One of the most important and challenging services in our portfolio is the Aeromedic Transport service. At the end of 2014, we obtained approval from Anac for an additional airplane for this service, a Citation Jet2. The jet is now part of a three airplane fleet and it enhances even more a highly complex service, performed by a crew that is dedicated and specialized in aerospace medical treatment and flight physiology. This service, besides transporting patients at risk, for years, has also supported events such as Formula 1 and the Rally dos Sertões, and transports organs with the precision and speed needed for this type of operation. In this first 2015 edition of its in-flight magazine, the company’s special supplement includes an article about this service and presents two excellent professionals from our team, the flight captains Omir Aparecido Marques and Filipe Franzotti Navarro, who were interviewed in the Our People Section. Horta e técnicas apuradas Localizado em um espaçoso terreno com local para horta, estufas e o projeto arquitetônico pouco usual, em policarbonato, o restaurante Tuju conquista cada vez mais clientes no coração da Vila Madalena, em São Paulo. Tudo começou com o antigo desejo de Ivan Raslton, um jovem que lembra de, aos 7 anos, ajudar a mãe a finalizar cremes brulées. Filho do dono da rede Ráscal, ele até estudou música em Nova York, mas seguiu mesmo foi a paixão pelos sabores e técnicas da cozinha. Depois de um estágio no Maní, estudou dois anos e meio na Escola Hofmann, em Barcelona, trabalhou no El Celler de Can Rocca e no Mugaritz (segundo e sexto melhores do mundo, segundo a Restaurant) e no Ryugin de Tóquio. De volta ao Brasil, juntou-se ao amigo Thiego Montiel (ex-gerente do Spot) para criar o Tuju, em que decidiram explorar os sabores nacionais, principalmente os do Estado de São Paulo, a partir de técnicas bem aplicadas. Completam o time o pâtissier Rafael Protti, que trabalhou com Joel Robuchon em Paris, e o barman Andre Ambrosano, ex-Spot. Entre as delícias servidas na casa estão o caldo de sete feijões com foie gras (38 reais) e o corneto caprese recheado com sorbet de tomate (18 reais), nas entradas. Como prato principal, destaque para o macarrão de pupunha com lulas cortadas em finas fatias, vôngole, ouriço e gema de ovo (49 reais), o peixe do dia servido com nhoque de abóbora e banana da terra (54 reais) e o churrasco de contrafilé de Wagyu com polenta, farofa e vinagrete (81 reais). A sobremesa Terezinha lembra o cultivo de cana-de-açúcar e laranja em São Paulo: traz bolo e sorbet de laranja, mousse de cachaça e crumble de cardamomo (22 reais). O pingado, servido na caneca, tem bolacha de chocolate, creme de mascarpone, praliné e sorvete de café (21 reais). Uma boa dica é iniciar a refeição com um Last Word, drinque feito com gin, suco de limão-siciliano, chartreuse verde e maraschino, no acolhedor bar que fica nos fundos do restaurante.

Vegetable garden and refined tecHniques the restaurant tuju, located in a spacious area with a vegetable garden, greenhouses and its unusual architectural design in polycarbonate, attracts more and more clients in the heart of Vila Madalena, sao paulo. it all started with ivan raslton’s old desire, a young man who remembers he used to help his mother finish off crèmes brulées when he was only 7. the son of the owner of the ráscal chain of restaurants, he started off studying music in new York, but followed his passion for flavors and cooking techniques. after an internship at Maní, he studied for two and a half years at the Hofmann school in barcelona, worked at el celler de can rocca and Mugaritz (the second and sixth best in the world, according to restaurant) and also at tokyo’s ryugin. back in brazil, he joined his friend thiego Montiel (the former manager of spot) to create tuju, where they decided to explore national flavors, especially those from the state of sao paulo, based on well-applied techniques. the rest of the restaurant’s team consists of the pastry chef rafael protti, who worked with Joel robuchon in paris, and the barman andre ambrosano, ex-spot. among the delicious dishes offered by the restaurant is the seven bean soup with foie gras (38 reais) and the caprese corneto filled with tomato sorbet (18 reais), for starters. for the main course, the highlights include the peach-palm pasta with thin slices of squid, clams, sea urchin and egg yolk (49 reais), the fish of the day served with pumpkin and banana gnocchi (54 reais) and the Wagyu sirloin barbecue with polenta, farofa and vinaigrette (81 reais). the dessert called terezinha reminds you of the sugar cane and orange cultivation in são paulo: it comes with cake and orange sorbet, rum mousse and cardamom crumble (22 reais). the coffee, served in a mug, comes with a chocolate wafer, mascarpone cream, praline and coffee ice cream (21 reais). a good tip is to start the meal with a last Word, a drink made from gin, lemon juice, green chartreuse and maraschino, in the cozy bar that is at the back of the restaurant.

Seu restaurante, o Canopée, acaba de ganhar uma obra do artista Julien Colombier, que mistura arte de rua com figurativismo. Ele criou um grande painel com folhagens tropicais que mergulha o visitante no ambiente calmo e protegido do espaço. Recentemente, o chef Filipe da Assunção, que já ganhou o cobiçado título de Meilleur Ouvrier de France, também renovou o cardápio, com toques originais em pratos essencialmente franceses, como os escalopes grelhados, que ganham um novo frescor com o acompanhamento de quinoa ao manjericão. pure fun the rosewood Jumby bay resort, which is located on an idyllic private island near the coast of antigua, has just opened a new villa, the lazy lizard. designed by the architect andrew goodenough, to offer the best there is in terms of fun and comfort. the mansion combines the intimacy of a home with the exclusive resort services. it has a swimming pool, tennis court, fitness center, main house and six suites for guests, the area offers its guests the staff needed for a relaxing vacation in the caribbean, with a butler, housekeeper and chef. detail: the chef, sarah Wong, mixes, in an innovative way, techniques and local and international flavors in the well equipped kitchen at the villa, based on her experience with restaurants such as the italian andreini, which has one Michelin star. facing the white sandy beach and crystal clear turquoise waters, the villa also provides access to the resort’s activities, including a variety of water sports and cycling. the Jumby bay is included in the list of top 25 spas in the atlantic and caribbean, by the readers of condé nast traveler’s list and received the aaa five-diamond award.

