As I strolled through St Ives one evening this week, it struck me: what a wonderful time of year this is to visit Cornwall. While the streets played host to happy visitors, there wasn't the intensity of people and heat that we get in the summer. Although the evening required a jumper, it was actually good to feel the cool still air of an autumn evening on my face. The sea was glassy calm and crystal clear, and as the sun set it bathed the opposite shores of Gwithian in vibrant orange. Delicious smells wafted from the harbourside restaurants to a soundtrack of happy chatter and the clink of glasses as diners enjoyed eating al fresco. This tableau is not unique to St Ives at this time of year and I would urge anyone who is contemplating experiencing the Duchy out of season to do so. Discover more in our cover feature (from page 22) as we explore how to make the most of the county in the shoulder seasons.

SUNSET AT GODREVY

The iconic Godrevy Lighthouse stands sentinel at the northern tip of St Ives Bay and marks the end of the three-mile stretch of golden sand that begins at Hayle, passing through Mexico and Upton Towans before culminating at Gwithian beach. Backed by dunes, this vast beach is an ocean playground and one of south Cornwall’s most popular surf spots. For those who prefer to look upon on the waves rather than being in them, the myriad footpaths that wind across the dunes afford gentle strolls or longer walks, all with an endless ocean backdrop. The cry of gulls accompanies the sound of the waves and if you head as far as Godrevy Point you might be treated to the sight of a colony of seals as they beach on a rocky cove far beneath the clifftop. Stay awhile on a clear day and you’ll be treated to the most magical of displays as the sun dips over the horizon, setting the sky aflame.

This World Pasta Day (Tuesday 25th October), Rodda’s is adding a spoonful of wonderful to the freshest of Italian dishes in partnership with Pasta Evangelists. A precious delicacy here in Cornwall, the team at Pasta Evangelists are showing that Rodda’s clotted cream is not just for cream teas, with two new pasta recipes made special with Cornish clotted cream.

Created by Roberta d’Elia, Head Chef at Pasta Evangelists, the mouth-watering recipes include delicious Cornish crab, lemon and Rodda’s Cornish clotted cream ravioli topped with herb butter. For the vegetarian option, it’s Zucca, Parmesan and Rodda’s Cornish clotted cream ravioli on the menu.

Introducing Jo Downs’ heavenly new Kaleidoscope collection

This autumn, glass designer Jo Downs presents Kaleidoscope, the next collection in her ongoing range of artisan works. Throughout the summer, Jo has been working on an experimental new glass fusing technique using a vibrant palette of powdered enamels. The resulting pieces bring colours together in soft, dreamlike swirls reminiscent of 1980s resin art, perfected with a dazzling high-gloss finish.

“This new collection has a much softer and more sensuous look than I’ve ever created before,” says Jo, “and it’s a little bit retro in a really stylish way. I’ve had a wonderful few months working on these pieces, experimenting with new pouring techniques and colour combinations, and seeing what surprises each firing gives me. The results are so abstract that each piece

speaks for itself in a different way; they might bring to mind sea spray, or aerial views of the ocean against the beach, the sparkling heavens at night or a bright, flaming sunset. I think they are completely beautiful, and I can’t wait to see what people think of them.”

Each Kaleidoscope piece is entirely unique and is created by Jo herself or an individual member of her talented studio team. The collection launches this autumn exclusively at Jo’s Launceston and St Ives galleries, with a limited number of pieces available online.

Exploring light and landscapes

Andrew Barrowman is a painter of landscapes and seascapes based predominately from his studio at Krowji. His exhibition at the Royal Cornwall Museum, Into the Carrick Roads - Exploring Hidden Cornwall, is Andrew’s visual journey following the estuary of the Fal River as it winds its way inland, branching out into many creeks and rivers, journeying up to Truro and back along the Roseland peninsula to St Mawes.

Also opening this month is the brandnew exhibition A Different View, featuring Bryan Pearce’s life and work (pictured) in a retrospective that explores his unique eye within the context of the Modernist art movement that emerged in Cornwall in the middle of the last century. Both exhibitions are free to visit with a £7.50 annual pass.

