SAIL Amsterdam is a quinquennial maritime event. Tall ships, sailing heritage craft, modern ships, naval ships and replicas from all over the world visit the city from 19 to 23 August. PHOTOGRAPHER KOEN VAN WEEL - ANP
The Dutch have a rich historical tradition of sailing and sea exploration. Sail Amsterdam is a big nautical event attracting literarily thousands of sailing ships. The most attractive of them – the naval tall ships – are usually surrounded by many replicas and smaller heritage ships. They all come together in proximity to the city centre – on the IJ Lake behind the Amsterdam Central Station. Thousands of smaller yachts and boats filled with spectators are there to greet them. Ships and Shows SAIL traditionally starts with the Parade: hundreds of ships sail into the IJ, creating a unique and unforgettable sight. In the days after they remain in Amsterdam harbor while many other events are held, including classic music concerts on the classic ships, pop and jazz shows, special contests for the young, demonstrations by the Dutch Navy, ‘Skûtsjesilen’ (sailing with a typical Frisian ship) and much more. The SAIL program boasts entertainment, art, culture, music, and sports and children’s activities. Fireworks Every night ends with a great fireworks show on the IJ Lake. People gather on boats to see the amazing fireworks from the water. The biggest nautical event in the world is a fantastic and unique festivity you don’t want to miss. The largest maritime manifestation in the world The event was organised for the first time in 1975 to celebrate the 700th anniversary of Amsterdam, under the name ‘Sail Amsterdam 700’. At that time, interest in tall ships, which had sunk to a low since the 1930s when the last commercial tall ships had been built, was starting to rise. Nowadays Sail Amsterdam is one of the largest maritime manifestations in the world, and the largest event of any kind in the Netherlands.

WILDLIFE IN AMSTERDAM Walking along one of the many canals or in one of the easygoing parks you cannot miss the bright green Rose-ringed parakeet that inhabits Amsterdam. However, for many it is mysterious how these tropical birds seem to thrive here so easily. The combination of a low breeding success with the availability of good nest holes and food seems to allow this exotic species to live peacefully amongst its native neighbours.

The area of Westergasfabriek in the west of Amsterdam, a complex of 19th century buildings was once a gas plant, and is now one of the city’s thriving creative hotspots. The park is home to numerous restaurants, bars, alleries, theatres, terraces, a jazz club, a dance club, a coffee bar, an ice cream shop and a cinema. The renovated industrial buildings and spacious park regularly host events ranging from music festivals, house parties, art exhibitions and culinary happenings. Next to Westergasfabriek is the large Westerpark with outdoor swimming facilities for children.
FOOD TRUCKS Amsterdam has opened its streets to food trucks. A variety of 50 food trucks can sell their tasty bites everywhere in the city. The only rule the food trucks have to follow is that they must cook, bake and grill special treats. French fries and hotdogs are too common and thus not allowed. Margherita Tutta La Vita, Hot Lightning Streetfood and the Duck Truck are now in business and open daily to feed your senses.

Paddle tennis is the fastest-growing racket sport worldwide. Paddle tennis is adapted from tennis but it has a smaller court, no doubles lanes, and a lower net. Paddle tennis is played with a solid paddle as opposed to a strung racquet, and a depressurized tennis ball is used along with an underhand serve. The glass walls of the court can be used to play the ball. Since this summer the Olympic Stadium has had its own paddle tennis court. It’s open 7 days a week with prices from 10 euro (before 5 pm) to 20 euro an hour, including a paddle and balls.
AMSTERDAM’S CITY FLAG As you wander through Amsterdam, you can spot the city’s ‘XXX’ symbol on flag everywhere. So what’s the story behind what flags expert Roman Mars has described in his TED Talk as the most ‘badass‘ city flag in the world? The colors and design of the flag depict three Saint Andrew’s Crosses and is based on the escutcheon in the coat of arms of Amsterdam, or rather the shield in it. The city’s symbol dates back to 1505. The three crosses are supposed to protect the city from the disasters that had struck it in the past: fire, flood and the black plague.

