How much Spanish is enough Spanish? By Audrey Royem
Spanish is the most widely used language in Mexico. With sixty-six indigenous languages spoken in Mexico, including Nahuatl, Yucatec Maya and Zapotec. Around Puerto Vallarta we hear Huichol, from the surrounding highlands, and Tzeltal and Tzotzil, from economic migrants coming from the south of Mexico, like Chiapas. But for touirstss and expats, a little Spanish goes a long way. As a foreigner in Mexico you might wonder how much Spanish you will need to succeed. Ultimately this will depend on where you live, with whom you associate, and how daring you are. Learning any language is about putting yourself out there and not worrying about making mistakes. In the Puerto Vallarta area many expats speak very little Spanish. Since most Mexicans speak some English, and even some French, because of the large flux of tourists in the area. Expats tend to stick together and don’t get enough exposure to the language to really put all those classes to use. I recommend that when you come to Mexico you make an effort to learn as much Spanish as you can. You will have a more enjoyable time. You will form a deeper, more meaningful relationship with the environment and people around you. You will also feel more secure in your transactions if you have at least a basic understanding. For legal or unique situations, it is advisable that you work with a translator or spanish speaker that you trust. A great option is to do an immersion language program to get the full experience of the language from class room to shopping and developing friendships. Here are some schools for more information:

Patriotic, traditional, delicious! TRADITIONAL HOLIDAY DISHES By Gary R Beck Holidays in Mexico play an important part of the culture, and food is a celebratory component. Traditional Mexican holiday foods add flavor and fun to the fiestas. As in other cultures, foods served for gatherings depend on the time of year and the specific holiday being celebrated, but some of them, such as tamales, appear on more than one holiday table.
Tamales The word tamal comes from the Aztec word tamalli meaning “wrapped” and tamales are a favorite food for the Day of the Dead season. They consist of meat, fruit, cheese or beans encased in a cornmeal covering. The entire tamal [singular for tamales] has a wrapping of a corn husk or banana leaf to hold the ingredients in place as it steams. After steaming, the cornmeal dough surrounding the filling sets; then the diner removes and discards the wrapping, enjoying the savory or sweet tamal inside. These appear yearround at Mexican meals, but they have a close association with holidays due to their ritual nature. Each holiday has its own filling inside the tamal, resulting in over 40 types of tamales.

Rosca On El Día de los Reyes [Three Kings’ Day, January 6, 12th Day of Christmas, Epiphany], Mexicans enjoy a ring-shaped bread with a plastic surprise inside representing the Christ child. This rich, sweet bread known as rosca contains a “baby”. All of the party guests have a piece of bread and the one whose bread slice contains the baby must host a party for the others present on February 2 for the celebration of Día de Candelaria, Candlemas, when tamales are served.
Chile en Nogada The name comes from Spanish for walnut tree, nogal. It consists of poblano chiles filled with picadillo topped with a walnutbased cream sauce, called nogada, and pomegranate seeds, giving it the three colors of the Mexican flag: green for the chile, white for the nut sauce and red for the pomegranate. The walnut variety is Nuez de Castilla or Castilla Walnut [Juglans regia]. Since it was first prepared around the time of Mexican independence and it contains the colors of the Mexican flag, this is considered a very patriotic dish steeped in national spirit. It is said that this dish was invented in the 1800’s by nuns in Puebla. Agustin de Iturbide was a military commander who fought in Mexico’s War of Independence and later became Emperor of Mexico from 1822 to 1823 and traveled to Mexico City, stopping in Puebla, where the townspeople decided to hold a feast to celebrate the country’s independence from Spain, and to honor Agustin de Iturbide on his saints’ day [Feast of Saint Augustine of Hippo, August 28]. The Augustinian nuns of Santa Monica convent wanted to prepare a special dish using local ingredients that were in season and they created chile en nogada. The picadillo usually contains apple [manzana panochera], sweet-butter pear [pera de mantequilla] and criollo peach
[durazno criollo], a mixture usually containing shredded meat, aromatics, fruits and spices. The cream has milk, butter and washed nuts. The traditional season for making and eating this dish is August and first half of September, when pomegranates appear in the markets of Central Mexico and the national independence festivities begin. In some areas, the dish is created depending on when the pomegranates are ripe, at some time between August and January.
Vegetable Dishes Nopal has cactus pads which are used in recipes. It is a versatile food, with part being considered a vegetable and part a fruit. Nopal is used in salads, tacos and with eggs. Chacales is a dish made with a dried white corn that is broken into pieces and made into soup. Italian squash is dried, fried with tomatoes and onions and served with melted cheese. El DĂa de los Muertos [Day of the Dead] best known celebratory food is
Pan de Muerte To honor these deceased, Mexicans bake a rich, egg-based bread molded into the shape of skulls or bones, sometimes with the top dough molded into a cross. Also, sugar crafted into skull shapes, then variously colored, are displayed in bakeries where one may purchase them for a sweet holiday treat. Mexico is a country steeped in tradition. Many of these dishes have roots in religion but they all serve to bring the family together to celebrate life and enjoy good traditional foods, as done worldwide.