A fresh exhibition at Wheal Martyn Clay Works

Artists in Cornwall have come together to create work exclusively for Wheal Martyn Clay Works’ new exhibition, Rooted , inspired by the history and atmosphere of the china clay museum.

The exhibition is on display in the museum’s Roger Preston Gallery, and also around the grounds, from 22nd October to 20th December, making it a must for anybody in search of ways to spend their time in the autumn.

The ceramics-focused exhibition includes a mixture of sculptures and vessels (both hand-built and thrown), alongside collaborations between ceramicists and jewellers, sound, film, painting and photography inspired by the industrial site.

A dedicated Instagram page (@rooted.cornwall) houses a selection of the artists’ current work, to allow those who are interested to follow the process. Entry to the exhibition is included within normal museum admission.

Photographer Ander Gunn has spent a lifetime turning his lens to the world. Born in London in 1932, Gunn has been a resident of London, Manchester and Yorkshire, before settling here in Cornwall in the mid-eighties. Cornwall has been a rich source of inspiration for Gunn, who not only sought to reflect its stunning natural beauty, but also to capture on film some of its most renowned artists and writers, including Barbara Hepworth, Roger Hilton, Patrick Heron, Tom Stoppard, Brenda Wooton, Karl Weshke and Kurt Jackson.

The new retrospective exhibition at the Jackson Foundation offers a small sample of Gunn’s portrait, landscape and street photography. Ander Gunn: Seven Decades can be seen alongside Kurt Jackson: Helford River in the multi-award-winning art space at St Just-in-Penwith, until 18th February 2023.

Challenge 12 funds Cornish adult hospices

When Linda Beale and Mandy Winstanley wanted to say thank you to Cornwall Hospice Care, they set themselves a tough goal; to organise and achieve ‘Challenge 12’. Taking on a dozen activities from hikes to zipwires, cycles, tattoos and more, the project was a huge success and raised an incredible £5,215 for the Cornish charity so close to their hearts.

The pair explains why: “Our lovely AnneMarie, best friend and daughter, was fortunate to spend her last days in the care of the wonderful team at Mount Edgcumbe Hospice in St Austell. From the moment she arrived the team there took charge of everything so that we could spend our precious hours with her without the worry of her medical and personal care.

“The last 12 months have been really, really hard at times, but the support from friends, family and total strangers has kept us going. The whole process has been one

of healing for us too, we’ve been able to talk and remember together and it’s gratifying to know that Cornwall Hospice Care can continue their fantastic work to help others because of the generous donations we collected throughout Challenge 12.”

Oli Hoare, Head of Fundraising at Cornwall Hospice Care, says: “It’s because of supporters like Linda and Mandy that we can keep providing our end-of-life care at both St Julia’s and Mount Edgcumbe Hospices. We’re so grateful to them for their determination and support and to everyone who supported them on their journey. I know they’ve inspired many with their challenge and their willingness to talk about the reasons why they decided to raise money.”

Bottling some Cornish spirit

We are delighted to introduce one of the first gins to be exclusively distilled and bottled in Cornwall for over 300 years. Capturing the essence of Cornwall in every bottle, using organic grain alcohol and local Cornish spring water from Bodmin Moor, Elemental is distilled at the bottom of Nicki and Joe Woolley’s garden. The couple took over the business in 2020, and with strong Cornish roots, are always looking for ways to keep their gin as low-impact as possible and so make genuinely small batches, each bottle crafted by hand.

Using a combination of 12 carefully selected botanicals, the distilling process begins by steeping them in warm organic grain spirit and Cornish spring water, which is left overnight to release the vibrant flavours and delicate oils. The liquid is then strained before being added to one of Elemental’s four, 40-litre traditional copper stills Tenna (fire), Norvys (earth), Awel (wind), and Dowr (water), which is where the alchemy begins.

Using this ‘one-shot’ distillation method, rarely used these days, means that, other than the addition of more Cornish spring water to bring it down to 42% ABV, the gin comes out of the still exactly as it goes into the bottle. Elemental is a gin that wins over the palates of the discerning, the experimental, and the impartial alike and is proud to bear the Made in Cornwall seal.

