Growing up there was nothing

I loved more than eating food straight out of our tiny backyard garden. My parents grew everything: string beans, corn, peppers and potatoes. Sadly, I did not inherit my mother’s green thumb, so as an adult I assumed I would have to go without that summer fresh taste on my plate. Then one Saturday, I was exploring downtown Roanoke and stumbled upon the City Market. It was bursting with produce, handcrafted gifts, and live music. I spent the rest of the morning picking out fresh, locally grown vegetables. I also bought some soap and jewelry (and splurged on some kettle corn!) Living in the city or being cursed with a brown thumb doesn’t mean you’re stuck with chain grocery store produce. There are over twelve Farmer’s Markets in the Roanoke and New River Valleys alone, where you can buy a wide variety of local and organic food. This debut issue of Living Naturally not only gives you all the details to find the closest market, but also includes great recipe ideas to kick off the fall season!

Now in its 42nd year, Ferrum College’s Blue Ridge Folklife Festival (October 24th, 10 a.m. to 5 p.m.) puts festival-goers of all ages face-to-face with people who carry on the “real roots” traditions of central and western Virginia—craftspeople, musicians, cooks, tale tellers, antique tractor and engine buffs, custom car builders and hot rodders, draft horse teamsters,

dog handlers, moonshiners, slingshot masters, and many more. Among this year’s highlights are: • Amazing Grace, the “Movie Star” mule—She acts, she paints, she high jumps, she dunks basketballs, and she’s always a contender in the coon mule jumping contest. • “The Life & Times of Carter Stanley”—A one-man show exploring the life a Virginia bluegrass icon who passed long before his prime. • Three music stages—21 hours of string band tunes, bluegrass, gospel singing, blues, and traditional country music.

• Yoga targets many components of physical fitness, including strength, flexibility and endurance. A series of yoga poses, one type of which is called a Sun Salutation, can be performed in place of or in addition to a workout. • It’s easy to learn and practice yoga. Beginners should start with simple stretches such as the Downward Dog, the Cobra, and the Child Pose. • Yoga is a de-stressing activity. A Tribute to Dr. Wayne Dryer

I was a 16 year old high school dropout, a teen mom of a two year old, living on my own in poverty and feeling broken and hopeless when I came upon a small little shop that was offering tea leaf readings for $5. Immediately, I felt compelled to go inside and I didn’t know why. I had never really believed in fortune tellers and I didn’t have much money, but I was at the end of my rope. I was desperately searching for some kind of meaning and hope. Intuitively, I reached into my purse scraped together the change at the bottom and came up with enough to go inside in hopes of learning the fate of my future. I never dreamed that going inside this little shop and meeting this beautiful and very wise woman was going to be the impetus that would change the direction of my whole life. She began my reading and instantly I felt intrigued by the hope and brightness she said she saw in me. She gave me so much encouragement and at the end of the session she told me I had to read a book that she hoped would help me. It was then that she introduced me to Dr. Wayne Dyer through his book “Your Erroneous Zones”. I went home and read the whole book over the next two days hanging onto every word. It was instantly a paradigm shift for me that would change the course of my life. The wisdom in his words helped me shift my negative dysfunctional thinking of limits and lack to knowing there are endless possibilities which are determined by the content of our thoughts. “Change your thoughts and you can change your life”. From the moment I finished the book I began making changes in my life. I was so inspired and motivated by Dr. Wayne Dyer’s own story of growing up in poverty in orphanages and foster care. His alcoholic father left his mother with three small children which she

alone was unable to care for. He was labeled a “scurvy elephant” in elementary school by his teacher. When his foster mom went to the school to find out why his teacher would label him this way, she learned that she had not called him a “scurvy elephant”, rather a “disturbing element” in her classroom because he challenged the rules and could be disruptive. He went on to say that it was the “scurvy elephants” of the world that often made the most difference. After reading this book, I was determined to overcome poverty and shift my life in a direction that would empower me to design a life that I created. I began to shift my negative thinking by using positive selftalk and encouraging myself to be detached as Wayne would say “from the good opinion of other people”. I began to live my life more from an internal locus of control and trusting my intuitive wisdom that I could do whatever I wanted if I had a plan, put forth the effort, and believed in myself. Wayne Dyer touched the lives of millions of people. He made a huge impact on the world of self-help, motivational speaking, and inspiration like no other. Although his passing on August 30th brought much sadness, he left behind a wealth of wisdom for us to all cherish. The following are ten of my favorite quotes by Wayne: “You don’t need their approval. It’s impossible to go through life without incurring a great deal of disapproval. Even in a presidential election nearly half the people vote for the other person. The need for approval must go… if you are going to gain personal fulfillment.” “You can either be kind or be right… choose kindness.” “How people treat you is their karma.

