Annual Report 2017-2018

S

howing all the essence and the main purpose of CETT Group is the main goal of the present report: it wants to express every important aspect related to the international School of training and transfer of knowledge in tourism, hospitality and gastronomy. It is a center with unique characteristics affiliated to the University of Barcelona. It started offering quality training almost fifty years ago.

Through this annual report we intend to transmit who we are, what we do, how we do it and, also, why we do it. We want to explain the reality of CETT School during 2017-2018. We wish to introduce ourselves and show everything we have achieved during this school year 2017-2018, presenting the characteristics, data and the most representative actions of the institution, with the intention of becoming closer and transmitting our fundaments and the main purpose of our organization. We do this with quantitative and qualitative data about CETT Campus, our training, academic and research activities and our base commitment, the importance of current and former students represents the backbone of the project, the companies that make up CETT Group and the links with the business sector. Finally, we talk about the future, the light that guides us towards the fulfillment of our objectives keeping in mind the desire to offer an excellent training in tourism, hospitality and gastronomy. The year 2017-2018 has been a year with highlight in the expansion of the training offered by the CETT Campus, and the development process of the new Degree in Digital Business and Innovation in Tourism, which will begin to be taught the year 2019-2020. At the same time, the arrangements for the II Smart Tourism Congress Barcelona CETT-UB, which will take place in November 2018 have been going on. In a year full of challenges and projects, marked by the growth and consolidation of CETT in terms of academic and research activity, it has also been highlighted the graduation of the first promotion of the Degree in Culinary and Gastronomic Sciences (UB-UPC) which is why a very special XXII CETT Gastronomic Encounter was held, bringing together 37 * Michelin in the campus as well as other "stars" in the sector. In the field of research, another remarkable fact has been the recognition, by AGAUR (Agency for University Grants and Research), of both, the Territory, Culture and Tourism Research Group and of the Tourist Accommodation and Restaurant services Research Group as Groups of Emerging Research Recognised by the Generalitat de Catalunya, a fact that represents a qualitative leap of vital importance for CETT research. Finally, the CETT Campus Strategy 2018-2022 is being implemented, with a vision and planning of quantitative and qualitative growth and new goals, in which students and CETT Alumni are particularly involved.

T

he University of Barcelona (UB) is the university with the biggest number of students and the widest and most complete academic offer. In addition, it is the main university research center of the country and one of the most important research centers in Europe, regarding both the number of research programs and the excellence achieved in the field. It holds a top position in the most relevant international, national and European rankings. In this sense, the results of the 2018 edition of the ranking prepared by the Centre for World University Rankings (CWUR) awarded it with a spectacular rise by placing the UB among the 100 best university centres in the world (position 87) and position 24 at a European level. It is a urban, open and multicultural university, just as the city of Barcelona.

The different faculties of the University of Barcelona are spread throughout the city, nourishing the relationship of interdependency between the university and Barcelona. This relationship contributes to the cultural life of the city and allows the university community to enjoy the services provided by both the university and Barcelona. CETT has been affiliated to the UB since 1997.

BACHELOR’S DEGREE IN CULINARY AND GASTRONOMIC SCIENCES This Degree began during the school year 2014-2015, the interuniversity Degree in Culinary and Gastronomic Sciences (UB-UPC) trains professionals on knowledge that allows them to understand the culinary and gastronomic phenomenon from a scientific, technologic, social, cultural and management point of view. It gives students the necessary skills to innovate, design, produce and manage services in the field of haute cuisine, restaurant services businesses and the food and hotel industries. In addition, students have the opportunity of developing research projects and advances in the culinary and gastronomic sciences. These groups boost the creation of new expert knowledge throughout research in three different fields: Tourism, Culture and Territory; Hospitality, and Cooking and Gastronomy. CETT’s main mission is based in the education of managers and administrators capable of thinking and acting as leaders and changing agents at the sector. With this in mind, we offer a unique experience that transforms and boosts the professional carrier of the students.

As part of the Lifelong learning activity, we must mention the collaboration with Carrefour in the organisation of its school of fresh food. The activity, held at CETT Campus, aimed to train teams of butchers and fishmongers at the shopping centres in cutting techniques, pre-processing and basic processing. For a month, 12 training groups were organised, with a total of 258 participants and 160 hours of training. It has also been intensified the recruitment of new clients with whom training has been agreed for the following years, as well as the number of educational institutions from other countries interested in lifelong learning for their former students or teaching staff, with which we have signed collaboration agreements (joint products are designed to be taught at the source place or training is given at CETT). Thus, a project has been agreed with Chile and another with Colombia, to be held in the first half of 2019. With regard to the 2017-2018 academic year, 97 students have completed a short-term Continuous Training course or a tailored-course at CETT Campus.

