An Italian trattoria on wheels!

Chef and entrepreneur Ugo Massabo, otherwise known as The Cornish Italian, is bringing Italian recipes and flavours combined with Cornish ingredients to his new food truck, The Italian Trattoria On Wheels (ITOW). The truck will offer both a retail and a street food experience as customers will be able to collect preordered online meals and tiramisu for their freezers whilst also enjoying on-the-spot street food, including delicious pasta dishes such as Ugo’s new Cornish carbonara and pizzoccheri pasta inspired by time spent on the ski slopes.

The Cornish Italian experienced huge success and a loyal foodie following for its online delivery service during lockdown and has since consolidated its online presence nationwide, with more than 100,000 units of award-winning TiramisUGO sold and more than 60,000 meals delivered! Ugo

is proud to create top-quality dishes (as Italians would eat at home) which are as delicious as they are authentic.

The trailer will tour various locations across Cornwall and beyond, with a full list of sites available on the website from November, as well as serving up Italian delights at festivals across the UK from February 2023. Organisers of an unusual art project launched in April to raise funds for Cornwall Hospice Care, are celebrating its success. ‘Around Cornwall in 38 Churns’ raised an incredible £48,000 for the Cornish healthcare charity!

The project was devised by Sue Dennett (pictured) of Newquay, who also wanted to showcase the county’s talented artists. It was supported by Rodda’s Creamery who donated the churns, as well as Visit Cornwall, The Bowgie Inn at Crantock, Blumen Brand and Digital, and David Lay Auctions, and culminated in the closure of an online auction at 8pm on Wednesday 21st September. The total was announced minutes after the auction closed to a gathering of artists, sponsors and supporters who were at Truro Cathedral where the churns were on display. “It was an incredible moment when the announcement was made,” says organiser Sue Dennett. “It took my breath away when the figure was revealed. I’d hoped we might reach £30,000 but this is amazing and I can’t say a big enough thank you to all those who bid, for their generosity and support.”

Artists involved included famous names such as Kurt Jackson, Michael Praed and Dick Twinney. Oli Hoare is the Head of Fundraising at Cornwall Hospice Care: “It’s still soaking in that this extraordinary project raised £48,000. It’s a fabulous amount and everyone involved should be extremely proud of what they’ve jointly achieved. It costs around £600 a day to care for a hospice patient so this project has funded 80 patient days at our two Cornish hospices. We’re overwhelmed by this success.”

Christmas greetings from Dive Project Cornwall

The 2022 Christmas Card For Good is once again raising money for Dive Project Cornwall, a cause with a simple vision: to eliminate plastic pollution and protect the marine environment to save life in our oceans for future generations to enjoy and cherish. This is one very special Christmas Card. In choosing to send it you are helping to fund a small project with big plans to improve our oceans.

Alongside an education project that is available to all secondary schools, they have now established a base in Cornwall where schools from all over the UK are invited to become familiar with the ocean. They plan to put 400 teenagers through an immersive ocean-based education programme that they will take out into the world to improve everyone’s understanding of the fragility of our oceans. Anyone who lives close to a beach will understand that this is a very real problem that seems to get worse every year.

Exploring the fragility of flight

Lepidoptera is the brand-new exhibition at Royal Cornwall Museum. In collaboration with Cornish-based artist Bridget Macklin, through her ceramic artwork and the museum’s collection of butterflies, Macklin is exploring the decline of this species in Cornwall and how their habitats are being protected today in order to reverse this damage.

Using the printing technique lithography on clay, Bridget Macklin creates a collection of fragile porcelain butterflies which tells of past abundance, whilst a cabinet of vessels references the places which Rollason frequented, the butterflies which lived there and the landscapes over which they flew.

Lepidoptera is open 15th November to 14th January and is free to visit with a £7.50 annual pass.

