T

he head chef of the Harwood Arms, Sally Abe, is hard at work preparing for lunchtime service when i ring. A typical day for her starts at 8am and the clock hand often creeps past midnight by the time she leaves the kitchen, but the bubbly chef wouldn’t have it any other way. Having moved to London as part of a culinary arts degree, she liked it so much she stayed put, embarking on a culinary journey that took her to the kitchens of three of the capital’s finest restaurants. “i moved to London and was supposed to do a year in industry and then go back to university,” she explains. “But once i got into the kitchen, i decided that was where i wanted to stay.” Sally learned her trade as a commis chef at the Savoy Grill, before a two-year stint as a chef de partie at the now defunct Gordon ramsay at Claridge’s. Five years followed at The Ledbury – the two-Michelin-star restaurant run by Harwood co-owner Brett Graham – in the role of sous chef, before Sally took up her current role. Having been head chef at the renowned Michelin-star gastropub for just over a year, Sally has indelibly stamped her mark on the kitchen. “i would say i’ve put more of a feminine touch on the menu,” she says. “i’m trying to focus on simple food with big flavours.” As a passionate advocate of sustainability (“my friends call me an eco-warrior”) she’s also been pivotal in launching an overhaul when it comes to an ethical approach. All food waste is composted and, under Sally’s watch, vegetable and fish suppliers now operate with re-usable crates. “we also get in whole animals, like whole deer and we

use every single part, nothing goes in the bin,” she tells me. “Being a restaurant, you’re going to have some carbon footprint, but we try to make that as small as possible.” The Harwood Arms is notable for its down-to-earth atmosphere, which is encapsulated by a dog-friendly policy. The menu pays homage to seasonal British produce, and game is especially championed – co-owners Mike robinson and Brett Graham both own deer parks and shoot deer for the restaurant. Different species are used throughout the year, including Chinese water deer, sika deer and muntjac deer. it’s little surprise then that Sally’s favourite recipe from the menu is the venison wellington:

“we do it as a special from time to time. it’s quite time-consuming but it’s a complete show-stopper.” The birds season starts with grouse in August, before the pub moves on to sourcing the likes of pheasant, partridge and woodcock during the colder months. “we use a company called vicars Game in Berkshire,” Sally explains. “it’s not farmed, or pumped with antibiotics or grain. it’s wild food so it’s as healthy as it gets, with loads of flavour.” The feather in the gastropub’s culinary cap is the rooftop vegetable garden, which was forced to take an enforced sabbatical after a roof-renovation. “we’re in the process of trying to regenerate

that, hopefully in the summer it will be back up and running,” Sally laughs. “we’ll be trying to focus on herbs and flowers, tomatoes, different types of kale, strawberries – we had millions of strawberries last year which was really nice.” Sally’s husband Matt is also a prominent figure in London’s culinary scene, heading up restaurant Gordon ramsay – the celebrity chef ’s flagship three-Michelin-star restaurant – as chef de cuisine. who does most of the cooking at home then, or is it a shared stove enterprise? “i very rarely cook at home, me or my husband normally go out if we’re at home together,” Sally replies. “Parlour in Kensal Green is really good and Little Social in Mayfair is one of our favourite places for a bite to eat. But if i do cook it would normally be Thai food, something quick, easy and flavourful, with lots of chilli, ginger and

garlic.” Family and friends must rub their hands with anticipation when the foodie power couple host at their home off north end road. “normally, if we were having friends or family over it would be on a Sunday,” Sally says. “So we would probably do a roast, which is

quite surprising because you’d think i’d be sick of the sight of a roast by now!” Michelin inspectors saw fit to bestow a Michelin star back in 2011, and the Harwood is justifiably proud of its lofty status as the only pub in London to hold the honour. “it’s a huge, huge accolade,” Sally declares. “it’s also quite a weight to carry at the same time. it’s such a prestigious thing to have a Michelin star – as well as being really exciting, it can be quite scary.” As head chef of such a prestigious gastropub, does Sally feel she has a role to play in inspiring female chefs to follow her lead, in what is typically a maledominated industry? “i’ve only got one female chef, i’d hope that she looks up to me,” she replies after a considered pause. “it’s definitely not that women can’t be chefs, but it’s very demanding on your lifestyle. There’s no way that i could have a kid and do what i do. i think that holds women back. it is getting better, you’ve got Clare Smyth – she was Matt’s boss, she’s been a part of my life for almost ten years now – Angela Hartnett, Lisa Allen, people like that. Generally, women are more organised, so they do make good chefs. we’ll see what happens in the years to come.”

