he future of Lake and Sumter counties is so bright that I have to wear shades. How do I know? Because we have a bright and talented group of entrepreneurs, business leaders and professionals among us. And they’re just getting started! I’m talking about our young workforce. Or, as we call it in Lake and Sumter Style Magazine, our “40 Under 40.” This month, we’re allowing these young whippersnappers to step into the spotlight as we celebrate their achievements in hopes of inspiring future generations of aspiring businesspeople. It saddens me that young people are often erroneously stereotyped. You’ve heard the rants – they’re lazy, they want free handouts and act entitled, they don’t want to work for anything, they’re selfish, spoiled and irresponsible. This year’s crop of “40 Under 40” shatters those stereotypes. And, for the record, we had no trouble

finding this group of tireless workers who are entrepreneurs, doctors, marketing specialists, public information officers, attorneys, educators, chefs, painters, salespeople and more. I thank each of them for their hard work, dedication and drive. There’s no doubt that their creativity, vision, and passion enrich our area. They ensure that Lake and Sumter counties continue to be wonderful places to live, work and play. As owner of Akers Media Group, I see firsthand how valuable young employees are. Most of my staff is under 40. They help come up with great story ideas, produce eye-catching ads and designs and consistently meet deadlines despite heavy workloads. I’m so lucky to have them as part of my work family. I hope everyone is off to a great start in 2024 and that you’re meeting your New Year’s resolutions. indfulness techniques help us become more resilient to life’s challenges. Amy Roberts, LCSW and Mindfulness Meditation Teacher at RBOI, says that developing a non-judgmental, beginner’s mind is key. “Be aware of your reactions, your thoughts, your body, but in a way that’s patient and trusting,” she explains. “Don’t judge your reactions as right or wrong, or good or bad, but have a childlike curiosity about your feelings, emotions, or responses. It’s really extending a kindness inward, but also to those around you.” She points to studies showing that mindfulness improves memory and concentration. Mindfulness can also decrease stress, anxiety, and depression, while improving quality of life and one’s ability to cope. Roberts offers free Friday meditation sessions on Zoom. MEANS PERCEIVE whatever you need in that moment. Maybe you need to say, “I’ll get back to you tomorrow” or take a brief walk outside. For some people, prayer provides a sense of stillness. The STOP technique is an internal exercise. “It’s something you can do when something is really triggering you,” Roberts explains. “Nobody has to know what you’re doing, but you can do it quietly for yourself. And the more times you use it, the more it becomes the default.”

Giving Thanks Having a gratitude practice can lift you out of a dark place. “Gratitude doesn’t mean ignoring what is difficult,” Roberts says. “Life is tough, but a gratitude practice helps to balance the heaviness of managing a crisis. You’re not just your disease. Other things in your life have value or purpose and can give you some sense of joy or safety.” The practice can include a gratitude journal. “Every morning or evening, write down a few things that happened or that you have that day that you’re grateful for,” Roberts says. It can be something simple like, “I love my hair color today,” or, “I have a roof over my head.” Think about why you are grateful and what those things mean to you.” Don’t worry if you skip a day or a week, Roberts advises. Just start again. “Patience and empathy are key.”

BIG RIG: The Leesburg Police Department has a new weapon to fight crime. MRAP is a mineresistant ambush protected vehicle. According to LPD Captain Joe Iozzi, the stripped-down, modified rescue vehicle was obtained through the Federal Government’s 1033 surplus program that was started under the Obama administration. Work and paint were donated by local businesses and modifications were done by Beverage Body & Trailer Service. MRAP is a working vehicle that requires training to operate, and a source of pride for LPD.

It’s our first year playing and it felt good to score and lead the team to our first touchdown. Athletic accomplishments: I deadlift 365 pounds and bench press 225. I started weightlifting in 2022 and have a home gym. A lot of the football team comes over and we work out and lift together.

I also oversee the county’s many social media pages, and interact with and assist journalists, plan events and create print material. HOW I GOT HERE: My first communications job was in 2012 as a marketing coordinator for private higher education. While I have a master’s in public relations, my bachelor’s in anthropology piques people’s interest. I chose it specifically to understand audience diversity before I learned generalized communications strategies. Now I feel like I can communicate more effectively as I better understand differences in cultures, beliefs and needs.

In 2011, I took the helm at New Vision and now I can make our community a better place for people with disabilities.

OUTSIDE THE SHOP: I love spending time with my husband, Payne, and my dog, River. We also enjoy boating on the weekends with family and friends. LIFE AFTER 40: I would love to expand my business and open a boarding and grooming facility in downtown Eustis.

MY INSPIRATION: Growing up, I was influenced by three youth pastors who inspired me to pursue this path. I began to minister full time in 2010.

On a personal note, my almost 4-year-old son has autism spectrum disorder (ASD). The medical community still doesn’t have enough answers on why rates are going up, the exact mechanism of the disease and how to treat it. That has become my latest dream, to be able to help my son and others with ASD.

UNLIKELY INSPIRATION: In 2019, I took a semester away from college to finish beauty school and planned to go back immediately after to finish my bachelor’s in accounting. Once I was licensed, I started taking clients and realized I could achieve everything I wanted and more without even going back to college. We partner with digital agency owners as a white label marketing provider. In other words, we do the work for others under our own name. I’m also responsible for new marketing initiatives to reach new audiences of agency and business owners to make the greatest positive impact on the world. HOW I GOT HERE: I was 15 years old in 2007 when my parents started That! Company. My dad handed me a phone book and told me to call everyone in the Yellow Pages who didn’t have a website. I made appointments with anyone who would listen and I’m still here today. WHY IT’S MY PASSION: I love that this industry is always changing, so I get to use my brain at work and come up with creative solutions to complex problems.