CANAL HOUSE A canal house (Dutch: grachtenpand) is a (usually old) house overseeing a canal. These houses are often slim, high and deep. Because of the danger offlooding the front door is sometimes higher up and only reachable via stairs. The floor of the main storey lies about seven to nine steps above street level. Canal houses usually had a basement and a loft and attic where trade goods could be stored. A special beam or pulley installation would be located in theattic to hoist up valuable goods, like spices, cotton, or heavier stuff like cocoa. The pulleys are still used for moving furniture. At the back of a canal house there will usually be a back garden that runs either halfway or all the way to the house behind. The garden would be laid out to the taste of the time and the financial position of the owner. At the bottom of the garden there was sometimes a summerhouse where family and visitors could relax. In the second half of the 17th century there would sometimes be built a rear extension of the building and linked by a passage to the front house. The courtyard ensured light. It could be used for many purposes, and during World War II Anne Frank and her family were using the back house as a hiding place. When the first owner of the house had more houses built by the same carpenter or contractor and using the same or mirrored design these are called twin or triplet houses. There are even sets of four or five identically designed houses. In those case the houses will be smaller than a normal house (as three houses were built on two land lot). The width of a canal house and the depth of its garden varies a lot. (This is because the land lots in the 17th century started from 18 Amsterdam feet (an Amsterdam foot being 28.13 cm) but then went to 20, 22, 24 and 26 feet.) Along the canals in Amsterdam are also double wide houses, especially along the Herengracht. These mansions were built on two land lots, a back house was not needed. Wide houses nearly always have steps on both sides. At Herengracht 386, the museum Het Grachtenhuis (The Canal House) is located, which tells the story of the Amsterdam canal belt. If he also bought the lots behind those houses and built a carriage house and or warehouses, it is sometimes referred to as a “city palace�. Warehouses were much deeper than houses because daylight did not need to reach the centre. As trading and transport patterns changed, the warehouses lost their original function. Over the years many have been turned into living accommodation.

The terrace from Star Ferry has by far the most spectacular view over the IJ river. Here it seems that the sun always shines. It’s a very nice spot when you are on a boat cruising Amsterdam and you are up for drinks and a little snack. The cafe is part of the Muziekgebouw aan ‘t IJ concert hall, the Netherlands’ most important stage for contemporary music. Hannekes Boom is a unique bar and terrace built from salvaged and recycled materials. The medium sized, earthy building has an extremely cosy feel with endearing little lights dangling from the ceiling. On hot days, the enormous terrace is packed with sunbathers at picnic tables having a beer or preparing a BBQ. In winter people head inside to curlup in comfortable chairs in front of the open fire, enjoying the occasional live music and organic food.
On the banks of the Nieuwe Meer restaurant Het Bosch is a true hidden gem as it comes to waterfront restaurants with the best view and food. In the summer months they have a huge terrace. On the pier in front of the restaurant they have a small bar with big couches with pillows above the water to enjoy to magnficient view. Het Bosch is ideal to reach by boat or by bicycle. The Kwaku Festival is a traditional multicultural gathering focused on bringing people and cultures together for a vibrant combination of food, drink, dance, music and sport. Its origins lie in celebrating the abolition of slavery in Suriname and the Dutch Antilles on 1 July.

Since 1985 the beers of Brouwerij ‘t IJ have stolen the hearts of Amsterdam’s beer lovers. The beers can be described as full of flavour and character. They are naturally brewed and most of them can be called 100% organic. The original brewery and tasting room (recently renovated) are located next to the windmill called ‘De Gooyer’ in Amsterdam East. Order a fresh-brewed draft at the bar and have a seat outside on the amazing terrace. India Pale Ale (IPA)
An old style of beer, originally brewed for the English navy in the 18th century, packed with hops and alcohol to survive the long sea travels to India. Modern IPAs are hoppy beers, full of flavour with hints of grapefruit and bitter notes. Usually brewed at an ABV between 6 and 8%.
De Prael ‘Humans & beer: the perfect combination’. This is not your average craft brewery. This social initiative started thirteen years ago with the idea of giving less-fortunate people a chance on the labour market by working in a beer brewery. More than a decade after the idea was born the brewery is still a great success. The beers from De Prael are renowned for their quality, authenticity and classic beer styles. Saison
Saison is a traditional Belgian beer style also known as farmhouse ale – brewed with Saison yeast. Modern saison beers are generally highly carbonated, fresh, fruity and spicy thanks to the addition of fresh spices. Often brewed at 5 to 8% ABV.
Oedipus Brewing The hottest brewery in town started only 3.5 years ago and just opened its new brewery and taproom in Amsterdam North. Founded by four friends with a good sense of quality, creativity, innovation and humour, Oedipus creates a new small-batch beer every two weeks. These beers are spreading like a virus around cafes, bars and restaurants in town. Porter
Dark, well-hopped beers brewed with brown, dark malts and caramel. The modern craft breweries brew traditional porter beers at ABVs from 6 to 9%. The latest fashion is to brew porter beers with smoked malts.
Wheat Beer
The most summery style of beer, brewed with a high percentage of wheat – in addition to malted barley. Packed with fruity esters, the Belgian style adds coriander and orange peels for flavouring. Low in bitters and very drinkable with an ABV varying from 4.5 tot 7%.
Unpasteurized – Unfiltered
Simply put, the less you treat a beer after brewing, the better. Unfiltered beer will look a bit cloudy but that keeps the most flavours within the brew. Pasteurizing will help the beer keep its flavour longer, but it tampers with its fresh taste too.

