reduce skin cancer risk in winter Sunscreen and the great outdoors go hand-in-hand during the warmer months of the year. For instance, few people can imagine spending a day at the beach without first covering their skin in sunscreen. But skin also must be protected when spending time outdoors in winter. The World Health Organization notes that one in every three cancers diagnosed across the globe is skin cancer. While that’s a scary notion, it’s important to note that many skin cancer cases are preventable. Protecting skin in winter, a time when many people mistakenly believe their skin is not vulnerable to damage caused by the sun, is one way for people to reduce their risk of developing skin cancer.

The “set it and forget it” approach does not apply to protecting the skin with sunscreen. Reapply sunscreen every 90 minutes that you are outdoors to ensure your skin is fully protected at all times. Skiers should recognize that they are much closer to the sun as they traverse the slopes, and that means the UV radiation is more intense on the mountain than it might be in the foothills or lower elevation areas. That heightened intensity only underscores the importance of reapplying sunscreen.

The raw materials that make up compost come from organic waste. These can be disposables from the garden and kitchen, as well as other areas around the house. Turning waste into compost not only helps the landscape, but also the planet. Compost is relatively easy to make, and there are scores of materials that can be put into compost. OKAY FOR COMPOST

Most organic materials, or items that were once living, can be used in compost. Plant-based items used in cooking, such as potato peelings, carrot skins, banana peels, cocoa hulls, coffee grounds and filters, corn cobs, apple

Make the cupcakes: Preheat the oven to 350 F. Lightly butter and flour 24 muffin cups. 2. Whisk the sugar, flour, cocoa powder, baking soda, and salt together in a large mixing bowl. 3. Combine the stout, melted butter and vanilla in a large mixing bowl. Beat in the eggs, one at a time. Mix in the sour cream until thoroughly combined and smooth. Gradually mix the dry ingredients into the wet mixture. 4. Divide the batter equally among the muffin cups, filling each three-quarters full.

Bake for 12 minutes and then rotate the pans. Bake for 12 to 13 minutes longer, or until risen, nicely domed, and set in the middle, but still soft and tender. Cool the cupcakes for 10 minutes in the tins on a wire rack before turning out onto the rack to cool completely. 5. Make the icing: Beat the cream cheese with an electric mixer on medium speed until light and fluffy. Gradually beat in 3⁄4 cup of the cream. Slowly mix in the confectioners’ sugar on low speed until incorporated and smooth. If the icing is too thick to be spreadable, beat in more cream, 1 tablespoon at a time. Cover the bowl with plastic wrap and refrigerate until ready to use. (The icing can be made several hours ahead and kept covered and chilled.) 6. Top each cupcake with a generous layer of frosting and dust with cocoa powder.

Perhaps nothing can spoil an appetite more than a crisper drawer full of fresh vegetables that have taken a turn for the worse. Spoiled food is not just unsafe to eat, but it is also very costly. The Academy of Nutrition and Dietetics Foundation and the U.S. Department of Agriculture estimate that the average family of four throws out nearly $1,500 worth of food and beverages each year. That means that, within seven years, the average family has spent more than $10,000 on food they did not eat. In recognition of the problems posed by food waste, the National Grange, the oldest farm and food advocacy organization in the United States, aims to create a cultural shift that reduces food waste. Individual consumers can do their part in supporting that shift by taking various steps to reduce food waste in their homes.

• TAKE INVENTORY BEFORE GOING TO THE GROCERY STORE. An inventory of the refrigerator and pantry can help shoppers avoid buying items they already have. This

is especially valuable at reducing food waste in regard to perishable items that can spoil before shoppers have a chance to eat them.

• MAKE A MEAL PLAN AND GROCERY LIST.

The Environmental Protection Agency notes that meal plans and accompanying grocery lists help consumers reduce food waste and save money by decreasing the likelihood that they will buy items they won’t need for the meals they plan to eat in the week ahead.

Organic, fresh vegetables eaten when they are most ripe may be the healthiest way to eat vegetables. That’s because frozen fruits and vegetables are picked when they’re ripe

and then immersed in boiling water to kill bacteria and prevent enzyme activity that can spoil food. They’re then immediately flash frozen, a process that typically preserves nutrients. The long shelf life of frozen fruits and vegetables reduces the likelihood that shoppers will throw them out before eating them. That’s not the case with fresh vegetables, which the ANDF and the USDA note account for more than 30 percent of food waste each year.

• WASH BERRIES ONLY AS YOU EAT THEM.

When eating fresh berries, wait to wash them until you eat them. The risk of mold forming increases when washing an entire container all at once, whereas only washing the berries as they’re eaten increases the likelihood that they won’t spoil before they’re all eaten.
