Leasa Harris, along with an incredible group of local Port Macquarie community members, recently participated in the Tour De Rocks bicycle ride to raise funds for cancer research and to support families going through cancer.

i guys. ARTWALK is back and so is TORTUGA. For our readers who haven’t had the pleasure of meeting you both, can you introduce yourself and tell us about your connection with the Hastings region?

Hello! First and foremost we are a local family. Gordo grew up here and we moved back in 2019 just before our son was born. We are circus artists and have worked in the arts and entertainment for the last 1520 years, travelling the world performing amongst other things acrobatics, whip cracking, lasso, knife throwing (Lucy) and sword swallowing, chainsaw stunts and record breaking feats of amazement (Gordo). Gordo has 13 Guinness World Records to his name, including for World’s Strongest Tongue (he pulled a car with it!). We’ve performed at some of the world's greatest venues and events including National Theatre, London, Glastonbury Festival, Burning Man Festival USA, cabarets in Berlin, a stadium in Japan - you name it! We are the directors of TORTUGA Festival which premiered last June

at Westport Park and is set to come back later this year.

You are both heavily involved with this years ARTWALK event, what will onlookers get to witness with your performances this year?

We are delighted to curate Murray Street in the CBD for this year's Artwalk, and we’ve brought together some of our favourite performers from around Australia and locals from our region to bring it to life.

TORTUGA favourite Elle Diablo is coming back to Port with her incredible fire performance alongside local Bethany Cook. I’m super excited to welcome award winning circus artists Hannah Cryle with her German Wheel and Josh Weeks performing acrobatic ladder tricks for our street circus shows.

We’re proud to feature some local artists, DJ’s and musicians playing on our rooftop stage including fabulous drag queens from our friends at Out Loud & Proud and Brian and Neroli Cousins. Brian is the former pianist from the Australian Ballet and Neroli brings some killer jazz vocals; not to be missed! Continued over...

Where did your love for performance come from, has it always been what you have wanted to do?

I performed from a young age, learning gymnastics, dance and music whilst I was at school but eventually studied Performance Design and Management specialising in Set Design for theatre. It gave me a great grounding for how to put on a show, managing budgets, building stages and it really set me up for producing our own festival. Gordo got into youth circus here on the Mid North Coast with an incredible social arts org Slippry Sirkus.

Tell us about growing up and school, was drama your favourite subject?

I did enjoy drama but I preferred dance and gymnastics, so circus was an obvious choice! I love the sense of escapism that all of the arts give to an audience, that you can leave behind the every day and experience something magical.

How long does it take to prepare for

events and festivals such as ARTWALK?

A lot longer than you might imagine! For Artwalk we have spent around six months curating the program, booking acts and ordering materials and equipment. For TORTUGA it is a year minimum. There’s a lot happening behind the scenes!

Why do you believe that these events are so important not only for our town but for the performers and exhibitors?

Port Macquarie has the most stunning beaches and nature in our hinterland; why shouldn’t we aim to be the best arts and culture destination as well? There are so many talented artists of many disciplines here. It’s important to connect with new audiences whether you are a painter,

musician, dancer or acrobat. The joy of seeing something live and of sharing your work with an audience is out of this world. Bringing people together. You can’t beat it.

What else is on your calendar for the rest of 2023, will you be doing any more TORTUGA shows?

Gordo came up with the name. It is Spanish for turtle and stems from an island in the Caribbean where Blackbeard and his pirate comrades would go to set aside differences and collaborate.

We are working hard to bring TORTUGA back 22nd September-8th October 2023, during the school holidays. We have some favourites from last year returning and some brand new acts and we can’t wait to share the program with you.

As a coastal town we wanted something with links to the water, and the idea of outlaws, people who are maybe a little bit different coming together to celebrate links to our vision of inclusion and the community being at the heart of what we do.

When putting a show or performance together what are the key factors you take in to consideration?

The main thing is finding artists that you

find incredible and unique, and giving them the opportunity to shine- awesome music and lighting, a beautiful venue, a stunning location…

Something else I think Gordo and I always remember to do is to check in with the audience experience right from when they enter the site- the box office, festival site and even the bar needs to have the wow factor so they can feel the magic right from when they arrive.

What advice do you have for other performers and even school leavers who

are wanting to pursue a career in the arts?

Get as much experience as you can- volunteer for local organisations, put on your own school plays and see things! Don’t limit yourself to a genre- plays, dances, opera, circus, amateur dramatics, music. Soak it all in. Take part in workshops. Find mentors. The best advice one of my mentors gave me is “back yourself, babe”. Easy to say and harder to do. Believe in your art, and the rest will follow.

ST JOSEPH’S REGIONAL COLLEGE PARES

TRACY

Tracy Pares is a Visual Arts teacher at St Joseph’s Regional College who applied for and SECURED A SUCCESSFUL GRANT TO HAVE WELL KNOWN CONTEMPORARY ARTIST, BRADLEY EASTMAN AKA BEASTMAN, ATTEND THE COLLEGE TO HOLD WORKSHOPS WITH THE STUDENTS AND PAINT A HUGE WALL MURAL ON COLLEGE GROUNDS. The experience has been inspiring for the whole school community and they now have a beautiful artwork to admire for many years to come.

Hi Tracy. Can you tell us about how the idea for this project came about and what inspired you to apply for the Arts Partnership Grant?

For a long time we have taught a Year 9 unit on Australian Street art and we discovered the work of Bradley Eastman, aka Beastman, whilst resourcing this program of study. We have used his work over the years to create large collaborative student artworks so when I discovered that he was working with schools and simultaneously discovered that

Our College is privileged to showcase a wonderful work of art designed and created by the talented Brad Eastman. While “Beastman” has created a unique and stunning addition to our environment, our Visual Arts students involved in the process should be very proud of their contribution to the project. Congratulations and thank you to Mrs Tracy Pares for facilitating this amazing experience of bringing learning to life for the students of the College.

Brad stepped them through his creative and technical approaches, and they workshopped to develop visual responses to our College and local environment.

the Catholic Schools Office Lismore was offering applications for an arts grant, it felt serendipitous. Our College Principal, Mrs Tanya Daley was such an enthusiastic supporter that it was, “yes” from the first conversation. How did you decide on Bradley Eastman, aka Beastman, as the artist you wanted to work with for this project?

As soon as we found out that he was available for this project, there was no question of it

being done by anyone else. As a Visual Arts team, Renee May, Toni Howard and I have loved his striking, unique art for several years.

Can you tell us a bit about the workshops and what the students worked on?

Brad was awesome with the students. He ran two workshops. The first was with a Year 11 Visual Art class. After Brad stepped them through his creative and technical approaches, they workshopped to develop visual responses to our College and local environment. Brad used these designs to inspire his own work. He also worked with an enrichment group of Year 10 students who learned the practical

skills associated with spray paint art. They produced beautiful finished timber panels of which they should be very proud. A few students have since been experimenting using tapes and masks and spray paints to produce more artworks.

What do you hope the students will learn from working with Bradley and participating in the workshops?

Brad was incredibly kind, professional and very, very hard working so apart from the very cool media skills, I really hope that they look to the work of a practicing artist and apply the same dedication and integrity to their own creative work.

How do you think the large wall mural will impact the school community and the wider public?

Already it has generated interest from staff and students alike. We all watched in awe as Brad turned this giant blank ‘canvas’ into a truly gorgeous work of art that will enhance our learning environment for many years to come. Behind the scenes, he was a hot topic of conversation; how does he do that, did he come with a plan, what inspires his designs, are you sure that he will finish on time? In students and staff alike the mural sparked our curiosity and our engagement with our space. It is so bright and beautiful it has completely altered the playground area.

What have been some of the most challenging aspects of planning and organising this project, and how have you overcome them?

The grant application was extensive and a lot of the detailed work had to be done before we even knew whether we would actually be successful or not. The school walls were painted in an anti-graffiti coating so in order to prepare them we had to have them cleaned first and then primed. Of course, coordinating around a school timetable for an artist to run workshops required planning and applications,

so whilst nothing was too overwhelming, there were lots of small jobs.

Can you describe the process of collaborating with Bradley to design and plan for the mural? What was the brief and where did the inspiration for the piece come from?

Really, Brad pretty much insists on artistic autonomy, so whilst we collaborated with him to produce ideas for the design, the final product is all his own work. He worked with senior students to collate ideas about our relationship to our immediate college environment and then extended that to ideas about our region, so we can see symbols of our college and local landmarks hidden within the artwork.

Can you tell us a bit about the week that Bradley was at St Joseph’s Regional College and what it was like for the school community watching his work come together?

Brad was awesome, he did meet and greets, student workshops, assembly presentation, student podcast interviews and an unveiling. He fitted all of this around painting that huge wall

which was very impressive. The students watched and often wanted to ask questions or have a chat, which he also managed to do.

How do you think this project aligns with the goals and values of the Visual Arts program at St Joseph's Regional College?

At St Joseph’s Regional College, we work hard to provide learning environments that are engaging, inclusive, intentional and that utilise collaboration and community. This mural brings joy and creativity into our physical space and the designs remind us of our beautiful school and local environment, hopefully fostering a sense of stewardship and care for both.