International Programs The programs of this training have been developed specially for international students interested in having a multicultural experience in Barcelona. Besides the Bachelor’s Degrees and graduate programs, during 2017-2018, CETT School offered 17 semester and customized programs.

CETT eLearning CETT eLearning module teaching, either on-line or hybrid (online and face-to-face combination) has a number of advantages. Students opt for a personalized learning experience with the guidance of expert teachers and professionals with complete time flexibility and the comfort of being able to study anywhere maintaining the educational and academic rigor. For this reason, the online and blended learning methodology is very useful for tailor-made training for companies, entities and professionals. CETT’s academic offer was extended with the first Self-Learning Course on Sales Strategies, in Spanish and English, aimed at the field of tourist establishments, especially accommodation. The training, 100% online and one month long, is the ideal complement to the Expert Course in Revenue Management offered by CETT in online format. Also during this course, tailor-made training has been carried out for companies and entities, and it is important to highlight the high degree of satisfaction of the professionals who have been trained in it.

CETT School Guarantees Academic excellence

W

ith one session dedicated to "The changing Barcelona: from the legacy of the 1992 Olympic Games to the city of the future. New challenges for tourism" on October 18th, 2017, the 2017-2018 academic year was inaugurated on Campus CETT-UB, where an exercise full of new features regarding the training offer was presented. Besides the new programs incorporated, each new school year is characterized by the completion of a number of actions, the active participation in the development of the tourism, hospitality and gastronomy sectors, and the contribution to the dissemination of knowledge in these areas. ACTIONS

Besides the programs taught every year at the University School (EU CETT-UB), the School of B-Tech Studies (ETP CETT), the School of Continuing Studies, the CETT Language School and CETT eLearning, the students of the different programs attend to master classes taught by experts in the subject and participate in a number of professional visits intended to supplement knowledge acquirement outside the classrooms, in real professional spaces that let students learn first-hand the reality of the sector. Regarding the CETT Group, in relation to the creation and dissemination of expert knowledge in the fields of tourism, hospitality and gastronomy, the alliances and collaboration agreements with institutions and first level national and international organizations is to be highlighted. These collaborations also extend to the professional internships and academic stays for the students of CETT School.

The CETT Group is also part of numerous prestigious institutions and associations (in the 2017-2018 academic year, for example, it affiliated to the World Tourism Organisation), and the team actively participates in work groups, such as those that allow to continue developing the Strategic Tourism Plan of Barcelona 2016-2020, the Gastronomy Plan or the Tourism and City Council, among others. Another relevant aspect related to the objective of promoting expert knowledge, research, innovation and technology, is the remarkable participation of the CETT team in conferences, talks, seminars, fairs, conventions, forums ... all over the world, to bring academic value to the tourism, hotel and gastronomy sector (IBTM World Barcelona, Hospitality Innovation Planet, Digital Enterprise Show, 4th Barcelona Tourist Summit, 6th edition of the TourísTIC Forum, Cook & Travel...). In addition, this, throughout the 2017-2018 academic year, has made a total of 58 papers outside the Centre, 33 publications in books and 12 articles in journals. At the same time, Campus CETT-UB is the venue for numerous events and relevant competitions in the sector, and organises renowned events such as the CETT Observatory, the Encounter, the Talent Fair Internship or the CETT Gastronomic Encounter, among others. STUDENTS IN ACTION The students of the CETT School participate actively in events of the sector. For example, during the school year 2017-2018, they have participated in competitions (and have been awarded in several occasions), workshops, fairs and congresses... such as Alimentaria, Hostelco, Madrid Fusión, el IX Mercat de Mercats, Tast a la Rambla, XIII Contest of Joves Cuiners i Cambrers de Catalunya (young cooks and waiters from Catalonia), the XXXII Young Cuisine Competition of Catalonia, IBTM, Barcelona Tourism Summit, B-Travel... Also, they have been present at the IBTM World Barcelona and at international contexts such as EMCUP 2018, and it has been an asset value in events organized by the CETT Campus to bring education and industry closer, such as the Internship Talent Fair CETT-UB 2017 (ITF), the XII CETT Gastronomic Encounter, several conferences and training activities, the XXIII CETT Catering and Food Services Competition and the XII Bacardí-CETT Cocktail Competition... to name a few.

