FROM THE EDITOR

Let’s Welcome the Good Vibes To wrap up this year with all its highs and lows, we bring you the Good Vibes issue. Packed with anything and everything that could make you smile, this issue is the perfect farewell to 2016. Check out our short coverage of Aurora Stage and the East Side Ladies Drama Club for a splash of color and a ton of zest. For an extra dose of extreme fun, skip ahead to our interview with Mishal Al Ghuneim and get in tune with nature and your daredevil side. Not all our articles are meant to inspire, some are simply written to make you hungry! Wake up and smell the specialty coffee - our resident coffee expert fills you in on all the different coffee making techniques and where to find the best. Then, check our round-up of the ultimate soul food, manaeesh.

GEN SE

The Social Entrepreneurs Generation What you teach a 9-year old can change the world. What we input into children will be the output of future economy, social harmony, and a country’s role on an international level. Some might argue that we’re giving 9-year olds much more importance than they deserve. However, the truth is how a child is raised is directly linked to who they become and how they function as a citizen. A community is made up of citizens; a nation is made of communities, and the world is made of several nations. Hence, what you teach children today can potentially cause the 2047 recession or the solution to climate change.

STAFF PHOTO/MOHAMED FAWZY

So, how can we raise a generation of future social entrepreneurs?

12 DESTINATION SHARQIYA DECEMBER 2016

Sharing

Social entrepreneurs believe in putting others first, and in sharing all their knowledge, time and energy for a cause. From an early age a child must be taught to share their favorite items with siblings and friends. The concept “ mine” can progress to a lack of selfless spirit. They develop a faulted pride in ownership, in contrast with the joy of seeing others receive. Teach children to share, not when it is within their means, but when it is not convenient.

Giving

Giving is the sole concept of a social enterprise. It needs to be deeply rooted within a child’s character. To a social entrepreneur giving is a personal moral code. Unlike how charity is viewed, giving is utilizing yourself and making a very human investment regardless of its returns. Teach your child to always offer help to their siblings and friends. Involve your child in

charity and volunteering, but do not let them think of if it as pitying others, because a social entrepreneur sympathizes and then empowers those in need and provides them with a sustainable solution.

“I’m Capable”

A social entrepreneur does not wait for the government or those with higher official positions to support society. They view themselves as an active role in developing the community. When conversing about social issues with your children, make sure to ask, “What do you think we can do about this?” “How can you be of any help, even if a little bit?” Let them envision their

capabilities of creating social progress and realizing they have a lot worth giving.

Teach a child that they are superheroes, not victims of economy and world politics. Stimulate in them the problem solving skills, innovative thinking and allow them to imagine all kinds of solutions to social issues - the possible and impossible! The Author: Tasamy is a nonprofit organization that focuses on finding sustainable solutions to social problems by encouraging and empowering youth, leaders, private and governmental institutions to achieve social entrepreneurship. SAM KSA offers a simple concept: personal on-demand butler service. Their target audience are tech-savvy, busy people who need to delegate some of their day-to-day tasks. Their brand name/motto (Sam is an Arabic phrase that means “name it and it’ll be done”) is the perfect solution to the very local problem of having to postpone errands depending on the availability of drivers. The co-founders of SAM KSA are a lively, creative trio. With diverse educational backgrounds in finance, engineering and information technology, they decided to bring together their individual expertise and mutual passions to create something that makes people’s lives easier.

Upon launching, SAM will initially offer delivery of groceries, flowers and chocolates, working closely with selected stores that meet the standards of quality and service that SAM aims for. Users simply log in to the app, enter their location and delivery request and then the app connects them to the closest store and delivery man. There is a set delivery fee for some of the services which may vary depending on the type of order and time it takes to organize and deliver it. It’s easy to see that Al Eshaiwi, Al Turkestani and Al Sharif make an extraordinary team and consider that their greatest strength. “A team is as strong as its weakest member. Finding the right team is the most important step. You need people who will execute and refine an idea together while still thinking differently.”

