Welcome to the latest edition of SLIM Magazine, and the last one for this year - already! It feels like only minutes ago I was welcoming everyone to the first edition for 2023. We have created a fabulous magazine for you to round out the year, packed full of great reads, delicious recipes, the best books and movies to keep you entertained over the holidays and of course our amazing giveaways! Heading into and throughout the silly season it can be hard to keep on top of your health and well-being goals, which is why in this edition we have included some great articles about keeping your diet goals in sight and tricks and tips to maintain your progress. We also have a fascinating article about dangerous diets and the fads you should definitely be avoiding. A wonderful woman named Naomi shares her inspiring story of changing her life through weight-loss surgery, better nutrition and moving more. Her transformation and dedication to achieving her lifelong goals is great reading. Our cover girl for this edition is the gorgeous and gutsy Charlize Theron - not just an incredible actress, but an amazing philanthropist and role model. This one is well worth taking poolside for a little relax and cool drink in the heat.

THYROID NODULES AND CANCER What conditions affect the Thyroid Gland? Several conditions can affect the thyroid gland. A generalised inflammation of the gland is called “thyroiditis”. It commonly disturbs the overall function of the thyroid gland. A localised growth of the thyroid gland is called a “thyroid nodule”. It is a risk factor for thyroid cancer. Is Thyroid Cancer common? Thyroid cancer remains relatively rare at 1 percent of all cancers, though is the most common type of “Endocrine Cancer”. The incidence is estimated currently at 15/100 000. Endocrine refers to the ability to produce hormones or ‘chemical messengers’ which are secreted into the blood. Which individuals are at risk of Thyroid Cancer? The most common type of thyroid cancer, papillary carcinoma, accounts for 80 percent of all thyroid cancers. This cancer is more common in women, commonly presenting in patients aged 30 to 40 years of age. It is in total a disease of young adult women. How does Thyroid Cancer present? It most commonly presents as a slow growing painless neck lump. It carries a good prognosis, though if not diagnosed early can spread throughout the body via the lymph glands. What are the risk factors for Thyroid Cancer? Risk factors for thyroid cancer are typically genetic and environmental based. This includes family history, female gender, thyroid nodules, prior radiation exposure, certain age groups, and for certain thyroid cancers a deficiency of iodine in the diet. What is a Thyroid Nodule? A thyroid nodule (TN) is a localised growth of the thyroid gland. These nodules can be solitary in nature or

be in large numbers known as cluster groups or multinodular (thyroid) goitre: i.e., MNG. Nearly most of these nodules are non-harmful or benign. Only a very few nodules are at risk of being cancerous. Are Blood tests required when being assessed for Thyroid Cancer? Most patients will have a blood test when having thyroid gland tests. However, when it comes to thyroid nodules most will have a normal functioning thyroid gland. Most thyroid nodules (TN) do not actively make hormones in excess. A very few variants of thyroid cancer may secrete hormones in excess. The blood tests will show any likelihood of these rare cancers being present. What other tests are required? Patients will be referred for an ultrasound study of the thyroid gland. During this study, the thyroid gland will be measured. Any growths such as nodules, will also be recorded. The specialist doctor, a Radiologist, will then assess these thyroid images and decide which nodules may look ‘suspicious’ and require a biopsy procedure. The Radiologist will use a “Lexicon” in the Thyroid Gland Report. A lexicon is an accepted standard of terminology which enables all doctors to use the same language and methodology for reporting. In this case the lexicon used is Thyroid Imaging Reporting and Data System (TIRADS). This standard of reporting aims to provide an easy-to-apply method for all doctors to determine the appropriate management. I have nodules so what happens now? The nodules will be graded using the TIRADS lexicon. This will determine if any nodules need immediate action with a biopsy procedure. Otherwise, certain types of nodules will require monitoring with annual surveillance ultrasound studies. SURVIVING THE HOLIDAYS OMB FAMILY LAW’S TOP TIPS FOR SUMMER HOLIDAYS By Abbi Golightly 1. Have a back-up plan No matter how hard we try to make Christmas that “picture-perfect” day, things can and often do go wrong, especially in separated families. If the issue that arises is small, just make a note of it for the following year so you can think about what happened and do what you can to stop it from happening again. Unfortunately, high spirits (including daytime drinking of alcoholic spirits!) and the build-up of family pressure can erupt on Christmas Day which can result in plans being ruined, orders being breached and sometimes, just downright terrible behaviour. If these things happen to you, protect the children from exposure to such behaviour and if necessary call 000

immediately for support if your or the children’s safety is at risk. If your lawyer is closed over this period (most firms close for around 2 weeks), make a note of what happened (as close as possible to the event so that your recall is clear) and then book a meeting with your Family Lawyer as soon as possible after they re-open. 2. Try to remember the true meaning of Christmas Christmas is really about love, family, friendship and appreciating how privileged we are. It is not about winning the battle with your ex, being the parent who gives the best gifts, the one who spends the most money, or the parent who takes the kids to the best theme park or holiday destination. Kids know when you are competing for the title of “best parent” and, in all honesty, they don’t like it.

