EDITOR’S LETTER The previous editor in chief of this magazine, Gayle Butler, gave me some wise advice when I took over in the role. She told me how she kept a fix-it list of all the issues she was trying to remedy as a way to handle the stress of managing a large organization. Once you see problems spelled out, they merely become items waiting to be solved. From my first day at BH&G, I’ve done the same thing. I keep the list in my head, not because I have some sort of genius memory, but because I find that during the day my brain tends to naturally reorganize things by what is relatively important at any given time. I prefer my concerns to mentally shift and recalibrate instead of having them locked down in a static pad or notebook. Plus, anyone who works with me knows how much I hate carrying anything around (especially paper, which seems to always end up forgotten in a pile on my desk). I use a similar method at home. However, my constantly changing fix-it list of home repairs, to-dos, DIY projects, and upgrades got so long and intense in the past six months that I became overwhelmed. For some reason, my sense of workplace discipline doesn’t have any affect on my ability to procrastinate at home. Plus, I did have some real disasters. First it was a basement leak from last summer’s rains. That repair led to a broken sewer pipe in my basement. That in turn necessitated replacing the sewer line from my house to the street. Suffice it to say, paying for a shiny new sewage pipe 10 feet under the ground is not the sort of home improvement that you enjoy bragging about when you have guests over for dinner. As they aggregate, all those lurking tasks and waiting repairs can feel heavy on the soul and lead to more procrastination. But after the tedium of winter, the spring and summer weather has spurred me to tackle my home fix-it list with a vengeance. I’ve been finishing things on my list and enjoying crossing them off one by one. That’s the real pleasure here: being able to take the giant marker in my brain and obliterate list items, such as reseeding the front lawn, repairing the screen door, hiring the house painter, replacing the garage door opener. I feel intensely lucky to have my creaky old house, and sometimes the most satisfying STEPHEN ORR, joy of home ownership is the feeling of Editor in Chief accomplishment that comes from getting it instagram @steporr all done—and crossed off the fix-it list. twitter @orrsteporr

The key was finding a blue that didn’t lean too dark. “We tested many to find one that felt bright and cheerful even at night.” Woven accents have a grounding effect; hits of coral and white keep the room as breezy as the rest of the house.

awn is overrated, if you ask interior and landscape designer Emily Janson. She’d much rather her yard feel like a swanky courtyard. Once her kids went off to college, she decided to finally ditch the kiddie playhouse and design the yard of her dreams, complete with a lounge, a dining room, and a fountain evoking European gardens. The project became a grand DIY that she and her husband, Skip, tackled with help from YouTube videos galore and kind souls at the local hardware store. “It was exciting to challenge ourselves to learn new things at this stage of our lives,” says Emily, who mapped out the space using spray paint on dirt they leveled and packed with a rented roller. Soon she found herself mortaring brick and hauling gravel home (even if it meant some dust in her Acura). DINING AREA Inspired by a bluestone table she’d seen, Emily had a local carpenter create a similar but less expensive one out of wood, then stained it blue-gray. She found the metal chairs by the curb and updated them with paint.

CABANA Emily dug foundation footings with a rented auger and had a lumberyard translate her sketch and cut the wood to size for the 10×12-foot structure.

DO install a watertight lining. Emily slid a sheet of 9×12-foot pond liner into the 3×6-foot hole, trimmed it to fit, then secured it with brick pavers from Home Depot.

DON’T let your pump get clogged. Emily placed her submersible pump on cinder blocks to keep it above any debris. An overturned ceramic planter hides the hose and cord , shelters the pump, and provides a base for a decorative bowl to hold the fountain.

DO repurpose items. Emily found a concrete ball at HomeGoods, had a hardware store drill a hole through it, then ran the pump hose up through the planter and bowl and into the ball.

With a tight timeline and a big renovation wish list, designer MA Allen focused Phase One of reimagining her family’s home on what mattered most to them: open spaces and vivid colors. Dramatic jute pendants define the dining area, a trick MA Allen called on to delineate the room within an open plan.

t was well into winter when the Allens closed on their dated ’70s house in Atlantic Beach, NC. But interior designer MA promised her husband, Chester, that she would have the place revamped in time for summer. On her must-do list: Remove walls so the cramped kitchen, living, and dining rooms opened into each other, giving each space access to the marsh views outside while improving the traffic flow for easier entertaining. Her other aim was to bring energy to the newly open but plain space with a boisterous mix of color and pattern, a look the designer is known for. “I chose the palette and all of the prints with summertime in mind,” she says. “Everything is meant to complement the natural world we see out the windows.”