NOTABLE ACHIEVEMENT: I helped pivot our business into the white label model working with agency owners back in 2015. Today, we now have 600-plus agency partners who white label our services. We also are now a global team, not just hiring here in Lake County, but hiring people all over the US as well as Internationally. WORDS OF WISDOM: Keep at it! Success is not easy or fast. HOW I GOT HERE: I have a background in customer service and have always had an interest in automobiles. When the pandemic hit in 2020, I decided it was time to find a field where I could combine my experience and passion. WHY IT’S MY PASSION: I enjoy providing a first-class experience for all my customers. NOTABLE ACHIEVEMENT: The most important accomplishment to me is probably all the trust I have

CaitlinJennings, 27 OCCUPATION: Head Chef/Kitchen Manager at the Back Porch Pizza Bar in Mount Dora WHAT I DO: I’m responsible for creating new recipes, making sure food is going out properly, managing the kitchen and the other chefs. Of course, I must follow a budget and make sure the guests have the best possible experience! MY INSPIRATION: My Italian family is from New Jersey, and we couldn’t find a good pizza in this area. So, in 2019 we decided to open our own place and I dedicated all my time to learning the art of making pizza and helping them run the family business. I fell in love! WHY PIZZA IS MY PASSION: I grew up cooking with my Italian family and I truly believe that food is the way to anyone’s heart and soul. To be able to watch my food put smiles on customers faces warms my heart and brings me joy.

NOTABLE ACHIEVEMENT: Being able to work for such an amazing company where I have the freedom to express myself with my food. Our success has made me very proud. WORDS OF WISDOM: Before I got into this career, I was a dog groomer, and I hated it, so my advice would be to get out of your comfort zone and find what makes you happy. It turned into the most beautiful life decision I have ever made. IN MY SPARE TIME: I love cooking at home as well as kayaking, going to the beach and anything outdoors! I also believe in supporting other restaurants in the Mount Dora area and trying new food! LIFE AFTER 40: I see myself still cooking and putting out plates that everyone can enjoy. CarriganHinote, 28 OCCUPATION: Entrepreneur and Cowgirl at Hinote Beef Company in Groveland WHAT I DO: I feed our steers twice a day and make sure their space is clean and comfortable. I also check on our mama cows, babies and bulls, working closely with the vet. MY INSPIRATION: My dad is a cattleman, so I’ve been around cattle my whole life. I started my own company in 2021 and have really found a passion for it. WHY BEEF IS MY PASSION: It’s so hard to find the source of where your food comes from these days. With Hinote beef, you know exactly where your food is coming from. We take pride in raising fresh, locally raised beef. PROUDEST MOMENT: My biggest accomplishment thus far has been

working alongside my dad in raising cattle and continuously building a legacy that I can pass on to my children. WORDS OF WISDOM: Work hard! If you have a dream, chase it! Don’t let anyone stop you or tell you you’re crazy, because they will. It will not always be easy, but if you work hard, it will be worth it. Always ask questions, take advice and stay humble. OUTSIDE THE RANCH: I spend most of my days outside sitting on my front porch with a cup of coffee in hand, watching my kids run wild in our front yard. I also love riding our ranch and looking at our cows, or spending time in my chicken coop. LIFE AFTER 40: I hope to see our industry grow because Florida is home to one of the largest cow calf operations in the United States. I’m proud of that.

JerryDonaldson, 39 OCCUPATION: Firefighter/ paramedic (Rank: lieutenant), Eustis WHAT I DO: I manage the daily operations of the shift personnel, apparatus and equipment of my assigned fire station. I also go on calls for emergencies. MY INSPIRATION: I grew up down the street from a firehouse and thought it would be a cool job, especially because of the team aspect. I began fire academy in 2007, then EMT school in 2008. I started at my first department in 2009. WHY IT’S MY PASSION: I love the unknown. Not knowing what the next call will be when the tones drop. I love the team aspect of working together to accomplish a task or goal and feeling like I have made a difference. NOTABLE ACHIEVEMENT: It was a great accomplishment to be

promoted to a company officer, but when I became an instructor at the fire academy, it meant a lot because the mentors I had in my early years inspired me so I felt I could do the same. OUTSIDE THE FIREHOUSE: I love to spend time with my family and to watch my kids at their sporting events. I also love also doing home projects. LIFE AFTER 40: I want to continue to teach the next generation of firefighters and prepare them to have a long and safe career. AlanReisman, 34 OCCUPATION: Project manager for Firehawk Helicopters and City Commissioner for City of Leesburg WHAT I DO: For Firehawk Helicopters, I oversee company projects and assist the team in daily operations. For the City of Leesburg, I work with the commission and city staff to adopt local laws and ordinances, establish policies and work to manage the growth of our city. MY JOURNEY: Ever since I was very young, I’ve had a passion for aviation. The day I turned 18, I began my career at Firehawk Helicopters and have loved every minute of it. As for my job as city commissioner, I grew up in Leesburg and have always loved it here. I want to do whatever I can to help around my hometown. I didn’t win my first election, but I stuck with it,

even when people doubted me. I never gave up! MY DUAL PASSIONS: Simply put, I love both jobs and it never feels like work. PROUDEST MOMENT SO FAR: Being elected as Leesburg City Commissioner. WORDS OF WISDOM: Never give up and be sure to always surround yourself with friends and family who are encouraging but also those who aren’t afraid to give you the hard truth. OUTSIDE THE HELIPAD: I like to spend time with my nieces and nephews and hanging out with my friends. CollinBuschor, 14 OCCUPATION: Owner of Buschor’s Baits WHAT I DO: I create soft plastic bait in several different styles and colors. I also take orders, keep track of inventory for packaging and create social media content. MY INSPIRATION: In May 2023, I told my mom I was bored of homeschool work, so she suggested I create a business to count toward class work. I had seen others on YouTube creating bait and since I like to fish, I thought it would be fun. I borrowed money from my parents after my dad helped me research the items I would need. WHY BAIT IS MY PASSION: I love fishing with my dad and it’s awesome to be able to make my own bait with colors

I came up with, and then catch fish with my creation. It’s also rewarding to see photos of my customers catching fish with my bait or when they tag me in their reels. NOTABLE ACHIEVEMENT: Having my bait available at Sunsational Farms store. WORDS OF WISDOM: Follow God’s plan, pray about it and work hard. I also manage property listings and bookings. A FAMILY AFFAIR: My father-in-law, Alan Stewart, brought me on board at The Floor Shoppe in 2018. I started Someplace Special Vacation Rentals in Mount Dora and, along with my husband, purchased a few properties of our own in the downtown area. I now manage a total of 11 properties. TWO PASSIONS: Working for a familyowned business makes things a bit more personal and is something I don’t take for granted. As for the property management side, I love that I can have long lasting relationships with people from all over the country. I love to host in

SheenaWillis, 39 OCCUPATION: Small Business Advocate and Event Coordinator for Orange Blossom Market Company WHAT I DO: My priority at OBMco is to provide educational resources for its members. We hold monthly networking meetings in Leesburg, Oakland and Avalon Park. A few examples of our topics include making your elevator speech, creating social media content and other relevant subjects for small business owners. I spend a lot of time preparing these meetings and bringing in experts to share their knowledge. MY INSPIRATION: In 2015, I signed up for a workshop with my cousin to learn how to make paper flowers. I knew before the class was over that I wanted a career like the host/teacher so I could share my skills while connecting with people.

