FUTURE FOOD TRENDS 2024 AI hit the headlines early last year when ‘askit-anything’ platform ChatGPT hit 100 million users just 2 months after its launch. As well as suggesting dishes to make based on what’s in your fridge, AI can create imaginative recipes perfect for those seeking Michelin starred food from simple ingredients. Flavourwise, there are two cuisines to watch out for in 2024 and those are Nepalese, and Pakistani. Nepalese, with its slow cooked meats, spicy vegetable takari curries and momos steamed dumplings, and Pakistani, renown for its meaty and vegetable birianis and black lentil dal. 10

Nepalese Dal- Bhat The nourishing quality of the most often eaten meal in Nepal can’t be understated. Bhat, Dal, or rice and lentils can be the most complex and interesting meal you have ever had. The simplicity will confound you because the slightly soupy lentils can burst with hidden spices harmonising nicely with the lentils cooked to just soft. The rice is always soft and fluffy with the basmati persuasion. Most often this meal is accompanied by Saag or some type of greens sautéed with a little heat lent by a pepper or two. Nepalese Dal- Bhat Ingredients 1 1/2 cups uncooked rice 1 cup dry Lentils (any colour) 1 small yellow onion 3 cloves garlic 1 tablespoon olive oil 16 oz. canned tomatoes 1/3 cup coriander 1 lime 1 red chili Spices to taste: Salt, Cumin, Coriander, Turmeric, Cayenne Pepper

Method Begin cooking the rice according to the package instructions (usually 2 parts water to 1 part rice). Once the rice is starting, chop the onion and garlic and add them to a large pan with a splash of olive oil.

meat (usually chicken) or a medley of vegetables. No less complex in flavour, it only lends its charm to the whole affair. Give this a try...

Once the onions and garlic have softened, add the lentils and allow them to cook dry for a minute or two, then add about 3 cups of water into the pan, cover, and let cook. Once that water is absorbed (15+ minutes), add the spices to taste (about 1/2 teaspoon of each to start), the can of tomatoes, and more water (if needed). Simmer for another 10-15 minutes until the lentils are fully cooked and the flavors have melded together perfectly. Give them a taste and adjust any seasonings as needed. At the very last minute, add a handful of chopped coriander and remove from the heat. The rice should be cooked and fluffy at this point. To serve, add a few heaping spoons of rice to a plate and top with the lentils. Garnish with a lime wedge, some sliced chilies, and a sprig of coriander.

Moist layers of spiced carrot cake embraced by creamy cream cheese frosting, adorned with crunchy walnuts. A harmonious blend of sweetness and warmth that tantalises taste buds with every bite.

Classic Carrot Cupcakes For the cupcakes 1 and 1/3 cups (166g) all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, 3/4 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, 1/2 cup (120ml) vegetable oil, 1 cup (200g) brown sugar, 2 large eggs, 1/3 cup (80g) unsweetened applesauce, sour cream, or plain yogurt, 1 teaspoon pure vanilla extract, 1 and 1/2 cups (200g) peeled, shredded, and coarsely chopped carrots (about 3 large carrots), optional add-in: 3/4 cup chopped walnuts or pecans; raisins

Cream Cheese Frosting 8 ounces (224g) full-fat block cream cheese, 1/2 cup (115g) unsalted butter, 3 cups (360g) caster sugar, 1 teaspoon vanilla extract, 1/8 teaspoon salt, optional garnish: finely chopped walnuts or pecans

Method: Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners. Whisk the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg together in a large bowl. Set aside. Whisk the oil, brown sugar, eggs, applesauce, and vanilla extract together until combined, and then whisk in the carrots. Pour the wet ingredients into the dry ingredients and fold or whisk together until completely combined. Batter will be slightly thick. Spoon the batter into the liners, filling only about 3/4 full. Bake for 21–23 minutes, or until a toothpick inserted in the center comes out clean. For around 30 mini cupcakes, bake for about 12–13 minutes, same oven temperature. Allow the cupcakes to cool completely before frosting. Meanwhile, make the frosting: Beat the cream cheese and butter together in a mixer on high speed until smooth and creamy. Add the sugar, vanilla extract, and salt. Beat on low speed for 30 seconds and then switch to high speed and beat for 2 minutes. Cover and refrigerate the frosting as the cupcakes finish cooling. As I write this article, I focus on 2024 and what I would like 2024 to bring to me and the people I care about. As you are reading this article, I care about YOU and how I can help you the most so get comfortable, think about how 2023 went and what you would like 2024 to contain. Think of the habits and routines as like ingredients in a cake. Anyone can put a load of ingredients in a bowl but we all know the difference between a good cake and a great cake. The cake being your life in 2024, I want it to taste absolutely sensational for YOU so lets get started. Christmas has been and gone for now but let’s give ourselves a little post Christmas treat that will serve you well and leave you hungry for more. We now have that time of the year when everyone is thinking about the next 12 months. The article today is about you mastering 2024, you managing your outcomes for 2024 and making sure you dictate what will happen and on your terms as much as possible. What do you want to achieve in 2024 and how can your mental game play a part in that? 20

Now I personally believe that your life goals can be broken down into certain key areas and these areas include areas such as your business or career, your finances or money, your health, your family and friends, romance and love, personal growth and development, fun and recreation and to be honest, anything else in your environment. I am a Mental Performance Psychologist so anything mind and mental game related gets me very very excited. You want to talk about that this year, you know who to come to.