Modern life is busier than ever and there are times when we all feel the pressure; work, family and chores fill our days while we are constantly ‘connected’ via smartphones and social media. Music and films can be accessed on-demand, 24/7 and gone are the days where we only accessed the news via a daily newspaper or nightly programme. Technology has meant that everything is always accessible, including ourselves, and this in itself is a challenge. Sometimes, we just need to be able to disconnect and certainly our brain benefits from some quiet time where it is allowed to just be. Having this time when we can stop and take a breath and let our souls relax is essential for both physical and mental wellbeing. With this in mind, I’ve been exploring how we can take time for ourselves and, in doing so, I have discovered that Cornwall offers a series of elemental escapes.

Let’s begin with the earth; it is that which we walk upon and so its very nature is grounding. Walking is perhaps the simplest of things that we can do to help with our wellbeing as it needs little or no specialist equipment and here in Cornwall, we are fortunate to have a host of wonderful environments in which to do so. Strolling the clifftops affords us a bird’s eye view of the ocean and the ability to breathe deeply the restorative sea air. Forest bathing, a Japanese relaxation process where you are simply calm and quiet among the trees, is easily achieved in one of the Duchy’s many verdant woodlands or while strolling through a sub-tropical garden. Exercising outdoors has also become increasingly popular since the pandemic and whether you choose a beach yoga class, a park run or an al fresco boot camp, your body will benefit from both the activity as well as getting a vitamin D boost.

No mention of wellbeing in Cornwall could be without a reference to water. Its benefits have been much documented over recent years and the rise in popularity of cold-water immersion has been exponential.

Form Joe Wicks’ ice baths to the Wim Hof Method (wimhofmethod. com) many of us, myself included, are embracing the thrill of the chill. Jem Wallis from Escape Swims, providers of professional outdoor swimming and cold-water immersion sessions in Cornwall escape-unplugged.co.uk), explains why we should be seeking solace in the waves: “This lifestyle medicine brings you immediately into the present and through immersion in the cold and a focus on breathing, a connection of our bodies and mind. It brings an elevation in happiness, drive and satisfaction. Our anxieties and stresses wash away, resilience builds and our sense of wellbeing improves.” Not only is cold water therapy good for our mood, it has also been proven to help boost our immune systems and has an anti-inflammatory effect that can help with chronic conditions.

If sea-dipping feels a step too far you can always opt for a lido, where the water will be calmer. Bude Sea Pool (budeseapool.

org) is a tidal pool in north Cornwall that is a haven for safe bathing. While cold water swimming is clearly de rigeur at the moment, the restorative properties of warm water should not be overlooked. Jubilee Pool in Penzance (jubileepool.co.uk), while notable for its art deco tidal sea pool, also boasts a geothermal pool heated to between 30 and 35 degrees. Warm water is known to make your muscles relax and is very effect for rehabilitation. St Michael’s Resort in Falmouth (stmichaelsresort.com) has the largest hydrotherapy pool in the south west, with its 21 massage stations and 35-degree water, cocooning the body and facilitating gentle movement, while clifftop open-air dipping is the order of the day in Mullion Cove Hotel’s (mullion-cove.co.uk) outdoor swimming pool. Heated from March to October, here you can float, scull or swim with the warmth of the sun on your face, then when the weather turns retreat to their indoor hydrotherapy infinity pool.

As we continue our elemental wellbeing journey, the air that we breathe is well worthy of note. Some of you will be familiar with the Danish concept of ‘hygge’, but you may not have heard the Dutch expression ‘uitwaaien’. With no direct translation into a singular English word, it conveys more of an idea –one of open-air living and spending time in wild, and in particular, windy weather. The idea is that when you are outside and the wind is blowing you breathe in the new air, revitalising your body and soul.

I suppose an English version might be termed as ‘getting some air’ or ‘clearing your head’ and either way, Cornwall is a wonderful place to do so. Bedruthan Hotel and Spa (bedruthan.com) sits high up on the cliff at Mawgan Porth where its unique Sensory Spa Garden is something of a Nordic playground that combines thermal therapy with a definite sense of ‘uitwaaien’.