WHY IT’S MY PASSION: I love to problem-solve and I always get to celebrate wins and milestones, not just mine, but for members of OBMco. NOTABLE ACHIEVEMENT: In 2023, I was a finalist for the Community Impact Leader Award for the Women on the Rise organization in Orlando. DasieCruz, 12 OCCUPATION: Polymer Clay Artist and Owner of The Perfect Pair by Dasie WHAT I DO: I create different earring designs and then I make them out of polymer clay. My designs range from Disney characters to custom pets. I also handle the marketing, packaging and delivery of my jewelry with my mom’s help. MY INSPIRATION: I started making earrings in May of 2022 for myself, my sister and her friends. A few people kept saying I should try to sell them and so I did. WHY IT’S MY PASSION: I love being able to get creative and make things that people want to wear.

NOTABLE ACHIEVEMENT: Being able to give back to my community with the donations I make from my sales. Thirty percent of every sale is donated to a local nonprofit. In 2019, I received the opportunity to join David Jordan’s team at the tax collector’s office. WHY IT’S MY PASSION: Our role is unique in that everyone who calls Lake County home must come and see us at some point. We are challenged with making government less

HOW I GOT HERE: I started the company in 2010 doing general remodel projects in homes, such as bathrooms, kitchens and small additions. Around 2012-2013, I found our niche in damage restoration. WHY IT’S MY PASSION: I absolutely love bringing my knowledge and expertise to property owners dealing with catastrophic losses. BrittanyWoolley, 38 OCCUPATION: Educator in English Language Arts at Eustis Middle School WHAT I DO: I teach writing and reading comprehension skills to young 6th graders. MY JOURNEY: I was a banker most of my adult years, but I always had a dream of teaching. When I became a single mom at 30, I went back to school. Now, I’m in my second year of teaching and I couldn’t be happier! My youngest son is even in one of my classes and I was nominated Rookie of the Year finalist! WHY TEACHING IS MY PASSION: All my life I have felt a calling to teach. Every day I go to work and feel so blessed to have the opportunity to live my dream. I’m passionate about engaging a love of reading and writing to my students.

WORDS OF WISDOM: My advice to the younger generation, especially women, is to keep going. If your dream is to earn a college degree, then do it. Even if it is just one class at a time… don’t stop. OUTSIDE THE CLASSROOM: My family and I are huge Disney nerds! I’m also a part-time Zumba instructor, so I always try to learn new dances to bring to my students at the gym in Clermont. LIFE AFTER 40: I would love to get more involved in the North Lake community area to better serve my students’ families and I’d also travel more with my own family.

James “Jay”Miller, 37 OCCUPATION: Head Softball Coach, Adjunct Professor at Lake-Sumter State College, Author and Owner of SideArm Softball Academy, Leesburg WHAT I DO: I’m in charge of an NJCAA DII college softball program and 23 student-athletes. This includes recruiting, budgeting for the program, field maintenance and mental wellness for my student-athletes. HOW I GOT HERE: I was a college baseball player when I tore my elbow and couldn’t play ball. My father asked me to coach his summer team and at the end of August, I realized this was what I wanted to do. I began coaching at the travel ball level in 2007, then at the collegiate level in 2013. WHY MY PLAYERS ARE MY PASSION: I love my players. We don’t talk about winning games in our program, we just talk about getting better each day. Having the opportunity to help these young adults mature, grow and develop

as human beings means way more to me than anything we could ever accomplish on the field. NOTABLE ACHIEVEMENT: My greatest accomplishment is getting to see former players be successful once they leave LSSC. I have one who is an officer in the Marine Corps. She is among the 4.3% of officers in the Marines who are women. WORDS OF WISDOM: Rather than focusing on outcomes, focus on the process. Follow your efforts. Your efforts will lead you to what you should be doing. OFF THE FIELD: I love being with my family. I also collect baseball cards and build farmhouse dinner tables in my garage. LIFE AFTER 40: I want to spread my message and help other coaches achieve success without winning being a top priority. To make the person rather than the player a priority, it would improve the mental health of college athletes.

WHAT I DO: I coach and plan running group challenges, create fitness programs, make and share recipes and write educational content.

WORDS OF WISDOM: Make helping people a priority. Also, stay consistent. Success won’t happen in a day, a week or even a month. You must show up every day and do your best. Keep going, even when you get punched in the face repeatedly by life.

MY JOURNEY: It started in fitness with me as a Zumba and muscle pump instructor. Then my husband and I opened three CrossFit Gyms. After I had my first kid, I created an online program that kept my passion alive to help people while I could stay at home with my kids. I started The Lifestyle Way in 2015. WHY IT’S MY PASSION: I love for people to see what they are capable of. Bringing purpose to their life by making themselves a priority and seeing the confidence, energy and everyone in their circle flourish.

OUTSIDE THE GYM: I really enjoy going to the beach with my family or going for a walk with my husband (and kids if they feel like joining). LIFE AFTER 40: I would like to be more organized with time management so I can focus on being a present wife and mother. Luckily, I’ve got five years to figure it out.

