This edition of Cornwall Living takes us on a culinary journey through some of Cornwall's finest restaurants, touching base with leading chefs who champion the vast array of local produce that makes up Cornwall's rich and bountiful larder. Rosie Cattrell tempts our taste buds in this month's cover feature from page 13. In conversation with leading chefs we hear how they are cementing Cornwall's place on the fine dining map. The foodie theme continues over the coming pages with a visit to Talland Bay Hotel (page 33) where a nine-course tasting experience is drawing gastronomes from far and wide. Food with a view doesn't come better than this and with luxury hotel rooms to retire to once replete you may want to stay forever.

We are joined once again by Jude Kereama (from page 34), Chef Patron of Kota and Kota Kai, who expounds upon the sourcing and sustainability of ingredients across the Duchy and how this has had an impact on the quality of dishes and menus across the county. However, it's not just the high-end restaurants that are leading Cornwall's culinary charge; talented bakers, baristas and brewers bring a simpler, but just as tasty, fayre to our tables. Newly opened Ladyvale Bakery at Nansledan (page 40) is a case in point. While the bakery might have just opened its doors, the baker behind it, Lara Spurrell, is no stranger to the kitchen. Having previously run an award-winning café, her cakes, bakes and high teas are perfect for those looking for indulgent sweet treats. No foodie tour of Cornwall can be taken without dropping in to one of its distilleries. Copperfish Distillery in Looe (page 36) boasts a plethora of Taste of the Awards for its range of 'proper' spirits, while Cornish Rock Gin (from page 38) has recently launched a gin in conjunction with Marie Curie, ensuring that each sip gives back to this amazing charity.

This issue also sees the return of Cornwall Living's ultimate guide to weddings. From page 43, we bring together venues, caterers, jewellers, outfitters and more in a bid to remove some of the stress of planning your nuptials, ensuring your wedding day is simply the best ever.

Slickers’ slings and essentials

Slickers has been busy selling top-quality dog products from its shop on Padstow’s North Quay high street, including a range of dog slings and carriers, which seamlessly blend quality with style, strength and comfort. Life-changing care

Cornwall Hospice Care is dedicated to providing end of life care to patients, their families and carers, making every day matter. This excellent level of specialist care is reflected in the latest impact report which details key statistics and a more indepth insight into the extraordinary work of Cornwall Hospice Care.

Chief Executive Paul Brinsley explains: “The report tells the story of our charity over the previous financial year, highlighting what we achieved from the care of 351 patients at our two hospices, to the 1,414 Lymphoedema appointments and 1,899 bereavement sessions.” Finance Director Graham Clarke adds: “Our report also celebrates the success of those teams who work hard to achieve the funding needed to provide the 24/7 care we offer to patients free of charge. Of particular note is the contribution to the care costs

of a huge £1.22million, the profit of our charity retail offer.”

The report details stories like Amanda Ray’s, whose father died peacefully at St. Julia’s in Hayle in 2021. She says: “I support Cornwall Hospice Care because I so appreciated everything they did for dad in a professional and yet warm and friendly way. I couldn’t fault any one of the whole team it takes to run St Julia’s Hospice and will always be grateful for what they did for us all.”

It’s no secret that our beautiful Duchy draws visitors from far and wide for the rich local history and startlingly beautiful scenery that frames our corner of the country, but in recent years a new focus has come to the fore to pique our interest. defines the Cornish coast, it is here that Nathan invites you on a tasting experience, as he explains: “Over the past two decades I have dedicated my craft to the pursuit of seafood excellence, uncovering original techniques and recipes whilst harnessing the nuances of classical seafood cookery. The dishes prepared at Outlaw’s New Road reflect the location and time of the ingredients gathered, even to the day; we consider the subtle changes in produce and raw components as each season evolves. Our aim is to elevate seafood.” With the option of an a la carte lunch, celebrating Nathan’s most iconic dishes from the last 20 years, or his signature seafood tasting menu for dinner, which elevates the seafood dining experience to whole new heights, Outlaw’s New Road is nothing short of a haven for any sea-foodie.