How do you envision this project inspiring or impacting other schools and communities in the region?

We would love to see other schools who are doing similar units come to see our beautiful mural and potentially use it as a springboard for their own designs. Of course, if the opportunity was available to apply for grants or funding I would highly recommend it as a way of building culture and creating a community of creatives in schools.

You both have a love of luxury when it comes to driving in style and comfort. What are some of your favourite features of the Discovery Sport?

We love our Disco Sports! Both sides of our business – property staging and interior design – require us to fit a lot into our boots, from bags of linen and tubs of décor items, to large flooring and tile samples. It’s surprising how spacious yet compact our cars are in design.

Our Discovery Sports also came with 7 seats, perfect for playing taxi to our children. The panoramic sunroof adds that extra little luxury.

What is it that has drawn you to the Discovery brand in comparison to other offerings on the market?

Before purchasing our new business cars, we did a lot of research, looking at all options within our budget. Our decision came down to price, look, and practicality. Ben and the staff at Port Macquarie Land Rover have been an absolute pleasure to deal with. The staff are very knowledgeable, professional and always willing to go above and beyond.

What is on the horizon for both of you in the second half of the year?

Our business is growing at a rapid pace, which is really exciting! We are looking forward to attending design expos towards the end of the year – it is so important in the design industry to continually learn and research new products and finishes that we can offer our clients.

We are also focused on growing our property staging business, investing in beautiful new stock, and ensuring the properties we stage continue to have the ‘wow’ factor!

This year was the 10th year the tour has run and they have raised a whopping $1.8 million over that time!

i Leasa. You recently participated in the Tour de Rocks, can you tell us what this event is all about and how you heard about it?

The Tour De Docks is an annual event, held every April. It is over 3 days, usually Armidale to South West Rocks but this year it was an Armidale round trip due to road closures caused by the floods. The ride is 230km with 310 riders and 110 support crew with nearly 4000m of elevation across 3 days! We ride through private properties and great dirt roads raising always much needed funds for cancer research and community programs with funds going directly back into our local communities.

I came across an ABC documentary on a similar ride some time ago by accident, and watched the entire documentary in tears. Weeks later local legend Mel Cockshutt said

she does this amazing ride and asked a group of us if we were interested and I signed up straight away. It was meant to be.

What was your personal motivation for participating?

Like all of us, many loved ones are fighting, winning, and losing their battle to cancer. It was gruelling, but I thought 230 km is nothing compared to what loved ones and cancer patients have to endure for months and years on end.

Who went on the ride with you? What was it like being out on the road together?

We had 15 amazing people from Port Macquarie participate. Haley Hyde from H-Fit took a small team, and we joined the Faircloth and Reynolds team of 60. I was lucky enough to have Mel Cockshutt coach and lead us, Sue and Paul Joegever, my sister and brother-in-law Piet and Amanda Verrijdt, niece Zahra and Haley and the H-Fit team by my side.

Can you tell us a bit about where your ‘tour’ took you?

The ride is beautiful, through private properties and mostly dirt roads only crossing onto major roads on occasions. In previous years it was Armidale to South West Rocks but due to the road closures with floods the

ride took us through the stunning New England region. Armidale to Wollomombi on the first day, second day an incline most of the day Woollombi to Guyra and 3rd day Guyra back to Armidale finishing at University of New England to celebrate.

I hadn’t ridden a bike long distance in about 10 years. Prior to this I did have some road biking when completing a few triathlons.

To be honest not enough bike training haha. Mel Cockshutt gave us a great program which I will be sure to follow next year! Now after completing the ride, I would recommend a ride or 2 every week a few months out. I have been training with team BodyFit 2-3 days per week over the past 2.5 years so a lot of thanks goes to the team for keeping me cardio and strength fit. Also PT training with Lisa Briscoe last year, I wouldn’t have finished without this. Did you have much experience on the bike before this?

How did you train for the event?

It is a ride anyone could be a part of with a little training beforehand. The ride attracts all ages and abilities due to the wonderful cause we raise funds for. It’s not a race and we all finish together and help each

other along the way. How did you stay motivated during the ride and in the lead up?

Our local Port Macquarie team kept us motivated. We had a team Whatsapp group and some of the team would ride weekly together. They kept my nerves calm leading up

to the ride.

Could you tell us about the money raised and how this will be donated?

An unforgettable experience with so many amazing humans. The stories of strength and generosity are ones I will never forget.

This year over $150k was raised. This was the 10th year and a total of $1.8 million has been raised over the 10 years. It’s incredible. All money goes directly back to regional cancer support programs and locally funds have been donated to the Mid North Coast Cancer Institute and to Camp Quality to hold a camp in Bonny Hills over the years. Every entrant can fill out a form for assistance for their chosen local group or program and a panel elect where the funds are distributed. What kind of an impact do you hope to see this event have in the community?

We had a dinner in Armidale the evening before the ride to celebrate the 10th year. We heard stories from local families across the region that have benefited from these funds. Families that have had to pack their lives up

overnight and move to Newcastle or Sydney to the Ronald McDonald House for treatment for 12+ months. The impact that has been made to these families and groups was nothing short of incredible. I didn’t have a dry eye all evening. Hearing these stories was heartbreaking but also so inspiring to help and know we are making a small difference to so many cancer patients and their families. Also knowing we are helping in finding cures and preventives. What have you taken away from this whole experience?

An unforgettable experience with so many amazing humans. The stories of strength and generosity are ones I will never forget. It is warming knowing that we have made a difference to local communities and families. I can’t wait to do it again next year. You see for the past 5 years, I’ve been struggling with a poorly designed, 35 year old wardrobe. I’ll set the scene for you… in order for me to see what’s on a shelf I needed to literally don a miner’s head torch and do a deep dive to find what I was after… it hasn’t been fun.

So as the cooler months began to roll around and I embarked on the annual “out with the shorts and tee’s, in with the jeans and knits” ritual, I decided this year was going to be different. I googled wardrobe design, watched as many Marie Kondo YouTubes as I could and finally found a set-up that would suit our oddly shaped room.

After approximately 2 weeks of teeny tiny screws being assembled into multiple IKEA flatpacks, my new wardrobe was ready! And what a transformation it has been, on so many levels. When I was first approached to contribute an article each month for this magazine, I surveyed friends and family as to what they would like to read about. To my surprise, so many people said “Tell us how to create the ultimate capsule wardrobe”. Now if you’ve read my articles to date you will know that I have touched on lots of topics, but capsule wardrobes have never made an appearance, yet.

Like with anything I decide to write about, I need to feel it first. It’s funny how things snowball isn’t it? After our wardrobe renovation, it was time to fill it! Now this is

the fun part, you might think… “Imagine what Lusanna’s wardrobe looks like, it would be amazing?” And don’t get me wrong, it is amazing, but it was how I filled it that got me thinking about capsule wardrobes, why people are intrigued by them, and what makes one successful.

The reason I have hesitated talking about capsule wardrobes for so long, is that in reality the best capsule wardrobe looks different for everyone. Do you have a day job? Are you office based or home based? Are you a mum of young children? Perhaps you are on grandma duties 3 days a week, or you might lunch with the ladies 3 times a week? Can you see how each lifestyle calls for a completely different capsule? Having said that, there are rules that can apply across the board.

My key considerations when compiling a capsule wardrobe are:-

Identify your favourite (most often reached for) items. Start with well fitting pants for both casual and smart casual events, classic high quality basic tops including a shirt (in both neutrals and your most flattering colour). If your lifestyle calls for it, a tailored jacket in a neutral colour and one in your ‘go to’ colour, or a well cut flattering denim jacket for casual events.

Accessories can really elevate a classic capsule wardrobe. Think colourful scarves, necklaces, earrings as well as a fun handbag or two. We really do get to have all the fun don’t we?

Footwear really needs to suit your lifestyle. White joggers are all the rage at the moment, so run with that (just make sure they are white still… no-one likes a dirty runner!). Loafers are also a comfortable, chic option which can work back with so many looks in your wardrobe. My favourites are timeless neutrals and my leopard print ones from Aussie brand Millwoods. Finally, we all need a good set of heels that we can actually stand in (height to your preference, just find a good go to!)

For me, the biggest key element of a successful capsule wardrobe is making considered choices and buying the very best quality you can afford. Cost per wear is a great way to think about value when it comes to buying wardrobe staples. Invest in the pieces you will wear the most and they are guaranteed to stand the test of time.

Players Theatre Inc are proud to announce the return of their One Act Play Festival held over the 9th, 10th, 11th of June. The festival can be likened to a short film festival with nine short (30-40 minute) plays staged over four sessions.

This year’s vibrant festival has come about with great community support and a dedicated group of volunteers.

This festival depicts the heart and soul of our community theatre that welcomes groups from all over the state as well as interstate. There is always a sense of healthy competition between groups and individuals, however the main ingredient is the comradery of the participants who are happy to share their experiences.  The concept of the festival is to provide

groups with a blank stage for 60 minutes to set up and perform their play. This is often the first opportunity for budding actors, directors and writers to show their skills. This year there is no less than seven unpublished original scripts. None of this would be possible without the generous support of local sponsors.

