introduction (7ºa) These past weeks, 7A had a challenge… A challenge to prepare a food recipe with no food waste, but still remaining nutritious and edible! In 8 groups, we created/searched for a recipe with no food waste, then, we cooked, filmed, edited a video, and ate our food. It all started when we began to study Unit 6 from the book Impact 2: Are You Going to Eat That? This Unit taught us about food waste and that just because the food is ugly (it isn’t in the standards of the supermarkets) it doesn’t mean it can’t be nutritious and fresh! In these pages you will see recipes with no food waste that we’ve made and we want to involve you In our project so you can make the recipes that are registered in this book. Food waste is a global problem of impressive magnitude, with approximately one third of all the food produced being thrown away each year. This affects the economy, the food safety, and the environment. It’s crucial to implement sustainable practices in all stages of the food supply chain and to take global and local actions to face this growing issue, which intensifies the hunger and inequality problems. That’s why campaigns that talk about this subject are very important. In our state, for example, the issue of food wastage presents a significant concern. Despite the region’s agricultural abundance and a thriving food industry, a considerable amount of food goes to waste each year. As an example, according to ALESC (Agêngia Legislativa do Estado de Santa Catarina), there are around 900 thousand people hungry in the state who can only find rotten food on trash. That is, they are in a moderate or severe situation of food insecurity. There are still two million people in our state experiencing mild food insecurity. This represents 40.6% of households in Santa Catarina with some degree of food insecurity and there’re a lot of people who throw away produce just because of its shape or color. The consequences are not only economic but also environmental and social. Food waste contributes to resource depletion and increases gas emissions, while simultaneously leaves many without access to nutritious meals. In conclusion, after all the data we have presented, we hope that you have understood that the appearance of the food on supermarket shelves doesn’t really matter that much and that we should decrease the waste of food. The decision to change is ours, we don’t have much time left so we want to increase the number of conscious consumers that will not waste more food.

RECIPES (7ºA) ROYAL PIZZA (Alice D’ávila, Isadora, Larissa and Maria Luisa) The margherita pizza is a main dish, and this recipe serves 8 slices. We’re using a fridge, an oven, a round pizza pan, a pan, a spoon and a knife. INGREDIENTS For the sauce, we’re going to need: - 1 tomato - 1 onion - 1 garlic clove - a pinch of salt - a pinch of paprika - a pinch of oregano - a pinch of olive oil For the pizza, we’ll need: - 1 tomato (which totals 2 tomatoes) - 200g of cheese (you may not need to use all of it in the recipe) - a buyable/already done pizza dough (we’re not baking it) - approximately 8 leaves of basil, but it can change as your wish This recipe has 2 parts, the making of the sauce and the making of the pizza. The first thing we’re going to make is the sauce. We’ll chop the tomato, the onion and the garlic and then braise the onion and garlic in a pan with olive oil. Then, we add the tomato extract and also the chopped tomato and mix it well, adding a good pinch of salt, paprika and oregano. We’re going to stir it in medium heat until it turns into a homogeneous liquid. The second part of the recipe is the making of the pizza; we first slice the tomato and reserve it. Then, make small holes in the dough using a fork, pour the sauce uniformly over it, then spread the cheese, the slices of tomato and the leaves of basil, in this order. Then we put the pizza in the oven at 180°C and check the dough every 10 minutes until slightly browned.

CHOCOLATE CAKE WITH AVOCADO AND LEMON (Bernardo S., Bernardo G., Matias, Pedro Longo)

INGREDIENTS - 2 cups all purpose flour - 1/2 cup cocoa powder - 3/4 cup sugar - 1 1/2 tsp baking soda - 1/2 tsp salt - 1 1/2 cup milk - 1/4 cup avocado, mashed - 1 tsp lemon juice - 1 tbsp coffee beans (optional) DIRECTIONS Preheat oven to 350 degrees F. Line the bottom of two 6” baking pans with compostable parchment paper (I like to use If You Care brand, which is certified home compostable). I did not grease the bottom or sides of the pan since I did not have access to package free butter or oil. In a large bowl, sift or whisk together flour, cocoa powder, sugar, baking soda and salt. Set aside. In a blender, combine cashew milk, avocado, and optional coffee beans and blend until smooth. Coffee grounds can be strained and composted or left in the liquid. Pour the cashew milk mixture into dry ingredients and gently mix together until 90% combined. Add lemon juice and stir just until everything comes together. The lemon juice will react to the baking soda and you may see lighter colored streaks. Mix until the lemon is just stirred in. Be mindful not to over mix, as this activates the gluten in the flour and will make for a tougher cake texture. Bake for 22-28 minutes or until a skewer comes out clean if tested in the center. Let cool for a minute, then run a butter knife or offset spatula along the sides to release the cake from the pan. Continue to let cool for 10 minutes, then invert on a cooling rack to cool completely. 6