Relatively new to the scene, but nevertheless packing a punch with a Muddy Stilettos Best Restaurant Award for 2022 tucked under its belt only a few months after opening, The Mulberry in Falmouth (themulberryfalmouth.co.uk) has quickly found a firm foothold, fusing fine dining with a relaxed and friendly atmosphere to put you at ease as you sample the very best of local flavours. With chefs Harry Cartwright and Jay Brady at the helm, each bringing their own unique skills and perspectives to the plate, local, seasonal and sustainable produce is at the core of everything they do, using local suppliers wherever they can, and even foraging a lot of their ingredients themselves. Much like Ugly Butterfly, The Mulberry aims to produce as little food waste as possible, with a determination to use every part of an animal, fruit or vegetable, ordering in whole cuts of meat from butchers like Philip Warrens. While the premium cuts are used in the pork tenderloin dish, offcuts will help create the delicious quail scotch

eggs currently on the menu; anything left from the lamb saddle can be made into lamb bacon or salt lamb; and remnants of fruits and vegetables can be used in gels, sorbets and stocks. This level of attention to detail shows in the presentation and flavour of every dish on the menu, and paired with an extensive wine list and a collection of locally sourced spirits and fresh, seasonal cocktails, a visit to The Mulberry is sure to satisfy.

Finding home in The Headland Hotel, perched fifty feet up on Newquay’s Towan Headland with a view of Fistral Bay’s pounding surf and tantalising sunsets through the twelvefoot windows that stretch the length of the restaurant, is Restaurant RenMor (renmor. co.uk). Following a multi-million-pound refurbishment, impressive is an understatement when it comes to first impressions alone. Serving breakfast, afternoon tea and supper, dishes here are unfussy and luxurious, with ever-changing specials inspired by the pick of the produce delivered to the kitchen every morning. Having maintained a close relationship with the best sustainable food suppliers in Cornwall, you can expect to sample the delights of Mora Farm’s, Trenow Fields’ and Padstow Kitchen Garden’s exceptional veg; Phillip Warren’s dry-aged meat perfection; Cape and Cove Cornwall’s rare breed lamb and pork; the freshest seafood possible from Flying Fish, and, of course, Roddas’ Cornish clotted cream. “We’re blessed here by the natural bounty on our doorstep,” explains Fred Goodrich, Head Chef at RenMor.

every morning from Newquay to Newlyn, regenerative farms pushing the standards for provenance with their meat and poultry, and artisanal producers supplying wonderful seasonal veg. Restaurant RenMor celebrates all this.”

For a relaxed AA Rosette Cornish dining experience overlooking sub-tropical gardens and the dazzling sea beyond the sands of Gyllyngvase Beach, St Michaels Resort’s Brasserie on the Bay (stmichaelsresort.com) is another fine dining experience to join the burgeoning Falmouth foodie scene. Serving dishes big in local flavour and low in food miles, Executive Head Chef Darren Millgate is taking diners on a laid-back tour of Cornish fields, farms and waters, as he explains:

“Whatever time of year you visit us, our local food heroes will be firmly in the spotlight. Almost everything on your plate comes with a local story.” It is this level of provenance, combined with Darren’s expertise when it comes to flavour, that make his menus stand out. Rotating the menu daily keeps things fresh at Brasserie on the Bay, offering up the opportunity for you to try something new each time you visit; from Westcountry sirloin steak and pan-fried Newlyn hake fillet, to pea and bean gnocchi in a rich roasted tomato sauce or the saffron and samphire risotto, there’s a dish to delight all tastes. With a fervently flourishing boiling pot of fine dining restaurants left, right and centre, Cornwall is certainly headed to the top of the list when it comes to the ultimate epicurean bucket list, and once here you may be a while with all the choice around you! Wherever you find yourself pulling up a seat, be it Falmouth, Carbis Bay, Newquay, or the many other fine-dining foodie capitals here in the south west, you’re sure to find a true taste of Cornwall.

1. Spathroom

As the trend for spending more time at home doesn’t seem to be going anywhere fast, the at-home ‘spathroom’ continues to gain popularity. 2. Feature walls

If you’re wanting to make a small change that has a big impact, then a feature wall is always the way to go. Pink is proving popular, whereas oranges and greens can bring a splash of colour and vibrancy into your room. A feature wall can be created with a lick of paint, a bold tile, or even wallpaper. You can choose how much space you want to use, be it floor-to-ceiling, half-height, or even bringing your design up onto the ceiling. One advantage of a feature wall is that it offers a clever illusion of more space in smaller bathrooms by helping to blur the lines and edges of the room.

Drawing inspiration from the natural world is nothing new in bathroom design, but this season it's more prevalent than ever. Slatted wooden walls and panels are the biggest trend at the moment, as wood, especially reclaimed, brings a tactile and textural element to a scheme. Kota and Kota Kai’s Jude Kereama guides us through Cornwall’s dining evolution and the suppliers who have bolstered the Duchy’s foodie reputation.

The Cornish food scene is one of the biggest attractions for tourists wanting to come to Cornwall for a holiday. Cornwall has been named the best county to dine in outside of the capital for a few years now, beating off some tough competition from areas like Cumbria. The abundance of talented chefs and some of the best produce in the UK certainly helps us to maintain the high quality of service we provide here in the Duchy; from Launceston to Land End, I am never very far from a good meal.

