FROM THE EDITOR It is in our culture to indulge, and I mean that beyond the painted stereotype that all Saudis live a life of opulence. On the contrary, Saudi indulgence isn’t so much about what we take but rather, it has evolved to what we are willing to give. It has found its way in our hospitality, our food, where the latter, as a matter of manners has been our special way of letting people into our fold. No food issue is complete without our list of top dining spots in the Kingdom. Here lies over 20 restaurants who have caught our attention this 2018. AL MOLHAM When Reason Finds its Rhyme By Latifa AlSaeed

It’s hard not to take notice of Molham Krayem, a business strategist, writer, and artist; his music and desire to preach positivity and selfawareness is contagious. In an interview with Destination, AlMolham shares his secrets to producing rhymes that are driven by finding one’s passion and purpose:

By cutting off all distractions. Really, by learning how to say no. Once we’re clear on exactly what it is we want to happen for us in life, we become a lot more disciplined with our time. And there’s a lot we can accomplish in one day with the right focus and drive. What I think it comes down to, for me at least, is extreme prioritization. That’s my secret weapon that I think not too many people know about. At the end of the day, my actions need to map to my ambition. Meaning, if I want to live a special life, I need 18 NOV/DEC 2018

to be doing special things every day. If you work a day job from 9am-5pm, I encourage you to evaluate what you’re doing from 7pm-12am. Are you scrolling through your phone, or are you looking to make something happen? We often underestimate how much time we have in a day, yet overestimate how much time we have in a year. Try tracking, on an Excel sheet, how you spend every hour of your day for a full week – you might be stunned by the amount of time you unknowingly misallocate. Every day matters.

You consult for the CEOs of the largest banks in Saudi as a Strategy Consultant with Bain & Co. — how do you balance being an artist while also working full-time in a highly demanding job?


You write for Forbes and on your blog about life strategy, focusing on the concept of self-awareness. Why is it so important to you? Because it determines how you invest your time – how you choose to spend it – how you make the most out of every minute of every day. And, as we now know, time is everything. It sounds cliché, but before you set sail you need to know where you’re headed. And where you want to go depends on who you are. So, before anything else, you need to know yourself. That’s what self-awareness is. Yet, surprisingly, most people rarely take the time to ask themselves the questions that matter. Yes you schedule coffee with other people, but when was the last time you scheduled coffee with yourself? That’s why mid-life crises are so common. The earlier you figure out your true desires, wants and needs, the happier you’ll be in the long term because you’ll have more time and energy to pursue them. I wrote an article called “27 Questions That Changed My Life.” It’s on my site blog – consider reading it and I promise it’ll change yours. DESTINATION KSA 19

How do you divide up your week between work, rap, and writing? I’m actually quite calculated with my time, so I’ll give you a pretty accurate high-level breakdown. In a given week, as we all do, I start with 168 hours. I sleep on average around 5 hours a day, which leaves me with 133 waking hours. Of those, on average, I spend roughly 50% consulting my clients on strategy, 15% writing recording-performing music, 10% life coaching and writing for Forbes, 20% between health, faith, family and friends – and the last 5% making sure the 95% all run smoothly.

When did you start taking rap more seriously? Earlier this year. I wrote and performed throughout college, but I was always more focused on my classes-internships-startups. March is when I put out my first EP. The Time Is Yesterday. It was well received with both streaming and radio, and charted on Anghami’s top hip-hop charts. But I think people’s reactions to it is what made me realize the influence of music and the positive impact of sharing my own struggles. One girl who listened to Me Against The World DM’ed me on Instagram and told me her story. She’d been assaulted and kidnapped about a year ago and was recently released from a hospital trauma unit. She told me how the song was encouraging her to keep pushing forward when the days get tough. That, for me… that’s really the core of why I do what I do.