They are passionate about being the part-time employer of choice too. “We seek to please two fronts: the drivers and the customers. We want to improve operation for both sides.” To people contemplating starting their own businesses, SAM has a short but important message: Make sure it’s

something you enjoy. If it’s not something you love, don’t even bother!

SAM went through a testing period in May and will be launching an improved version for both iOS and Android this month. The service will initially be available in Dhahran, Khobar and Dammam but will expand to other cities. Web: samksa.com samksa samksa_

the life of an adventurer. It was a personal journey first and foremost, a drive to discover places, people and inadvertently, himself.

He currently stars on Rahalah, a travel web series where he goes to different cities around the world. In its first season, the series consists of 8 episodes spanning 8 countries and has already gained notable praise and a loyal following.

“At one point I found myself in the middle of the jungle in Brazil, where I lived with a local tribe. Being unplugged and isolated from the rest of the world interestingly made me connect with myself and also opened my eyes to the sense of community each person fosters. You also realize that you’re merely a co-habitant on this planet and that strengthened my respect for all living things and the environment as a whole.”

Al Jumah in Machu Picchu, Peru.

The experiences stuck to him and inspired Al Jumah to write the number one bestseller book in the Kingdom, entitled “Tales of a Saudi in Europe”. In the aftermath of his book’s success, Al Jumah was catapulted to media personality status. Named as one of the most influential Arabs by Arabian Business, he has attracted a huge following on both online and offline

platforms. Perhaps the appeal of Al Jumah’s travel stories is that it provides readers a chance to see the world through the eyes of someone they can relate to. As much as Al Jumah brings insightful import to the region, he is also able to give the people he encounters abroad a better understanding of the culture and genuinely represent what it means to be a Saudi.

“It was a nice opportunity to open up their minds and just reframe what they see on western media. It’s not that I even do it intentionally, it’s just regardless of where I am, I live as I would and be who I am. Sometimes people would ask and I would answer them about my faith, and I take that as an opportunity to let them learn about us, the same way I am learning about them.” In the end, Al Jumah inspires us to seek what lies beyond the horizon, without necessarily forgetting where home is. What this modern day Nomad does is beyond taking us along on his journeys; Al Jumah bridges gaps, in distances and in cultures; and that’s just what everyone needs to feel a little less lost in translation. Hidden heroes of our community are spreading positivity.

MONA AL GHAMDI By Lujain Al Heraiqi

Mona Al Ghamdi is a Dhahran local and Saudi English teacher that believes as long as you have optimism you can defeat any and all odds that you encounter. All her life she has had an optimistic disposition that enlightens any place she’s in. After her battle with breast cancer her optimism gave her a brand new set of eyes with an even better outlook on life and its afflictions. 18 DESTINATION SHARQIYA DECEMBER 2016

Al Ghamdi has faith that with any issue you might face, “believe that Allah has a good plan for you and soon enough things will run smoothly.”

During her journey through chemotherapy and treatment, her doctors eagerly advised her to speak to cancer patients who were feeling depressed. Al Ghamdi would lift their spirits up by comforting them and emphasizing that “This is NOT the end. This is just a phase that WILL pass. You WILL go back home to your children. This is just an illness and you must believe that there’s good hidden within.”

Her continuous support did not stop there. Just a few hours after undergoing an intensive surgery, doctors had her speak to women that had just received a cancer diagnosis and were refusing any sort of treatment out of fear. Al Ghamdi’s enthusiasm to promote positivity and cheerful energy sparkled regardless of the position she was in.

Her journey changed her from being someone who runs away from problems, to someone who faces every obstacle with a positive outlook. Now she’s considering going back to her hospital and giving cancer patients the emotional support they need by visiting them as regularly as possible.

She returned to work about a year and a half later. Armed with a passion to teach and a belief in new beginnings, she was ready to faces all challenges. She had survived. One thing that contributed to Al Ghamdi’s positive outlook and excellent spirits during her stay at the King Fahad Specialist Hospital was their atmosphere. She loved the

Doctors played a big role in her recovery and outlook, as they were very warm and positive, especially when they shared her cancer diagnosis. Mona urges hospitals to keep their patients in positive atmospheres and provide them with all the services and amenities they need.