However, it wasn’t always like this. Not so long ago, Cornwall had a different reputation. Although we have been famous for pasties, ice cream, Cornish cream teas and fish and chips, it was difficult to find any finer dining alternatives. Nowadays, we have an abundance of restaurants with star-quality chefs. Rick Stein and Kevin Viner made a reputation in Cornwall for delicious food several years ago, and then came names like Nathan Outlaw and Paul Ainsworth. We are also lucky enough to have a whole load of chefs winning accolades from Michelin and the AA, bringing their skills from all over Cornwall to create fantastic dishes. I am personally stunned by all of the brilliant restaurants at our disposal, ranging from lunch cafes to fine dining tasting menus. When I have friends come and visit from London, a haven for food lovers, they are always surprised by how incredible every place is, not to mention the quality and value for money.

The biggest change in the food sector, and undeniably one of the major contributors to the delicious dishes on offer here, is where we are sourcing our ingredients and the sustainability factor. We currently have a lot more information about the best seafood to buy in terms of sustainability compared to previous years. As well as this, we have an abundance of amazing suppliers, small boats and anglers who provide our restaurants with the freshest and highest-quality seafood available.

As well as sourcing the tastiest delicacies from the sea, we also have access to organic farms that provide us with the best of the season’s vegetables, fruits and herbs from the land. West Country Premium Venison looks after its deer immaculately and this is reflected in the taste of the venison, which is the best. Not only are the deer brought up on organic feed, no vaccines are used on the livestock either. They also live on a freerange farm where the abattoir and butchers are on the premises, so the deer are never under any duress. Another brilliant supplier of meat that we use are Philip Warren Butchers in Launceston. It is no surprise that this family-run business, which has traditionally aged and matured meat since 1880, were recently named UK Butcher of the Year. It is our constant determination to find the best suppliers that treat their ingredients as carefully as we do that makes dining with us in Cornwall a thing of culinary beauty.

Of course, all of this focus on prime ingredients comes at a higher cost. It often takes a lot more time, effort and money to produce high-quality ingredients which creates a challenge for us restauranteurs who are trying to keep our menu prices down. All our costs have unfortunately increased significantly over the last couple of years as wages, produce, utilities, services and essentials have all skyrocketed. While this makes it hard to keep our costs down, we certainly aren’t compromising on taste and quality with the food we’re producing; we will always champion the best local suppliers and create the tastiest, highestquality plates possible for locals and lucky visitors alike.

Based in the Cornish town of Looe, the Copperfish team have always had a determination to promote the town’s great food and drink, and this September saw the brand take pride of place as sponsor of Looe Food Festival, where it was also featured amongst some of Looe’s finest culinary talent under the bright lights of the demonstration stage.

At the very heart of what they do is great taste and quality. Rob, the distiller, works tirelessly to create the best drinks possible by keeping to a simple mantra: “proper spirits made proper”. This, in essence, means cutting corners simply isn’t an option, and only the very best ingredients and methods are used. Having established shining credentials with an award-winning range of rums, all made from scratch in Cornwall, the team have more recently focused on whiskey-style products. Launched at the festival, Kerbon made quite an entrance and was featured in the mixology session at the close of the event. But what is Kerbon? Well, if you like bourbon you’ll love this whiskey-like tipple. It is a Cornish bourbon-style spirit made from a mash of local corn, barley and wheat. After careful fermentation, the mash is distilled in a pot still and cut to retain flavour with the highest quality. This smooth white spirit has been available for a few years as Copperfish

Moonshine, after being cut to 40% ABV. The full-strength spirit, however, has been rested for some years in specially selected oak casks to develop taste and colour. The product is beautifully packaged in a bold rectangle bottle with highly embellished labels, which will no doubt shout out from the bar or shelves in store. Everyone has their individual preference but the team at Copperfish has suggested a couple of ways to make the most of the drink. Try it neat, with a little ice like traditional bourbon, or use it as a great base for an Old Fashioned. It’s also a delicious mixer, so make sure you try it with some cola. Copperfish Rum, Moonshine and Looe Gin have been awarded five Golds and four Silvers by Taste of the West, so however you take your tipple, the new Kerbon is bound to impress.

your trip is hassle-free, there is also plenty of parking right outside the shop.

