As we embark on the first edition of Foodie, the latest addition to the Cornwall Living family, we find ourselves wondering why it’s taken us so long! This county, surrounded on three sides by the sea and with fertile land between coasts, is known for its natural larder. And to those who read Cornwall Living regularly, it’ll come as no surprise that it’s home not only to some of the UK’s leading restaurateurs, but also the origin for much of the country’s best meat, fish and produce. Add to this a whole raft of brewers, vintners and distillers that call the Duchy home, and it should quickly become clear why we have decided to dedicate an entire publication to culinary Cornwall!

Over the following pages there’s lots to tuck into, and we’re sure that our first edition of Foodie will provide the inspiration you need to make the very most of culinary Cornwall.

Brasserie ON THE BAY

Serving dishes big in local flavour and low in food miles, St Michaels Resort’s flagship eatery is drawing in discerning foodies from across the Duchy.

Surrounded by Falmouth’s burgeoning food scene, local boy and Executive Head Chef Darren Millgate is making waves and taking diners on a laid-back tour of Cornish fields, farms and waters at the picturesque Brasserie on the Bay.

Having trained under Michelin-starred Ben Tunnicliffe and learning his trade in the south of France, Darren has returned to his home turf with a food philosophy centred on honest, Cornish produce. “One of my earliest memories was going out with my dad on our boat at Portholland to pull up the net and see what was in store for dinner. Sometimes it was mackerel, or fiddly spider crabs, occasionally bass. The excitement of not knowing what would be in the net; that

still guides me today. It’s far more important than the flamboyance and waste of a fine-dining operation,” says Darren.

Taking regular trips to Newlyn Fish Market, Darren will run his eye over an array of hake, rays, brill, turbot and red mullet. Cornish Fish Direct co-owner Anthony is always on hand to talk Darren through his latest hauls and will point him in the direction of his prized, fresh catches, which might be farmed sea bass, smoked salmon or weaver fish. Darren will order there and then, with ideas already forming of how he’s going to prepare and plate the dish ready for the table at St Michaels.

WestCountry, getting first-hand experience of their ‘no dig, no fertiliser’ production methods. Farm owner Pete will crouch to flick the topsoil with his fingertips: “We don’t fertilise, it’s all about letting nature do its thing. All the minerals a plant could need are in the soil; we don’t dig, we just add layers of compost on top. Most of the time it’s me growing and then dad is in the packhouse.” This is music to Darren’s ears.

His food revolution at St Michaels centres on dishes big in local flavours and low in food miles: “Whatever time of year you visit us, our local food heroes will be firmly in the spotlight. Almost everything on your plate comes with a local story.” It is this level of provenance, combined with Darren’s expertise when it comes to flavour, that make his menus stand out.

The relaxed Brasserie on the Bay looks out across the shimmering seas and white sands of Gyllyngvase beach, where the morning catch is brought in each day so only the freshest fish and seafood make it to the plate. Its menus change with the seasons and uniquely rotate daily between two menus at any given time, meaning no two days are the same. Open all year round to food-lovers from near or far, the Brasserie on the Bay is forging a name for itself amongst Cornwall’s top eateries.

“The Bolenna cocktails are all hand built,” says Karen, “we don’t use pre-mixes and the difference is remarkable. One regular described them as drinking a real cocktail for the very first time and realising that in other places you’d just been served ‘fruit squash for grown-ups!’”

Stocking a range of local spirits, wines, beers and ciders, the team love to pioneer and champion the unusual ones. The constantly evolving wine list reflects their own love of wines and extensive travel that has influenced this.

Desserts never disappoint; The Bolenna Mess range of sweets are favourites based on the classic Eton mess but incorporating different seasonal fruits and flavours, and the plant-based pistachio cheesecake is to die for! Seasonal crumbles and sticky toffee puddings are there for those with heartier appetites, and local cheeses for those with less of a sweet tooth. A family-friendly restaurant at the heart of The Park Cornwall finds itself in steady hands with new Head Chef, Mark Fletcher.

