If any star can be said to have grown

up before our eyes, it’s Brooke Shields. From her debut as the Ivory Snow baby at only 11 months old, through starring roles in movies and on television in her teen years and into adulthood, Shields has spent her life before the cameras. She’s shared her life beyond them even more generously, writing two intensely personal memoirs and talking candidly about her life in interviews.

But if you think you knew everything about the Ivy League graduate who once proclaimed in a jeans commercial that nothing “comes between me and my Calvins,” here’s something that may surprise you: She celebrated her 50th birthday in May 2015. And celebrate she did. “I had a big blow-out bash with all the people that I have loved and who love me,” she says. “There was dancing, more dancing, a little eating and more dancing.” The number might have given a lesser woman pause — might have had her turning around and running in the opposite direction — but not Shields. “I don’t ever run from anything,” she says. Early Success, Continued Achievement A baby model at 11 months and a runway model at 3 years, Shields was already a performing veteran at age 9, when she landed her first acting role. She was featured in Alice Sweet Alice, a horror movie that may be most remarkable as the last Brooke Shields project no one really noticed. Three years later she earned worldwide fame as a child prostitute in Louis Malle’s acclaimed Pretty Baby, followed a few years later by the coming-of-age stories The Blue Lagoon and Endless Love.

A life in the spotlight

She soon returned to modeling, earning Time magazine’s notice as “The Face of the Eighties.” According to one estimate, she appeared on an astounding 500 magazine covers between 1980 and 1985. By age 16, she had been featured on the front of every major fashion magazine, from Cosmopolitan to Vogue. Shields took a break from Hollywood to earn a degree in French literature (with honors) from Princeton University, although she continued acting as a member of the student Triangle Club. Her first job after graduation? The standout role of Rizzo in the hit Broadway production of Grease, for which she won the 1994 Theatre World Award for Outstanding Debut on Broadway. It’s been one achievement after another for Shields, from continued Broadway roles to her hit television series Suddenly Susan. She has earned critical and popular raves for guest roles on television series including Friends, That 70’s Show and Two and a Half Men, and she’s helmed projects as director and producer. In 2012, she star red a long side Richard Chamberlain in playwright John Pielmeier’s world premiere adaptation of The Exorcist at the Geffen Playhouse.

Shields took an unflinching look back at it all with In My Life, a nightclub revue at Feinstein’s at The Loews Regency in New York City. Critically acclaimed and sold out for its entire run, In My Life was a freewheeling music and stand-up look at her life’s ups and downs. Seeking the Light There have been many downs in Shields’ life, but she has managed to find the light even in darkness. Her 2006 book Down Came the Rain: My Journey Through Postpartum Depression, was a New York Times best seller that helped many women fighting the same battle. In 2014 she settled misperceptions about her relationship with her mother, Teri Shields, who died in 2012 after a long illness. The book, There Was a Little Girl: The Real Story of My Mother and Me, also reached the New York Times list of best sellers.

ways to exercise my talents.” Living even the most private moments in public — and getting to hear in minute detail what the public thinks of that life — can’t be easy, but Shields has some important allies for keeping it in perspective. “I have a group of friends and people I trust around me as a buffer to the negativity,” she says. Her family is an even more important support system: her husband, writer-producer Chris Henchy, to whom she has been married since 2001; and their two daughters, who were born in 2003 and 2006. Shields continues working, both in the entertainment business and as a strong advocate for women’s issues and for keeping the arts alive in schools. “It is important for me to work,” she says. “I always find ways to exercise my talents and I am never one to be idle.” Shields sees nothing but opportunity ahead. “People may think I feel satisfied with where I am in my career,” she told New You magazine in 2014. “And yes, I do feel blessed and thankful. But I have no intention of stopping. People think because you’re a certain age, or at a certain level of something, they tend to ignore you. Meanwhile I’m perpetually going out there, seeking to learn more and become better through new opportunities.”

Even before you take your first sip, a good craft beer is a thing of beauty. Raise the beer in front of you and observe. Colors can include pure white, gold, amber, brown and black. Hold it up to the light and note if it’s cloudy or clear. Pay special attention to the foam. Every beer has its own kind of head, the word used to describe the foam at the top of a perfect pour. Sometimes it’s thin and flat, but other times it’s dense and full of peaks, known as a rocky head.

