The Psychology of Hair Loss in Women

air loss — something commonly associated with men — is now increasingly affecting women as well. Hair loss in women has been a growing issue since women entered into the work force — a fast-paced world increasing our daily stress. Diets high in genetically modified and processed foods may also contribute to hair loss. In fact, current statistics report half of the female population will incur some degree of excessive hair loss throughout their life. Hair Loss sTaTisTics: • Hair loss affects roughly 50 per cent of women • 60 per cent of hair loss sufferers would rather have more hair than money or friends

More women are seeking methods of non-surgical hair restoration, up 31.8 per cent between 2004 and 2008 Almost half (47 per cent) of hair loss sufferers would spend their life savings to regain a full head of hair Roughly a third (30 per cent) of hair loss sufferers would give up sex if it meant they would get their hair back Women feel hair loss makes them appear unattractive to men

The degree of mental stress over hair loss is more than purely a decrease in self-confidence. Studies show hair loss is an instinctual stress. In today’s society we sometimes forget we are instinctual species. So much of our self-confidence depends on how our hair looks. Until recently, it seems the only remedy for hair loss in women was a wig or expensive hair transplants. Many women with diffuse hair loss or naturally thin hair have turned to conventional hair extensions, though not every woman with hair loss is a good candidate for

them. Many women have been appraised for the wrong methods of installation for their individual hair type, causing further cuticle damage. Women who have fine, brittle, low density hair or hair loss issues should always steer clear of any methods which use adhesives, glues or solvents in the hair, as this process greatly increases the odds of further damage. There are now progressive, new concept alternatives that are socially acceptable, even welcomed, by women experiencing hair loss. Hair augmentation in the form of hair replacement services are a nonsurgical, long-term remedy for women to replace the hair on the top of their head with zero damage to existing cuticles. Virtually undetectable, hair replacement services are a one year investment that women wear full time can wash, style and treat like natural hair. T

here is a certain air of strength, grace and determination in a model as she struts down a runway in a fashion show. If these are the characteristics that define a great model, it is no wonder the special guest models at this year’s Fashion with Compassion event stole the show once again. Breast cancer survivors and former guests of Sorrentino’s Compassion House, the 10 ladies featured in this year’s show intrinsically embody strength, grace and determination. Fashion with Compassion is a day full of luxury fashion and glitz-filled glamour to celebrate these women and a place where they each found a sense of calm and respite. The annual fashion show and gala exists to raise funds for the Compassion House Foundation and Sorrentino’s Compassion House right here in Edmonton. Produced by Kelly Streit and Mode Mode’s since its inception, the event celebrated its 18th year supporting Sorrentino’s Compassion House, a place where hundreds of women from Alberta and Northern Canada have retreated for healing support since its inception in 2002. With women coming to Edmonton to undergo breast cancer treatments from more than 200 different communities, a haven for serenity is a must. The need for the house, as recognized by the four founders of the Compassion House Foundation in 1998, is clearly undeniable. Thankfully, those who attend and support Fashion with Compassion see this need and want to help, says Mellissa Kraft, executive director of Sorrentino’s Compassion House. “Fashion with Compassion is our

major signature fundraiser. We rely on the funds raised to operate Sorrentino’s Compassion House,” says Kraft, noting the organization receives no government funding, but continually keeps the cost of staying at the house as low as possible. “It’s important to keep our fees reasonable because a cancer diagnosis is incredibly difficult emotionally, physically and financially on a family.” For Kraft, former guests of the house and the team of volunteers and supporters, Fashion with Compassion is not only a fun and glamorous day with a luncheon and dinner but also a fashion show boasting some of the top designer brands from participating retailers. It’s made possible with an incredible team of volunteers and supporters. “The event offers an opportunity for the community to learn a bit more about Sorrentino’s Compassion House. Most people cannot imagine what it would be like to have to travel to Edmonton for cancer treatment,” Kraft says. “The average stay with us is about five weeks, as the women undergo radiation treatment at the Cross Cancer Institute. This is a long time to be away from your family, friends and community during a difficult time. The women come because we offer affordable accommodation but they leave with a support system of people who share a similar journey.” Presented by Syncrude, Fashion with Compassion 2014 was a great success, Kraft says. With nearly 1,600 people in attendance at both events, the event raised over $300,000 for the Compassion House Foundation.

“P

ursuing a dream is always intimidating, a little scary and one of the hardest things, but it’s also the most rewarding,” says Perrott. “Bella Maas turned out to be a good fit for us.”