FOCUS chats with Nathan Ferrett, Head Chef at Wauchope Country Club about their exciting new menu, his team and his passion for cooking

Please introduce yourself to our readers and tell us how long you have been the Head Chef at Wauchope Country Club?

My name is Nathan Ferrett, but everyone calls me Fez including my exceptional team and workmates. I’ve been Head Chef at the Bowl ‘n Slice in Wauchope Country Club for the last six months. This is my first leading role as Head Chef, I was previously Sous Chef here for two years before coming into

this position.

With winter just around the corner, what exciting new winter warmer dishes are you bringing to the menu?

We introduced an Autumn Menu last month including our Massamum Curry and Garlic Curry Prawns, Pork Belly, Shanks, Hearty Stews, Daily Soups and Curries. Plus we love mixing things up daily with continuous changes to our specials board, giving my team and I a chance to explore and experiment.

Tell us about your role in the kitchen, what does a typical day look like for you?

I’m currently leading a team of 8 chefs including two apprentices. We have a great team and all work well together. There really is no typical day for me with continuous menu and specials board changes and there is a new challenge every day, but my team and I always strive to overcome the challenges we face.

Where did your passion for cooking start? Take us back to the beginning of your career?

My passion for cooking started when I was young when I would go to my grandparents

in Newcastle with my brothers and sister. Watching my Grandmother cook (spaghetti bolognaise), Grandma’s was the best! I started as a kitchen hand at Café Margo’s 23 years ago, then began “picking up the tongs” and worked my way up from there.

For those who haven't been to Wauchope Country Club can you describe the atmosphere and lunch/ dinner options?

We are a small club which offers bowls and golf and are very much a family orientated club. We currently offer trivia, raffles, kids eat free, poker and great function facilities.

We are also very excited about growing our food offering after taking over all food in the club in 2021.

You offer breakfast on special days, can you tell us about this and other special functions and events that you can offer our readers?

We love celebrating our mums and dads with brekkie on their special day but we have a great venue for weddings, birthdays and special events too. Our facilities are not brand new and sparkling but we make up for it with great food, amazing outlook and customer service that makes our guests want to come back again for more.

What sort of food do you like to cook?

I am very passionate about cooking and like to make everything from scratch. I love cooking a mixture of international cuisines and influencing flavours using fresh and local produce. The cuisines that have had the most influence over me and my careers as a chef would have to be French, Italian, German and Spanish.

Dylan Gaul, a Mid North Coast based Graphic Designer has been in the creative game for 18+ years. HE HAS BEEN QUIETLY STACKING A PORTFOLIO OF FOOD AND BEVERAGE PHOTOGRAPHY OVER THE PAST COUPLE OF YEARS and we caught up with him to find out why he's adding another string to his bow.

Hey Dylan, can you share your background and how you got started in food photography?

Hi, I always enjoyed art and cooking/food tech when I was in high school I've always just loved food and art. I left school in Year 11 to become an apprentice chef, I made it 3 years. I saw a job on Seek as a junior graphic designer and so I applied with my Year 11 Art Book as my main pitch. Jay Beaumont, the Art Director at the publication wasn’t impressed, but he gave me a shot. I had a Nikon D700 (entry level camera) and I dabbled in scenic photography. When Jay and Louise started Focus, as well as designing, I would take photos at restaurants for the dining guide. I used natural light and I thought the images were great, but looking back they were pretty ordinary.

A few years later Jay wanted to publish a cookbook “100 Dishes of the Pacific Coast”, 50 restaurants from the Central Coast to Byron Bay. I knew I had to level up for this assignment massively! I researched and studied studio and natural lighting techniques. I hired a Nikon D4X, purchased lights, and I started shooting at home. Once I had enough experience to do the job (just), off we went, up and down the coast, one massive learning adventure!

What drew you to food photography specifically? What makes it unique compared to other genres of photography? My childhood and always helping my Mum cook is what probably sparked my interest in food at a young age. We had a cool countrystyle home and kitchen that my dad had built. I just loved being in the kitchen and around food. Looking at cook books, I've always found them so interesting; the styling and the lighting. People may look at the image and think "oh that looks nice" but for me I just love studying and dissecting it, the composition, lighting and shadows. Everything about an image is deliberate and thought out, a simple image can often be the hardest to make. It just really intrigues me, I haven't given other photography too much thought, I'll be happy here staying in my lane of Food and Beverage Photography.

What role does lighting play in your photography? Can you explain your preferred lighting techniques and equipment you use.

Lighting is everything. I used to shoot natural light, but I control the lighting now, which is extremely important when getting the highlights and shadows just right and it's not a "weather permitting" kind of deal. Depending on the mood the client is after, there are many ways to push light in and take light out. If we want bright and summery we've got that, if we want dark and moody, we can do that. There are endless ways to light food. I'm really lucky to work with a creative group of people who love to share information and help each other and let me know if something is not quite right and how to fix it.

The camera, is a Canon 1DX Mk ii, a pretty serious weapon in the right hands. All pro portable studio lighting, and a lot of other things that I use to get the images you see here, but I won't bore you with that.

Food styling is an essential aspect of food

photography. How do you collaborate with chefs to create visually appealing compositions?

I'd never claim to be a full blown stylist, brushes, glyceryn, toothpicks and all that kit. At the end of the day, we’re making images of what people expect to see on their plates when they go to the establishment. My job is ensuring it's represented in its best possible light. I did a shoot for Pizza Obsession that was heavily styled. I do enjoy it, it just takes time, thought and a planning for a styled shoot. What challenges do you face in food photography, and how do you overcome them?

Every plate is different and most venues have different lighting, that is all overcome with lighting. You've always got to find the best angle and light for the dish to be best represented. I take my mobile studio everywhere, so we always have options. Whatever the challenge, a solution will be found.

My job is to make people want your food, get people into your venues because they need to eat what they've seen, I want people's tastebuds to start tingling when they see my images.

What would you say makes a great food shot?

So many things. The subject, lighting, aperture, angles, backgrounds, a touch of styling goes a long way, and I'm not just talking a knife and fork next to a plate...

My job is to make people want your food, get people into your venues because they need to try what they've seen, I want people's tastebuds to start tingling when they see my images, people eat with their eyes, first. Everything in the image should make sense and look like it has a purpose and belongs. Food needs to look natural. Making this happen takes a bit of work, I don’t just rock up and point and shoot. I study the entire dish, menus, scenes and frame it as if it's art, because it is, food is a chef's art!

I love moody shots, but I'm very versatile and at the end of the day, I’m a foodographer for hire, so whatever the client wants is what they’ll get. You are not only a food photographer but also spend much of your time as a graphic designer. How do you find those roles work with each other?

Graphic design has been my career for the past 19 years. I started as an intern (if you’d call it that) with Jay Beaumont when I was 18. I knew nothing about computers, I just went for a job as a junior graphic designer. After eighteen years of learning from one of the best in the business, I’m still working with Jay as a contractor and Art Director at Focus Magazine, so I’m glad he stuck with me. I've had the opportunity to work with large and smaller brands locally and interstate and large hotels including their bars and restaurants.

Photography and design go hand in hand. I do a lot work for hotels and their restaurants, pubs and clubs, so picking up the camera and making their own images instead of using stock is just a lot more beneficial for the venue and their patrons. A good image can lay the groundwork for an awesome

promotion, social post, and get bums on seats, which is the goal, right?

I’m also lucky to work with a bunch of creatives from designers to photographers and videographers that I'm in contact with daily. We bounce ideas and critique each others work. Having people who do awesome work and push you to better yourself to alway level up is a true blessing.

Do you have any favourite techniques or tricks to make food look more appetising in photographs?

The chef is the artist. I'm here to showcase their food in a way that makes people want to stop what they're doing and go and eat it, or at least get people tagging and saving the date to go and try the food they see. The only real tip/request I ask the chefs is to pick the “face” of the dish and ensure I’ll be able to pick up all of the stars of the dish. I’ll give an example of how we used to do Chow Haus’s imagery. Chef Matt would build the burger as high as possible to give it a grand stature, make sure all the ingredients can be seen, and pick the "face" of the food, the best angle, the one that has all the goodness showing.

What is your favourite dish you have shot so far, and what made it so good?

Not one, but a lot of the stuff I did for 100 Dishes, as it was such a great learning experience. We got some really nice images for someone who’s just picked up a camera, it was a real adventure! Some of the stuff we did at Chow Haus was pretty fun. I’ve had the opportunity to work with so many awesome chefs it’s hard to choose one.

Are there any photographers or artists who have inspired or influenced your work in food photography?

David Loftus was the first food photographer I ever studied. When Jay said, “figure it out” for 100 Dishes, I thought, right, who has awesome food photos? Jamie Oliver, ok, who shoots his food? David Loftus. I watched every informational YouTube video I could find on him, he was my inspiration for 100 Dishes. Now with Instagram, every day I see images and study the lighting and try to figure out how they did it. I'm always looking to get better every day and with every image.

What advice would you give other photographers looking to get into food photography?