How you react is yours.” “If you change the way you look at things, the things you look at change.” “When you judge another, you do not define them, you define yourself.” “Begin to see yourself as a soul with a body rather than a body with a soul. You are spiritual person having a human experience.” “Self-worth comes from one thing… thinking that you are worthy.” “Love is the ability and willingness to allow those that you care for to be what they chose for themselves without any insistence that they satisfy you.” “Freedom means you are unobstructed in living your life as you choose. Anything less is a form of slavery.” Three days before he passed away he wrote on Facebook “I have a suit in my closet with the pockets cut out. It’s a reminder to me that I won’t be taking anything with me. The last thing I wear won’t need any pockets. We are not our bodies, our possessions, or our careers. Who we are is Divine Love and that is infinite.” There are some people who come into the world who shine a light so bright that even in death it cannot be extinguished. Dr. Wayne Dyer is such a person. For the last 31 years he has been a constant companion to me through his books, tapes, CDs, DVDs, and conferences. I had the honor to meet him on several occasions and I will miss him deeply.

Goodwill Industries of the Valleys

Goodwill is a leading charitable social enterprise that generates opportunities for people to achieve economic stability and build strong families and vibrant communities. They offer job placement and training, and other community-based programs for people who have disabilities, people who lack education or job experience, and others who face challenges to finding employment. In 1902, the Rev. Edgar J. Helms founded Goodwill in the south end of Boston. Helms, a Methodist minister, early social innovator and entrepreneur, collected used household goods and clothing in wealthier areas of the city, then hired and trained people who were poor to mend and repair the

goods. The items were then resold or were given to the people who repaired them. The system worked, and the Goodwill philosophy of “not charity but a chance” was born. From these humble beginnings, Goodwill has witnessed the power of work in people’s lives for 113 years. Goodwill is an entrepreneurial leader, environmental pioneer and social innovator of the “reduce, reuse, repurpose” practice, and it creates jobs in emerging industries. Goodwill’s process of selling and reusing used goods creates thousands of jobs and millions in revenue that fund job placement and training programs in communities across the United States and Canada. It’s an environ-

mentally sound process and, at the same time, a sound investment in the economic health of your community. Goodwill Industries of the Valleys has been awarded, by the Region 2000 Workforce Development Board, a contract to provide services to youth, adults, and dislocated workers through the Workforce Innovation and Opportunity Act (WIOA) programs. Goodwill currently operates these programs for individuals in other areas of the commonwealth including Charlottesville, as well as the Shenandoah and New River Valleys. Also, Goodwill will act as the Center operator for Workforce Centers in the region.

Animal Rescue: bringing nature into balance One of the measures of the sophisti-

cation of any community is its awareness of the importance of nature, and the reciprocal influence of human habitation. In earlier times [the late 19th Century], people felt little need to conserve what appeared to be a never-ending bounty of birds, animals, and natural resources. But what promised to be eternal proved all too expendable as forests became pastures, and forests became lawns; as the dreams and the requirements of human kind began to run afoul of the necessities of the environment; as communities grew, nature dwindled. Thus, to accommodate the new-comers, nature had to give up land to be paved, forests to be hewn, water tables to be altered, and the like. Trees, grounds, and brush which had provided sanctuary for years beyond measure were converted that man’s hopes might be realized. The uninterrupted

dominion of nature has been gradually, relentlessly eroded, forcing animals into adaptations not always beneficial for them or us. Nature’s ways are not necessarily the ways of humans, but, happily, they need not lie at cross-purposes. Now, our region has taken yet another step to preserve the cycle of nature: the Southwest Virginia Wildlife Center, located in Roanoke County, is a 501C3 organization; its sole source of funding is private donations. It is the only permitted wildlife veterinary center in the region. Its mission is to take in, rehabilitate, and release back into their native habitat any animal or bird indigenous to Virginia. Staffed by trained volunteers, and permitted by the U. S. Department of Fish and Wildlife, as well as the Virginia Department of Game and Inland Fisheries, the center features a staff veterinarian and advanced diagnostics. The Executive Director is Sabrina