Audra RoseDick, 28 OCCUPATION: Quality Coordinator at Chick-fil-A, Mount Dora WHAT I DO: I help to protect brand standards and uphold brand values within food safety and food quality. HOW I GOT HERE: I started as the Restaurant Marketing Director for Chickfil-A, Mount Dora, in 2020. During the peak of the COVID-19 pandemic, I had the opportunity to help with restaurant operations. Despite never working in food service before, I quickly fell in love with serving guests and taking a handson approach to leading a team. WHY IT’S MY PASSION: Working alongside my team during the pandemic, I realized that I didn’t have to change the world for everyone; I just needed to have the greatest positive impact on my team that I could.

NOTABLE ACHIEVEMENT: I got to spend a month on the island of Maui helping train the restaurant team open the first store in the Hawaiian Islands! WORDS OF WISDOM: Don’t feel like you must have it all figured out right away. Take the time to decide what you want your life to look like, then take steps and set goals to turn it into reality. Don’t be afraid to try new things and be bad at them the first time. OUTSIDE THE RESTAURANT: I love to backpack, hike and camp. My hope is to one day complete the Appalachian Trail in its entirety. LIFE AFTER 40: My dream is to own and operate my own Chick-fil-A location in the South. I’m also working toward visiting all 50 states.

MY INSPIRATION: This is a fourth-generation family farm. I returned in 2011 to help and spend more time with my family. WHY IT’S MY PASSION: I love to educate kids about agriculture and watch them have fun on the farm. This has always been the best part of my job and knowing that I might have a small part in inspiring future farmers makes it all worth it.

MY JOURNEY: After graduating from Marquette University in 2009 with a double major in broadcast journalism and advertising, I started my career as a multimedia journalist at WRBL, the CBS-affiliated television station in Columbus, Georgia. During my five years there, I led the 5 p.m. weeknight newscast. I moved to Spectrum News 13 in Orlando where I served as the Reporter for Lake, Marion and Sumter counties. WHY IT’S MY PASSION: I love telling people’s stories! NOTABLE ACHIEVEMENT: During my

time at Spectrum News 13, I received an Emmy nomination and was awarded two Florida AP Broadcaster awards for team coverage. WORDS OF WISDOM: The path to a successful career is not a sprint, but a marathon. Be patient, work hard and enjoy the journey. Make as many connections as you can and be passionate about the work you’re doing. OUTSIDE THE OFFICE: My fiancé and I enjoy visiting Disney World and I also try to spend as much time as I can with my senior dog, Molly. LIFE AFTER 40: I see myself married with an MBA! I would like to take on greater leadership responsibilities, shape communication strategies at a higher level, and mentor the next generation of communication and storyteller professionals.

AshleyTrinidad, 27 OCCUPATION: Chief Sugar Officer, Coco’s Sweet Treats, Eustis WHAT I DO: I run all aspects of Coco’s Sweet Treats. I create all the cotton candy sugars from scratch and I come up with packaging, designs and marketing. I source and attend the events as well. MY JOURNEY: I started Coco’s Sweet Treats in 2020 during the COVID-19 pandemic after I stumbled across a cotton candy video, bought my first machine and did a soft launch running a cottage food operation. Once the world opened up again, I got my mobile food license and started doing weekly events. WHY SWEETS ARE MY PASSION: Coco’s was born out of a need to be reconnected with the community that I grew up in. Coco’s Cotton Candy has become everything from a birthday favor staple to a holiday tradition for families in the area.

NOTABLE ACHIEVEMENT: Looking back, our biggest accomplishments are all because the community accepted us with open arms. We have been able to give back to Lake Cares Food Pantry, Toddlers of Lake County and multiple photographers in the area, who we work closely with at all the events. WORDS OF WISDOM: Life has different plans so keep your mind open and absorb everything you can, even if the moment is not ideal. One day you will find your purpose. OUTSIDE THE SHOP: I don’t have a lot of spare time, but I love a good book and to play disc golf at one of the local courses with my husband. LIFE AFTER 40: We have a little one on the way and I am still focused on growing Coco’s and expanding. I have some ideas on creating small business classes and continuing coaching and advising other small businesses to help them grow.

DerekSmith, 29 OCCUPATION: Owner of Axe-A-Dent Auto Body, Wildwood WHAT I DO: As owner of AxeA-Dent, I do the scheduling and customer service outreach as well as do the paintless dent work myself. I also help my team with anything they need to succeed. MY INSPIRATION: My dad has been an automotive painter for as long as I can remember and when I was around 14, I worked summers at body shops with him. After I got out of the military in 2019, I started Axe-A-Dent. WHY CARS ARE MY PASSION: I’ve had a love for vehicles since I was a kid. Most people’s vehicles are their second largest investment after a home, and I love making sure people keep their investment in a condition they are happy with.

NOTABLE ACHIEVEMENT: When we finally got our own shop, rather than being mobile. WORDS OF WISDOM: Work hard, set goals and get advice. If you aren’t working, your competitors are. I set daily, weekly, monthly, yearly and 3-to-5-year goals. It helps tremendously when you have a vision. Lastly, always take advice. You’re not always right and shouldn’t be. OUTSIDE THE SHOP: I love watching sports, especially the Red Sox, Gators and Bucs. I also love spending time outdoors and being around my friends and family. I also draft court documents and attend court hearings, but one of the most important parts of the job is ensuring all the client’s needs are met, not just legal ones. MY JOURNEY: I feel like I’ve been a student forever, but finally finished up school in May of 2023 and passed the bar exam two months later. I’ve been an official, practicing attorney since October 2023, but have worked at law firms all throughout law school. WHY THE LAW IS MY PASSION: I love a good fight, and law is exactly the place for me. I love crafting a well-researched,