Mais altacostura do que nunca Hotel Plaza Athénée reabre após reforma que integrou três novos prédios ao edifício original

ocalizado na Avenue Montaigne, considerada o coração da alta-costura parisiense, o Hotel Plaza Athénée tem entre sua lista de clientes Marlene Dietrich, Gary Cooper, Jane Fonda, Anna Wintour e Jackie 0. Depois de completar 100 anos, em 2013, o hotel iniciou uma longa e completa reforma que, além de remodelar os ambientes já existentes, criou seis novos quartos, oito suítes, um salão de baile e dois espaços para eventos graças à integração a três prédios vizinhos comprados para esse fim. “Fechamos no dia 1o de outubro de 2013 para as reformas, para não colocar em risco o conforto de nossos hóspedes”, diz François Delahaye, diretor-geral do hotel e COO da Dorchester Collection, grupo proprietário. O executivo apressa-se em garantir que o espírito permanece o mesmo: o restaurante três estrelas Michelin de Alain Ducasse continua no mesmo local, agora com novo visual; e a intimidade com a alta-costura ganhou ainda mais força na decoração dos ambientes. “Nosso estabelecimento tem um relacionamento próximo com as casas de costura na Avenue Montaigne, não apenas por meio dos serviços diferenciados que oferecemos a cada um de nossos hóspedes, mas também porque estamos intimamente conectados aos nossos colaboradores, que podem até estar trabalhando nos bastidores, mas são os responsáveis por manter o hotel funcionando – similar às costureiras que trabalham nos bastidores de um desfile de moda”, filosofa Delahaye. Ele conta uma história curiosa sobre a série Sex and The City, que gravou um dos capítulos, aquele em que a personagem Carrie Bradshaw (Sarah Jessica Parker) muda-se para Paris, nas dependências do Plaza Athénée. Os produtores da HBO já haviam reservado quartos no concorrente, mas ele, incentivado por seus assessores e também pela filha, fã da série, decidiu mandar a 50 executivos do canal, nos Estados Unidos, almofadas com a frase “voulez-vous coucher avec moi ce soir”. Durante todo o período em que o hotel ficou fechado, até o início de agosto de 2014, os colaboradores continuaram recebendo 100% de seus salários. “Acho que a receita do sucesso está, em primeiro lugar, na nossa bela localização, na avenida mais luxuosa de Paris; e, depois, porque nossos funcionários fazem parte do staff há muito tempo, alguns há 30 anos. Essa é a diferença principal entre nós e nossos concorrentes. E também porque investimos muito em capacitação, formação e treinamento”, explica o diretor-geral. Respeito à tRadição

Os designers Patrick Jouin e Sanjit Manku assinam a nova decoração do restaurante Alain Ducasse no Plaza Athénée. Na entrada, três conchas de metal espelhado marcam sutilmente a transição entre os espaços externo e interno; na parte côncava de cada uma, mesas criam um ambiente intimista. As mesas são feitas em carvalho maciço que revela suas veias e nós, com partes em couro; as poltronas, também em couro, têm um mecanismo que as faz deslizar sobre o chão. Marie-José Pommereau, responsável pela decoração dos quartos e suítes nos últimos 14 anos, escolheu cores quentes para as paredes e materiais como damasco, bordados e seda de casas de costura de primeira linha para janelas, poltronas e camas. Os seis novos apartamento têm vista para a Avenue Montaigne e, entre as oito novas suítes, duas têm janelas com moldura em prata que enquadram o mais famoso cartão-postal da Cidade Luz, a vistosa Torre Eiffel. Nos banheiros, a renovação inclui o uso de mármore branco e cinza Calacatta, de Carrara, e novas técnicas de iluminação. E, por fim, uma boa estada no Plaza Athénée não pode deixar de incluir os tratamentos do Dior Institut, criado pelo estilista, que era um apaixonado pelo hotel.

More haute couture than ever the Plaza athénée hotel reopens after a renovation that incorporated three new buildings to the original building

ocated on Montaigne Avenue, considered the heart of Parisian haute couture, the Plaza Athénée Hotel’s client list includes Marlene Dietrich, Gary Cooper, Jane Fonda, Anna Wintour and Jackie 0. After completing one hundred years in 2013, the hotel began a long and extensive renovation, which, besides redesigning the existing environments, created six new rooms, eight suites, a dance all and two areas for events, as a result of integrating the three neighboring buildings that were purchased for this purpose. “We closed on October 01, 2013, for the reforms, to avoid putting at risk the comfort of our guests”, said François Delahaye, the general director of the hotel and COO of the Dorchester Collection, the owner of the group. The executive guarantees that the spirit remains the same: the three-star Michelin restaurant by Alain Ducasse continues in the same place, now with a new look; and the intimacy with the haute couture became even more evident in the decoration of the different areas. “Our establishment has a close relationship with the designer stores on Montaigne Avenue, not only through the differential services we offer each of our guests, but also because we are closely involved with our employees, who may be working behind the scenes, but are responsible for keeping the hotel running - similar to seamstresses who work backstage at a fashion show, “philosophizes Delahaye. He has a curious story to tell about the series Sex and The City, which recorded one of its episodes, the one in which the character Carrie Bradshaw (Sarah Jessica Parker) moves to Paris, and stays at the Plaza Athénée. The producers of HBO had already booked rooms at the competitor, but, encouraged by his advisers and also his daughter, a fan of the series, they decided to send 50 executives from the channel, in the United States, cushions with the phrase “voulez-vous coucher avec moi ce soir”. Result: Carrie slept at the Plaza. Throughout the period that the hotel was closed, until the beginning of August 2014, the employees continued to receive their full salaries. “I think the key to success is, in first place, our beautiful location, on the most luxurious Avenue in Paris; and then, because our employees have been with us for a long time, some for more than 30 years. This is the main difference between us and our competitors. And also because we invest a lot in education and training”, explains the general director.

Os designers Patrick Jouin and Sanjit Manku signed the new decoration in the Alain Ducasse restaurant at Plaza Athénée. At the entrance, three mirrored metal shells subtly mark the transition between the outer and inner spaces; in the hollow of each shell, tables create an intimate setting. The tables are made of solid oak, with the rings and knots visible, and with some parts in leather; the chairs, also in leather, have a mechanism that enables them to glide over the floor. The fish, a highlight on the menu together with vegetables and cereals, are remembered by the structure that resembles a ship’s hull. Another striking piece is the large chandelier decorated with Swarovski crystals, which was retained to remind one of the concepts that determine the work of Ducasse, which is, when it comes to gastronomy, the roots should never be forgotten. The bar, a big surprise in the hotel renovation, is also signed by Jouin and Manku. A favorite place for fashion designers and artists for happy hour, the area gained a haute couture look with garlands of blue fabric covering the ceiling. The bar, which is made from transparent resin, seems to levitate, while the chairs and sofas, with stitching that is reminiscent of antique cars, accentuate the elegance. Bruno Moinard, who redesigned the lobby, the cake store La Galerie, La Cour Jardin, the Organza Hall and the new space for parties called Alta-Costura, is a fan of discretion. “Today, luxury is found in the details, in the stitching, in the lining, which is not on display, in surprises. Not in fancy decoration or excess extravagance”, he says. Marie-José Pommereau, responsible for the decoration of the rooms and suites during the past 14 years, chose warm colors for the walls and materials, such as apricot, and embroidered cloth and silk from top quality stores for the windows, chairs and beds. The six new apartments have views over Montaigne Avenue, and two of the eight new suites have windows with silver frames, that look out onto the most famous postcard view of the City of Light, the Eiffel Tour. The renovation of the bathrooms included using Calacatta white and grey marble, from Carrar, and new lighting techniques. And to finish off, an enjoyable stay at the Plaza Athénée should include the treatments offered at the Dior Institut, created by the designer, who adored the hotel.