ZERO WASTE POTATO RECIPE (GABRIELA) INGREDIENTS - 6 potatoes - Salt (to taste) - Black Pepper (to taste) - Half a cup of milk - 2 tablespoons oil how to cook 1. Wash the potatoes and brush the peels to remove all the dirt. 2. Peel the potatoes and save them. 3. Wash the potatoes and put them to boil (or to cook) with salt until they are soft. 4. Rinse the potatoes and save the cooking water in a jar to make soup for another meal. 5. Mash the potatoes until they become a big ol potato blob (aka potato puree). 6. Add milk to help the potato puree get smooth. 7. Put the potato skins in a food processor and shred them into pieces. 8. Put the shredded potatoes in a baking sheet and season them with salt and black pepper. 9. Add some oil and bake them in a hot oven for 20 to 30 minutes until they are golden brown. SERVINGS 2 to 3 portions Serving Suggestions: Mashed potatoes, steak, gravy, green peas.

LEMON PIE (Clara M. and Isabel) INGREDIENTS - Cornstarch cookie - Margarine or butter - 1 box of sour cream - 1 can of condensed milk - 3 lemons - 2 eggs - Sugar PIE DOUGH: - 200 grams of crushed cornstarch biscuit - 2 tablespoons of margarine or butter METHOD OF PREPARATION 1- Grind the cornstarch cookies with a rolling pin or in the processor. 2- Then transfer it to a bowl and add 2 tablespoons of butter. 3- Mix it until it has a wet sand texture. 4- Transfer the dough to a round baking pan. 5- Press and cover the bottom and sides of the baking pan. 6- Bake in a preheated oven at 180 degrees Celsius for 10 minutes. 7- Remove it from the oven and pour the lemon filling. 8- Take it to bake for another 10 minutes. 9- Wait for it to cool down and refrigerate for 4 hours before serving. 10- Beat the egg whites with sugar, place them on top of the pie and finish with lemon zest. FILLING: - 200 grams or 1 box of sour cream - 395 grams or 1 can of condensed milk - Juice of 3 lemons - Lemon zest to decorate METHOD OF PREPARATION 1- In the blender, put 200 grams of sour cream, 395 grams of condensed milk and juice of 3 lemons. Beat until a homogeneous mixture is obtained. 2- Then pour over the dough. 8


CHANTILLY - Use the mixer to beat 2 egg whites. - Beat until it gets firm. REUSE We used the lemon peel and the eggs. We decorated the pie with little pieces of lemon on top and used the rest of it as fertilizer. We also used the eggshells as fertilizer.

BANANA CAKE - ZERO WASTE (Cauan, Eduardo and Leonardo W.) INGREDIENTS - 1 can of condensed milk - 4 tablespoons of Cocoa Powder - 1 tablespoon of butter - 4 clean bananas - 1 cup (tea) sugar - half a cup of oil - half a cup of milk - 2 cups (tea) of wheat flour - 1 teaspoon of cinnamon powder - 1 tablespoon of baking powder - half a teaspoon of cinnamon powder THE BANANA CAKE Clean the banana and leave it to rest for 15 minutes. In a container, mix the bananas, eggs and sugar. Add the oil, Milk, wheat flour, cinnamon, baking powder and mix well. In a rectangular pan (30 x 20 cm) greased with oil and sprinkled with wheat flour, pour the dough and bake in a preheated medium oven (180°C) for about 35 minutes or until, when inserting a toothpick, it comes out clean. Unmold and sprinkle with the mixed sugar and cinnamon. THE BRIGADEIRO TOP In a blender, put 2 banana peels chopped and well sanitized, 1 can of Milk, 4 tablespoons of Cocoa Powder and 1 tablespoon of butter. In a pan over low heat, place the dough obtained and stir constantly until it starts to come away from the bottom, for about 6 minutes. Turn out, let cold and put the brigadeiro top in the cake.