Just start, pick up a camera, surround yourself with like minded creatives, not just people who always tell you your work is great. Critique is sometimes a tough pill to swallow but if you can take it on board, you will grow your skill. Watch and learn as much as possible, make food at home and take photos of it and know your craft before you ask people to invest in your skill and art.

Combine all the liquid ingredients into a shaker with ice.

Shake well.

Whether it’s trusted brands on every supermarket shop list, to that place with the best coffee in town, or perhaps that most dog-eared or food-stained page in your go-to recipe book, we humans are indeed creatures of habit and very biased toward ‘better the devil you know’ than the mysterious alternatives….

In the restaurant scene, these folks are known as ‘the regulars’. Having found that special something within the dining experience at hand, they become part of the fabric of the place and the vibe, sometimes to the point of even influencing menus and perhaps even having cocktails named after them….

For those of us that work in the industry, the regular is to be celebrated and revered. A truly great restaurant team really knows and understands their regulars – some would argue to the point of an intimacy greater than that of their nearest and dearest loved ones. Being aware of not just dietary and beverage preferences, but the very table and seat position favoured, birthdays, anniversaries, kids names and the pace of the dining experience. Whether or not to initiate conversation or to give some space – all the way down to an awareness of social nuances and political leanings…who not to seat next to, hobbies and passions to converse about and topics to avoid.

Wonderfully, this type of intimacy is often entirely mutual. One can be a waiter yet also a human, whilst maintaining an always professional level of service but also being able to share a genuine laugh with, a real conversation and not just garden variety small talk.

This is a truly special form of human interaction and one to be nurtured at all costs. It can be mutually beneficial to both parties and then some.

Keeping our regulars coming back is our most powerful indicator of whether what we’re

doing continues to be good or not.

When those happily, familiar faces walk through the door it reinforces all the good bits about why we do what we do – feeling like we’re on the right track, that we’re continuing to get it right, that we’ve genuinely made an impression. And above all, that we’ve genuinely created a tiny bit of happiness in the world, not to mention making great friends in the process.

Having the enormous privilege of getting to know some spectacular humans through one’s occupation and striking up a true friendship as a result is one of the great delights of life.

So what can we do to keep our regulars regular? As a general rule, if it ain’t broke don’t fix it works a treat, but it doesn’t hurt to add a special touch here and there. We humans appreciate being seen, and when somebody takes the time to remember what we do and don’t like it really resonates.

Really, it all boils down to the fact that each and every guest is as special as the next. We’ve got a whole lot of love for those who are visiting us for the very first time too –hopefully they are those that might become the very next regulars!

Hi guys.Can you tell us a bit about your background story, how you each came to love country music and started performing?

MELANIE - I grew up on a sheep and cropping farm in Mount Russell in the New England Region outside of Inverell. I picked up a guitar at 12 years old and wrote my first song called ‘Life On The Land’ about growing up on the farm and I took my songs to Tamworth Country Music Festival as it was only a couple of hours away. I fell in love with country music because my Mum played artists like Shania Twain, Faith Hill and Keith Urban around the

house and it came really naturally to me when I started writing songs. My style is a fusion of country-pop and I have released an EP and 2 albums to date with plenty of new music on the way!

JACKSON - I was brought up in a very musical family and began playing guitar at a young age. My Dad, uncles, aunties and grandparents were all huge country fans and musicians and often threw parties getting everyone up on stage. Performing originals and hits from the country greats, country was all we ever listened to. Growing up in Port Macquarie we are blessed with having the coast and country in our backyards so my style began morphing between my coastal

influences (Jack Johnson, Pete Murray) and the music that was ingrained in me from my youth. I started performing professionally from 17 and have clocked up hundreds of gigs locally and around Australia.

How did you guys meet?

MELANIE - We met at the Tamworth Country Music Festival about 7 years ago and became friends. We later reconnected when Jackson came along to one of my music video shoots and helped out on set. We just share so many passions and align in so many ways. We soon realised it was more than just a friendship and we are so lucky to get to do this life together.

You have both been touring a lot over the last couple of years, what are some highlights from the shows you’ve performed?

MELANIE - For me it was playing mainstage at CMC Rocks in September 2022. It was amazing to be up there with the band and sing all the tracks off my latest album and have the crowd singing it back. It’s such a surreal thing! Another highlight was travelling out to the Big Red Bash in remote Birdsville. Jackson got to be up on the stage with me for my set and it was such a special moment to get to experience together. Singing to a crowd of 10,000 in the middle of the red dirt outback was a bucket list moment. I have also played

at Nashville’s iconic Bluebird Cafe a couple of times and there’s something so iconic and special about playing at that venue!

JACKSON - Touring with Mel is literally a dream come true. It’s a rollercoaster lifestyle and would be impossible on your own, so getting to experience it all together makes all the huge travel days and late nights worthwhile. Last year we travelled to the outback to perform on the Big Red Bash stage with Missy Higgins, Jon Stevens, Midnight Oil, Jimmy Barnes and Kasey Chambers to name a few, the Big Country Festival in Berry, a regional fifteen date tour and a highlight was performing at CMA Festival in QLD to huge crowds alongside some of the biggest names in country music and toured with Seaforth an Australian band based in the USA. Another tour towards the back of the year with many more songs in the making and hopefully see you guys at a festival or two. Continues...

You are both separate artists but you work together a lot, what do you enjoy about working closely together on so many projects?

MELANIE - We are incredibly lucky to get to work together. In an industry where there’s a lot of pressure and moving parts, it’s so amazing to have such a supportive and talented person by my side to not only perform on stage, travel and create with, but to share the ups and downs and create amazing memories with too.

JACKSON - We are both highly creative people and absolutely love it. This is great for creating so much original content but also a curse. We have a recording studio in our house, all my video production equipment and no off switch! Haha. We are so similar with both sets of eyes on the prize so it’s easy to live and work together. Melanie knows exactly what she wants and I do my best to bring her visions to life. We record each other, produce music videos, social content and all artworks in

house. I’ve never worked harder in my life but also never been happier doing anything else. This is the key, sharing it with someone equally passionate about the work and building a life together.

Can you each tell us a bit about your creative process from writing a song to having a finished piece?

MELANIE - My inspiration comes anywhere, at any time, often when I’m driving or travelling. I’ll just keep a collection of notes and voice memos on my phone and when I can I’ll sit down with the guitar and it usually comes to me. From there it’s on to recording in the studio. I love the process of co-producing and bringing a song to life from scratch. Writing songs is a huge part of what I do. I’ve been writing songs since I was 12 years old and I’m lucky now to not only write for my own

releases, but for a lot of other artists too. That’s something I’ve been doing a lot more of in the last couple of years.

JACKSON - When it come to the creative writing process we are very different. Melanie is a great storyteller, lyricist and singer so often her ideas stem from a song title or intriguing melody. Myself having more of a music/ production background I tend to write music first to get a vibe and then write melody and lyrics from there. I find the music can tell you a story without any words so this often helps me understand the direction of the lyrics. From here the real work begins, getting into the studio with a producer and crafting the entire arrangement, instrumentation and energy ready for radio.

Where does a lot of your inspiration come from?

MELANIE - For me it’s real life; people, love and heartbreak. I also get inspired by writing with others. Collaborating on ideas keeps my mind open and pushes my boundaries as a writer and artist. I also get a lot of inspiration from listening to all kinds of music, new and old.

JACKSON - Inspiration comes from many different places. As any creative will tell you, it comes and goes; when it’s on you’re flooded with ideas and when it’s not you may as well go fishing. I always feel charged and inspired when I’m not overthinking it, when I’m out playing shows or surrounded by like minded people doing what we do. A great movie or well written line in a song can really spark new ideas and different ways of looking at a subject.

Jackson, your debut single came out on May 12th. Can you tell us about the song and what we can expect from you in the coming months?

I’m really excited to share this one with everyone. The song is called “Get Around To It” which is ironic as it’s taken me way too long to get around to releasing my own music. The

Mel, you have a new single just out that is racing up the charts, along with a beautiful acoustic video version and music video on the way. What sort of response have you been getting to your music recently and what’s next for you?

The response to my new single ‘Song For That’ has been really great. I’m proud of this one that I wrote on my own. Everyone associates memories with a song or a soundtrack that takes them back, that’s what this song is about. It’s currently working its way up the country radio chart and after only 2 weeks it’s in the Top 30 and has been streamed over 160,000 times on Spotify and Apple music. The acoustic video was filmed with Jackson and I down south of Port Macquarie in a secret location. You can check it out on Youtube or my Facebook page. The official music video will also be coming soon and we shot parts of that, plus the official artwork and publicity photos at our local record store in Port Macquarie; Dark Alley

You guys have some more touring planned for this year, where can we expect to see you performing over the coming months?

MELANIE - I’m so excited to be heading to Nashville to perform for the first time at the CMA Festival. We are also heading to Big Red Bash in July and Mundi Mundi Bash in August! I have more shows coming up that will be announced later this year and hopefully Jackson and I will be out there sharing our music together!

JACKSON - We are off to Nashville Tennessee at the end of May. Melanie is on CMA Fest alongside the biggest artists in the world and I can’t wait to be there playing guitar and being a part of it all. We are in Nashville for one month where we will also be doing a few side shows, writing, recording and hopefully catching up with good friends and doing a road trip or two. After Nashville we are back to perform at the Big Red Bash again, Mundi Mundi Bash, Great Keppel Island and maybe another tour towards the end of the year!