3. The world will not end if the children do not see both parents on Christmas Day. It may be best to allow the children to spend Christmas Day with one parent and Boxing Day with the other, allowing the children to enjoy time with both sides of the family without feeling rushed. This is particularly important if seeing both parents would cause the children to spend a significant amount of time travelling between households. A common solution is to alternate the year in which the child spends Christmas or Christmas Eve with each parent. Remember that Christmas is for the children first and foremost, so put your personal feelings, opinions and wants to the side and make arrangements that benefit your children primarily. 4. Changeover should be stress free – do not fight in front of the children. Exposure to conflict has lasting effects on children and can damage the relationship between a child and their parent. If you believe that it likely that the other parent will become verbally or physically abusive to you when delivering or collecting the children then you must consider safe alternatives such as having a trusted friend or relative assist with changeover, or depending on the age of the children allowing them to enter their parent’s property and you remaining outside in the car or at the kerb side. 5. Do not prevent a child contacting the other parent. It is important for children to have a meaningful relationship with both of the parents where at all possible. If your child wants to call their mother or father in their time with you, use your discretion as to whether timing is appropriate but otherwise you should encourage regular contact especially if the child expresses the wish. Let them enjoy telling their other parent about all the wonderful things that have occurred in your household and allow their other parent to experience that joy. It is only a small imposition on your time, but will mean the world to the other parent.

6. Communicate and be flexible. Keeping an open communication with the other parent is best for the children as long as that communication is respectful. You should try to provide information to the other parent on anything to do with the children that is relevant to the other parent’s time with the children or regarding the children’s activities, schooling, health or well-being. Also if changes need to be made to arrangements from time to time, try to accommodate if possible provided enough notice is given. 7. Allow your child to take items of comfort or gifts between homes. Particularly for young children, having favourite and familiar items with them can assist them to settle in the other parent’s home, such as teddy bears, blankets, or favourite toys, provided that there is a clear understanding between the parents that these items travel with the child and if something is left behind and the child becomes distressed, how that item will be delivered back. Making children keep their toys and gifts at your house creates a circumstance whereby the children think something is wrong with their other parent’s home. Allowing free passage of toys and belongings ensures that the children feel they have two homes rather than two “houses” – the difference is immense 8. Where problems arise, consider mediation as a first option. Unhelpfully many services including legal services close over the Christmas and New Year period. Unless there are very urgent circumstances or there is a significant risk of harm (in which case you can contact the police), you should contact a mediation service in the New Year to arrange for Family Dispute Resolution so that 2024’s holiday period doesn’t suffer from the same hiccups that 2023 did. If you anticipate issues, then please engage with your legal team now, to ensure that steps can be taken to progress matters and agreements reached, prior to the Christmas 2023 closure. What was your relationship with food? I was brought up with the family rule, take all that you want but eat all that you take – unfortunately I would focus on the take all that you want, but didn’t always recognise that was far more than I needed. When I was sad, or angry or upset I would take more and more, and make sure I’d eat it – but now I am much happier to take what I can eat and enjoy it. What motivated you to go on your weight-loss journey?

I might just tip into double digits if I was lucky (and I was completely ok with that) but the success that this surgery has had for me has been amazing.

My snoring. I went to see an ENT (Ear Nose and Throat specialist) at the urging of my partner as my snoring had become so bad he was concerned that I may have an issue in the night. I expected the ENT to say I needed to lose weight – what I wasn’t expecting him to say was I needed to get at least 30 percent of my body weight off to have an ENT surgery to assist. I had never considered weight-loss surgery as an option for me before, I was dead against the idea (for me). I didn’t think I needed it, and to be honest I was ok with my appearance – it was the health issues that finally pushed me to my initial appointment.

Post-surgery, what have been some of the challenges?

How long had you battled with weight issues?

None whatsoever! I know a lot of people say they regret not doing it sooner, but honestly I wouldn’t have been mentally or emotionally ready sooner.

When I left high school I stopped playing sports, and led a more sedentary lifestyle – over the past 23 years it crept up and up, and sometimes I’d lose a bit, but never as much as I put back on. However, I was always a bit chubbier. I used to get teased in high school about my weight, so I guess I’ve always had an issue of some kind with my weight. What health problems did you face as a result? I didn’t realise, until I started to lose the weight, how badly I was sleeping – maybe three to four hours a night of broken sleep. I was tired all the time, not motivated and some days I just couldn’t think. I’m very, very fortunate that I haven’t (so far) had any long term health effects, but I do know it was likely only a matter of time. What made you decide on weight-loss surgery, and which procedure was the right one for you? When I went to the ENT they referred me on to a bariatric (weight-loss) surgeon, and when I met with him we discussed both the sleeve and the bypass as an option for me. As my primary goal was dealing with the sleep issues, after discussing pro’s and con’s of both options, I felt that the sleeve would be the most appropriate. Honestly, I thought I might lose about 30kg – and

Water, I really struggle with plain water now – but sugar free cordial does the trick, and actually remembering to eat! Sometimes I don’t feel hungry at all and it’s not until I get another symptom like some heartburn or a dizzy spell that I remember to eat. Any regrets?

Tell us about any significant or special achievements you have had since surgery and if the results of your surgery helped you achieve these? About 20 years ago I met someone at university who used to do skydiving. She and her husband would do all sorts of competitions and displays, and she made it sound like the most fun – I saw photos and heard about the rush and I decided I wanted to try it – just once – to see what it was like. To do a tandem skydive you generally need to be under 95kg, and I was just over that at the time, so I decided I’ll lose the weight and go do a tandem and be done with it. Unfortunately, that didn’t happen and in fact my weight, and my poor habits, increased. A few times I found a skydiving place that would allow you to tandem over 95 kg with a surcharge (I get it, you need a certain weight to chute ratio to make sure you land safely) but I wasn’t ever able to go. After 20 years I’d actually given up on the thought and even after my surgery I wasn’t thinking about it as an option – like I said I thought I’d be very lucky to get to double digits. As we got close to Christmas last year

(about 7 months post surgery) my mum asked me what I wanted for Christmas – at that time I was bang on the 95kg – and I decided I wanted to finally do my skydive. On my 12 month “surgiversary” at exactly the same time I was under a year prior – I threw myself out of a perfectly good aeroplane and FINALLY got to experience that amazing freefall over Kirra beach, and yes I’m going back for more! If I hadn’t had this surgery I don’t think I would ever have been able to skydive, and yes my friends and family think I was nuts for throwing myself out of a plane! This surgery, along with all the other good things like being able to sleep, less achy joints and being able to buy clothes more readily, has helped me to finally live that dream. Advice for anyone considering the same surgery as you? Go and get a consultation! Just go and find out what your options are. You may ultimately decide it’s not for you, or you may grab on with both hands and go for it – but how do you know until you go and find out? I have found it worth it for me, and so have a number of other people I know – so go and find out for yourself.