CARROT PEEL AND PUMPKIN SEED CAKE (Leonardo T. and Vinicius)

Yield: 20 slices INGREDIENTS - 1 cup carrot peel - 3 eggs - 1 cup of oil - ½ cup dried pumpkin seeds - 2 cups of wheat flour - 1 cup of sugar - 1 tablespoon of chemical yeast EQUIPMENT THAT YOU WILL NEED mixer blender one recipient greased form HOW TO PREPARE Mix the carrot peel, the eggs, and the oil, crush the pumpkin seeds in the blender and mix the rest of the ingredients in one recipient. Add the crushed seeds and carrot peel mix. Put it in a greased form and bake it in 200°C per 30 minutes.

ARROZ CARRETEIRO (Pedro V.)

4 servings INGREDIENTS - 500 gr of Rice - 1 kg of Yesterday’s Brazilian BBQ - 1 Onions - 3 Garlic - Black Pepper - 250 gr Tomato Sauce HOW TO MAKE - First things first, you’ll have to chop down the meat from the BBQ into small pieces and fry it in a pan with olive oil alongside onions and garlic. - With that being made, you’ll have to add rice into the pan, wait a little bit, and then add a bit of water. - When the rice is nice and soft, you can add tomato sauce and black pepper into the mixture and mix it until it gets a little bit of color. - After that, you’ll have your own traditional arroz carreteiro without any waste!

RICE BALLS (Malu, Manuela, Maria Eduarda and Giovanna) INGREDIENTS - 2 cups (tea) of cooked rice - 1 tablespoon of chopped onion - 1/2 clove of garlic - 2 tablespoons of parsley - 2 eggs - 1 cup (tea) of wheat flour - salt to taste PREPARATION METHOD 1- In a bowl, put 1 cup of rice, 1 egg, 1 tablespoon of parsley, 1 tablespoon of chives, salt to taste and half a cup of wheat flour. 2-Mix the ingredients until you have a firm dough. 3- Place the dough in spoonful in the air fryer. 6- Wait 15 minutes until ready. 7- Serve immediately. NECESSARY EQUIPMENTS 1-pot 2-fork 3-knife 4-spoon 5-airfryer This recipe makes 6 rice cakes.

APPLE PIE (Alice F., Clara L., Maria Esteves, Olívia, Sofia) INGREDIENTS For the Filling - 4 Apeel Apples peeled, sliced into 1/4”, and cored (don’t throw away the peels and cores!) - 1 tsp lemon zest - 1 tbsp lemon juice - 6 tbsp dark brown sugar, packed - 1/3 tsp salt - 2/4 tsp cinnamon - 2 tbsp all-purpose flour - 2 tbsp cornstarch For the Crust - 2¾ cup all purpose flour - ¼ cup sugar - 1 tsp salt - ¼ tsp baking powder - 14 tbsp unsalted butter (cold), sectioned into 1” pieces - 1/4 cup vegetable shortening (cold), cut into fourths - 7 tbsp very cold water For Baking - 1 egg (can substitute cream, milk, or plant-based milk) - 2 tbsp sugar HOW TO MAKE 1. Combine flour, sugar, and baking powder in a food processor, pulse a few times to mix 2. Add butter and shortening and pulse until mixture is crumbly with peanut-sized clumps 3. Add water and pulse until mixture is evenly moistened and very crumbly 4. Transfer dough to a work surface and divide into two piles, making sure that one pile is around 15% bigger than the other 5. Form each pile into balls and flatten into 5” discs 6. Wrap discs in plastic wrap and chill in the refrigerator for around an hour 16


7. Dust your work surface lightly with flour and place larger disc of dough on top 8. Sprinkle flour over the dough to avoid sticking, and use hands to knead the dough just until the dough is malleable enough to roll out 9. With a rolling pin, roll the dough out into a 13” circle, making sure to add more flour as needed to prevent it from sticking to your work surface 10. Carefully drape rolled out dough over a rolling pin and gently fit into a 9” deep-dish pie pan 11. Trim edges to ½” beyond the lip of the pie pan and turn edges under to create a rim 12. Place crust in the freezer for at least 15 minutes 13. Meanwhile, combine apples, lemon zest, lemon juice, sugar, brown sugar, salt, and cinnamon in a large bowl 14. Toss until apples are evenly coated and sugar is dissolved 15. Let sit for at least 30 minutes 16. Preheat oven to 400°F 17. Drain the apples, saving the juice in a microwave-safe bowl 18. Microwave juice until syrup is reduced by 50% (around 4 minutes) 19. Pour syrup back into the apple mixture and add flour and cornstarch, tossing to combine 20. Add filling to chilled pie pan with the bottom crust and spread evenly 21. Take the other piece of dough out of the fridge, knead, and roll into-inch circle 22. Slice into 11 1”wide strips 23. Arrange 6 strips across pie 24. Form lattice by placing remaining 5 strips diagonally across first strips, gently pressing ends into the crust edges 25. Brush lattice with beaten egg and sprinkle lightly with additional sugar 26. Bake pie for 10 minutes, then reduce temperature to 375°F 27. Continue baking until juices are thick and bubbling and crust is golden-brown, covering edges with foil if browning too quickly (around r, 1 hour 20 minutes) 28. Cool on rack for at least 1 hour