Where others saw only a screen-door accent, this clever thinker pictured a style-statement desk. Now she has plenty of space for taking care of business. For years Jenna LaFevor worked at a hand-me-down kitchen table in her Chattanooga home office. “I desperately needed spread-out space,” she says. Her inspiration for an upgrade: two Chippendale-style screen-door inserts she came across at a home center. Jenna envisioned the inserts as sides for a desk, but she was stumped on how they could support a 4×21/2-foot top. “I was almost ready to take the easy way out and buy a desk,” Jenna says. “But I kept telling myself, ‘You can do this.’” And she did—by attaching the inserts to 1×4s, adding a plywood back for stability, and securing all the pieces with corner braces— for about $175. “I’m glad I stuck with it because I really love it,” Jenna says. She’s not the only one. Her cousin admired the desk, so Jenna built her one, shaving five-plus hours off the original 15-hour construction time. Jenna LaFevor painted her DIY desk white to set it off from the stock cabinets she installed and painted bold blue.

PREP THE INSERTS

Reinforce the screendoor inserts by forcing wood glue into the joints with a putty knife. Reinforce all joints with finish nails.

Glue and nail a 1×4 to the inside of one long edge of each insert.

INSTALL BRACES

Stand both inserts on

6 their feet. For each insert, space corner braces along the edge that will attach to the back panel, including each foot. Screw in.

ATTACH PLYWOOD

Attach the back panel to the inserts using the braces. Screw additional braces to the back panel and both inserts so the braces are fl ush with the top inside edges. Attach the top.

SUPPORT THE TOP

Attach a 1×2 under the front lip of the top using braces.

FINISH THE SURFACE

Sand any sharp edges or rough spots, caulk any gaps, and apply a primer designed for wood. Using fine sandpaper, knock down any wood fibers raised by the primer then apply one or two coats of paint. ■

Gardeners everywhere are embracing raised beds. But are they for you? For a city dweller limited to a paved patio, a raised bed may be the only way to grow food. But they are also increasingly popular among suburban and country gardeners, who have yard to spare, partly for certain horticultural advantages and partly for the sense of order the tidy beds impart. However, they’re not right for every yard, so consider the pros and cons, below, before you commit. If you decide raised beds are a good fit, there are a few things to keep in mind as you build (see page 68).

One bed may suffi ce, but several will ease rotating crop families for better plant health. You could use four beds to plant lettuces and brassicas; zucchini and cut fl owers; carrots, beets, and herbs; and peppers, eggplants, and tomatoes. Beds should be no wider than 4 feet so you can reach the center; paths between beds should be at least 2 feet wide to give you room to walk and mow.

For edging, you might try mortared brick or logs. Even simpler: Make bottomless boxes with 2×6 wooden planks butted and secured with 20-penny nails. (Beds on concrete or gravel must be deeper because there’s no soil beneath.) If building a box on top of lawn, cut out pieces of sod and flip them over first. For easy-toassemble cedar kits, try gardeners.com.

Topsoil can be purchased, taken from elsewhere in your yard, or dug out of the paths between beds (where you might spread gravel). Avoid using liners, which can impede drainage. If the box is built on concrete, you may get brown seepage from the bottom. If that bothers you, fi ll the bed with an absorptive soilless potting mix like Fort Vee (vermont compost.com).

RAISED BEDS WITHOUT BORDERS

For the best features of a boxed bed with less work, mark four corners of an area with pegs, tie twine to them to mark the perimeter, and shovel on a little soil to elevate the bed. The goal is to define the bed and keep the soil fluffy and untrodden. [CURB

Chunks or Chips? Length of cooking and grill type (gas versus charcoal) determine the best wood for the job. Look for chunks and chips in the grilling aisle of large markets. Never use pressuretreated lumber or softwood.

Chunks Hardwood chunks (pieces about the size of a tennis ball) give off more smoke and burn slowly. They work best for recipes that smoke longer than 30 minutes.

Place soaked chips in a smoker box (see page 76) or pouch (tip, page 110) on the burners under the cooking rack. Replace cooking rack and ignite burners only on the side with the smoker box. Leave remaining burners off to create a cool cooking zone. Adjust heat per recipe. Paula doesn’t use a drip pan with water for short smoking times on a gas grill. For longer smoking times, you may place a pan of warm water on the cooking rack over direct heat. When there’s a steady stream of smoke, place food on cool end of grill.