For many, food holds so much more than the basic necessity of keeping our bodies strong and upright. Prepared properly, a good meal can set the world straight; it can bring with it a sense of nourishment that reaches beyond physical strength, and shared with friends or family, can become a key catalyst for the making of life-long memories.

One man who understands this philosophy is Mark Fletcher, Head Chef at The Kitchen by the Beach at The Park, Cornwall. Fringed by the edges of enchanting coastline that frame north Cornwall, The Park has taken root amongst 27 acres of tranquil gardens in a secret valley less than 300 yards from the sands of Mawgan Porth. It offers sanctuary for hundreds of visitors all year round, with accommodation ranging from luxury lodges and cosy cottages to cabins – even a village of yurts! And as we’re sure you will agree, with great accommodation, great dining should

come, which is why The Park – with Mark at the helm of its restaurant – continues to bring food to the fore.

“I started off as the KP,” says Mark, “working my way up to becoming a Chef de Partie. From there I moved onto Sous Chef, and then Head Chef. Most of the tricks I’ve learned in my trade come from the Head Chefs and Sous Chefs I’ve worked with along the way, and I wouldn’t be in this position now without the help I’ve received from them over the years.”

With an already sterling reputation, Mark works to uphold the work of his predecessors and to take the restaurant forward. Sourcing as many ingredients locally as possible and reflecting in his dishes the seasonality of Cornwall’s natural larder, the team’s menus are now renowned for an eclectic array of superb seasonal treats. “We like to try and change our menu as much as possible,” explains Mark. “For example, we’ll

soon have lamb koftas with heritage tomato salads and pitta breads. We’ll have a mushroom arancini, and a smoked haddock arancini, too. We’re also looking at putting on a pie night, with vegan and vegetarian options included, and I hope that will soon become a weekly event.”

Of course, in Cornwall, seafood is never far from the minds of those hoping to eat well. Fortunately, The Kitchen on the Beach is famed for its fresh, locally sourced catch of the day. It also has the classic fish and chips for guests in search of something more traditional, and for those seeking something off the grill, The Kitchen Beast Burger lives up to its name – a spicy beef burger loaded up with caramelised onion chutney, bacon, jalapenos and cheddar, served with seasonal fries.

As a guest here, what’s really exciting is being able to see the chefs at work. Take a seat in the restaurant’s casual seating and lounge area, grab yourself a cocktail and watch them weave their magic! The quirky, modern aesthetic welcomes you to come in and relax, and with a soft play area for little ones and even a place for the dog, everybody can enjoy a little time spent indulging at The Kitchen on the Beach.

For a dining experience that won’t be forgotten in a hurry, The Mulberry in Falmouth offers so much more than fine dining.

Begun in 2022 by chefs Harry Cartwright and Jay Brady, the opening night of The Mulberry established itself firmly as a Falmouth-fitting fusion of fine dining with a relaxed and friendly atmosphere to delight its guests, and it remains as such today.

The Mulberry has quickly found its feet as an award-winning Cornish restaurant, having won the Muddy Stilettos Best Restaurant Award for 2022 just a few months after their opening night. With local, seasonal and sustainable produce at the core of everything they do, it’s no surprise that word spread quickly, as Harry explains: “Cornwall has some of the best produce in the country, supplied by some very talented farmers and fisherman. Using local suppliers wherever possible is a core value at the Mulberry, and having a great relationship with local producers is vital to ensure the best quality ingredients.”

“We source from small-scale, passionate suppliers,” Jay adds, “such as the fantastic Pasha from Pasha’s Patch, who sends us beautiful herbs, fruits and vegetables, and asks only to be treated to an occasional meal in lieu of payment. We also supply a good deal of the ingredients ourselves, either via Harry’s many foraging escapades, or produce from my own

small holding, like the duck eggs currently on our menu.”