Brouwerij Troost Troost Brewery opened its doors in March 2014, and it has been a successful brewery/ bar/restaurant from the very beginning. Coming September Troost will open a second venue on the Westergasfabriek area: a brewery, brewpub and shop all in one. Troost brews 11 different accessible and tasty beers. The beers are generally lower in ABV than usual. And yes, they also produce their own gin, distilled from beer. The food menu is packed with comfort food. The burgers and the delicious chicken sate are highly recommended. It’s free range and from the charcoal grill.Bierfabriek is perfect for groups, bachelor parties, stag parties and large crowds.
Located in the touristic heart of the city, De Bekeerde Suster is an authentic and pleasant combination of a brewery, café/brew pub and restaurant. The café offers freshly brewed beers, but also more commercial beers from the big, well-known brands. The food menu consists of comfort food and Dutch pub-food classics with a ‘beer twist’. All home-brewed beers from the authentic steam brewery are unfiltered.
Brouwerij de Vriendschap (the friendship) just opened its tasting room, located in health food/pancake restaurant Stroop, above the Brew Lab. The first brew, Hopblond, was an immediate success and a great start for the two friends’ brewing career. All their beers are unpasteurized and if the style asks for it, unfiltered. Butcher’s Tears is a small brewery located on a canal side in Amsterdam Zuid, set up by pilgrims from the north lands as a base port for voyages on the seven foaming seas of gold. Butcher’s Tears specializes in brewing funky beers that are unfiltered, unpasteurized and untampered with. The beers have extraordinary, slightly medieval names like La Condition Humaine II, III and IV, The Possession, Misery King and Monster Soup XXXX. They come in styles such as light IPA, pale ale, amber ale, special bitter, saison and barley wine. Visit their proeflokaal, a haven to clear your senses from the blur.
This new brewery is located in Amsterdam West and bases their beers on the seven virtues. Six of their beers are brewed yearround with an additional seasonal beer that changes seven times a year. These beers are interesting and have a unique combination of flavors.
Located in Haarlem just a few minutes on the train from Amsterdam is a great brewery that is making beer from traditional recipes. The fantastic Jopen brewery and restaurant is housed in an old church which makes for an impressive drinking ambiance. At the Jopenkerk most of their beers are available on tap.

Jopen brews some of our favorite beers. Their Jopen Hoppenbier follows an original Haarlem recipe from 1501. Another traditional beer is their Jopen Koyt which is brewed using “gruit” following a recipe from 1407. Gruit is a medieval herb blend that was used in beer before hops was introduced. Brown cafe For a taste of authentic Amsterdam flavour and Dutch culture, don’t miss a visit to a traditional Dutch pub known as a ‘brown café’ (bruin café). These local watering-holes are a quintessential part of Amsterdam’s culture – and are the favoured haunts of some colourful local personalities. Traditional Amsterdam pubs: What’s in a name? The name ‘brown café’ comes from the dark but cosy wooden interiors and the nicotine-stained walls and ceilings. Even though most cafés nowadays shouldn’t really be getting any browner, some of the newer hangouts are carefully decorated to achieve this lived-in look and for many people, their local brown café is an extension of their living room. Food and drink In general, brown cafés are laid-back and the fare is pretty simple. In addition to local and regional beers, you can also sip jenever – a Dutch spirit similar to gin. Light meals and snacks (hapjes) are also usually on offer. A typical Dutch pub snack is bitterballen (breaded and deep-fried balls with a ragout filling), served with mustard. Several brown cafés claim to be the oldest in Amsterdam, and while there is no hard historic evidence to indicate a clear winner, there are some that can trace their roots back to the early 1600s.

