After all, as the saying goes, “Laughter is brightest where food is best.” In our annual Food Issue, we celebrate not only our love for food, but the relationships that surround our consumption of it. In the Special Features, we introduce you to some of the city’s top chefs, and we speak to Saudi women who share their kitchen secrets, tips, and wisdom. This issue, from the Business section all the way down to our Travel section, is filled to the brim with restaurant and food suggestions, food in business, finds and explorations, and snapshots of our unique Riyadhi food culture. In preparing this issue, we came to realize what we always knew to be true: after all is said and done, kitchens are truly the heart of one’s home. Eat well, laugh often, love abundantly.

The wildly popular team delivered an unforgettable multisensory experience in Riyadh last month. SAUDI PRIDE AT ROSEWOOD JEDDAH The luxury hotel’s National Day celebrations topped all. The 87th Saudi National Day witnessed a grand celebration at Rosewood, Jeddah’s leading sea-view luxury hotel. The National Day is the perfect day to deck up in green and celebrate national pride, and Rosewood’s festive arrangement was no exception. National pride and patriotic

HAJJ VOLUNTEERS

The Riyadh chapter of the Pakistan Haj Volunteers Group (PHVG) prepared a team of 400 volunteers, mostly Pakistanis, to assist the Hajj pilgrims last month. Serving the guests of God is a great service rendered by these volunteers. The volunteers made sure to offer whatever assistance needed to help the pilgrims to be comfortable during their stay.

A MODERN DAY DYNASTY A sit-down with Al Othman Holding’s CEO, Abdulmohsen Al Othman By Dalia Darweesh

Al Othman’s dynasty began when Sheikh Mohammed Abdulla Al Othman founded a Trading and Contracting Establishment in 1967. This establishment specifically focused on finding the most talented contractors in the area to work with. During the late 14 DESTINATION RIYADH OCTOBER 2017

‘60s, there was an upwarddownward cycle within the contracting business, that lead to having many contractors leave the industry and head to other fields outside of the contracting business such as the manufacturing sector within the dairy industry, amongst others.

Sheikh Al Othman has then decided to shift their focus to target new industries to diversify and expand within different sectors. In 1982, Nada, the Agricultural Production & Processing Company, was established with 1,000 Friesian cows and 4 trucks, to become one of the largest, leading producers, manufacturers and distributors of fresh dairy product, fresh juice, and long life milk suppliers in the region, until our current day and time. Nada products are also exported to Bahrain, UAE and Kuwait.

With “every sip counts” as their motto, it’s no wonder Nada has rapidly grown into success. We had the pleasure of sitting with Mr. Abdulmohsen, and asking him how his day, as a CEO, looks like. “I start really early in the morning. I am normally at the office around 6:30 or 7 am.” He starts his day with reading the latest news then moves on to checking his emails. “It is best to start work early in the morning, to start fresh” From 9 am onwards, he begins his meetings internally, and later takes a small half an hour break for lunch. When the workday is over, he heads back home to spend time with family “and I try to do some sports.” Occasionally, he would go out for social or business dinners. Finally, “I watch the news first, then sleep as early as possible if I can.” Additionally, Mr. Abdulmohsen shared with us important information regarding stepping into a business within the food industry. He applauds the younger generation for becoming very enthusiastic about operating businesses within the food industry. However, being enthusiastic about a business idea is not enough to achieve a successful business model.

“My first advice is to ensure that you pay attention and carefully study every move you make before starting a business.” It may take longer than a year to execute a business idea if an individual doesn’t do enough research. Consequently, his second advice was to spend the right amount of time with collecting all the necessary information through research. “The area and location of the business, in addition to knowing the current market’s needs, are essential factors when going into the food business industry. And finally, move smart.” Each person deals with their work life and the pressures that they face daily, differently. “Challenges are always my motivation. The more I am faced with challenges or difficulties within the work place, the more it is exciting for me to tackle on more tasks”. Mr. Abdulmohsen explained. Matsuhisa to learn Japanese techniques. Back in Riyadh, he found an opportunity to start working for Yokari, where he was one of the first Saudi sushi chefs. Having found keen interest in hot kitchens and Asian cuisine and wanting to

With a degree in marketing, Rakan Aloraifi set out to start his own restaurant. But due to mismanagement, his restaurant ended up being short on chefs.

