Introducing the Vibrant Issue. Having just launched a line of Vibrant Oats — powered by colorful superfoods — there's been a lot of talk around here about the benefits of not only eating vibrantly, but also of living vibrantly. The word vibrant means so much more than just colorful. It means energetic, spirited, vital, electrifying and dynamic. Vibrant foods aren’t just eye-catching, they are also nutritional powerhouses. Many of the ingredients we chose to incorporate into our new Vibrant Oat Cups are chock full of B and C vitamins, iron, calcium, zinc and more. In addition to making beautiful breakfasts, these superfoods have been linked to health benefits such as boosting immunity, aiding digestion, diabetes prevention and anti-aging — everything you need to live your most vibrant life. Speaking of added benefits, our other latest product line — Grain-Free Superfood Bars are not only craveably crunchy, but also contain reishi mushroom extract for adaptogenic power. honey oatmeal cookies gluten-free 1 cup Purely Elizabeth Original Superfood Oats 2/3 cups almond flour 1 ½ tsp baking powder 1 tsp cinnamon 2 tbsp coconut flakes pinch of salt 2 tbsp coconut oil 1 egg (or use your favorite vegan egg substitute) 1 tsp vanilla extract 5 tbsp honey Preheat oven to 325°F. Mix together in a bowl all of the dry ingredients (oatmeal, almond flour, baking powder, cinnamon, coconut flakes and salt). Whisk together in another bowl all of the wet ingredients (coconut oil, egg, vanilla extract, honey, lemon juice and zest). Combine the dry and wet ingredients. Chill in the refrigerator for 30 minutes. On a baking sheet lined with parchment paper, drop the dough into 12 rounded scoops. Flatten with a fork. Bake in the oven for 12 minutes.


lavender vanilla donuts gluten-free, grain-free

1 ¼ cup almond flour ¼ cup arrowroot flour 1 tbsp chia seeds ½ tsp sea salt ½ tsp baking soda 1 tsp cinnamon 2 eggs (or use your favorite vegan egg substitute) ¼ cup coconut milk ½ cup coconut sugar ¼ cup coconut oil, melted TOPPING: Simple Mills Vanilla Frosting, mixed with 2 tsp lavender extract lavender sprigs Preheat oven to 350°F. Lightly grease donut pan with coconut oil. Combine dry ingredients in a bowl. Meanwhile, in a large bowl, whisk together wet ingredients. Add dry ingredients and stir until well combined. Pour batter into a Ziploc bag with a ½" opening. Fill the donut pan. Bake in the oven for 20 minutes. While donuts are cooking, make the glaze. In a small pot, add the glaze ingredients and whisk until melted and well-combined. Set aside. When donuts are cooled, decorate!




lemon coconut bars gluten-free, grain-free

CRUST: 1 bag Purely Elizabeth Grain-Free Coconut Cashew Granola ¹/³ cup coconut oil TOPPING: 3 eggs ½ cup honey 2 tsp lemon zest (about 1 large lemon) 2 tsp coconut flour sifted ½ cup fresh lemon juice coconut flakes (optional) Preheat oven to 350°F. For the crust, blend granola and oil together in a blender. Spread and press firmly down in a 8" X 8" pan. Bake until just lightly golden brown, about 8 minutes. Let cool. Meanwhile, gently whisk together the eggs, honey, and lemon zest in a large bowl. In a separate bowl, whisk together the coconut flour into the lemon juice, until well mixed. Pour the lemon juice mixture into the egg mixture, until evenly combined. Pour the topping over the cooled crust and bake until set, about 20-25 minutes. Sprinkle coconut flakes on top. Let cool and then refrigerate overnight.



blackberry + pear crumble vegan, gluten-free

2 cups blackberries 2 cups ripe pears, sliced 1 tbsp peeled and minced fresh ginger 2/3 cup coconut sugar TOPPING: ¾ cup almond meal ½ cup Purely Elizabeth Original Superfood Oats ½ cup walnuts 8 tbsp vegan butter 1 tsp cinnamon ½ cup coconut sugar Preheat oven to 350°F. In a bowl, combine pears, blackberries, ginger, and coconut sugar. Meanwhile, in a separate bowl, combine topping ingredients. Pour fruit mixture into an 8" X 8" pan and sprinkle topping evenly. Bake for 30 minutes or until top is browned and fruit is bubbling. Serve with ice cream on top!


