I

love where we live. Growing up in Redding is something very special. Sure, Redding may be a smaller town in relation to other bigger cities, but there’s nothing small about this place. From the big hearts that rally around those in need to the vast amount of beauty and recreation, to the entrepreneurial spirit, Redding is more than just a small town. We are doing big things. Growing up in Redding and being surrounded by so many caring and giving hearts has helped shape who I am and who I want to continue to teach future generations to become. As a nurse practitioner, it’s truly a blessing to be able to provide healthcare to several of the people that make this place such a great community. I currently work as a family nurse practitioner at Shasta Regional Medical Group, where I have worked for for 13 years. I’m continually inspired to see that sense of community and compassion echoed throughout our organization. It’s been a tough couple years for all of us in the North State between the wildfires and pandemic, but we’re bigger than all of that and have no shortage of helping hands. Being flexible and adapting to change has been extremely important for us in our city and especially in healthcare. When there are hurdles to overcome, we rally together to figure out the best way to solve the problem and help those in need. This is also true for our community. As a mother, my husband and I are committed to raising our son with the same sense of community and desire to help others, while having a lot of fun along the way in our beautiful area with our friends and family. These are just a few reasons why my family and I are proud to call Redding “home.”

AGING WELL IS about more than avoiding wrinkles (though we do appreciate a good skincare routine). Keeping our minds, bodies and spirits healthy can help us live our golden years to the fullest. We’ve collected some tips to maximize your wellness as you age. KEEP MOVING: Walking, cycling, swimming or even dancing a few times a week reduces risk of disease, improves sleep, elevates your mood and helps maintain your mobility. The Silver Sneakers program (www. silversneakers.com) provides free online classes and gym memberships for people 65 and older through select Medicare plans. The North State is one of the sunniest places on earth, which means it’s pretty easy to get outside throughout the year. Find a walking buddy and explore your neighborhood – the health app on your smartphone will even tell you how many steps you’ve walked, so set a goal and treat yourself when you achieve it. FUEL YOUR BODY: One thing hasn’t changed over time, and it’s your body’s need for fruits, veggies, lean proteins and vitamins. Reducing solid fats, processed foods, refined sugars and salt will help you stay at the top of your game.4 continued on page 18

YOUR MIND MATTERS: Life changes as we age. Kids grow up and move out, and retirement takes us out of our busy daily routine. Sometimes people discover that the long-awaited, much-anticipated end to their working days leads to unexpected feelings of sadness and even depression. The good news: It’s normal, and there are lots of ways to make that adjustment easier. Building a new routine that includes exercise, social activities, meal preparation and a hobby or two can create the structure you need to help your days be productive and worthwhile. FIND YOUR JOY: Adopting a pet, traveling, fishing, crafting, volunteering – what brings you joy? All of those things that we wished we had time to do in our younger years are now ours for the taking. Shasta College and city recreation departments offer an array of classes designed specifically for older adults, so if you’re struggling to find your niche, sign up to learn something new. CATCH THOSE ZZZS: Just like fresh produce and exercise, sleep is critical for your body’s health. Getting adequate sleep lowers the risk of disease, reduces stress, lowers risk of obesity and improves your focus. Try to go to bed and wake up at about the same time each day, and ensure your bedroom is cool, dark and quiet. Calming activities, such as taking a warm bath or meditating, can help promote a good night’s sleep. VISIT THE DOCTOR: Even if you’re in tip-top health, seeing your doctor regularly can help identify problems before they start. Make time for routine health screenings and ask your doctor how often you should come in for a visit – it will depend on your family history, health conditions, lifestyle and the like. STAY CONNECTED: Maintaining your circle of friends can get trickier as you age, but it’s important to connect with others, even from a distance. Taking a walk with a neighbor, video-chatting with a grandchild or convening a standing weekly coffee date with friends helps sustain those important relationships that enrich our lives. HOME SWEET HOME: As our needs change, our ideal housing situation may also change. The quieter, slower pace of a 55+ neighborhood might now suit your style better than a busy neighborhood full of young families. In-home care is for those who can live safely at home, but need some help with daily activities or household tasks. An independent living retirement home offers a safe environment for those who can still live independently but enjoy access to various hospitality services, while assisted living is designed for those who have difficulty with daily activities. Memory care is for those who need extra help due to memory problems. THERE ARE SOME WORDS better suited to making puns than others. “Tea” might be at the top of that list. Just ask Jorgen Stovne of NovelTea Tins, who has helped create a “novel tea” business based on his passion for word play. “The first puns, Don QuixoTea - Man of La ManChai, War & Peach and The Picture of Earl Grey came from (cofounder) Johnny Pujol’s twisted mind. From there, we spun our way to new ideas, often while spending silly amounts of time in Berkeley coffee shops,” explains Stovne, who now lives and works out of Mount Shasta. Billed as “loose leaf literature” and “punny tea for book lovers,” the concept behind NovelTea Tins is a carefully curated variety of looseleaf teas packaged in artfully designed tins that resemble books. “Each title goes through a bit of a rollercoaster. It starts with us testing out puns to see if we can make each other laugh. Most are pretty terrible. ‘Hei-tea,’ ‘Phantom of the O-pear-a,’ ‘Fifty Shades of Earl Grey’... but occasionally something comes out of it. Then we get serious. We need to make sure the tea relates to the book so the person enjoying it can truly immerse themselves into the story. That’s why Pekoe Pan has a childlike vanilla flavor, and why Pu’er Rabbit is an earthy pu’er befit McGregor’s garden,” explains Stovne. Next comes the process of designing the book tin, which Stovne admits often takes more time than the puns. “We handpick artists who can make the design feel beautiful, but also befitting the story and