All studies offered by CETT are verified following the VSMA system

HIGHLY QUALIFIED TEACHING STAFF Another characteristic feature of CETT training is the qualification of the CETT School teachers as well as the collaborators in the various training groups, experts in each subject and in the sector due to their professional career. The versatility of the professional context of the tourism sector means that CETT has a teaching staff that combines teachers with a more academic and scientific profile, with teachers with a profile that is more related to professional experience in the tourist, hospitality and gastronomic fields, that constantly update their knowledge thanks to their link with companies in the sector. Thus, the table shows the teaching staff, associate professors, collaborating lecturers, professors and researchers. Also in the framework of the training, it is worth to mention the academic orientation offered to the students. It is designed to help students in each phase of their process of learning.

Quality Management System Education

In recent years, CETT has created its own Integrated Quality and Environment System (SIQMAC) that incorporates the requirements of quality management systems (based on the ISO 9001 regulations) and the environment (based on ISO 14001 and EMAS) accredited within the organization. The requirements have been adapted to the general culture, policy and objectives, as well as to the expectations and needs of the groups relevant to the organization.

What is VSMA? The Framework for the verification, monitoring, modification and accreditation of official titles (MVSMA for its acronym in Catalan) links the processes of quality evaluation (Verification, Monitoring, Modification and Accreditation), that occur throughout the studies, in order to establish coherent links between them and to promote greater efficiency in their management. All CETT university degrees are verified according to the VSMA system.

Research and Expert Knowledge Fostering research and innovation: a strategic value

O

ne of the main goals the CETT Group is the generation and transmission of expert knowledge in tourism, hospitality and gastronomy. This commitment comes true through the three Research Groups, where CETT experts develop tourism research projects in order to provide expert knowledge and innovation that enable the sector to maintain and improve competitiveness. Research collaboration between the private sector and tourist administrations is also boosted, as well as the establishment of joint research agreements with other universities of international scope.

Tourism, Culture and Territory (TURCiT): It has the participation of 20 professors. The lines of research of the TURCiT are Tourism and Territory, Tourism and Culture, Educational Tourism, Film Tourism and Enogastronomic Tourism.

Tourist Accommodation and Restaurant Services (GRATiR): 15 teachers are involved. The lines of research are Strategy, Performance and Productivity in Tourist Accommodation and Restaurant Services, and Sustainability in Tourist Accommodation and Restaurant Services.

RESEARCH GROUPS

Culinary and Gastronomy (GRCiG): It has the participation of 2 teachers and 11 one-time collaborators. The three lines of research of the GRCiG are Gastronomic Innovation, Health in the Environment of the Catering Industry and Culinary Heritage.

The CETT advances in applied research and knowledge transfer are manifested in the three Research Groups that have been set up in accordance with the priority areas of expertise of the center:

44

It should be noted that on February 5, 2018, it was made public the resolution of the call for grants to support the activities of the Research Groups during the period 2017-2019, convened by AGAUR (University and Research Aid Agency). The Campus CETT-UB has obtained the recognition of the Tourism, Culture and Territory Research Group, coordinated by Dr. Eugeni Osácar Marzal, and of the Tourist Accommodation and Restaurant Research Group, coordinated by Dr. Oriol Anguera-Torrell. Both groups have reached the qualification of Emerging Research Group Recognized by the Generalitat de Catalunya. STUDIES RELATED TO RESEARCH GROUPS The Senior Capstone Project (TFG for its acronym in Catalan) is one of the fundamental instruments to achieve two of the main objectives of the EU's CETT-UB Bachelor’s Degree in Tourism: the international dimension and the entrepreneurial spirit. The different possibilities of the students in their training for the development of research work and the structure and organization of the Degree in Tourism justify the need to make different types of TFG available to the students. One of the modalities, coordinated by a responsible professor, is that of the TFGs linked to the Research Groups. Likewise, the students of the different master's degrees offered by CETT can also develop the Master's Final Project (MFP) linked to the Research Groups. Students have the possibility to develop their project participating in pre-established groups. The development of the project will include both face-to-face sessions with the professor-advisor and autonomous work. THE DATA In the following pages, CETT Research Groups are defined and a summary of the global data of each of them during the course 2017-2018, from September 2017 to August 2018, is presented. Each GR has its own 2017-2018 report, which can be consulted at their respective website.