The Heat the Homeless appeal was founded in 2016 by one of our founders ‘Unc’ Bill Dalton. Why was it important to you to take action and be a part of this initiative?

With an estimated 278,000 people across Australia classified as homeless and predictions that homelessness could surge by 9% in 2023, and with winter now officially beginning, it's more important than ever to do what we can to make a difference by donating.

We all have some old warm jackets in our closets and we believe that these jackets deserve a second life which in turn reduces

the impact on clothing ending up in landfill. We aim to collect as many warm, waterproof jackets as possible and get them to people where they can make a difference to the lives of our friends living on the streets.

Can you tell us about the impact that the Heat the Homeless appeal has had on the community since it began in 2016?

Heading into the eighth consecutive year of Heat the Homeless we have estimated that over 23,000+ jackets have been collected and distributed across Australia and the globe.

We have assisted not only those living on the streets but also those who were faced with the bushfires, floods and more recently when we sent a shipping container of donations to Ukraine for families in need.

How does the appeal work, and what steps do you take to ensure that donations are distributed effectively to those in need?

XTM Performance works with participating retailers to act as donation collection points for pre-loved clean and warm jackets with donations being distributed to the homeless or those in need via a network of up to 4,500 charities, led by our primary beneficiary Australian non-for-profit GIVIT. GIVIT channels generosity where it is needed to support vulnerable people and communities in Australia – whether recovering from an emergency event, or experiencing hardship due to circumstances such as drought, domestic and family violence, homelessness, disability, and mental health.

What kinds of snow jackets are you looking for, and how important is it that they be clean and in good condition?

We are asking the community to donate their quality and preloved adults and children’s jackets. It is important that they are waterproof, clean and undamaged items, this will ensure those who receive them are protected and a little more warm and comfortable against the harsh conditions during winter. A general rule of thumb is to only donate items that you would be happy to wear yourself.

How do you work with participating retailers to encourage donations and raise awareness of the appeal?

A partner since 2017, Anaconda stores across the nation will act as collection points for preloved snow jackets, with donations distributed to the homeless with the support of a network of up to 4,500 charities. Those without a pre-loved item of clothing but still wishing to donate can purchase a new snow jacket from Anaconda to be added directly to the collection. You can find the Heat the Homeless donation box at your local Anaconda store. We encourage team members in the store to mention this appeal to any customers who are shopping for new winter or snow gear as this is a great opportunity to spread awareness.

What do you think are some common misconceptions about homelessness and the people that find themselves homeless in our community?

That homelessness doesn’t affect everyone, this is a huge misconception as homelessness does not discriminate. Homelessness can affect people of all ages, cultures, men, women, and children from different circumstances.

We believe there is also a misunderstanding of what homelessness means, the definition of

homelessness emphasises a lack of core elements of a ‘home’ including a sense of security, stability, privacy, safety, and the ability to control living space.

Given the recent increase in homelessness across Australia, how do you see the Heat the Homeless appeal evolving in the future?

Whilst we will continue to do our best in providing warmth and comfort through pre-loved clothing, we do believe there is always an opportunity to do more, be better and grow. This may be through other items to be donated such as sleeping bags, tents and food, or it could be in the form of financial support raised through fundraising. We would love to see some sleepouts happening across the country to align with the impact of living on the streets and to give everyone a better understanding of the elements people face whilst sleeping out in the cold during winter. There are always opportunities to those willing to keep their mind open.

Growing up with a brother with a disability, I took on a caring role from a very young age. I truly believe that this early chapter instilled in me a desire to go on and become a nurse and continue to care for, and help people.

up in your industry? As I am affiliated with a company synonymous with high standards for the industry as a whole, the changes fortunately are quite minor. Any changes that come into effect are purely to protect the consumer, and ensure the highest safety standards are adhered to and consumer privacy is upheld.

What do you believe are your strengths in business?

My patients aren’t just a number. I take a holistic approach to their care and I think they know that by their results and experience. What is the favourite part of the work you do?

I love making people feel good about themselves. Our industry is often mistaken for being superficial and oriented on looks, when i am a true believer of my work helping people feel better about themselves.

Tell us about your background in the health and beauty industry?

I am a Registered Nurse of 14 years and Cosmetic Nurse of 9 years. I started my nursing journey working in post operative care and then I moved into emergency and cardiac nursing. I loved working in emergency while I was there, but unfortunately I struggled to switch off when I got home. It was such a fast paced job, patients were either really sick or their lives were affected permanently. I was grateful to be a part of their care, but I knew I had to change my direction of work. I felt like I didn’t have a healthy work/life balance as I ‘cared too much’.

My friend suggested I should try to work in cosmetic nursing. “You would be helping healthy people, and you might find it really rewarding” she said.

After much research in 2014 I completed my Cosmetic Nursing Diploma with the Australasian Academy of Cosmetic Dermal Science (AACDS). I LOVED IT, and 9 years later I can proudly say that I love what I do. I had numerous 1:1 training sessions with nurses and doctors following the course and I had the pleasure of training others over a 4 year period after my 5th year of injecting. It was a great experience to be able to teach others and it really helped me grow as an injector. What are your qualifications and do you specialise in anything in particular?

As I mentioned, I am a Registered Nurse, and I have completed my Diploma of Cosmetic Nursing. I would say I specialise in full face

rejuvenation. Proper assessment is the fundamental key to any treatment I perform. I love all areas of the face, but my favourite, if I had to choose would be treating cheeks and jawline/lower face with dermal filler and anti wrinkle injections are also extremely rewarding.

Tell us about the changes that are coming up in your industry...

AHPRA (Australian Health Practitioner Regulation Agency) have changed the guidelines for cosmetic injectors as of 1 July 2023. There will be extra assessments we have to complete in the consultation and extra information is required to be provided to the client at the completion of their treatment. There has been a lot of talk about this on the internet of late, as questions arose about non surgical treatments requiring a GP referral. However, this is not the case, you do not need a GP referral for non surgical cosmetic treatments such as anti-wrinkle or dermal filler, only for surgical treatments.

What do you believe are your strengths in business?

I am passionate about what I do, and I am known to be a perfectionist, I have a real attention to detail. I will not rush my appointment times just to get more clients booked in. My focus is to perform the best

I can for my clients, and treat them just as I would like to be treated if I was in their shoes.

What is the favourite part of the work you do?

Getting the client to look at the results in the mirror and seeing their before and after photos is very rewarding.

But I really enjoy everything. From consultation to performing anti-wrinkle, dermal filler and bio remodelling, I love doing it all.

Do you have other businesses or business leaders who you look up to?

I would say Dr Steven Liew and Dr Arthur Swift would be my top pick. I throughly enjoy learning from their wisdom, and I love their gentle approach. A dream of mine is to one day attend Arthur Swift’s and Professor Cotofana’s masterclass in New York.

Myth: Lifting weights will make you bulk up!

The bursae are good at their job, however muscle imbalances and tight hips can place excessive pressure on the bursae making them swell and become painful, resulting in hip bursitis. What Can You Do?

Hip bursitis can be scary to live with because it not only affects your mobility, but it may also affect your lifestyle and independence. The silver lining, however, is that it often responds well to proper treatment. Here are three solutions you can apply today to help alleviate the pain from hip bursitis:

1. Don't sleep on the affected side. The extra pressure from your body weight can compress the bursae resulting in more swelling and pain.

2. Avoid sitting cross legged. Sitting cross legged encourages the muscles of the hips

that are already too tight to become tighter and the muscles that are stretched and unresponsive to stretch further.

3. Foam roll your butt. Patients with hip bursitis often have a lot of muscle tension and knots in the glutes (butt muscles). You would be surprised at the level of pain reduction you can gain from 10 minutes a day of foam rolling through the glutes and the sides of the hip.

Tell us about your business and your role? I have recently taken on a new role leading ANZ Mobile Lending for Port Macquarie. I really like the ANZ Mobile Lending franchise model as it offers me the unique opportunity to support people looking to buy a home in my local community, whilst I run and operate my own business in partnership with ANZ.

One of the best things about ANZ Mobile Lending is we’re able to work around our customers’ availability, offering them the ease and convenience of having a lender visit them at a time and place that suits them. While that means I often work outside ‘business hours’, being my own boss also means I have greater control over my working schedule to suit my family and lifestyle which is very important to me.

My franchise looks after a broad region which extends from Port Macquarie north to Telegraph Point, west out to the Oxley Highway past Mount Seaview and south past Forster to Sandbar. Being a Port Macquarie local myself, I know how wonderful our community is, so I’m really excited to be able to focus on my own local area as I guide and support people through the home loan process.

The two things that help me stand out are my technical skills combined with a genuine care for people. Having personally bought and sold homes and investment properties over the years, meeting with countless accountants, valuers and conveyancers, I have experienced first-hand how daunting and time-consuming the home-loan process

What motivates you each day in your role? Being in the frontline of the community and helping people is something I find very motivating. And the launch of the audio book version of Awesome Business, Awesome Life…how could I forget that!