theme. I think all of that hard work comes through in the end. And then we allow ourselves to all be funny again.” Originally from Scandinavia by way of Canada, Stovne founded the company with his friend, Pujol, after moving to America. “The idea originally came from Johnny. I was sleeping on his couch in Berkeley and we started talking. He was a fountain of puns and literary references, and I was new to the U.S. and needed a job. I had left behind a job as an advertising art director in Toronto, so when he suggested a Kickstarter campaign for the idea, it seemed like a good fit for my skills. Plus, Johnny’s passion is infectious.” Stovne and Pujol actually now run two businesses together. “Today our full-time job is running another water testing company that we started around the same time, but we’ve kept NovelTea Tins alive because we love it so much.” Pujol remains in Berkeley, but Stovne and his wife, Holly Renee, relocated to Mount Shasta five years ago and package and ship the teas from there. Mount Shasta even inspired one of the blends. “Mount Shasta: Pristine Peppermint” is now sold in stores all over the United States, including Europe. According to Stovne, “Pride and Peppermint” is their best-selling tea, but for a first-time buyer, Stovne recommends “Don QuixoTea” or “Anne of Green Tea Gables,” which also happens to be Stovne’s4 continued on page 22

personal favorite. “The blend is delicious, but reading the book was such a joyous experience. Every time I see the artwork I smile as it reminds me of the book. I never realized how much I align with (character) Anne Shirley’s appreciation for all things life has to offer.” For Stovne, “a cup of tea should be a moment to reflect and take a break from everything.” He also believes it’s important to have the right blend to match the moment. “During Christmas, for example, I love cozying up on the couch with a fire and a cup of Pippi Oolongstocking. Its smoky tones take me back to Scandinavian wood cabins when I was a child and would read Pippi. Add some gingerbread and a blanket and I’m in heaven. This sparks true hygge.” (This Danish term generally means creating a warm atmosphere and enjoying the good things in life with good people.) Tea is shipped online throughout the U.S. and Canada, and NovelTea Tins offers wholesale shipping to Europe, as well. In Northern California, the teas can also be found in numerous bookstores, gift shops and “cozy cafés.” Stovne says, “We’re proud to be in several gift stores in Siskiyou County, from Ramshaw’s Home Boutique to Savory Cafe in McCloud. And check your local bookstore. We only sell to independent retailers and no longer carry our teas on Amazon.” When asked about pro tips on making the perfect cup of tea, Stovne is adamant. “Follow the directions. Certain leaves will not handle boiling water. Pay attention to dosage and steeping time.” But as to what kind of tea, Stovne is equally adamant. “Don’t let anyone tell you what tea to drink. well, fed C R E AT I N G H E A LT H I E R O U T C O M E S O N E C O U N T Y AT A T I M E BACK IN 2001, Chico State University students and advisors formed a program to help boost physical activity, nutrition, food security and health in Northern California. Now called the Center for Healthy Communities, it has expanded to include more than 30 health programs that cover 47 counties (largely due to its partnership with CalFresh). Chico State is one of the largest university centers in the 23-campus system, and its robust staff of full-time and part-time staff and interns actively seek funding and manage programs to help keep the North State fed, happy and healthy. “The far north has the poorest people in the state with the poorest health outcomes,” says Center for Healthy Communities Co-Director Stephanie Bianco. According to its research, the Center for Healthy Communities found the rate of food insecurity in Butte County was 22 percent in 2020; nearly a quarter of its population struggling. Therefore, the center created some of its most notable programs that alleviate the demand, such as the Market Match fruit and veggie incentive program, 530 Food Rescue Coalition, NorCal Alliance for Health Equality and other innovative ways to bring healthy food to its communities. “We want to be able to help people in our own backyard and expand the type of services like the Harvest of the Month program,” Center for Healthy Communities Co-Director Kristin Gruneisen