introduction (7ºB) The 7th grade has learnt this trimester how harmful food waste is. We discovered that the food and vegetables may be ugly, but still nutritious, and not always the appearance matters. With that in mind, our class decided to make a cooking book to influence and warn people about food waste, and teach others how to produce delicious, healthy and sustainable food, involving your friends and family. It is estimated that 17% of all global food production is wasted, most of it inside homes. Locations that serve food, such as restaurants for example, totalize 5% of waste. The amounts of agricultural and food waste combined represent approximately 1.3 billion tons, which is equivalent to ⅓ of everything produced in the world. The most wasted produce are fruits and vegetables. Each year, every Brazilian throws away 60 kg of food, including perfectly fresh items, such as tomatoes, bananas, oranges, leafy greens, and onions. This unnecessary waste has a big economic impact, costing Brazilian families an average of R$1.630,00 annually for families of three. Approximately 900,000 people in Santa Catarina suffer from famine. To end this, it’s vital to reduce food waste and use fresh produce before it becomes rotten, benefiting both the environment and those in need. In conclusion, that leftover pasta you just threw out… yeah, that was a bigger waste than you imagine! The increase of food waste isn’t a joke, and we are trying to help those numbers decrease in size. Our little cookbook has recipes that are nutritious, delicious and zero waste so we can tackle this problem step by step and crumb by crumb. Enjoy!

RECIPES (7ºB) APPLE CAKE RECIPE (Antônia, Laura Cardoso, Luiza e Victoria)

INGREDIENTS - three apples peeled and chopped - three spoons of butter - a cup and a half of brown sugar - a cup and a half of flour - three egg yolks - three whip egg whites - a cup and a half of oats - one spoon of baking powder - ground cinnamon to taste In a large bowl, using a hand mixer, beat the sugar, the butter, and the egg yolk. Then, whisk together the oats, the flour, the apple and if you like, the cinnamon. With the mixer on low speed, slowly beat the baking powder in the whipped egg whites until blended. Place the dough in a greased baking pan with butter and brown sugar. Preheat the oven to 180 degrees celsius Put it in the oven and bake for 35-40 minutes or until an inserted toothpick comes out mostly clean. portions: 2 medium cakes prepare time: 1 hour and a half difficulty: medium

TEA RECIPE INGREDIENTS: - 3 apple peels - 500 milliliters of water - clove - cinnamon HOW TO PREPARE: Put all the ingredients in a kettle and put it on the stove until boiling. portions: 500 milliliters prepare time: 20 minutes difficulty: easy

ORANGE CAKE (Heitor, Lucas M., Thiago T., Thomas) INGREDIENTS - 4 eggs - 2 cups of sugar - 1 cup of oil - Juice of 2 orange - Peel of 1 orange - 2 cups of wheat flour - 1 tablespoon of yeast. PREPARATION TIME Preparation time: 40min 1 Blend the eggs, sugar, oil, juice and orange peel in a blender. 2 Transfer to a bowl and add the wheat flour and yeast. 3 Bake in a preheated oven at 180 degrees in a greased and floured pan with a central hole for about 30-45 minutes. 4 Unmold the cake and dip it with the orange peel sauce. ORANGE peel INGREDIENTS Orange peel (from the oranges that we used in the cake ) Sugar Water (at room temperature) PREPARING Remove the peel with a knife, try not to cut deeply, it is best if it is shallower. Cut the peels into thin strips. Place them in a saucepan with water at room temperature. Put it on fire when it boils let it cook for 1 minute. Discard the water and fill in the pan with clean water. Return to heat until boiling, cook for 1 minute. Discard the water again and fill it in with cleaner water. Return to heat and repeat the process, bring to boil for 1 minute after. Discard the water and dry the peel with paper towels. Put the peel and sugar in a saucepan and put on fire. Always keep stirring. The sugar will melt and envelop the peel. After a few minutes it will start to sugar on the sides of the pan. From that moment leave for another 1 minute on the fire. After that it is ready to serve. 21