A PAIN IN THE GUT: GALL BLADDER SURGERY GALLSTONES OFTEN DEVELOP AFTER WEIGHT-LOSS SURGERY. IN SOME CASES, GALLSTONES CAN BECOME A REAL PAIN IN THE GUT, AND GALLBLADDER SURGERY MAY BE REQUIRED.

The gallbladder forms part of the digestive system, storing bile which aids in the digestion of fats. When the gallbladder doesn’t empty properly or when small crystals (stones) start to form inside, it can begin to cause issues such as pain, bloating and infections.

The only way to properly deal with gallstones and prevent future problems is to remove the entire gall bladder along with all of the stones. Your GP will refer you to a specialist in hepatobiliary surgery who will discuss the issue with you and explain the procedure.

Gallstones are most common in people over 40 years of age and many people who have gallstones experience no symptoms at all. They can however cause severe pain when they block the gall bladder from emptying, and often in bad cases, women describe this pain as worse than labour pains. When someone experiences an attack of gallstone pain, generally there is a 75 percent chance they will have more episodes within the year.

Gall bladder surgery is performed laparoscopically (keyhole surgery) where four small incisions are made in the abdomen and instruments inserted to inflate the abdomen and remove the gall bladder along with all of the stones.

Occasionally patients may experience vague symptoms such as a bit of nausea occasionally, or some bloating or mild abdominal discomfort. When the gallstones are dealt with in these people, these symptoms disappear. Some people can have gallstones for a long time without ever having problems. They can however cause major problems and severe complications such as pancreatitis, cholangitis (infection spreading up into the liver), and jaundice, which can lead to prolonged illness and hospitalisation, sometimes requiring intensive care. Once someone has gallstones, there is about a 2 percent chance they will cause a major complication every year. In young people it is generally recommended they have their gall bladder removed.

Laparoscopic gallbladder surgery is an extremely safe procedure that can often be completed in around half an hour. Your surgeon will talk to you about the process in detail and explain the potential side effects and risks which are rare. Recovery from gall bladder surgery is very quick, usually just an overnight stay in hospital, and patients will be able to get back to work within a few days. There are no long-term effects of not having a gall bladder, however some patients notice a change in bowel habits if they eat a lot of fatty food. These symptoms tend to reduce and return to normal after a few weeks. The good news is, once you have had your gallbladder removed, it is a pain in the gut you won’t have to deal with ever again.

Blepharoplasty, more commonly referred to as eyelid surgery can be performed on both the upper and lower eyelid and is an option most commonly considered by patients who have developed fatty deposits around the upper or lower eyelids, or those with excess or sagging skin around the eye area.

In lower eyelid surgery, the surgeon will make an incision under or inside the eyelid and any excess skin or fatty deposits will be able to be removed or redistributed and the skin tightened. This incision site is ideal as it most often leaves no visible scar.

These fatty deposits or sagging skin can give patients a tired look, and in some cases can even restrict a patient’s vision. Eyelid surgery will remove these fatty deposits and tighten the skin around the eyes, improving the appearance of the patient’s eye area and/or alleviating any loss of vision due to the sagging skin.

Blepharoplasty is a day surgery procedure which means patients will head home the same day of their surgery. Once discharged patients will need to follow an at-home care routine that will include administering cold packs to reduce swelling and bruising and applying eye ointments and drops to keep the eyes clean and lubricated.

Before meeting with a plastic surgeon to discuss your eyelid surgery requirements, patients will need to see their GP to discuss the issues they are experiencing and receive a referral. Prior to your procedure, your surgeon will meet with you to understand your needs and the outcomes you are hoping to achieve, and to discuss the options available to you.

Most patients recover quite quickly from this type of surgery, needing only around two to three days to start feeling normal again, and only two to three weeks recovery time before resuming all ordinary activity. However, it should be noted that all surgical procedures carry risks and that individual results can differ between patients.

Once a procedure has been decided on, the surgeon will carefully assess your eye area to determine the most appropriate surgical plan for your individual needs. Your surgeon will discuss the plan with you in detail, along with any risks and the intended outcomes before proceeding to surgery. Some eyelid surgery can be performed under local anaesthetic, however Dr Widdowson may choose to perform this surgery under general anaesthetic as it can be quite difficult for patients to remain calm and still for the entire surgery. It is also very important that the experience of surgery is made as stress free as possible for patients in order to achieve the best outcomes. In upper eyelid surgery the surgeon will make an incision in the natural crease of your eyelid and any excess skin or fatty deposits will be removed or redistributed and the eyelid tightened in order to alleviate any vision loss and provide an aesthetically pleasing look to the eye. Making the incision in the eye crease is the best position for optimal surgical outcomes and will also minimise the appearance of any scarring that could occur.

LET’S TALK ABOUT BLADDER LEAKAGE BLADDER LEAKAGE IS OFTEN A TABOO SUBJECT FOR MANY WOMEN, BUT THE TRUTH IS, IT’S A RELATIVELY COMMON CONDITION. A LACK OF UNDERSTANDING AND HESITATION TO DISCUSS THE ISSUE MEANS MANY WOMEN SUFFER IN SILENCE, BUT THE GOOD NEWS IS YOUR GYNAECOLOGIST CAN PROVIDE A NUMBER OF TREATMENT OPTIONS TO EFFECTIVELY TREAT THE PROBLEM AND HELP YOU LIVE YOUR LIFE TO THE FULL.

