reservations, Rahimi and Mancini work with large groups to collaborate together and create a fixed menu. “This gives our guests the flexibility to choose what they like and to control cost and timing,” said Rahimi. “It also gives us the ability to give the best service possible.” One of the best attributes that sets Chianti’s aside from other restaurants is that every dish is made-to-order, and all of their ingredients are fresh.

If you order chicken alfredo, your chicken is sautéed with spices, then cream and parmesan are added and cooked down until they are ready to add the fettuccine. The same goes for every dish on their menu. “This is why we are able to cater to customers who have dietary restrictions or preferences like low-salt or gluten-free options,” said Rahimi. Chianti’s offers classic dishes like spaghetti and meatballs, ossobuco and

fresh seafood dishes, including blackberry salmon and smoked salmon risotto. Rahimi recommends their chicken gorgonzola or prawns and scallops for the perfect holiday meal. “What makes the chicken gorgonzola so good is that the flavors blend together to make a rich and creamy gorgonzola sauce,” said Rahimi. “We add apple slices for a bit see Chianti’s page 10B

NORAD tracking Santa for over 60 years

O

Every year on Dec. 24, 1,500 volunteers staff telephones and computers to answer calls and emails from children (and adults) from around the world.

n Dec. 24, 1955, a call was made to the Continental Air Defense Command

(CONAD) operations center in Colorado Springs, Colorado. However, this call was not from the president or a general. It was from a young child in Colorado Springs who was following the directions in an advertisement printed in the local paper – the youngster wanted to know the whereabouts of Santa Claus. The ad had read, “Hey, kiddies! Call me direct and be sure and dial the correct number.” However, the number was printed incorrectly in the advertisement and rang into the CONAD operations center. On duty that night, Col. Harry Shoup became known as the ‘Santa Colonel.’ Shoup received numerous calls that evening and, rather than hanging up, had his operators find the location of Santa Claus and report it to every child who phoned in. Thus began a tradition carried on by the North American Aerospace Defense Command (NORAD) when it was formed in 1958. Today, through satellite systems, high-powered radars and jet fighters, NORAD tracks Santa Claus as he makes his Yuletide journey around the world. Every year on Dec. 24, 1,500 volunteers staff telephones and computers to answer calls and emails from children (and adults) from around the world. Live updates are provided through the NORAD Tracks Santa website in seven languages, over telephone lines and by email to keep curious children and their families informed about Santa’s whereabouts and if it’s time to get to bed. Each year, the NORAD Tracks Santa website receives nearly 9 million unique visitors from more than 200 countries and territories around the world. Volunteers receive more than 140,000 calls to the NORAD Tracks Santa hotline from children around the globe. This year, children and the young at heart are able to track Santa through Facebook, Twitter and YouTube. To follow any of these websites, type @noradsanta into the search engine and start tracking. t isn’t always easy to get into the holiday spirit when there isn’t any snow.

One way to experience holiday cheer is to head to The Big Chill in Brentwood, where an icy winter wonderland awaits. Brentwood’s newest holiday attraction at The Streets of Brentwood features a 10,000-square-foot ice rink, a polar plunge ice slide, a 3,200-squarefoot ice lodge, light and sound shows, food trucks on the weekends, live music on select nights and more family fun. “The Big Chill is the perfect place for families to come together and celebrate the holidays,” said Laura Montalvo, co-owner of Polar Sports and The Big Chill in Brentwood, along with her fiancé Paul Bates. According to Montalvo, The Big Chill was modeled after the ice rink at Northstar in Lake Tahoe. “Even the furniture we have in and around the Ice Lodge is the same,” she said. The venue celebrated their grand opening Dec. 2 with live music, food trucks, holiday treats, gourmet popcorn and hot chocolate.

“We created an attractive seating area, lights and decorations and have arranged to have food trucks by the Foodie Crew on the weekends,” said Montalvo. “We want people to stay and hang around and listen to music and enjoy the festive environment.” Since opening, local residents have loved hitting the ice and plunging down the slide. “Small and big kids had so much fun,” said East County resident Melanie Policar, who celebrated her daughter’s sixth birthday at the venue. “Take your kids – they’ll have a blast!” For those who don’t know how to skate, The Big Chill offers skating lessons on Saturdays, Sundays and Mondays, available only by reservation. “We love, love, love to create joy and happiness in others through skating,” said Montalvo. The owners’ love for skating is what led them to create their first ice rink in Dublin in 2009 and 2010. Since then, the couple, which used to live in Brentwood, had planned to bring a classy holiday skating venue to the city. “We are a small business – not a big corporation – and had a dream to build a holiday ice rink for some years now,” said Montalvo. The Big Chill is planning to stay open

eed a festive Christmas cupcake in a hurry? Pipe green frosting on

your favorite cupcakes in the shape of a Christmas tree and decorate with an array of sweets and sprinkles as ‘Christmas ornaments.’

Follow these simple tips for perfect confections: 2 ½ cups vanilla frosting, divided 12 unfrosted cupcakes 2 drops green food coloring, or as needed ¼ cup sprinkles, colored sugar, or candies 12 unfrosted cupcakes, cooled 1. Spoon half cup vanilla frosting into a bowl. Spread a thin layer over the top of each cupcake with a knife. Refrigerate cupcakes for 30 minutes to make decorating easier. 2. Combine remaining two cups of vanilla frosting and green food coloring in a bowl; stir until frosting is uniformly green. Add more green food coloring, one drop at a time, until the frosting is the color you like. 3. Transfer frosting to a piping bag.

uring the holiday season, many people do not want their

thoughts to stray to anything unpleasant. Although celebrating may be the primary goal this season, individuals and families also should devote some attention to keeping the holidays safe. Just because it’s Chanukah, Christmas or New Year’s doesn’t mean safety and security should not remain a top priority. The following guidelines can help families enjoy a healthy, safe and secure season. ♦♦ Exercise caution when decorating. Decorations can be beautiful, but they also can be hazardous if not used properly. Overloading outlets is commonplace during the holiday season, which can lead to home fires. Exercise caution around candles and other open flames. Pets may become tangled in wires or knock

over glass ornaments. Keep delicate decorations away from harm. ♦♦ Wash hands to prevent germs. As the cold weather arrives, people may spend greater periods of time indoors or in close proximity to other people. The holidays also call for hugs and kisses from loved ones. Do not ruin the festivities by spreading germs. The Centers for Disease Control and Prevention (CDC) says the holiday season is also flu season. The CDC recommends celebrants wash their hands with soap and clean running water for at least 20 seconds to remove germs. ♦♦ Keep track of young children. Children are enamored with the sights and sounds of the holidays and may be more curious than ever during this time of year. Things adults take for granted can be hazards to youngsters. The needles of holiday trees can cause painful cuts in the mouth and throat of a child who swallows them. Snow sprays may be harmful if the aerosol propellants are used improperly. Peanuts and popcorn used for

decorating can pose potential choking hazards to little ones. ♦♦ Be a smart host or hostess. Alcoholic beverages and holiday revelry sometimes go hand in hand. Responsible party hosts know when a guest has had too much and will arrange safe transportation home. Since kids imitate adults, many may drink the beverages they see adults drinking. Alcohol poisoning is a real risk for children, so pay attention to youngsters no matter how young they may be. ♦♦ Protect the home. Deter home burglars when traveling for the holidays by having neighbors keep a watchful eye on your house. Use motion-sensor lights, keep up the appearance that someone is home by having mail collected, and do not advertise any travel plans on social media. Invest in a home security system if need be.
