I love beautiful things and places. And I most definitely adore pretty people. This month, Vegas/Rated celebrates and covets all the things that make Las Vegas one of the most attractive cities in the world. On the Strip most everyone serving a cocktail bears the title model. Our little desert enclave is like the Bermuda Triangle of sexiness, sucking in all sorts of attractive beings from other locales, with surprising specimens around every corner. In “Stripped” (Discover), we did exactly that: pared down the city’s sex symbols to take a closer look at what makes them so lovely. Each has a useful recommendation on how they stay so perfect (See Page 78). Staying with the all-around beautiful vibe, “Raw & Cut” (Dine) challenges six of Vegas’ best sushi chefs to create conceptual pieces. Sushi has long been celebrated for its health benefits, but now it’s revered for the beauty of its presentation as well (See Page 42). It’s only fitting that we celebrate health and beauty in this month’s issue, as the one day each year when both are on display en masse is New Year’s Eve. There’s nothing like ringing in a new year on the Strip, and as we say goodbye to 2011, we also say hello to two highly anticipated nightlife venues, one making its way from the West Coast (Hyde) and the other from the East Coast (1 OAK). Both are set to open December 31, and both are sure to signal yet another, perhaps more mature, shift in the nightlife landscape of the Strip. Could it be that Las Vegas is finally almost all grown up? That’s something I can definitely toast to … with a Diddle Skittle (See Page 129).

With his latest venture, Public house—opening New Year’s eve inside the Grand Canal shoppes at the venetian—las vegas restaurateur Billy Richardson and his team at Block 16 hospitality have cannonballed into the gastropub oeuvre, putting a fresh twist on some old classics. For instance, chicken and waffles—the mainstay of soul-food cuisine—is given a contemporary flair by using chickpea flour for the waffle and topping it with a maple gastrique. THE latest venue to toss its wide-brimmed felt fedora into the Cosa Nostra-themed foray, Mob Bar (formerly Sidebar) officially reopened downtown December 5. The date’s significance? It was the 78th anniversary of Repeal Day, when the 18th Amendment was wiped off the books, restoring Americans’ right to get their collective sip on. The remodeled tavern is situated next to The Mob Museum—which is scheduled to open in February—and offers a 1920s theme that’s equal parts supper club and speakeasy. It has been two years since platinum-selling R&B crooner John Legend performed at the Pearl at Palms Casino Resort. Since that time, heaven only knows how much we’ve missed him. thankfully, the piano man has decided to return to Las Vegas for a New Year’s Eve concert. Although busy working on his next album (slated for release in late spring), the Grammy-award winner found time to give Vegas/Rated the green light on the latest happenings in his life. VEGAS/RATED: How have you been doing? JOHN LEGEND: I’ve been very well actually. I’m working on my

new album—that’s been my main focus. It’s exciting. I feel we’re onto something really nice. I’ve been working with Kanye [West], [Dave] tozer and a few other producers. It’s really been going well.

V/R: talk about your evolution from the days of Get Lifted to where

you are now.

JL: I think Get Lifted was the purest version of me using my early

influences—a lot of gospel, soul and hip-hop blended together. It is probably the most raw manifestation of my musical upbringing at that time. As I’ve grown, I’ve experimented. Each album represents where I was mentally at that moment. What I’ve been trying to create now is what my vision of a 21st-century folk record is. Understanding that I come from a background of really pure soul and gospel, but also bringing that into a modern context in a way that feels pure and true. I know the sound that I’m going for.

V/R: How exciting is it to be playing Vegas on New Year’s Eve? JL: Vegas is the epicenter of New Year’s [Eve] now. Where else

can you go? It is either Vegas, Miami or New York. We’re excited to come. My girlfriend [supermodel Chrissy teigen] has family in Vegas, so we get over there more than we used to. We spend quite a bit of time there. It’s a fun town. V/R: What places do you like to visit when you’re here? JL: Vegas is good for restaurants. You see a lot of really good chefs

putting quality restaurants in Vegas. We’ve gotten to go to a few of them. We like Joël Robuchon, and we just ate at StK the other day, and that was good. We also like Lotus of Siam. I just look at the menu and see what strikes my fancy. I eat a lot of fish.