Al Ghamdi highlights the importance of going back to Allah regardless of the situation in order to maintain positivity. “You wouldn’t get into this issue without a purpose. Always remember that God loves you. You must start believing that you can conquer any sorrow that encounters you. ALI ALHERZ By Lina Al Faris

Ali Alherz has been reading and collecting books for over 40 years. His fondness and passion has led him to amass a huge library in his Qatif home, with more than 30,000 books. Let’s take a quick moment to absorb that fact. Most people are lucky to have a few hundred books in their personal libraries. Book stores themselves might rival Alherz’s amount, but don’t forget they carry multiple copies of books. If you were to read one book a day, it would take you 82 years to get through his entire collection. Some are lucky to read a book a month lately, but then they’d have to spend 2,500 years! Alherz remembers first really getting into reading at age 12, with “The Epic of Antarah Ibn Shaddad,” where he fell in love with the hero’s fearlessness and bravery. This led to looking for more folklore and tales from other cultures, but the fire of his obsession quickly spread out to consuming books about religion, history, politics and, the topic that was dearest to him, philosophy. 20 DESTINATION SHARQIYA DECEMBER 2016

In Alherz’s library, you’ll find books encompassing a wide range of genres: novels, literature, literary criticism, anthropology, biographies, essays and many others. To him though, it is more than just a library. It’s a salon that gathers readers who share the same interests. A place where young people, researchers, authors and intellectuals could meet together to discuss and share their ideas and knowledge. He organizes weekly seminars in his salon and has had guests not only Alherz heartily welcomes anyone interested in a nice cup of tea, a good book and a great conversation to pay him a visit.

from throughout Kingdom but from all over the Arab World. Alherz is also a collector of old paper and silver money, postage stamps and old photographs. He even collects history by spending three hours every day reading local newspapers and magazines just to cut out clippings of important events. He currently has archived more than 100,000 newspapers and magazines that are nearly 40 years old. In 2015, he started a small home-museum where he showcases all of these nonbook collections.

His dream is to transform the results of this lifelong pursuit into a public library for later generations. He’s very optimistic and proud of the new generation of Saudi readers and thinkers. He believes in investing toward their fresh ideas which, combined with our rich cultural heritage, could create a whole new level of information revolution for our country. abukifah

ALI AL HADAD By Arwa Al Mousa

Moved by a desire to feed his dual loves of creativity and helping others, Ali Al Hadad invented an electric wheelchair that functions based on eye movements. It is specially designed for people with severe disabilities to help them in their daily life activities such as moving, eating and even browsing the internet. In a nutshell, the user looks at a custom tablet that Al Hadad designed, the tablet records the eye movements and sends signal to the wheelchair to move according to those gestures.

22 DESTINATION SHARQIYA DECEMBER 2016

His invention won him the gold medal at the 2015 International Invention and Innovation Exhibition in Malaysia, as well as fifth place winner in the 2015 National Olympiad for Scientific Creativity in Saudi Arabia. Al Hadad has never been a stranger to inventing and mechanical engineering. “When I was little,” said Al Hadad, “I used to break down

my electronic toys, take out the engines and fix them again.” His inspiration for the wheelchair came about through a series of events. He had read over several occasions how difficult it was for disabled people to live without constant help and support. And then a couple of years ago he saw a girl having so much difficulty pushing her brother’s wheelchair around; he walked

over and helped her out. “After that I started thinking about how I could help her brother live a more comfortable life. How I could help all my brothers in my community.” Always listening, the universe gave Al Hadad an encouraging nudge. Two days later, he got a message from the King Abdulaziz & His Companions Foundation for Giftedness & Creativity announcing the latest scientific competition. He registered immediately, without even having a specific idea in mind. He sat and brainstormed with his chemistry teacher, Ahmed Al Yamani. They hashed out ideas, issues and concepts until they finally landed on helping people with quadriplegia.