Creating bespoke balustrades for clients in Cornwall looking to make the most of their outside space, with Kestrel Specialist Handrail Systems, there’s no such thing as an off-the-shelf solution.

As an example, business Co-Director, Katie, tells us about a recent project the team were called in to help with. Here, she explains: “There was a balustrade already in use, of wooden construction, but it had been there for some time. This meant there was rot within the decking and baluster spindles. And while the balustrade did offer some privacy, it was formed by a trellis and certainly didn’t feel secure in bad weather.

“We usually only deal with the balustrade replacement,” says Katie, “but on this occasion, we removed the entire balustrade, including the decking and fascia. We installed a fully composite decking system which included a PVC joist, composite deck boards and a composite fascia. The

Downin the garden, colours may be turning to earthy russets and gorgeous ochres, preceding the falling swansong of a polarised summer, but as the leaves are being shed it may be worth looking further ahead, and here’s why.

As Kris Evans (Oltco’s Sales Support Manager) explains: “Spring and summer gardens are made in the winter, so it’s important not to neglect them over the colder months,” he advises. “Get pruning, as winter is actually the best time to do this and removing any dead leaves and branches helps get your plants in a better state for spring growth.”

Check old plant supports and garden furniture for decay, mouldy netting and broken pots, and replace where necessary. Leaves and other detritus can be raked and gathered for composting. And perhaps one of the most important things to do at this time of year is to put food out for the birds. They require high-energy (high-fat) foods during the cold winter months to maintain their fat reserves to survive the cold nights, so use only good-quality food and scraps.

Establish a feeding routine as birds will become used to it and time their visits to your garden in line with this. It’s also a good

time to engage in some garden reconfiguration.

All gardeners make their mistakes on paper and not on the soil, so get your pencil and paper out (or fire up the CAD system on your computer) and get drawing. Perhaps a new path could be introduced or an old decaying one replaced with something that is yet to show its age. Think about planting around these walkways with bedding plants such as pansies, primroses and polyanthus. Some of your favourite spring bulbs can also be introduced during the winter, so once the warmer weather arrives your garden will be teaming with colour again.

If you’re feeling more ambitious, now’s the time to lay down that outdoor summer dining area that you’ve dreamed of for so long. Opting for a resin bound or Recycle Bound patio, or pathway for that matter, means you won’t need to worry about spending hours maintaining it, as its porous and permeable properties help to minimise weed growth and puddle staining. So, think outside of winter’s confining box and be prepared!

Also known as the ‘Celtic rainforest’, this truly special habitat is becoming increasingly rare, its importance lying not only in its ability to act as a ‘carbon sink’, but also in the fact that its lush conditions are home to rare plants, lichens and fungi, as well as an array of unusual animals.

Led by Carl Rowlinson and Rai Lewis, Plant One understands that management of new woodland is as, if not more, important than physically planting trees. This is something that the founders of handcrafted timber building company Post & Beam, Tim Simpson and Tom Jubb, know only too well. “Because of the high value of land in the UK, this becomes difficult to address with private landowners. If a woodland fails, then so does the carbon offset sold with it. Plant One can pinpoint the exact planting location of the trees we purchase,” says Tom, and when you consider that a typical Post & Beam client is indirectly planting approximately 10 to 20 trees via Plant One Cornwall, this partnership is a significant force for good, supporting the rewilding of our countryside and the revitalising of the Celtic rainforest which has, perhaps, never been more important.

Some 90% of the raw material used by Post & Beam is oak, sourced from the sustainably managed forests of northern France. “French commercial oak forests are so well managed and have been for more than 300 years,” says Tom. “In partnership with the forestry management in France, we replant the equivalent of all the trees that we use in our projects.” Timber is a fantastic building material as it stores C02 for the life of the building. However, says Tom: “We also feel that it is our responsibility to encourage and promote non-commercial rewilding and native woodland creation here in Cornwall. We do it because we recognise the long-lasting effects of re-wilding, and the importance of carbon offsetting in securing a stable, green environment for future generations.”

Wedding season has been in full swing at Kilminorth over the last few months, and several beautiful couples have enjoyed this gorgeous Cornish backdrop for their special day. The first time I was invited into the Great British Menu (GBM) kitchen was in 2016. I remember the phone call vividly as if it was yesterday.

