Fish Pie Fish pie is a British comfort-food classic. Packed with the goodness of fish and eggs, and topped with crisped, buttery mash, it is ideal for a big family lunch. Serves 4 to 6 For the Filling: 250g cod fillet, skinless and boneless 250g smoked haddock fillets, skinless and boneless Salt and freshly ground pepper 1 1/2 tbsp butter 1 tbsp heaped plain flour 300ml milk 1 bay leaf 4 eggs 150ml double cream 250g large prawns A handful of fresh flat leaf parsley leaves, chopped For the Mash: 4 largish Desirée potatoes, peeled and cubed 100g butter About a wine glass of milk Salt to taste

Preheat oven to 180°C/160° Fan/Gas Mark 4. Place each fish fillet on to large, separate piece of foil. Season with salt and pepper and top with a little butter. Fold the ends over to form neat little parcels and bake for 10 minutes. Don’t worry if it is not quite cooked; it cooks further in the pie without becoming dry. Melt the remaining tablespoon of butter in a large pan on a low heat, stir in the flour. Allow it to bubble for a couple of minutes, then whisk in the milk until the flour has dissolved. Drop in the bay leaf and allow the milk mixture to simmer for about 10 minutes. Whisk it occasionally until you have a smooth, thickish sauce. Put the eggs in a pan of cold water and bring to a rolling boil for 6 minutes. Remove from the heat and run the eggs under cold water. Peel and quarter the eggs and put them aside.Whisk the cream into the sauce and keep it bubbling for another 10 minutes. Stir in the prawns and heat through. Take the pan off the heat and discard the bay leaf. Add the fish and any of its cooking liquid, stirring it through and breaking up the fish into large chunks. Add the parsley and eggs and gently stir them through. Taste the mixture and season to taste. To make the mash, peel and cube the potatoes, and boil them in plenty of salted water until they are very soft when poked with a sharp knife. Drain and mash the spuds. I use a mouli as it makes a lovely lump-free mash. Stir through the milk and butter (don’t skimp on the milk as you want a fairly soft mash). Add salt to taste. Find a pie dish large enough to contain the fish mixture and pour it in. Dollop the mash evenly over the top of the fish mixture filling in all the gaps with the back of the spoon then use a fork to make peaks in the potato. Place the pie in the oven and bake it for 30 minutes or until the top is crisp and golden.

Beetroot Pasta Making fresh pasta is a great way to spend a wet weekend, as it is fantastic fun. It’s wonderful to do with children as it is so easy and almost impossible to make any mistakes and they love the whole process. The beetroot juice is a magical and transformative addition that turns the dough its sensational pink and gives it a slightly sweet, nutty flavour. Serves 4 For the Beetroot Pasta: 350g flour – plus extra to dust 3 eggs 1 pinch of Maldon salt 2 tablespoons of fresh beetroot juice For the Roast Beetroot and Mozzarella: 8 medium beetroots – trimmed and peeled 2 tablespoons of olive oil 2 teaspoons of cumin seeds 300g of mozzarella pearls A handful of chopped dill Put all the ingredients for the pasta into a food processor and blitz for a couple of minutes. Scoop out and form into a ball. It should be a soft dough, so add more flour if it is wet, or a little water if it is too dry. Dust a work surface with a little flour and knead the pasta well for at least 10 minutes. Cover with cling film and leave to rest for 20 minutes at room temperature. Divide the pasta into 4 balls. Keep 3 covered in cling film and divide the fourth into 3 equal lozenge shapes. Set the pasta machine on the highest setting and roll a lozenge through the smooth rollers into a wide sheet. Reduce the setting and roll again until it has been through all the settings, ending on the finest. Let the pasta sheets dry flat while you work all the other little balls into sheets. Each sheet should dry for about 10 minutes before running it through the tagliatelle setting. Separate the strands of tagliatelle, making sure they do not stick together, then leave them to dry over the back of a chair. Continue until the pasta is dangling all over the house. Leave it to dry for at least 1 hour. Store in an air-tight container until needed. Pre-heat the oven to 180°C/160° Fan/Gas Mark 4 Cut the beetroots into small cubes and place in an ovenproof dish. Drizzle with the olive oil and scatter over the cumin seeds. Season with salt and pepper. Give it a good shake and pop in the oven for 30 minutes, stirring after 15 minutes. Once your pasta is cooked, place into warm bowls and scatter over the beetroot, mozzarella pearls and dill. Serve.

Chocolate Dipped Shortbread Hearts Home baking is such a comforting pastime – prepare these sweet shortbread hearts as a perfect tea party addition, and fill your home with the enticing aroma of baking. This simple recipe creates delectably buttery shortbread, dipped in a coating of rich, dark chocolate. These delicious treats are ideal for tea time or superb served with coffee after dinner.

Makes about 40 hearts For the Shortbread: 225g plain flour 75g corn flour 200g butter, straight from the fridge, cut into cubes 100g caster sugar ½ tsp vanilla extract A pinch of salt Extra sugar and flour for dusting For the Chocolate: 200g dark chocolate (70% at least)

Preheat oven to 180°C/160° Fan/Gas Mark 4

Sift the flours together and put into a food processor with the butter, sugar, vanilla and salt. Blitz until it is well mixed and looks like breadcrumbs or begins to clump. Turn out onto the work surface and work into a ball. Divide into 4 and dust the work surface with a little flour. Roll out each piece of dough to a thickness of a £ coin or a little thinner. Cut the biscuits with a heart-shaped cookie cutter if you have one, or your favourite shape and place the biscuits on a baking sheet. Bake on the middle rung of the oven for 10 minutes. Leave in the tin to cool. Meanwhile, melt the dark chocolate over a pan of boiling water. Once melted dip the cooled biscuits into the chocolate and leave on a cooling rack to set.