thoughtful argument and I am very eager to participate in my first full-fledged trial. NOTABLE ACHIEVEMENT: Passing the bar exam. WORDS OF WISDOM: Get involved in things you may ordinarily shy away from. You’ll meet new people and gain experience with unfamiliar things, which will make you a wellrounded person. In the past, standard cataract surgery was performed by creating an incision with a blade. However, with today’s advances, surgeons can now offer Femto Laser-Assisted Cataract Surgery (FLACS). FLACS replaces many of the steps that require a blade and softens the cataract, allowing for smoother removal in some instances. A lens implant is placed in the eye, whether the surgery is performed by traditional blade or an assisted laser. get a referral from your primary care doctor. “We do stress tests in the office and if needed, cardiac catheterization can be done through the wrist using the transradial approach, which is much safer than going through the groin artery,” notes Dr. Ruisi, who has done 100 percent of his catheterizations this way for the last seven years. There are times that someone should be under the care of a cardiologist, even if they presently don’t have symptoms of a heart condition. Dr. Ruisi says this includes people with risk factors such as diabetes, high blood pressure, high cholesterol, or a family history of cardiac disease. Getting established with a cardiology practice before you’re dealing with a serious problem allows you to create a connection and feel comfortable with your cardiologist should you need them in the future. “I treat my patients like my own family,” says Dr. Ruisi. “What drove me to become a cardiologist was being able to save a life with the immediate response that can be made with cardiac procedures.” Village Heart and Vein is currently accepting new patients. t’s not surprising that many women don’t make their appearance a priority. They’re often busy taking care of the people in their lives. When women do take the initiative to change their appearance, they often admit they aren’t happy with their breasts. Franziska Huettner, MD, PhD, FACS, understands this dilemma. It’s one of the reasons she opened her practice, Florida Institute of Plastic Surgery in Lady Lake.

Dr. Huettner chose to move to this area and open her office in The Villages because her mother was supposed to be living here with her. Sadly, her mother passed away last year in the middle of the office renovation process. Born and raised in Germany by physician parents, she attended medical school there before moving to the United States to pursue her career. She completed residencies in general surgery and plastic surgery. After a prestigious fellowship in aesthetic plastic surgery and one year in practice at the Cleveland Clinic, she held a three-year position at the Southern Illinois University School of Medicine. Dr. Huettner opened her own practice in 2017 and maintains offices in both Lady Lake and New York City. When patients turn to Dr. Huettner for solutions, it’s not simply because she is an acclaimed plastic surgeon. Her compassion and personal interaction are as important as her skills in the operating room. Unfortunately, the Internet and social media have contributed to misconceptions about plastic surgery, including breast surgeries. After looking at online posts and videos, some women mistakenly think they can have surgery with zero down time afterwards. Because they aren’t aware of all that is involved, they have no idea about what can potentially go wrong.

When Dr. Huettner has a consultation with any patient, her priority is to make sure they leave with a full understanding of what is involved with the procedure they’re considering, including a realistic view of recovery. Women often bring photos to the consultation, but photos on their own can be deceiving because many times the woman in the pictures has had more than one procedure done. Dr. Huettner can explain what likely has been done surgically to create those results. “Just because something works in one woman, it might not work for another. Every woman is so unique and individual, and that’s how I approach all my patients,” says Dr. Huettner. “I may be considered ‘old fashioned’ and ‘traditional’ about this, but I think it’s important to explain everything before we start. Everybody should be informed of potential complications and the real risks involved. I’d rather underpromise and over-deliver than the other way around.” During the initial consultation, Dr. Huettner’s goal is to understand what the woman envisions so she can map out the best way to achieve those results. Every woman is different in breast shape, skin tissue, breast tissue and how the breast comes off the chest wall, plus her unique medical history. When it comes to improving breast appearance, there are multiple options available. In many cases, the answer is a mastopexy, or “breast lift.” “There are many things that can be done; it’s often not just a breast lift. The procedure often includes a reduction where some tissue is removed to create a perkier, younger-looking breast. If the woman wants more fullness in the upper breast so she has cleavage, an implant may be added,” says Dr. Huettner, adding that she takes time to fully explain the pros and cons. To achieve similar fullness without implants, Dr. Huettner can offer auto-augmentation mastopexy, a technique which sets her apart from many other surgeons. She uses the woman’s own breast tissue that is removed from the lower aspect of the breast in a standard lift procedure. This tissue is then used to build up the breast, creating more fullness without using an implant. Many women are not aware that this is even possible.

“We can also do fat grafting, which is when we do liposuction and add that fat to the upper part of the breasts to give more volume. A woman can add a half to a full cup size to the breast with this method,” notes Dr. Huettner. The result is an overall reshaping or sculpting of the breast, not just “lifting” it. Any surgical procedure requiring sedation with the patient under general anesthesia is done at the TLC surgery center or in the UF Health The Villages hospital.

Procedures performed with the patient under local anesthesia are done in the procedure room at Dr. Huettner’s office. Uncharted Waters Local musician finds inspiration in Mount Dora kitchen. STORY AND PHOTO: CINDY PETERSON

t was the last evening before the world was plunged into uncertainty due to the COVID-19 pandemic. As people gathered at the Magical Meat Boutique in Mount Dora, a sense of impending change hung heavy in the air. It was a night for one last beer in public, one last chance to simply go out. As Don Middlebrook sat back in his chair, one figure stood out to him — Zack, who was sitting by his sister Leah, engaged in sign language. Zack, who does not hear or speak due to ectrodactyly, a rare disorder, was in his element, oblivious to the world’s turmoil. “Zack was hugging everyone,” Don says. “As I sat there and I watched, I thought to myself, ‘We are about to be locked down but we can make it through this because look what he has been challenged with and how he has made it.’” Compelled to capture the experience, Don approached Leah and asked if he could write a song about the moment. She enthusiastically agreed. The result was “Uncharted Waters,” a tribute to Zack’s strength and the deep bond he had with his sister. In time, Don shared the song with Zack’s mother Connie Behncke, who realized its significance and helped facilitate a meeting between Don and Zack. Zack’s understanding of the

song became apparent when he met the songwriter. Zack and his family embraced the tribute with joy. “It’s a wonderful chance to tell the world what a brave soul he is and what wonderful support he has with his family,” Don says. Zack is a cherished figure in Mount Dora, where he’s often seen hanging around town and at One Flight Up, where he washes dishes. The chorus of the song reminds us of Zack’s inspiring journey: “In uncharted waters, that’s the way he lives. In uncharted waters, every day’s a risk. With the love of his sister and a hug and a kiss, in uncharted waters, there’s nothing he’s missed.” For Don, the song carries a profound message: “And if you think the world has done you wrong, remember Zack will never hear his own song.” The full song can be heard at donmiddlebrook.net.

