salami, onions and fresh chillies, tasted incredibly indulgent yet felt surprisingly light. When you dine Italian style, skipping dessert is not an option. And what better way could there be to end your meal than with a delightful tiramisu? Perfectly complementing the robust flavours of cocoa and espresso is the delicate combination of mascarpone and custard, which Verso serves sharing style, in a large platter for all the diners around the table to enjoy over great conversation and laughter. It all comes together nicely as a nod to the Italian way of life.

I was born and raised in Dubai, and it’s a great place to grow up and raise my own family. It’s a wonderfully diverse city; you get to know so many different cultures, nationalities and traditions. That’s why a part of living here means being open-minded, and raising your children to be open-minded too, without losing sight of your own traditions. It is all about finding your place in the city, achieving that balance between holding on to the past and moving towards the future. I came up with the idea for Feathers Fashion while I was studying for my Masters in Urban Design at the Edinburgh College of Art. I thought about the fact that here in the GCC, we love branded luxury goods, whether it’s our watches, pens, shoes or bags, but these brands tend to be from Europe or the US. I wondered, why is everything being designed and produced outside the UAE? That’s why I set up Feathers Fashion. I consider it to be the first Emirati brand for luxury goods. Everything has an Arabic touch, including our logo, which is inspired by Emirati architecture. I am always inspired by the city. I love to visit the old souks. To me, they’re the best part of Dubai, where you can really experience the past. It even smells like the past. Now and then I like to get together with my friends and enjoy doing the things we did when we were young: visiting the old souks, taking an abra across Dubai Creek, eating in Indian restaurants in old Dubai… that sort of thing. With my own family, it’s great that there’s so much in Dubai to see and do. One of my favourite spots is IMG Worlds of Adventure. I love that it’s enclosed and airconditioned, so you can visit any time of the year, and all the rides and attractions are quite close together, making it easy to navigate. In some of the bigger theme parks, it feels like you need a whole weekend to see everything! I’m always looking to explore the next big thing or new development in the city. Recently I’ve enjoyed visiting Al Seef, the new development at Dubai Creek, as well as the beach destination La Mer in Jumeirah. I’m very interested in architecture and would like to visit Louvre Abu Dhabi soon. When it comes to dining out, I really don’t have a favourite restaurant. I’m an adventurous eater and I’ll try most places, although I do have a special love for Italian and Arabic food. Usually, we go to places like The Cheesecake Factory, Sugar Factory or Eataly – fun, casual places that are great for the whole family.