Inspired by her mom and driven by her passionate craze for international cuisine since childhood, Wed Saleh Reda has chased her dreams by breaking barriers of all kinds. Wed started learning Arabic cuisine from her mother as it was her favorite. Once she aced it, she then trained herself in international cuisine. Over the past 10 years, she has been focusing on Italian and Japanese cuisines. She now works as a chef at Hyatt Regency, and also caters for the weddings taking place within the hotel.

DR FACT:

Chef Wed has a bachelor’s degree in management and had no experience in cooking. She taught herself from cookbooks written by famous chefs, Master Chef and Top Chef.

A year ago, when she started looking for a job, it was hard to get employed due to the conservative nature of the city. But the scene in Riyadh has changed drastically and caught up to her. “I hope to see plenty of women getting employed as chefs and leaving their mark all across the city and the world,” Reda says. Chef Wed is looking forward to starting her restaurant that serves fusion Saudi food, and she plans on competing in Top Chef Middle East, Season 3. Chef Ali Al Yousef chuckles as he tells us that the main reason he became a chef is to win a bet. A chef friend of his had told him that Saudis can’t do anything, and he decided to prove him wrong. And so despite having a degree in Mechanical Engineering, Chef Ali decided to turn his career upside down and pursue his passion for cooking. While the “dare” made for a trigger, as a five-year-old boy, Chef Ali had already started making up his own concoctions and recipes in the kitchen.

Today, Chef Ali is the executive chef for traditional Saudi dishes at the Four Seasons Riyadh. Due to that, one of them left and the guy who stayed back renamed it to Saeed Al Has. There are many dishes that signify Saudi cuisine, but none as proliferating as the kabsa. I was on Venice Beach when a vendor selling art asked where I was from. “Saudi,” I replied. “Ah! Kabsa, right?” Even people selling art on a beach know our, arguably, number one national dish.

We know we’re not exactly your go-to for Saudi recipes, but we know who is.

So what exactly is a kabsa? Kabsa is a rice-based dish with some meat or chicken.

Eman Gazzaz is the Saudi YouTube cooking guru. She has a knack for simplifying traditional cooking. But before we blatantly rob her recipe, we need to cover our bases.

There are many ways to cook a Kabsa, which is where the confusion lies. We’ve decided to go with the pressure cooker method, since Kabsa literally translates to “pressed.” DESTINATIONKSA.COM 25


KABSA FROM A SAUDI

Ingredients: 600g of lamb with bones 2 tbs of oil 6 peeled and ground tomatoes 3 large onions, chopped 1 1/2 tbs of salt 1/2 tsp of white pepper 3 cinnamon sticks 6 pieces of cardamom 2 dried limes 2 tbs tomato paste 2 tsp of ground garlic

Recipe: 1. Add oil and onions in a pot and cook until golden brown.

2. Add meat, cinnamon, bay

leaves, cardamom, dried lemon, white pepper, tomato paste and grinded garlic in a pressure cooker.

3. Add 1 liter of water and

cook in pressure cooker for 30 minutes on high heat.

4. Transfer the meat to another pot and add rice over the meat mixture. 5. Add water until it covers 1 1/2 inches over the rice.

6. Cover and cook for 40

minutes on medium low heat.

SMOKE IT

Eman Gazzaz taught us a trick for dishes like mandi, where a smokey flavor is necessary. Instead of installing a smoker or digging a hole, try placing a piece of instant charcoal in tin foil inside your dish – the fumes from the burning charcoal add that special taste to your rice.

PREP

A good piece of advice is to always have a ready mix of spices around. You know the grandma spice jar, the one she busts out for literally every dish? That’s the one. This essential mix of spices is like the MacGyver of spices. It works with everything. Kabsa? Bam! Pasta? Sacrilege, but bam! If you don’t know how to prepare the grandma spice jar, here’s a basic easy recipe.

SAUDI SPICES RECIPE Ingredients: 2 tbs coriander seeds 1 tbs cinnamon sticks 1 tbs cumin seed 1 tsp cloves 1 tsp turmeric powder 1 tbs cardamom 1 dried lime

Recipe: 1. Put a pan on medium high

heat and roast the spices for 10 to 15 minutes until they turn light brown and aromatic. 2. Let it cool down, then blend it in a coffee blender until smooth.

The leading causes include obesity and chronic illnesses such as cardiovascular diseases, diabetes and cancer. According to the American Cancer Society, being overweight or obese after menopause increases breast cancer risk. Before menopause, ovaries make most of estrogen, and fat tissue makes only a small amount. After menopause, most estrogen comes from fat tissue. There’s no sure way to prevent breast cancer, but there are things you can do that might lower your risk. While you can’t change some risk factors such as family history/genetics and aging, there are lifestyle factors you can control. Breast cancer is known to be more common in women, typically after menopause, but there is a very rare, less than 2% chance of men being diagnosed with the disease.