Measuring 24.35 meters in length, with its innovative design by the firm Luis de Basto and extensive indoor and outdoor areas, it has eight suites, with the hall divided between a living and dining room, kitchen and command post. The owner, by the way, can choose between two layouts, with or without a kitchen, and can also request other customized solutions. The outside is also spacious: the square stern is ideal for entertaining friends or family and the platform is easy for lifting jet skis, as well as serving as a private beach. The gourmet area, shaded by an awning that can be fitted into the ceiling, comprises a barbecue, a sink and work tops for preparing food. For the flybridge, the client can choose between two options. Guto Requena assina as dez peças da linha Alma, que resgata a memória das peças de cristal abandonadas, reunindo-as de forma contemporânea pela técnica da assemblage. Todas as luminárias tem como elemento de ligação a cortiça e lâmpadas LED, que garantem baixo consumo de energia. A coleção Observatorium Naturalis, do Atelier Marko Brajovic, tem duas linhas: Eclipse e Cipó. A primeira é inspirada na Lua e suas fases, representadas por vários efeitos luminosos. A segunda imita a maleabilidade dos cipós, permitindo que o usuário mude a direção do foco de luz. Já o designer Maurício Arruda, nascido em Londrina, no Paraná, projetou as linhas Araucária e Universo. A primeira remete às árvores da região e aos postes de iluminação de Londrina. The Bertolucci lighting brand launched 16 new pieces made in partnership with the designer workshop with famous names. Guto Requena signed the 10 items from the Alma line, which recover the memory of abandoned crystal pieces, bringing them together in a contemporary way using the assemblage technique. All of the light fittings have a cork connecting element and use LED lamps, which ensures low energy consumption. The Observatorium Naturalis collection, from the Marko Brajovic Atelier, has two lines: Eclipse and Cipรณ. The first is inspired by the moon and its phases, represented by various light effects. The second imitates the flexibility of vines, and lets the user change the direction of the spotlight. The designer Mauricio Arruda, born in Londrina, Paranรก, designed the Araucaria and Universe lines. The first reminds you of the trees from the area and Londrina lamp posts. Universe is also a tribute to the Moon: its bouncing light system operates as if it were the sun illuminating the satellite. Finally, the Bertolucci Workshop is responsible for Mube, a floor lamp that resembles the Museum of Sculpture in Sรฃo Paulo, and Oito, a lamp that brings together the other products from the line.

rare and unpublisHed The 2015 concert season promises to be one of the most varied in recent years. The Brazilian Mozarteum, responsible for bringing to Brazil some of the most respected symphonic ensembles in the world, has organized seven international attractions and more than 500 artists in an event that favors multiculturalism. The opening, on April 13 and 14, at the São Paulo Sala, will involve more than 100 musicians from the Russian State Symphony Orchestra, conducted by Michail Jurowski. The orchestra, which in the 1960s was considered the best in the world and has performed in such famous places as Red Square, Carnegie Hall and the Royal Albert Hall, will make its first appearance in Brazil. The big attraction in August is the italian soprano Anna Caterina Antonacci, one of the most famous divas of today, who will sing accompanied by the pianist Maciej Pikulski. She has sang in prestigious places such as La Scala, Covent Garden and the Vienna State Opera, often accompanied by Jonas Kaufmann, considered to be the “Pavarotti” of the moment, with whom she filmed Carmen in 2007. in October, the Swiss Gershwin Piano Quartet will be the attraction, a rare piano quartet consisting of André desponds, Benjamin engeli, Stefan Wirth and Mischa Cheung. À altura de uM gênio O pintor russo Wassily Kandinsky é um dos criadores do abstracionismo e ajudou a moldar os conceitos que revolucionaram a arte no século XX. A exposição Kandinsky: tudo começa num ponto, que vai visitar as sedes do Centro Cultural Banco do Brasil (CCBB) em quatro capitais brasileiras, traz as principais obras, influências e o relacionamento com outros artistas, além de promover um mergulho no universo que cercou Kandinsky. Organizada pelos curadores russos Evgenia Petrova e Joseph Kiblitsky, a mostra tem como base o acervo do Museu Estatal Russo de São Petersburgo, enriquecido com obras de mais sete museus da Rússia e coleções procedentes da Alemanha, Áustria, Inglaterra e França. “Encontraremos também um Kandinsky poético e lírico, no momento de seu auge criativo, no exato instante das suas descobertas. Este é o grande valor deste projeto e da curadoria de Petrova e Kiblitsky: uma exposição forte e desafiadora, que teve de ser defendida com muito tesão e paixão pela arte e pelo conhecimento”, diz o diretor-geral, Rodolfo de Athayde. 35 tHe HeigHt of a genius The Russian painter Wassily Kandinsky is one of the creators of abstract expressionism and helped to shape the concepts that revolutionized art in the twentieth century. The Kandinsky exhibition: Tudo Começa num Ponto, which will be on show in four Brazilian capitals, at the offices of the Centro Cultural Banco do Brazil (CCBB), brings his major works of art, influences and relationships with other artists, and will encourage you to delve into the universe that surrounded Kandinsky. The exhibition, organized by the Russian curators evgenia Petrova and Joseph Kiblitsky, is based on the collection from the Russian State Museum in St. Petersburg, and enriched with works of art from seven other Russian museums and collections from Germany, Austria, england and France. “We will also find a poetic and lyrical Kandinsky, at the time of his creative fame, at the time of his discoveries. This is the great value of this project, organized by the curators Petrova and Kiblitsky: a strong and challenging exhibition, which required a great deal of dedication and passion for art and knowledge”, says the CeO, Rodolfo de Athayde. Exposição uM aMor coMplicado Em cartaz até o dia 15 de março no Metropolitan, em Nova York, a exposição Madame Cézanne conseguiu a façanha de juntar 24 dos 29 retratos de Hortense Fiquet pintados por seu marido, Paul Cézanne, no século XIX. São traços de uma história de amor difícil: o pintor escondeu o relacionamento com ela, com quem teve um filho, Paul, porque amigos e parentes não a aceitavam. Cézanne a conheceu em Paris, onde ela trabalhava como encadernadora, e logo mudaram-se para a Provença. Em seguida tiveram seu único filho e casaram-se. Hortense posou durante mais de duas décadas para retratos em que aparece sempre com um semblante fechado e olhar impenetrável, o que levou muitos críticos a imaginarem que ela tinha uma personalidade difícil. A exposição no Metropolitan procura restabelecer a história de amor dos dois, reunindo retratos como “Madame Cézanne numa poltrona vermelha”, um óleo sobre tela provavelmente pintado em 1877; “Madame Cézanne no conservatório”, de 1891; e “Madame Cézanne de vestido vermelho”, de 1888-90. São obras vindas de vários museus pelo mundo, como o Staatliche Museen zu Berlin e Museu Yokohama, do Japão. On display until March 15th at the new York Metropolitan, the Madame Cézanne exhibition has managed to bring together 24 of the 29 portraits of Hortense Fiquet painted by her husband, Paul Cézanne, during the nineteenth century. They recount details of a difficult love story: the painter hid his relationship with her, with whom he had a son, Paul, because friends and relatives did not accept her. Cézanne met her in Paris, where she worked as a bookbinder, and they then moved to Provence. Then they had their only child and got married. Hortense posed for more than two decades for portraits in which she always appears to be distant and self absorbed, which led many critics to imagine that she was a difficult person. The exhibition at the Metropolitan seeks to restore the love story of the two, bringing together portraits such as Madame Cézanne in a Red Armchair, an oil on canvas painted probably in 1877; Madame Cezanne in the Conservatory, 1891; and Madame Cezanne in a Red dress, from 1888-90. These paintings have come from various museums around the world, including the Staatliche Museen zu Berlin and Yokohama Museum, Japan. A conceituada revista The New Yorker publicou, quatro anos atrás: “Mesmo que você nunca tenha dado a mínima para eventos de moda, vá a este”. O jornalista referia-se à exposição Alexander McQueen: Savage Beauty, uma das dez mais visitadas no Metropolitan em todos os tempos, e que conseguiu a façanha de atrair ao museu nova-iorquino um público muito maior do que os costumeiros fashionistas. McQueen, nascido em Londres em 1969 e morto em 2010, era considerado um enfant terrible da moda, e foi o mais jovem estilista a receber o British Designer of The Year, prêmio que ganhou quatro vezes entre 1996 e 2003. A mostra, que ficará em cartaz entre 14 de março e 19 de julho, cobre desde o trabalho que fez para sua formatura no curso de moda, em 1992, até a coleção de 2010 que não chegou a finalizar: pouco depois da morte de sua mãe, o estilista suicidou-se em seu apartamento de Londres. Suas criações misturavam uma ousadia por vezes meio macabra com momentos de pura poesia. Agora, a exposição chega a Londres, ao Victoria & Albert Museum. A curadora Claire Wilcox vai incluir outras peças, além das exibidas da mostra de Nova York, coordenada pelo especialista Andrew Bolton. O museu americano reuniu mais de 100 looks e 70 acessórios, além de roupas de alta-costura criadas por ele para a maison Givenchy. Novas casas de MaNí Uma padaria e um novo restaurante vêm se juntar ao premiado Maní Manioca dos chefs Helena Rizzo e Daniel Redondo