Four years ago, friends Perrott and Hedstrom were both moms looking for a new venture. “I called Jenine, telling her about the business opportunity,” recalls Hedstrom. “And she immediately called me back, asking if I wanted a partner.” Perrott and Hedstrom supported one another after purchasing Bella Maas — including its St. Albert location — in November 2010. Over the past four years, they’ve learned that while owning your own business can be daunting, it’s also personally fulfilling. “Since opening four years ago, we’ve only grown — not only in our business, but our partnership as well,” says Perrott, who along with Hedstrom, likes to encourage anyone to go after their dreams — no matter how difficult it may seem at first. “Anyone can give it a try.” And at Bella Maas, it’s all about finding something you love. “Our goal is to help people feel good about their style,” says Perrott. While Bella Maas carries a selection of exclusive lines, they specialize in denim, carrying brands such as Hudson’s, Fidelity, Mother Denim, J Brand, Adriano Goldschmied Jeans and Citizens of Humanity. “A lot of our denim comes from L.A.,” says Hedstrom. “Once you’ve had a really great pair of jeans, it’s hard to go back,” adds Perrott. “While we don’t focus on business attire, many women wear jeans to work now. With the clothes we carry — like our jackets, boots and dresses — we always aim to pair them with denim.” Clothing, shoes and accessories at Bella Maas range in price. “We want Bella Maas to be everybody’s boutique,” says Hedstrom. “Our customers are often excited to look at the price because they expect it to be expensive, but it’s actually quite reasonable.” Hedstrom says they carry a variety of sizes as well, “We’re not here for just one type of clientele.” Bella Maas gets half a dozen new lines in each year, including brands like Rails, Rebecca Taylor, Lauren Moshi, Splendid, Kenneth Cole, George, Gina and Lucy handbags and Michael Kors. And although Perrott and Hedstrom like to line the shelves with essentials, they understand their customers enjoy the eclectic taste as well, and try to find as many unique items as they can. “We love it when someone finds a piece of clothing or accessory that they love here,” says Perrott. The measurement process involves using a body scanner to scan the client and create an accurate featureless 3D avatar that helps Farmer’s team create the garments. The only tailor in Canada with this technology, they are able to not only use precise measurements to design the garments, but to also see exactly how the garment will fit on a specific body shape prior to making it. “In a time where everyone is trying to automate their services, we are doing exactly the opposite,” says Farmer. “Guys don’t generally enjoy shopping, and

going from store to store is tiring. When you come here you get exactly what you want, with customer service that’s unmatched in today’s retail world.” The best part of the job for Farmer is when he fits the clients who are traditionally hard to fit, and for the first time ever they get something that suits their body perfectly. “We can produce a suit that’s unlike any other,” says Farmer. “Our clients often go home and try on the suit that used to be their favourite, but it just doesn’t compare to the suits we can make.”

TREASURES that Take You Back in Time

R

ecently, a family browsing at Beck Antiques & Jewellery discovered an item they knew they had to have: an art deco lipstick decanter from Paris, formerly owned by one of the wealthiest people in America. With decades of history behind it, the antique piece is an example of the unique treasures found at Beck’s Antiques & Jewellery. Clinton Beck, president and founder of the familyrun business, has been hunting antiques for 33 years. Clinton is the antiques appraiser and vice president of Edmonton’s Wild Rose Antique Collectors Society and the Military Collectors’ Club of Canada. Beck Antiques & Jewellery has become one of the city’s favourite tourist shops, and has been featured in several travel magazines in Europe and Asia. It’s also a frequent destination for collectors, art dealers, history buffs and antique jewellery aficionados. Clinton started his career in antiques at the age of 16 at the Vancouver Flea Market. Over the past 25 years he has owned many companies, including three jewellery and antique shops in Vancouver. His current companies include Beck Gold and Diamond Brokers, Iron Cross Antiques, Express Jewellery Repair and Beck Gemmological Laboratory. Clinton visits markets and antique shows around the world in search of items to feature at the store. He says people who step into the 1200 sq. ft. shop for the first time are amazed. “Everywhere you look there is history,” he says. Along with a huge selection of jewellery — which can range from 1920s diamond brooches to art deco engagement rings and antique Rolex and Omega watches — historically significant items such as dinosaur bones, war flags, Asian and African artifacts, antique signs and tools can also be found. “The more interested people are in history, the more they will enjoy the store,” says Clinton. “It’s like a museum, where you can actually buy the things on display.” Have an antique piece of jewellery you want to know the value of? ith her new album, Shine On, and recent U.S. and Canadian tours, beloved singer-songwriter Sarah McLachlan is looking to the future with hopeful optimism. “All my albums are postcards of where I am emotionally in my life,” McLachlan tells Fine Lifestyles in an interview just weeks before leaving on her cross-country fall tour. “I tend to tell stories about my own experiences through music. I feel like I have worked really hard to come back to a place where I feel strong and whole again, and Shine On reflects that.” In just a few short years, McLachlan faced a crisis of identity with a divorce, the death of her father, a split from her manager of more than two decades, and a failed reprisal of Lilith Fair. With a near complete collapse of her support system, she released Laws of Illusion in 2010. It was punctuated with the anguish and grief of that period of her life, a stark contrast to Shine On. After the chaotic

