WHAT WOULD YOU BE IF YOU WEREN'T A CHEF? I lived for more than 20 years in Switzerland. As soon as I graduated, I discovered my passion which is traveling around the world, learning about different cultures, food recipes and cooking techniques.

3 MOST INFLUENTIAL CHEF'S? Chef Jean-Philippe Rebeyrol, the first chef I ever worked with. He is the one who initiated me to the culinary world and help achieve my goal to become as reknown as he is.

All of my signature dishes are inspired by my personal stories or memories.

YOUR BIGGEST MISTAKE WHEN YOU WERE A BRAND NEW CHEF? When I was a Commis in Switzerland, I mixed up the degree setting with the timer on the combi oven. Let’s just say my potatoes gratin was not the color it is supposed to be :) 5 THREE WORDS THAT DESCRIBE YOUR DISHES? Seasonal, Instagramable and Daring.

“I want to put as much of the land to use as possible. We’ve dug ponds so we might stock some fish. We’ve planted a few hundred fruit trees and after rainy season we’ll plant more vegetables. And of course we have some rice fields. We eat well!”