restaurante Maní tem uma cozinha premiada que atrai a atenção dos bons gourmets daqui e do exterior. A casa de Helena Rizzo e Daniel Redondo faz parte, desde 2013, da lista dos 50 Melhores Restaurantes do Mundo elaborada pela revista britânica Restaurant, com um júri formado pelos maiores especialistas do planeta. Aconteceu no mesmo ano em que a chef conquistou o prêmio Melhor Chef Mulher da América Latina (Veuve Clicquot Latin America´s Best Female Chef). Em 2014, ela foi contemplada como a Melhor Chef Mulher do Mundo (Veuve Clicquot World´s Best Female Chef). Foram muitas conquistas. Mas os chefs não param e as novidades estão sempre chegando. A primeira delas é a abertura de uma padaria a poucos metros do Maní, com produção de pães e doces também para venda direta ao público. E, ainda para este primeiro semestre, está prevista a inauguração de um novo restaurante, localizado num dos shoppings mais tradicionais da capital paulista, integrado a uma livraria. “O restaurante será no terraço de uma livraria incrível que temos no Brasil. Terá uma cafeteria com sanduíches, tortas, comidinhas gostosas e uma cozinha simples com foco nos ingredientes”, conta Helena. Gaúcha nascida e criada em Porto Alegre, Helena Rizzo sempre gostou de cozinhar. Aos 18 anos veio para a capital paulista trabalhar como modelo, fase que durou cerca de um ano e meio. Nesse mesmo tempo foi atrás de estágio nas cozinhas de restaurantes. O primeiro foi no francês Roanne, na época um dos mais importantes da cidade, sob o comando do chef Emmanuel Bassoleil, com quem teve suas primeiras lições de cozinha, aprendendo a importância do ingrediente fresco e da maneira de cozinhar. Nessa época, começou a fazer jantares em festas e em casas de amigos, foi se apaixonando ainda mais pela cozinha, e pouco a pouco deixando de lado o trabalho como modelo. Até sentir que era o momento de morar fora do Brasil, uma experiência fundamental na sua carreira. Embarcou primeiro para a Itália, onde passou um ano, e depois foram mais três anos na Espanha, estagiando e trabalhando em restaurantes nesses dois países. Nessa altura já estava completamente mergulhada no universo da gastronomia. Na Espanha, Helena passou um período na cozinha do premiadíssimo El Celler de Can Roca, localizado em Girona, onde conheceu seu marido, o catalão Daniel Redondo. A experiência foi fundamental para a chef, que voltou para o Brasil e abriu em 2006, com o marido e parceiro na cozinha, o restaurante Maní. O nome significa “casa de Maní”, em tupi, mandioca ou manioca, tirado de uma lenda indígena. O casal divide as panelas. “Durante os primeiros três anos, nós costumávamos trabalhar juntos na cozinha, depois

Cada um tem suas próprias ideias e pontos de vista, mas continuamos trabalhando juntos no processo de criação dos pratos”, detalha Helena. O cardápio do restaurante brinca com uma culinária variada com toques contemporâneos. Uma boa sugestão para conhecer a criatividade da dupla, é o menu degustação, servido somente no jantar. No cardápio estão sugestões para beliscar, como os deliciosos bombons salgados nas versões guacamole com biscoito de fubá e o de foie gras com goiabada e capa de vinho do Porto. Entre as entradas, destaque para o nhoque de mandioquinha com “dashi” (caldo) de tucupi. Entre as opções de prato principal, estão as receitas de fideuá de lagostim e fideuá de lulas. O fideuá é uma variante da tradicional paella, com uma diferença: o arroz é substituído por uma massa miúda, uma receita típica de Valência, na Espanha. Uma sugestão de peixe é o atum levemente grelhado com quinoa, chutney de amoras, espuma de gengibre e shissô, uma espécie de erva aromática. Entre as carnes, destaque para o rosbife em crosta de lapsang souchong (chá preto chinês), acompanhado de salada morna de batatas. Nas sobremesas, o instigante Da Lama ao Caos, um doce de berinjela defumada com coalhada seca de queijo de cabra, sorvete de gergelim, gelatina de flor de laranjeira, com crocante de massa filo e pistache, e o minimalista mil-folhas Dominó, com sorvete de framboesa. A criatividade da cozinha é traduzida no ambiente contemporâneo do restaurante, que une o rústico das linhas arquitetônicas à escolha do branco e vidros coloridos na iluminação, proporcionando aconchego. Na entrada, um corredor de 13 metros exibe instalações de novos artistas.