Our balance of creative and technical skills makes a perfect whole. We have a strong focus on brand creation, online stores and service based websites, email marketing and print work. To put it simply, Tara mostly makes things look good, while Tim makes them work! What makes you an expert in your field?

Before we worked together, we each worked

in senior roles at major brands Quiksilver, Rusty, Who Magazine, Home Beautiful, Disney and more. Having that experience within large organisations is valuable every time we work with a new client thanks to our solid understanding of consumer markets. Tim’s roles in the surf industry were what brought us to Port Macquarie in the first place. What do the next few months look like in your business? We’ll be booking in jobs for the second half of the year, mostly websites and branding, while squeezing in as much camping as we can on the weekends. Once we hit August our phones usually ring hot when people realise how quickly the end of the year is coming.

Tell us about some of the work you have done recently and what you love the most about your job. We recently finished a packaging and website roll-out for a well known toy brand, and a hair care company in Byron Bay.

We launched a new service where we design a one page website in one day, which we think locals will love (picture above).

The best part of our job is working with all kinds of people, those starting up, or established businesses wanting to go to the next level. Having them entrust us to get them out the gates looking their best is super satisfying.

The next couple of months are looking extremely busy and exciting for us as we have

Tell us about your business and your roles? Since our establishment in 1996, our Morgans Port Macquarie practice has grown to 13 professional advisers and a number of specialist support staff, making us one of the largest, most highly qualified and experienced teams in regional Australia. We help clients get the most out of life by providing sound financial planning advice, particularly retirement planning, wealth creation, self-managed super funds and aged care advice. We also provide investment advice to “not for profits” and trustees looking for professional independent advice and governance support, which gives us the privilege of preserving and growing their financial assets for the benefit of their beneficiaries.

Tell us what the next few months looks like in your business? The end of financial year is always busy for advisers. There are strategies around superannuation, particularly contributions, meeting pension requirements, tax strategies including reviewing potential capital gains tax liabilities, as well as investment strategies to consider.

We are also excited to share that we strengthened our risk insurance service and have

two advisers who have joined our team in the last 12 months with very strong backgrounds in risk insurance as well as insurance underwriting and claims experience. Scott and Christian are well placed to help people and businesses protect their financial security and are ready to meet with business owners and professionals who require professional risk insurance advice.

What would you say is your greatest professional accomplishment to date?

The financial planning industry has been in constant flux due to changes in legislation. Despite that, we’ve been around in Port Macquarie for over 25 years and have continued to grow and build our team and that’s due to the culture of teamwork and client first philosophy. was named Business of the Year at the 2023 Coastline Credit Union Greater Port Macquarie Business Awards. The local not-for-profit also took home the Community & Social Services Award and the Outstanding Community Organisation Award. CEO Kelly Lamb shares her reflections.

What do these awards mean for you and your team?

On behalf of Liberty Domestic and Family Violence Specialist Services, it was my honour to dedicate these awards to all the women and children who have been supported by the service over the past 43 years.

The acknowledgement flows through us to every woman and child we have had the privilege to walk alongside. These awards say to us that our community sees her. This is the third time in succession we have been recognised as the Winner of the Community & Social Services Category, which involves a public vote. This tells us that our community is right there with us as we work towards a world where women and children are empowered and safe from violence and abuse.

While the Liberty team certainly don’t do this difficult work for the accolades, they

are incredibly deserving of these awards. Each member of our Board of Management, Leadership team and team of domestic and family violence workers are committed and courageous in the face of constant adversity. Having the support of our community really spurs us on.

Over the past year Liberty have responded to more than 1500 women and their children and educated more than 2500 adults and children in domestic violence awareness and prevention.

We’re grateful for the partnerships we have with Police, the Emergency Department and social workers at Port Macquarie Base Hospital, Women’s DV Court Advocacy Service, Mid North Coast Legal Centre, Lifeline, community housing providers, and many more. Working together is how we make the greatest impact. For those who don’t know, what services do Liberty provide?

Liberty provides specialist domestic and family violence support for women and their children including safety planning, crisis accommodation and transitional housing. We also run a group work program for women, called Dusk, and an after-school program for children, called Kids Club. We’ve been very proud to co-design a Connecting to Culture program in collaboration with Aunty Rhonda Radley for Aboriginal clients, called Ngathuwa, which means ‘I am’ in local Gathang language. We have established a culturally safe organisation with a strong connection with the local Birpai Aboriginal community.

We also lead a whole-of-community response to eliminate domestic violence through prevention, advocacy and education, awareness events and strategic partnerships. This includes Respectful Relationships programs for schools, and our Everybody’s

Business Workplace Training program for organisations and businesses.

How can the community get involved in supporting Liberty?

Each year we love to see our community wearing white and joining us for the annual Coastal Walk Against Domestic and Family Violence. Keep an eye on our Facebook page for more information about this year’s event @ LibertyDFV.

What’s coming up for Liberty over the next 12 months?

There will be an increased focus on domestic and family violence in the business community as small businesses prepare for the introduction of paid domestic and family violence leave from 1 August.

We’ve already helped large organisations such as Men and Women at Work implement those changes with a focus on safety through our Everybody’s Business program. As the changes come into play, it’s important that businesses’ policies and procedures are up to date, and it is even more important that employers and

managers know how to recognise the signs of violence, respond in a way that is safe and sensitive, and refer the person to a specialist service for support.

The introduction of coercive control legislation also means there will be a more nuanced conversation taking place in the community about the various forms of violence and abuse. It is important for everyone to understand that domestic and family violence is not just physical – it can also include psychological, financial, verbal and spiritual/religious abuse. We’ll continue to lead our community to prevent violence and promote respect.

We’re also focused on continuing to secure accommodation solutions for women and children who have had to leave their home due to violence, which is an ongoing challenge in the face of the local housing crisis.

“WE HAVE TO GO UP” by Melissa Kennedy, Licensed Conveyancer, Priest Legal

ecently, Chris Minns, the Premier of NSW, advised that “we have to go up” when addressing the affordable housing availability shortage crisis. Multi-unit apartment blocks rather than dwelling houses can create increased accommodation without urban sprawl and the infrastructure headaches that go with it. With apartment units being more affordable than traditional detached family homes, buying a unit in an apartment building “off the plan” may seem a logical strategy for first home owners to get into the property market or for investors to get a source of further income. Beware, however, because there are pitfalls that you should consider before committing to an off the plan purchase.the unit you envisaged you were buying may be completely different to the finished product. Consider the residents of Mascot Towers in Mascot who were forced to evacuate their newly built apartment units in 2019 due to severe structural defects and safety concerns.

When you purchase off the plan, you are taking a gamble because there is no physical building for you to view, walk around, check appliances and get a general feel for the place. You may only have an “artist’s impression” of what the finished unit is going to be like. You can have no knowledge of the quality of the workmanship, the quality of the finished building, fixtures and fittings. Essentially,

Off the plan buildings can often take 12 to 24 months (in some cases longer) to be built after you have entered into a contract. These delays can cause further issues for purchasers. When obtaining finance for your purchase, many lenders will only provide loan approval for 3 months before a new application must be submitted. Over a 24-month period that is a lot of paperwork, not to mention the anxiety that you may suffer if your personal circumstances change during this period and you are not able to secure your loan when the settlement date is announced. External factors such as interest rate rises and

property valuations falling can also impact your ability to be able to secure a loan after being approved at the start of the contract. There have also been cases where construction costs have “blown out” and the developer may ask you to pay more for your unit than what you contracted for. The developer may also opt to not proceed with the development at all a`nd while you will get back any deposit you have paid, you will be back to square one and may have missed out on other opportunities to enter the housing market.

These are just a small number of things to consider when thinking about purchasing “off the plan” and with our firms many years of combined conveyancing experience, we are here to help you navigate your way through purchasing property (off the plan or otherwise), from start to finish and beyond.

Taylor Bryant started her first ever job at McDonalds when she was 14, and she has just recently celebrated 10 years with the company. She is currently a crew trainer and her fave day to be a crew member at Maccas is McHappy Day when she helps raise funds for Ronald McDonald House and the families that it supports.

How did you get started working at Port Macquarie Maccas, and what was it like when you first started?

I applied when I was 14 and still at school. I initially felt really nervous when I first started as it was my first job. I didn’t know what to expect and I didn’t know anyone else that was working at Maccas at that time.

What skills have you developed over the years that have helped you progress from your initial role to your current position as crew trainer?

Being able to share my knowledge and experience and knowing how to speak to the customers in the correct way at all times, especially when they need help with something.

Can you tell us about your experience celebrating your 10-year anniversary with Maccas last year?

I was at a work meeting with my colleagues. The meeting had just started and they called me up in front of the group and surprised me with flowers, a card, a gift card and a 10 year badge to wear at work. What are some of the challenges you face in your role and what are some of the aspects you enjoy most about it?

I like to volunteer my time to a great cause, as I have always been known to happily give up my time to help raise money for different charities. McHappy Day is one of the best days to volunteer, as we all come together to raise money for sick kids in hospital that are staying at Ronald McDonald House with their family. Last year I dressed up as a leopard and I volunteered for 4 hours. During that time, I was stationed on the grass at the drive through collecting money from the customers who were going through the drive through! It was great fun.