pineapple carrot cake cupcakes vegetarian, gluten-free ¾ cup brown rice flour 2/3 cup almond flour ¼ cup garbanzo fava flour ¼ cup arrowroot starch 1 tsp Himalayan sea salt 1 tsp baking soda 1 tbsp cinnamon 1 tsp nutmeg ½ cup coconut sugar 3 eggs ¼ cup maple syrup ½ cup olive oil 1 cup pineapple, crushed 1 ½ cups carrots, grated ½ cup walnuts CASHEW CREAM FROSTING: 2 cups cashews, preferably soaked for a few hours 1 lemon, juiced 2 tbsp coconut oil ¹/³ cup maple syrup 1 tsp vanilla

In a large bowl, combine the flours, arrowroot, salt, baking soda, cinnamon, nutmeg and coconut sugar. In a separate bowl, whisk together eggs, maple syrup, and oil. Pour wet ingredients into dry along with carrots, pineapple and walnuts. Stir to combine evenly. Pour into greased muffin tin. Bake at 350°F for 30 minutes or until a toothpick comes out clean. Meanwhile, in a high-speed blender, combine cashew cream frosting ingredients. Blend until smooth. Add water as needed until smooth frosting consistency is achieved. Allow to cool before spreading with cashew cream frosting.



BREAKFAST FOR BEAUTY + BRAINS


IN THE WELLNESS WORLD, it’s almost fact that beauty begins from the inside out. However with the recent #girl power movement, we want to highlight recipes that showcase not only natural beauty, but also boss-lady brains. Here are some of the best ways to channel positivity and power towards your self-worth.

BEAUTY

BRAINS

Collagen. The most abundant protein in our bodies found in muscles, bones, skin, blood vessels etc. It’s what helps give skin its strength and elasticity.

Plenty of “good” fats. These include both mono unsaturated and omega-3 rich fats such as avocado, olive oil, fatty fish (salmon/sardines), walnuts, eggs and grass-fed beef.

An anti-inflammatory diet, meaning eliminating or minimizing sugar, processed foods, gluten, unhealthy fats and hidden food intolerances. Add in good sources of omega-3’s. Examples are salmon, halibut, flax, hemp seed or a fish oil supplement. Another group of essential fatty acids that are beneficial for the skin are called Gamma Lineolic Acids or GLA’s. These promote healthy growth of skin, hair and nails, most potently found in spirulina – a blue green algae with an abundance of healing properties for overall health. Probiotics or fermented foods to help reduce inflammation. Leafy greens to help alkalize the body. Foods rich in zinc to help fight acne. In fact acne itself may be a symptom of zinc deficiency. Foods rich in zinc include fresh oysters, pumpkin seeds, ginger and pecans. Sulfur, also known as the beauty mineral, provides smoothness and shine to the skin. It aids in the digestion of fats, controls the metabolism of carbohydrates and rids the body of waste that may clog pores. Sulfur can be found in arugula, cruciferous vegetables, mustard, radishes, spirulina, hemp seeds, onions, garlic, watercress and aloe vera.

Antioxidants. These substances are the body’s natural health system to protect itself against oxidative stress. They help shield the body from the destruction of free radicals and include well-known nutrients such as Vitamin C, beta-carotene and selenium. Anti-inflammatory foods. Adopting an anti-inflammatory diet is just as important for brains as for beauty. Adaptogens. Power up your routine by adding in supplements such as he shou wu, a remarkable brain-boosting herb. Studies have shown he shou wu to improve memory and cognitive function. BLUE COLLAGEN PANCAKES gluten-free, vegan 3 eggs 1 cup almond milk 1 cup almond flour 1 Purely Elizabeth Blueberry Lemon Vibrant Oat Cup 1-2 scoops Vital Protein Collagen Peptides 1 tsp baking powder pinch salt 1 cup blueberries 1 tbsp coconut oil Whisk eggs and milk in a bowl. Add flour, oats, collagen, baking powder, and salt. Whisk to combine. Stir in blueberries. Heat a cast iron skillet over medium heat and lightly coat surface with oil. Cook pancakes until they begin to bubble, about 3 minutes. Flip pancake and cook another 3-5 minutes. Serve with warm maple syrup or coconut nectar.