run out in the Field of Dreams, where I take down the beef cheeks, with smoked lentils and root vegetables. It’s a tasty dish, although I don’t enjoy it as much as the previous two. My friend, who has opted for three seafood dishes, declares all of them a triumph. Seafood does seem to be the focus at Black Bream (it’s little wonder given the name) and fresh fish is sourced from Billingsgate Market. I’d recommend taking a leaf from my friend’s book and sticking to the sea.

n intriguing menu brings seasonal small plates to the fore at Black Bream in Parsons Green. Diners choose dishes (three each is recommended) from various sections, which include Rock Pools & Beaches and The Old Man & the Sea – no prizes for guessing that seafood is in store. The Field of Dreams is where carnivores stalk their prey, while The Garden hosts vegetable dishes and salads. There are also larger mains options available, as well as a Specials section. At an archetypal fine-dining establishment, the menu might appear somewhat pretentious. However, there’s an intimacy about Black Bream – despite the slick interior and polished service – which makes it rather charming. After scouring the Rock Pools & Beaches for prey, I instead opt for the Galician-roasted octopus from the Old Man & the Sea section for my first dish. The flavours are absolutely superb and the octopus, served with accompanying almonds and smoked peppers, is deliciously fleshy and fresh-tasting.

This stunning dish is followed up with a visit to the Specials, where I choose seared tuna tataki with Tuscan salad and quail egg. The lightly seared tuna is sliced into chunks and served rare (as with the first dish tops marks for the presentation) and it dovetails really well with the salad and quail egg. The restaurant, which was empty when we arrived, has begun to fill up and a bottle of Sauvignon Blanc 2016, Haut Bourg, Loire is diminishing at a rate of knots. Despite some alluring options, I decide The Garden is for another day and instead have a

For dessert, I opt for a chocolate panna cotta and griotte cherry compote from the compact Sweet Tooth section, although a wandering spoon confirms that I prefer my friend’s pear tarte tatin, which is rather less stodgy. Black Bream is an invaluable addition to Fulham’s foodie scene, cultivating a unique form of unassuming fine dining focusing on seafood and a treasure trove of intriguing combinations. space, populate it with kitchens, and bring a lovely old building back to life.” Andy and Simon – a serial entrepreneur who’s had his fingers in all sorts of pies, including Pitt Cue and the award-winning Albion pub in Islington – spent 2017 scouting food halls across the globe, visiting sites in New York, Amsterdam, Barcelona, Madrid, Lisbon and the UK. As Simon says, “We’ve seen what people do well and what people don’t do well and then purposed it for what we think will work for the Fulham market and the rest of London.” Simon is confident Market Hall Fulham will be open to the public either at the end of April or the beginning of May, although he’s reluctant to put an exact date on it. “We’ve got bank holidays and Chelsea games – we don’t want our first Saturday to be a home Chelsea game! We’ll actually probably open quite quietly and let locals come and try it before we start pushing it

out to the wider public.” The venue’s ten kitchens are a mixture of exciting independents from across London, including street food traders and award-winning restaurants. Kitchens include Yard Sale Pizza and Thima by Farang, a new Thai concept by Farang’s Seb Holmes, while Press Coffee will provide visitors with their caffeine fix. “We think we’ve curated a really nice mix of traders who will complement the area and cover everyone’s tastes and needs under one roof,” Simon says. “There are some really interesting names. With the bar we’re doing British craft

“F

ood is the new rock and roll and we’re providing the perfect stage,” says Simon Anderson, restaurants and operations director of Market Halls, a unique food hall concept that is set to launch in Fulham this spring. Market Halls, headed by Andy Lewis-Pratt, a philanthropist and former property investor, seeks to resurrect iconic, disused London landscapes as food halls. The first site, Market Hall Fulham, will be housed in the entrance hall of the Edwardian underground station in Fulham Broadway, and will feature ten kitchens and a bar. It will be open seven days a week for breakfast, lunch and dinner. The launch will be followed by sister sites at Victoria’s Terminus Place, due to open in late summer, and the company’s flagship food hall, located in part of the former BHS building just off Oxford Street, which is scheduled to be unveiled in December. “Food halls are a global trend at the moment,” Simon tells me enthusiastically. “There’s a lot of growth in them across America and Europe, and of course they’ve always been popular in Asia and in different Latin America countries. The idea is to take a