How did your family react when they saw you pursuing your passion? My parents have always been supportive — what major to study, where to travel, etc. – but I think even for them rap was a little out there. Naturally they were a little skeptical at first. But I think it all changed for them when I did my first TV interview – mainstream media has an oddly interesting appeal for generation X. They started seeing the potential and they’re much more on board now – my mom shows my videos to all her friends, my dad retweets all my new songs. It also clicked for my grandma too – I can try and explain to her everything I’m doing, but it’s different when she’s watching her daily morning show and her grandson pops up as “today’s guest.” The way I see it is: your vision will always be very clear in your head. And it always takes time for others to see it too. Your job is to get them to see it.

Where does your inspiration come from? From people like you. From everyone I meet. From every conversation I have – listening more than speaking. Even with myself, I listen more than I speak (if that makes any sense). And I read every day – books play a huge role.

What is the biggest barrier a rapper like yourself, has to face and overcome nowadays among society? The answer’s in the question: that I’m a rapper — that, in and of itself, is the biggest barrier. There’s a societal stigma around the title in Middle Eastern culture. What’s funny though is if I say I’m a “poet,” people would respond differently – even though I’d be literally speaking the same words – and that tells you something about the power of word choice. But can I, or anyone, on the other hand blame society for their view of rap culture? Not really, no – at least I don’t. I’m empathetic. They only see what’s mainstream. But we’re changing mainstream.

What message or value do you hope to deliver to the world with your words? The realization that time is everything. It’s everything because once a day is gone, it’s gone. And that’s why what you do every day matters. I live with the perspective that I’m going to die someday, because when I’m 90 years old and looking back at my life, what will matter most is: did I live my life in accordance with my values, and did I do everything I could to make it happen? I am a Chef. I am what I’ve always aspired to be and what I hope to inspire people by. I have fought to earn this title but I am by no means entitled to it. Being a chef takes guts; it takes resilience, sacrifice and passion, but it also needs patience. It took me over 7 years to convince my parents to send me to culinary school, but I always knew that I would eventually go; it was a feeling I had rooted deep within my bones, and here I am today. I remember when I first started telling people about my passion for food, and plans to become a chef someday, I would get very hostile or sarcastic reactions and remarks like, “Oh, so you want to become a cook?!” or “Why don’t you just learn that from your mom or grandma at home?” All that made me question my dreams and made me feel ashamed and embarrassed to share them with people. However, that didn’t stop me; I still cooked for my family; I used to love the feedback I would get from them, and I used to live for the feeling of having somebody try my food and actually enjoying it. Everyone saw cooking as just a hobby; nobody really understood why I wanted to pursue that professionally, and that’s okpassion is hard to understand or explain; passion is a fever within you that radiates through your bones, so sooner or later, people will start to feel that heat from the fire that is burning so violently inside of you, so just be patient, and never submit to society’s pressures and conform to its cookie cutter standards of life.

Enrolling in culinary school really changed everything for me. It further cemented my dream of becoming a chef and it really opened my family’s eyes regarding my choice of career. They saw how much it meant to me and how serious I was about fulfilling my dreams, and today, I can really feel that my family is proud of what I have become, and that I have their full and genuine support in everything that I do. My parents could have easily reduced my passion to a mere hobby, but they didn’t. They may have resisted at first but when they really understood; when they really saw the changes happening within me, they knew that this is what I had to do. Even in the kitchen, amongst other chefs, I face inadvertent discrimination. I am treated differently because I am a girl; people think that because I am a girl, I must be weaker than my male counterparts, but that just makes me work harder. I don’t care if I burn myself, I work in the kitchen; it’s inevitable. The funny thing is, people seem to care about my scars and the appearance of my hands more than I do- “be careful you’ll burn yourself, and nobody likes a girl with ugly scars” or “a lady should have nice, smooth hands!” Comments like these really get to me but I just smile and nod, because I know, that the best way to fight prejudice is with pride. I still feel the need to break the stigma of being a chef in the Arab world, it seems that stigmatism is not just a physical defect in the way we see things but also a defect in the way society has

programmed us to view certain aspects of life. The word stigma originally meant to have a mark or stamp, and that is exactly what I strive to leave behind. Many people ask me “Why don’t you just start your own business instead of slaving away at work?” The thing is, I believe in cooking things low and slow; when you take time to really sauté your onions you will get the most delicious sweet-mellow flavour; I find that to be the most perfect metaphor for life. In order to start or run a business, one must be fully knowledgeable and aware of the ins and outs of their certain field of interest, and I don’t believe that I am there yet, and that’s ok. There is no shame in working to gain experience or working just because that is what you love to do. Many people dive in but end up belly flopping their way to closure; when it’s my time to dive in, I want to land that perfect 10. I am a chef, but I still have a long way to go.