Bladder leakage can affect women at any age, but is most common in women during and after pregnancy, who have gone through menopause, and women 65 years of age and over. One of the most common types of bladder leakage is stress incontinence which occurs when stress (or pressure) is applied to the bladder or pelvic floor things such as sneezing, coughing, running or even walking can bring on slight bladder leakage. This type of bladder leakage is caused by a weakening of the urethra which commonly occurs after the stresses of childbirth or the change in hormone levels during menopause. If bladder leakage is a concern for you, it is important not to suffer in silence, there are many treatment options available to you. The first step is to seek advice from your GP or trusted health professional who may refer you to a gynaecologist. Your gynaecologist will examine you and discuss the issue with you in depth to develop a treatment plan that meets your individual needs. Bladder leakage can sometimes be alleviated by simple changes to things such as diet and lifestyle, but in many cases further treatment may be required. There are a number of medications and non-surgical interventions that can help to alleviate or even cure

bladder leakage. One procedure that has been shown to improve the condition is the use of laser therapy. Dr Cary utilises the Juliet Laser for this treatment option. The Juliet laser works to rejuvenate the vagina by stimulating collagen production. The laser uses infrared pulses that reach the deep layers of mucosa (the protective lining of the vaginal walls) without affecting the skin or surrounding tissues. The laser treatment is painless and non-invasive and can be performed in Dr Cary’s Gold Coast office. Treatment takes around 15 to 20 minutes and patients can return to normal activity straight away (except for sexual intercourse, which should be avoided for three days post procedure). Results are immediate and continue to develop during the weeks post treatment. Most patients only require one treatment session. If your bladder leakage is severe and/or has not responded to other forms of treatment, Dr Cary may suggest alternative options such as surgery to support the urethra and bladder. This common issue needn’t stop you from enjoying a full and active life. There are plenty of treatment options available, many of which are non-surgical and non-invasive. BREATHE EASY ROBOTIC ASSISTED THORACIC SURGERY (RATS) HAS BEEN PERFORMED SINCE THE 2000’S AND OVER THIS TIME HAS BECOME THE PREFERRED SURGICAL OPTION OF MANY THORACIC SURGEONS DUE TO ITS ACCURACY, MINIMAL INVASIVENESS, IMPROVED RECOVERY TIMES FOR PATIENTS AND REDUCED POST-SURGERY COMPLICATION RATE. Thoracic surgery relates specifically to the organs found within the chest such as the heart, lungs and oesophagus. Surgery in this area of the body can be among the most invasive, and patients often face long recoveries and the possibility of complications as a result of large incisions. However, the use of robotic surgery in this area can reduce the invasiveness of some thoracic surgeries, and over the last twenty years has led to improved outcomes for thoracic patients. Lung surgery is one area of thoracics that has seen much improvement due to the use of robotic technology, particularly in the treatment of early stage lung cancer where resection or the removal of part of the lung is necessary. The use of robotics in this type of surgery means the surgeon doesn’t need to create a long incision and open the ribs in order to access the lungs. Instead, a number of small incisions are made and the surgical instruments, including a camera for visualisation, are inserted through the incisions located between the ribs, removing the need to open the rib cage. The robotic instruments are very small and precise so that they can operate effectively within a tight space and respond to the surgeon’s movements. The surgeon has control over these instruments throughout the entire surgery and will be seated close

by to the patient at a special robotic console within the theatre. The camera used in the procedure magnifies the surgical area so that the surgeon can clearly see the anatomy and make decisions on the best course of action. Surgeons performing robotic surgery undertake extensive training in the use of the robot and regularly practise with the robotic system so they can hone their technique and become entirely comfortable with the use and feel of the robotics equipment. Become a protein fan Most of my clients aren’t consuming adequate amounts of protein. Protein is key for satiety and a game changer for weight-loss. It has been proven to aid in weight-loss and 25 grams at each main meal will keep you feeling full until your next meal. It also assists in reducing cravings and excess snacking.

3. Don’t skip meals Yes, that’s right, stop skipping those meals! Spacing out your meals across the day will help you to lose weight. Skipping meals can actually slow your metabolism, meaning you won’t be burning fat. It also affects your hormone and insulin levels, so when you do finally sit down to eat you are more likely to make unhealthy choices. If you are rushed, a convenient meal on the go like The Lady Shake is a great option that provides a balanced amount of protein, fibre and other essential nutrients. 4. Use your downtime wisely Many people unwind with a drink and going on a diet doesn’t mean you have to completely stop, but you do need to be mindful because alcohol contains empty calories. MINDING YOUR MENTAL HEALTH ACCORDING TO BEYOND BLUE, ONE IN SEVEN MEN IN AUSTRALIA WILL EXPERIENCE DEPRESSION IN THEIR LIFETIME, AND MEN ARE LESS LIKELY TO SEEK HELP FOR MENTAL HEALTH CONDITIONS THAN WOMEN.

In 2020-21, 37 percent of men who experienced a mental disorder in the past 12 months saw a health professional for their mental health, compared with 54.7 percent of females [1]. This is a significant difference, and one that is slowly changing, but as the saying goes “prevention is better than cure” and the good news is there are plenty of small and simple steps you can take each day to boost your mental health. Practising things like gratitude, kindness, mindfulness and getting enough physical exercise and sleep are just some of the things you can do every day to help improve your wellbeing. Gratitude Taking the time in your day to consider and identify the things you are grateful for can boost your overall well-being. When you are starting this daily exercise it can be helpful to write down the things you are grateful for in a journal. Try and start with three small things - they can be anything at all - people, places, things etc.