adds. “We’re most focused in Butte and its surrounding counties with the Market Match program. And we recently re-introduced the Harvest of the Month program to local schools, where we procure and deliver fresh produce each month. She adds that her favorite recipe is a carrot and cabbage slaw (found on the Center for Healthy Communities YouTube page) because it’s colorful, delicious and easy to make. With an intense focus on connecting NorCal residents to fresh food, the Market Match program allows low-income residents to stretch their CalFresh dollars further by matching their funds with $10 to $15 worth of fruit and vegetables from local farmers markets. From October 2020 to September 2021, more than $136,000 CalFresh dollars were spent at 10 farmers markets in the North State, along with $82,679 Market Match dollars. The total economic impact of this program was $656,649. And that’s just a sliver of the Center for Healthy Communities’ efforts; its entire department generates an economic stimulus in the millions across all programs. “Farmers find that it increases their sales and people’s desires and self-efficacy to prepare fresh meals at home. It helps stimulate the local economy,” says Bianco. “We’re always looking toward expanding our market match program because the need exists.” One of the Center for Healthy Communities’ newer programs, the 530 Food Rescue Coalition, also helps save excess, edible food. “People are unaware that a lot of consumable food ends up in landfills. We’re trying to redirect that. We have an app that tracks how much food is rescued and where it goes,” Gruneisen says. One of the biggest challenges, though, is reaching people in remote areas of the state. “Oftentimes people think that Northern California stops in Sacramento, so we’re always reminding people what the far north looks like,” Gruneisen says.

Fortunately, its partnership with CalFresh allows the Center for Healthy Communities to keep busy year-round, figuring out ways to reach food-insecure communities while also helping students in the California State University system reach their goals in public health. Students of all backgrounds can be involved, from journalism to communications to accounting and public health administration, Gruneisen says. “Students can work with us for one semester or maybe they’ll stay with us for two years. As mentors, we help students highlight their experiences as well as gain professional skills,” she says. “We work with students in every discipline and department and help students graduate and obtain positions in all kinds of industries.” While both Gruneisen and Bianco are quite busy managing contracts, staffing, budgets, and keeping people fed with healthy food during natural disasters, wildfires and pandemics, it’s obvious they are passionate about what they do. Since basic needs such as food and housing insecurity have a significant impact on mental health, helping to alleviate that stress in a supportive environment is rewarding. “We’re feeding people who are hungry and escape the cycle of poverty while helping students succeed. “TRIPUTI” IS A Sanskrit word meaning the triad, or union, of Dhyata, Dhyeya and Dhyana. Although somewhat complex to explain, Yuko Matsuda-Peluso of Yuko Yoga in Etna translates it as the union of body, breath and mind. “First, you need to concentrate your mind, or be mindful of your action and movement. Second, you must maintain a certain quality of your breathing because the breath represents your state of mind. Lastly, you must find your yoga pose which is both easy and steady. When all three aspects of your body, breath and mind are in harmony, you practice yoga correctly,” explains Matsuda-Peluso. For Matsuda-Peluso, yoga isn’t just a practice. It’s a way of life. “I was stressed out working in the corporate world and found yoga was my retreat. I met a yoga teacher who always combined wisdom into her instruction. She became my role model and I started to believe that her power, which empowered me, had something to do with yoga. Yoga became no longer just a physical exercise to me, but rather a philosophy. So, I started searching for yoga training where I could learn what yoga is,” recounts Matsuda-Peluso. After graduating from a 200-hour course in Tokyo, Matsuda-Peluso began studying around the world, from Thailand to Santa Cruz. After getting married, she landed in Etna, where she’s been teaching for nearly a decade. “I wasn’t