The story goes that the phone rang at Kota and I answered it and a chap introduced himself as Sam from Great British Menu. He was explaining to me that he was doing research on me and had spoken to a few people in hospitality, asking if I would be a good candidate to be on the show, and asked if I would like to apply. I panicked, and said I would call him back as I needed to ask my wife Jane. I took a deep breath and thought about whether I wanted to put myself through this trial. GBM is known to be the hardest cookery competition in the world, and I would be competing against the best chefs in the UK. It is the ultimate challenge for any chef. I found Jane and told her about the phone call. I explained about how petrified I was and that it would be the hardest thing I have ever done, and I wasn’t sure if I was up for it. She said: “You will get on that phone right now and tell Sam that you are going to do it! You will do it for me, your son, the restaurants, and yourself.” To put it another way, any success I’ve enjoyed from the show, is thanks to Jane forcing me into it!

To enter the competition is to expose yourself to the public. It is a scary prospect

to enter the kitchen and compete not only against your peers, who are amazing chefs, but also cooking in front of judges and the TV audience. The pressure is immense, with many TV cameras there to pick up every mistake. GBM is a double-edged sword and if you do well you enhance your reputation and your bookings become crazy. If you don’t, it can reflect just as strongly, but in the opposite way. The thought that your families, friends, regulars, village, and staff are all watching and the desire not to let them down adds extra nerves to your performance. Also, the fact you are in a foreign kitchen with different equipment and all the other factors taken into consideration, the GBM kitchen makes you start doubting your abilities and eats away at your confidence, especially as you look at all the other chefs cooking around you and what ingredients and recipes they have come up with. In your head, it becomes a real ‘pressure cooker’ experience.

Some of the highlights of my appearances on GBM have been making new friends with chefs I would not ordinarily have met. For the most part, the contestants become friends for life as they have all shared the highs and lows in the kitchen. Every chef who I have cooked against has agreed with how exhausting the week is. It is the mental, physical, and emotional strain that really knocks you for

six. As chefs, we are used to working long hours under extreme pressure, but this still doesn’t prepare you for GBM. At the end of the week, we all got together and shared a beer, swearing we will never do it again. Obviously, I am a sucker for punishment as I have now appeared on the show four times! But after the last time of trying, I finally made it to the Banquet, which is the dream of every chef. That was my culinary highlight and one that has given me my proudest moment in cooking. It was amazing to have my son Joe with me sitting at the Banquet enjoying the day. I will never forget the feeling of relief as I dedicated the win to my late wife Jane, whose persistence and belief in me made me get out of my comfort zone and compete on GBM. This was for her and Joe.

Every dish on GBM was created especially for the show, and the briefs that we were given each year. You don’t get much time to decipher the information and then come up with all the recipes. Normally, you get the brief in August, which is the busiest time in Cornwall, so you don’t get much practise time either, especially if you are a parent as well as having busy restaurants. Coming up with the ideas for each course and connecting the dish with an inspiration can sometimes be quite tough, and then there are times when you find a deep connection with the dishes straight away. One of my favourites, and probably my most famous, is the Rockpool. The brief was the National Women’s Institute, and I chose one of their key inspirations of family values. It was inspired by the time I loved to spend with my son Joe when he was younger and what we would do together on a day off. One of his favourite things to do was hang out in a rockpool and try and find crabs, mussels, limpets, shrimps, oysters, and foraged seaweed for the restaurant. I decided to create a dish that incorporated most of these elements and make it look like a rockpool. I have had a version of the Rockpool on the menu before, and as I think about it, it might just make a return for the winter!

Great British Menu has had such a positive impact on my cooking. I have had suppliers approach me, wanting me to use their produce and introducing me to the best and freshest ingredients available now. Also, being on the show and seeing so many different cooking techniques has been a real eye opener. Some of the cooking techniques have really impacted on the way I cook and I now use ingredients I never would have used beforehand. It has also helped me to realise that I can compete with the best and win, which gives me confidence that I can carry into my own restaurants and throughout the kitchens with my chefs.