Maní – new places a bakery and a new restaurant join the award-winning Maní Manioca run by the chefs Helena Rizzo and Daniel Redondo.

he Mani restaurant has award-winning cuisine that attracts the attention of goods gourmets here and abroad. Since 2013, Helena Rizzo and Daniel Redondo’s restaurant has been included in the list of 50 Best Restaurants in the World, published by the British magazine Restaurant, with a jury consisting of leading international experts. In the same year the chef won the award for Best Female Chef in Latin America (Latin America’s Veuve Clicquot Best Female Chef). In 2014, she was short listed for the Best Female Chef in the World (Veuve Clicquot World’s Best Female Chef). There were many achievements. But the chefs do not stop and there is always something new. The first event is the opening of a bakery a few meters from Mani, that produces breads and cakes, which are also sold to the public. And, for this first semester, a new restaurant is scheduled to open within a bookstore, located in one of the most traditional shopping malls in Sao Paulo. “The restaurant will be on the terrace of an amazing bookstore we have in Brazil. There will be a coffee shop with sandwiches, pies, tasty snacks and a simple kitchen focused on ingredients”, says Helena. Born and raised in Porto Alegre, in the south of Brazil, Helena Rizzo always enjoyed cooking. When she was 18 she came to São Paulo to work as a model, a phase that lasted about a year and a half. At the same time she looked for a job as a trainee in a restaurant. Her first experience was with the French restaurant Roanne, one of the most important ones in the city at the time, under the command of chef Emmanuel Bassoleil, with whom she had her first cooking lessons, learning the importance of fresh ingredients and cooking techniques.

During this period, she started cooking dinners at parties and at friends’ houses, and fell in love even more with cooking, and gradually she left her career as a model behind. Until she felt it was time to live in another country, leaving Brazil, which was fundamental for her career. She first travelled to Italy, where she stayed for one year, and then spent three more years in Spain, as a trainee and working in restaurants in these two countries. By then, she was completely immersed in the universe of gastronomy. In Spain, Helena spent some time working in the kitchen of awardwinning El Celler de Can Roca, located in Girona, where she met her future husband, Daniel Redondo, from Catalonia. The experience was fundamental for the chef, who returned to Brazil and in 2006 opened Mani restaurant, together with her husband and partner, The name means “Mani’s house”, in Tupi meaning mandioca or manioc, taken from an Indigenous myth. The couple share the saucepans. “During the first three years, we got used to working together in the kitchen, then we decided to separate the shifts. When I make lunch, he makes dinner, and vice versa. Each us has our own ideas and points of view but we continue to work together to create the dishes”, explains Helena. The restaurant’s menu offers a varied cuisine with a contemporary touch. A good suggestion to experience the couple’s creativity is to try the tasting menu, served only at dinner. The menu includes suggestions for snacks such as the delicious savory bonbons, in different flavors, including guacamole with cornmeal biscuits or foie gras with guava pate and Port wine. Among the starters, one of the highlights is the white carrot gnocchi with tucupi “dashi” (broth). The choices of main course include crayfish fideuá and squid fideuá. The fideuá is a variant of the traditional paella, with one difference: the rice is replaced by tiny pasta, a typical recipe from Valencia in Spain. One suggestion for the fish is the lightly grilled tuna with quinoa, blackberry chutney, ginger foam and shissô, a type of aromatic herb. The highlight from the meat choices is the roast beef in lapsang souchong crust (Chinese black tea), accompanied with warm potato salad. For dessert, the exciting Da Lama ao Caos, a sweet made from smoked eggplant with dry goat cheese curd, sesame ice cream, orange blossom jelly, with a crunchy filo pastry and pistachios, and the minimalist Domino mille-feuille with raspberry ice cream. The creativity of the kitchen is transported into the restaurant’s contemporary setting, which combines rustic architectural lines with the white and colored glass for the lighting, creating a cozy environment. rosé é o vinho mais antigo do mundo. Mas passou pelas uvas que o diabo pisou ao longo dos tempos, ao carregar o estigma de ser o que não é: nem branco nem tinto. Essa indefinição de caráter faz muita gente fechar nariz e boca para eles, achando que é uma mistificação. Será? Na Antiguidade, a fermentação era feita por pouco tempo junto com a pele da uva, a responsável pela cor do vinho, porque não se conhecia ainda todo o processo de maceração que levaria o líquido a se tornar tinto − não se faz rosé com uvas brancas, obviamente. O que se fazia era um vinho pouco encorpado, quase sem sabor, e por isso eram acrescentadas ervas e especiarias para dar um gosto melhor e permitir melhor conservação. O processo pouco mudou ao longo do tempo, com o suco das uvas tintas indo para os tanques de fermentação junto com as cascas, retiradas depois de algumas horas de acordo com a cor pretendida pelo enólogo, mais ou menos clara ou escura. Por isso, é um vinho com mais semelhança com o branco, embora feito com uvas apropriadas ao tinto. Essa indefinição de estilo levou o rosé a ser menosprezado desde sempre e até hoje há muita gente que torce o nariz para ele. Essa rejeição é bem menor quando se fala no champanhe rosé, que foge à regra por ser uma mistura de vinho tinto (Pinot Noir ou Pinot Meunier) com branco (Chardonnay). De acordo com enólogos, essa mistura oferece mais consistência de aroma e gosto ao champagne. Quanto ao vinho rosé comum, mesmo os que não o apreciam inteiramente sabem que tudo depende do momento: eles podem ser encantadores à beira da piscina e na praia, como aperitivo, ou acompanhando canapés, frios, frutos do mar e peixes grelhados. A única questão a considerar diz respeito a todos os vinhos: escolher

aqueles de bons produtores, secos, sem a enganação dos meio docinhos e enjoativos. Outro detalhe muito importante: devem ser bebidos jovens, das safras mais recentes possíveis. São vinhos delicados, frágeis, que sofrem com a exposição à luz e locais quentes. Mas respondendo à pergunta lá de cima: eles são uma mistificação? Não. Há rosés bem-feitos em todos os países vinícolas, embora se reconheça que os de maior sucesso são os da Provence, sul da França, com clima e solos perfeitos para o vinho. As cores são lindas, salmonadas, e exibem aromas insinuantes de frutas vermelhas ou de flores e grande dose de frescor. Todos os países vinícolas elaboram seus rosés. A Itália está entre eles, com alguns bons vinhos feitos com a uva Barbera, no Piemonte, ou com a Ciliegiolo, na Umbria; na Espanha, seus rosados são mais vigorosos, prontos para enfrentar carnes assadas, elaborados com as uvas Tempranillo ou Garnacha, entre outras; Portugal também faz parte do clube com rosés de qualidade usando suas uvas tradicionais, como a Touriga Nacional. E o Brasil? Alguns produtos surpreendem, como os da Serra Catarinense, que se beneficiam do clima mais frio, favorecendo a boa e necessária acidez desses vinhos, assim como os espumantes da Serra Gaúcha, que justificam a boa fama dos borbulhantes nacionais. Taça na mão e vida que segue. Como diz um provérbio justamente provençal, “um dia sem vinho é como um dia sem sol”.