period of change, the artist has found light at the end of the tunnel and is embracing life with renewed enthusiasm, drinking up every moment. The dedicated mother of two girls — India Ann Sushil, 12, and Taja Summer, seven —McLachlan credits her children for keeping her afloat through the hard times. “My girls are my biggest and most beautiful distractions. I was very lucky to have them when I was fairly established and could take time off to just be a mom. It has opened up my heart exponentially and I get to see the world through their eyes,” says McLachlan. For the vocalist and musician who has sold more than 40 million records, won three Grammys and eight Junos, McLachlan counts her Vancouverbased Sarah McLachlan School of Music among her greatest achievements. The free after-school music program draws droves of youth, sparking their creativity and nurturing a love of music. There are almost 700 kids in the program this year, making a very real change in their lives.

Drawing inspiration from Cat Stevens, Simon and Garfunkle, Willie Nelson, Joni Mitchell and other North American folk music, as well as Gaelic and Irish music, McLachlan has developed a unique sound all her own — a sound she has stayed true to throughout her career. She says there will be no pop or jazz albums in her future just to stay on a Top 10 list. “The best advice I ever got about my career was from Annie Lennox when I opened for her in New York many years ago. She said, ‘Don’t let anyone sway your heart.’ It’s advice I really took to heart,” remembers McLachlan. This year has seen McLachlan’s return to the electric guitar, releasing in her words a more wild side to herself. Being proficient in both guitar and piano also gives the artist the ability to work through songs with different instruments, often creating those coveted breakthrough moments in the writing process. “There are no mathematical equations to finishing a song, it’s different every time. The important thing is to stay open and knowing when to quit.”

“I feel very lucky to have been doing this for 26 years and that people still want to hear my work. There are a lot of ways to view success, I am my own harshest critic and knowing I’ve done my best, worked as hard as I could and was true to myself is important,” says McLachlan. The artist’s eighth studio album, Shine On contains song dedications to McLachlan’s father (Song for My Father and Broken Heart), her daughters (Beautiful Girl) and boyfriend, former NHL player Geoff Courtall (Flesh and Blood), whom she met at a Sarah McLachlan School of Music fundraiser. Shine On also includes a song that was originally about bullying and the

strength of the female spirit, which later became an ode to education activist Malala Yousafza, who survived a Taliban assassination attempt in 2012. While on tour, McLachlan returns to her childhood home of Halifax, the scene of relentless childhood bullying and her musical awakening. At the tender age of four, McLachlan began learning to play the ukulele and taking voice lessons. “When I was a kid I wanted to be Joan Baez, my mom always had her music playing. I was drawn to beautiful melodies. I loved the feeling music gave me; it lifted me and nourished me. I was always singing for as long as I can remember, it was always in my head,” says McLachlan.

Though writing her own music takes more time (there are often three to seven years between albums), the end product is well worth the wait. It creates a more authentic sound for her fans that she loves to share. “Performing live is a culmination of all the blood, sweat and tears I have shed spending months, if not years, on something. Writing is a very isolated experience, so it’s great to be able to finally share it with people. There is a unique energy that is created playing live.” At 46, the artist has seen a lot of shifts in her life and in the music scene as a whole, but she has stayed true to herself and her sound through it all. Looking forward, McLachlan is planning to make the most out of every second she has. “If I am lucky my life is half over. I have been taking a good look at my life and thinking how I want to live it. I want to do as much as I can, have as much fun as I can, live as much as I can, love as hard as I can and give as much as I can. I want to shine, not just endure, to suck the marrow out of everyday. When you put forth that energy and light you get so much back,” says McLachlan.

s Ampersand | 27 opens this fall, Head Chef and Owner Nathin Bye recommends guests get adventurous right off the bat with an order of charcuterie.

