Natty has moved. The little studio shop is now located in Island Bay where they are still creating their hand painted rimu jewellery, screen printed homewares, and stationery items. The shop also supports many other great NZ designed/made products, including soaps, candles, ceramics, wooden utensils, toys, books, and wearables. Almond brittle

Spoil Santa this year with decadent chocolate-coated brittle. The almonds can be replaced with any nut so get creative (think macadamia and chilli combo). They also make a great pressie – just pop in a paper bag and tie with a bow for a gift everyone will enjoy.

190g unsalted butter

1 cup castor sugar

70g slivered almonds

200g dark chocolate

70g slivered almonds toasted (extra) salt (optional)

1. Place butter and sugar in a small saucepan, and melt gently over a medium heat, stirring until sugar has dissolved. Stop stirring and simmer for 2–3 minutes.

2. Stir in 70g of the slivered almonds.

3. Continue to simmer until the mixture is starting to darken and a small amount dropped into a saucer of cold water is almost brittle (just before the hard crack stage, approx. 4 minutes.) Stir occasionally to stop the mixture burning on the bottom. Keep a close eye on it as sugar can burn easily.

4. Pour caramel onto a sheet of baking paper and spread out to 0.5cm thickness.

5. Cool completely. Toffee will become harder as it cools.

6. Melt the chocolate.

7. Spread half the chocolate thinly across the cooled brittle and sprinkle with the toasted almonds.

8. When chocolate has set, turn brittle over and repeat on the other side with the remaining chocolate.

9. Once both sides are set, break into pieces using a sharp knife.