Pink Himalayan Salt Article by Dee Reynolds

What has been a medical remedy

for over 100 years, tastes great, is a pretty pink color and can be found just down the road from us in Forest, Virginia? No, it’s not a smoothie or a fancy new pill. It’s pink Himalayan Salt, and the benefits of it will probably surprise you! A Polish doctor by the name of Felix Boczkowski hypothesized in 1843 that people with people with pulmonary and respiratory problems experienced healing effects while breathing in the air of the salt mines in Wieliczka, Poland. The salt mine there is now the largest “Underground Rehabilitation and Treatment Center” in the world. Celebrity chef and Food Network star, Alex Guarnaschelli offers three make-ahead, delicious appetizers that will help make entertaining a breeze. By pairing seasonal produce and herbs with nuts like walnuts and pecans for rich flavor, these appetizers will be the highlight of your meal. Chef Alex Guarnaschelli prefers to use Fisher nuts, as it is the only national brand of recipe nuts entirely without preservatives.

"For a more Italian experience, use authentic Parmigiano Reggiano cheese in this recipe," Guarnaschelli suggests. "It’s more expensive than domestic Parmesan, but it has a wonderfully rich and nutty flavor.�


Walnut stuffed cherry tomato halves “Who doesn’t love a stuffed cherry tomato?” Guarnaschelli says. “A mixture of cheese, peppery arugula and juicy tomatoes brings out the great richness of the nuts. Stuffed cherry tomatoes are satisfying without being filling, and make a great alternative to breadbased starters. You can assemble these appetizers ahead of time and refrigerate them until you’re ready to serve.”

Spicy walnut and chickpea hummus Chipotle brings smoky heat to this appetizer. While hummus is traditionally made with tahini (sesame) paste, this version uses sesame seeds and walnuts to add richness to the mixture and texture when sprinkled on top. Serve this hummus as an individual hors d’oeuvres or as a tasty dip with pita wedges. Yield: 24 2 tablespoon servings Prep time: 15 minutes

Ingredients: 1 cup chopped Fisher Walnuts, divided

Ingredients: 3/4 cup fresh arugula leaves, coarsely chopped

1/4 cup olive oil

1/2 cup (2 ounces) coarsely chopped Fisher Walnut Halves and Pieces, toasted 1/2 cup finely grated Parmesan cheese 2 tablespoons extra-virgin olive oil 1 teaspoon balsamic vinegar 1 teaspoon grated lemon zest 1/8 teaspoon salt 36 cherry tomatoes Directions: Toast the walnuts by placing them in a large non-stick skillet over medium heat. Stir frequently until the walnuts turn golden - about three to five minutes. Combine the arugula with the walnuts, cheese, olive oil, vinegar and lemon zest; set aside. Cut the tops off the tomatoes. Use a small spoon (such as an espresso spoon), the handle of a teaspoon or a melon baller to gently remove the majority of the seeds and pulp, taking care not to pierce the skin. Season the insides lightly with salt. Fill the tomatoes with the walnut and arugula mixture. Serve at room temperature.

Quickie goat cheese and pecan bites Another great make-ahead appetizer, these bites are filled with flavor and deliver the perfect combination of crunch and taste. “The freshness of the parsley and lemon zest is the perfect bridge between the goat cheese and pecans,” says Guarnaschelli. Yield: Makes 24 servings Prep time: 15 minutes Ingredients: 1 pound soft goat cheese 2 teaspoons cracked black pepper 1/2 cup toasted Fisher Pecan Halves, chopped zest from two lemons

3 tablespoons fresh lemon juice

3 tablespoons chopped flat-leaf parsley

1 tablespoon sesame seeds

Directions:

2 cloves garlic

Break up and mix the goat cheese with the black pepper in a medium bowl. Divide into 24 pieces of about 2 teaspoons each and roll into balls.

1/2 teaspoon paprika 1/2 teaspoon salt 1/4 teaspoon chipotle powder or ground red pepper 1 medium red bell pepper, ribs and seeds removed, coarsely chopped, about 3/4 cup 1 tablespoon chopped parsley

Combine the pecans, lemon zest and parsley in a medium bowl until well blended. Roll the goat cheese balls in the pecan mixture. Arrange on a serving platter. Refrigerate until ready to serve. Take them out 15 minutes before serving so they soften a little and drizzle with a little olive oil, if desired.

Directions: Combine 1/2 cup walnuts and olive oil in the bowl of a food processor, pulse to coarsely chop the walnuts. Add the chickpeas, lemon juice, sesame seeds, garlic, paprika, chipotle powder and salt, and process until smooth. Transfer the spread from the food processor into a medium mixing bowl and stir in bell pepper, parsley and remaining 1/2 cup walnuts. Serve with toasted pita triangles, if desired.