LION'S MANE TACOS gluten-free, grain-free, vegetarian 2 tbsp coconut oil 4 medium sized Lion's Mane mushrooms Himalayan sea salt bbq sauce 1 cup spinach, chopped 8 eggs 1 avocado, sliced 4 Siete Tortillas Preheat oven to 325°F. Heat 1 tbsp coconut oil in a cast iron skillet over medium heat. Add mushrooms to skillet. Place another skillet on top to sear for 2-3 minutes. Flip mushrooms and sear on the other side. Season with salt and pepper. Continue searing on each side until all the water is extracted. In a large bowl, add bbq sauce. Toss mushrooms in sauce then place on a parchment lined baking sheet. Roast in oven for 15 minutes. Set aside. Meanwhile, add the other 1 tbsp coconut oil to coat the pan. Add the spinach and sautÊ for 2-3 minutes. Whisk the eggs in a small bowl. Pour eggs into pan and scramble with spinach, about 3-5 minutes or until desired consistency. Assemble tacos with spinach and egg mixture, topped with mushrooms, sliced avocado and a sprinkle of salt to taste.


FOR BRAINS — made with pasture-raised eggs (high in B-vitamins) and Lion’s Mane (a supermushroom that may have positive impact on brain cells and neurodegenerative diseases)

CAULIFLOWER TOAST WITH CREAM CHEESE, SMOKED SALMON + AVOCADO gluten-free, grain-free, vegetarian Cauliflower Thins (I buy Outer Aisle Gourmet) Jalapeño Kite Hill Cream Cheese smoked salmon avocado, sliced Himalayan sea salt red pepper flakes Preheat oven to 400°F. Place Cauliflower Thins on wire rack. Bake for 7-9 minutes. Take out of the oven and allow to sit for 2-3 minutes. Assemble Cauliflower Thins with a smear of cream cheese, followed by smoked salmon and sliced avocado. Add salt and pepper flakes to taste.


FOR BEAUTY — made with asparagus, zucchini, mozzarella and pistachio mint pesto, topped with shaved carrot + tossed arugula (rich in sulfur – the “beauty mineral” providing smoothness and shine to skin)


pumpkin pie maca smoothie gluten-free, vegan

SPRING FRITTATA WITH ASPARAGUS, 1 cup almond milk ZUCCHINI + MOZZARELLA 1 tsp pumpkin pie spice gluten-free, grain-free, vegetarian 1 tsp maca ¹/³ cup pumpkin purée Preheat oven to 400°F. In a bowl, 6 eggs ½ banana whisk together eggs and milk, set ¼ cup coconut milk (unsweetened) 1 tbsp Coconut Cult Coconut Yogurt aside. Heat coconut oil in a cast 1 tbsp coconut oil ice iron skillet over medium heat. Add 2 cloves garlic, minced garlic, asparagus and zucchini. 1 cup asparagus, trimmed, In a high speed blender, Sauté for 3-5 minutes. LEMON POPPY SEED OVERNIGHT OATS gluten-free, vegan 1 Purely Elizabeth Original Superfood Oat Cup 2/3 cup almond milk juice + zest of ½ a lemon ½ tsp poppy seeds 1/8 tsp turmeric (optional, for color) 2-3 tsp maple syrup, or to taste OPTIONAL TOPPINGS: kiwi, coconut chips

Combine all ingredients in the Superfood Oat Cup (or a small container) and mix well. Let sit in the fridge for at least 4 hours, preferably overnight. Top as desired. Serve + enjoy.


PEANUT BUTTER PITAYA OVERNIGHT OATS gluten-free, vegan 1 Purely Elizabeth Raspberry Pitaya Vibrant Oat Cup ½ tbsp peanut butter 2/3 cup water OPTIONAL TOPPINGS: banana, peanut butter, coconut chips First, blend the peanut butter and water together in a high speed blender for 30-45 seconds, until a creamy “Peanut Milk” forms. (Note: you can also mix the peanut butter and water together in the Vibrant Oat Cup, but blending produces a more even consistency). Pour the “Milk” into the Vibrant Oat Cup (or a small container) and mix well. Let sit in the fridge for at least 4 hours, preferably overnight. Top as desired. Serve + enjoy.