What areas do you NEED and WANT to improve in 2024?

Maybe you have many goals and maybe even a goal for every single area mentioned above. How about we focus on the little equation given at the very top of this article, P in MT = H. P stands for progress and let’s be honest, we all love a little bit of progress in any area we put time into. It may be the gym, it may be your bank account, it could be reducing your debt, it could be progressing in your career, the WOKINGHAM LOCAL • JANUARY 2024


list is endless, the common denominator is the word progress. MT stands for meaningful things. It’s all about the word meaningful. In life, we get the most impact when the payoff is significant and we can make the payoff significant by focusing on areas that actually MATTER to us. ENHANCE YOUR HOME ENHANCE YOUR MOOD As we start the New Year, what we can learn from the Christmas Decorations? by Sarah Swain, Cohesive Living

Do you notice how uplifted you feel when the house is adorned with festive decorations? For a few weeks a year, we take time to really make our homes look joyful and happy. We bring out favourite baubles and objéts that stimulate meaningful memories. Or we buy something new for the tree, something of the moment that keeps us feeling ‘with it’. Oh, and the lighting; you can’t skip the lighting! At Christmas, illumination is everything; candle-light, fairy lights, inside and outside, subtle or bright and colourful. And what effect does all this have? Not surprisingly, it really boosts the spirits, even in challenging times. The glitter and sparkles throw light into usually ignored nooks and recesses of our domestic worlds. The colours energise and stimulate us into action; wrapping, socialising and cooking like never before. And whether your style is kitsch, traditional or contemporary, the results make us smile. And then what? New Year’s Eve comes and goes and the decorations are consigned back to the loft. The pine needles are gone from the carpet and that dust you hid under the greeting cards (or is that just me!) is removed. It’s a fresh start and time to move forward. A clean broom through the house is, in itself, invigorating. But what if we take some of that yuletide decorating energy with us through the year? I’m not suggesting you live in a permanently tinsel-bedecked world (although who doesn’t love a fairy light!), but why not keep that focus going? Why not make your home enhance your mood 36

for the whole twelve months? And not just your mood. What about your productivity? Sometimes a little change can have a big impact. For example: Convert the box room into a creative space Declutter the box room (or whatever space you’re using as a dumping ground) to make way for those creative pursuits you’ve been putting off. You’ve bought the online courses, now it’s time to actually start doing them and create something. You could even start making this year’s Christmas gifts! Use the dining table to connect more often Make space for sitting around the dinner table all year instead of just Christmas time. Think how you could not just catch up, but have full conversations with the kids over a meal - and find out what they really think (and what they’re really up to these days). And what about inviting friends round for a long overdue supper?

Swap the Christmas tree for a real one As your festive tree is put out of sight, replace it with real plants and embrace the positives of nature within your home. Through the study of biophilia it has become clear that bringing elements of nature into our homes unlocks many benefits around cognitive function, physical health and psychological well-being. Whether you decide to gather some fallen foliage on your daily walks, forage in your garden or splash out on a statement-piece indoor plant, you will benefit from nature being close by. As 2024 dawns and you put away your festive embellishments, why not look around your home and think about which areas would benefit from a little more attention and how that might improve your whole way of living as you head into the new year.