Fish Picks For smoking, you want fatty fish because they absorb the smoke better than leaner fish. Salmon is an obvious choice, but also try steelhead trout, which shares salmon’s texture and orange color but has a stronger flavor.

TWO SMOKED BIRDS Paula has the right idea—two birds are better than one. She smokes two chickens, serves one for dinner, and saves the other to elevate chicken salad, tacos, or flautas another night. Her method: ■ PR E P WO R K

Trussing the chickens makes them a uniform shape so they cook evenly. Tuck the wings under the body and tie the legs together with kitchen twine. ■ S M O KE + H E AT

Paula prefers hickory or oak for poultry. She begins with a chimney of briquettes and a couple of wood chunks. Depending on the heatretaining ability and size of your grill, you may

need additional coals and wood to maintain 350°F for about an hour to fully cook the chickens. ■ ROTATE

Midway through smoking, Paula rotates the birds back to front for even cooking. Finish with legs closest to the fire to prevent overcooking the breast. If the chickens are not evenly bronzed, place them over direct heat for the last 10 to 20 minutes. Complete recipe on page 110.

BEYOND MEAT Paula thinks of smoke as a seasoning for more than meat and poultry.

Chiles Place dried chiles in a cast-iron skillet over direct heat about 5 minutes or until puffed and slightly darkened.

GRILLED MOROCCAN BEEF SKEWERS WITH YOGURT SAUCE

We wrap the meat and tomatoes in lavash—a thin, unleavened Middle Eastern bread—but flatbreads or flour tortillas work, or serve them over couscous. HANDS-ON TIME 20 min. TOTAL TIME 1 hr. 1. For marinade: In a medium bowl combine 4 Tbsp. parsley, the garlic, 1¹∕2 tsp. lemon zest, ¹∕4 cup lemon juice, ¼ cup olive oil, the coriander, paprika, and ¹∕2 tsp. each salt and black pepper. Add beef; toss to coat. Chill, covered, 30 minutes.

2. Drain meat, reserving marinade. Thread meat accordion-style onto eight 10-inch skewers. Thread tomatoes onto four 10-inch skewers. Grill beef on the rack of a covered grill over medium 6 to 8 minutes or until desired doneness, turning occasionally. Add tomatoes the last 2 to 3 minutes, grilling until lightly charred, turning once. Place reserved marinade in a small saucepan; heat to boiling.

Paint stripes down the length of the fabric to use as a table runner. Don’t worry about precision; imperfect, organic lines work with the decidedly casual party vibe.

PAPER POP GARLAND Paint white paper with stripes of thinned red and blue crafts paint. Once dry, roll around cardboard tubes. Add crafts sticks and attach to a string for a garland that you don’t have to worry about melting in the sun.

lizabeth and Whit Brown’s home in Florence, Alabama, is full of surprises. Towering columns and a porch outfitted with white wicker are textbook Southern Colonial. But inside is an unexpected and personal mix of old and new, traditional and modern. The biggest surprise is the fact that they pulled off this makeover entirely themselves. They bought the house (sight unseen for Whit) knowing it would be a massive slow-and-steady project. Over three years, they scraped wallpaper, wired light fi xtures, tiled floors and backsplashes, spruced up kitchen cabinets, scraped more wallpaper, and pulled out yards and yards of pink and blue carpet. Elizabeth hunted through secondhand shops for most of their furniture, and Whit built the rest, including their dining room table and kitchen island. When it came to decorating, Elizabeth didn’t let the old-house details tie her hands stylewise. A coat of white paint (Benjamin

hen the roses in this Upstate New York garden burst into bloom midsummer, it’s a full sensory experience. “You can smell them even before you see them,” says rosarian Carlos Pasaron, who has restored the garden over the last two decades. “And when you see them all together, the beauty is almost overwhelming.” Then as quickly as it began, it’s over. Most of the garden’s antique roses bloom for only a couple weeks. That’s fine by Carlos. “I like pruning and tending to the roses when they’re not peaking,” he says. “I’ve developed a relationship with them.” The Tudor knot-style garden was originally planted in the 1940s by another rosarian. By the time Carlos moved into a nearby townhouse, most of the roses had been torn out or were languishing. A seasoned gardener, he volunteered to restore the garden to its original design by hunting down new plants to replace those that had been lost, and nurturing and identifying those still there. In that role of part gardener, part detective, Carlos became fascinated with antique garden roses—defined as any type that predates 1867—which generally have bushier forms and looser, more fragrant flowers than modern roses. He even learned to embrace a trait of many old roses that some gardeners consider a downside: their one bloom a year. “When you only have two weeks with the flowers, you really appreciate them,” he says. “It’s a good metaphor for life.”