Exercise The Australian Department of Health and Aged Care recommends adults be active on most days of the week, achieving at least 2.5 hours of moderate exercise each week. Examples of exercise could be going for a walk on the beach, riding a bike or going for a swim. Try to build a little bit of exercise into your day, every day, and you will begin to notice a difference to your mental and physical well-being. Sleep Sleep is an essential ingredient to good mental health. Studies show that not getting enough sleep can really affect your well-being. It can affect tasks such as decision making, problem solving, emotional and behavioural regulation and can lead to issues of mental health. Try starting a good sleep routine that prepares your body for sleep. Set a time for bed and stick to it, dim the lights, turn off handheld devices 20-30 minutes before heading to bed and make sure you are comfortable in your sleeping environment.

DON’T LET GOOD HEALTH GO DOWN THE TOILET IT’S A PRETTY STINKY SUBJECT, BUT THE FACTS ARE, ACCORDING TO BOWEL CANCER AUSTRALIA, THAT BOWEL CANCER IS AUSTRALIA’S SECOND MOST DEADLY CANCER AND AROUND 300 AUSTRALIANS ARE DIAGNOSED WITH THE DISEASE EACH WEEK. OF THOSE 300, 54 PERCENT OF THEM WILL BE MALE. It is definitely one of those uncomfortable subjects that always seems a little taboo, but bowel cancer is a subject worth investigating, and the good news is, if detected early, bowel cancer is treatable in around 90 percent of cases.

If you experience any of these symptoms it is best to see your General Practitioner (GP) and discuss the issues with them. Your GP may send you for blood tests and perhaps even suggest a colonoscopy to confirm or rule out the possibility of bowel cancer.

Bowel cancer occurs in the colon (the majority of the large intestine) and the rectum (the last part of the colon and where waste is stored before being expelled) and often begins as polyps within the bowel.

The most effective method used to detect cancerous polyps is by undergoing a colonoscopy. During the colonoscopy the surgeon will inspect the large intestine and locate any polyps that may be present. Often the surgeon will be able to remove these polyps and send them to be tested, your surgeon or doctor will review your results with you and discuss next steps.

Polyps develop on the inside of the colon and rectum and are fairly common, particularly in men. Most of the time these polyps are not a problem, but some types of polyps can become cancerous and cause bowel cancer. It is these polyps that need to be detected early and removed if possible. Very often, in the early stages of bowel cancer, there are few symptoms of the disease, or people often attribute these signs to other conditions. Some of the symptoms of bowel cancer include: •

A change in bowel habit or faecal consistency or appearance that is sustained.

Blood in your stool or bleeding from your rectum.

Consistent abdominal distress such as cramps or gas pains.

Aneamia that is unexplained.

Feeling as though your bowel has not emptied after having been to the toilet.

If you don’t have any specific symptoms, regular use of an at home bowel cancer screening kit is a great way to keep an eye on things. The Australian Government issues an at-home screening test to eligible Australians between 50 and 74 years of age every two years as part of the National Bowel Cancer Screening Program. Though not the most pleasant of activities, the bowel screening test is easy and quick to use, requiring you to take two stool samples and send them away for testing. You will generally receive your test results within two weeks and your next steps will depend on your results. Regular screening and taking action when you notice symptoms are the best ways to detect bowel cancer early. Don’t let your chance of good health go down the toilet.

PRUNE STICKY TOFFEE PIE

75g salted butter, plus a little extra for greasing 175g prunes (de-stoned weight) 150ml boiling water 1 tsp bicarbonate of soda (baking soda) 150g soft light brown sugar 2 medium eggs 2 tbsp black treacle 150g self-raising flour Ice cream, cream or custard, to serve Fine sea salt

Preheat your oven to 180°C/160°C fan forced. Grease and line a 900g loaf tin. De-stone the prunes, then blitz in a food processor to a rough paste, or chop by hand. Add to a bowl, then pour in the boiling water and the bicarb. Stir, then set aside. Measure the butter and sugar into a large bowl. Whisk together (a hand whisk is fine) until well combined, then crack in the eggs and whisk again. Add the treacle, followed by the flour and a big pinch of salt. Whisk until you have a smooth batter, then add the prunes, along with their soaking liquid, and whisk again. Scrape the batter into the tin. Bake for 40–45 minutes until a skewer, or piece of spaghetti, poked into the centre comes out clean. Leave to cool completely in the tin. Meanwhile, make the sauce. Combine all the ingredients in a saucepan over a medium heat. Bubble away for 3–5 minutes until fully amalgamated into a luscious toffee sauce. Season with salt to taste for proper salted caramel vibes. Turn off the heat. Just before serving, preheat your oven to 180°C/160°C fan forced. Line a large roasting tray with foil. Cut the sticky toffee loaf into 8 thick slices. Dollop a large spoonful of toffee sauce on top of each slice, pop on the tray then cover the tray with foil. Heat for 8–10 minutes until bubbling. Meanwhile, reheat any remaining toffee sauce in a pan to pour over. Serve each slice covered in sauce, with ice cream, cream or custard, your choice. 58 slim magazine SUMMER 2023/24

TIP This sticky toffee loaf will taste even better the next day (it keeps for a week). Once baked and cooled, wrap it tightly in cling film and keep at room temperature. The sauce can be made in advance and kept in the fridge. It will harden once cold, but will come back together once reheated.