beer and spirits. All the companies that we work with are independents, we’re not working with any chains or overly established brands. It’s all just young, independent companies. Lots of them have great stories, like they’ve started in people’s back gardens, or in little street food trucks.” Another of the kitchens will be Claude’s Deli by Claude Compton, the man behind Fulham favourites Claude’s Kitchen, Amuse Bouche and The Tommy Tucker pub. “We wanted one local hero and I think Claude’s got such a good repertoire,” Simon tells me. “That was the reason we wanted to get him in.” The entrance hall of the 1880 Edwardian underground station was picked due to its status as a characterful historic site, which could

be brought back to life to serve as a food hall, reinstating it as a prominent local landmark once again. “It’s been empty for quite a while,” Simon tells me. “It’s in amazingly good condition and we’ve been working with the H&F Council planner to be as sensitive to the fit-out as possible. Bringing it back to use for relevant modern usage has been the exciting part of the project. We’ve converted the old ticket office into the bar. You’ve still got all the original stonework and all the original signage and shopfronts. There used to be a little shopping arcade at the front, so that’s going to house Claude’s Deli, Press Coffee and another trader. It’s a beautiful old building inside, we’ve been very lucky that we’ve not had to do that much to it. Actually, to do too much to it would have been a crime, we’ve let the building do the talking.” Plans are also afoot to make the site a community hub, and, to that end, an events programme and a schools’ outreach scheme are being rolled out. “During the day there’s going to be a children’s area so parents can come in, have lunch and leave junior to play,” Simon explains. “We want to engage with the community as much as possible, so one of our launch events will be for local businesses. We also want to arrange visits for local schools and get one of the kitchens to explain what they’re cooking and about things like provenance, recycling – all of these things which are important in modern food culture. We will try and engage with the community as much as possible to do that.”

making a mark Meet Fulham resident and finger-painting artist Saskia Skoric, who’s sourcing inspiration from Bishop’s Park william monroe

What ’s your background as an artist?

i always loved to draw as a child and i completed a one-year art foundation course at Maidstone college of art and design when i was 19. From that point, until i was in my early 30s, i just dabbled. i regained my passion when my children came along, so, for the last 10 years in particular, i have had a profound passion for painting, with a burning desire to improve on each creation. My parents like to think it’s more than just a coincidence that rembrandt’s wife was also called saskia!

h o W d i d y o u g et i n t o F i n g e r - pa i n t i n g ?

a few years ago i became disillusioned, as i felt restricted. i began experimenting. i put the paintbrushes to one side, purchased some oil paints and began applying the paint straight to the canvas with my fingers. it was then that i had an epiphany. it has made me more expressive and more adventurous, particularly with colour. seven of my paintings can be found on display at The glasshouse café at The palace gardener – it’s been a great support to me as a local artist. bishop’s park

When i finger paint, i always wear gloves and use water-mixable oils. i choose these oils as they’re great to manipulate and also easy to clean. i often mix the colours on the canvas and use the texture to help with styling.

Finger painting can be considered a technique that is unskilled, as it is associated with children. but the world is such a treasure trove of inspiration and full of a love for the visual. There is definitely a place for the professional finger painter within the art world.

When doing fine detail, i feel i have better control. i just use the tip of my finger and keep steady. Finger painting has given me a kind of freedom. i am able to create paintings with movement

and a vibrancy that brings the painting to life, something that i felt i could never fully achieve with paintbrushes.

W h at s c e n e s d o y o u t y p i c a l ly e n j oy pa i n t i n g ?

i don’t have a favourite scene or subject. once i’m happy with what i’m creating, i become inspired by something else and move onto that. i’m currently focusing on cats and am trying more fantastical approaches to the subject. i love painting animals, but equally all types of landscapes.