Sustainability is hugely important at The Mulberry, with an aim to produce as little waste as possible by making every effort to use every part of an animal, fruit or vegetable. “We order in whole cuts from Philip Warrens and butcher the meat ourselves.” Harry continues. “That way we are able to utilise off cuts of meat which may otherwise go to waste. For example, whilst the premium cuts are used in our pork tenderloin dish, offcuts from the pig help create the quail scotch eggs currently on our menu. From our whole lamb saddle we take the saddle fillet off and turn the lamb belly into lamb bacon or salt lamb to be utilised elsewhere on our menu. Left over parts of fruits may go into making gels or sorbets, and vegetables into stocks.”

Alongside an extensive wine list that is unlikely to disappoint the aficionados amongst you, as well as locally sourced spirits and fresh, seasonal cocktails to tingle the taste buds, here is a taste of Cornwall if there ever was one.

If you’re in the area and hoping to see what all the Porthleven buzz is about, where better to start than Kota or Kota Kai?

For those who’ve experienced the foodie hub of Porthleven already, restaurants Kota and Kota Kai will need no introduction. Nor will Jude Kereama, owner and Chef Patron, with multiple appearances on BBC’s Great British Menu. What you may not know, however, is what’s been happening behind the scenes at these two popular eateries, and what makes them an exciting prospect for foodies hoping to make the most of culinary Cornwall in 2023.

For starters, Ross Sloan joined the team this year as Head Chef, taking the helm at Kota Restaurant. Alongside Jude, Ross is focusing even more on working with local farmers, fishermen and suppliers. This enables him to create fun and accessible food, which supports his strong passion for zero waste and sustainability.

Now open Tuesday to Thursday for lunch between 12pm and 2pm, Ross and the team offer relaxed and informal lunches where guests can enjoy small plates, all designed so that foodies can order as few or as many dishes as they like. “We welcome guests to pop in and sample some oysters with a glass of something cold,” says Jude, “or to load up their table with lots of dishes over a leisurely lunch looking out over the harbour.”

In the evening, again, oysters are on the menu, as is Exmoor Caviar, and starting your meal with either is a great way to get in the mood for food. Follow them with a four or six-course Tasting Menu with wine pairings, and you’re in for a true foodie treat! Ever changing, Ross and Jude’s menu seeks to reflect the seasons, with fresh local produce being showcased. And not only for meat-eaters, in fact, for vegetarians and vegans, rather than offering a single, token dish, Ross produces a full menu to choose from. With wines hand-picked by Sommelier Dan Wright (or with one of his popular cocktails), dining at Kota is an experience for all.

Kota’s sister restaurant, Kota Kai, is ideally situated at the head of Porthleven’s harbour. The views here are unbeatable, gazing out across the harbour, towards the village’s iconic clocktower and over the Atlantic beyond. Open Tuesday to Saturday for both lunch and dinner, it’s a versatile space enjoyed by drinkers and diners alike. The menu, created by Jude and Head Chef Marcus Houghton, offers a range of Asian small and large plates. Heavily inspired by Jude’s multiple influences, from his Mãori and Chinese Malay heritage, to his travels around the world, it also includes more traditional favourites including burgers and fish and chips, for those who like to stick with what they know.

The Kai team are also well known for their cocktails, stirred and shaken to perfection thanks to resident mixologist, Ash Noakes, who keeps the cocktail menu fresh, drawing on spirits from around the world to create both classic and modern

drinks. Open to all, Kota Kai is family friendly and perfect for groups and events of all sizes, with alfresco dining available. It’s the perfect place to grab a bite all year round, even in the winter, when the team host popular Asian Menu Nights, Christmas parties, movie nights, and delicious Sunday roasts, allowing guests to escape the cold after a blustery walk along the coast path.

For a Cornish treat with a twist, Trewithen Dairy have rustled up a homemade delight that is sure to bring a smile to your face.