These documents specify the following data: • • • • • • • • • • • • •

Research projects Participation in congresses and conferences Publications Doctoral theses read Tutored doctoral theses Knowledge networks with the participation of the either the whole group or one of its members Economic resources captured from external sources Senior Capstone Projects Master Capstone Projects Academic Programs and teaching Editorial and scientific committees Presence in the media Other performance

This data does not include teaching activities related to the habitual activity of the members of the Group, in both bachelor’s and master’s degrees of the CETT and the UB. On the other hand, the presence in the media is not considered in the total summary of actions because they are regarded as dissemination actions and not research.

RG Tourism, Culture & Territory

D

uring the academic year 2017-2018, the Tourism, Culture and Territory Research Group (TURCiT, new acronym of the Group) has developed a total of 122 actions, a very similar number to the previous school year. Regarding the indicators used, in addition to those specified in the previous page, in this period only the Senior and Master's capstone projects which have obtained a minimum grade of 9 or those that are relevant due to its theme or novelty have been included. Among the most outstanding events of the school year, it should be mentioned the continuity of two projects: the European project EmbleMatic - Emblematic Mediterranean Mountain as Coastal Destinations of Excellence, in which TURCiT is an academic and expert partner in tourism, and which is found in the conceptualization of eco-itineraries, key moment; and that of Educating Cities and Responsible Tourism. (Ciudades educadoras y Turismo Responsable). In the latter case, after two years of joint work with different Spanish cities, within the framework of the meeting of the State Network of Educating Cities (Red Estatal de Ciudades Edu-

A third relevant project that is being developed with the City Council of Barcelona is that of indicators of tourism sustainability in urban destinations. With regard to publications, the book Educating City and Responsible Tourism (Ciudad educadora y turismo responsable) stands out, coordinated by Laia Coma and Joan Santacana, regular collaborators to the CETT-UB, and published by Ediciones Trea. The work has contributions from 12 members of TURCiT, being the most important joint collaboration that the Group has made so far. MAIN FIGURES •

RG Tourist Accommodation and Restaurant Services

D

uring the 2017-2018 academic year, the Tourist Accommodation and Restaurant Research Group (GRATiR, new acronym of the Group) has redefined the research lines that guide their research activities. Currently they are Strategy, Performance and Productivity in Tourist Accommodations and Restaurant Services, and Sustainability in Tourist Accommodations and Restaurant Services. The first line wants to contribute to better understand the functioning and strategies of companies in the sector to improve their performance and productivity. The second line wants to provide knowledge that allows to establish the viability of following the business principles associated with sustainability, as well as to identify which are the benefits derived from them for companies in the sector and for society in general. Regarding the indicators, in addition to those specified on page 45, only the Senior and Master Capstone Projects that were considered as a significant contribution to any of the lines of research of the GRATiR by their respective Professor Advisor were taken into account. Among the most outstanding events of the course, participa-

RG Culinary & Gastronomy

D

uring the 2017-2018 academic year, the Culinary and Gastronomy Research Group (GRCiG, new acronym for the Group), which is part of the CETT-UB Chair in Tourism, Hospitality and Gastronomy, has worked to become a reference in the world of applied research in culinary and gastronomy, with a total of 26 research activities. The GRCiG develops research projects, focusing their efforts on establishing guidelines for the development of a research methodology in the culinary and gastronomic world that includes its various aspects. The group is committed to research and culinary innovation focused on its applicability to the professional sector but always taking into account the academic world. The main objective is to be the engine that stimulates the synergies between these areas and, especially, the expert context that favors the approach of future professionals to the field of research and research in the field of cooking and gastronomy. The goal of the GRCiG is to be able to be a generator and transmitter of expert knowledge to the sector of cooking and gastronomy to give answer to the present and future challenges in the side of research, and to contribute to the generation of the new research language in the culinary science and in the gastronomic world. In this 2017-2018 academic year, different projects must be

To expand the participation in research projects in the year 2018-2019, work has been done to consolidate relations with the entities with which projects were already started (Fundació Miquel Agustí), with the intention of being the preferential partners when the project can be related to gastronomy. These relationships have allowed us to start working with recognized research groups such as IRTA-Lleida or to prepare joint proposals to request projects from the Operational Groups of the European Association for Innovation. Work has also been carried out to jointly develop projects with other entities, such as for example, the Department of Pediatric Allergology at the Vall d'Hebron Hospital on how culinary changes in egg white can modify the allergic potential in children.

In the agro-gastronomy environment, the GRCiG has been involved in the BRAAVA project of the Fundació Miquel Agustí (FMA) and has developed two studies related to the new varieties and the new gastronomic values of the Brassica (cabbage, broccoli, kales...). We must also highlight the TFG (capstone project) of a student of the Degree in Culinary and Gastronomic Sciences (UB-UPC), who has mapped the cuisine of substitution of ingredients and products (this project is part of the implementation of the TFG of the GCCG during the 2017-2018 academic year, which has left contributions in all the research lines of the GRCiG).