How do you balance your work at Maccas with your hobbies of netball, dancing and Headspace and what do you enjoy most about those activities? Working at Maccas is great but I enjoy the variety and different aspects that netball, dancing and Headspace bring and the opportunities that I am given with all of them.

When it’s busy, not only performing my own duties well, but also helping out where I am needed in different areas, such as the front counter serving the customers or helping to pack all of the ongoing orders that we have.

One of the aspects that I enjoy most about my role is meeting new people, such as new crew members and customers. It's great getting to know new people and making new friends. What do you think are the key qualities that make a successful Maccas crew member, and how do you teach those skills to new employees?

You must be a team player. Being as encouraging and as helpful as possible, all while leading by example, is what makes someone a great role model for new crew members that start at our store.

Can you tell us more about your involvement in McHappy Day and what it means to you personally to contribute to the cause?

How has working at Maccas impacted your personal and professional growth over the years?

Maccas has helped me with my confidence and it has helped me to come out of my shell. It has also helped me to enjoy other people’s company a lot more.

What advice would you give to someone starting their first job at Maccas or in the fast food industry in general?

Take note of all instructions, watch and learn from others and say yes to all of the opportunities that you are given. Say yes to learning new things as you might not get that opportunity again and enjoy the experience, as you will love working at Maccas.

What are your goals for the future, both personally and professionally?

To move up the ranks at work and to hopefully become a manager one day, as well as continuing to learn new things whenever I can. Thanks Taylor

About the HMAS Adelaide Sea Experience

Tell us about what you did on Fleet Engagement 2023. Fleet Engagement 2023 was all about experiencing what life in the Navy would be like. What we experienced was a once in a lifetime opportunity together with 60 cadets from all corners of Australia. For the first 3 days we stayed on Cockatoo Island and visited HMAS Waterhen where we learned about mine warfare, LHC crafts as well as the clearance diving team. We had the best experience when we got to visit sister ships HMAS Brisbane and HMAS Sydney while they were both berthed at Fleet Base East. We had the opportunity to visit all the different departments on both ships and have lunch on-board with all the personnel. Afterwards we

joined the sailors from both ships for some PT (personal training). We toured the NSW Water Police Headquarters and took a joy ride in their tactical RHB’s. Later on in the day we had a VIP Lunch where we met all the different Navy personnel that had helped us learn about life on both HMAS Waterhen, Kuttabul and careers in the Navy. We even got to personally meet the former GovernorGeneral for Australia Sir Peter Cosgrove who generously took a moment to speak to each cadet during this event. While we stayed on Cockatoo Island, we learned about its rich history in the Navy as a former shipyard where

On the last 5 days of Fleet Engagement 2023, we were treated to sailing on HMAS Adelaide from Garden Island, Fleet Base East in Sydney to Melbourne. On Wednesday afternoon after a quick ride on a LHC (Landing Helicopter Craft), we boarded HMAS Adelaide and got settled into our accommodation onboard. Later that evening we had a Defence Force recruiting presentation on the LVD (Light Vehicle Deck) and were briefed for tomorrow’s departure. An early morning wakey wakey at 0600 hours for breakfast and straight up to the flight deck where we were split into two groups and stood at ease around the starboard side of the ship. Once we left Garden Island we came to attention while we sailed past the HMAS Sydney Memorial to pay our respects to those that had fallen. We came back inside when we hit the Heads as it was quite rough. Our first meal at sea (lunch) was quite enjoyable as our cadet cohort was in awe of what we were experiencing. Once lunch was finished, we split into small groups and got to explore around the ship. Bayden’s

group explored the logistics compartments of the ship which included the stores, galley, both the sailors’ mess where we ate and the officers mess’, and sickbay/hospital on board. Jared’s group explored the control station of the ship and its weapon systems, giving them the opportunity to take control of the helm and drive the ship. Later that evening we were treated to eating in the Officers’ Mess, which was something quite special. Jared got to interact with officers on the ship and speak to them about their role and why they joined the Navy. The meal was quite filling, and he got treated like he was in a five-star restaurant with table service and luxury tables and chairs, such facilities are a luxury on the ship at sea.

The cadets were also given an exciting opportunity to fire 50 rounds on a 50. Cal Machine gun before we berthed at the dock in Melbourne, ending our once in a lifetime experience.

The second day started with our first PT sessions with the crew on-board early in the morning. After breakfast, the ship’s company launched the LHC in Jervis Bay with the Cadets on-board. We sailed in formation and practiced manoeuvres while watching the naval pilots fly the Romeo Seahawk helicopters above our heads. We continued to learn about the ship and the lives of the people on-board throughout the day and bonded with the cadets that we stayed with. At the end of our first full day on board the ship, the ship set sail out of the bay with the cadets watching the sunset as we left. For the last few days, as the ship sailed down Bass Strait the cadets explored the last of the departments on the ship such as the flight control room, the Romeo Seahawk’s workshop and the lives of the pilots that operated them. The cadets were also given an exciting opportunity to fire 50 rounds on a 50. Cal machine gun before we berthed at the dock in Melbourne, ending our once in a lifetime experience.

What are you going to do in the future with Cadets

Later this year around July, we will both travel to HMAS Albatross near Nowra on the NSW South Coast to spend a week being part of ACT (Annual Continuous Training). We will

be two of around 60 cadets, some of whom will travel from Ballina in the north down to Gosford in the south. We will both be completing our PO (Petty Officer) Qualifications so we can rank up to Petty Officer in the near future. We are both aiming to apply for the National ACT at HMAS Cerberus later in the year. TS Rushcutter cadets not only have the opportunity to participate in the ACT’s (Annual Continuous Training) we are also invited to be a part of many different weekend postings in our local Flotilla. During the weekend posting cadets participate in activities including powerboating where they learn about boat safety including night navigation and man overboard drills. These activities take place in South West Rocks and Newcastle. Sailing activities take place in Grafton and Gosford where we learn how to safely sail. We have learnt skills in using the boom, tacking skills and how to best use the sails depending on conditions.

Cadets have the opportunity to experience real defence base life at RAAF Base Williamstown. We have recently participated in WTSS (Weapons Training Simulation System) and Live Fires (Or shoots) at RAAF Base in Williamstown and are planning to do some more exciting postings in the future.

What is good about the Navy Cadets?

We have some amazing experiences with The Australian Navy Cadets, not only in Port

Macquarie but around Australia and even the world. Being in the Navy Cadets and building new skills in leadership, communication, teamwork, operating water vessels, and drone flying while also participating in community events such as ANZAC Day March and serving the firefighters during the 2021 floods. This has enabled us to get out of our comfort zones and try new things. We have the opportunity to meet people with similar interests, make lifelong friends, and learn new skills that we will never forget and continue to use in our daily life. It’s also amazing to meet new people, not only here on the Mid North Coast but also across Australia and experiencing new and amazing opportunities like what we have done recently.

Bayden, you have recently applied to be a crew member on the Young Endeavour, tell us about that.

The Young Endeavour will depart from Port Macquarie on the 9th of October 2023 for Sydney. Sailing alongside a team of Royal Australian Navy officers and sailors the voyage is an 11-day trip on the Navy’s very own tall ship. If I am successful, I will be part of a small crew of young Australians learning not only to sail a square-rigged tall ship but continuing my leadership journey in leading a team and supporting others to work together to achieve tasks. However much fun it may be, I know it won’t be a relaxing holiday but instead an opportunity to grow by stepping into a new world at sea, face my fears and push myself out of my comfort zone and build lifelong friends.

Dr Stephen Begbie is the driving force behind the Hastings Cancer Trust raising over $2 million for our community. Across 18 years he has masterfully combined his role as a clinician caring for patients at the Mid North Coast Cancer Institute with inspiring and mobilising a movement to fund vital equipment and facilities to directly improve the experience of cancer patients, survivors and their carers in our region. Steve continues to challenge and connect our community, inviting all of us to come together and Make a Meal Out of Cancer - sharing a meal to raise the bar on cancer support and care in our region.

Steve what inspired you to step up and found the Hastings Cancer Trust (HCT) and begin your game changing work in this space? We are fortunate in Australia to have a health system that provides high quality care for all Australians. Having said that, it became obvious at the time we set up the Mid North Coast Cancer Institute that government funding could not provide everything that cancer patients and their families needed.

You are a master connector and motivator and use the power of compassion and regional care parity to inspire others to join you on the Hastings Cancer Trust journey. What keeps you inspired to lead and drive new projects to benefit clinicians, patients and loved ones?

None of our donations would be possible without the hardworking and forward looking teams that care for the health of our patients and their supporters.

The Hastings Cancer Trust was therefore set up to raise money in our local community so that all of it could be spent locally to enhance cancer care. We have provided over $2million in grants over that time.

Innovation is exciting, but new ideas age, and it becomes progressively more challenging to maintain the momentum. One of the keys is to bring new people on board and to bring fresh eyes and fresh ideas to any project.