V/R: What does your girlfriend do to make you a better man? JL: I think it is always good to have somebody who tells you the

SuShi has evolved from a purely utilitarian construct—the preservation of fish—to a fast food meant to be eaten on the run, to the art form it has become behind the bars of the most celebrated Japanese restaurants. Even Las Vegas gets impossibly fresh fish flown into the desert daily. And in the hands of sushi masters, such pristine product takes center stage. a taste for Barolo, perhaps? B&B has more than 10 percent of all Barolo producers on its list. integrating such specialization with food demands a deep regional knowledge of wines. Pascal Bolduc, lead sommelier at B&B, approaches wine and food in a way that emerges from a background in the sciences. tucked away in drawers inside the restaurant are hand-drawn tree and leaf charts noting fruit, flower, earth and other aromas with their corresponding chemical names, drawing connections between contrasting and complementary scents and flavors to help create unique wine and food pairings. this is how magic happens—through passion. After college, Bolduc spent time learning about cuisine and wine in schools and kitch-

ens from strasbourg to Vienna in Austria to singapore to all over italy. Moving to Las Vegas “for love,” Bolduc explains with a smile, he spent time at Joël robuchon at MGM Grand and tableau at Wynn Las Vegas before making his way to B&B ristorante. relaxing in the grotto section of the restaurant, Bolduc shares a few pours offered as part of the current tasting menu, which features selections of Bastianich’s wines. He pairs Bastianich’s 2009 Vespa Bianco—a blend of sauvignon, Chardonnay and a honeyed varietal called Picolit—with B&B’s warm lamb’s tongue (a salad of sorts with Chanterelle mushrooms and egg) during the antipasti course. Later, Bolduc pours a 2007 La Mozza “Aragone,” a super tuscan blend with cherry fruits and an interesting flavor profile twist in that it contains Carignano, giving the wine a surprisingly spanish character— a must-have with a veal chop or double-cut pork chop for two. indeed, after a night at B&B, it’s easy to understand why Bolduc is always smiling. this is an environment where a passionate food and wine alchemist can concentrate on working his magic.

But there are masters of the craft who can put the odds firmly in your favor. For example, a cigar convention happened to be in town during a recent weekend. so how did B&B ristorante Chef de Cuisine Jason neve, Pastry Chef doug taylor and Bolduc respond to the tastes of this crowd? With a sublime syrup made from a Muscat family-based wine called Zibibbo from the northern coast of sicily, steeped for one hour in the heady aromatics of very, very fine tobacco. this was served over a pumpkin gelato and bubbly float. the taste of this syrup on the tongue? deadly amazing, as the mouth tingled from the tobacco, a full sensory experience. Beautiful aromatics, a lovely sticky texture on the tongue, just the slightest hint of bitterness on the finish, lightly spiced, sweet—serious— with a visceral response in the tissues of the mouth reacting to this opulent elixir. if Bacchus himself were alive today to smoke cigars, this would be his dessert. the best part? A staple of the New York dining scene for years, Eric and Bruce Bromberg opened their Vegas outpost a year ago, and while the brothers are known for dishing up some of the tastiest snacks in the desert, their passion for cooking is matched only by their undying love of music. Whether they’re operating a hybrid bowling alley/eatery/live music venue in Brooklyn or whipping up some grub at Blue Ribbon, the brothers are always rockin’ out. Just ask Eli Pacino, managing partner and entertainment director of 1 oak—the ultra-exclusive manhattan hotspot opening new year’s Eve at the mirage. a new york native, Pacino is an industry veteran who started throwing parties at 18 and moved to las vegas six years ago. launching a venue from scratch, he says, is the toughest job he’s ever had: long nights of planning, countless hours of customer development and obsessive attention to the smallest of details have made it an arduous task. his close ties to 1 oak’s new york owners the Butter group—which partnered with nightlife powerhouse the light group to bring the club to las vegas—made him the perfect bridge between east and west. according to Pacino, the new venue finds the balance between the vegas megaclub and the intimate, first-class atmosphere that defines new york nightlife. “in new york there’s no viP section; the whole club is the viP section,” Pacino says.