CORPORATE SOCIAL RESPONSIBILITY A FOUNDATION COMMITMENT

5

Social Responsibility Policy at CETT

T

he CETT Group, as a group of companies dedicated to training and offering quality services in tourism, hospitality and gastronomy, regards corporate social responsibility (CSR) as a part of the founding commitment and allows it to become a reality. The Group focuses their efforts and works to achieve a sector more committed to society and people. It encourages initiative, integrity and self-development, and works as a team in an international context, while maintaining a commitment to the country. Efficiency translates into competitiveness, a fundamental feature to guarantee continuity of the CETT Group, which reinvests the results in education and in the community. Therefore, the Gaspar Espuña-CETT Foundation, established in 2000, guarantees and promotes the continuity of this philosophy and foundational commitment, through, for example, the granting of scholarships. In addition, another example of this corporate philosophy is the fact that no dividends are distributed. In this context, CSR is conceived at CETT as a tool for corporate improvement, which is integrated into the Group's philosophy and culture. Achieving it means taking a step further in terms of competitiveness, value and business positioning. At the same time, it is an opportunity to develop individual social responsibility (IRS), encouraging the participation of the whole team and favoring continuous improvement. CSR is part of the CETT Group’s philosophy. It is an attitude shared by the whole team that makes an effort to show this commitment to society throughout their work. In addition, as a training institution, CETT School has the responsibility of transmitting these values of social responsibility to students. Students are encouraged to develop social responsibility in academic and professional activities. The entire CETT community (students, residents, teachers, professionals...) maintains an individual commitment to share criteria and sensitivity in the field of CSR, and is involved and participates in the current implementation program that is carried out.

54

always keeping social responsibility in mind. The Group also shares a Code of Ethics and Best Practices, created with the intention of maintaining a firm commitment to act with integrity, ethics, transparency, openness and to comply with the current legislation, the recommendations established by the public authorities, social responsibility and best practices related to the right corporate professional behavior CSR COMMITTEE The CETT Group's CSR Committee is made up of volunteers from the CETT team that organizes and manages the different CSR actions that are carried out or promoted by the Group. During the 2017-2018 financial year it was formed by: Carme Cassà, Josep M. Arcos, Meritxell Cuní, Marta Cusó, Isabel Gallego, Blanca Garcia, Montse Noguera, Esther Obiols, Maria Soy i Blanca Viladoms.

CSR MILESTONES AND ACTIONS

COMMITMENTS

Right from the beginning, the CETT Group has pursued CSR goals. This attitude has been progressively developed thanks to various actions and measures taken in this direction. These measures are intensified by the new long-terms commitments taken on by the Group in order to work towards excellence

The CETT Group understands CSR as a fundamental structural element of the business culture of the Group. The Group is continuously working on the improvement and responsible management of social, economic and environmental aspects. Our commitment is to improve the management of the com-

pany every day to make it more sustainable, committed to Catalonia, understanding the respect for the language as a contribution to multiculturalism, a characteristic of an organization with a strong international orientation and prioritizing local action regarding social action. The CETT Group is committed to providing added value to the staff, students, residents, guests, suppliers and companies hired, the tourism and hospitality sector, the academic and scientific community, and the community. It also commits itself to minimizing the environmental impact and preventing the pollution derived from the activities and services offered. This commitment is intended to foster a more sustainable and competitive tourism in the local and global perspectives which can work as an incentive for economic and social development.

gas consumption (+1.57) % and water (+3.63%), figures that must be analysed taking into account that the increases in the percentages of activity have been a lot higher. Beyond the figures, we work every day to be as sustainable as possible. Starting from an entrepreneurship prize awarded by the Gaspar EspuĂąa-CETT Foundation in 2016 to Greencostumers, the Alimara Hotel Barcelona was the first hotel to launch, during the Mobile World Congress 2018, two pilot rooms of this project. The two greenrooms include water and light consumption measuring devices. A notice board explains to the guest the characteristics of the room and among them GARE appears, the energetic assistant during one's stay. The guest is invited to play to be sustainable by monitoring his/her consumption of water and light online.

