ALLEN’S LETTER long hours of daylight make me eager to enjoy each moment—from the first light hours spent picking summer’s bounty to lazy afternoons by the water, and dusk gatherings on my porch. It’s as if nature is giving us a few more minutes to take notice of the beauty around us.

When we are young, the days until the start of summer seem to creep by like caterpillars slowly making their way up a tree limb. The anticipation of school-free weeks, warm weather, swimming holes, and—perhaps most importantly—the freedom of the season itself, were almost too much excitement for me to bear. I could hardly wait to spend the entire day playing and exploring in my backyard. As an adult, I have to admit, this sense of frivolity never wanes; I still can’t wait to get outdoors. Something about the

Avocado Salad Cups with Chili Lime Dressing INGREDIENTS: SALAD

4 large avocados 1 pint cherry tomatoes 1 mango Juice of one lemon

DRESSING

cup lime juice 3 teaspoons lime zest

½ teaspoon salt Dash of hot sauce

3 green onions Pinch of sugar

⅛ teaspoon cumin ¾ cup olive oil

Directions

Make the dressing first. Place all the ingredients except the olive oil in a blender. Blend until well combined. Slowly drizzle in the olive oil. Stir and set aside. Next, create the salad. Slice the avocados in half and remove the pit. Remove the avocado meat from the skin being careful not to tear the exterior. Set the skins aside; you’ll need those later to hold the salad. Dice the avocado and sprinkle with lemon juice to prevent browning. Peel and dice the mango. Cut the cherry tomatoes in half. Place all the salad ingredients in a bowl and toss with dressing. Divide the salad among the avocado shells and serve.

Slow Cooker BBQ Chicken Sliders

with Green Goddess Coleslaw INGREDIENTS:

2 cloves garlic, minced ½ teaspoon salt ¼ teaspoon freshly ground black pepper ¼ cup brown sugar 18 ounce bottle bbq sauce 6 boneless, skinless chicken breasts 1 small onion, quartered Slider buns

Directions

Combine the first five ingredients to create a sauce. Place the chicken and onion in the crockpot. Cover with the sauce and stir to coat the chicken. Cook on high for 3-4 hours or on low for 6-8 hours. Shred the chicken with two forks and toss with the sauce in the crockpot. Serve on slider buns topped with Green Goddess Coleslaw.

Green Goddess Broccoli Coleslaw INGREDIENTS: 1 clove garlic ½ teaspoon salt ½ teaspoon white pepper ½ teaspoon dry mustard 2 tablespoons anchovy paste 3 tablespoons tarragon vinegar cup green onion cup parsley tops 1 cup mayonnaise ½ cup sour cream 12-ounce bag broccoli slaw 4 ounces shredded cabbage

Mighty Broccoli Did you know that eating broccoli on a regular basis could lower your risk for cancer, better your bone health, and improve digestion? Broccoli ‘Green Magic’ is a variety we grow at Moss Mountain Farm. Directions Begin by making the dressing. In a blender combine garlic, salt, white pepper, dry mustard, anchovy paste, and tarragon vinegar and mix. Add the green onions and parsley, and blend again. Add the mayonnaise and sour cream. Continue to blend until you have a fairly smooth dressing. Put the broccoli slaw and shredded cabbage in a bowl and fold in the dressing until the vegetables are well coated. Chill until ready to serve.

Lemon Balm Mule Perfect for sipping on a summer night!

INGREDIENTS:

3 ounces vodka 1 ½ ounces lemon juice 1 ounce honey simple syrup (1 cup of honey and 1 cup of water; see directions below) Crushed ice Ginger beer Lemon slices (for garnish) Lemon balm (for garnish)

Directions

Create the honey simple syrup. Bring 1 cup of honey and 1 cup of water to a boil for 1 minute. Remove from heat and allow to cool before use. This can be stored in an airtight container in the refrigerator for up to one month. Combine vodka, lemon juice and honey simple syrup in a cup. Pack the cup with crushed ice. Add the ginger beer. Stir to combine. Garnish with a slice of lemon and a spring of lemon balm. 16 | summer 2014

Make Your Own Moss Garden

Use readily available materials to create a garden that can be enhanced with fresh blooms for any occasion. summer 2014 | 23

There’s no need to have a large lawn to create a moss garden. You can put together a small, attractive version in a container that can be placed anywhere. Start with a large, low-walled container. We used the Crescent Garden Delano planter which has a bowl-like shape that’s not too deep—perfect for cultivating moss. Fill the container almost full with potting soil. Take a covering of sheet moss (this should be live, not dried) and place it on top of the soil, covering the entire container. Work around the edges to create a neat planting; trim as needed. Use a water bottle to spritz the planting. To embellish for a special event, clip seasonal fresh flowers, such as lilies and Drift® Roses, and push their stems into the moss. Create different patterns, shapes, and even letters or words, as desired. After the party, remove the cut flowers and move the container to a shady spot where it can thrive. Continue to keep moist, but don’t overwater.

If you don’t see live sheet moss at your local nursery, check with your florist. It can often be ordered through their suppliers. You can also find it through online retailers such as MossAndStoneGardens.com.

1 .2.3 DONE! Flower Crown Use greenery and garden blooms to create a wearable, all-natural coronet.

MATERIALS NEEDED: • Twine-wrapped floral wire • Green floral wire • Wire cutters • Pruning shears or clippers • Fresh greenery (we used myrtle and hypericum) • Fresh flowers (preferably ones durable stems that will not wilt easily)

DIRECTIONS: 1. Using the roll of twine-wrapped wire, wrap a length around your head in the position where you want the crown to sit. Measure a couple of inches longer (to allow for tying), and then cut the wire. 2. Clip fresh sprigs of greenery and use green floral wire to attach them to the heavier twine-wrapped wire. This will create a greenery base. Work and bend the shape into a circle as you wrap, being sure to leave a portion of unembellished wire at each end. Using the same technique, attach cut flowers, berries, or other accent plants to the twine-wrapped wire. Note: You may wish to lay the greenery base flat and place the flowers in select areas of the crown before attaching. 3. Bend and shape the wire into a finished circle. Twist the unembellished ends of the twine-wrapped wire together to finish.