Festival, where he discovered that people were actually on the lookout for him, just wanting to thank him for his invention. “The most touching moment was when a disabled person told me, ‘I’ll be the first to use your invention. I’m waiting for it.’” Inventions aren’t the only things he wants to develop, though. Al Hadad is adamant that the community develop a better system to support young people in their education and creativity, both through courses and by parents at home encouraging their children to

Aurora Stage

When you hear the word drama you might think about drama queens. But, let’s talk about the less stressful drama: the ancient Greek practice of putting on performances through roleplay and dialogue, critically reflecting upon issues that matter and present them using imagination, and art. This kind of drama is a powerful tool that explores change and cultural transformation. These two new groups are introducing drama in different forms to Sharqiya’s community.

26 DESTINATION SHARQIYA DECEMBER 2016

Aurora Stage is a communitycentered venture with the solid mission of providing opportunities in writing, speaking and performing and helping create and contribute to the evolvement of the local arts and culture in Sharqiya. Their programs are based on the belief that the written word is immeasurable, its impact when spoken unimaginable and its presence when performed incredible. Their multi-disciplinary approach in the arts and social sciences provides an opportunity for individuals to enhance their communication, imagination, creativity and confidence. At the same time their programs provide individuals with a looking glass that

encourages them to see their community from a different perspective and understand the value in diversity.

A Guide to Operating and Maintaining a Human Body... Described by the author as an FAQ for your body, this is a great reference to combat the misinformation and marketing “facts” we get bombarded with every day.

A superb selection of snacksized sci-fi short stories. What stands out in his writing is how he takes a simple, small change in reality and subtly unravels how complex and allencompassing those changes impacting the world and characters. The Expanse (Six-Book Series) by James S. A. Corey

The final book in this thrilling space opera comes out this month. Read and then watch the equally entertaining show based on the book series.

SHARQIYA'S SPARKLING STARS Local jewelry design has never been shinier. By Afifa Jabeen Quraishi

Earlier this year, Desert Designs hosted a launch event of jewelry lines by two enterprising young women: Tas Jewels by Abeer Suria and Hemari Jewels by Rahzia Hemani.

RAHZIA HEMANI

Hemani, who had previously launched her exclusive line of Tasbih (prayer beads) at Desert Designs, has been specializing in custom designer jewelry for a decade now. “My hobby and passion was always designing and wearing jewelry,” said Hemani. “Ten years ago I designed a few engagement rings for my friends and that's how the business started.” She designs custom, modern and ethnic jewelry, including rings, necklaces, earrings, prayer beads, solitaire fine jewelry and high-end watches. Hemani is a natural-born Canadian raised in Texas, USA. She moved to Ras Tanura three years ago. 36 DESTINATION SHARQIYA DECEMBER 2016

“My brother runs our diamond design office in Houston while I run the Saudi business,” she said. The jewels are made with good quality diamonds and 18kt gold and the prices can range between SR 850 and SR 15,000 (and higher). She wants her clients to feel indulgent and beautiful when they wear her jewelry. “I want them to feel like they have made the right decision and definitely a good investment.” Mob: +966-506817136 Email: rahziahemani@gmail.com