SUSTAINABILITY, A DAILY COMMITMENT The CETT Group is committed to be responsible and take care of the environment. During the academic year 2017-2018, the global increase in supplies –electricity, water and gas– in the CETT Campus was 6.76%: electricity consumption (+4.53%),

T

he CETT Group's development of systematic and planned quality management actions begun in 1998 and it is still maintained in order to provide an efficient response to the needs and expectations of the costumers, staff, workers, shareholders, the market and society in general.

With this intention, CETT has created its own Integrated Quality and Environment System (SIQMAC). This system incorporates the requirements of quality management systems (based on ISO 9001 regulations) and the environment (based on the ISO 14001 regulations and the EMAS) accredited within the organization. The requirements have been adapted to the gene-

STUDY ABOARD Either within the Erasmus program in European universities or through bilateral agreements with centers around the world, students of the CETT Bachelor in Tourism who participate in exchange programs acquire new skills in new environments. Internship Talent Fair CETT-UB Success of the second edition

T

he Internship Talent Fair CETT-UB (ITF) is a meeting space at CETT Campus between CETT-UB young talent (finishing students and former students from the last two years) and the tourism, hospitality and gastronomy industries.

The second edition of the ITF, held on October 26, maintained this vocation of bringing the labour work closer to the classroom, with the spirit that this continues to be the space where companies and students can interact and exchange views, in which students find answers to questions about how to focus their careers, and can take the pulse of the companies that lead the sector. This new call focused on adding value to the activities and the task carried out by Career Services to provide relevant tools and information to the students and CETT Alumni. THE ACTIVITIES The participating companies, around twenty from different areas of the tourism sector, shared with CETT students their internship programmes and development programmes, with the enhancement of their differential features. Thus, CETT students knew first hand training programs that will allow them a more agile professional progression within the leading companies in the sector. The second edition of the ITF was presented in a totally innovative and dynamic format that not only gave the opportunity for an exchange of contacts between companies and students,

but also included a great networking work with the participating students. The event began with the presentation by the companies to the groups of students who went past the respective stands, to whom they made known the internship and selection programs, among others. At mid-morning, students and representatives of the companies interacted in the coffee break and then a joint group dynamic took place through a case study: the students organized an event in 45 minutes and then presented it to the representatives of the companies in an original way. For their part, the representatives of the companies offered the students advice, suggestions and corrections regarding the organisation of the event and the operation of their work as a group. To conclude, the companies also showed the students their feedback regarding their CV´s, a fact that led to enormous learning and great value for the future. THE PARTICIPATING COMPANIES The companies attending the ITF were Artico Hissi Bar, BSG Interns, UNESCO Chair in Sustainability at the UPC, Xef Training US, Fairmont Rey Juan Carlos I, Grup Hotusa, H10 Hotels, Hilton Diagonal Mar Barcelona, Hotel Arts Barcelona, HRC International BV, Louvre Hotels Group, Meliå Hotels International, Museu Nacional d'Art de Catalunya, NH Hotel Group, Palladium Hotel Group, Placement International, Roger Smith Hotel, Sabatica, Sixt Rent a Car and Travelperk.

The Encounter 2018

One of the most numerous in recent years

O

n February 15, 2018, the CETT-UB Campus held a new edition of The Encounter 2018, one of the most numerous in recent years. In addition to the spaces allocated for round tables, workshops and interviews that shared the interests of the 72 participating companies and the nearly 400 CETT students and alumni who attended the event - there were 1,900 interviews - this Encounter incorporated many new features. One was the creation of the Tourism Space 3.0, aimed to deal with entrepreneurship and startup topics. With the aim of creating a favourable environment for the relationship between companies, professionals and students, and to encourage participation, this year's edition of The Encounter welcomed the presence of leading companies from the tourism, hospitality and gastronomic sector, such as Compass Group-Eurest Catalunya, Grup Sagardi, Roger Smith Hotel, Market Lane Group, Turisme de Barcelona, Pangea, Hotel Arts Barcelona, SB Hotels, Barceló Hotel Group, Ohla Boutique Hotels, Almanac Barcelona or Barcelona Activa, among many others. The Encounter presented a new approach, with a totally renewed program: in addition to the participation in the organization of the event of a group of enterprising students of CETT to strengthen the point of connection with the students, in the new Tourism Space 3.0 professionals from the sector spoke about the new trends and startups that are opening their way, and there was a debate on hot issues, with the round table "Revolucionando el mundo del turismo", with Edu Pascual, CEO & Founder of Comunicontent, as a moderator; that of "Lideratge femení", and the graphic recording of both sessions by Lorena Estévez, from Visual Thinking Barcelona. In the Workshops Space the companies proposed challenges to the students, who had to solve them with the application of their knowledge and skills. The Comida Showcooking Space offered a gastronomic offer cooked and served by the students of the CETT Professional Technical School. Another out-standing initiative of The Encounter was the presence of the winners of the 2017 edition of the Competition for Entrepreneurial Projects of the Gaspar Espuña Foundation-CETT, who presented their proposals to the attendees and nurtured their innovative spirit. The winners, Kami de Déus, with Robert Ruiz; Cap a Mar, with María Martínez, and Onvaig.cat, with Laia Andreu, detailed the evolution of their respective projects, and the support and accompaniment they receive from expert professionals thanks to CETT mentoring.