really trying to become a yoga instructor, it just kind of unfolded.” Before Etna, population 700, Matsuda-Peluso laughs at what she once considered a small town. “I grew up about 60 kilometers (37 miles) from Tokyo in what we called a little beach town. It had a population of about 30,000 people.” Although physical practice locations in Etna have shifted over the years, Matsuda-Peluso is celebrating Yuko Yoga’s 10-year anniversary by moving into her own studio on Etna’s Main Street. Offerings include everything from prenatal and youth yoga to relaxation and Vinyasa, a popular style of contemporary yoga that includes a certain set of movements that transition from one pose to another. “The goal of yoga is peace or to be happy, so when you look at your daily life, you can see every little bit of that happiness is actually around you. For me, that’s a high. I want people to find that happiness,” explains Matsuda-Peluso. Even during the pandemic’s full lockdown, Matsuda-Peluso continued to inspire her students to keep up their practice by offering a free class online. “I wanted it to be a reminder of happiness, especially when things were uncertain. So, any means I could find to deliver that opportunity to people, I did. The class was recorded so they didn’t have to sit through the whole hour if they didn’t want to. They could even just lay down at the Shavasana (corpse pose), and just be reminded, oh yes, yoga! That’s happiness, right?” The decision to put her class online also ended up creating additional opportunities for Matsuda-Peluso’s business. “Because I live in a town of 700 people, I thought there were limits to growth, but then you know suddenly it’s like, oh wow. Everyone wants to be online. I could reconnect to my own teachers, and friends anywhere in the world can invite me or I can take their class. COVID forced people to expand in a way that made the world really small in a comfortable way.” In the spirit of personal growth, Matsuda-Peluso is also celebrating 10 years of her studio with a brand-new teacher training course beginning in 2022. Having served previously as a faculty member for yoga schools in both Japan and Santa Cruz, she’s ready to do it on her own. “I always wanted to do a retreat or a teacher training so that I can help the yoga teacher or yoga practitioner grow. Then one day a student came up to me and said she really wanted to be trained by me, so I started to put things together. It led to me starting a course from January through March with a 200-hour teacher training.” As for the future of her business, the pandemic or her life, MatsudaPeluso is optimistic. “I’m not the half-empty person. I always see full,

David Marossy of The Healing Corner California in Redding calls it Spa Face. “They have this look on their face that looks like they shouldn’t be driving,” he says. The answer to that is the spa’s salt room, where halo therapy exposes one to a backlit Himalayan salt wall. “It’s great for relaxation and getting yourself back together after a treatment,” he adds, noting that it’s one of a long menu of treatments using natural, holistic therapies for wellness.

The Healing Corner California, opened in October 2019, is the collaborative effort of Marossy and his wife, chiropractor Carolyn Marossy, who has a practice next door. “One day she woke up inspired to build a spa to support her patients,” says David. “I was trying to retire and she wanted me to go back to work,” he says with a laugh. When the pair, who will celebrate their 40th anniversary in April, put their heads together, they knew they wanted to develop a European-style offering that would integrate with customers’ health goals. “In Europe, spas4 continued on page 34

are part of the wellness system. In the U.S., they’re a luxury.” The goal at The Healing Corner is to have luxury services at a price point customers can fit into their wellness budgets. “We try to bring back really good value for your money,” says David. “We went to Reno at the Atlantis Hotel and Spa and worked with their designer,” says David. “All our products are natural and organic and come from Austria and Germany. We try to use the best of materials and equipment and get good therapists. It makes for a good outcome.” In addition to the halo therapy room, the spa offers a Soft Pack Flotation Bed that allows customers to float weightless while covered in a variety of treatments, with moor mud mixed with organic olive oil being the most popular. “I call it a waterbed on steroids,” Marossy says, adding that it heats the body to a core temperature of 101 degrees and helps relax fascia. “The therapists all come in not believing in this, and now wish everyone would get this treatment before their massages.” The spa’s infrared sauna is also popular for its ability to warm the body without heating the surrounding air, providing better circulation and detoxification. “Infrared saunas help people get ready for their massages,” David says. For those who crave the comforts of water, there’s the hydrotherapy float capsule that provides a warming steam,