KEY LIME MERINGUE PIE INGR EDIENTS SERVES 12 - 14

50g ginger biscuits 140g salted butter 8 limes 6 medium eggs 2 × 397g tins condensed milk 300g caster (superfine) sugar

METHOD Preheat your oven to 160°C/140°C fan forced. Tip the biscuits into a food processor and blitz until you have fine crumbs. Alternatively, put them into a sandwich bag and smash super well with a rolling pin. Melt the butter in a pan over a medium heat, then take off the heat. Add the crushed biscuits and stir to combine. If using a food processor, you can just pour the melted butter in and pulse together. The mixture should be the texture of wet sand. Tip the buttery biscuits out into a 23cm tart case and use your fingers to evenly line the tin with the mixture, making sure you cover the base and sides. Bake the pie crust in the oven for 10 minutes, then leave to cool slightly. Meanwhile, zest and juice the limes into a bowl. Separate the egg whites and yolks. Put the egg whites into a container in the fridge for later, and put the yolks into a large bowl. Using an electric whisk, whisk the egg yolks until they have lightened and thickened slightly – this will take around 2 minutes. Add your condensed milk, whisk to combine, then whisk in your lime zest and juice. Scrape the lime-flavoured filling into your ginger-biscuit pie crust. Bake in the centre of the oven for 15–18 minutes until the filling is just set; if you lightly shake the tart case, the middle should have a small wobble. Leave to cool completely, then chill in the fridge for at least 3 hours, or overnight. When the key lime pie is cold, it’s time to make your Italian meringue. Don’t be nervous, it’s super simple, and it can also be done up to a few hours in advance. Measure the sugar into a saucepan, along with 100ml water. Place over a super-low heat and leave the sugar to dissolve – you can use the handle of a wooden spoon to lightly aggravate the sugar with the water if some bits aren’t melting. Once the sugar has dissolved, increase the heat to medium and simmer away until it reaches 115°C on a digital thermometer. At this point, using an electric whisk or a stand mixer, start whisking your egg whites – you want them to get to a foamy stage. Come back to the sugar. Once it is at 121°C remove from the heat. While continuing to whisk your egg whites, gradually and carefully pour the hot sugar syrup into the bowl, pouring it down the side so that it becomes incorporated gradually. Once all the sugar has been added, keep whisking your meringue until it has cooled to room temperature and is super glossy and white. At this point, you can cover the meringue and put it into the fridge. Once ready to use, simply re-whisk to make it glossy again. Remove the key lime pie from its tin – I find using a palette knife or cutlery knife can help gently release the edges. Put the pie onto a serving plate, then pile on the meringue. Finally, use a blowtorch (the fun bit!) to caramelise the outside and be wowed by your own success. A proper showstopper. 59 slim-magazine.com.au

220g (1 cup) short-grain rice 70g caster (superfine) sugar, plus a little extra for the brulée 1.2 litres (5 cups) full-cream milk 6 green cardamom pods, cracked 1 cinnamon stick Zest of 1 lemon

This is a riff on a classic Turkish rice pudding, which actually caramelises naturally when baked. I coat the surface with sugar and brûlée the top either by blowtorching or grilling it. This dish can be served warm or cold.

METHOD Place all the ingredients in a heavy-based saucepan and bring to the boil over a medium heat. Stir all the way to the bottom and into the corners to make sure it doesn’t stick. Once the mixture begins to boil, turn down the heat and keep stirring until it thickens to the consistency of custard. Remove from the pan and spoon in glass or ceramic bowls that can withstand the heat of a grill or blowtorch. Sprinkle with an even coating of sugar, then use a blowtorch or place under a very hot grill to caramelise the tops. 61 slim-magazine.com.au

CHICKEN PAILLARD WITH SAGE, GARLIC AND BROWN BUTTER

2 x 200g chicken breasts, boneless and skinless ½ cup plain (all-purpose) flour 2 tbsp extra-virgin olive oil 50g unsalted butter 8 garlic cloves, unpeeled and smashed 2 tbsp capers in brine, rinsed Half a bunch of sage, leaves picked (about 20–30 leaves) Zest and juice of half a lemon 100ml chicken stock Fine sea salt Freshly cracked black pepper

NOTE To butterfly a chicken breast, lay it on a chopping board with the thicker end pointing away from you. Press down onto the chicken with the palm of your hand while you use your other hand to cut through the length of the chicken breast using a chef ’s knife, aiming to get as close to the centre as possible. Do this slowly and carefully. As you cut, use the hand that’s pressing down on the breast to lift the top piece of breast away from the bottom. Cut all the way through to the other end, leaving you with two thin slices of chicken breast.

METHOD Butterfly the chicken breast (see note) and place it in-between two sheets of baking paper. Use a rolling pin to bash the chicken until it’s 3–4 mm (about 1/8 inch) thick. Remove the paper and season the chicken with salt and pepper on both sides. Tip the flour onto a plate or tray and coat the chicken in the flour. Set a wide, flat frying pan over a high heat and add the olive oil. When the pan is hot, add the chicken and cook for 1–2 minutes per side, until slightly golden. Remove the chicken from the pan and reduce the heat to medium. Add in the butter and garlic cloves. When the butter has browned, add in the capers and sage and fry for 30 seconds. Next, add in the lemon zest and juice, along with the chicken stock. Simmer the pan sauce until it has reduced by half, then add the chicken back in, coating it in the sauce and cooking for a further minute just to heat it through. ½ cup diced red chilli (deseeded), about 3 long red chillies ¼ cup minced French shallot, about 1 large shallot ½ tsp Korean red chilli flakes (optional) 1 tbsp minced garlic (about 3–5 cloves) 1½ tbsp minced ginger Generous 1/3 cup neutral oil 1½ tbsp Shaoxing wine ½ tbsp light soy sauce 1 tbsp white (granulated) sugar ½ tbsp fish sauce