“We have 50 different items to choose from,” says Bye. Each item is by the gram, including many different meats, rillettes and pâtés, 13 different cheeses and four different breads baked in-house. “You custom order the items you want and we build it for you.” With a beautifully modern, abstract, open interior and long wooden tables, Bye has created an undeniably unique dining experience in Edmonton. The clean simplicity of the décor complements the re-imagined familiarity of the fare. Plates are meant to be shared, so every guest can experience the full range of flavours. “I wanted to offer something imaginative, to do food my way,” says Bye. “I’m a chef first and a restaurateur second.” Ampersand | 27’s menu features a mishmash of familiar and faraway items, including pressure cooked baby octopus and pastrami pork cheek, which Bye describes as similar to a pastrami sandwich, but served with braised red cabbage, sauerkraut cream sauce and presented under a dome of smoke. “Food needs to be fun,” says Bye, and the menu reflects that sentiment. “Some of our flatbreads are called The Salty Pig, The Coup and The Swashbuckler.” The Swashbuckler is perhaps the most inventive of the three — dyed black with squid ink, its parmesan tomato sauce is also blackened with fermented garlic and topped with shrimp clams, mussels and sea asparagus. “At first people are shocked,” laughs Bye. “But then they love it!” Ampersand | 27 offers an impressive wine list by the glass, but the cocktail menu is a more playful read. Causes, Cures and Remedies includes 15 unique cocktails, such as Tree Top Squirrel, Scintillant Fig and Crystal Sidecar, with all cocktail syrups and shrubs made in house. “Simpler Thymes is one of my favourites,” says Bye. “It’s made with vodka, Campari, thyme balsamic simple syrup and served with a Pop Rock swizzle stick.” While Bye hopes patrons will fall in love with the fare, the real heart of Ampersand | 27 is the staff. “I often think how lucky I am to have the staff I do,” he says. “I’m not a one man show. Some of my staff have worked with me on and off for the past seven years.” Bye’s commitment to people goes further than his guests and his staff. Ampersand | 27 is passionately local, benefitting the Edmonton community at large. The coffee mugs were handcrafted by a local artist and filtered water sales benefit the Stollery Children’s Hospital. rom a young age, Chef Nathin Bye was drawn to the kitchen and all that happens within. From the warmth and comfort of time-tested meals at home to palate expanding journeys abroad, food inspired Bye to pursue a career in the hospitality industry. Completing his education at NAIT in Edmonton, he went on to hone his culinary skills at the Fairmont Jasper Park Lodge, then the Westin, Boulevard and Lazia in Edmonton. Eventually, he would help spearhead Wildflower Restaurant. “I’ve always worked in the kitchen,” recalls Bye. “I fell in love with the smell of food, the camaraderie and the adrenaline.” Bye has competed locally, nationally and internationally. His greatest achievement is winning a gold medal in the pastry category at the 2004 I.K.A. Culinary Olympics. “It was an honour,” he says. He is also two-time champion of the Gold Medal Plates competition in Edmonton. With 15 years industry experience and a myriad of competitions, awards and accolades behind him, this fall Bye opened his first signature restaurant in his hometown of Edmonton — Ampersand | 27. From drinks to dessert, the Ampersand | 27 experience is crafted to be different. I

f you’ve never tried a Salt and Vinegar Chip Chocolate Bar, you’re probably not alone. Award-winning chocolatier Rebecca Grant crafts some truly unusual flavour combinations for her delicious handmade chocolates. In fact, if you were ever curious what pepper, lime or raspberry tastes like paired with chocolate, Grant is the person to go to for the flavour adventure. “I like to try to come up with unique flavours that you may not find together anywhere else,” she says. “I’m a trained chef, so I like to play with the savoury flavours.” Grant, owner of the Violet Chocolate Company, makes artisanal chocolate bars, truffles and chocolate confections. “I originally came up with my line of 13 bars when I started the company. My friends and I wrote all kinds of different flavours on a whiteboard and I just played around with the combinations from there.” Some of her most different bars ended up

being customer favourites, like the Salt and Vinegar Chip Bar or the Mediterranean Chocolate Bar that mixes sundried tomatoes, olives and Italian seasonings. Grant trained at the Northern Alberta Institute of Technology (NAIT), but originally had very little experience working with chocolate. A few years ago, she was presented with the opportunity to work as a head chocolatier at a company in Edmonton; she discovered her passion then and there. When the business owner eventually decided to move on to other things, Grant decided to buy the equipment and go into business herself. Even though the business is still young, the Violet Chocolate Company is already winning awards. The Honey Rosemary Chocolate Bar won the title of Best Flavoured Milk Chocolate at the Canadian National Chocolate Awards, and Grant was invited to London, England