RECOGNITION OF THE BEST CETT'S COLLABORATING COMPANIES The 2018 Encounter wanted to recognize the work of the Agència Catalana de Turisme, Ohla Boutique Hotels and Compass Group-Eurest Catalunya for their trajectory of collaboration and link with CETT in the tourist, hospitality and gastronomic fields, respectively. There were also special mentions for the companies Market Lane Group, Intercruises Shoreside & Port Services and Soho House.

C

elebrities from the world of haute cuisine and up to 37 Michelin stars came together on 12th, 13th and 14th March at the XII Gastronomic Meeting organised by the CETT Professional Technical School, which this year celebrated the first promotion of the Inter-University Degree in Culinary and Gastronomic Sciences (UB-UPC) and commemorated the 25th anniversary of cooking training at CETT. Famous chefs, sommeliers and journalists from the culinary world shared their experiences with the Institution's students and reflected on the present and on the future challenges the sector must face. With this unique event of great relevance, the organisation made it possible for students to have direct contact with professionals and experts in the sector, and to be linked to the reality of professional gastronomy in a pedagogical and dynamic format. The round tables were organized under the gaze of gastronomic journalists and communicators who moderated each of the sessions, with topics as diverse as "Welcome to the Room", "Imagine the Res-taurant", "The Sweet Hour", "The Commensal 92/2018" and "Letter to the Graduate", with the mod-erators Xavier Agulló, Pau Arenós, Tana Collados, Toni

Massanés and Cristina Jolonch, respectively. The participants presented their points of view regarding current gastronomic events and were able to share their experiences between stoves and dining-room. In addition, during the XII Gastronomic Encounter the possibility was offered to enjoy the projection of the feature film El Somni, with the intervention of Franc Aleu, director and audiovisual artist; of a talk by Joan Roca, patron of the Degree in Culinary and Gastronomic Sciences (UB-UPC); of a gourmet dinner in which the experts and Michelin stars could interact with CETT's students and teaching staff, and of workshops with outstanding companies in the sector, such as Collverd, Triticum and Udon, and the culinary demonstration with Makro, Copesco Sefrisa, Guzman Gastronomia, Bacardi and Finca Viladellops. During the whole Encounter, the students were able to ask questions to the speakers through the CETT Events application, which allowed them to interact with them. Entrepreneurship A value for the future

O

ne of the most representative values of the CETT Group is the commitment to entrepreneurship, both from the academic and pedagogical aspects, as well as the promotion of different projects. This quality is enhanced in the classrooms, incorporating it throughout the entire academic curriculum, so that students develop an entrepreneur spirit. XIV EDITION OF ENTREPRENEURSHIP COMPETITION OF TOURISM PROJECTS One of the objectives of the Gaspar EspuĂąa-CETT Foundation (see section 5) is to promote training, research and knowledge in tourism, hospitality and gastronomy. One of the principles of the institution is to stimulate entrepreneurship and awareness to contribute to the growth of sustainable tourism. The FGE-CETT defends responsible, open and network entrepreneurship. It works to foster the generation of entrepreneurial projects, promoting innovation and creating synergies where business ideas can take shape, thanks to projects with a future perspective. Therefore, in its desire to promote and foster the development of tourist activities, the FGE-CETT wants to encourage young entrepreneurs to develop their ideas, shape them and help them to make their projects come true. Hence, as an entity with social interest, it aims to promote entrepreneurial initiatives, supporting them through the Entrepreneurship Competition of Tourism Projects. Thus, it rewards the best tourism company projects by providing them with financial resources, offering the know-how of professionals through mentoring, generating networking and facilitating the contact of entrepreneurs with potential investors. Winners of the XIV edition Out of the 45 projects submitted to the competition, the eight finalist projects were presented to the final jury, who chose the three winners. "Maurici Cot pastisseria i postres", by Maurici Cot, was the winning business initiative in the Competition, which is held annually by the Gaspar EspuĂąa Foundation and the CETT-UB Tourism, Hotel and Gastronomy Campus, with the sponsorship of the Barcelona Provincial Council and the Obra Social "La Caixa". The winning project, of which the jury