GROWING TIPS Roses have a reputation for being finicky, but “most old roses are as tough as nails,” says Paul Zimmerman, author of Everyday Roses. ”That’s why they’re still around.” His methods for success:

Set up your grill for indirect cooking. Build a medium-high fire or heat a gas grill to high. Then adjust heat so the gas grill’s temperature gauge hovers around 300°F. When coals are glowing red and covered with fine gray ash, use tongs to remove the cooking rack and place a drip pan containing 1 inch of warm water on the side without coals.

Place wood chips on coals or nestle chunks into coals. (For gas grill, place wood chips in a smoker box or pouch under cooking grate directly on burner.) Return cooking rack to its position, allow it to preheat, and then carefully wipe with a lightly oiled paper towel. Last year 36 percent of Americans ate at least one vegetarian meal a week, and 6 to 8 million adults chose to entirely forgo meat, fish, and poultry. One good reason: Plant-based eating scores serious points for helping you lose weight and reduce the risk of heart disease and diabetes. But you don’t have to go all or nothing. Even a shift toward eating more whole grains, beans, and vegetables and less meat can improve your health stats, says Debbie Petitpain, M.S., R.D.N., a spokesperson for the Academy of Nutrition and Dietetics and a culinary nutritionist in Charleston, SC. This change does mean you have to pay closer attention to what you’re eating. “Often new vegetarians don’t realize they need to focus on getting enough nutrient-dense foods,” says Libby Mills, R.D., a nutritionist based in West Chester, PA. Our four steps will maximize the benefits of eating less meat.

GET ENOUGH PROTEIN When you cut back on meat, you need to replace that protein with other sources. Eggs and dairy are good picks, but you can also incorporate one high-protein plant food at each meal. Smart options include beans, legumes and lentils, soy products, whole grains like quinoa, and nuts and seeds. The idea that you need to pair foods like beans and rice at each meal to get a complete protein— one with the right balance of essential amino acids—has been debunked. If you eat enough protein (about 49 g a day for women) from a variety of sources, you should get enough amino acids.

WATCH OUT FOR JUNK

All the recent press about the benefits of a plantbased diet may have created the misconception that anything labeled “vegetarian” is automatically healthy. However, just as you would for any packaged food, you need to check the label for calorie count, added sugars, saturated fat, and artificial ingredients. The new Nutrition Facts label, which is already appearing on some products, breaks out the added sugars and more prominently highlights levels of nutrients like vitamin D, calcium, and iron. One sidenote: If you eat dairy, be careful about over-relying on cheese, which can add up to high levels of saturated fat.

A complete protein made from compressed soymilk curds. Tofu is also often high in fortified calcium and other key minerals but relatively low in calories, making it a nutrientdense food.

BULGUR

A quick-cooking cereal grain made from dried, cracked wheat, it’s a solid source of fiber, protein, and minerals like iron, manganese, and magnesium.

KALE

This leafy green is a good source of calcium, fiber, and vitamins A, K, and C. It’s one of the most nutrient-dense foods out there.

Keep an eye on getting enough of these micronutrients (aka vitamins and minerals), especially if you’re cutting out dairy or fish. Consider a visit with a nutritionist to map out meals. n

CALCIUM

Leafy greens pack in the bone-boosting mineral. But keep in mind that your body doesn’t absorb calcium as well from certain greens (like spinach) as others (kale, broccoli, collard greens). Also look for calcium-fortified tofu, bread, and juice. Aim for 1,200 mg daily. n

VITAMIN D

If you’re avoiding milk and dairy, you could have low D levels. Get yours checked to see if you need supplements.

OMEGA-3 FATTY ACIDS n

If you cut out fish (a main source of omega3s), your levels of this nutrient (key for heart and brain health) can really slip. Flaxseed, chia, and walnuts are good subs. n

VITAMIN B12

This vitamin plays a key role in the brain and nervous system, but it’s only found in animal products (including eggs and dairy). So vegans need to include foods that are fortified with B12.

CHICKPEA COCONUT CURRY In a deep skillet heat 1 Tbsp. olive oil over medium-high. Add 1/2 cup each diced yellow onion and red sweet pepper. Sauté 5 minutes. Stir in 3 cloves minced garlic, a 14.5-oz can undrained diced tomatoes, 2 Tbsp. tomato paste, 1 tsp. honey, 2 tsp. cumin, and 1½ tsp. smoked paprika. Cook 2 to 3 minutes. Stir in 1 cup canned coconut milk and a 15-oz. can chickpeas. Bring to boiling; reduce heat and simmer 15 minutes, partially covered. Stir in 4 cups roughly chopped baby spinach just until wilted. Meanwhile, cook 1 cup jasmine rice per package directions, replacing ½ cup water with ½ cup coconut milk. Stir in 2 Tbsp. each lime juice and cilantro. Serves 4.