to compete with the world finalists in the International Chocolate Awards, making it to the final round of judging. Grant’s passion and expertise as both a chef and chocolatier set her apart in the Edmonton food scene, and she isn’t slowing down. Violet Chocolate Company chocolate is now in more than 12 stores across the city, and Grant is creating new flavour profiles everyday. Grant runs her business on her own with some help from family and friends. She is a regular at farmer’s markets around Edmonton, including the 104th Street Downtown Farmer’s Market on Saturdays, the Southwest Edmonton Farmer’s Market on Wednesdays, and the 124th Street Grand Farmer’s Market on Thursdays. A strong believer in buying local and supporting the community, her customers can rest easy knowing where the products come from and where their money is

going. “With me, you are not only buying high quality chocolate, but you are also enjoying something made with many locally sourced ingredients,” she says. “By supporting me, you are supporting everyone that I support, so I feel like buying local can really help a community.” Alongside any ingredients she can source locally or grow herself, Grant uses cocoa beans from single origin plantations in Venezuela, Madagascar or Ecuador. Single origin chocolate is made from one type of the cocoa bean taken from a single plantation, and the taste reflects the flavour profiles of a given region, much like the flavours in wine. As a celiac, she makes sure her chocolate is gluten-free, as well as preservativefree and as allergy conscious as possible. “I have a few little girls who come to the market with their parents who have never really been able to eat chocolate due to peanut or dairy allergies,” she says. “It’s a great feeling seeing them eat and enjoy the experience — it makes it all worth it.” If she doesn’t have the specific flavour a customer wants, she can custom make it for them.

ed Seal Chef Rebecca Grant uses her culinary training to create unique flavour profiles in her handmade artisanal chocolates and truffles. Combining unusual savory and sweet flavours, she calls upon her background in the kitchen to put together complimentary savory flavours before mixing them with the sweet chocolate to find the perfect balance in every chocolate, bar and truffle. The owner, operator and one-woman show demonstrates the power of creative thinking in the crafting of her one-of-a-kind chocolates and her growing business.

Despite training to be a chef, Grant truly found her passion in creating exceptional chocolates. “Chocolate is a different challenge everyday,” she says. “There’s always something new with it. You can go with savory or sweet - the possibilities are endless. It’s always a new challenge and there’s always a new direction that I can take it in.” Grant likes to keep her ingredients preservative-free. “Because I’m always in farmer’s markets, I’m surrounded by people using fresh ingredients and I like to do the same,” she says. Grant grows some of her own ingredients in the shop, like the rosemary for her award-winning Honey Rosemary bar, which she picks and grinds only moments before adding it to the chocolate for the freshest possible taste. While the Violet Chocolate Company is still a new business, award panelists and locals alike are recognizing Grant’s passion and expertise as a chocolatier.

Chocolate Truffle Ingredients 100 g (approx 100 ml) Whipping Cream 30 g (approx 30 ml) Corn Syrup 5 g (5 ml) butter 20 g (20 ml) Brandy (however any alcohol may be substituted) 205 g (210 ml) Dark Chocolate Dark Chocolate for dipping – as needed Cocoa Powder for finishing – as needed

(approximately one hour). Place ganache in a piping bag. Pipe into bite-size pieces. Let sit for another 20 minutes. Roll truffles into balls.

Directions

If using double-boiler, use a candy thermometer to ensure temperature does not go over 32 C (90 F). You may need to remove the chocolate from heat, let sit and cool while residual heat melts chocolate. Use a fork to completely submerge truffles in melted chocolate.

FOR THE TRUFFLE Combine the cream, corn syrup, and butter in a saucepan. Bring to a boil. Pour the hot cream mixture over the chocolate and gently mix together. Stir until chocolate is melted and ganache (cream mixture) is smooth. Gently stream in the alcohol. Cover the bowl with plastic wrap and let sit at room temperature until slightly firm

FOR DIPPING Heat chocolate for dipping in a microwave on half power for one minute increments, stirring in between to make sure chocolate doesn’t burn. Chocolate can also be melted over a double-boiler.

TO FINISH Tap off excess chocolate then cover with cocoa powder on all sides to finish.

f you believe the Old Italian proverb ‘At the table with good friends and family, you never grow old,’ then Cibo Bistro in Edmonton might as well be the fountain of youth.