Diamonds Are Her Best Friends

ABEER SURIA It’s All About the Arm Candy

Suria launched her designer jewelry business three years ago after moving from London to Saudi Arabia. “It all began when I brought home a few unique pieces of jewelry from my travels,” said Suria. “I showed some friends and suddenly I had my very first customer. With each new and piece and a lot of client feedback led to designing my own collection.” Her latest collection is focused on stacking bracelets in gorgeous pastels and jewel tones that you can wear to dress up any outfit. “It’s all about the arm candy this season.” Suria’s biggest inspiration comes from traveling the world and meeting people. “On a recent trip to Hong Kong I met a Brazilian couple who could help source uncut natural stones directly from Brazilian mines! I also met a lovely mother and daughter duo from Bangkok who knew all about the gem cutting and faceting industry in Thailand. Networking and building relationships are integral to my business’s success.” Tas Jewels are made in sterling silver with 18kt gold, rose gold or rhodium-plating and the gemstones are sourced from all over the world. What makes specialty coffee so special? Everything! How the beans are farmed and roasted, the specific measurements, the precise grinding of the beans and the sensitivity towards how long each step takes elevates specialty coffee from your day to day variety. Let’s introduce you to some of the best places locally to get into the specialty coffee scene. 50 DESTINATION SHARQIYA DECEMBER 2016

COFFEE LIBRARY BREWING TOOL USED: V60 While similar in concept to the Chemex, the V60 looks less fancy in design and has a few differences, what with its raised ridges for the filter and the larger opening at the bottom. The Chemex is good when serving a group, but the V60 is perfect when you just

need one or two cups of coffee. Coffee Library is a great café in Dammam that shows off this type of brewing method. They don’t roast their own beans yet, but the atmosphere and the sensory experience can’t be beat. Try it and let us know what you think! Chemex pour-over style, at its core, involves pouring hot water over coffee grounds. But the key is in the attention to detail with each and every step. The thick paper filters, how you slowly but precisely add the water, the whole experience magically gives your coffee a smooth and clear texture, light on body but high on flavor.

AeroPress is a very simple method that’s easy to carry around, use and clean, convenient for camping or picnics. It depends on heat and pressure to make a great cup coffee, steeping for barely a minute before pushing a plunger to force the coffee through a filter.

This method looks flat out like a chemical experiment. In very simple terms, heating the bottom chamber builds up steam pressure which forces the water to rise into the upper chamber. Here it’s mixed with the coffee grounds, steeped and then, thanks to gravity and a drop in pressure, goes down through a filter.

We enjoyed this experience at Coffee Coast. They roast their own coffee in-house, imported from different spots around the world.

Location: Al Sinaiyah, Qatif Web: coffee-coast.com

Specialty Bean sell all kinds of coffee equipment and support local farmers by roasting their beans at their store. The aroma wafting out of this café will draw you in; the first sip of their coffee will keep you there forever. Location: Prince Bandar St. & 21st St., Khobar Web: specialtybean.com

INTROVERT VS EXTROVERT

Understanding your personality type can help you stay healthy and happy. By Rawan Nasser

Which type do you identify strongly with? Individuals with extroverted tendencies are energized by being around people and thrive on new and different 56 DESTINATION SHARQIYA DECEMBER 2016

experiences. Introverts, on the other hand, are not as fond of surprises and even though they can be very social and outgoing, they still need alone time to recharge and recover.

Scientists aren’t entirely sure whether these traits and preferences are caused by our genetic makeup or influenced by the environment we are exposed to.

INTROVERSION IS NOT A DISEASE Historically, introverts have received the shorter end of the stick, with research suggesting that they are more likely to fall victim to a host of mental illnesses because of their careful, risk-averse nature. Meanwhile, extroverts enjoy a healthier lifestyle because of their penchant for engaging with people and adaptability to change. So, can acting like an extrovert solve the problem? Most definitely not, says Susan Cain in her book “Quiet: The Power of Introverts in A World That Can’t Stop Talking.” Cain argues that most institutions are built around the needs of extroverts who crave high levels of engagement, which creates an overwhelming experience for introverts who feel pressured to conform. In her TED talk on the subject, Cain encourages everyone to embrace who they are and play to their strengths.

What It Means for Your Health

Whatever You Are, Wear It Proudly

A team of health psychologists from the University of California in Los Angeles (UCLA) and the University of Nottingham found that extroverts might be better equipped at fighting off infections due to an increased expression of pro-inflammatory genes that raise their bodies’ immune response – possibly because their social nature allows for exposure to more germs.

None of us are 100 percent introvert or extrovert. We all fall somewhere in between these two extreme ends of the spectrum and that’s what makes each of us unique.