THE MUSEUM QUARTER IS HOME TO AMSTERDAM’S MOST FAMOUS MUSEUMS & SHOPPING STREETS Explore the Museum Quarter and uncover a neighbourhood that’s home to some of the world’s most important artistic and historical treasures, chic dining experiences, many of the Netherlands’ fanciest shops and also one of the best-sounding orchestral concert venues on the planet. If you want to explore the very best of Amsterdam’s cultural wealth, chances are you’ll be spending quite a lot of time in the plush part of town known as the Museum Quarter. Also overlooking Museumplein is the Royal Concertgebouw, Amsterdam’s most important orchestral concert venue. The vast open space of Museumplein itself plays host to major events each year, from screenings of Dutch football matches to large concerts and events, plus a picturesque ice rink in the winter. While the IAmsterdam letters in front of the Rijksmueum have become the city’s most photographed attraction. The Museum Quarter is home to Amsterdam’s most famous shopping street: P.C. Hooftstraat, where you can find many of the world’s major fashion brands and boutiques. But serious shoppers should certainly also visit the adjacent Van Baerlestraat, Willemsparkweg and Hobbemastraat for stylish local brands, independent shops and boutiques. Amidst all the purchasing potential, there are plenty of delicacies to be found (in both daytime and evening), as well as some suitably swanky (and also downto-earth) drinking establishments. With over 1.6 million visitors in 2014, the Van Gogh Museum is the 2nd most visited museum in the Netherlands (Het Rijksmuseum welcomes over 2.4 million every year). Museumplein is the public space where the three major museums – the Rijksmuseum, Van Gogh Museum, and Stedelijk Museum – and the concert hall Concertgebouw have their entrances. It is also the centre point of the district Zuid (South) where all the shopping streets such as PC Hooftstraat, Hobbemastraat, Willemsparkweg and Van Baerlestraat come together. In the heart of the square there is a pond where kids swim in the summer and ice skate in the winter. The space is also used for (mass) events such as festivals, celebrations, and demonstrations. This summer art will take to the streets. Or at least to the middle of Museumplein, where several massive statues of Miffy have been placed to celebrate the 60th anniversary of the famous cartoon rabbit. Sixty artists were asked to create their own unique version. Other impressive statues on Museumplein of contemporary and modern artists are part of the open-air sculpture biennial ArtZuid. It’s a great tour through the southern part of Amsterdam and a visiting a museum on warm summer days.

INTERVIEW In 2015 Amsterdam aims to reveal the city’s secrets by exploring each of its neighborhoods for 24 hours. The city is hosting a variety of events throughout the year that will help both tourists and locals get to know the city better. The ‘24h Amsterdam’ events take place for 24 hours, and are focused on each area of the city: Oost, West, Zuid and Noord. Each area presents what it has to offer in a blistering 24-hour period. Shops, clubs and cultural institutions throw open their doors for some special surprises – perfect whether you live in the neighborhood or come from another area of town and are keen to check out a new neighborhood. Hello Amsterdam sat down with neo-pop artist and socialite Selwyn Senatori (2 May 1973, Pallanze, Italy,) and asked him to describe the perfect 24 hours in Amsterdam. The work of Selwyn Senatori is internationally renowned, with exhibits from Hong Kong to Milan and from Moscow to New York. Neo-pop, figurative work right on the canvas. And his work is not only on canvas. Selwyn paints everything that he encounters. He loves life, ‘La Dolce Vita’, the inspiring things in life, like good food and wines, Italy, travelling, women and design. The painter feels at home in many of Amsterdam’s restaurants and bars. Before the interview, he welcomed us at his studio in the centre of Amsterdam where he is preparing for his exhibition, which starts July 14. Selwyn loves to eat and especially enjoys dining out. Selwyn’s 24 hours in Amsterdam brings us to many restaurants and bars. And even to one tattoo shop.
Morning
I start my day with coffee at home. That’s around nine o’clock. Then I bike to my studio. Or I take the tram; that also happens sometimes. And before I arrive at the studio, I always drink a cup of coffee at Meuwese a family-owned business on Rokin in the centre. Or I drink my coffee in The Lobby at the Hotel ‘V’, opposite my studio on Nesplein. Then I go to work in my studio. For an hour, maybe two.
Afternoon
And then it’s already time for lunch. I always eat lunch out. I think Ron’s Gastrobar, which is owned by famous Dutch chef Ron Blaauw, is fantastic. He is a good friend of mine. But I’m also happy to go to The Harbour Club and The Harbour Club Kitchen, two largescale waterfront restaurants in Amsterdam Oost and Zuid. After lunch, I sometimes go shopping. Often actually. I’m a real comfort shopper. If I’m feeling bad, I generally go shopping. That’s when my
spending is always higher. I have all of my suits made at Suit Supply. For shoes, I look all over the city. For example, I just found a pair of Vans at 290 Square Meters. Then I do a little more work for an hour in the studio. Then my girlfriend comes by and we have a drink here. Or we have a drink at Wynand Fockink, the oldest distillery and liquor store in the Netherlands. Behind Hotel Krasnapolsky.
Evening
Actually, I almost always eat out. And really I eat everywhere. There are so many great places in Amsterdam. But there’s only one ‘classic’ restaurant in Amsterdam and that is Le Garage. It serves classic French cuisine and has been an institution for 25 years already. I love to go there. And I’m not the only one, couturiers and wellknown theater and television personalities sit next to you at a table. But I am just as happy going to Golden Chopsticks, a big Chinese restaurant in the Red Light District. Their wonton soup is delicious. And the recently opened The Duchess, which is a restaurant from the owner of Momo and Izakaya. It’s on Spuistraat, a street where a lot has been happening recently in the restaurant and bar industry. I tend to eat a little everywhere. A good tip for those who come to Amsterdam: everywhere you go eat a little, so you can experience a lot more restaurants. Eat a hotdog at The Fat Dog; then maybe have something to eat at Oriental City, another good Chinese restaurant. And then of course at some point you are going to have a drink. Hotel bars, such as the one at Hotel Americain, are among my favorites.
What’s your favorite square?
That would have to be Museumplein. Because there is a statue of Miffy, a Dutch icon, I painted in the form of Mister Manhattan, a bad boy.
Where do you go to unwind in Amsterdam?
The Conservatorium Hotel. I love to drink tea with my girl there in the brasserie or in Tunes Bar. Very late. Preferably very late at night. Chamomile tea, served with a cookie. At peace. This is a very nice place.
Which part of Amsterdam do you prefer?
Oud-Zuid is still the most attractive for me. In this neighborhood is the most beautiful street: Van Eeghenstraat. If I walked past, I could always look in the basements where happy families were eating. And Vondelpark is also on that street. I still go running there now and then. Two laps, about 7 kilometers. Did you know that you run faster in New York? I don’t know why, I think it must be the New York vibe.