calming lighting and aromatherapy to relax and help stimulate the lymphatic system. “It’s great before a scrub,” he adds. Providing specialized training to their therapists is a key component of the spa’s success. “It’s all about doing the same thing on each person and yet letting them use their personal touch,” David says. This is particularly true for the steam stamp facial, which uses a system that won the “Best in Germany” European Health and Spa Award in 2016. David and Carolyn are high school sweethearts who moved to Redding in 1982 from Southern California after having children and determining that the place they loved to escape to for waterskiing vacations would be a great place to raise a family. “It was like a fairy tale,” says David. “We had a great life up here.” The children have grown and for a while lived nearby, within walking distance. Daughter Jacalyn grew up to become a chiropractor and share in her mother’s practice. She was an unfortunate victim of the Carr Fire, however, and lost her home, prompting a move to Idaho. She returns to Redding every three weeks to see patients. Since our hands first ventured into the candy bowl of Halloween, many have found it hard to stay away from the sweets of the fall and winter holidays. Gratefully, Sohnrey Family Foods offers a way to turn to snacks that are not only healthy and delicious, but also local, offering an opportunity to support the North State economy and local family farms. to flavored almonds and almond butters, the fifth-generation farmers of Sohnrey Family Foods have created a line of products that taste great and maintain the integrity of their raw ingredients. “We spend a lot of time on coming up with these flavors and not filling them up with sugar,” says Andrew Sohnrey of their line of almond butters that include plain, snickerdoodle and dark chocolate. Raw almonds are roasted in such flavors as mesquite smoke and smoky


jalapeno, which has gained quite a following, and balsamic herb, which he recommends chopped on a salad. There’s maple bacon, which he explains “is either someone’s favorite or their least favorite,” and the underrated chipotle lime, which isn’t as spicy as many fear. And, should anyone have a question about how to pronounce the ubiquitous tree nut snack, the company has a video on its website showing a tree shaker shaking the “l” out of the almond at harvest

time. A customer is more than welcome to ask for “ammonds” when they walk through the door of the family’s Oroville gift shop. Andrew and his brothers Derek and Alex, along with cousin Mike, started the retail venture of Sohnrey Family Foods in 2014. “We were looking to expand the farm,” he says. “We’d always wanted to put our name on a product. and they put their name on it.” After a brief stint using a co-packer, they took the leap to build their own manufacturing facility. Another cousin, Cyrus Sohnrey, stepped in to develop the culinary flavors and everyone took turns with quality control. “With the help of all of us we ate more almonds than probably a person should,” Andrew says. The results have gained the family a successful online and retail store that now features products primarily from the North State, but around California as well as their own. “Ninety percent of our food comes from California, and 95 percent of our product is from smaller, family-owned companies,” says Andrew. Sohnrey Family Foods has taken a significant place on the Sierra Oro Farm Trail, an endeavor to promote agritourism in Butte County, and serves as the packing facility for the product boxes the trail has developed for order. At the heart of this venture is the family’s love of farming and desire to stay profitable for the generations to come. “Truthfully, the family farm is dying,” says Andrew, who notes the stresses go beyond what Mother Nature provides and extends to complicated legal conditions that can make transfer of land to next generations expensive. “It’s extremely important to us to make sure we can keep the farm, “ he adds. “Farming is a way of life,” he says, noting that his family farms almonds, walnuts, rice and prunes. “There’s nothing else like it. We take great pride in it, and it’s hard work. We don’t want that taken away. Our kids are going to have the opportunity to farm. They can sell it if4 continued on page 42

they want, but it’s extremely important to us that they have the opportunity.” Of his dad, he says, “he wants us to have the opportunity to farm and we want our kids to have the opportunity.” Building that security was the impetus the family needed to expand their ventures. “We took a bunch of farmers and threw them into retail and we had no idea what we were doing,” he says. “The gift shop has been surprisingly successful. We didn’t think it would be quite what it was.” The company has already expanded its facility, moving from 5,000 square feet to 7,500 to accommodate its manufacturing and inventory needs. “At the rate we’re growing, it’s not super fast, but it’s not slow, either,” says Andrew. “We don’t want to be a corporate farm, but we have to keep growing to have a farm that will support seven more families.” All owners have children and growth is made with them in mind. “If we play our cards right we can continue to farm for a long time,” he adds. PLANNING AHEAD, in the form of a revocable or living trust, brings peace of mind today and makes life easier later for your loved ones upon your death. “I always advise people that if you don’t have a plan, the state of California has a plan for you and it’s called the Probate Code,” says Douglas Wright, a Redding attorney who has been providing estate planning services for the past 16 years. An estate valued in excess of $166,250 will go through the probate process if a trust has not been created, notes DeAnne Parker, a Redding attorney and certified public accountant who has been assisting clients with trusts and wills for more than 20 years. Probate is a court process involving a series of proceedings and hearings where a court-appointed administrator gathers an estate’s assets, pays any debts and expenses and distributes the remainder to those who have the legal right to inherit. It’s long, expensive – Parker says the probate costs on a $300,000 estate are approximately