Dads got to be kids again at the Father and Son Laser Tag event at the Fruitland Park Soccer Field on September 9. s Ledger Pleasant enters his senior year at Eustis High School, he is much more than just a baseball player. He is a star on and off the field, and his remarkable journey from 2022 to 2023 has left a lasting mark on the Eustis baseball community. With an impressive GPA of 4.57 and a batting average of .373 from the previous season, Ledger has become a player coaches might dream of having on their team. His improvement has been nothing short of extraordinary, transforming from a .211 hitter to a .373 powerhouse in just one year. Playing as the team’s shortstop, Ledger had a fantastic summer participating in various tournaments, showcases and camps at prestigious institutions like Vanderbilt University, Florida State University, the University of Central Florida and more. It came as no

surprise when he was voted Eustis High’s Baseball MVP in 2023, highlighting his dedication and bright talent. But Ledger Pleasant isn’t just about baseball; he is equally committed to making a difference for others in the local community. He spent time helping his father cook for Teacher Appreciation Week at Leesburg Elementary School where his mother works. He also lent a hand at The Big House, a multi-use sports complex in Tavares, alongside its owner, former MLB player Chet Lemon. Beyond volunteering, Ledger has a passion for mentoring young players, working with coaches Tony Thomas and Dave Westgate to impart his knowledge of the game. When not on the field, he enjoys hunting, boating and spending quality time with family and friends. As Ledger looks forward to the 2024 season, his dreams extend beyond baseball. He aspires to pursue a bachelor’s degree in business or civil engineering, underscoring his determination to excel both in sports and academics. Schools at the D1, D2 and D3 NCAA levels are scouting him, recognizing his all-around potential. Former Eustis Athletic Director Thomas Kupec lauded Ledger as more than just a ballplayer. “He is a student who excels academically, an active member of the community through his volunteer efforts and a tremendous asset to Eustis High School.”

ALANA SEWARD Eustis High senior dribbles towards success in basketball and business. STORY: KYLE COPPOLA

ustis High School senior Alana Seward has always been a shining star. She impressed on the court as a combo guard on the school’s girls’ basketball team, but her dreams extend beyond the court. Alana has committed to Hubbard University in Maine and will pursue a degree in business management, aspiring to showcase her eclectic sense of style by launching her own fashion line after graduation. Her passion for the sport is deeply rooted in her family. Alana’s father, Andre Seward, played for Eustis High before graduating in 1995. Alana developed a love for basketball at the age of 4. Early basketball memories for her include watching Lakers games

Alana says she chose Hubbard University because it felt like home, a place where she could build meaningful relationships like she has at EHS. When asked to name her favorite teammate, Alana doesn’t hesitate to name Tanaujeah Brown, whose motivation pushed Alana to be the best player she could be. Teammates D’Yani McKinley, Cerina Rolle and Khaleah Douglas, who grew up together in Eustis, have also left a profound impact on her life. Beyond the court, Alana is actively involved in Eustis High’s Black Student Union, which provides space for black students to discuss pressing societal issues. She also participates in the African-American Heritage Parade in Eustis every February. Alana is also involved in the annual Silhouettes of Criterion Cotillion Ball, an event dedicated to guiding young girls into womanhood and raising scholarships for those in need. The 25th annual Cotillion ball in 2024 will be a momentous occasion for Seward, who will make her debut in The Debutante Court. Alana enjoys hanging out with friends and shopping for the latest fashion trends during her downtime. Her teammates describe her as a natural leader. They say she’s outgoing, funny and personable. When offering advice to young players, Alana emphasizes resilience and patience. “Never give up,” she says. “Don’t get discouraged by the opportunities others receive. It’s all on God’s timing.” Alana’s proudest moment came in 2023 when her team secured the district championship. Her parents, Vanessa and Andre, have been pillars of her support system, reinforcing the values of hard work and love. With that, the two are obviously proud of Alana. They believe she can achieve anything she sets her mind to. So does Alana’s brother, Jaxson, who loves his big sister and the amazing things she does.

ount Dora Christian Academy’s Megan Ziegelhofer and Tavares High School’s Tracey Hanson are making waves in the world of high school sports as the only female High School athletic directors in Lake County. With a combined 20+ years of experience in education, they share a common mission: empowering young women to achieve success and equality in a field traditionally dominated by men. Megan, who held the position of Lake County’s sole female athletic director at the high school level for several years, is passionate about guiding young students toward collegiate opportunities. “There are too many stories of students who forget that in order to be successful at the next level – both on and off the field – academics come first, so we really try and hit on this point,” Megan says. Tracey, echoing her sentiments, says: “While private and public schools differ in many ways, we both encourage our students to maintain their GPAs and aspire to achieve the success they deserve.” Tracey, now in her 13th year in education and seventh at Tavares High, draws from personal experience to stress the importance of academics in post-high school careers. The pair hopes to inspire young women and show them that they can excel in any field they choose. “It takes effective communication to be an athletic director,” Megan explains. “I want to ensure that when people visit our campus, they know exactly what to do and where to go. I always send a welcome email

to our visiting schools. That email contains a campus map, directions to the facility, what each team needs to bring along with them and more. “I think it’s a common feeling for a

parent to think that ‘Game Night’ and everything it entails just happens by magic. The teams show up, the officials are there, and the concession stands are going . . . There are so many steps in that game planning process for every game where poor communication or no communication can really throw a wrench into things.” Megan’s meticulous approach fosters a welcoming environment that ensures that patrons enjoy their time at MDCA events. Both women hold high school sports in high regard, as “the purest form of athletics in the USA.” And both share concerns about the potential impact of Name Image Likeness (NIL) deals in Florida high school athletics. NIL deals would allow high school athletes to capitalize on their status to earn money, potentially compromising the purity of the sport. “Right now, this is as pure as it gets; I worry that if this comes

about, that purity will be compromised,” Megan says. Tracey knows the purity of sports firsthand. Her son Trey Hanson earned a college scholarship through hard work and determination, becoming the first Tavares High School boy’s weightlifter to do so. He now lifts for Brewton-Parker College in Georgia. These two dedicated women have encountered numerous obstacles on their journey. However, they both emphasize the importance of forging meaningful connections. As the only two female athletic directors, they lean on each other for support and encouragement, recognizing the significance of relationships. “In my opinion, the relationship component of being an athletic director is probably the most important part of my job,” Megan says. “I believe for our students to be successful both on and off the court or the field includes having somebody they can rely on, along

with having somebody who also relies on them. This tends to create a desire in them that helps them work that much harder, both in their sport and in the classroom.” Both athletic directors want students to understand the tremendous effort that went into reaching their positions. While urban areas like Orlando, Tampa, and Miami may have more female athletic directors, rural communities also offer opportunities. In high school sports, these two women exhibit exceptional courage and leadership. “Even though recruiting is changing, we are going to make sure every student has the potential to have a solid foundation to have a chance at the next level,” says Tracey. Tavares High has had notable success, sending 10 students to colleges and universities just last year. MDCA, under Megan’s leadership, has sent