i became really inspired to paint bishop’s park during autumn last year. Once the client has provided a specific brief, supported by aids such as photo references and aspects of other art including colouring and lettering, Charles composes a pencil sketch. Feedback is taken from the client before he adds colour. Further client feedback is taken, before the final artwork is begun. The client owns the copyright and can do what they please with it. “if somebody commissions an artwork they purchase the original artwork and the copyright,” Georgina explains. “There was a hotel in Bermuda which commissioned an artwork and they did a print run for the hotel. The Mustique Company commissioned an artwork from us and actually sold the original at auction, which paid for the cost of commissioning it. Then they did a print run as well. we

f you’ve got a winning formula, then you stick with it. That’s the simple maxim that Pullman editions has adhered to since the business was founded by Georgina and Simon Khachadourian in 2010. it’s fitting that it remains true to its past, given that it sells works inspired by vintage Art Deco posters. Poster prices haven’t changed since the company’s inception, a notable feature which is a mark of the mutual respect between Pullman editions and its clients, many of whom are long-standing. Pullman editions is the sister company of Mayfair’s renowned Pullman Gallery, which is a leading specialist dealer in first-edition vintage posters. The growth in the vintage market, coupled with the finite number of posters, led the duo to set up Pullman editions, which offers affordable, hand-painted new works based on Art Deco first-edition posters. As i step into the shop, i’m greeted by soft, suave music and the company’s charming co-founder Georgina, who informs me that the soundtrack pays homage to the likes of Frank Sinatra and jazz trumpeter Miles Davis. A plethora of posters stares down on high from all four walls, with scenes including skiing in the Alps, beach holidays at luxury resorts and retro cars. Pullman editions now works exclusively with artist Charles Avalon, who has been collaborating with the

sometimes sell the prints on behalf of other companies, although the design has to appeal to our customer base.” when it comes to the current stock of posters, buyers hail from all over the world, although Georgina notes a strong local flavouring. “we ship the posters internationally, but we do have a really loyal local clientele and we get lots of repeat customers. we have quite a few clients in Hong Kong. Dubai is another one – they like the car posters in particular.” As for weird and wonderful requests, a poster commission for a corporate headquarters in Switzerland proved to be something of a challenge. “it was literally just a concrete block that we had to make look Art Deco, which was obviously fairly difficult!” vintage posters are an obvious inspiration for designs, but other muses include ski resorts and honeymoon destinations. “resorts that are luxurious and popular with the Brits informed our choices initially,” Georgina tells me. “Then we had a lot of feedback from customers as to what they would like to see. For example, we did one of the route des Alpes, as a lot of people like to cycle in France.” Georgina and Simon are themselves travel enthusiasts, and i ask whether skiing holidays are a regular occurrence when i learn that they’re big fans of Switzerland. “My husband doesn’t ski, he’s more keen on après-ski,” Georgina laughs. “i don’t ski anymore, i haven’t done for a few years – every year somebody i know gets injured!” Georgina’s favourite from the collection is the route Du Soleil poster, depicting a Ferrari driving down the French A7 Autoroute on a summer’s day: “it’s a feel-good poster, it makes you smile and think of going on holiday.” By popular request Pullman editions is about to unveil a new poster depicting Battersea Power Station, but are there other exciting plans lined up? “Just carrying on what we’re doing,” comes the succinct reply. it’s a formula that has served Pullman editions and its clients well. 94 Pimlico Road, SW1W 8PL, 020 7730 0547, pullmaneditions.com

A

ny home in London runs the risk of noise pollution amid the urban landscape of the Big Smoke. Fulham is one of the quieter residential areas of the capital, and residents often comment on its village atmosphere. It is, however, under a flight path. Some can tune out to the noise, others can’t. Emilie Mauran of RIBA-chartered EMR Architecture was given the complex brief of providing extensive acoustic insulation, as part of a full renovation for a large Victorian property next to South Park. “The clients were very specific about acoustic insulation,” Emilie explains. “Fulham is a great location, but being under a flight path can be an issue. They wanted to locate the master bedroom in the loft, so we had to find a way for them to sleep at night. It was a very technical challenge and we worked with very innovative products, including one which is being developed by NASA.” This wasn’t the only design challenge, as extra storage in the new master bedroom was also needed. “It wasn’t easy with a sloped roof,” Emilie says. “But we managed to fit in a walk-in wardrobe,

without blocking the light.” The clients also wanted to relocate a washing machine and dryer to create more space in the kitchen, a problem Emilie solved by designing a hidden mini utility room in the hallway for extra storage space. Emilie’s keen to stress that such obstacles are simply par for the course and are easily hurdled. “We deal with challenges every day,” she says. “Nothing is impossible to overcome. When it comes to residential houses I work with similar shells, but I always want to make a house personal to my clients’ tastes, while increasing the valuation.” The brief also requested a property that would give every member of the family of six their own space, as well as be big enough to entertain friends and extended family. Emilie therefore devised