Rosé wines to toast the summeR Light and tasty, it fills the glass with its elegant, pale pink color and refreshing taste

osé is the oldest wine in the world. But the word was it that the devil walked through the grapevines, and it carries the stigma of being what it is not: neither white nor red. This character of uncertainty results in many people turning up their noses to them, thinking it’s was a hoax. Is this the case? In olden times, fermentation was for a brief period together briefly the skins of the grapes, which is responsible for the color of the wine, because the whole maceration process of was not yet know, which would make the liquid turn red - rosé is not made from white grapes, obviously. What was made was a wine that was not very full-bodied, almost tasteless, and as a result, herbs and spices were added to improve the taste and ensure better preservation. The process has changed very little over time, with the juice of the red grapes added to the fermentation tanks along with the skins, and then removed after a few hours depending on the color intended by the winemaker, which as either lighter or darker. As a result, the wine tends to resemble white wine, although it is made from grapes appropriate for red wine. This undefined style resulted in rosé being rejected since the beginning and even today many people turn up their nose at it. This rejection is much less when it comes in pink champagne, which is an exception to the rule because it is a mixture of red wine (Pinot Noir or Pinot Meunier) and white wine (Chardonnay). According to winemakers, this mixture provides more consistency in the aroma and taste to the champagne. In the case of the common rosé wine, even those who do not fully appreciate them, know that everything depends on the moment: they can be charming served at the poolside and on the beach, as an aperitif, or accompanying hors d’oeuvres, cold cuts, seafood and grilled fish. The only issue to consider is what applies to all wines: choose those by good producers, dry, without being misled through sweetening ingredients. Another important detail: they should be served young, from the most recent vintages possible. They are delicate, fragile wines, and suffer from exposure to light and hot areas. But in reply to the question above: are they a hoax? No. There are good rosé wines made in all wine producing countries, although it is recognized that the most successful are those from Provence, in the south of France, which has a perfect climate and soil for wine. The colors are beautiful, salmon colored , and offer aromas insinuating red fruits or flowers and a great deal of freshness. All wine producing countries make rosé. Italy is among them, with some good wines made from the Barbera grape in Piedmont or the Ciliegiolo in Umbria; in Spain, its rosés are more vigorous, ready to face roast meats, and are made using Tempranillo Garnacha grapes, amongst others; Portugal is also part of the club with quality rosé using its traditional grapes, such as Nacional Touriga. And Brazil? Some products are surprising, such as those from Santa Catarina da Serra, which benefit from the cooler climate favoring good and necessary acidity of these wines, as well as sparkling wines from Serra Gaucha, which justifies the good reputation of the national sparkling wines. Glass in hand and life goes on. As one Provencal proverb says, “A day without wine is like a day without sunshine.”

Com isso, os eventos para colecionadores, designers e empresários do setor multiplicam-se, nem sempre com a qualidade necessária que um segmento em constante mutação e aprimoramento exige. O MADE − Mercado, Arte e Design é um desses raros encontros: além de os curadores escolherem com extremo rigor, profissionais e convidados especiais que participam com exposições e instalações, o evento, realizado este ano entre os dias 5 e 9 de novembro no Jockey Club de São Paulo, promove uma rara oportunidade de ir além do puro negócio, com palestras e mesas-redondas em que profissionais renomados e especialistas compartilham suas experiências. Sou Fujimoto, que assinou uma instalação com um enorme tapete de luzes flutuando sobre o gramado central, foi um dos destaques, com Jason Klimoski, que palestrou e criou uma instalação com 7.560 garrafas pet, quantidade exata do descarte em São Paulo a cada cinco minutos. Logo na entrada, outra instalação, Erê-Lab, do Atelier Roni Hirsch, encantou as crianças: tinha uma casinha sobre palafitas modernista e um trepa-trepa com o formato do skyline da cidade. O tema central, que orientou a paleta de cores da decoração do espaço, assinada pelo Atelier Marko Brajovic, era a obra da arquiteta Lina Bo Bardi, tema de uma exposição.

Uma grande atração, para quem gosta de design de alta qualidade, é mesmo ver as novidades que estão chegando às lojas. A Firma Casa, por exemplo, exibiu um armário da coleção Capacho, dos irmãos Campana, que mistura tapetes de fibra de coco natural com folhas de madeira sucupira. A galeria Beleza Art & Design, da Bélgica, expôs, entre outros, os surpreendentes trabalhos do estúdio Kinetura, dos arquitetos Xaveer Claerhout e Barbara Van Biervliet. Seus experimentos com materiais suscetíveis à interação humana levaram à criação da luminária New York, cujas lâminas que envolvem a lâmpada abrem-se quando detectam a aproximação de pessoas. E a inglesa Bethan Laura Wood, de 31 anos, foi outro destaque: além de expor suas criações, em suportes como joias, moda, produtos e estampas, ela palestrou. A galeria da Berlim Design Selection, uma iniciativa que visa divulgar a produção da cidade, foi outro ponto de destaque, com os produtos do projeto Hillsideout e de Martin Holzapfel. “Ficamos muito satisfeitos com a segunda edição, porque conseguimos crescer com qualidade, inclusive trazendo outros países, como Alemanha e Japão”, diz Waldick Jatobá, curador e idealizador do MADE. Foram 15 participantes da seção de galerias e 28 estúdios dos Coletivos, a maioria com produtos novos e inovadores. Destacamos a produção de alguns designers e artistas.

Nascida em Porto Alegre, a arquiteta Ines Schertel viveu durante 24 anos em São Paulo antes de tomar uma decisão radical: mudou-se para uma estância (as fazendas gaúchas) em São Francisco de Paula (RS). Depois de uma visita a uma galeria de Milão, em que conheceu o trabalho em feltro rústico feito por tribos nômades da Ásia Central, decidiu aproveitar a lã da tosquia de suas 300 ovelhas em um trabalho parecido. Aprendeu as técnicas, em que as fibras da lã são pressionadas com água e sabão de oliva para criar o feltro, em vários cursos e viagens de estudo, inclusive ao Quirguistão. O designer e artista Paulo Goldstein é uma daquelas pessoas que fazem você acreditar sem reservas na humanidade, mesmo que esteja em um momento do mais profundo pessimismo. Com 34 anos, ele formou-se em Artes Plásticas pela FAAP e trabalhou como modelista e escultor de animações de diretores como Wes Anderson e Tim Burton durante anos, na Inglaterra. Com a crise internacional, ficou desempregado, e foi fazer um mestrado em desenho industrial na Central Saint Martin, em Londres. O questionamento central de seu projeto, Repair is Beautiful, é inspirado na crise: como reparar um sistema quebrado? Apesar de parecer pouco provável relacionar uma crise financeira com um produto, ele foi observando semelhanças e aperfeiçoando o conceito. “Um sistema complexo tem milhares de partes, e quando consertamos algo, podemos criar consequências não intencionais”, diz. Nesse caminho, chegou a vários questionamentos, como a tendência atual de a indústria produzir objetos que durem pouco, para levar o consumidor a comprar sempre mais. Suas pesquisas inspiraram várias criações, a partir de produtos descartados que encontrava no lixo ou ganhava de amigos ou parentes. Em 2015, Paulo vai expor a Cadeira de Diretor Reparada no conceituado Victoria and Albert Museum, de Londres, e seu trabalho Scarcity is Beautiful foi designado pelo reitor da faculdade para ocupar uma sala da Central Saint Martin. Se tem algo que impressiona no trabalho de Rodrigo Calixto é a sua paixão pela madeira. A admiração pelo material é tanta que ele decidiu criar lingotes numerados, como se fossem de ouro, a partir da madeira que sobrou da reforma da Casa Daros, no Rio de Janeiro. “Decidi fazer o teste de carbono para saber a idade das peças, e descobri que elas eram de 1866, ano em que a casa foi construída”, diz o artista. Outra obra sua que celebra a madeira é a Xiloteca, que começa com 45 cubos de diferentes tipos, depois acrescidos por outros, de acordo com o desejo do colecionador. Conforme encontra novas madeiras, o próprio artista compromete-se a enviar um determinado número de cubos por ano aos colecionadores de sua obra, que tem edições numeradas e limitadas. Form, Function and reFlection check out the highlights of the second edition of made market, art and design