Craft beers with sophisticated, complex flavors have always existed, especially in Europe, but it’s been only in recent years that Americans have embraced a passion for unique beer brewed in small batches. The craft beer trend has grown from a niche market to a staggering $19.6 billion in sales in the United States alone. Small regional craft brewers and even smaller microbreweries produce the vast majority of these flavorful brews. They’ve developed a passionate following, and Crystal Cruises is helping its guests taste the trend. The cruise line added international specialty beers to its Connoisseur beverage menu in 2013. Crystal launched its very first microbrew and craft beer tasting cruise in 2014, with the next scheduled to launch in November 2016 from New Orleans — a city renowned for its delicious food and spectacular beer — featuring noted local brews from Abita and Crescent City Brewhouse. A beer sommelier, also known as a cicerone in the United States, often leads professional beer tastings on the microbrewery tours. These experts guide tasters on a journey of the senses for an experience comparable to the finest wine tastings. But if you just can’t wait until then, here are a few tips for experiencing the best of what craft brews have to offer.

SMELL

Agitate the beer with a gentle swirl, releasing the aromas. Let the bouquet envelop your senses. Breathing through your nose, take two sharp sniffs, and then inhale once more with your mouth, focusing on the differences in the experience. Smell is the strongest sense of all, and craft beers often have complex aromas. TASTE

There’s no chugging at a beer tasting. Take a small sip, resisting the urge to swallow. Let the flavorful suds soak into your taste buds. Take a breath, as so much of what we understand as flavor is the interplay of scent and taste. Try to detect the interplay of sweet and sour, acid and bitter.

FEEL

One of the things that makes a beer tasting special is taking the time to focus on the different sensations you wouldn’t otherwise notice, and mouth feel is considered one of the most important. Roll the mouthful of beer on and around your tongue. Take a second sip, this time focusing on the texture. How does it feel in your mouth? Beer commonly ranges from thick and silky to thin and fizzy. FINISH

Even after you swallow, a good craft beer will leave a lingering taste in your mouth. Sometimes it’s bitter, but it can also be sweet, and it’s often complex. A Delectable Journey For the fish, pat dry the sea bass filets with kitchen towels and season with salt and freshly ground white pepper on both sides.

Preheat oven to 350° F (175 C). Heat the clarified butter in a sauté pan and sear the fish, skin side down first, for one minute on each side. Transfer to a baking sheet and cook in the oven for 4-5 minutes. For the cous cous, heat the melted butter in a casserole and sauté the shallots slowly until translucent, but not browned, about 2 minutes. Add the cous cous and sauté for one more minute. Add the red beet juice and simmer

until the beet juice is absorbed and the cous cous is tender, about 5 minutes. Remove from heat and stir in the cold butter, mascarpone and Parmesan cheese. Season to taste with salt and white pepper. To serve, remove the crab leg meat from the shells, cut into 2-inch pieces and heat in a 350° F oven for 2 minutes until hot. Divide the hot cous cous amongst 4 shallow plates, top each with a sea bass filet and place the king crab meat decoratively atop the fish as shown in the picture. Drizzle 1 tbsp. lemon oil over the fish and around the cous cous, and serve.

Chilean Sea Bass with King Crab & Red Beet Cous Cous

4 ea. 4 tbsp. dash 4 ea. 4 tbsp.

Serves 4 Chilean sea bass filets, 6 oz. each Clarified butter Salt, fresh ground white pepper King crab legs Lemon oil

1 cup 2 tbsp. 2 ea. 2 ½ cups 2 tsp. 2 tsp. 2 tsp. dash

Red Beet Cous Cous Pearl cous cous (Israeli cous cous) Melted butter Shallots, peeled and fine chopped Red beet juice Mascarpone cheese Cold butter Grated Parmesan cheese Salt, fresh white pepper to taste

For the panna cotta, soak gelatin in ice water, at least 15 minutes. Heat heavy cream and sugar, just to a boil. Add passion fruit pulp and gelatin. Place in molds and refrigerate until set (a few hours). For the mousse, soak gelatin in ice water, at least 15 minutes. Whip egg yolks, whole egg and sugar over water bath, until peaks from. Melt white chocolate and gelatin together and add to eggs and sugar. Fold in the whipped cream. Cut a 2½-inch circle of sponge cake and place it in the bottom of a cylinder mold. Fill half the mold with mousse.