“There’s a lot of confusion over soy products,” Petitpain says. Past studies raised concerns that the plant-based estrogens found in soy products might raise the risk of hormone-related cancers like breast cancer. But newer research has refuted this, instead finding that whole soy foods (soymilk, tofu, edamame, tempeh), as well as meat substitutes made with soy, are OK in moderate amounts. In fact, soy foods supply complete proteins for people following a vegetarian or vegan diet. Choose them rather than protein powders and bars made with soy protein whenever possible to get the most and widest range of nutrients.

Hydration and perspiration go hand in hand. If you’re dehydrated before you start exercising or before you go out in hot temps, you won’t be able to sweat as much, which means your body temperature will rise more rapidly and you’ll have a harder time cooling down.

PERSPIRATION IS A GOOD THING. WITHOUT IT, YOUR BODY WOULD BE IN TROUBLE. FOUR TRUTHS ABOUT SWEATING’S SUPERPOWER.

It keeps your core temp at 98.6°F. “The main duty of sweat is to help regulate body temperature,” says sport and health physiologist Michael Bergeron, Ph.D. If you’re in hot weather or exercising, perspiring helps minimize the increase of core temp. As sweat evaporates from your skin, it takes body heat with it. The more skin exposed, the faster evaporation can happen, says Walt Thompson, Ph.D., associate dean for graduate studies and research at Georgia State University.

Soaked doesn’t mean you burned more calories.

Sweat doesn’t stop the minute you stop exercising.

If you’re a heavy sweater, it doesn’t mean you’re out of shape, says Thompson, a former president of the American College of Sports Medicine. Genetics and how your body responds to the temperature determine how much you sweat. And if you’re regularly in hot temps, your body acclimates so you don’t need to sweat as much.

It takes at least a few minutes for your body temperature to begin to come down. “Depending how hot you got and the environment you are in, it can take up to 15 minutes after you’re done exercising to stop sweating,” Bergeron says. If you’re extremely hot and need to cool down fast, go where it’s air-conditioned (you won’t get chilled and sick) or take a cool shower.

It’s not all smelly. There are different types of sweat. The cooling one originates in the eccrine glands, which are mostly odor-free. But when you perspire as a response to being stressed, that sweat is usually released from the apocrine glands (located primarily under the arms and in the groin area) so can contain traces of protein and fat. When stress sweat mixes with bacteria on the skin, it can smell like BO.

During the dog days of summer, our pets can be as uncomfortable in the heat and humidity as we are. What you need to know to help them keep cool.

CONDUCTION Dogs and cats have sweat glands on their paw pads that help regulate their body temperature. But what works the best for them is to lie down on a cool surface like a tile floor. This is how they transfer their body heat and why it’s important to keep your house cool, says Josh Sosnow, D.V.M., owner

of the North Scottsdale Animal Hospital in Arizona. Also watch the heat index; if you feel hot, your pet probably does too. ■

PANTING When a dog

pants, her breath carries away body heat and replaces it with cooler air from the environment. But panting has its limits: If you see your dog producing more saliva than normal, if her body is warm to the touch, or if she is reluctant to move, get her to a cool spot. You can also wet her down with cool water. ■

GROOMING Cats will

find a shady spot and may groom themselves. Their saliva helps dissipate heat, says Kurt Venator, D.V.M., Ph.D., chief veterinary officer with Purina.

When temps rise make sure your pet has easy access to water.

THEY NEED PLENTY OF WATER On hot and humid days, it’s crucial to keep tabs on water intake. Most healthy adult dogs and cats need about 1 cup for every 10 pounds of body weight. If cats are fed only wet food, their needs drop to ¹∕3 cup per 10 pounds, Venator says. Cats can be finicky; fill a shallow bowl so their whiskers don’t hit the bowl when they drink, or try a fountain to play off their attraction to moving water.

THEIR FUR HELPS KEEP THEM COOL Most vets don’t recommend shaving pets except for cases of extreme matting. “Fur insulates in the cold but also prevents the absorption of heat in warm weather,” Venator says. Fur also helps protect their skin from sunburn. If you do need to shave your pet, keep fur at least 1 inch long.