1 lime, cut into 4 wedges

METHOD Before you begin: A food processor makes quick work of chopping the chilli, French shallot, ginger and garlic. Be sure to add each ingredient separately, so they chop evenly. For the ginger and chilli jam, combine the chilli, shallot, chilli flakes (if using), garlic and ginger in a small pot and add the oil. Sizzle this over a low heat for 15–20 minutes, until most of the water in the aromatics has evaporated and they are just beginning to brown. Stir often, ensuring you scrape the bottom of the pan. Some bits will stick and caramelise, which is fine; just make sure they don’t burn. Carefully (it will spit!) add in the Shaoxing wine, soy sauce, sugar and fish sauce and simmer for 5 minutes, until the mixture appears jammy and has thickened. Set aside. Place a rack in the top-third of your oven and preheat to 220°C. If your oven has a grill (broiler) option, use that here to cook the prawns on a high heat. Line a baking tray with baking paper and lay the prawns on the tray. Spoon a couple of teaspoons of the ginger and chilli jam over each prawn and bake in the oven for 5 minutes, flipping them over halfway through cooking. Note: if using your grill, you may need to adjust the cooking time slightly – you’re looking for the prawns to turn a nice pink colour. Remove the prawns from the oven and serve with wedges of lime and perhaps a small ramekin of the ginger and chilli jam on the side. 63 slim-magazine.com.au

NOTE I’ve written this recipe to be cooked using your oven but these prawns would be excellent cooked on an outdoor charcoal grill. Just brush the prawns with a small amount of neutral oil and grill for 2 minutes per side. Spoon the ginger and chilli jam over the cooked prawns.

400g good-quality dark chocolate, broken up 6 eggs, separated 150g caster (superfine) sugar 2½ tbsp Cointreau 300ml pure (whipping) cream, plus extra, whipped, to serve Icing (confectioners) sugar, to serve

CHOCOLATE CAKE METHOD Preheat the oven to 175°C. Cut a piece of greaseproof paper to fit a 20cm round cake tin, with a double layer for the side and a single layer for the bottom. Spray the tin with cooking oil and fit the greaseproof paper in tightly. Melt the chocolate in a stainless steel bowl set over a saucepan of hot water. Don’t let the water in the saucepan boil, as you can scald the chocolate. Remove the chocolate from the heat and allow to return to room temperature. In a large bowl, beat the egg yolks and two-thirds of the caster sugar until pale and creamy. Add the Cointreau and beat until well combined. Add the chocolate to the egg yolk mixture and stir until completely incorporated, then slowly stir in half the cream. Set aside. Whip the remaining cream until soft peaks form. Set aside. Start whisking the egg whites in a very clean bowl. When soft peaks start to form, slowly add the remaining sugar and whip until very firm. Fold the whipped cream into the chocolate mixture. Finally, fold in the whipped egg whites. Pour into the cake tin, put the tin in a bain-marie or on a baking tray and add enough hot water to come about 2.5cm up the outside of the tin. Bake for 45 minutes. Turn the oven down to 150°C and bake for a further 45 minutes. Turn the oven off and leave the cake in the oven for 20 minutes. Cut around the edge of the tin, turn it over onto a plate and the cake should slide out easily. Cut slices using a knife dipped in hot water and clean the knife after each cut. Place on white plates. Sprinkle with icing sugar and serve with lightly whipped cream.

METHOD Battered fish, yum! Battering the fish does two things: one, it protects the fish from the fierce heat, so that it gently steams inside the batter; and, two, it gives a great crunchy exterior. This is a really simple beer batter: leave it lumpy, as it seems to make the fish more crisp and more tender at the same time. If you whisk or incorporate it well, it makes it tougher. Flathead is a really sweet white-fleshed fish with a nice large flake; it is also easy to fillet and avoid the bones, which is one reason why many kids grow up on it. It was once considered cheap, but now has risen in value. It is a truly great fish, and one of my brother Robin’s favourites. You can substitute any white-fleshed fish or shellfish; don’t use oily fish though, as they are better suited to other uses. Cook the fish fairly quickly, as the faster they get to the table the better. To make the beer batter, add enough flour to the beer to give it the consistency of pouring cream. Mix it with a chopstick (it shouldn’t be completely smooth), allow to stand for 10 minutes in the refrigerator, then add some ice cubes – the batter seems to turn crisp in the hot oil better if it is cold. Heat the oil in a large frying pan or deep-fat fryer to 180°C. Dip the flathead fillets in the seasoned flour, then into the batter, shake off any excess and gently put into the oil. Don’t try to cook all the fish at once, do it in two or three batches. Cook for about 5 minutes, or until the batter is golden brown, then remove the fish with a slotted spoon and drain on paper towels. Keep warm while you cook the rest. When ready, place a fish fillet on each of four plates and serve with a lemon wedge and a sprinkle of sea salt. 65 slim-magazine.com.au

Don’t just think of this in one dimension. Fry some whiting, snapper, squid, prawns (shrimp), octopus and oysters for a fritto misto di mare that any Italian would be proud of. Go the whole hog: serve with home-made chips and fresh tartare sauce. You can batter and fry any fish you like, and all will sit well on top of any of the braised vegetables and vegetable purées in the soup section, which can really jazz up humble fish and chips.

PEANUT COOKIE CUPS WITH CHOCOLATE CARAMEL FILLING

METHOD To make the peanut cookie cups, preheat the oven to 170°C fan-forced. Grease a 12-hole muffin tin. Using a stand mixer with a paddle attachment, beat the butter and sugars on medium speed until well combined and completely smooth. Add the peanut butter followed by the egg and mix to combine. Add the flour, baking powder and salt, then mix until almost completely incorporated. Lastly, add the chopped milk chocolate and mix until the ingredients just come together as a dough. On a lightly floured work surface, divide the dough into 12 even portions. Place the pieces of dough into the holes in the tin, pressing them into the base and sides to form a cup. Line each cup with scrunched then flattened baking paper, and fill with uncooked rice. Bake for 8 minutes. (This is called blind baking.) Remove the paper and rice and bake for a further 10 minutes. Leave to cool slightly. When the cookie cups are firm enough to handle but still warm, remove from the tin and leave to cool completely at room temperature on a wire rack. Clean and dry the muffin tin. When the cookie cups have cooled completely, return them to the clean tin.