Hayman Binjaby’s passion for her family business is palpable. Despite working in the restaurant business for the better part of three decades, the gleam in her eyes hasn’t dissipated one bit.

Hayman believes that the success of Al Shurafa is due to her personal touch and keen attention to every detail – nearly all the dishes served are made from recipes she makes for her own family, and the recipes that are not her own, go through personal approval from her. Her involvement goes far beyond the dishes; the interior design is also Hayman’s idea. Her efforts are evident in the taste and presentation of the dishes, but also in everything leading up to the actual dining. Hayman believes that evolution is key to any successful business. Al Shurafa stays relevant as it explores all the trends in the dining industry. As she passes the reins to her son Bandar, who manages the daily operations of the restaurant, she makes sure the same level of care and dedication to the business is present. “In any business, you have to know what you’re doing. You have to make sure you understand everything about the business before making any decisions, and you must always be up-to-date with your industry.”

Opening Al Shurafa right before the current restaurant boom in the Kingdom, the matriarch of the Kaki dynasty looked risk in the eyes and never blinked. Initially established as a gift shop with a coffee shop attached to it, Al Shurafa gradually grew to become the powerhouse of fine dining it is today.

DR. MAZEN MOGBEL A Premium on Quality

Dr. Mazen Mogbel was a general practitioner at the National Guard Hospital for nearly five years. His restaurateur story begins with a 12 year-old’s desire in gastronomy and branded food concepts. From a young age, he would observe the popular local and international restaurant brands representing themselves. For him, the services provided were always an attraction and not just the food alone. It was the whole package of a restaurant brand that pulled him towards being a restaurateur. After practicing as a medical doctor for years, he shifted gears in his career and took the plunge in the restaurant industry, starting a journey that took him to successful roles and a career path that not many doctors would have chosen. Along with his partners, Dr. Mogbel realized that proper highend, stand-alone restaurants did not exist in Saudi, except for the ones housed in five-star hotels.

“We wanted to develop a chain of new restaurants that introduced an elevated taste to the Saudi restaurant scene and bring joy to food enthusiasts,” he said. “I never thought I’d run a restaurant, but I’ve always had an eye for good food and quality.” Being fond of traveling and exploring different cultures, an idea soon began to gestate to make his passion a reality, and he started the food company Mira, which is an old Arabic word that means ‘food bites.’ “During the summers of 2007 to 2009, my partners at Mira and I vacationed frequently in Lebanon and Syria, where a large Armenian community has resided for over a hundred years. There were many bustling Armenian restaurants there with loyal patrons from Saudi Arabia and the Gulf countries. It gave us the idea to bring this favored Armenian cuisine to the Kingdom,” Dr. Mogbel added.

On the 14th of February in 2011, Lusin, which is the Armenian word for moon, was established in Riyadh, serving delicious Armenian fare and authentic specialty dishes that are continuously monitored by expert food consultants. The popular restaurant is set to open another branch in the capital city soon. Mira will also soon introduce two new brands to the Saudi market, one of them the Saudi restaurant Sohail, which combines refined food specialties from all five regions of the Kingdom. Soho Club, on the other hand, combines a nice variety of American and European-friendly cuisine, and is set to open in Riyadh by the end of the year. Chef Nour’s 2019 Food Trend Predictions: Vegan pop ups and speciality restaurants that focus on one thing, often artisanal, and doing it exceptionally well.