Yoga also teaches us the art of breathing and doing so consciously helps participants to connect with the energy within. Breathwork is meditative, restorative and revitalising…did you know there is even a yoga breath that can replace your daily caffeine fix? During Breath of Fire you inhale and exhale in a continuous breathing pattern. It can last from 30 seconds to ten minutes and those who practice it liken it to a shot of espresso! Of all the elements this is the one that embraces us in a warm hug; think flickering candlelight during a meditation practice, or a beach fire after a sea swim. Or, for total body immersion, a wood-fired hot tub. Kernow Springs (kernowsprings.co.uk) creates handcrafted wooden hot tubs fuelled by fire where you can soak away your cares. Their roaming eco spa has become a sought-after place of peace at many festivals across Cornwall and you can even recreate your own wild spa with their bespoke rental service.

Heat in the form of a sauna has been proven to have myriad health benefits. You’ll find saunas in most spas across Cornwall, but I came across one that’s unique in its location. The Sauna Society (sauna-society.com) overlooks the ocean at Watergate Bay and is inspired by Finnish sauna culture. It can be rented throughout the year by individuals or private groups and they also run restorative workshops combining breathwork, yoga, sauna and ice baths, all in a truly elemental experience.

Wherever your find your restorative moment of calm, be it in a traditional spa, on a clifftop, in the ocean or from the simple act of a walk in the countryside, embracing the elements in Cornwall is good for body, mind and soul.

Yo-ho-ho!

O ne classic gin is how it all started for Cornish Rock Gin, but now, with eight Cornish Rock Gins on sale and a very special variant to come next year, company founders George and Angie have turned their attention to rum. This new venture started with just three rums early last year, increasing to six rums by Christmas. “We now have nine glorious rums,” says Angie, “all very unique, with a new edition due to be released by mid-November ready for Christmas.

“We started with a conventional spiced rum, which is a serious peppery rum that’s delicious served with ginger ale. The real professional rum drinkers drink this neat! We then progressed to our White Espresso. This is a coffee lover’s delight, being a white rum made with espresso coffee from our nephews' farm in Kenya. This makes the best espresso martini; simply mix it with our Cornish Golden Vanilla and then add espresso coffee. Either shaken or stirred, it’s just perfect!”

Next came the pair’s Cornish Red, which Angie explains is enhanced with plump red cherries. This, she says, is delicious served with ice and a shot of Cornish Red, then

topped up with cranberry juice and garnished with a sprig of mint. This was followed by the Cornish Saffron, made with saffron grown here in Cornwall, on the Roseland peninsula. This is definitely an acquired taste, says Angie, but for those it appeals to, nothing else will do.

“The fifth rum was the start of our sweeter rums, all of which make amazing instant cocktails. Cornish Dark Spiced Pineapple, for example, is perfect mixed with either ginger ale, or to make a Dark and Stormy just mix Cornish Dark Spiced Pineapple with ginger beer. Very refreshing! This was swiftly followed by our Cornish Golden Vanilla, which is served simply over ice. Another trick with this one is to make a spectacular dessert by pouring it over vanilla ice cream.”

After this came the Cornish Coconut Paradise, which is fabulous served over ice or in a cocktail glass with sparkling water and a sprig of rosemary. Cornish Coconut Paradise also makes an instant Pinacolada; in a cocktail glass, pour a shot of Cornish Coconut Paradise, a big splash of creamed coconut milk, and top with pineapple juice. Garnish with fresh pineapple, then sit back and enjoy!

“To follow this,” says Angie, “we made our Cornish Tropics Mango & Passionfruit. This fabulous rum has so many uses, from cooking – adding to trifles or sponge puddings – to drinking neat over ice. It also makes the perfect porn star martini; put into a chilled cocktail glass a large shot of Cornish Tropics Mango & Passionfruit, add lime juice and passionfruit juice, then top with Champagne or Prosecco.”

The latest release from the ever-expanding family of Cornish Rock rums, is Cornish Devine Lime with Salted Caramel. “If you like salted caramel,” explains Angie, “then you’ll love this! Again, it’s lovely served neat over ice, however, if you’re in need of an instant margarita, you can simply add a large shot into a chilled cocktail glass – with a salted rim, of course – and top up with Fever Tree Mexican Lime Soda.”