Participating on GBM has also helped my restaurants with the number of bookings we receive. After the last GBM, we were receiving up to 300 emails a day, and our phone didn’t stop ringing. It was impossible to keep up with! It took three of us up to six hours a day to deal with the huge influx. There were emails from all over the world that wanted to come and dine with us, lots of well-wishers too. GBM goes out all over the world and my mum was so excited and very proud to be watching me back in New Zealand with all her friends and family. Although GBM is a big risk to be on, the benefits have been immense for Kota and Kota Kai.

To any chef who wants to enter GBM, I wish them all the luck. It is the toughest test you will put yourself through and it really is a test of your character. We have seen some of the best chefs struggle and promise never to enter GBM again as they couldn’t cope. There have been many tears shed with disappointment, yells of anger, mistakes made, shaky handed moments, sighs of sorrow, and this is what makes it the ultimate test of how to handle pressure. You must be crazy to do it!

This winter will see Kota offering a mix of all the dishes I have done over the course of four series of Great British Menu. This will include two of my dishes that scored 39 out of 40 in the finals week. It will be a cracking couple of months, I’m sure, as I try and recreate all the dishes to judging chamber quality! My poor kitchen team are going to go through a tough couple of months. Not only do we do around 50 covers every night, but each of the dishes is very intricate, too! I have every faith in them, and when you come and visit us, you can be the judge!

John McKinstry has spent the majority of his career working within the realms of horticulture, which took him to diverse corners of the country and inevitably inspired his paintings over the coming years. From the gentle rural fields of his home counties of the Sussex downs and Wealds, to quaint Cornish harbours and dramatic south-west moorlands, all are landscapes which have helped shape and inspire his work to date, and ultimately provide him with a chance to do something he now cannot be without. Art.

Although John has not received formal artistic training, he spent many years dabbling in watercolour, a medium he never felt completely at home with. It wasn’t until he switched from watercolour to acrylic that he found the spark that was missing from his work. A connection was formed. It is a medium that John finds forgiving, textural and ideally suited to his style, allowing him the freedom to create his soft, gentle skies and vibrant textured foregrounds with ease.

Over the years, John’s paintings have evolved in style but the inspirations never change; the constant draw from nature is evident. His paintings evoke a feeling of calm and quiet reflection, a feeling that is

mirrored when he paints, and one that is often commented on.

John first started exhibiting locally in Cornwall before the opportunity arose for his work to be displayed to a larger audience at a gallery in Glasgow. It was during this time that his art was spotted by one of the UK’s leading art publishers and distributors. This turn of luck gave John the nudge that he needed to realise his dream of becoming a full-time artist, with the aim of supplying high-end galleries across the UK and internationally, and now, he has a large number of collectors in both realms.

In September of 2022, John made the leap and became an independent artist, allowing him a more flexible lifestyle and a more hands-on approach with the collectors of his art. His work is now available directly from his website, as well as a few hand-picked galleries, all of which you can discover on his website.

In this beautiful piece, the thin layers of glass are carefully cut to create the background image, then crushed glass (called ‘frit’) is added. Emily Penfold is a British multidisciplinary artist who graduated from Central Saint Martins in 2018. Within her practise, Emily explores the fragility of life, celebrating its internal magic in all its forms. Her series of exquisite original drawings in graphite, pen and ink emerged following a haunting trip to the Killing Fields in Cambodia. In her more recent work, Emily delves into the fragile dimensions of sea-life, exploring the delicacy of what lies beneath the surface. Inspired by this powerful force of nature, the infinite water of the sea evokes an unequivocal sense of both fear and calm. Something that can make you feel so fragile and alive all at once.

Jellyfish have the power to simultaneously instil wonder and fear – their sting being like an electric shock, a spark of nature’s energy. Just as these creatures can mesmerise, Emily’s light pieces do the same! She uses light and bold colours to highlight the hypnotic beauty of these translucent bundles of energy, like a ‘ghost heart’ pulsating through the water.

Emily will be exhibiting next in Cornwall at Rock Institute alongside Martyn Dempsey and fellow creatives Emily O’Brien, Tash Owen, Gemma Messenger, Paul Lock, Sian Burridge and Bernice Edgley, showcasing their work in an upcoming exhibition called Contemporaries. Asthe first service of its kind in the UK, Cornwall Air Ambulance has been saving lives since 1987, providing critical care to over 1,100 seriously sick or injured people across Cornwall and the Isles of Scilly every year.