For the caramel filling, heat the cream, vanilla and salt in a saucepan over medium heat until almost boiling. Heat the sugar, glucose and water in a large saucepan over medium heat until the temperature reaches 145°C. Reduce the heat to low, immediately add the butter and honey and whisk by hand to incorporate. One-third at a time, pour the hot cream mixture over the caramel and whisk to combine. Carefully add the bicarbonate of soda, then increase the heat and bring to 118°C while whisking continuously. Once the caramel reaches temperature, remove from the heat and immediately add the chocolate. Whisk until the chocolate is completely melted and incorporated. Pour the caramel into the prepared peanut cookie cups and leave to set at room temperature for 1 hour. Store in an airtight container at room temperature for up to 4 weeks. 66 slim magazine SUMMER 2023/24

JEWELLED PISTACHIO AND CHERRY CHOCOLATE SNOWFLAKES I N G R E D I E N TS MAKES 15

20g desiccated coconut 150g good-quality milk chocolate 20g glacé cherries, finely chopped 20g pistachios, finely chopped

TIP

Once the chocolate has set on your snowflakes, cover the tray with another sheet of baking paper and place a second baking tray on top, which will help to prevent the chocolate from curling as it contracts. Leave the tray on top for at least an hour. Don’t make the chocolate too thin (it should be at least 2mm thick) or the snowflakes will break as you remove the baking paper.

METHOD Preheat the oven to 160°C. Line a baking tray with baking paper. Spread the coconut evenly over the baking tray and bake for 5–6 minutes. Remove from the oven halfway through baking to stir, which will ensure you achieve an even colour. Once golden brown, remove from the oven and leave to cool completely at room temperature. You will need to cut 15 individual snowflake templates out of baking paper, approximately 9cm in diameter. To do this, start with a 10cm square of paper. Fold it in half, then in half again to create a smaller square. Fold the two folded edges together to create a triangle. Fold the two folded edges together again to create a narrower triangle. Trim off the excess paper at the open end of the triangle so that all layers of the triangle are the same size, then trim the open edge in a zigzag shape. Along the long folded edge of the triangle, cut a half-oval shape – the longer it is, the bigger the oval will be on the snowflake. Open out the paper. Repeat to make 15 templates. Temper the chocolate by placing it in a microwave-safe plastic bowl and heating it in the microwave on high in 30-second increments, stirring in between. Once you have 50 percent solids and 50 percent liquid, stir vigorously until the solids have completely melted. If you have some resistant buttons, gently heat them with a hair dryer while stirring to melt them. Place the templates on a flat surface and spread the chocolate over them using a small palette knife or a brush. Make sure the chocolate is thick enough and as even as possible to help prevent cracking. Working quickly, sprinkle the coconut, cherries and pistachios over the melted chocolate. Before the chocolate sets, use a small knife to help lift each snowflake, with its template, and place on a tray lined with baking paper. Scrape the excess chocolate into a bowl, so it can be used again. Once set, carefully remove the baking paper template from each snowflake. The snowflakes can be made up to three months in advance and stored in an airtight container at room temperature below 25°C. 67 slim-magazine.com.au

GOLD COAST LOCAL CHARITIES LUNCH Gold Coast locals enjoyed a fantastic lunch at Market Bazaar Restaurant at QT Hotel in Surfers Paradise recently, all in support of the Gold Coast Hospital Foundation. Fantastic food, conversation, raffles and auction prizes made this an incredible day that raised over $7,000 for the Gold Coast Hospital Foundation to help purchase a new Halo machine for Parkinson’s Disease sufferers. What made this event even more special was a number of ladies who chose to celebrate their birthdays at the lunch, asking that instead of gifts, support should be given to this worthy cause. GOLD COAST COMMUNITY FUND AND YOUNG PROFESSIONALS GOLD COAST RACE DAY It was a spectacular day of fun, fashion, food, fundraising and of course racing at the Gold Coast Community Fund and Young Professionals Gold Coast Race Day held at The Gold Coast Turf Club. Many of the Coast’s best and brightest were in attendance to support The Gold Coast Community Fund. Everyone looked fabulous in their race day finery, with feathered hats and outfits with flair aplenty! But the frivolity didn’t end when the last horse crossed the finish line the event kicked on at the official afterparty at Nineteen at The Star. All up the day raised more than $20,000.

BELLA DONNA MASQUERADE BALL It was a night of mystery and a touch of seduction at the inaugural Bella Donna Masquerade Ball. The glittering evening was held at the JW Marriott Resort and Spa and Bella Donna clients were treated to a performance of unforgettable, jaw dropping aerial acts and acrobatics from Aerial Angels all to the soundtrack of the Hymack Girls. The more than 250 guests spent the rest of the evening, eating, drinking, dancing and enjoying themselves. Marina was thrilled to host her cherished clients who had helped her grow her business over the last eight years. The ball was such a hit Marina has decided to make it an annual event in aid of charity.

Over 400 guests attended the event hosted by Nine News reporter and A Current Affair fill-in presenter Leila McKinnon to hear from Gerry and Katie - a dynamic duo and giants of Australian business. Guests were treated to a sumptuous breakfast and a fascinating presentation, all while supporting The Gold Coast Community Fund.