ccording to the World Ranking Project, Brazil is ranked seventh in the list of countries that receive the most awards in international design competitions, ahead of giants like China, ranked eighth, and experts such as Germany, ranked ninth. Consequently, events for collectors, designers and entrepreneurs from the sector multiply, but not always with the quality that a segment in constant change and improvement requires. MADE - Market, Art and Design is one of these rare meetings: in addition to the curators selecting the exhibitors with extreme rigor and special guests participating in exhibitions and installations, the event, held this year between 5 and 9 November at the São Paulo Jockey Club, offered a rare opportunity to go beyond pure business, with lectures and round tables during which renowned professionals and experts shared their experiences. Sou Fujimoto, who designed a facility with a huge carpet of floating lights on the central lawn, was one of the highlights, together with Jason Klimoski, who spoke about his creation, which consisted of an installation made from 7,560 pet bottles, the exact number of bottles disposed of in São Paulo every five minutes. At the entrance, another installation, EreLab, from the Roni Hirsch Atelier, captured the children’s imagination: it consisted of a little house on modern stilts and a climbing frame in the format of the city’s skyline. The central theme, which guided the palette of colors used to decorate the area, signed by the Marko Brajovic Atelier, was the work of the architect Lina Bo Bardi, the theme for an exhibition. A big attraction for those who enjoy high quality design, is to see the new creations arriving at the stores. Firma Casa, for example, exhibited a cabinet from the Capacho collection, by the Campana brothers, which mixes carpets of natural coconut fiber with sheets of sucupira woods. The Beleza Art & Design gallery, from Belgium, exhibited, among other items, the amazing works from the Kinetura studio, by the architects Xaveer Claerhout and Barbara Van Biervliet. Their experiments with materials that interact with humans led them to create the New York lamp, whose blades that enclose the lamp open when they detect people approaching. And the English woman, Bethan Laura Wood, aged 31, was another highlight: besides exhibiting her creations, such as jewelry, fashion, products and prints, she also gave a lecture. The gallery from the Berlin Design Selection, an initiative aimed promote the production from the city, was another highlight, with products from the Hillsideout project and items by Martin Holzapfel. “We were very pleased with the second edition, because we were able to develop with quality, and invited other countries such as Germany and Japan to participate,” says Waldick Jatoba, the curator and founder of MADE. There were 15 participants in the galleries section and 28 studios in the Collective section, most with new and innovative products. We have included the production of some of the designers and artists.

Born in Porto Alegre, the architect Ines Schertel lived for 24 years in São Paulo before taking a radical decision: moved for a resort (the Gaucho farms) in San Francisco de Paula (RS). After a visit to a Milan gallery he met working on rustic felt made by nomadic tribes of Central Asia, decided to take the shearing the wool of their sheep 300 in similar work. The designer and artist Paul Goldstein is one of those people who make you believe unreservedly in humanity, even if it is at a time of the deepest pessimism. At 34, he graduated in Fine Arts from FAAP and worked as a modeler and sculptor of directors animations as Wes Anderson and Tim Burton for years in England. With the international crisis, was unemployed, and was doing a Masters in Industrial Design at Central Saint Martin in London. The central question of your project, Repair is Beautiful, is inspired by the crisis: how to fix a broken system? If there’s something that strikes at work Rodrigo Calixto is his passion for wood. The admiration for the material is such that he decided to create numbered ingots, like gold, from wood left over from the renovation of Casa Daros in Rio de Janeiro. “I decided to make the carbon test to determine the age of the pieces, and found that they were in 1866, the year the house was built,” says the artist. Another work which celebrates its wood is the Xiloteca, starting with 45 cubes of different types, then added by others, according to the desire of the collector. As is new wood, the artist himself undertakes to send a certain number of cubes per year to collectors of his work, which has numbered and limited editions. Saint-tropez, joie de vivre à beira-mar

A ilha de pescadores às margens do Mediterrâneo criou fama internacional graças a celebridades de alto poder midiático. Brigitte Bardot, a eterna musa de Saint-Tropez, passava os verões ali e tornou-se a mulher mais desejada do mundo após filmar na ilha E Deus criou a mulher. Já Bianca tornou-se Mrs. Jagger ao se casar com Mick, em 1971, em um impecável tailleur Yves Saint Laurent branco, numa cerimônia na igrejinha do vilarejo, que ainda conserva o charme dos lugares pequenos, como a feira provençal e os jogos de pétanque na Place des Lices, cercada por butiques e cafés que vivem cheios de gente vendo a vida passar. Mas não se engane: Saint-Tropez exibe desde labels sofisticadas − como a pop up resort da Chanel que abre todo verão − até criações típicas da região, como as sandálias tropezziènes do Atelier Rondini (rondini.fr) e a deliciosa Tarte Tropézzienne (latartetropezienne.fr), ambas em torno da Place des Lices. Transporte aeromédico da global oferece equipamentos modernos e equipes especializadas em medicina aeroespacial e fisiologia de voo