n Hammersmith & Fulham we value the role residents play in helping our borough to thrive. And the strength of community spirit, volunteering and altruism was on display in abundance at our inaugural H&F Civic Honours awards evening on 1 March. There are so many people working to make our borough a great place to live, work and learn in who do not always get the acknowledgment they deserve. These awards were our chance to say thank you. There were 16 categories, ensuring we could celebrate the variety of ways people make a difference, such as improving our environment, contributions to health and wellbeing, sporting achievements, celebrating diversity and acts of courage and compassion. Selected winners included the likes of Victoria Tully, deputy head at Fulham Cross Girls’ School, who won most dedicated teacher after being described as caring and inspiring, and praised for uniting the community and supporting victims of the Grenfell Tower fire by holding a Green for Grenfell event. Jonathan and Clara Ebstein won the young people’s achievements award. These Fulham residents are just eight and six respectively, but have already raised hundreds of pounds for charities by making jam, keyrings, coasters and jewellery to sell at local fairs. Susan Anderson won the most dedicated volunteer award for her 35 years’ service as chair of Sands End

Associated Projects in Action (SEAPIA), which has gone from strength to strength and currently supports more than 250 local children. Cathy Maund of the Hammersmith Community Gardens Association was honoured with a lifetime achievement award for her work over the past 30 years. Rebecca Harvey and Kathleen Van de Vijver were given the most dedicated social worker award after they made a huge difference to the lives of a young woman and her family badly affected by child sexual exploitation. Daphine Aikens, founder of Hammersmith and Fulham Foodbank, was recognised for her outstanding

contribution to the life of the borough for her work supporting families in need, not just with food and other essentials but with other support such as lunch clubs and help with budgeting. buILDING bEGINs Lift-off for local Sands End Arts and Community Centre

ulham residents celebrated as building work began last month on the new Sands End Arts and Community Centre, which will be located at the disused Clancarty Lodge in South Park. The site will be managed by a community trust run by locals, with the aim of establishing it as a community hub in the same vein as the previous centre. The new centre is being built at no cost to residents, thanks to a funding deal negotiated by the council. Tideway has pledged £2m as part of its community investment and Chelsea FC is providing up to £1.6m via its community contribution for the redevelopment of Stamford Bridge. Speaking at a ceremony attended by dozens of residents, many of whom campaigned to save the previous

inspiration, then help is at hand. Fulham

centre, the leader of Hammersmith & Fulham Council, Cllr Stephen Cowan, commented: “The residents of Sands End sadly lost their beloved community centre eight long years ago, so we’re building them a new one. night Frank has flagged up an interesting divergence in SW6 that it says is indicative of a wider trend in the prime London market. Analysis shows trading volumes in Fulham’s house market have been significantly more resilient than the flat market, which is linked to asking prices being reduced at different rates. Land Registry data confirms a 24 per cent year-on-year fall in transactions below £1.5 million in the first nine months of 2017, compared to a 9.3 per cent decline above that price point. Looking at Rightmove data, the average reduction for a property in SW6 valued above £1.5 million, the point above which most properties are houses, was 10.2 per cent in the final three months of 2017 – compared to a 7.2 per cent

cut below that price. The figures go to show how lower asking prices have underpinned sales volumes, says the firm. “Flat buyers in Fulham are cautious about spending £1,100-plus per square foot and have been prepared to look elsewhere to get the exact property they want,” said James Davies, the head of Knight Frank’s Fulham office. “It’s started to change in 2018, but some buyers have been drawn to parts of

London which have experienced bigger price reductions such as Ladbroke Grove or areas of Chelsea.” “The relative divergence between the two markets in Fulham is indicative of a wider trend across the prime London property market,” added head of London Residential Research Tom Bill. “Higher rates of stamp duty mean buyers are scrutinizing the market for pricing inconsistencies more intensely

than in previous years. While there is no uniform pattern across the capital, the stamp duty hikes had an earlier and more marked impact in higher price brackets, which has led to quicker asking price adjustments and higher liquidity in some areas. In prime central London, for example, average prices rose 1.9 per cent in the year to December for homes valued at between £5 million and £10 million, compared to a fall of 1.2 per cent for

properties priced at between £1 million and £2 million.” James Davies also commented: “Flats in Fulham held their value well into the first half of 2017. Meanwhile, the market for houses appeared to make its final major corrections in the latter half of 2016 and early 2017. As a result, you now have a situation where the two markets are almost behaving independently of each other. “Although the flat market is