The future holds great promise for these remarkable women. Although their programs differ in curriculum, athletics and school boards, they share a common dedication to securing the success and long-term future of their respective institutions. Megan and Tracey are inspiring young women to dream big, work hard and shatter barriers in the world of athletics.

Combine 1 to 2 cups tuna, drained well, with a splash white vinegar, a pinch of salt and pepper and a little mayonnaise to texture.

DIRECTIONS:

On a plate, place chopped and washed romaine, sprinkle diced tomatoes as a garnish, and take one scoop each of crab meat salad, tuna salad, chicken salad and arrange them with crackers around the plate.

TO MAKE THE CHICKEN SALAD:

Combine 1 to 2 chopped grilled chicken breast with 1/2 cup of mayo, 1 oz. pineapple juice, a pinch of white sugar, 1/2 cup of cranberries and 1/4 cup of crushed walnuts. Mix together and chill.

DIRECTIONS:

Place flatbread in the oven at 350 degrees for around 2 minutes or until golden brown on one side. Brush honey on the crispy side up as a base. Completely cover the flatbread with feta and bleu cheese crumbles. Add a layer of sliced fresh red grapes, followed by sliced red onion rings. Place in the oven for 2 minutes or until melted and golden brown. Slice into triangular pieces. Drizzle honey on top. Garnish plate edge with parsley.

Wash and core center of tomato, making a bowl inside for the filling. Make the chicken salad by grilling 1-2 chicken breasts and cutting them into small cubes. In a mixing bowl, add diced chicken, around 1/2 cup of mayo, 1 oz. pineapple juice, a pinch of white sugar, 1/2 cup of cranberries, and 1/4 cup of crushed walnuts. Mix all together. On a plate or bowl, add washed and chopped romaine lettuce, and a few croutons. Place the tomato in the center. Stuffed the tomato with chicken salad or your choice of crab salad, tuna salad or egg salad. Garnish with a light sprinkle of Parmesan cheese.

DIRECTIONS:

Boil the water with a pinch of salt. Once the water is boiling, add pasta. Let pasta boil until soft or al dente (to your liking). Drain water and place pasta in a mixing bowl. Melt a block of white cheddar cheese in a saucepan over low heat. Stir often to avoid burning. Once completely melted, add the pasta. Add seasoned salt, pepper, melted butter, scallions, tomatoes and shredded white cheddar cheese to pasta and mix. Place mixture in a 9x13 baking dish and top with shredded white cheddar cheese and bleu cheese crumbles. Spray the dish with olive oil to avoid sticking. Bake in the oven at 350 degrees for about 10 minutes until the top is golden brown. Remove the dish from the oven and top it with chicken breast tossed in buffalo sauce. Garnish with diced tomatoes and sliced scallion.

atin Flavors Bar and Grill is redefining the culinary landscape with a delectable array of Puerto Rican dishes. Located in Lady Lake and spearheaded by owner and chef Roberto Diaz, the restaurant was born out of Roberto’s passion for his heritage and nurtured by family recipes. The restaurant promises an immersive experience into the rich tapestry of Latin American flavors. “I really love cooking and experimenting with flavors and different ingredients,” Roberto says. Roberto, originally from Puerto Rico, began working in the food industry at 19 before attending nursing school. He moved to Florida after Hurricane Maria ravaged the island in 2017 and found himself working in the culinary and kitchen arts department at Disney, where he eventually became a chef.

After a couple of years, when faced with a hard-to-pass-up opportunity to open his own restaurant, Roberto decided to take the leap. Since opening in March 2023, his restaurant has become a local sensation with a menu that showcases the diversity of Latin cuisine — 80% of the offerings are Puerto Rican, but choices also include Mexican, Cuban, Dominican and American specialties. From the savory delights of mofongo to the crispy perfection of alcapurrias, every dish tells a story of heritage and home-cooked goodness. “I bring the experience I have from working at other restaurants, but even more, my menu is based on the experience I have cooking with my mom and grandma. Some of the recipes here are from

them and some I created on my own,” Roberto says. Great food is only part of the story. The welcoming atmosphere at Latin Flavors is enhanced by Roberto’s personal touches and the above-andbeyond service of the staff led by manager Mariam Pacheco. “I love my job here and people love our food,” Mariam says. “Sometimes people ask me questions about the food and what certain dishes may contain or taste like and I like explaining that to them or recommending dishes I feel

love a good road trip. Heck, I love a bad road trip! Luckily the backroads of Lake and Sumter counties offer so many opportunities to indulge in this pastime. Throw in a beer and I’m hooked for life. The latest sojourn brought me to County Road 470 through Panasoffkee, where I saw a sign that read: “Pat’s Taps.” I had to meet that dude. Turns out, the aforementioned “dude” is a lovely lady named Patricia Galvin, matriarch of the clan that has owned and operated Catfish Johnny’s Restaurant since 1990. They opened the adjacent room in 1995 because Pat’s beloved late hubby, Johnny, wanted to share his

love of classic country music with the community. When Johnny passed away in 2021 Pat was determined to use the building to share her daughter’s love of craft beer. “I was blessed when Sandy signed on,” Pat says. “We wanted to keep our family working with us and use the space for something that was meaningful.” Sandy Higginbotham, 52, had a career as a federal prison administrator for 21 years and was ready to retire until her obsession with craft brews gave her a second opportunity to keep working. She and husband Eric base their travels around visiting breweries. “We love craft beer, and we thought we could use the space to share different varieties with our patrons,” Sandy says. “It was a natural fit.”

