Triple-S Chicken (Sweet, Sticky & Spicy)

Ingredients

• 1 tablespoon of brown sugar • 2 tablespoons of honey • 2 tablespoons of soy sauce • 2 teaspoons of finely chopped ginger • 2 cloves of garlic (or 2 teaspoons of minced garlic) • 4 skinless, boneless chicken breasts • 1 tablespoon of canola oil • ½ teaspoon of pepper • 2 teaspoons of chilli powder

Method

Finely chop the ginger and the garlic. Put the brown sugar, honey, soy sauce, ginger, garlic and chilli powder in a bowl and mix together to make a sauce. Cut the chicken breasts into strips, so they are about 3cm thick, sprinkle the pepper on them. Heat the oil in a large frying pan, add the chicken and brown on both sides (about 2 minutes each side) on a high heat. Pour the sauce over the chicken in the pan, reduce the heat and continue to cook for 8-10 minutes, turning the chicken so it is fully coated with the sauce. Serve with rice and the vegetable of your choice. Steamed broccoli goes well with it.