Having already achieved so much and released such a dazzling portfolio of spirits, it would be very easy for Angie and George to sit back and reap the rewards of their hard work. But it seems that they’re not finished yet, in fact, even as we go to press, we learn that there are more rums to come! “There’s one under production now,” says Angie, “which will be released in November, and then the possibility of an extra special one in time for Christmas.” Add to this a new special gin due for release early next year, and it’s fair to say that the Cornish Rock Distillery is determined not to rest on its laurels.

A unique line of gin and rum created in the heart of Cornwall.

Distilling company, Mother’s Ruin 1751, was set up in 2018 by a family run team. Having served for 21 years in the Royal Navy (and still serving), Craig BrookHewitt entered the Cornwall Division in 2002, has since served on HMS Cornwall and has now settled in the county. Fitting then that their flagship gin, Cornish Blue Flamingo, proudly takes the name of the Duchy. Based on a classic London dry, this gin contains 16 unusual and scarce botanicals; some found growing in Cornish gardens, some locally sourced by Cornish producers (such as Black Bee Honey), and some exciting additions such as the antioxidant Açai berry sourced all the way from South America.

Their Cornish Blue Flamingo Gin is uniquely distilled with as many local fresh botanicals as possible by Craig at Colwith Farm Distillery: “I have a beautiful 200-litre copper pot still named Anthea, after my mother! Each run produces 250 to 280 bottles, or a little less if we sneak in miniatures. The full process is artisan, small batch, and most of all made with love and care, so you really know that it is handcrafted.” Their approach to sustainability is also very refreshing: “We refuse to waste anything,” adds Craig, “any excess botanicals are used to make our range of preserves.”

Alongside Cornish Blue Flamingo, Mother’s Ruin 1751 also produces Commander Fox, an authentic old Tomstyle gin, and the newly launched Sea Maiden Rum. A smooth, dark and stormy spiced tipple, Sea Maiden is a sweet serenade to the shipwrecked and those lost at sea. Smuggled from warmer shores and distilled from sugar cane molasses, Sea Maiden is infused in Cornwall with notes of vanilla, lime, cinnamon, and nutmeg. It’s then blended with Cornish spring water and bottled at 40% alcohol. Craig suggests that “it’s perfectly served chilled over ice neat or mixed with a premium cola.”

Innovative in all things, Mother’s Ruin 1751 is the first in Cornwall to launch artisan ready-to-drink double gin and tonic and a double gin and ginger ale in a can. At 8% proof, and both winning Gold Taste of the West awards, these are best served ice cold and with friends.

Food for good

Seeking a dose of elemental therapy in Cornwall has never been easier, as we discovered in this issue’s cover feature.

However, food must also play a big part in our pursuit of a feeling of wellness.

Fortunately, Cornish food is some of the best in the country, which is why some of the UK’s best chefs choose to live and work here. Jude Kereama is one of them, owner of Porthleven’s Kota and Kota Kai, and through his careful curation of Cornish ingredients, he is able to offer a culinary experience that complements those of the body and soul that Cornwall’s elemental spas provide.

“A big part of what we cook in the restaurants definitely reflects in the way that we like to eat at this time of year,” says Jude.

“With that in mind, we do tend to make sure that all of Cornwall’s seasonal ingredients are used in our dishes, which in turn are full of minerals and vitamins that we all need to stay healthy. Nowadays, we all know that we need to eat a healthy balanced meal for us to cope with our busy lives, which is why our tasting menus are a balance of all the ingredients available but with quite a light touch. But at the end of the night,” he adds, “there is still a cheeky treat of a dessert.”

What about Jude himself? As a busy restaurateur, does he find it difficult at this time of year to keep himself energised? And if so, how does he overcome it? “I apply a lot of what I believe in the restaurants to what I eat at home,” he explains. “I try and eat

light and healthy most of the time. Breakfast is normally a light granola, berries, probiotic yoghurt, nuts, and a slice of Vicky's Multigrain Bread toasted with a smear of salted butter.