INGREDIENTS

125g plain flour

1 tsp baking powder

1 tsp bicarbonate of soda

1 tbsp ground ginger

1 tsp ground mixed spice

60g Trewithen Dairy

salted butter, chilled

60g caster sugar

4 tbsp golden syrup

2 bananas, sliced

200g Trewithen Dairy

Cornish clotted cream

200g dulce de leche

TREWITHEN DAIRY CORNISH CLOTTED CREAM BANOFFEE FAIRINGS

With their tell-tale crackled top, golden syrup flavour and spicy ginger bite, Cornish fairings are a step up from your everyday ginger biscuit. They were once so popular at fairs that the name stuck and they’ve been known as the fairing ever since. Trewithen Dairy has put a twist on this Cornish classic, sandwiched with the dairy’s own indulgent clotted cream in a banoffee inspired treat.

METHOD

1 Preheat oven to 180oC and line two baking trays with baking parchment.

2 Sift the flour, bicarbonate of soda, baking powder and spices into a large bowl.

3 Rub the butter into the mixture until it resembles fine breadcrumbs – a good tip is grating the block of cold butter into the flour mixture to get a good head start!

4 Stir through the sugar, before adding the golden syrup. Mix until it forms a dough but be careful not to overwork it to avoid the fairings becoming tough. Shape the dough

into a ball, wrap with cling film and chill for at least half an hour.

5 When the dough has rested, divide it into equal portions and roll each piece into a small ball. Arrange the balls on the lined baking trays with plenty of space for them to spread out in the oven.

6 Bake in the centre of the oven for approximately 10 minutes or until they’re golden and have taken on the characteristic fairing crackle. Transfer to a wire rack to cool completely.

7 When cooled, spread a thick layer of clotted cream over the flat side of the fairing. Top with slices of banana. Spread another flat side of fairing with dulce de leche and sandwich together. Repeat until all are done.

Now, along with husband Tristan and the support of his dad and brother, Bim continues to cook the authentic Thai food that Cornwall has come to know and love.

Before their move to Cornwall, the couple spent many happy years living on Koh Phangan, serving food and drink to travellers from all over the world. During that time, they learned how to cater for a wide range of tastes, taking advice and learning recipes, always expanding their menu and skills. They eventually made the move to Cornwall in 2010, introducing Thai Tuesday, an event that quickly became a sell-out, and with the knowledge that their dream was within reach, they began to build their very own Thai kitchen.

O’CLOCK?Is it gin

At the forefront of the distilling game here in Cornwall, Elemental Distilling Co are getting summer ready!

Sharing between them the responsibilities of running the business and making the gin, Joe and Nicki have been able to build a small but mighty team, who have helped craft a wonderful collection of Cornish spirits.

So, how have Joe, Nicki, kids and co managed to drive the brand forward? Well, while its roots are still firmly planted in the world of gin, Joe has always had his sights set on experimenting with something different. With this in mind, Elemental recently brought out Norvys Cornish Moorland Vodka. Norvy’s, which means ‘earth’ in Cornish, is charcoal filtered and blended with the finest spring water, sourced from Bodmin Moor. “We love where we live,” says Nicki, “and the name of our new vodka is a nod to one of our most valuable elements. Fantastic, pure, extremely smooth and versatile, this is a vodka that we are incredibly proud of and have high hopes for.”

The team have also decided to get Elemental Distilling Co beach ready, releasing an exciting new range of Beachside cans. 25ml Elemental Raspberry Gin

Sparkling white wine or Prosecco

METHOD

1 In a stemmed glass, add ice, Elemental Raspberry Gin, and pink grapefruit cordial (the Elemental team rather enjoy Cornish Country Cordials).

2 Top with sparkling white wine (one good suggestion is St Austell brand, Knightor).

3 Garnish with an orange slice and some raspberries, and simply sit back, relax, and enjoy!

From dreaming up the idea on Rock Beach while walking Blue the dog, to naming their very first still after a favourite racehorse, Bonanza Boy, life has rocked on for the team at Cornish Rock Gin, who now have a stable of eight fabulous gins and eleven amazing rums, each and every one a delight for the senses.