Unmold the panna cotta by placing it in the freezer for 20 minutes. Press one small panna cotta bombe in the center of the mousse. Fill the rest of the cylinder with mousse. Refrigerate overnight. Place in the freezer for 30 minutes, remove and coat with red velvet spray. To arrange, place a cylinder in the center of each plate. We look for style and value trends, but as the heritage and lasting popularity of these Swiss-made watches suggest, looks shouldn’t be the only specifications that matter. After all, isn’t impressive workmanship, in part, why we keep beautiful timepieces for decades and pass them down for generations? The Swiss watchmaking industr y has a rich history that dates back to 16th-century Geneva, where goldsmiths began experimenting with timepieces after religious reformation banned the wearing of jewelry. The craft evolved from largely pocket watches in the 17th century to clocks and wristwatches in the 18th century. Watchmakers experimented with aesthetics, adding straps for portability and hand-painting cases and dials for extra f lair. Mechanical advancements were decidedly more deliberate. Swiss watchmaker Abraham-Louis Breguet was integral to several developments, including the tourbillon — a balance wheel that rotates in order to compensate for the pull of gravity and improve the watch’s accuracy. Numerous Swiss manufacturers followed with groundbreaking innovations throughout the 20th century: Patek Philippe introduced the first wristwatch with a perpetual calendar; Rolex released the first water-resistant timepiece; and TAG Heuer, Breitling and Zenith all simultaneously debuted self-winding chronographs. or nearly 25 years, Hubert Gesser has traveled the globe in search of nature’s most beautiful treasures. Throughout Africa, South America, the Far East and farther, Hubert looks for the best the world has to offer in a spectrum of gemstones from classic blue sapphires to Paraiba tourmalines.

Brazilian born and raised, Hubert came to the United States when he was 18 years old to attend the University of California, Los Angeles, where he earned a Bachelor of Science degree in mechanical engineering. After a brief stint working in the aerospace business, he decided to invest his entire net worth into loose gemstones which he could resell and distribute. This decision inspired a career change that he would build into a successful gem lapidary house and jewelr y manufacturing company known today as Hubert, Inc. Hubert quickly developed a keen eye for beautiful color in both the most commonly known gems like amethyst, to rarities like natural cherry colored topaz and alexandrite. Moreover, he soon realized that more clients wanted f inished jewelry, motivating him to build his skills as a designer and

surround himself with expert cutters, goldsmiths and wax carvers to get the job done in his Los Angeles-based studio. Eventually he learned firsthand the art of buying and faceting rough stones as well as the intricacies of handcrafting fine jewelry.

Although gemstones and jewelry seem like a far cry from his background in engineering, Hubert notes that his field of study gives him strength in problem solving, which has served him well, particularly when it comes to custom designs that account for more than 50 percent of his business. In addition to the beauty he sees in his gemstones, Hubert has remained fascinated by the interesting people he meets in the business, from artisan miners in the back country of Brazil, to royalty, such as the queen of Spain. The stories surrounding gemstones build a lifetime of memories and symbolism for anyone who comes in contact with them. All of Hubert’s designs are artistically and meticulously constructed, from fun fashion pieces to one-of-a-kind designs. He is one of the few jewelers involved in every aspect of jewelry making. Ethical Mining Practices Most diamond and gemstone buyers know that they should consider a stone’s color, cut, clarity and size before making a purchase. However very few take into account that gem mining can contribute to environmental destruction, government corruption and unsafe conditions of mine workers, when not done ethically and responsibly. After seeing a popular Hollywood production, people have become aware of “blood diamonds” which were sold to fund repressive revolutionary groups in a few African countries, and led the industry to create the Kimberly Process, which tracks a diamond from its origin and verifies that its sale is not supporting any of these groups or regimes. Hubert is committed to dealing only with vendors that follow the system of warranties and certification from the Kimberly Process. There is, unfortunately, no tracking system for colored gems to make sure that

they are mined in a socially and ethically responsible way. With that in mind, when sourcing gemstones, Hubert is committed to purchasing colored gemstones only from reputable sources, which are in compliance with the USA Patriot Act and the Jade Act, purchasing mostly rough materials, which are then cut and polished in our studios in the United States.