Not only have the Cornish Rock Gin team moved into a larger distillery, they have also been busy opening two brand new shops, so you can now buy your favourite flavours from both Tintagel and Bude. The shop in Bude even launched its latest gin, Live the Dream, a charming dry gin that is both herbal and citrussy, balancing the flavour of rosemary with the pizzazz of lemon and orange. This was proudly done in conjunction with registered charity Marie Curie and ensures that a donation from every bottle sold goes towards the fantastic cause to help with the amazing work they do every day. Cornish Rock Gin was honoured to host Lynda Thomas, the Community fundraiser for Marie Curie, and Rachael Sundry, the team's very own regional Marie Curie nurse for the launch of Live the Dream. These boxed gin and rum gift sets in the Camelot collection make brilliant Cornish presents for those who enjoy a tasty tipple. The gins consist of Sir Galahad Classic Gin, Sir Lancelot of the Bluewater, Pendragon Pink and Merlins Magic Marmalade, while the rums include Camelot Coconut Paradise, The Holy Grail, Vanilla Knights and Sir Percival Perfect Plum. All of the gin and rum is made with passion and a lot of fun before being cut with pure Cornish spring water, striving for originality in every gin made with finely sourced local ingredients.

If moving distillery and opening two new shops weren’t enough for Cornish Rock Gin, the team are launching three new rums in October. Firstly, because it was highly requested, is the True Taste, a 57% full Navy strength rum to accompany the range of 37.5% rums. All of the rums are smooth and to be enjoyed neat or over ice and this navy strength is no exception. To bring out the

flavour even more simply, add a teaspoonful of lukewarm water. The second flavour is the Banana Blast, which speaks for itself. Full of sun-ripened bananas, incorporate this fruity flavour in a creative cocktail or enjoy by itself. Lastly is the release of the Rhubarb and Ginger Twist, a classic flavour combination that always proves popular. In this rum, the sharpness of the rhubarb turns to a sweet lingering taste with a real hint of ginger.

In 2017 Ultracardiac Ltd was born, and since Sean and Sarah have exceeded even their own expectations, winning the contracts and the trust of local hospitals across Devon and Cornwall, along with the Integrated Care Boards responsible for the echoes within the GP network and various other private institutions. Sarah explains: “We have been working closely with Royal Cornwall Hospitals Trust (Treliske) and the GP network for a couple of years now, supporting wait-list initiatives and ensuring patients receive the timely cardiac care they need. However, we have noticed a significant increase, particularly since Covid 19, of patients wanting to take more control over their health. By launching in Cornwall, we’re offering patients here that choice.”

Echocardiograms, along with electrocardiograms (ECGs), are a quick, costefficient and non-invasive way for clinicians to rule in (or, hopefully, out!) a number of cardiac conditions, and can often form the basis for further investigations. Ultracardiac specialises in these diagnostic services with a team of highly experienced and professionally accredited staff. Using software that’s cloudbased, all Echo reports can be shared with GPs, hospitals, or any other clinician in a patient’s care pathway, anywhere in the world. And whilst Ultracardiac receives a high number of referrals from various NHS sources, patients can now also self-refer, for any reason they’d like, without the need for a GP letter.

EXPLORE MOUNT’S BAY

Mount’s Bay is a stunning area of Cornwall, rich in fascinating natural history, marine heritage and marine life. The island of St Michael’s Mount is surrounded by a 12km² Marine Conservation Zone which is home to many habitats, including lush seagrass beds, where rare beauties such as the stalked jellyfish and giant goby can be found. The new marine trail was funded by the National Lottery Heritage Fund and is the culmination of Cornwall Wildlife Trust’s local ‘Your Shore’ group-project activities in the area. It runs along the iconic coast path between Newlyn and Marazion and is accessible to cyclists, dog walkers and wheelchair and mobility scooter users.

Beginning at the Newlyn fisherman statue, the trail allows you to explore the fascinating geological story of the bay. Said to have once been the site of a prehistoric forest now covered by the sea, an information board and animated video depict young people’s creative response to the idea of these lost forests. Next, you can learn about the tidal observatory at Newlyn and take part in some community science before surveying the bay for migrating birds and megafauna such as whales and dolphins with a pair of ‘Wonders of the Sea’ binoculars.

Walk around the iconic Jubilee Pool to Battery Rocks and go on a rockpool ramble to

discover some weird and wonderful wildlife, before visiting the sub-tropical St Anthony’s Garden to learn about the flora on St Michael's Mount. There is also the opportunity to take in the wooden sculptures along the Gwelen Trail, site-specific artwork for Mount’s Bay by award-winning artist Emma Smith and residents of West Penwith, before doing your bit for nature by taking part in a two-minute beach clean.

During the last section of the trail, you can visit the largest reed bed in Cornwall at Marazion Marshes, learn about one of Cornwall’s most precious marine habitats, the bay’s incredible seagrass meadows, and finish up with a visit to the famous St Michael’s Mount.