Mega-producer David Foster, the Canadian “hitman” who discovered Josh Groban and had a hand in creating almost every radio smash of the ’80s and ’90s (Peter Cetera, Celine Dion), recently turned 62. But he’s not slowing down, especially not in the Porsche he’s driving through Malibu to an L.A. meeting. “I have to have success,” he says unapologetically. “If I went six months without any success in this industry, I’d slit my wrists.” Don’t worry. The forthcoming Michael Bublé album Foster oversaw is projected to sell millions. He’s also got another reason to live: He got hitched last month before taking a job at Universal as chairman of Verve Records. His plans for the jazz label—which will shift to more adult contemporary pop—won’t please everyone, though. “An executive there offered advice,” he says. “She said, ‘Be prepared to piss off those who matter.’ I know some manager representing an artist I worked with years ago—both of them my friends—will want a record deal, and I’ll have to say no.” Foster more often than not keeps things positive. When his Top 40 streak ended in a post-Britney Spears world, he regrouped, besting the adult-contemporary market by grooming singers such as Andrea Bocelli. Foster’s essentially critic-proof now. “Well, I live by the famous rule: Don’t believe the good stuff they write about you, so you can ignore the bad.” Foster insists coming from Canada meant he had to work twice as hard. Also, despite being “a huge Van Halen fan,” he lacked the hard-rock gene. “I write pussy music,” he admits. “But when my hands fall on a piano, the result—say, the love theme from St. Elmo’s Fire—feels right.” What also feels right: his touring concert ensemble, David Foster & Friends, featuring Chaka Khan, Charice, Philip Bailey and more to be announced. “I’m building the Foster & Friends brand,” he says. “I want people to trust they’ll get an unforgettable show no matter who’s onstage.” David Foster & Friends at Mandalay Bay Events Center, Dec. 29. If you’ve ever strolled through a Vegas casino and been startled by a spontaneous roar, odds are one of two things happened: Someone spotted Elvis (again), or someone is rolling the bones on a red-hot craps table. Invented in the early 1800s, craps remains the single most exhilarating game on a casino floor, where all it takes is one hot shooter to turn a long oval table into an instant party. The one problem? Craps— with its multicolored felt table of words, numbers and symbols, not to mention confusing rules—also remains the most intimidating game on a casino floor. We see you nodding in agreement as you stand off in the distance, yearning to join the fun. Now you can.

TaKE a pass …

The “pass line” is the most popular bet on the table. Place chips on the spot marked “pass line,” and if the first (come-out) roll is a 7 or 11, you win. If it’s a 2, 3 or 12, you lose. Any other number establishes the “point,” and you get paid if the shooter rolls that point again before he rolls a 7 (i.e., “craps out”).

… or DoN’T

The exact opposite of the pass line, those who play the “don’t pass bar” are betting on the shooter crapping out before he rolls a point. Not a wise play if you hope to make friends at the table.

playING THE ‘FIElD’

As simple as it gets: Place chips on the part of the table marked “field,” and if the shooter rolls a 3, 4, 9, 10 or 11, you win even-money; if he rolls a 2 or 12, you win more (usually 2-to-1); if he rolls any other number, you lose.

‘plaCE’ yoUr BETs

At the top of the table are the numbers 4, 5, 6, 8, 9 and 10. At any point during a roll, you can “place” a bet on any of these numbers, and if the shooter rolls your number before a 7, you win. Note: Unlike “pass” or “don’t pass” bets, you can take down (i.e., cancel) “place” bets during a roll.

HarD Way To WIN

Several spots on the table offer “exotic” bets with increased odds, including “hard-way” wagers. Example: If you bet the “hard-way 8,” you’re praying that the shooter throws double4s before he rolls any other combination of 8 (or a 7). Keep in mind that experienced players refer to these as “sucker bets.”

Roll in the New Year with this uniquely designed sparkling wine from the house of Agustí Torelló Mata, one of Spain’s most respected cava producers. The shape—puntless (without the traditional divet found in almost every champagne bottle), and reminiscent of the Roman wine amphora—can withstand greater pressure than a traditional punted bottle.

LOCATION, LOCATION, LOCATION

All Agustí Torelló Mata cavas (agustitorellomata.com) are vinified on property and bottled from estate-grown indigenous grape varieties hailing from the Penedés region between Barcelona and Tarragona, Spain. The youngest vines are 60 years old, indicating low yields but imparting concentrated flavors and aromas.

THE GRAPES

Kripta incorporates a blend of 45 percent Macabeo from the hills by the Mediterranean Sea; 35 percent Parellada from the area’s inland mountains; and 20 percent fragrant Xarel·lo from the valley in between. The grapes are picked young to achieve the cava house’s trademark acidity.

ON THE PALATE

Across the portfolio, this producer’s cavas all share an appreciable dryness and acidity that yearns for almost any variety of delicious cuisine. Kripta in particular is luscious and complex, with notes of ripe fruit, toast, vanilla and some smoke. Enjoy with smoked fish and meats, caviar, foie gras and aged cheese.

A BRIGHT FUTURE

Each bottle lists the date of disgorgement, when the spent yeast was removed and the bottle resealed to continue on its journey. You should try to consume the cava as close to that date as possible.
