INGREDIENTS

4 cups vanilla ice cream ¼ cup chopped milk chocolate bars ¼ cup marshmallow bits ¼ cup graham cracker crumbs

DIRECTIONS

Place the ice cream in the bowl of your electric mixer and beat on low speed just until smooth, but still thick. Add the chopped chocolate, marshmallow bits and graham cracker crumbs. Stir until just combined. Scoop into serving glasses and garnish with additional mix-ins, if desired. Serve & enjoy!

TRUTH we should carry

Coming off a season of giving and receiving, I’m reminded of the truth behind the Bible verse found in Acts 20:35 telling us the words of Jesus that it is more blessed to give than to receive.

It’s a truth that we should carry with us well past the holidays.

After more than twenty years of working at a television station with a focus on serving the community, I have witnessed those blessings.

At this year’s Food for Families, the largest one-day food drive in the state of Texas, I saw the generosity from the young to the old.

An 8th grader who didn’t have much saved up all her change for three years and dropped off every last penny. She gave $120, inspired to help after seeing homeless people on the side of the road.

I was working the car drive-through line on the last day of the food drive when a 73-year-old woman drove up and handed me a $10,000 check from the window of her vehicle.

She quietly told me that she once used a food pantry herself and now that she could, she wanted to give back.

Her smile was as big as Texas as she drove away.

Toys for Tots, an effort to put Christmas gifts under the tree for those in need, inspires me every year.

I watched a 6-year-old girl set up a cupcake stand so she could raise money to purchase toys for kids.

When it came time to donate the toys, she cried. She told her mom she was just ‘so happy.’

You don’t have to be rich to give or have all the time in the world to volunteer and you don’t have to have some grand idea to make a difference. All we need are willing hearts and eyes that look outside ourselves.

In everything I did, I showed you that by this kind of hard work we must help the weak, remembering the words the Lord Jesus himself said: ‘It is more blessed to give than to receive.’ Acts 20:35

And when we give freely, we’ll learn that blessings really do flow, and those age-old words ring true today.

It truly is better to give than to receive.

A Secret Weapon to Fat Loss I Bet You Didn’t Know

(and it has nothing to do with exercise or diet!)

I WOULD BE REMISS AS A PERSONAL TRAINER OF ALMOST 14 YEARS IF I DID NOT SHARE THIS

ONE WITH YOU. The fact of the matter is, we all know in our hearts and likely even seared in our minds, that in order to lose weight, we must have a well- balanced diet and exercise plan in our lives. This is so true, but there are only so many different ways we can hear that before we either commit to doing it, or not. That part of fat loss is not rocket science.

However, one thing I bet you did not know is the true importance of SLEEP. Yes, turns out the old saying, “I’ll sleep when I’m dead” is actually really horrible on your physique.

When you don’t get at least 7 hours of sleep, your body becomes hormonally unbalanced. When you don’t sleep enough, you wake up with high cortisol (stress hormone) because your body is depleted. This often leads to more cortisol, which can make you alert and makes it hard to sleep, which becomes a vicious cycle. Additionally, lack of sleep has been proven to trigger your body to produce more ghrelin, which may lead to more hunger and unnecessary eating, and less leptin, which is a mediator of long-term food suppression regulation and energy balance.

So, in 2023, if you have been “doing everything right” and you are still not seeing the scale budge, my charge to you is to get more sleep. Go to bed 30-60 minutes earlier a few times a week until it’s a habit. And just keep reminding yourself that sleep is a huge piece of the health puzzle!

1 (3-4 pound) whole chicken 1/4 cup unsalted butter, melted 3 tablespoons olive oil 1 lemon 6 large garlic cloves, divided (4 minced, 2 left whole) 2 tablespoons chopped fresh rosemary Kosher salt Freshly ground pepper 3 fresh rosemary sprigs

DIRECTIONS

Let the chicken sit at room temperature for about 30 minutes before preparing. Remove the giblets and neck from the cavity. Pat dry with paper towels. Preheat oven to 400°F. Lightly grease a roasting pan with non-stick cooking spray. Place the chicken, breast-side up, in the prepared roasting pan. Rub the chicken all over with the melted butter, under the skin and inside the cavity. Halve and juice the lemon. Save the squeezed halves to stuff inside the chicken. Mince 4 cloves of garlic. In a small mixing bowl, whisk together the olive oil, lemon juice, 4 cloves of minced garlic, and 2 tablespoons of chopped fresh rosemary. Rub the olive oil mixture all over the buttered chicken, under the skin and inside the cavity as well. Season the chicken all over with salt and pepper. Stuff the squeezed lemon halves and 2 whole cloves of garlic into the chicken cavity along with 3 fresh rosemary sprigs. Roast, uncovered for about 1 hour and 10 minutes, basting halfway through the cooking time with the drippings around it. Baste at least two more times while cooking, until the chicken is cooked through and skin is golden. Roast until the internal temperature of the chicken reads 165°F and juices run clear when pierced with a skewer. Remove from the oven, tent with foil and allow to stand for 10 minutes before carving. Serve with pan drippings.

1 cup (2 sticks) unsalted butter 2 cups semi-sweet chocolate chips 1 cup granulated sugar 1 cup brown sugar 2 large eggs ½ cup Irish cream liqueur 1-½ cups all-purpose flour 1 tablespoon high-quality ground coffee ½ teaspoon salt ½ teaspoon baking soda 1 cup chopped pistachios

½ cup (1 stick) unsalted butter, softened 2 cups powdered sugar 3 tablespoons Irish cream liqueur ½ teaspoon vanilla ½ cup chopped pistachios

DIRECTIONS

Preheat oven to 350°F. Line a 9×13-inch baking dish with parchment paper and set aside. In a heavy saucepan over low heat, melt the butter and chocolate chips until completely melted, stirring constantly. Remove from heat. Using a wooden spoon, stir in the sugars. Add the eggs, one at a time, stirring until well-combined. Stir in the Irish cream liqueur. In a separate bowl, whisk together the flour, ground coffee, salt, and baking soda. Stir the flour mixture into the chocolate mixture until just combined. Fold in 1 cup chopped pistachios. Spread batter evenly into prepared baking dish. Bake for about 30 minutes or until a toothpick inserted in the center comes out clean. Let brownies cool completely in the baking dish on a wire rack. Meanwhile, make the frosting. In the bowl of an electric mixer fitted with the whisk attachment, beat the butter and powdered sugar on low speed until just combined. Add the Irish cream liqueur and vanilla and beat on high speed until smooth, thick and spreadable. Once brownies are cooled, spread evenly with frosting and sprinkle with 1/2 cup chopped pistachios. Yields 18 brownies.

MELISSA HOEKSTRA is a long-time Waco resident, where she met her husband, Jonathan. They have two boys, William and Harrison and three doodles, Barkley, Hazel, and Lilibet.