“Lunch,” he continues, “is normally a light salad, or sardines on toast, fruit, hummus, or leftovers from the night before. I normally have a piece of 70% dark chocolate and coffee in the afternoon to stave off the hunger for a while. Dinner can be anything, really, but there is always a roast one night, and soup noodles on another. Otherwise, it could be anything, provided that it has a lot of vegetables with rice, potatoes, pasta, or pulses. I tend to eat as healthily as I can during the week, but then when I go out to a restaurant, I am famous for being a scoffer!”

With the days getting shorter and the winter on the way, Jude tries to get out as much as he can. “It is way too easy to slip into hibernation mode and lock yourself away and stay warm and snuggly in your house. I will try and run most days in the winter to get my boost of vitamin D from whatever sunlight is still around. This makes a huge difference to my mental wellbeing, and gives me a massive boost for the day. I have also taken up road cycling, so that should be a nice new hobby to get me out on the coming winter days.

Sometimes, though, something as simple as a blustery walk on a stormy day in Porthleven can be totally exhilarating!”

As winter sets in, Jude and his team at Kota are featuring a lot of the dishes from his past appearances on the BBC’s Great British Menu “These,” he explains, “will be the warmer dishes that I have prepared on the show over the years, and it’s something the whole team are looking forward to. There is so much thought put into the dishes, so they have their work cut out!”

Meanwhile, Kota Kai will see the return of Asian nights, where there will be different menus, from different countries, on different weeks. “It is always well received and a fun night out,” says Jude. “We also have movie nights each week, allowing guests to sit in our lounge and have table service, watch a good old movie and dine at the same time.”

Sunday roasts are also making a comeback at Kota Kai for the autumn/winter season, and Jude explains that the restaurant will also be hosting live music, with Bloody Marys available to keep the winter chill at bay. In short, there are plenty of things happening over the coming months at the two restaurants, and whether it’s from his approach to wellbeing outside of work, or how he curates his menus at his two Porthleven restaurants, I think we could all benefit from taking a leaf out of Jude’s book as we seek to embrace the colder weather ahead.

In this beautiful piece, the thin layers of glass are carefully cut to create the background image, then crushed glass (called ‘frit’) is added. Course frit adds extra texture, whilst the powdered frit creates the fluffy look of the clouds. This piece is depicted in its unfired state; it will gradually be heated in a specialist glass kiln to around 800 degrees Celsius, in a process that will take around 12 hours.

Having found her feet in the world of enchanting painted murals, Florence Super has made her mark in homes and restaurants all the over world.

Having painted her first mackerel at the age of three, Florence’s fascination for local wildlife and the salty sea has been a creative source from a very young age, and remains as such today. In her school art classes, she would find herself painting marine life onto recycled floorboards, little did she know that this would be the very start of a unique artistic career.

If you’ve visited Stein’s Fisheries and Seafood Bar in Padstow in recent years, you may have noticed a rather striking mural adorning the restaurant, bright with finely detailed fish and marine life. As her very first big commissioned installation, this is a landmark piece for Florence. Painted on 23 beautifully aged and repurposed scaffolding planks, this charming mural resides in the Fisheries as an inviting visual insight as to what may be on the menu throughout the Stein establishments.

Having painted small commissions for a few local restaurants to fuel her creativity while studying at Exeter University, Florence reached out to a group of coastal hotels and seafood restaurants during her final year, in the hopes that her fascination with marine

life might apply itself to the right setting. To her delight, a response arrived from the Stein Group requesting a five by three metre mural, kick starting her artistic career.

“I will be forever grateful for the faith placed in me so early in my career to produce this marine life mural,” Florence reflects fondly. “It certainly set the bar for my aspirations and determination to create and design with the smallest impact on the environment. My preference is to work onto recycled or reclaimed surfaces and use recycled paints where possible too."