Does the city embrace you as an artist?
From the 14th of July I will be exhibiting in Kunsthuis Amsterdam on the corner of Amstelveenseweg / Koninginneweg. There my works will hang alongside those of Damien Hirst. The title of the exhibition is Les Avant Gardistes. The avant-gardists in my eyes are a select group of predecessors who owe their status to their ode to the good life. Nice wines, good food, good cigars in the best places in the world. Les Avant Gardistes is an homage to true enjoyment and it pays tribute to those who are dedicated to enjoyment.
Yes. Here I can eat at any of the finest restaurants, and crash at the finest hotels. You find my work everywhere in town. From restaurants to bars, shops and galleries.
What is your best memory of Amsterdam?
In the morning coming home from King’s Day, my face painted like a tiger, with a squeaky voice from helium balloons and a jug in my hand with the spout in the shape of a penis that I picked up somewhere from a flea market.
Where do you find your inspiration in Amsterdam?
What do you miss in Amsterdam?
Everything comes together in this city. There is so much history here, but also so much future. Amsterdam is so compact. The city has 800,000 inhabitants. You feel at home here right away. Everything is here, in a relatively small area. And you can experience the city in four seasons, which is especially great. This means that you can experience the city in different ways. And because it is so concentrated, such a compact city, you can easily access, for example, many cultural activities. And this city exudes history. My studio is on Nes, which has existed for centuries. Rembrandt lived here around the corner.
The 24-hour economy. Where you can eat, shop, work out and go to the movies at any time of the day.
Name your absolute Amsterdam hero?
Andre Hazes of course, the late Dutch singer. And Rembrandt van Rijn, the famous Dutch painter. He was a great painter, but in the meantime he was living the good life. He ate good food everywhere, and dressed well. He had a beautiful house in the city. Today, the Rembrandt House is a museum where visitors can step into the workshop and living environment of the master.

What are your favorite shops in Amsterdam?
What would you recommend out-of-town visitors should do in Amsterdam?
For painting supplies I like to go to Van Beek on the Stadhouderskade. For cosmetics I like to shop at Skins Cosmetics on Runstraat and Kiehls on Heiligeweg. On a hot day I eat a ‘Senatori Straciatella’ with the girls from IJsboutique on Cornelis Schuytstraat. And for a tattoo I go to Hollywood Mark on Elandsgracht. He has tattooed people like Robbie Williams and Kate Hudson.
I would go to the beach. Bloemendaal aan Zee. The North Sea is beautiful. You have to see it, feel it and smell it. You can even go surfing. It is not Bali, but still. And with a little luck you’ll see a seal sticking its head out of the water.
You are the father of two children. Where do you like to take them?
Where can you eat the tastiest sandwich in town?
Wherever they can act like children. They also love to mess around in the studio with paint and eat mussels with papa at restaurant Haesje Claesje on Spui.

How do you escape the hustle and bustle of the city?
I love aimlessly walking through Amsterdam. And I like to hide out at the CitizenM hotel where I enjoy the room service and often end up just staying in the room.
How would you welcome people in Amsterdam?
I would discourage them from travelling through Central Station and from walking to the city centre via the Damrak. I call that street ‘The Walk of Shame’ and I’d rather save them from seeing it. I would actually like to invent a new entrance to the city, somewhere perhaps in Amsterdam Zuid. Regardless, what I want to tell our visitors is: walk. Walk through Amsterdam. You encounter so many traditional pubs. From Genootschap der Geneugten to Stiltecafe in Zuid and The Old Sailor in de Wallen. There is so much to see and do in this city.
The most beautiful building in Amsterdam?
The Industrieele Grootte Club on Dam Square. There is so much history in that building. If you wander around in there it’s like going back in time.