Jeddah born Nour Al Zaben discovered her passion for cooking at a young age. At 14, she moved away to boarding school, where meals lacked a touch of warmth and comfort. Wanting to feel closer to home, she found herself in the kitchen, recreating familiar dishes and discovering new flavors along the way. However, her transition into a culinary career didn’t happen until she finished her degree in Banking and Finance: “In those days being a chef was a bit of a taboo, it was not a career path that Arab parents pushed for. However, after finishing my degree in banking and finance, I managed to do a cooking degree instead of a masters. I attended Le Cordon Bleu in Paris, and did a full degree in French cuisine.” When she returned to Jeddah, Chef Nour gained experience and understanding of the local palate by joining different culinary brigades—making her way through the kitchens of Toki and AlMultaqa; and eventually collaborating with another restaurateur and worked on the menu of Soli Sushi. “I took a break after that and helped in our family business. I made a deal with my mom to do it for a year, then afterwards go back to my first love.” Indeed, when Chef Nour made her comeback, she went all-in. Together with her partners, they opened Urb Kitchen, one of the trendiest restaurants in Jeddah right now. “URB kitchen was previously called urban diner, the restaurant and the menu lacked creativity,

and the atmosphere was almost nonexistent. With that said we still saw potential. Deciding to revamp the place, we took on the restaurant and managed to give it a full face lift. We worked day and night on a creative menu to cater to the masses, our prices are reasonable but never once did we compromise on ingredients. URB Kitchen was our first local concept and we are truly proud of that,” said Chef Nour. The dishes are innovative, yet feel homey and inviting. It reflects food you grew up loving but with a twist. Take for example the beet hummus topped with quinoa falafel. The food is also aesthetically pleasing, Chef Nour and her partners believe that people eat with their eyes first and that’s what makes URB kitchen stand out. Social trends are developing and people are looking to try new things, URB Kitchen is setting the standard of casual dining, it is a melting pot of traditional ingredients and modern techniques. This reflects Nour’s guiding principle as a restaurateur and chef: “Have a strong concept first, the rest will follow. You can tweak dishes along the way, crafting a menu is a process, for it to be great, you have to be building upon a solid concept.” Currently, URB Kitchen is looking forward to providing an all-day dining service, and welcoming guests to their new outdoor terrace. chef_nz

CHEF KHULOOD AND FARID We had the pleasure to interview the couple behind Riyadh’s Oishii Sushi, Chef Khulood Olaqi and Farid Tawfik, banker by day, restaurateur by night. By Zahra Anwer

Chef Khulood, what was your inspiration to become a chef?

What’s your work dynamic like?

I fell in love with cooking when I was 11 years old, and used to help my mom in the kitchen. When I got older, I wanted to do something in my spare time so I had the idea of opening a home-based business. My mother suggested that I start something unique like sushi because we used to make it at home already. I was hesitant at first but then my family and friends really supported me to go through with it.

Khulood: I work mostly in the kitchen and Farid manages the front of the restaurant and takes orders from the customers. He’s a manager and a waiter.

Farid, what made you jump in and become a restaurateur? I considered myself a foodie and I’ve been in the F&B sector since I was 18 years old. I used to work in restaurants before; while I was studying in university. At the same time, I always dreamt of having a part-time job; and a second source of income, by running a restaurant. 36 NOV/DEC 2018

How do you find time for each other and the family with your busy schedules? Khulood: It’s difficult because we’re still in the beginning and have to give all our effort and time to this. When our relatives want to see us they always visit the restaurant. They know where to find us. For Farid and I, sometimes we only go home to sleep and come back to work. However, even if we get very busy, we always manage to find at least half an hour to spend time together and not talk about the business.

I used to make their orders in the morning and take it with me to the university in a cooler box. When I got married to Farid in 2013, he was also one of the main reasons why I decided to become a chef.

Farid: That’s my main role. We decided that I need to come and support Khulood while she is working at the sushi bar so now we are covering both. Sometimes I’m managing the floor and other times, the bar.