Today, the distillery resides in a much larger premises in Wadebridge, complete with a retail shop and trade counter, not to mention the new retail shop in Tintagel! For instance, the Dark ‘n’ Stormy is sure to please the rum lover; simply pop some ice in a Rock Gin Distillery Tumbler and add a shot of Dark Spiced Pineapple Rum and top it all off with Fever Tree Ginger Beer. For the perfect Espresso Martini, chill a martini glass and add a shot of Cornish White Espresso with a splash of Cornish Golden Vanilla Rum, topping up with cold espresso coffee.

Rock Blue Angel Gin is an all-time favourite, just pour Fever Tree Mediterranean Tonic over ice and then add Rock Blue Angel; this delicate gin will sit on top of the tonic so you get the real taste as you enjoy this drink. For the perfect dry martini, the Rock Mellow Yellow Gin is the one; pour chilled vermouth before adding the Rock Mellow Yellow Gin on top and garnish with an olive on a cocktail stick to stir with before sitting back and enjoying!

When it comes to food, Trevaskis Farm has it in spades.

With a history that spans some 40 years, Trevaskis Farm has become a go-to destination for fresh produce with provenance. Whether it be the pick-your-own, the on-site food market or the fantastic restaurant, business owner Giles Eustice’s pride and passion for this 28-acre family farm is as strong today as it was in the beginning with a firm focus on food footsteps rather than miles always at the fore.

The farm’s pick-your-own offering is hugely popular. Strawberries are grown on raised beds for easy pickings, with new varieties trialling this year. Alongside these red, juicy jewels, a wider variety of soft fruit crops such as raspberries, gooseberries, loganberries, tayberries, tumbleberries, black and redcurrants and blackberries are also available. The farm’s vegetable produce not only supplies the restaurant, but also The Market. Stocking over 5,000 different product lines, this is so

much more than a farm shop. With a bakery, fishmonger and butchery, the offering is stronger than ever and remains true to Trevaskis’ roots and values in terms of stocking the best products. A new free-from section has been introduced, which is echoed in a vegan, dairy and gluten-free set menu available in the restaurant.

The restaurant has a loyal customer following from both locals and visitors alike; some have been visiting for decades while others are just discovering this wonderful eating space for the first time. Building on the success of winter and spring set menus, these will now continue throughout the year, changing seasonally on a bi-monthly basis, and running alongside existing menus, meaning there is something for every taste. Fear not, if you are a Trevaskis devotee, family classics such as pies, burgers, roasts and children’s dishes, and of course the incredible dessert counter, will remain as well

as the warm welcome diners always receive from team Trevaskis. Trevaskis pays a premium to local Cornish farms for native south-Devon breed beef which is always on the menu alongside their own rare-breed British Lop pork, which is raised on the farm. Seasonal vegetables freshly picked from the surrounding fields grace the plates in a fusion of colour. “We have always been known for using the very best ingredients – the quality of the produce, the quality of the meat and animal welfare has always been a top priority for us,” explains Giles. “However, we are now taking a reverse look at all of the dishes. Whether it’s one of our ever-popular steak and onion pies or our famed roast menu, we will be ensuring that the food not only tastes good but looks good too.” Expect new tableware and exciting presentation this summer.

You can easily spend a day here. Treat yourself to a morning coffee or a breakfast brunch before heading into the polytunnels for some fruit picking in the summer months. Trevaskis strawberries elevate a Cornish cream tea to the next level. A long lunch in the restaurant will set you up for a stroll around the farm and when it’s time to leave, don’t forget to stock up on some essentials and ingredients for a delicious supper from The Market. This lovely circular walk always works up an appetite and so we can recommend refuelling at the Lemon Arms.