Ever since the grand opening on October 20, 2022, Pat’s Taps has been a destination for craft beer lovers who come by motorcycle, car and R.V. Pat’s also hosts trivia nights, beer bingo and cornhole tournaments by Billy Goble. Sandy makes sure that the tap room offers hard-to-find brews like Fat Orange Cat Brew Co.’s Baby Kittens from Connecticut and Destin Brewery’s Emerald Coast Ultra Premium Lager, brewed here in Florida. “We rotate our kegs and include unique beers,” Sandy says. They also have an impressive pub food menu which complements the beer list. So when you’re out on your next drive, drop by Pat’s Taps. It’s a family affair, which Pat says Johnny would have loved.

Although the restaurant was closed for nearly two years due to the coronavirus, El Ranchito’s Leesburg location officially reopened in December 2021. The restaurant is now named El Ranchito Mexican Cuban and serves genuine Mexican cuisine and a variety of Cuban entrees with entertainment on Tuesdays and Saturdays! The menu features many of the favorite dishes diners have grown to love over the years, as well as new dishes. Consider the Molcajete Caliente featuring your choice of meats grilled with onion, potato, and bell pepper, topped with cheese and salsa verde. Or try the Bistec de Palomilla with thin-sliced steak with onions and parsley that comes with a signature steak sauce. El Ranchito fans will appreciate the remodeled restaurant, which now includes a 50-seat outside patio. Despite the changes, the food remains as scrumptious as ever. Enjoy amigos!

Brooklyn’s Pizzeria & Italian Restaurant expands to second location keeping quality and authenticity. PAID PROMOTIONAL FEATURE

hen James and Shawna Pancari opened Brooklyn’s Pizzeria in Leesburg 4 years ago, their goal was to revitalize the space and share their vision with the community. “I’m originally from Brooklyn,” says James, a Coast Guard Veteran. “I wanted to open up a place where people could get the pizza I grew up with,” he says. James says a particular point of pride is getting compliments from northerners about his authentic cuisine. “We get tons of comments about our pizza,” he says. “My fellow New Yorkers say our pies are the closest they’ve tasted since they left home.” As you step into the charming, immaculate space, the carefully placed wall art and homage to the armed forces invites you in. Then the fetching aroma of fresh pizza baking and pasta sauce stewing inspires you to grab a menu.

“Our hard-working staff comes in every single morning before we open to prep our hand-tossed dough, slice our veggies and create our house-made sauces,” says Shawna. The menu reflects such a wide variety of fascinating choices, it’s almost impossible to decide. The headliner is the New York Style thin crust pizza which you can build from a variety of sizes and toppings or try one of many gourmet pies which include margherita, tangy Buffalo chicken or cheese steak deluxe. Traditional calzones and strombolis are also on the menu. For diners who can’t have gluten, pizzas and pastas are available without it. “We researched gluten-free options and finally found good quality selections that taste great so our all of guests can dine with confidence,” says James.

Pasta dishes include traditional baked ziti, spaghetti with meatballs, and eggplant parmesan. More creative options feature salsiccia di panna and pesca pollo al forno. Rounding out the menu, are a variety of appetizers, saucy wings, fresh salads, classic hoagies and desserts. There is also an impressive beer and wine selection. In November, the Pancaris opened a second restaurant in Brooksville. Located at 31150 Cortez Bl., this space is designed to complement the flagship location and ensure quality and consistency. “We’ve had such a great four years in Leesburg and feel so fortunate, we were inspired to take Brooklyn’s to another city and share our love of community and good food with the city of Brooksville,” says Shawna. Brooklyn’s Pizzeria accepts Doordash, online-ordering, catering, and curbside pickup.

Oh no, not those eyes! Sure I can say ‘no’ to our fur babies; just give me a blindfold. STORY AND PHOTOS: ROXANNE BROWN

lthough I have no grandkids to speak of yet, you can still call me grandma . . . to two spoiled fur babies who may as well be children. Meet Remi Lulu, a very hyper beagle who turns 4 next month; and Cinnamon, aka Cinni Mini, an endearing chihuahuaFrench boxer mix we’ve had for nearly 10 years but whose actual age is unknown. The two technically belong to our kids, but that’s neither here nor there. The point is when they’re not home, it’s me — or hubby on his days off — who looks after the grands. And what a handful they are! As a 2024 New Year’s resolution, I’ve committed to not giving into their heart-melting puppy-dog eyes, which most of the time, proves tough to do. That being said, and much like most kids, Remi and Cinni manage to find trouble often. They get into playful and very loud scuffles.

Remi chews on anything she can sink her teeth into, including razors, toilet paper, trash, socks, stuffed animals, toothbrushes, retainers — you name it! Occasionally, one or both have accidents inside that we end up having to clean up. They are constant beggars when it comes to people food. And they love to escape. They’ve also been known to interrupt quiet times by barking or howling at unseen intruders (or things like our Roomba, broom, doorbell, Christmas tree, etc.). Remi, who hates being left alone, also cries like a baby upon our return because she’s so happy, then immediately grabs her toy for a game of fetch. The problem is scolding them when they do something wrong and sticking to it without being worn down by their heartwarming tail wags and kisses. And those eyes. Remi has even mastered the art of cuddling. She finds the coziest spots right next to me or climbs onto my lap, nestling her head against

my neck or cheek, intentionally obstructing my view of the TV or my cell phone. Additionally, both demand loads of attention, affection and care. Plus, the money required to keep up with food, toys and health matters is nuts. Still, all that is nothing compared to the laughter, warmth and love they bring to our lives. As we embark on a new year, I look forward to the adventures — both delightful and exasperating — that Remi and Cinni will undoubtedly bring. And like any grandparent, I wouldn’t trade the cuddles, their unconditional love, or even the chaos, for anything. But when it comes to my New Year’s resolution, forget it. There’s always next year, because I know I won’t be able to meet the challenge of maintaining total discipline in the face of Remi and Cinni’s sad little eyes. I can only imagine having human grandbabies one day. I’ll happily stand no chance whatsoever!