MINT + MATCHA OVERNIGHT OATS gluten-free, vegan 1 Purely Elizabeth Original Superfood Oat Cup 2/3 cup coconut milk ½ tsp matcha powder 1 tsp fresh mint, finely chopped 1-3 tsp maple syrup, or to taste OPTIONAL TOPPINGS: fresh mint, raspberries, coconut chips Combine all ingredients in the Superfood Oat Cup (or a small container) and mix well. PURELY CHATTING with Mish + Shalisa

Meet Mish and Shalisa! These two fitness females provide some major motivation and best friend #goals on their instagram page @_mishalisa_. From Denver Nuggets dancers to Pure Barre owners to social media gurus, we sat down and asked them some of the buzziest questions in wellness. Read on to find out!

1.TELL US HOW YOU GOT YOUR START IN FITNESS. WE HEARD YOU MET AS DENVER NUGGETS DANCERS! We did! Both of us grew up dancing from a young age, so fitness, nutrition and living an active lifestyle has been ingrained in us from an early age. We met each other in 2004 while dancing for the Denver Nuggets and have been besties ever since! After we stopped dancing professionally, we found Pure Barre and became teachers, studio owners and master teacher trainers. We recently sold our studio and are working on our new venture sharing our passion for fitness and fun online!

2. FAVORITE WAY TO GET IN A SWEAT? Together, of course! We love to create our own workouts, whether it be in the studio, in a hotel room or outdoors. We also love taking classes together and trying out new fitness concepts.

3. HOW DO YOU KEEP UP MOTIVATION WHEN TIMES GET TOUGH OR LIFE GETS IN THE WAY? We are strong believers in the power of community! Life gets tough and that’s when we lean on one another to find inspiration


and motivation. We try to be really open and honest with our community about our own struggles, so that they know they aren’t alone when they are going through similar situations. Our best advice for keeping up motivation is to find a partner, or to reach out to us! We love supporting people on their fitness journey!

are only temporary and don’t usually lead to creating positive change. Instead, we try and push people to find their “why”. Why do they want to work out? To feel better? To sleep better? To have the energy to spend time with their kids? To create long lasting healthy habits? When you find your personal “why”, it is so much easier for the rest to fall into place.

4. WITH THE TREND OF SLOWING DOWN + INCREASED RECOVERY ON THE RISE, WHAT’S YOUR BEST PIECE OF ADVICE FOR TAKING CARE OF YOUR BODY?

7. DO YOU FOLLOW ANY PARTICULAR DIET?

We love a good rest day! We train like athletes so we have to remind ourselves to recover like them too. There is no shame in taking a day or 2 or 3 off if you feel your body needs it. Our favorite ways to recover are extra-long stretch sessions, hot tubs/float tanks, massage or even just vegging out on the couch watching movies.

5. DO YOU HAVE ANY TRAVEL TIPS FOR CONVENIENT ON-THE-GO WORKOUTS? We recently put together some fun hotel room workouts and most of our workouts can be done with little to no equipment. If you’re not someone who likes to work out on your own, we recommend doing a little research before you go on a trip and trying out new and different fitness classes in the area. It’s a great opportunity to try out something new that you wouldn’t try at home…anonymity can give you serious courage!

6. WHAT’S ONE COMMON THING THAT YOU SEE PEOPLE DOING WRONG WHEN IT COMES TO WORKING OUT? The biggest thing that people can do wrong when it comes to working out, is focusing on the “what” instead of the “why”. There is so much pressure around us to look a certain way, and it’s easy to focus solely on losing weight or being skinny. But, those things

Honestly?? No. Both of us really don’t believe in diets because we think that too many restrictions lead to an unhealthy mindset about food. Food is fuel, it’s delicious and it should be enjoyed! On a daily basis we both eat healthy foods. We like to get a lot of veggies into each meal, we choose healthy snacks throughout the day, we believe in getting plenty of good fats and proteins into our diet and drinking lots of water. We also love a good girls night out with lots of pasta and wine! Life is better when there’s balance!
