More Than Jus T Security

Founded in 2006, Marshall Security has been proudly serving the greater northern areas of Durban for the last sixteen years. During this time, it has extended its areas of service and expertise to stand today as Durban’s premier crime prevention company, one that provides unrivalled offerings in the armed response, guarding and electronic security segments of the industry. Marshall Security offers their clients holistic and effective solutions by blending well-trained manpower with intelligent electronic systems, all designed to complement and maximise the effectiveness of guards on the ground.

Their specialised divisions are able to offer tailored services to residential and business estates, hotels, schools and retail outlets. Their in-house training and induction departments ensure that the right personnel are recruited, trained and deployed on to the sites for which they are best suited. Residential estate offerings include design, spec, installation and maintenance of all electronic systems, from fibre installation to the commissioning of control rooms and multi-layer platforms. They work on an outsidein approach to security, locking everything down from beyond the gate to front doors and individual premises. By combining technology with traditional security, their clients benefit from the best of both worlds and enjoy the most efficient and comprehensive service delivery available.

Highly trained and well-equipped Special Operations and Tactical Teams provide both visible deterrents and next level, highly experienced reactions to severe criminal activity in the area. This helps them to provide an effective buffer zone around their clients. Further to this, the Tactical Teams are supported by mobile K9 units that provide an invaluable level of operational effectiveness ranging from crowd control to detection and tracking. These additional offerings are designed to work in conjunction with their extensive electronic infrastructure, which includes ANPR, street cameras, street guards and a wide variety of community projects all with the ultimate goal of making the northern suburbs of Durban some of the safest areas in South Africa.

Since inception, their ethos has always been clear. They live and work in the areas they serve, as do their friends and families, with their kids going to schools there too. This means the protection of these areas is personal to them. Today, their passion and dedication for what they do remains unchanged, and because of this clients are guaranteed to receive more than security. They will receive real care and the human touch, because Marshall is driven by and for people after all.

Here’s the air fryer version of South Africa’s favourite tea-time treat.

Preparation time: 30 minutes, plus refrigeration time

Air fryer temperature: 160°C

Cooking time: approximately 60 minutes

Serves: 6 to 8

Ingredients

• 1 roll ready-made shortcrust pastry

Filling

• 600ml full-cream milk

• 2 cinnamon sticks

• 6 cardamom pods

• 90g (100ml) castor sugar

• 35g (65ml) cake flour

• 20ml cornflour

• Pinch of salt

• 40g (45ml) butter

• 3 large eggs

• 5ml vanilla essence

• Ground cinnamon or cinnamon sugar, to serve

Method

1. Grease a 15cm pie tin. Unroll the pastry onto a lightly floured surface and roll out lightly so it is a little thinner. Cut out a circle to line the pie tin. Make sure it is large enough to allow a little excess pastry to hang over the sides slightly. Place the pastry into the pie dish and prick the base a few times with a fork. Refrigerate for 30 minutes.

2. Preheat the air fryer to 160°C. Put the pie tin into the basket and cook for 15 to 20 minutes or until the pastry is firm and a light golden colour. Remove from the air fryer and cool. Use a sharp, serrated knife to trim off the excess pastry to leave a neat edge.

3. To make the filling, heat the milk with the cinnamon sticks and cardamom pods. In a bowl, stir the sugar, flour, cornflour and a pinch of salt together and set aside. Bring the milk to the boil, then reduce the heat and add the sugar and flour mixture, whisking well to prevent lumps. Cook, stirring, for 10 minutes until thickened. Remove the cinnamon sticks and cardamom pods. Add the butter.

4. Whisk in the eggs and vanilla.

5. Pour the filling into the prepared crust and cook in the preheated air fryer at 160°C for 25 to 30 minutes or until the filling is set, but still slightly wobbly. Set aside to cool.

6. Refrigerate until ready to serve. Serve sprinkled with cinnamon or cinnamon sugar.
