YEAR OF THE FARM

2022 was the first full season for our new rooftop farm, and it did not disappoint!

Thanks to our in-house caterer, Cultivated, and its Senior Executive Chief Andrew Matthews (right), Brooklyn Grange and our Sustainability team, the farm raised more than 50 crops which were incorporated into the meals served on site More than eight stories above street level, the farm transformed into a one-acre oasis of fruits and vegetables that created a unique roof-to-table experience for our guests From corn and cucumbers to red cabbage and radishes, our farmers worked closely with our culinary team to plan, seed and plant crops throughout the year and harvest them for menus selected for upcoming events In the meantime, day-to-day farm manager Brooklyn Grange also created a hydroponic system inside our rooftop greenhouse to spur even more plant growth – a great bonus to be utilized during the winter months