74

highlighted the content and shape, "is respectful with the product and the people, and contains important elements of social entrepreneurship (work positions for people with difficulties/ disabilities). It is a craft project that wants to make the leap to industry, with simplicity and authenticity. The second prize went to "EasyTravel App", by Guillermo Onrubia and Victor Corominas, for "being a very innovative tool with the capacity to create something sustainable over time, covering a gap in the world of events. The project brings good service and added value to the event". As for the third prize, the award went to "Sharify", by Gemma Prenafeta, Diego Gaspar, Jordi Priu, Christian Rovira and Andrea Gamero. It is an "app aimed at a young audience, with great potential and scalability". In the framework of this contest, a meeting between mentors and the winners was held later in order to launch the mentoring part of the prize. Besides the financial contribution to the winners to help them start their project, since the 2016-2017 edition mentoring has been incorporated as a prize, based on the transfer of knowledge and experience of professionals to guide the entrepreneurs, which accelerates the process of project development and helps to drive the business in an optimum way. THE FUTURE CHALLENGES AND OPTIMISM

Future projects The future of the CETT Group

T

he main objective of the CETT Group's future plan is to continue working so that the CETT-UB Campus continues to be the reference point for academic excellence and services in tourism, hospitality and gastronomy in the international sphere, committed to the responsible development of the sector, people, society and the country, providing training, research, innovation and expert knowledge, and resolutely betting on the personal and professional knowledge of those who are part of it. With this vision of the future, the development and implementation of the CETT 2018-2022 Campus Strategy continues, with a vision and planning of quantitative and qualitative growth and new challenges. This project starts from the link with the innate tourist knowledge in CETT, and from the values and essence of the Group: entrepreneurial spirit, excellence, effort and perseverance, talent, ethics, individual and business social responsibility, open-minded attitude to the world... taking up the values of the Gaspar Espuña Foundation-CETT. Within a framework of growth and development of a responsible model in which people constitute the main value, the sustainability of the CETT Project involves continuing to encourage innovation and entrepreneurship, and preparing students to face the challenges of the future. In this context in which academic excellence – teaching, research and knowledge transfer – is a backbone, Alumni and their successful professional development, impregnated with the values of CETT, are key. But undoubtedly if there is a fact that is necessary to take into account regarding the development of CETT, this is the reality of the tourism sector and society, in which technological transformation is undeniable and is generating a process of profound change. This process of transformation, which affects all areas of our lives, leads us to a new socio-economic context: it is present in the daily life of our daily actions, in our way of living experiences, in how we perceive the world and in how we exchange knowledge and visions. This new way of being and doing is characterised by the immediacy of information and hyper-connection at all times and places. In this sense, the digital and technological transformation is incorporated in the Strategy 2018-2022 of CETT both, in the field of management and training. Thus, during the academic year 2018-2019 work will be done on the development of both new programs and new methodologies.

96

Specifically, in 2019-2020 the new Degree in Digital Business and Innovation in Tourism will begin, with specialties in the generation of new business models for tourism and services and the intelligent management of companies and tourist destinations. The new digital era poses a paradigm, in which organisations must be prepared to face permanent states of change that allow them to implement new processes and technologies constantly. And in this field, digitisation also raises the evolution of the talent needed in companies and, obviously, the way to train it. The CETT Campus is actively working in favour of this transformation and innovation of educational methodology, with the creation and implementation of real projects as a learning method. Examples of this are the GCCG's Pop Up restaurant, where students manage a restaurant process from design to invoicing, or the CETT Co-creation Experience product, where companies and tourist organisations challenge students with the raising of real problems and the co-creation of solutions. Both experiences are a sample of this methodological evolution that will continue to place CETT as a centre of educational excellence and as a reference for full adaptation to digital reality. So all these changes regarding the programs and the new methodologies will be implemented progressively in all the education that CETT offers. On the other hand, and also in terms of future, the 2018-2019 year will be focused on the arrangements of an event that will mark the 2019-2020 academic year: the celebration of the 50th anniversary of the creation of CETT by its founder Gaspar Espuña Berga. The proposal of activities to commemorate this fact will have as a goal to gather and to make participate in it the students and former students of the Centre, the team and the teaching staff, universities and national and international academic partners, collaborating companies and institutions... and all those that have been linked to the entity.

L
