But what is even harder to fathom is the lack of sit-down places where you can enjoy the famous local specialty mentaiko (spicy cod roe). That’s where Ganso Hakata Mentaiju comes in. Although maruten (a disc-like fried fishcake) is a common topping on Hakata-style udon, it was never typically considered the main attraction. That was until Manp ei c ame along. Owner Yuichi Hirai, who spent nearly 30 years working with traditional Japanese cuisine, opened his shop six years ago after deciding to re-imagine m a r u te n b a s e d o n his experience with shinjo—a classier kind of fishcake used in traditional meals. He now offers ten kinds of maruten, including the highly popular yamaimo tororo (grated glutinous yam) and more off-the-wall selections like bacon and green shiso. The secret to his light, fluffy maruten is nothing more than meticulousness: he only fries the fish paste after you place your order. Since the shop's move to Hakata last December, it has been procuring its noodles from Horino, a popular udon restaurant in Nakagawa-machi. If you find yourself nearby, be sure to stop by and try this tasty combination.

The history of Nagasaki Kunchi stems back to the Edo period. Held every Autumn, the three-day festival began when two performers dedicated a new dance to the Suwa Jinja Shrine in 1634. Try the mentai butter or the ratatouille bruschetta topped with Itoshima veggies (¥250 ea.). With only nine seats, you may end up standing, so have wine or sake while you wait. 서드 플레이스와 스페셜티 커피, 커피 컬처를 융합한 후쿠오카발 카페 마누 커피가 올해 7월 새로운 점포를 오픈했다. 건물 1개 동을 통째로 리뉴얼해 만든 널찍한 공간이 편안한 느낌을 주는 카페 내부에는 새로 추가된 롤링사의 대형 배전기가 자리하고 있다. 직접 생산자를 찾아가 구매해 온 커피콩을 저마다의 개성을 살려 정성껏 로스팅한 마누 커피는 원두의 맛이 있는 그대로 추출되는 프렌치프레스로 즐겨보기를 추천한다. 쿠지라점에서 로스팅한 원두 쿠지라블렌드는 구입도 가능하니 참고로 하시길.