Opened in 2011, Cibo Bistro is a taste of traditional Italian dining made modern and brought to Alberta. Owned and operated by couple Chef Rosario Caputo and his soon-to-be wife and managing partner Lisa Vaughn, the restaurant is unlike any typical North American Italian dining experience; instead it is one that favours sharing many different savoury courses of modern-style Italian food and wine with a group of friends or special someone, Vaughn explains. “Because Rosario and I run it as a couple, the experience is kind of like welcoming people into our home to sit down, relax and enjoy their dinner,” she says, noting the candle-filled dining room is simple, yet warm and comfortable. Cibo, pronounced Chee-bo, the Italian word for ‘food’, is a fitting name for the experience, as the bistro truly offers a stunning array of Old World favourites based on the traditions of Italian cooking. “The food is served in courses, to share and enjoy,” says Vaughn. “At Cibo, we offer a two-hour seating for small parties and a three-hour seating for larger parties because we want our

customers to have that real Italian experience.” During the three years Cibo has been open, Caputo and Vaughn have closed the restaurant twice a year to travel the globe, educating themselves in the ever changing food and beverage industry. “In this industry, it’s important that you never stop learning,” Vaughn expresses. “Every time we get back from one of our trips, Rosario is inspired and excited to bring all of the different cooking methods he’s discovered back to Edmonton to share with others.” Vaughn, formally trained in wine and currently studying to become a sommelier, is enchanted by the magic of pairing Italian wines with foods from the same country, and how those wines can enhance the flavours of the classical ingredients. Together, the couple use their combined training and knowledge to share their experience with their clientele.

In Italy, it is common for people to use the ingredients that are readily available in their region. Caputo has adopted this practice of cooking by sourcing local ingredients whenever possible. “We spend our Saturday mornings at the farmers’ markets, speaking with people who actually supply our ingredients,” he explains. “Not only do the ingredients taste better because they are fresh, we know how our meat suppliers raise their animals and where our vegetables are grown.” In keeping with the traditions of Italian cooking, Caputo and his team in the Cibo kitchen practice nose-to-tail cooking, which means no part of the animal remains unused. They also practice old-world techniques in hand-rolling pasta, pickling, cheese making and meat curing — a learning curve for some of those new to the kitchen but a process that educates both staff and diners, says Caputo. Above all else, it means the food served at Cibo Bistro is always fresh with a modern twist. The flavourful and diverse menu is enhanced only by Cibo’s impressive Italian wine selection, which staff is happy to help customers pair with their entrees, Vaughn says. For those just embarking on the journey into traditional Italian dining, the restaurant also offers a five-course tasting menu, with food items selected by Caputo, and paired with wines to complement their flavours by Vaughn. It’s just another way Cibo delivers a genuine Italian experience to its guests.

“The food and the wine are a very beautiful harmony when it comes to Italian cuisine,” she expresses. Ideal for intimate dinners for two or celebratory dinners for 10, Cibo Bistro brings the ingredients of Alberta and the cooking techniques of Italy together under one roof. ingredients they have which is the Italian way. A nose-to-tail cooking enthusiast, Caputo has been known to feature porchetta di testa, an Italian headcheese variety on the salumi board at Cibo Bistro. With a cooking style traced back to his Italian roots, Caputo believes in sourcing as many ingredients as possible from right here in Alberta. “We try to do as much as we can in-house, and we definitely do our best to support local food suppliers,” he says. “We value fresh, local ingredients and creating relationships with those who supply them.”

Preheat oven to 350C; mix all ingredients (minus the tomato sauce) in a large mixing bowl. Using a large spoon, scoop mixture and form into balls. Place into a large roasting pan. Pour tomato sauce over meatballs and cover with a lid or tinfoil. Place meatballs in preheated oven and bake for 1 hour. lot of people ask what wines I look for when travelling abroad. Generally, I search for local wines to enjoy with the food of the region. Most grapes have been cultivated regionally for ages, and over the years the food of the area has been styled to pair with the wines from those grapes. Some of the most enjoyable, locallyproduced wines this traveller has tasted were purchased for one or two euros at the local co-op stores or in Enotecas, where wine can be consumed along with simple and delicious local foods.