‘I’m already in love with this place’, entrepreneur John de Jong gushed at the opening of The Harbour Club Kitchen, a trendy new restaurant in the Wyndham Apollo hotel in upscale Amsterdam Oud-Zuid. Kitchen is the fifth restaurant of its kind. Since 2008 De Jong has successfully launched the formula in The Hague, Rotterdam, Amsterdam (Cruquiusweg) and on the holiday island Ibiza. This is the second in the capital. It’s hard not to appreciate the restaurant chain and not to be enchanted by the owner’s story. The Harbour Club is not just a restaurant. It’s a night out. The Harbour Club is a place to eat. And drink. To socialize. And a place to be seen. The new restaurant K itchen is no exception. Since April, when the hotspot off icially opened its doors, the place has been packed with distinguished guests – well-known locals, businessmen from the nearby business centre Zuidas and tourists. On the weekends almost all of the 250 seats are f illed. K itchen is one of three restaurants at the Wyndham Apollo, which is also home to f ine-dining restaurant La Sirene and the Marina Lounge Bar and Brassiere. Hotel manager Alexander Kuit is delighted with the success of the restaurant and with the exciting young atmosphere surrounding his 60-year old hotel. He calls the partnership ‘a great step towards the future’. ENTRANCE Guests are easily convinced by the brightly decorated interior of the restaurant. The modern terrace, constructed with f ine timber and metal bows, is something very special. As is the view. The hotel building, once used as a canteen for the Olympic Games in Amsterdam in 1928, is tucked away on Apollolaan, at the intersection of wide waterways that reach as far as Amsterdam’s Old West, the Amstel R iver and the capital’s old centre. Guests
can easily – and perhaps slightly more stylishly – f ind their way to K itchen by boat. The menu too is something special: Montague Broiler, freshly prepared lobster, sushi and sashimi from the best cultivated Maltese Blue Fin tuna and Wagyu steak (up to 300 grams per serving!). ‘The best meats, the freshest f ish, the f inest vegetables and herbs’, according to the usually cynical reviewer Thom Goderie of Dutch magazine HP/De Tijd. Responsible for all that luxury is Chef Mark Vaessen and the former head chef of Okura (the nearby Japanese hotel and restaurant group - until recently a rare Japanese culinary and cultural bastion) Akira Oshima. Interesting fact: almost all delicacies are prepared on the grill. The restaurant plans to use its impressive barbeque 365 days a year. TRENDING Investing in hospitality in the Netherlands is quite a risk. De Jong knows. The industry has been hit hard by the economic crisis. Over the last couple of years, many thousands of restaurants throughout the country have had to close their doors. Amsterdam might have been spared – mostly because the growing tourism helps business – but the capital has problems of its own. Amsterdammers are very impatient. ‘One moment a bar, club or restaurant might be in the spotlight, only to be forgotten the next moment’, hospitality PR-manager Vincent van Dijk explains. ‘On average, luxurious venues have a very short life expectancy. To be able to survive, entrepreneurs ought to focus on long-term development.’ ‘Of course I am quite wary of moving too fast. But I’m not scared to grow’, says De Jong. ‘If you think small, you’ll stay small. To be able to grow as a chain, you have to reach the masses. Therefore you should invest constantly. In your ventures, your menu and the atmosphere’, the entrepreneur explains. The media in the Netherlands love him and the distinctive dining. And so do his many customers. The Harbour Group was the 49th highest grossing large restaurant in the Netherlands, with a turnover of €23.4 million in 2014.

De Jong started working at a young age, f irst at a snack bar in De Stede, a mall in The Hague. Initially the entrepreneur spent most of his days frying the French fries himself, but as business grew he was able to move up to a management job. Within eight years the single snack bar expanded to a chain of eight restaurants in the harbour of Scheveningen and in The Hague. After that he opened restaurants Binnen, Toff and De Veiling. To accommodate the tens of thousands of customers every week, De Jong started his own production kitchen as a central delivery point for his many restaurants. That proved to be only partially successful. ‘It took a lot of energy’, the entrepreneur complained in local media. ‘The costs to keep the kitchen going were far higher than expected.’
If the branch in the Wyndham Apollo works out as planned, can we look forward to perhaps a third restaurant in the capital? In the centre, perhaps? The entrepreneur doesn’t say. Maybe because he’s planning to expand abroad? In an article published a couple of years ago, De Jong admitted: ‘I am fond of world cities like Barcelona and London. If the formula succeeds in the Netherlands – and in particular in Amsterdam – growing outside of the Netherlands might very well be an option.’ For now, we’re very happy to be able to enjoy the unique hotspot at home, right around the corner in Amsterdam.
2008 was a turning point in De Jong’s career. He sold (almost) all of his businesses in order to concentrate on his latest idea: The Harbour Club, a chain focused on luxury. And volume. The f irst branch, which opened in Scheveningen, could accommodate 300 guests. The next restaurant in Rotterdam – located in Villa Parkzicht, the former residence of the eponymous nightclub – had a similar number of seats. As did the trendy restaurant on the holiday island of Ibiza and the latest spacious venue in Amsterdam-West. ‘I am quite a restless person’, De Jong admits, ‘I always want bigger restaurants, to be able to offer my guests more.’