$20,000 – and oftentimes it adds another layer of burden to those already dealing with grief and heartache. Long and involved proceedings are the last thing mourners should have to contend with, but that’s usually the case if a home is involved and no trust is in place. “If you own real estate, you’re going to be in court,” Wright says. Wright recalls one probate case involving a milliondollar property, five children, “a ton of infighting” and a child-support judgment that stretched out through six real estate agents and eight years. Two of the heirs died before the case was settled “and it was totally avoidable with some kind of plan.” It’s one thing to say “Mom and Dad wanted this to happen, but if it’s not in writing, that’s not going to happen. You have to follow the rules of California, and that may not possibly be what that person intended. We’ve had to cut checks to distant relatives who happen to be next in line,” Wright says.4 continued on page 46

Trusts are also important in the event of illness or incapacitation to ensure one’s end-of-life healthcare decisions are honored as well as matters like burial arrangements. The alternative is a court-appointed conservator. “With a trust, you won’t need a conservator. You can have everything managed. Their agent or whoever they appointed can take care of things,” Wright says. “It doesn’t mean you have to have a large estate,” Parker adds. “Incapacity happens to everybody, regardless of wealth. And we all have ideas of where we want our property to go. The whole idea is to carry out your wishes.” The typical fees for creating a living or revocable trust are $2,000 for a couple and about $1,750 for an individual. Fees can be a couple hundred dollars higher for more complex estates.

“My normal process is I meet with clients, they provide the financial information on their assets, I go over their wishes and their family. I prepare an estate plan that takes about two weeks, we review it and make an appointment to sign,” Parker says. “What I always hear from clients is, ‘I expected it to be more difficult.’” A last will and testament can outline what to do with possessions, identify an executor and establish guardian arrangements for minor children and other surviving dependents. This still requires probate proceedings. While most attorneys assisting with estate planning and trusts are on the up-and-up, there are some financial predators out there, warns Shasta County District Attorney Stephanie A. Bridgett. “Seniors are especially targeted as they have spent their entire lives building up their

According to the American Thyroid Association, 1 in 10 people suffer from a thyroid disorder. The thyroid is a small butterflyshaped gland in the neck that helps regulate metabolism, creating new proteins which is part of the endocrine system, and helps your body use energy and stay warm. Today, some 30 million Americans are affected by thyroid disease. If you think you or a loved one may have a thyroid condition, you should educate yourself on symptoms and treatments. Thyroid disease refers to several conditions that affect how the gland functions. The thyroid can be either overactive or underactive and both conditions can lead to health problems. Below are two of the most common thyroid diseases. HYPERTHYROIDISM- hypothyroidism is where your thyroid becomes over productive. Most common in patients under age