Bringing wine into the U.S. Canadians can bring 1L of alcohol (1L of spirits, wine and beer) into the U.S., regardless of the duration of the stay in the U.S., as long as the alcohol is for personal use. Canadians bringing wine back into Canada You are allowed to import only 1.5 litres (53 imperial ounces) of wine free of duty and taxes. The facts about duty-free alcohol through security Th e Tra n s p o r t a t i o n Security Administration (TSA) will permit international travellers to carry liquids in excess of 100 mL in their carry-on baggage, such as a 750 mL bottle of wine, if the bottle is “purchased in dutyfree shops and placed in secure, tamperevident bags (STEBS),” according to the TSA website. The liquids must be screened and cleared by TSA checkpoint security officers utilizing the same bottled liquid scanner technology that is used to screen medically necessary liquids in quantities greater than 3.4 ounces, according to a TSA official. Remember, don’t open the duty-free bag and drink your duty-free booze on that flight to celebrate. That’s still not allowed.

Some airports have wine stores within the main terminal and, if you are on a domestic flight and don’t have to clear customs again or go through another security checkpoint, you can buy wine at that store and carry it on board with you. The safest bet is still to check your liquids, since the agency still reserves the right to not clear your favourite drink or lotion. Liquids in metallic, opaque or ceramic bottles, or other containers that cannot be scanned properly, will not be allowed in carry-on luggage. PACKING YOUR WINES If you are checking your wines, I have a step-by-step way to pack wine for travel that has always worked for me. 1. Purchase “Wine Skins” from a local wine boutique or gift shop. These are basically bubble-wrap, sealable bags you simply slip the bottle into and seal. 2. Roll the wrapped bottles in an old bath towel, a pullover or some upholstery foam. 3. Place a layer of clothing in the suitcase and put your double wrapped bottles on top of the garments in the centre of the suitcase away from the edges. You can put the bottles into a large plastic garbage bag first if you like, just in case there is breakage during travel. Having the wine in a garbage bag may not keep your clothes dry if a bottle breaks, but it may keep broken glass out of the clothing. Good luck and bon voyage!

tepping through the 100-year-old Mexican doors of El Cortez Tequila Bar & Kitchen in Edmonton’s historic Old Strathcona district is like stepping onto a movie set from a Robert Rodriguez film. A creative collaboration between awardwinning music video director Michael Maxxis, his father Bill Graham, whose long list of credits as a train and period consultant include such productions as Hell on Wheels, Shanghai Noon, and Tideland, and rock ‘n’ roll photographer, Melanie Swerdan, makes the impressive aesthetic is no surprise. traditional interior design firm, the group worked with film and television set designers and builders. The Urban Gothic décor features graffiticovered walls, the work of renowned Los Angeles street artists, Leba, Smear, and Rekoil. Edgy and provocative, the graffiti along with the photo collages by local artist Karen Jones, mural paintings by Malorie Shmyr and neon quotes handcrafted in Edmonton by Neil Martin, are the subject of many lively conversations and an interesting backdrop for photos.

ou’re at the top of the world. The natural mountainscapes are coated with soft, powdery snow. Long, untouched descents are accompanied by the soundtrack of adrenaline pounding in your ears. You’re exhilarated: this is the adventure you’ve been waiting for. “The first heliski experience is something you will never forget,” says Bruce MacMillan of Mike Wiegele Helicopter Skiing in Blue River, B.C. “The excitement of watching the helicopter flying in to pick you up is what gets the heart rate going, and from there it’s the best skiing experience ever.” Western Canada, and British Columbia in particular, is a hot spot for the sport; the majority of the world’s heliskiing trips take place throughout the Rocky Mountains. MacMillan notes, “The fact that we ski in the lightest, most dense powder snow in possibly the world is something that you can never forget.” It seems unlikely there is anything forgettable about a heliskiing adventure. Experimented in Western Canada in the 60s, the sport grew in commercial tourism across North America and into Europe by the 1980s. “It is the best way to ski – powder snow every run, [you’ll] never ski in another person’s tracks and, of course, no lift lines!” exclaims MacMillan. “What got me hooked? The first run! I can guarantee you will have the same feeling the first time you try it.” “It” involves skiers boarding a helicopter and being flown to fresh terrain (the average ride is just minutes long) where they are dropped off with a skilled guide to experience the best run of their