2017’s Most Exciting Thriller Readers are either loving or hating “Into the Water”. By Sumaiyya Naseem

The Girl on the Train was a thriller sensation a couple of years ago, and with a movie starring Emily Blunt, talk of Paula Hawkins’ debut did not die down for a long time. Hawkins’ next book Into the Water was a highly anticipated release this year. I loved her debut when I read it back in 2015 because it helped me get out of a massive reading slump. Since then, I’ve read plenty of crime fiction and 56 DESTINATION RIYADH OCTOBER 2017

thriller novels to know that The Girl on the Train was an exciting read but not a personal favorite. So I approached Into the Water gingerly, unsure of whether I’d love it or hate it. It didn’t help that there were so many mixed reviews online. Into the Water is a literary thriller and it’s a slow burner. The novel follows several characters that live in a small town with a river running through it. The river is a source of great intrigue and mystery in this story because it’s where witches were persecuted centuries ago and several “troublesome”

women drowned. The main protagonist is Jules Abbot, who has returned to the small town after the apparent suicide of her sister Nel Abbott, whose daughter she now has to take care of. The sisters had a falling out in their teenage years and a large chunk of the novel follows Jules’ anguish over not being able to reconcile their differences before Nel’s death. Although I’m a little tired of the troubled women trope in crime fiction, my interest was piqued by the mystery surrounding the Drowning Pool and the women who

died there, and I give credit to Hawkins’ writing for that. What was the story of the women who died? What about the people they left behind? A version of what happened to them is explored in an alternate narrative within Into the Water. These are sections from Nel Abbott’s controversial project on the Drowning Pool that had managed to stir hostility in the community. But was it the reason she died? As I waded deeper into the novel, the murky and sinister undercurrents of the story gripped me. Hawkins’ atmospheric writing deserves a lot of credit for the experience of reading this thriller; it’s smooth and saturated with haunting descriptions and details. Perhaps one thing readers should be wary of is the cast of characters; there are too many perspectives in the book and it can get confusing. None of the characters are people you would like, but yet I felt eager to see the stories intersect. Overall, Into the Water is a quiet thriller with an anticlimactic ending that will not make your heart race, but it will make you weigh in on human nature. Suspense-lovers might want to skip this one, but if you’re appreciative of literary thrillers, then this will be a satisfying read.

Two essential treats loved and found in almost every house in Bahrain: Halwa and Mattay.

HALWA

(more popularly referred to as Halwa Bahrainiyya) Thanks to trade and close commercial ties with different countries, halwa found its way to the island of Bahrain. This sweet delicacy originates from Tanzania, and was introduced into the Gulf, more specifically Oman and Bahrain, more than a century and a half ago. Bahrain rapidly became popular for its take on halwa and enhancement on the original recipe. For anyone who has never had the pleasure

Today, halwa still remains an integral part of local Bahraini hospitality. It comes in different colors depending on ingredients added to it, with toppings that range from almond shavings to crushed pistachios. It is best served

It’s served either mild or spicy, depending on your preference. There is no shortage of mattay-selling shops all around Bahrain, but Muharraq is guaranteed to give you the best and freshest. A 3-day hill climb in Al Baha’s Khaira Forest saw 18 eager contestants from around the Middle East race against each other for prizes that amount to a total of SR 36,000. Divided into 3 categories, the participants had FWDs (FrontWheel Drive), RWDs (RearWheel Drive), and AWDs (All-Wheel Drive) riding and tearing up the Arabian asphalt as they tackled sharp, adrenaline-pumping corners along a tough and tricky 2.8km-elevated forest route.

Hussam bin Saud. Organized by the Saudi Arabian Motor Federation (SAMF), the event catered to hill climb racing enthusiasts in Saudi Arabia and the region, and was held in accordance with the National Sporting Code and the FIA International Sporting Code.

Crowds roared at the sidelines throughout the duration of the event, cheering on the winners – first-place and gold medalist Fadi Hamada from Syria, silver medalist Majed Al Ghamdi, and bronze medalist Ahmed Binkhenin – as they were handed their awards by Al Baha’s Prince

Some self-modified cars were allowed in the race, but under certain restrictions, such as limiting the turbo inlet valve size for single turbos, giving hardcore enthusiasts the green light to take their tuned monsters and run them to their full potential. All in all, It was a beautiful scene to watch.