While introverts’ lower levels of inflammation indicate a weaker immune system in the study, other areas of their immune defense may be stronger, says Daniel Davis, an immunologist at the University of Manchester. As for extroverts, sustained inflammation may make them more susceptible to diabetes, atherosclerosis and even cancer. Exploring this further could deepen our understanding of how personality types influence susceptibility to illnesses.

Whether you spend your Friday evening curled up with a good book or setting the night ablaze with your crew, just remember to stay in tune with the needs of your body and your mind.

Are You Emotionally Well? How many of you think about enhancing your emotional and mental health? By Reem Zahid

What is it?

Mental or emotional wellbeing alludes to your general mental prosperity. It incorporates the way you feel about yourself, the nature of your connections with others, your capacity to oversee sentiments and manage challenges/difficulties, and how much satisfaction and happiness you get from life. Mental and emotional issues regularly emerge when your sensory system has been traded off by the overpowering measures of anxiety, without knowing how to manage it. 58 DESTINATION SHARQIYA DECEMBER 2016

Is it normal?

Anybody can experience the ill effects of mental or emotional health issues, and the vast majority of us will. This year alone, around one in seven of us will suffer from a diagnosable mental issue such as gloominess, bipolar issues or moodiness. Regardless of how many people are affected by these problems, most make no effort to enhance their circumstances. We disregard the emotional messages that let us know something isn't right, and take a stab at toughing it out by distracting ourselves or self-medicating. We bottle things up with the expectation that it will heal itself. We don’t realize that these issues have an adverse reaction on our daily lives, and the lives of the people around us. It impacts how we treat the world around us, which in turn impacts how we feel about ourselves.

Know how to handle it.

Being emotionally and mentally healthy doesn't mean failing to go through awful times or encountering passionate issues. Great emotional well-being doesn’t mean lack of sadness or tension, it could be the acquisition of positive qualities such as the ability to adapt to life's difficulties, handle stress, build solid connections and recover from mishaps.

Just as physically healthy individuals are less susceptible to disease or harm, mentally and emotionally healthy individuals are better equipped to handle difficulties and anxiety. They are in control of their conduct and feelings. They are engaged, adaptable and imaginative in terrible times and in great. They can deal with life's difficulties, construct solid connections, and recoup from misfortunes. Enhancing your mental and emotional health boosts your state of mind, builds flexibility and adds to your general happiness regarding life.

Boost up.

Self-love is needed more than anything, and, sadly, it’s the most neglected. Fixing yourself from the inside out is the only way to achieve true happiness. Learn to be solid, to be tough, tougher than life and its downs. Teach yourself how to love yourself and know your own worth first. Be flexible with whatever you face and know everything has an end, and every problem has a solution. Learn that your situation won't get any better by being angry, anxious or dramatic, and that these emotions can destroy you emotionally and mentally.

Life is a challenge that is won by owning it and owning yourself.

#CheeseOfEurope: CHEESE AND SWEATER WEATHER Camembert de Normandie, Livarot, Comté… Ooh La La! By Sumaiyya Naseem

DAY 1 Isigny-Sainte-Marie The dairy is located in Normandy, which was once considered one of the largest wetlands in Europe. The dairy farm is known for its butter, cream and cheese, all produced using the rich milk that comes from white and brown Normandy cows. The dairy produces two PDO approved cheeses; the Normandy Camembert and the Pont L’Eveque, the oldest Norman cheese still in production.

62 DESTINATION SHARQIYA DECEMBER 2016

The PDO is the highest grade of cheese certification in the EU.

The Famous Normandy Cow

Graindorge The Graindorge cheese plant is located in the Pays d’Auge countryside, in the heart of Normandy. At the dairy we learned the secrets behind producing PDO cheeses like Livarot and Camembert. The Graindorge is a family run business that has expanded over three generations of cheese makers. Using high quality raw milk, the dairy specializes in four PDO cheeses: Livarot, Pont L’Eveque, Camembert de Normandie and the Neufchatel.