Florence continues to produce bespoke artwork for private properties and restaurants throughout Cornwall and around the UK, but the creativity doesn't stop there – having recently launched a range of marine themed bone china homeware, it seems that the applications for Florence's unique style are endless!

Calling the harbour village of Porthleven home for more than ten years, owners of The Jewellery Workshop, Clair and Paul Pennington, create and curate an exquisite collection of jewellery, watches and gifts. The Jewellery Workshop is also home to an elaborate collection of watches such as Bauhaus, Iron Annie and Zeppelin, all of which are made near Munich by the same manufacturer to a incredibly high standard. There are lots of beautiful models in the shop available to try on and while you’re there the sparkling range of crystal gifts make perfect stocking fillers.

It is clear to see that Clair and Paul are extremely passionate about what they do, believing that jewellery is so much more than precious stones and metals. In fact, the workshop is underpinned by the understanding that jewellery can be bought, or commissioned, for any number of reasons.

“Every step of the journey is unique to the customer and it’s such a joy to be a part of it,” says Clair.

he sub-tropical garden paradise that is Trebah can be found on the banks of the Helford River. There are over 26 acres of valley garden to explore, notable for 100-year-old rhododendrons, magnolias and camellias, giant gunnera and blossoming hydrangeas. Its four miles of footpaths wend their way through secluded glades, wonderful woodlands and verdant valleys, past Mallard Pond, emerging at Trebah’s secluded private beach, Polgwidden Cove, famed as a D-Day embarkation point during World War II. While spring and summer see the garden bloom and blossom at every turn, it’s not just during the warmer months that Trebah comes to life.

As we head into winter, the garden dons a magical cloak and visitors are invited to come and experience its Christmas trail. Running from Thursday 1st December to Monday 2nd January, children (and young-at-heart adults!) are invited to explore the garden, and for those who fancy getting hands-on there will be pop-up wreath-making and terrarium workshops throughout the festive period. The ever-popular Squashbox Theatre children’s performance of the Christmassy Christmas Show of Christmassy Christmasness, will be making an appearance on Saturday 3rd December. Free with garden entry or Trebah membership, this is always a raucous and

rambunctious event with plenty of crazy characters and silly slapstick – it really is a Christmas cracker of a show.

With the children kept happy with plenty of fun and games, adults are invited to a Christmas classical music concert on Thursday 15th December. Join some of Cornwall’s top musicians for a relaxed evening of classical Christmas music, mulled wine, mince pies and Christmas shopping –perfect for putting you in that festive mood. And talking of shopping, Trebah’s gift shop is bursting with beautiful gifts; from children’s toys and games, quality artisan goods and handcrafted goods from local suppliers and Cornish makers to luxurious soaps, Trebah’s own hand cream, cosmetics bags, perfume bottles and locally handmade jewellery, that’s Christmas presents all sorted! “We like to be different,” says organiser Amy Lewis, “and that’s why we’re offering two contrasting ways to fundraise under the name of Santa. The Santa Cycle on Sunday 4th December begins in Wadebridge and follows the beautifully scenic Camel Trail right into Padstow Harbour. Here you can collect your medal and mince pie and stop to enjoy the spectacular Christmas market, before heading back to Wadebridge at your leisure. The cycle is loved by Santas of all ages and is truly a sight to behold.”

On a different level is the chance to take to the skies to raise money. “On Friday 2nd December, you’ll join a team of Santas to literally descend on Perranporth Airfield, jumping out of a plane in the name of our local charity. You’ll have a Christmas story to remember and a reindeer’s eye view of our stunning county.”

Both are the charity’s most popular Santa events and are supported by the Cornish Parachute Club at Perranporth and Bridge Bike Hire in Wadebridge.

Amy adds: “Every year Cornwall Hospice Care’s festive cheer also spreads through Cornish schools and 2022 is no exception. This December will see thousands of pupils (and teachers!) don their Santa suits and get fundraising for our two Cornish hospices. Last year our Santa Schools raised over £20,000 with fun runs, carol concerts and school dance offs.