ZERO WASTE WAFFLES (Ana, Clara, Manuela S, Valentina) INGREDIENTS - 1 cup of all-purpose flour - 1 and a 1/2 teaspoons of baking powder - 2 tablespoons of sugar - 1 egg - 3/4 cups of milk - 2 tablespoons of butter (room temperature) METHOD OF PREPARATION 1- In a bowl mix all the dry ingredients (Flour, baking powder and sugar). 2- In a separate bowl, mix the rest of the ingredients together. 3- Next, pour all the wet ingredients with the dry, and mix until combined 4- Turn on your waffle maker at the desired heat and pour 1/4 of the mix in the machine. 6- Bake until the sides are golden brown TOPPING IDEAS Brigadeiro: In a pot on the stove (low heat) put an entire box of condensed milk, tablespoon of cocoa powder and half a box of heavy cream and mix until when you scrape the spoon on the bottom, it takes some time to go back. Place in a bowl in the fridge and wait till solid. (You can even add fresh fruit as well Apple sauce: Cut 1 ripe apple in small chunks and place in a pot on the stove (medium heat) with a tablespoon of water and 1 cinnamon stick and let it cook until the apples become soft. Mash the apples in a food processor until it becomes a baby food like consistency. Store in the fridge until cold Caramel: In a pot on low heat, place 1 tablespoon of sugar to melt. Place 1 Tablespoon of melted butter in the pan and mix well. Next and 100g of heavy cream and a pinch of salt. Mix and place into a bowl in the fridge to cool off. 22

CAKE POP (Alice, Beatriz, Isabela, Laura Kamei) INGREDIENTS FOR THE YOGURT CAKE: - 2 cups of flour - one yogurt cup. - 3 eggs - half cup of oil - one tbsp of baking powder - one cup and a half sugar To give consistence - melted chocolate. - condensed milk TO FINISH THE CAKE POP: - melted chocolate - granulated - then you put another bowl to bake. THINGS TO USE - spoon (to mix) - oven (to bake) - toothpick (to put the cake on) - Styrofoam board METHOD OF PREPARATION OF THE CAKE 1 - In a blender, place the eggs, the natural yogurt, the oil and the sugar. Blend until smooth. 2 - Then add the flour and the baking powder. Beat again. 3 - Transfer the dough to a greased and floured pan. Bake in a preheated oven at 180 degrees Celsius for 30 minutes. 4 - Add the condensed milk to the crumbled cake little by little (in threads) until it comes together. 5 - Work the dough until it reaches a firm consistency and doesn’t stick to your hands. 24


6 - Make balls with the dough the size of medium brigadeiros. 7 - Melt the chocolate. 8 - Wet the tip of the lollipop stick. 9 - Stick the cake pop ball halfway, don’t go in too deep if you can’t reach the other end. 10 - Place in the freezer until the chocolate has completely hardened (by doing this the stick won’t slip out of the dough, making it much easier to dip). 11 - After it dries completely, dip the cake pop in chocolate and decorate with sprinkles.

ORANGE PEEL CAKE (Rafel, Tiago F. Theo and Lucas C.)

INGREDIENTS - 2 cups (tea) of wheat flour - 2 cups of sugar (tea) - 1 tablespoon of baking powder - 1 orange with peel, in pieces and without seeds - 1 cup (tea) oil - 3 eggs - Margarine and wheat flour for greasing ROOF: - 1 cup (tea) of orange juice - 2 tablespoons sugar for sprinkling METHOD OF PREPARATION OF THE CAKE In a bowl, place the wheat flour, sugar and yeast. In a blender, place the orange pieces with the peel, the oil and the eggs. Beat well. Pour into the bowl and mix until you obtain a homogeneous dough. Place the dough in a greased and floured 22cm diameter pan with a hole in the middle and bake in a preheated medium oven for 30 minutes. Once the cake is cool, turn it out onto a serving plate and set aside. For the topping, mix the orange juice with the sugar well and pour over the cake. The cake serves 30 people.

SWEET POTATO CHIPS (Artur, Davi, João Gabriel, Manuela W. and Rafaela) INGREDIENTS - 1 medium sweet potato. - 1 spoon (coffee) of salt. - 1 spoon (coffee) of orégano. - 2 spoons (soup) of olive oil. METHOD OF PREPARATION 50 min 1 - wash the sweet potato and cut into very thin slices 2 - add all ingredients into a vessel. 3 - place the sweet potato slices on a greased baking tray. Don’t leave one slice on top of the other. 4 – bake them for 20 minutes in a preheated oven at 230º. 5 – turn over the slices and bake them for more 20 minutes or until golden.