The only cheese I ever knew was Almarai spread and the mozzarella on my pizza. The Cheese of Europe trip introduced me to a world of cheese with no limits. Our cheesy expedition was organized by Sopexa Middle East and sponsored by the European Union and CNEIL, the French Dairy Board.

DAY 2 Fromagerie Gaury We made our way to the Dijon Region where we visited the Fromageri Gaury. Raymond and Odette Gaury started the company in late 1940’s. In the ‘50s Raymond Gaury developed a soft cheese using washed rind, inspired by farmers who produced the famous Epoisses and Langres cheeses. Upon its discovery, the cheese gained popularity and is still produced today by Fromagerie Gaury. They are one of the few that still produce raw milk Epoisses.

DAY 3 Fromagarie Janin We journeyed deeper into Burgandy, into the Jura region with the Vosges mountain range in the periphery. Janin is another family run business that has been running for five generations of cheese makers who are passionate about Jura cheeses. They specialize in the PDO Morbier. In order to enahnce the taste, they add salt water to the

wood that holds the cheeses. Typically, the cheese stays in the cellar for 60 days.

Fort des Rousses Our next stop was the Fort des Rousses, a cave-like structure that was built in 1841. It was previously used as a military fort near the Swiss border, and once housed 3000 men and 2500 horses. In the late 90’s, the impressive structure was converted into a cheese cellar for Arnaud dairy. The majestic stone arches give a natural “vault effect”, a condition that favors ideal cellar atmosphere for maturing cheese. Large machines are used to regularly flip the cheese on its shelf. The cheese available at Fort des Rousses are the PDO cheeses Comté, Mont d’Or and Morbier.

64 DESTINATION SHARQIYA DECEMBER 2016

On the last day of the cheese tour we visited the Caves Mons, a cheese business started by Hubert Mons and his wife whose passion for cheese led them to turn it into a full-fledged enterprise. Mons cheeses are essentially made using raw milk with farmstead or traditional method. The cheeses are matured with a balanced alchemy between three decisive natural elements: water, air and temperature. The Mons cheeses include PDO Comte, PDO Mont d’Or and PDO Morbier.

Living Life on the Wedge Cheesemonger Francois Robin answers all your ‘cheesy’ questions.

What is a cheesemonger? A cheesemonger is a cheese specialist who can help customers find the perfect cheese for their taste.

How should cheese be stored at home? Store it in original wrapping, preferably with vegetables, but no direct contact. You can use food paper or plastic film but not aluminum foil.

Is it okay to eat the cheese rind? The only “rind” you cannot eat is the wax rind of Goudas and aluminum foils for blue cheeses. For all the French cheeses, especially PDO's, try a little bit of the rind and combine it with the middle part if you like the taste.

What affects the quality of the cheese?

The quality of a cheese is connected with the quality of

Francois Robin at the Mons Cheese tasting.

the milk, or rather the quality of food the animals are eating.

What’s the best cheese for Saudi Arabia and the Middle East?

The Brillat-Savarin (a double-cream cheese with an incredible texture and delicate milk taste), a Comté cheese aged around 18 months (buttery texture and crunchy crystals, easy to eat), and a semi-dry goat cheese such as Chabichou du Poitou, Picodon or Sainte-Maure de Touraine.

HISTORIC KSA

THE STORY BEHIND THE SAUDI ARABIAN

NATIONAL ANTHEM Where did it come from? By Mohammed Mirza

The roots of the Saudi national anthem can be traced back to the year 1947, when King Abdulaziz was on a visit to Egypt. Next, the Egyptian composer Abdul Rahman Al Khateeb was approached to create a national anthem for Saudi Arabia and the tune of Aash Al Malek (Long Live the King) was born.

Fahd, poet Ibrahim Al Khafaji wrote the lyrics in 1984, which is the one that is still in use today. In current vernacular trend, the Saudi national anthem is referred to as Saar’ey, based on its incipit which literally means ‘hasten’.