There is a daily Oyster Happy Hour from Monday to Friday from 17:00 to 18:00 with half-price oysters.
The daring turnaround of Ron Blaauw’s Michelin-starred restaurant into Ron Gastrobar, two years ago, has proven to be a huge success. According to Ron Blaauw, top level food does not necessarily have to entail six appetizers, four kinds of bread, seven-courses and a friandise trolley. Blaauw completely changed the top-level food concept to create an entirely different dining experience. Ron Gastrobar has an à la carte menu offering 25 dishes that cost €15 each. The proven success of this formula has the city asking for more. Therefore Ron opened an Asian version. Ron Blaauw says; “There are so many sushi businesses in Amsterdam, but we are lacking a real oriental restaurant that showcases the ancient Chinese cuisine.”
Grand Cafe Lokaal has a trendy, Amsterdammeets-New York ambiance. Inspiration was taken from the vintage look & feel of restaurants in the Meatpacking District in New York, which often combine industrial elements with modern architecture. Rene Hebing began his career as an apprentice at Koetshuis Vaassen. After working in various hotels and restaurants he arrived at Brasserie Schiller, first as Sous-Chef, and as head chef since one year. Besides NH Schiller, Hebing is also responsible for NH Caransa and NH Doelen. He loves the challenge of trying to do as well as possible at all three hotels at the same time.
Brasserie Schiller is located inside hotel Schiller and next to café Schiller, right in the busy heart of Amsterdam. Surrounded by dozens of other bars, restaurants and hotels, Schiller truly stands out from the crowd. Maybe it’s the artistic heritage of the place, which was founded on this very spot by artist George Schiller in 1892. Since then the building still exudes the atmosphere of the 20’s and 30’s. This is reinforced by the presence of paintings by his son Frits Schiller, which filled the spaces over time. In 2001 the building was granted the status of national monument. Today Brasserie Schiller is the location of daily talkshow RTL Late Night. When we enter the talkshow decor is still there, though not in use. A large wooden bar dominates the space at first, but when we look to the left a sea of light appears. It’s the conservatory with its large windows overlooking the bustling Rembrandt Square. We are seated right at the window where we each enjoy a glass of a different house

wine: a lovely Chardonnay and a fresh Sauvignon. The Chardonnay is matched with a surprising, slightly acidic pomodori soup with a scallop, the Sauvignon adds a light touch to a classic starter of carpaccio with Parmesan cheese, arugula and truffle mayonnaise. Chef Rene Hebing suggest we try one of his favorites on the menu and serves us a mini version of the salmon tartare with a brioche and piccalilly sorbet ice. The combination is so refreshing that we almost regret our original choices. This dish really rocks our mouths! After that we move right on to another classic: a grilled steak of grain-fed beef with homemade fries and bearnaise sauce. The other main course is a vegetarian dish of open ravioli with mushrooms and ricotta sauce and porcini. Both dishes are served with a light, slightly chilled Pinot Noir, which suits us very well. We enjoy a sweet dessert of chocolate pie with a dollop of mojito sorbet - another surprising ice flavor, and leave Schiller with satisfied stomachs and slightly nostalgic hearts.

In the heart of Amsterdams city centre, just a stroll away from the city’s main attractions like Anne Frank House and the flower market, and in the midst of the trendy shopping area ‘de negen straatjes’ (the nine streets), you will find Brasserie OCCO. The restaurant is located inside one of the worlds first boutique hotels The Dylan, which is situated in a beautiful 17th century landmark on the Keizersgracht.
anticipation. OCCO can be described as the laid back little sister of The Dylans prime restaurant Vinkeles - which was awarded with a Michelin star in 2009. It serves a brasserie style menu with fresh, straightforward, unpretentious dishes and can boast executive chef Dennis Kuipers’ leadership and vision on food. Food that is prepared in the same kitchen as that of Vinkeles for that matter.
While entering the foyer we immediately notice the intimate yet chic atmosphere of an old canal house. Marble floors, high ceilings, narrow corridors; they’re all here and lead us to a lounge area with comfortable leather chairs and a nice view on the garden. After enjoying our aperitif we proceed to OCCO, where we are seated in a lovely classic interior with quaint modern touches.
Some very tender pieces of veal lay on our next plates, accompanied by some fresh white asparagus. We enjoy every bite of them. The red Chianti we drink with it has just the right amount of body, with a light touch of vanilla. The young service staff wear sturdy aprons with leather details, which adds to the classic yet quirky style of OCCO. They could not have pleased us more with the dessert they serve next. It’s the softest, freshest little piece of apricot pie we’ve ever tasted, and it comes with goat milk-white chocolate ice cream and pistache crumble. We are in heaven.
We are greeted with a glass of a nice white Vallado, which is made of a dry variant of the muscatel grape. A crispy bruscetta with gazpacho and deep fried olives are served with it, which makes us look forward to the rest of the dinner with