lives. “We have terrain to suit all levels,” explains MacMillan of Mike Wiegele’s 1.2 million acres of terrain that spans the Cariboo and Monashee mountain ranges. While each heliskiing operation has its own unique prerequisites for skiers, MacMillan says, “If you can ski a blue run, you can come heliskiing with us. This speaks for itself, but coming with some fitness will allow you to enjoy every turn, run and day that you are skiing with us. As long as you show up with the ski attire and boots you are comfortable with for the day, we supply the rest: the latest Atomic and Völkl powder skis and the perfect deep snow boards from Burton. All safety equipment including an avalanche transceiver and backpack are standard.” If the thrill is tempting, but the fear of something going wrong lingers in the back of your mind, let it go. Skier safety is essential to the heliskiing industry and all precautions are taken. The Canadian heliskiing industry is strongly regulated with the highest safety standards in the world. Well-established systems are in place to forecast potential avalanches. “Every decision, every run, all day is based on getting the best and safest powder skiing anywhere in the world,” MacMillan explains. “We use the five-step stability forecasting system developed over 40 years ago, and have two guides, one in front and one in back, in all our 212 groups. [We] are world renowned for setting or exceeding the best, safest practices for skiing safely in the mountains.” MacMillan shares one last final piece of advice for those who are ready for an unforgettable, breathtaking adventure like heliskiing: “Be prepared to endure face shots, perma-grins and fits of childlike excitement!”.

Whether you’re transforming your cooking space from great to gourmet or simply want to introduce a few shiny new elements, you’ll find inspiration from these three stars — they know how to slice and sauté in style!

The Gwyneth: Cool Glamour Oscar-winning actress and author of cookbooks My Father’s Daughter and It’s All Good, Gwyneth Paltrow has lived — and cooked — in many luxury homes, including a mansion in London, a penthouse in New York, and a country estate in the Hamptons. Her style is cool (white is the dominant shade) and always glamorous, and the kitchens are no exception. Consider the countertops she prepares meals on in her New York apartment. White marble — softened by flowing white drapes that dress the adjacent windows — is Gwyneth’s stone of choice. If you appreciate a clean, classic look, this may be the countertop material for you. Choosing honed marble (the matte finish achieved by abrading the stone) is wise, as it’s more scratch resistant. A celebrity kitchen wouldn’t be complete without a few expert appliances. Gwyneth favours the Vitamix blender, a self-cleaning machine known for its power and precision. The other bedrooms upstairs have a Jack-and-Jillstyle bathroom that offers access from each bedroom and is functional for families with two children. The laundry room, just off the master bedroom, is another example of a beautifully functional space. They have plenty of detail and take time to build.” The level of detail in the design and quality of all the products used truly make Augusta Fine Homes a home like no other in the Edmonton market. “We choose higher level products for our homes’ standard offerings all around,” says Young. “And we have a great team as far as design and making sure the home works for the family or individuals purchasing.” The experienced staff at the sales centre in the Langdale show home is prepared to help all clients understand their current and long-term needs and can guide clients easily through the decisionmaking process. “We offer just about anything under the sun when it comes to style,” says Young, “from very traditional

building. “The products have to meet today’s busy lifestyle needs,” says Young, “as well as suit the Edmonton climate. We have swinging humidity here of 30 per cent in winter and 65 per cent in summer. That is hard on hardwood, for example, and that’s why we use only engineered hardwoods which are far more stable.” When the plans are finalized, Augusta Fine Homes continues to work with their clients as the home is built. “We provide opportunities for them to walk through the home as we build it,” she says. “We feel transparency during construction is important so we let them see what’s behind the walls. went to check it out and I fell in love with the staff, especially our amazing salesperson Brenda,” says Smith. She ended up purchasing a king-sized bedroom set, a dining room table and chairs and an entertainment stand. “The staff make you feel like you’re part of their family,” says Smith. “I have a 9-month old son and every time I walk in they visit with the baby. They have a lot of suggestions about the furniture, but don’t want you to overextend your means. Brenda would say, “‘Dodi, stay within your means. You can always come back and add to your choices.’”

Homeowner Dodi Smith searched the big box stores for unique furnishings for her new home but couldn’t find anything that sparked her interest. A friend suggested she check out Home Envy, a small family-run business specializing in solid wood Canadian-made furniture, built-to-order.

or Suncoast Enclosures president Randie James, there is nothing quite like the great outdoors. It’s the reason he founded his business in 1991. “Large screen enclosures in warmer climates are not new,” says James. “However, I was convinced there was a definite need for a product like this in Canada.”

hen you’re attending a business networking session, your goal is to meet new people and make a good impression. Charles MacPherson, better known as Charles the Butler from his regular appearances on The Marilyn Denis Show, and best-selling author of The Butler Speaks, says, “Everyone is attracted to selfconfidence, whether you’re at a networking event or at a wedding.