It was officially adopted as the national anthem in 1950 but carried no lyrics at that time.

Hasten, To glory and supremacy. Glorify the Creator of the heavens

The music in the anthem carried a typical Arabian fanfare style, similar to the national anthems of other Arab states. The brass instrument version that we hear today is a later change made by Saudi musician Seraj Omar. Lyrics were added in 1958 that were written by Mohammed Talat, but these were rarely heard. Then at the order of King

GOLDEN

BUNS We have some fun fun with Bun Bun Bistro’s chef and owner, Faisal Al Dulaijan. By @saudifooodie

What is your favorite food to eat? Steaks and burgers.

Why did you choose to become a chef?

I like to create and do new things every day. Cooking is my outlet for doing that.

What do you do when a new recipe doesn’t turn out good?

Why did you decide to pursue a career in the restaurant business? I wanted to finally deliver something that I considered valuable and that I enjoyed doing.

80 DESTINATION SHARQIYA DECEMBER 2016

STAFF PHOTO/ TUBA SARICIMEN

I look at recipes as equations. They each have the right elements to make them a success, so I just keep trying different variables until I get it solved.

What were the three most important things to get your business up and running? What advice can you give to those who would like to open a restaurant of their own someday?

You have to spend enough time studying your idea, your market and your approach. Do a lot of research and maybe even find the right person that has already opened restaurants and can offer lessons learned. Focus on your business and spend as much time as you can on it because you are the only one that will make a difference and make your dream come true.

How is the restaurant market right now?

The market always has the

space for the right business or idea, but it’s not easy so make sure to be strong before entering.

What are you working on right now?

Enhancing the look and concept of my brand while also increasing my customer case.

What is one mistake you’ve made and what did you learn from it?

I didn’t put enough of a budget for marketing. Marketing is one of the most important aspects of the operation, especially in the beginning of the business.

1. Be with my team as much as I can and develop a comprehensive set of standards and procedures. 2. Solve problems as soon as possible and never delay things. 3. Build a smooth and reliable system so that if any obstacles or hiccups occur, work can continue smoothly without stopping. Location: North Riffa bunbunbahrain

More than Just Toys From concept to distribution, the story behind Mush. By Tuba Saricimen

The story of Mush starts in Quby Creative Consultants, Al Yaquby’s branding agency.

After seeing the success from branding other products, one of my objectives was to develop a product line of my own, — Banan Al Yaquby

82 DESTINATION SHARQIYA DECEMBER 2016

On a visit to Sri Lanka, Al Yaquby saw some soft cotton toys that captured her attention. She asked around and was told that women in the villages made them. “They were working with a lot of organic cotton and it was nice to see that it wasn’t massproduced,” said Al Yaquby. “They were just women doing it from home.” Al Yaquby was inspired and thought that, if they were branded in better way it could result in a successful toy line.

STAFF PHOTO/ TUBA SARICIMEN

When I saw the colorful, creative and soft cotton toys created by Mush, I was immediately intrigued and decided to sit down with founder Banan Al Yaquby and find out about the birth of this creative and fun toy line.

Banan Al Yaquby

Al Yaquby and her team developed the concept of creating toys that helped children with roleplay and using their imagination. They wanted the toys to inspire kids to do more than just play but get them to think deeper. The beauty of Mush toys is that they are made of organic pure cotton and non-toxic dyes and are machine-washable. Mush is a certified fair trade company, ensuring they help to achieve and promote improved and sustainable trading conditions. The company Al Yaquby works with in Sri Lanka is a nonprofit organization training and developing women in distress. In addition, the owner

of the factory has established a school in the same village that supports underprivileged children. As Mush, they have sponsored two children in the school to give back to the community. So, a lot of the funds that are going to this factory are going back to the village itself. Currently, Mush is an online business taking orders through Instagram and over the phone. They also participate in fairs all around Bahrain. The aim is to launch their website in 2017 and begin distribution of Mush toys through physical toy stores.