When a 999 call is made, the team respond to those medical emergencies and traumarelated incidents that are most serious or in hard-to-reach places, demanding the expertise of highly trained critical care paramedics. The most frequently attended missions include cardiac related call outs, road traffic collisions, falls, equestrian injuries, head injuries and incidents relating to mental health, with the team on standby 19 hours a day, 365 days per year, with the trusty AW169 helicopter and two rapid response vehicles (RRVs)

In 2021 Cornwall Air Ambulance was tasked to 1,092 missions across Cornwall and the Isles of Scilly. The team of critical care paramedics

and doctors responded to 534 medical emergencies and 551 trauma-related incidents. They also flew seven inter-hospital transfers to ensure seriously sick patients could receive the specialist treatment they needed. Despite the various Covid-19 restrictions in place last year, the aircrew continued to operate for 19 hours every single day, supporting locals and visitors in their greatest moment of need. On average, the crew were tasked to three incidents a day. The crew carries additional kit compared to land ambulances, meaning they can bring the hospital to the patient, so to speak. 2021 was the inaugural year of Cornwall Air Ambulance carrying blood products on board the aircraft and RRVs. The ‘Blood on Board’ service launched as a collaboration with the blood transfusion service at Royal Cornwall Hospital Trust, South Western Ambulance Service NHS Foundation Trust and Cornwall Blood Bikes. underwent a rigorous training process to be able to administer transfusions, which was overseen by the charity’s doctors. This means the critical care team can start emergency transfusions before a patient even reaches the hospital, with the charity’s crew carrying out 12 pre-hospital blood transfusions in the first year of the service.

As the service marks its 35th year, Cornwall Air Ambulance has been busy planning for the future, ensuring it continues to serve the people of Cornwall and the Isles of Scilly. A major part of this is the extension to the charity’s headquarters in Newquay, which is now underway.

Over the years, as the charity has grown and extended its operations with the purchase of the AW169 helicopter, increased operating hours from 12 to 19 per day and a bigger aircrew team, it became apparent the current building was no longer fit for purpose.

In 2019, Cornwall Air Ambulance was awarded grant funding of £897,700 from the Department of Health and Social Care towards a proportion of the building costs for a new crew facility. While the Covid-19 pandemic

delayed the start of the project, work is now well underway to extend the existing hangar, providing better training facilities, a significantly improved operations room, and more rest areas for the aircrew, with works due to finish in spring 2023.

Alf Evans, Head of Operations at Cornwall Air Ambulance, says: “The new three-storey building will provide the crew with immersive training rooms, study areas, sleeping pods and quiet areas for some much-needed downtime after emergency missions. It will ensure the aircrew have the best resources to continue to provide the best possible service to the people of Cornwall and the Isles of Scilly, which is the focus of everything we do at Cornwall Air Ambulance. Importantly, it will also future proof the charity’s operations, allowing for further growth where needed.”

Dr. Stolte is assisting in the diagnoses and long-term solutions for those living with food intolerances.

After what can only be described as a difficult year, Dr Joe Stolte continues to work as Medical Director for MEDfacials and the Rapid Health Test.

The problem is that, unlike food allergies – which are an immune system response and often cause severe reactions – the symptoms of food intolerances vary considerably. So much so in fact, that it’s possible for a person to be suffering without even understanding why they are experiencing their symptoms in the first place.”

The most common food intolerances in the UK are dairy, gluten and caffeine, and I am sure we all know someone who suffers with such an intolerance. The symptoms

for these can range from stomach pains to rashes and bloating. It is always advisable to consult your local GP if you suspect that you could be suffering, as they will be able to explore your diet and symptoms further, and the team at Rapid Health Test are on hand to help.

Some of the highlights from the report said that the service used innovative evidencebased approaches to improve patient care. This included the use of nurse-led research that had contributed towards a reduction in surgical site infections. Also, outcomes for people who used services were positive, consistent and regularly exceeded expectations.