I have worked with a series of gifted and energetic people who have made a huge impact. We are always looking for more contributors, especially in the Friends of the HCT, our fundraising group.

events have been central to your impact on the community. Can you tell us about some of your favourite events/ projects and how they have made a difference?

The Trust loves community fundraisers that come from groups in our region who want to raise funds and donate them directly. Our team’s energy goes into fundraisers that build community and bring people together. This has included celebrations such as our Glimmer Balls and anything where fundraising combines with exercise or sporting activity. I love it when there is a focus on exercise building immune systems and attacking cancer.

How can people get involved with your latest fundraising series Making a Meal Out of Cancer and what does it involve?

Making a Meal Out of Cancer is an idea that arose during the pandemic. Instead of big functions it was a chance for groups of friends to plan a meal, support a restaurant and go to the HCT website to make a donation.

We would love to see more and more groups joining us to register a dinner, invite their friends and assist the trustees in having more funds to give away this year.

We love supporting local restaurants at the same time.

How instrumental has the HCT team and broader community been to the success of the Trust and its initiatives?

What is the most valuable lesson you have learned from the HCT team?

I have learnt over the lifespan of the HCT how generous our community is. None of our fundraising would have been possible without unpaid volunteers and trustees. None of our donations would be possible without the hardworking and forward looking teams that care for the health of our patients and their supporters.

What has been your biggest challenge as a leader in making a tangible impact in our community?

The reality is that there are multiple community groups in our region and many needs. The Trust knows that there are worthy causes to support everywhere. However, as the HCT team maintains its

energy and focus, we would love those touched by cancer to consider supporting us, and giving us the energy we need to continue.

What is the hardest lesson you have learned as a leader of a community organisation?

There is a risk that as you look outwards at bigger charitable trusts that you will succumb to envy their resources, or a sense of falling short of their apparent successes. I have had to focus on the simplicity of making a difference in our community and remaining content with local success. What are you most proud of?

That after 18 years, the Hastings Cancer Trust has an engaged team (more would be great), a wonderful group of clinicians and community members to support, and money in the bank. We have plans to make a difference for many years to come.

If you could name a bold and bodacious goal for the trust what would it be?

We have always wanted to support the best cancer service in regional Australia, and that will always be our overarching goal. The short term goal is to find a fundraising coordinator and a bigger army of enthusiastic fundraisers to guarantee our generous grants program into the future. Thanks Dr Begbie

Rollands Plains Public School have competed in lego competitions for the past two years and this June will be heading to the Asia Pacific Open championships in Sydney.

Hi Katie, you are the principal at Rollands Plains Primary school, how long have you been there for and can you tell us a bit about the school?

I began my Principalship here in October 2020. Initially it was to be for a short relieving tenure, but I am so fortunate to still be here working with this amazing school community. We are a small school of 24 students from Kindergarten to Year 6.

Rollands Plains Upper Public School (RPUPS) is located in the Hastings Valley, 45 kilometres north west of Port Macquarie. Rollands Plains is an agricultural area with both commercial and hobby farming that

offers limited community infrastructures. The nearest town facilities are located at Port Macquarie and Wauchope.

The school offers a supportive family atmosphere in a safe and secure environment. Our ethos is built around high expectations and a commitment to excellence by all staff and students. We provide our students with a variety of enriching learning activities to give all our students an opportunity to shine.

RPUPS is actively involved in promoting opportunities for students to learn with, socialise and integrate with students from our Bago Community of Schools, Hastings Valley Public Schools and Macleay Valley Public Schools through a variety of extra curricular programs for students and professional learning opportunities for our staff.

Something super exciting has been happening at the school for over the last two years, can you tell us about the Lego League Challenge?

First Lego League introduces science, technology, engineering, and math (STEM) to children through fun, exciting hands-on learning. In this competition students gain real world problem solving experiences through a guided, global robotics program, helping today’s students and teachers build a better future together. Through this program, our students engage in hands-on STEM experiences, building confidence, and knowledge while developing positive learning habits.

Friendly competition is at the heart of the challenge with each team building and programming a Lego robot that navigates the missions of a robot game on an official game mat. As part of the challenge, teams develop an innovation project where

students design a research project to identify and solve a relevant real world problem.

How did the kids get involved in this competition?

Through our partnership with Hastings Valley Public Schools, we are fortunate to have the support of Mr Warren Reynolds from Hastings Secondary College who visits primary schools across Port Macquarie to teach coding skills that can be used in the first Lego League Competition. This program is funded by the STEM Industry School Partnerships Program and provides support in schools to engage and inspire students to study STEM and prepares them for STEM enabled careers. At RPUPS we have had a focus on STEM inspired learning for several years and this Lego Competition offers our students an opportunity to apply their knowledge and skills in a competition setting.

Can you introduce us to the Lego League team?

Our team consists of our senior students here at Rollands Plains Upper Public School; Flynn, Lucas, Felix, Brandon, Levi, Luca and Beren and we are excited that our team leader from last year, Oliver is able to re-join the team for this next competition, despite now being in year 7. For the National (east) competition we also had younger students, Cooper and Miles join the team to experience the competition firsthand.

Our School Learning and Support Officer, Mrs Naomi Hutton coaches the team at school, supporting the boys to prepare for the various challenges in this competition, and Mr Warren Reynolds visits the school weekly during preparations for the competition to train our team, provide feedback and advice on our robot and innovation project.

First Lego League introduces science, technology, engineering and math (STEM) to children through fun, exciting hands on learning.

What have been some of the inventions that the kids have created?

In our first year in the competition, the theme was Cargo Connect which explored the ins and outs of modern transportation. Students discovered how cargo is transported, sorted and delivered to its destinations. The team were focused on developing an idea to support the community where we live and developed an app that allowed rural residents to shop online then have one courier deliver to a centrally located drop off point for local collection. They surveyed the community to work out what goods would need to be transported and how to efficiently deliver these to rural communities like our own. As a team we learned so much from our first experience and used this to improve our robot and project for 2022.

Last year the theme of the competition was Superpowered, which was designed to empower young people to be leaders and innovators, addressing global challenges related to United Nations Sustainable Development Goal #7. This theme focused on ensuring access to affordable, reliable, sustainable, and modern energy for all. Again, our team had a focus of solving a problem in our local area preventing animal related car accidents using a solar powered warning system. The team developed a solar powered sensor to sit on top of farm fencing. When

animals, such as kangaroos are close to the road, the sensor is triggered and a light is emitted to warn drivers to take caution driving in that area. As part of the design process, the boys interviewed electrical engineers and members of the community to ensure their innovation project could be a useable design and responsive to the needs of the community. In preparation for the Asia Pacific Open Championships in Sydney this June, the team have continued to refine their project after reviewing feedback from competition judges, community, and industry professionals. They have had some amazing results for a small school, can you tell us about them?

Our performance at regionals qualified us for the Nationals (east) competition at Macquarie University in December last year, with our fellow Hastings Valley Public School friends from Lake Cathie Public School and Hastings Secondary College joining us at the competition. At Nationals we were nominated for a ‘Rising All Star” award, which has motivated us to continue to improve as we prepare for the 2023 season.

From lunchtime, afternoon and weekend practices, to arranging bus transport and accommodation for teachers, students and their parent, it is all hands on deck to ensure the team have a memorable experience at the Asia Pacific Open Championships. RPUPS will be one of fifty teams from around the world competing at this four day event. Starting with an official opening ceremony and friendship celebration, the team will have an opportunity to participate in a cultural exchange with the other teams before the competition begins. The next two days are filled with presenting our innovation project to a panel of judges while our robot ‘Spaghetti’ competes against other robots, completing as many missions as possible on the game mat in two and a half minutes. The competition is live streamed on the First Lego League YouTube channel for the community to watch the team in action. The boys will then have an eager wait until the final day before learning if they have been successful in the competition.

What have the kids enjoyed the most from participating in these events?

The teamwork and friendship within the team has been inspiring. The boys genuinely love being involved in the competition and working together to achieve their goals. This

competition has also given our students an opportunity to meet, learn and compete with students from other schools. The growth in their confidence as they stand in front of a judging panel to discuss their project or compete with their robot in front of an auditorium of people, highlights how valuable this competition is to our students. Felix probably summed it up best at the regional competition, when the team was asked what is the best part of being in Lego League? He responded, ‘it’s Lego! Who doesn’t love to play with Lego’.

Why do you believe participating in these events is so important?

For our small school, it has given our students an avenue to compete against other school teams in a fun, friendly and exciting competition where all students are there with a genuine love of Lego and robotics. Schools from all over the region, small schools to large schools and even high schools participate and compete together in a fun and energetic event that celebrates the student’s creativity, skills and determination to make a difference. This programme has also given our students an opportunity and purpose in solving real world problems for their local community, with the potential of making their solution a reality. The catch cry for this competition is “gracious professionalism” which is a way of doing things that encourage high quality work

emphasising the value of others and respects individuals and the community. It has been wonderful to see gracious professionalism become part of the Lego league culture at RPUPS.

At RPUPS, we believe that the size of our school and rural location should not be a barrier in giving our students every opportunity to thrive and succeed. It is through these competitions that we are able to provide our students with opportunities to shine on a global scale.