o final de novembro, o serviço de Transporte Aeromédico da Global Aviation ganhou mais uma aeronave, um Citation Jet2, que pode atingir a velocidade de 700 quilômetros por hora e transportar um paciente e um acompanhante. O serviço, criado junto com a companhia, em 1994, também é executado por um Pilatus PC12, turboélice com capacidade para paciente e acompanhante e velocidade de 480 quilômetros por hora; e por um helicóptero Esquilo B, que transporta um paciente sem acompanhante e voa a 220 quilômetros por hora. As aeronaves são equipadas com UTI e adaptadas, sempre a partir das normas e leis estabelecidas pela Agência Nacional de Aviação Civil (Anac), e também podem transportar órgãos para transplantes. O processo de aprovação da aeronave é longo e minucioso, com várias etapas, e é revalidado de forma sistemática e constante. “A Anac é responsável pela autorização da aeronave e da empresa para operar com transporte de enfermos. A fiscalização é realizada por meio das auditorias periódicas de acompanhamento e nas inspeções em rampa”, diz Aline Alessandra Nascimento Silva, engenheira de Manutenção na Global Aviation. Ela destaca que todos os equipamentos são certificados e homologados com o que há de mais moderno no mercado. “Em casos em que não há a certificação, não há como comprovar que os testes necessários foram realizados, podendo haver mau funcionamento no equipamento aeromédico e até mesmo na aeronave, por consequência de interferência eletromagnética entre os dois tipos de aparelhos, podendo colocar em risco a vida do paciente e dos demais ocupantes da aeronave”, alerta. Outra exigência é a preparação da tripulação, que passa por oito horas de treinamento especial antes de estar apta a transportar pacientes ou órgãos. “Nesse curso, apresentamos desde o conteúdo do nosso kit de trabalho, que tem aparelhos e medicamentos, até a fisiologia de voo, já que há alterações de temperatura, quantidade de oxigênio no ar e vibrações que podem atingir o paciente”, diz o médico Edison Fiore Pimentel, de 54 anos, que trabalha há 15 anos com a remoção de pacientes graves. Colaborador da BEM − Emergências Médicas, empresa especializada nesse tipo de serviço que trabalha em parceria com a Global, ele costuma ministrar os cursos aos pilotos e copilotos, e frisa a importância da interação entre as equipes médica e de voo. “O piloto precisa conhecer detalhadamente as condições do paciente. Pessoas em estado grave podem estar suscetíveis a variações, então às vezes é necessário voar a uma altitude mais baixa, evitar zonas de turbulência e fazer um pouso mais suave e longo, sem acionar o reverso”, afirma o médico. O comandante e instrutor de voos aeromédicos Rogério Reis, de 50 anos, piloto há 33 e há cinco de volta à Global − ele havia trabalhado na companhia na época da fundação − concorda. “Temos uma grande afinidade com a equipe médica, o que nos permite cuidar do paciente da melhor forma possível. Envolve vários profissionais desde os bastidores, já que, além de providenciar o voo, temos de garantir um hospital e um leito adequados àquele paciente”, diz. O comandante Reis afirma que o serviço traz uma gratificante sensação de ser útil e fazer a diferença em momentos de extrema fragilidade dos doentes e de seus familiares. “Tenho uma paixão por este trabalho. Minha maior recompensa é conseguir fazer um voo tranquilo e sentir o reconhecimento dos clientes, que muitas vezes enviam e-mails e cartas contando como estão os pacientes que transportei”, diz. Esse é o caso de Pedrinho, que voou pela Global com o comandante Roberto Christiano Gaspar de Oliveira, que é médico e piloto, para os Estados Unidos, onde está fazendo o tratamento de uma doença rara, a Síndrome do Intestino Curto (SIC). “Quando chegou aqui, transportado pela Global Aviation, o Pedrinho veio direto para o hospital Jackson Memorial para fazer todos os exames e saber a real necessidade de cirurgia. Ele fará transplante de intestino isolado. Aqui tudo é diferente. Conseguimos levar nosso príncipe para casa pela primeira vez e todos os cuidados passaram a ser feitos na residência, nos dando a oportunidade de oferecer uma vida com mais qualidade para ele. Ele começou a ganhar peso e está crescendo”, conta Aline da Lavra, mãe do garoto. Mais uma história que, graças à dedicação de vários profissionais, entre eles as equipes de voo, se encaminha para um final feliz.

t the end of november, Global aviation’s aero medic transport service acquired another airplane, a Citation Jet2, that can reach up to 700 kilometers per hour and transport one pacient accompanied by another person. the service, created at the same time as the company in 1994, also has a pilatus pC12, a single engine, turboprop capable of transporting one pacient and a relative and flies at a speed of 480 kilometers per hour; and also a squirrel B helicopter, which transports just the pacient and flies at 220 kilometers per hour. the aircrafts are equipped with iCu and adapted, based on the standards and laws established by the national Civil aviation agency (anac), and can also carry transplant organs. the approval process of the aircraft is long and thorough, and involves various steps, and is revalidated in a systematical and constant manner. “anac is responsible for authorizing the company and the aircraft to transport infirm people. the control is based on periodic inspection audits and inspections at the hangar”, says aline alessandra nascimento silva, a maintenance engineer at Global aviation. she highlights that all equipment is certified and ratified with the best on the market. “in cases where there is no certificate, there is no way to prove that the necessary tests were made, with a chance of aeromedic equipment or even aircraft malfunction, as a result of electromagnetic interference between two types of equipment, which could put the patient’s and other passengers’ lives at risk”, she alerts. another requirement refers to training for the crew, who are required to complete an eight hour special training course before being able to transport patients or organs. “During this course, we introduce the

crew everything from the contents of our working kit, which includes medicine and equipment, to flight physiology, since the changes in temperature, oxygen levels and vibrations may affect the patient”, says the doctor edison fiore pimentel, aged 54, who has worked for 15 years with transporting patients in severe conditions. edison is an employee at Bem – medical emergencies, a company specialized in this type of service that works in partnership with Global, and is used to giving courses to pilots and copilots, and insists on the importance of communication between the medical and flight crews. “the pilot needs to know in detail the patient’s condition. people in a severe condition might be sensitive to variations, so sometimes it is necessary to fly at lower altitudes, avoid turbulence zones and make a longer, softer landing, without activating the thrusts” says the doctor. the commander and flight instructor, rogério reis, aged 50, has piloted for 33 years and came back to Global five years ago – he worked at the company at the time of its foundation– and he agrees. “We have a great affinity with the medical crew, which enables us to take care of the patient in the best way possible. We deal with serious and different situations, including babies that need to be transported in incubators, with no seat belt”, he states. in these cases, the nurse has to hold the baby in moments of turbulence, when alerted by the pilot. Cássia Duarte, the sales manager at Global, states that the company has a highly efficient structure to do this kind of work. “it’s a wonderful and delicate operation. it involves various professionals starting from those at ground level, since, as well providing the flight, we have to guarantee a hospital and a bed suitable for the patient”, she says. flight captain reis states that the service provides a gratifying sensation of being useful and making a difference in moments of extreme fragility of the patients and their families. “i am passionate about this job. my biggest reward is being able to make a smooth flight and feel the clients’ gratitude, who many times send e-mails and letters informing us about the patients that i transported”, he says. this was what happened with pedrinho, who flew with Global with commander roberto Christiano Gaspar de oliveira, a doctor and a pilot, to the united states, where he is receiving treatment for a rare disease, the short intestine syndrome. “When he arrived here, brought by Global aviation, pedrinho came straight to the Jackson memorial hospital to do all the exams and find out about the real need for surgery. He will undergo an isolated intestine transplant. Here everything is different. We were able to take our little prince home for the first time and he will be looked after at home, giving us the opportunity to offer him a better quality of life. He started gaining some weight and is growing up”, says aline da Lavra, the boy’s mother. one more story that, thanks to the dedication of lots of professionals, amongst them the flight crews, is heading towards a happy ending.

Entrei na companhia no setor que dá apoio aos voos, providenciando os papéis e cuidando da burocracia, mas logo passei a copiloto e hoje sou comandante de um Falcon 2000 LX”, diz. Ele destaca duas qualidades decisivas na sua decisão de permanecer na empresa e sonhar com um futuro cada vez melhor: a valorização dos colaboradores, oferecendo oportunidade de crescimento; e o cuidado minucioso com a segurança. “Na nossa profissão, é essencial ir e vir em segurança. He decided to become a pilot when he was very young: he started the course when he was 16 and got his license when he was 18. “my father worked in an airport and, when i was about 14, i decided i wanted to become a pilot. i joined the company and worked in the sector that provides flight support, doing the necessary paper work and taking care of the bureaucracy, but soon i became copilot and today i am the flight captain of a flacon 2000 LX”, he says. He highlights two decisive qualities that helped him choose to stay in the company and dream of an ever better future: the way employees are valued, and offered opportunities to grow; and the focus on security. “in our profession, it’s essential to travel safely.