Spruce up your tableware Now that the table is out, make sitting down to dinner special every day. I’m not suggesting you eat your fish finger sandwich by the light of a silver candelabrum (although why not?). Replace your chipped plates, or simply use your ‘nice’ tableware more often. You could upgrade to a more glamorous salt and pepper mill, or use decanters for mustard and ketchup instead of serving straight from the plastic container they were bought in. Magical lighting Why only get creative with lighting at Christmas time? We put fairy lights up without even thinking, we just throw them up and ta-dah! Why not add lighting to different parts of the lounge instead of having one main light source? With a task light over the armchair for reading you might get through some of those books you were given for Christmas, instead of turning on the TV every night. Hello! I’m Linda Fawke, a local author living in Winnersh. I’m a retired industrial pharmacist and a member of the Wokingham Writers’ Group. I’ve always enjoyed writing but it wasn’t until I retired that I had time to take it seriously. I like writing fiction and non-fiction, short stories and very short stories (flash-fiction) – even the occasional limerick. To my husband’s annoyance, I prefer writing late at night. I’ve published two novels, ‘A Taste of his own Medicine’ and ‘A Prescription for Madness’, both using my background in pharmacy as the setting. My latest book, ‘Going Downhill – A Retiree’s Guide to Ski-Bumming’ is nonfiction and based on family experiences. ‘Going Downhill – A Retiree’s Guide to Ski-Bumming’ is a light-hearted look at life in the French Alps in Winter and Summer, post-retirement. An easy read! When my husband and I retired, we decided that life should be at least as good – preferably better – than working. For us, this meant spending significant time in the French Alps. It meant skiing, of course – but not just alpine skiing. There are other ways of moving across snow! It meant sharing experiences with family and friends, eating good French food and drinking even better French wine. Buying an apartment, learning the sort of French no-one teaches you at school, staying in châteaux on travels through France…it goes on. And not just the Winter – a real bonus was discovering that the Alps in Summer are delightful, too. Finally, I look back fifteen years after retirement to see if the whole experience was as good as expected. The book is available on Amazon as a paperback and ebook.

Jacqui Priestley spends 5 Minutes with Alison Sanders - The Arts Society, Wokingham WL: Alison, I believe you are the leader of the Arts Society Wokingham, what does that entail? AS: It’s a privilege for me to work with such an enthusiastic group of local people who are all interested in the arts. I chair a fantastic group of committee members and together we arrange the lectures, activities and social events for our 200 members to enjoy. WL: Are you and the members artists yourselves? AS: The name of our society can be misleading. We are an arts appreciation society: a group of people who share a curiosity in all aspects of the arts including sculpture, textiles, cinema, theatre, music, architecture as well as painting. We are one of a network of local branches of The Arts Society, a national organisation. Our branch was set up in 2014 and attracted more than 200 members to its first lecture. 52

WL: When and where do you meet? AS: We hold monthly evening lectures at King’s Academy, Binfield on the third Monday of the month. These high quality illustrated talks are held in the School’s lecture theatre which has excellent facilities including a large single central screen and comfortable tiered seating. Our members like chatting before the talk starts while enjoying tea, coffee and biscuits. Our next talk is on 15th January when Ian Swankie, one of our members’ favourite speakers, will explore the brilliant architectural legacy of Sir Christopher Wren. Ian will take us on an armchair tour of some of Wren’s magnificent structures including City Churches, the Old Royal Naval College at Greenwich and, of course, his greatest masterpiece, St Paul’s Cathedral. During Covid, thanks to the technical expertise of the lecturers and members of our committee, WOKINGHAM LOCAL • JANUARY 2024

A recent grant from the Society to Maiden Erlegh School has been used to support students in large scale photography printing which has helped to raise students’ exam grades. We have also supported a wide range of artistic activities at St Crispin’s School and helped students at Foundry College to create a memorial mosaic.

we were able to broadcast our monthly talks to members in their own homes via our own YouTube channel. Once we were able to resume live lectures, we decided to continue live streaming our lectures. Although most members prefer the buzz of attending a live lecture and meeting up with friends, some are most grateful to be able to watch from the comfort of their own home occasionally. WL: What other activities do you organise for your members? AS: We organise several visits each year to a wide variety of places of historic and artistic interest. Recently we went on a guided walking tour of the fascinating redevelopment of the King’s Cross area. Our guide, Sophie Campbell, used the architects’ model to show us the full extent of the redevelopment. We also have a programme of study days. As much as these are about exploring a topic in more depth, they are also about making new friends. The Wokingham Theatre foyer provides a great space where members can gather and chat over morning coffee and a delicious sandwich lunch between lectures. Our next study day is on Art Deco. AS: One of the Society’s aims is to get involved in community projects which will make a difference to WOKINGHAM LOCAL • JANUARY 2024

WL: Can local people join the society and who would it be most suited to? AS: We welcome anyone who has an interest in any aspect of the arts. We actively encourage guests to come to our lectures and many of them are so impressed by the friendliness of our members and the high quality of the lectures that they join the society. WL: What is the best thing about being in the Arts Society? AS: It gives you the opportunity to share your interest in the arts with like-minded people and to make new friends. WL: Do you feel there is enough appreciation of the arts locally, and what would you like to see happen in 2024? AS: Wokingham residents generally are very interested in the arts in their widest sense, either through appreciation or pursuing their own artistic endeavors. This contributes to Wokingham being such a great place to live. Working with some of our local schools to support the arts is a great way to both develop some of the amazing talent there and foster the ongoing appreciation of art in our local community. In 2024 The Arts Society Wokingham is celebrating its 10 anniversary and I would love to see more people join with us in this celebration and enjoy our huge range of lectures and events.