50, symptoms may involve an enlarged thyroid gland, insomnia, a rapid heart rate, anxiety, weight loss, increased appetite, excessive perspiration, and diarrhea. However, a senior hypothyroidism patient may only have one or two of these symptoms, which can delay or prevent accurate diagnosis. HYPOTHYROIDISM- having an under-active thyroid is also known as hypothyroidism. Essentially, this condition occurs when the thyroid glad doesn’t produce enough thyroid-stimulating hormone (TSH). Hypothyroidism’s deficiency of thyroid hormones can disrupt things such as a heart rate, body temperature, and all aspects of metabolism. Symptoms may include fatigue, cold sensitivity, constipation, dry skin, and unexplained weight gain. Thyroid awareness is the key to helping people recognize the symptoms of thyroid problems. nest egg and their assets are often more substantial,” Bridgett says, and predators will seek personal information for purposes of identity theft or other fraud. Bridgett says “red flag” behaviors to watch out for when hiring an estate planning advisor include receiving unsolicited offers; being told to take action and/or sign documents immediately; being pressured to move funds or assets to a single institution or advisor; being denied requests for copies; and being advised not to seek second opinions or share information with family members and friends. Timeliness is key, Parker says. “As an estate attorney, the worst calls I get is where they don’t have an estate plan. It’s a call from hospital and there’s no power of attorney and no one to take care of them. Or they’re without a will and only a verbal commitment that won’t get recognized. When a trust is created, everything is in place. It makes it much easier for the family.” Wright sums it up succinctly: “It’s never too early to plan. I’ve spent most of my life homeless, locked up, or on the run. Then, something changed for me. My daughter was born, and I wanted to be a better person for her and her mother. When I violated felony probation with a five-year suspended sentence hanging over me, Superior Court Judge Laura Woods showed mercy. She gave me 120 days in county jail and the Behavioral Health Court Program instead of prison. When I was released from jail, and upon graduation from BHC, I applied to the Shasta College STEP-UP program. That was the beginning of an entirely new life for me. I currently hold a 4.0 GPA, as I have for four straight full-time semesters (and two summers). I was considered for EOPS Student of the Year, and I received the EOPS Outstanding Student Award. I am a Shasta College Heavy Equipment and Heavy Logging Equipment Program graduate and have completed the Shasta College Truck Driving Program. In addition, I am on track to receive my degree in Forest Science and Technology, and I have completed Emergency Medical Responder training. I serve as president of the Shasta College Honor Society, Phi Theta Kappa, the SOAR club (Students Overcoming and Alleviating Recidivism), and I have joined Umoja. I endeavor to live a life that honors God in everything I do. Shasta is the crown jewel of the California Adventure District, and at just over 14,000 feet high, it is visible from many miles away in all directions. Every year, approximately 8,000 permits are issued to peak the mountain, but only half actually make it to the top. The success rate largely depends on your physical capabilities, but equally important is your choice of guide. 4: HIKE THE PCT The Pacific Crest Trail is, for many, the Holy Grail of hiking trails, stretching over 2,600 miles from Canada all the way down to Mexico. But if you don’t feel like hiking that distance, you can experience an epic section of the trail right here in the California Adventure District. “Section O” of the PCT is a 78-mile point-to-point trail, from Castle Crags to Burney State Park and Burney Falls. Take up to a week to escape the matrix with a group of friends and wander the trails in some of the most beautiful and remote scenery. Oh, and bring bear repellent, just in case.

5: HIKE THE LOST COAST TRAIL If you’re in the mood for something a little more brutal, the Lost Coast Trail can deliver the goods. “A healthy outside starts from a healthy inside.” -Robert Urich A LITTLE OVER a decade ago, cauliflower was little more than a standard item on a typical veggie platter, arranged next to the carrots, celery, cherry tomatoes, cucumbers and broccoli. It was considered a tried-andtrue crudité, but the cruciferous vegetable rarely was the main act. Now, cauliflower is a veritable veggie celebrity. And unlike many food fads, the cauliflower craze is just getting crazier. There are two reasons humble cauliflower appears on plates everywhere: its nutritional value and versatility. NUTRITIONAL VALUE: If you want to renew your focus on health and wellness in the new year, you can’t go wrong with adding cauliflower to your regular dietary habits. Cauliflower is naturally high in vitamins B, C and K. It also is loaded with antioxidants and phytonutrients that can protect against cancer. High in fiber, cauliflower will help you lose weight naturally and boost your digestive system. Cauliflower is also packed with choline, an essential nutrient that aids memory, mood and learning. Last year during Super Bowl weekend, Americans chowed down on 1.42 billion (yes, BILLION) chicken wings, a 2 percent increase from the previous year. “As long as people are sitting around watching TV and maybe drinking a beer, wings will remain in the game,” said Tom Super, National Chicken Council spokesman. If you want the delicious flavor of buffalo wings without all the fat and calories, cauliflower is the perfect substitute. Unlike chicken wings, cauliflower is cholesterol free and low in saturated fat. This recipe will help you reach your health goals and give you that spicy flavor. Let cauliflower take center stage on the appetizer table for your football viewing this month. You might not even miss the meat! •S


BUFFALO CAULIFLOWER Servings: 4 Prep Time: 15 minutes Total Time: 1 hour, 20 minutes

INGREDIENTS • 2 T unsalted butter • ¼ cup hot sauce • 1 T honey • 1 T lemon juice • 2 T olive oil • Dash of sea salt or kosher salt • ½ cup water (room temperature) • 8 cups cauliflower florets (about 1 medium head)

INSTRUCTIONS Step 1: Preheat oven to 400 degrees.

Step 6: Serve with bleu cheese dressing or ranch dressing or eat plain.

Step 2: Microwave butter in a small microwavesafe bowl until melted. Whisk in the hot sauce, honey and lemon juice. Set aside. Step 3: Mix olive oil, salt and water in a large bowl. Add the cauliflower and toss until well coated.