Only drivers with a valid ASN FIA license and capable of the safe operation of the race vehicles – which must meet all the safety criteria – were eligible to participate.

The Al Baha Hill Climb 2017 was the first ever official Saudi hill climb race, a competition where highly skilled car-racers attempt to ascend a steep incline as fast as possible.

Meets the Scenic Seaside King Abdulaziz Fort – one of Saudi Arabia’s youngest forts By Mohammed Mirza

Traveling around the country in the summer was a novel experience for us, as we normally limited our travels to the winter season. This time around, we had our holidays during peak summer, and we didn’t want to waste them sitting in front of the TV. We traveled to the coastal city of Duba, where the weather was extremely hot and the air humid. Even after spending much of our lives in the Kingdom, our bodies had not become acclimatized to the non-AC desert weather. It 80 DESTINATION RIYADH OCTOBER 2017

was so hot that the car’s AC also gave up on us; no matter how high we turned the AC, it just wasn’t enough – the air somehow warmed before it reached us. The city of Duba is famous for two things, its beaches, and the King Abdulaziz Fort. With the weather being absolutely not ideal for beaches, we went to the fort right away. The fort sits right by the sea overlooking a small seaport that looks much the same as it probably once did during the fort’s heydays.

The seaport has much the same commotion and traditional boats, too, except that they are now motor-powered. We realized later that the part of the sea the fort sits by is actually a creek called the Duba Gulf. The city of Duba extends further South even beyond the creek, and the city’s famous fish market sits right opposite it. We reached the fort following the coastal road and it turned out to be larger than our expectations. The surreal fort felt like it would be an ideal site for a heritage hotel – a concept that hasn’t gained a foothold in the country yet. There were multiple entrances to the fort; all were locked. We roamed around the fort, admiring its walls, which looked like they had been restored in recent years. It felt a bit like it lost some of its history, as it no longer carries all its “scars” from the past – the battles it has seen, and its rise and fall from prominence. Built in 1933 CE during the reign of King Abdulaziz, it acted as the ruling center of the city. Most of Saudi Arabia’s forts are centuries old, but this one was constructed after the formation of the kingdom. DESTINATIONKSA.COM 81

HISTORIC KSA

In the decades to follow after its construction, the fort was home to various governmental bodies including the defense and police departments. The different administrations made their slight modifications to the fort, some of which can be seen today. Spread over an area of around 1,000 square meters, the King Abdulaziz Fort has a pretty simple layout. It carries a rectangular shape with all four sides having small, round towers. Inside, there is a large courtyard and a few rooms that are largely made adjoining the outer walls. Limestone sourced from nearby areas is the main construction material used in the building, characteristic to other fortifications in the region. As the fort is located in the older part of town, there were historic buildings of a bygone time nearby that were crumbling their way to the future. Jubail’s Meteoric Rise By Mohammed Mirza

The year is 1975; a landmark royal decree is set to change the fortunes of a small village sitting on the country’s east coast. It is the year the Royal Commission for Jubail and Yanbu is established, and Jubail is set up for change. Jubail is a long settled site with signs of human habitation dating back 7,000 years, and was once an important port. In the 20th century, it found itself forgotten for centuries, but the Royal Decree was all set to change that. The plan was to make Jubail an industrial hub by utilizing byproducts of oil and creating sub-industries that would benefit from it. Along with that, the city was going to be made investorfriendly, making it easy for any company to set up a factory in its strategic location.

In 1983, the Jubail industrial city project was cited in the Guinness Book of Records as the largest engineering and construction project ever attempted.

The main benefit from an industrial hub like this was the diversification of the economy. In so doing, reducing its dependence on oil. Jubail was selected as the site of this mega project as it is located

to build an embankment 30 feet wide and three feet high around the equator. Jubail also saw some of the world’s most renowned architectural firms come to the city to assist in community

close to Saudi Arabia’s main oil fields, and has access to navigable waters in the Arabian Gulf. As Jubail was located in a place that had soft sand and salt flats, it wasn’t ideal for big constructions. To fix this major problem, 14 billion cubic feet of earth was brought in. It was said to be big enough

planning and design so that the city attracts and retains top talent. The results of the mega project proved fruitful and today, Jubail produces everything from fertilizers and petrochemicals to steel and detergents, and it plays a key role in Saudi Arabia’s Vision 2030 that seeks to decrease the country’s dependence on oil.
