Holiday Chicken Salad Yields: 12 Servings Ingredients: 1 cup mayonnaise (I add a lot more mayo till salad is creamy) 1 tsp. paprika 1 tsp. seasoning salt (Lawry’s) I season to taste. 1 ½ cup dried cranberries (craisins) 1 cup chopped celery 1 cup minced green bell pepper 2 chopped green onions 1 cup chopped pecans 4 cups cubed, cooked chicken meat (approx. 4 chicken breasts) Pepper to taste In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, celery, bell pepper, onion, and nuts. Add chopped chicken, and mix well. Season with black pepper to taste. Chill 1 hour and use to top on bread or rolls.