On June 5, the Amsterdam Marriott Hotel (1975) celebrated its 40th anniversary. In addition to the special history of the hotel there was a strong focus on its innovative future and the role that Studio Piet Boon will play in it. With the successful launch of the unique “Meetings Imagined” concept and the in 2013 fully renovated meeting spaces, the hotel took the first step towards how Marriott Hotels sees the future of hospitality; introducing for example mobile guest services and mobile check-in. In the future, in addition to technology, design will be an important factor; to take this to a higher level Studio Piet Boon was attracted for redesigning all 396 rooms; optimization of space in the hotel room and simultaneously creating a warm and contemporary atmosphere.
At May 27 Hotel Okura Amsterdam opened an exclusive exhibition of artist Ewerdt Hilgemann: first Dutch artist of German descent who exhibited on Park Avenue / New York. Some of his individualistic works are now part of “Art South” route and temporarily on the terrace of the Okura’s Serre Restaurant. Hilgemann’s objects are characterized by their monolithic nature of perfect geometric stainless steel forms that get their final shape by implosion. Hilgemann developed his method in the early 80s, after experimenting with various materials. His creative method has since focussed on the implosion of geometric volumes: with a vacuum pump Hilgemann slowly pulls the air out of work and hereby earned the nickname “Airsmith”. The exhibition is open to all hotelguests and continues until the end of September.
Recently the new restaurant “Trattoria per vini e mangiare” with Executive Chef Ron Schouwenburg opened at the Steigenberger Airport Hotel Amsterdam. A cozy Italian Trattoria with a selection of homemade anti pasti, fresh pastas and hip flammkuchen with healthy ingredients made as you like it in the restautant. The new Trattoria is the perfect place to enjoy Italian classics such as Penne Arrabiatta, Spaghetti Vongole, panna cotta and tiramisu. With the Trattoria the Steigenberger Airport Hotel offers an accessible and innovative concept to hotel guests, (business) visitors and tourists who are looking for good quality food at an affordable price. A selection of Mario Loprete’s artwork is on display in the Dikker & Thijs Hotel from June 19 to mid September. Loprete (1968), Catanzaro / Italy, studied art history and is self-taught when it comes to his paintings. He paints very precisely and with different techniques, setting the great masters of the nineteenth and twentieth centuries as an example. His brushwork is light and spontaneous, free, independent and infused with light. Monochrome colors and bright light are structural elements in his paintings. His naturalistic, realistic paintings show sundrenched landscapes, but also windmills depicted in jars, personal portraits (refined after a personal meeting) and for his last series BLACK he made impressive portraits of dancers, musicians and hip-hoppers. Good Hotel Amsterdam is a new hotel concept initiated by the Good Hospitality Group. It will serve one year as popup hotel in Amsterdam, after which the floating hotel will be shipped to the bay of Rio de Janeiro. The new Good Hotel literally does well: local unemployed Amsterdammers get a chance to make a new start in the hospitality industry. An abandoned floating platform has been given a new purpose: a special 3-star hotel with 144 rooms, a bar, restaurant and lobby to socialize and work. The interior design is modern and contemporary; a fusion of local and international. In the rooms works inspired by street-art in Rio de Janeiro. Bar & Restaurant offer cocktail classics, a varied menu or just a delicious espresso.
When over 40 years ago Mohammed Bouanani entered Hotel Krasnapolsky - he spoke no Dutch, but Spanish, French and English. With the many Latin American and French travelers in those days, they needed someone to help out language wise and he could start as porter right away. He worked his way up to concierge and as substitute assistant night manager he witnessed a lot; Grand Hotel Krasnapolsky came to life with dances and theater in the beautiful Winter Garden - Bouanani’s favorite place in Amsterdam. 3 times he witnessed Royal festivities on the Dam; two changes of the throne and the wedding of Willem-Alexander and Maxima. His motto: always let guests go home with a smile; and therefore made many famous friends for life.