Step 4: Place the cauliflower on a rimmed baking sheet and roast until beginning to brown (about 20 minutes). Step 5: Whisk the hot sauce mixture again, drizzle over the cauliflower and toss with tongs to coat. Roast the cauliflower for another 5 minutes.

This delicious soup is made daily at From the Hearth and pairs wonderfully with grilled cheese. Be sure to stir often and scrape the bottom to ensure you don’t burn the soup. Enjoy!

INGREDIENTS:

2 28 oz. cans stewed

diced tomatoes

1 8 oz. can tomato sauce

1 T dried basil

1 tsp. salt

½ tsp. black pepper

1 T white sugar

¼ white onion, chopped

1 stalk of celery, chopped

(no leaf)

1 cup heavy cream

4 T butter

1 tsp. steak seasoning

GARNISH:

1 drizzle balsamic reduction

1 pinch shaved parmesan

1 pinch basil chiffonade

PREP TIME: 10 MINUTES

DIRECTIONS: STEP 1: Rough chop celery and onion. These will be blended later, so don’t worry about making them pretty. STEP 2: In large pot, melt butter. STEP 3: Sauté onion and celery over medium heat until translucent and tender, approximately 5 minutes. STEP 4: Add seasoning and cook for an additional minute to bloom. STEP 5: Add tomatoes and dried basil. STEP 6: Simmer for 40 minutes, stirring often. Remove from heat. STEP 7: Add heavy cream and blend with immersion mixer until smooth throughout; should take approximately 3 minutes. STEP 8: Taste and add additional salt if needed. STEP 9: Garnish with balsamic reduction, basil chiffonade and grated parmesan. STEP 10: Serve, or store in air-tight container.

Fill in the Gap CO N N E C T I N G TO C A R E F O R I N D I V I D UA L S W I T H S P E C I A L N E E D S IT IS IRONIC that an organization providing vital, life-changing communications support to some of the most underserved members of rural Northern California communities remains itself virtually unknown to many outside of the populations it serves. Connecting to Care provides supportive services for individuals with special needs, including mental and behavioral health needs, through its integrated telepsychiatry, assistive technology and tele-behavioral healthcare delivery systems. As the provider of gap essential healthcare program services for the clients of two California Department of Developmental Services Regional Centers – Far Northern in Redding and Redwood Coast in Ukiah – its reach extends across 14 counties. Working with the California Department of Education, the organization also helps all schools in the region by conducting student assessments and helping with assistive communication technology acquisition. After a device arrives, Connecting to Care staff program it and train the user how to operate it. This customized approach has proven more successful than the previous practice of a school ordering off-the-shelf equipment from a catalog before accurate assessment of a student’s needs. An augmented speech communication device helps an individual with a speech or language impairment “voice” their thoughts and needs to others. “Increasing communication skill and accessibility to environment (school, work, community) often decreases the need for medication,” says Suzi Coleman, executive director and co-founder of Connecting to Care. “Individuals are no longer dependent but can live more independently.” The individuals Connecting to Care has helped with its integrated assistive technology program go beyond the classroom, spanning not only an age range (from 2 to 80 years), but also a causative spectrum. “Many people think of developmental disability when they think of assistive technology,” Coleman says. “We also see individuals who have had a stroke or traumatic brain injury who lose their ability to communicate. We can help them, as well.”

Many of these clients are private-pay individuals seeking assessments and devices who have been referred by a physical therapist. (As a nonprofit, the organization cannot accept insurance payments.) Regardless of age or reason for the device, Coleman says the result is the same: the ability to communicate changes and empowers lives. At the heart of Connecting to Care’s operation is its telehealth service center, founded 12 years ago and located in Redding. “Today telehealth, especially with the onset of COVID, is in all of our lives,” says Coleman, “but when we broke into this industry we were pioneers and had to beg doctors to use this modality.” Coleman’s persistence and persuasion paid off. She has developed long-standing partnerships with consulting psychiatrists at the University of Southern California, Cedars-Sinai and Los Angeles Telepsychiatry. Connecting to Care facilitates specialty telepsychiatry services with these partners using HIPAA-compliant advanced camera and video technology to create a virtual clinic environment, where patient, family, physician specialists and other staff meet to collaborate on whole person care. “We’re kind of known as the agency that takes the more complex cases,” Coleman says. “Maybe someone is autistic and has a seizure disorder or has multiple sclerosis and also depression. There are more people who need specialized services than providers to deliver them, particularly in rural areas.