Making Melocha By Wendy Rains
E
very October for five days, Todos Santos celebrates its founding and honors its patron saint, Pilar, with the annual Festival del Dia de Nuestra Señora del Pilar. The streets in the central district of town are shut down to accommodate all the carnival rides (at all levels of scary), a children’s activity area, game booths, food booths and tons of music and dancing in the town square til the wee hours. As I walked around this year’s festival on a rainy day, I noticed a long line of people gathered round the last booth in the row in front of the church. Hmmmm ..I had to know why there were so many people crowding each other over there, when the rain seemed to keep most people at home. Turned out they were watching Jose Nuñez, who came down from the mountains to make melocha, or taffy, for us. They were waiting to buy the freshly made, individually wrapped little pieces of it. We’re not talking Atlantic City boardwalk saltwater taffy here, though. I stood there fascinated by the entire procedure, obviously done in the old traditional manner. There were piles of freshly cut sugar cane on the ground and each piece was individually put through a sort of juicing machine made specifically to extract the pulp and liquid from the cane. Collected into a bucket, the pulpy mixture was poured into a big witch’s style cauldron over a gas flame to boil until turning into syrup.
The boiled syrupy mixture was then poured over a very large, flat, cold stone, propped up on cement blocks, to start the hardening process. They were also selling the sugar cane juice over ice, but it was a very unappealing greenish color, so I passed. It took around five minutes for the edges to harden enough for Jose to start folding them in towards the center, little by little. As it hardened, the color darkened and the mixture thickened. When Jose determined it reached the right consistency for the next step, he gathered the sugary mess into a kind of mushy loaf and stretched it over a long nail hammered into a wooden post, essentially pulling it away from the post, up and down back and forth, and sideways, with his bare hands…same as a modern taffy pulling machine would do. With each twist and turn, the mixture became a more golden color, until it was pale blond….and oddly enough, metallic, like spun gold gleaming in the sun, which had thankfully, come out to warm our day. Jose then sprinkled flour over a cloth on a worktable…..and started kneading the taffy like it was dough. It was really something to see…and I think the local people loved watching him as much as I did. After about 10 minutes of kneading, he started cutting it into teeny little knot-like rounded shapes, which his assistant individually wrapped in celophane. This is what everybody was waiting for. Each one cost 5 pesos. I was treated to one by some tourists who stopped to watch with me, and we all oohed and aahed as we bit into the sweet little treasures. I kept thinking about it being pure sugar and that I would probably be up all night. I think it took nearly an hour to get that first bite out of my back molars, but it was worth it.

W
hen we were living in San Juan del Rio, Querétaro my favourite day of the year was always New Year’s. After a wonderful night of dancing & family fun on New Year’s Eve we would sleep in and for ‘breakfast’ we`d enjoy left over Pozole, a delicious white corn soup. Then, since it gets chilly in the evenings during winter, we would bundle up and head to the main square in front of the cathedral. Once it was dark, the priest would give a family blessing over the hundreds of people who had gathered for the service. When he was done the crowd would let white helium balloons go and light their sparklers, holding them up while singing in the New Year. With hearts of gratitude for the year just passed and hope filled wishes floating up to God with our white balloons we ushered in the New Year. There are many beautiful and amazing things to do and see around San Juan del Rio all year round but Christmas is a particularily special time. Just a short drive away, Tequisquiapan is an enchanting pueblo magico designated village that is largely a weekend getaway for the affluent from Querétaro and Mexico City. It has a lovely main plaza that is over 300 years old
and excellent local crafts of mainly woodwork and baskets. We used to spend many happy Sunday afternoons in the plaza eating fresh cheese buns and drinking coffee. Our daughter would join the other children on her bicycle, chase the pigeons giggling or blowing bubbles and chasing them through the air. As part of the Ruta Vino, there are three wonderful wineries in close proximity. The highly recommended Freixenet Winery is in the heart of the Ruta Vino and host an amazing Christmas event each byear. The tour through their cellars 25 meters below the ground is well worth the stairs up and down. Up for a little adventure? A few miles down the road is the mountainous village of San Sebastián Bernal,a small town in the Mexican state of Querétaro. At 350 meters it is home to the third tallest monolith in the world, after the Rock of Gibraltar and Sugarloaf Mountain. It cool mountain temperatures give a great excuse to shop for the wooly warm clothes needed in this charming town. Boasting lovely little coffee shops, yummy cornsicles (roasted corn with cheese, mayo, lime & salt) and the best Café de Olla anywhere, this is a must see stop on your way through Querétaro.
