Mixed Salad with Cream Cheese Dressing Ingredients 3 Tablespoons cream cheese 1 Tablespoon olive oil 1 Tomato cut in cubes 3 Tablespoons cooked corn 1/2 Cup carrot cut in cubes 1 lemon for garnishing 1/2 Bell pepper cut in cubes 3 Lettuce leaves cut in medium size

1 Spread the cream cheese in the bottom of the serving plate. Drizzle olive oil over it. 2 In a separate bowl, mix all the vegetables and season with salt and black pepper. 3 Place the vegetables on top of the cream cheese and olive oil.

Cold Pasta & Mushroom Salad Ingredients 3 Button mushrooms sliced 1 Tablespoon olive oil 1/2 Cup cooked pasta 3 Tablespoons cooked pinto beans 1/2 Cup sliced bell pepper Black olives Black pepper/ Salt 1 Teaspoon balsamic vinegar 1 Clove garlic minced

1 Mix the balsamic vinegar, garlic, salt, and black pepper well. Set aside for 2-3 minutes. 2 Pour olive oil on the balsamic mix ture, and whisk for one minute. Set aside. 3 SautĂŠ the mushrooms and bell pepper for two minutes.

4 In a bowl, add the pasta, vegetables, and pinto beans. Mix gently. 5 While the pasta and the vegetables are warm, pour the previously prepared dressing, and mix gently. 6 Let the salad cool down, then refrigerate. It should be served cold.

It was the very first thing I cooked and it started my many years of culinary experiments. When I was eight years old, I was alone at home and was getting hungry and could not see the

I made a salad starter, soup, and roast chicken complete with steamed veggies and roasted potatoes, dessert, and I even tried making bread. While, I used no yeast and it was flat, it was very tasty regardless. With the table set perfectly, candles lit and a bottle of white wine chilling in the fridge; I called my parents at the office and told them to come home because it was “an emergency”. Of course, they dropped everything and rushed home. Delighted there was no “emergency” other than my stomach screaming in hunger, they were even more delighted with the aroma that greeted them, and the meal that was presented to them.

Italian Wedding Soup

By Leyla Hur Ingredients: 2-3 lbs raw chicken bones/scraps

1 lb lean ground beef

3-4 quarts water

3 cloves garlic, ground together with

5 cloves garlic, whole

2 TBSP vegetable oil

2 1/2 - 3 tsp chicken powder (or to taste)

1 tsp garlic powder

2 zucchini, diced

1/2 TBSP Middle Eastern 7-Spices

2 spring onions, sliced

1/2 tsp salt (or to taste)

2 cups baby carrots, sliced

1/4 tsp ground black pepper (or to taste)

1 red pepper, diced

2 cups orzo pasta

2 cups baby spinach (or other leafy vegetable)

1- Cook chicken scraps in water with 5 whole cloves garlic. Bring to a boil and then reduce heat to simmer. Simmer for a couple of hours until reduced in half. Turn off heat and remove chicken leaving only broth. Add chicken powder to the broth. 2- Add the vegetables and onion to the broth. 3- In the Magic Bullet, blend the 3 cloves of garlic with spices and oil, add to the ground beef and mix well together. Form into 1" meatballs and then drop into boiling soup. Add the pasta. Cook until meat and pasta is cooked through, stirring occasionally to prevent pasta from sticking to the pot.

1 Beat the butter and sugar until creamy 6 Bake in pre-heated oven at 350F/180C/Gas mark 4. for 17 in texture. Lime Cheesecake

Ingredients 13 Digestive biscuits 1/3 Cup melted butter 1 Cup water 3 Tablespoons milk powder 80 gram lime jelly (almost 6 tablespoons) melted in 1/2 cup hot water 6 Tablespoons cream cheese 3 Dream whip sachets 3/4 Cup heavy cream 1 1/2 Cup vanilla cake cubes

1 Crush the biscuits, then add the melted butter to it, mix with hand or spatula. 2 Pack the previous mixture in the bottom and up the sides of a 9 or 10 inch springfor m pan. Use the bottom of a glass or your hand to press the crust. Keep in the fridge while making the filling. 3 In a bowl beat the cream cheese until there are no lumps. Add the jelly mixture and keep on beating. MunatyCooking | 23

Make sure the jelly is still in liquid form and in room temperature. 4 Pour in the rest of the ingredients, except the cake, and mix for three minutes. Add the cake and gently fold in the filling. 5 Pour the filling over the crust, keep in the fridge for at least three hours before serving.