What were the challenges you faced in opening up Oishii Sushi? Farid: There is a lot to say to be honest. There were a lot of challenges in terms of regulations and all the paperwork involved. The worst part was obtaining our license. It took us around 11 months and we kept paying the rent all this time. After that, we faced the recruitment challenge of getting visas for our staff. But in the end, it was all worth it and we are three months old now. It’s a soft opening still, but we are happy to say that we try our level best to make sure everyone who comes in leaves the restaurant feeling extremely happy and satisfied. So that’s our success. Khulood: And we are taking it step by step you know. One of the main things that made me anxious in the beginning was that I wanted everything to be perfect. I realized that I can’t take

care of everything. But Alhamdulillah, each day we learn something new and we are enjoying it. We love this place and the team here is like family so it’s not a boring job. I’m taking it as a fun place to go and try out new recipes. This restaurant has enabled me to do what I love and meet our customers especially ones who used to order from us back in 2014 and now come here to the restaurant.

What’s your secret to keeping customers coming in? Farid: The secret is being here (in the restaurant) and connecting with our customers. Khulood: And because we pay attention to our customers. We also noticed that many keep coming back because of the welcoming environment and the quality of food. Also, I have another account on social media; where I blog and post recipes. So, I think, when people living outside Riyadh come here, the first thing they want to do is try this restaurant.

What advice can you give others wanting to start their own restaurant? The first aspect people should work on is their belief in the business. It’s all about time management regardless of your profession. If you like something, just work on it and you will reach your destination. Early in his career, Chef Fouad AlNassar has already won two bronze medals at the Foodex Saudi Culinaire Salon competition. Harboring a love for fish markets and far flung recipes, he sits with contributor, Javeria Ilyas to share what goes through the mind of a millennial chef aspiring to build an eponymous culinary brand.

Where does your culinary journey begin? My love for the kitchen and cooking grew because of my mom; I loved helping her in the kitchen but she never thought I’d end up being a chef. Visits to the local fish market since childhood and experimenting with different recipes reflected my interest, the kitchen. You can say my inspiration comes from a combination of childhood memories, and a taste of home. Becoming a chef wasn’t planned though, it was more like an accident. I went to Los Angeles to get my bachelor’s degree in architecture. However, destiny brought me back here in Jeddah with a lot of questions in my mind about what I really love. And so, I started my first job in a casual dining restaurant without my family knowing.

I joined Artistic Food Lab where I met Chef Hani Zain, who not only trained me but believed in a Saudi who loved being in the kitchen. I joined his team for different trainings and competitions, which led to great opportunities such as working at the Ritz-Carlton in Jeddah.

What made you decide to start your own brand? What were the challenges? I have always dreamt of having my own restaurant or something related to food. After completing a course in Japanese sushi during my third month with the RitzCarlton Jeddah, I wanted to venture out on my own. And so I started Krabload in March 2017, going from one event to another. This wouldn't have been possible without my team who stood with me. I am now in the process of building my own brand that is ‘By Fouad Nassar’, it has different branches and ‘Selections’ is one of them, offering unique products from different parts of the kingdom. This brand will guide local brands and the start-up businesses of food and beverage. It will also support catering and private events or parties.

What’s your favorite part when in the kitchen? The energetic vibe and busy atmosphere of the kitchen. Flames on the stove, heat in the kitchen, the banging of the pans and oh-sosoothing sounds of shouting orders. Sharing my experience with the world on a plate makes me happy.

Which cuisine would you like to introduce In KSA? Its own cuisine, being a Saudi chef it’s my responsibility and now my mission to revive the cuisines of other regions. And not just that, I want to introduce Saudi Arabian cuisine to the world. It is a rich cuisine with its own legacy, I hope the world is ready for it.

How important is education in a culinary career? Education is always a plus, but I think not having a degree shouldn’t limit you or stop you. If you are passionate about something, you’ll definitely find your way. There are many good and famous chefs who made their way without having a culinary degree. You don’t really have to follow the basic system of going to school, getting a degree, and then start your career.

What is an advice you wish you’ve heard at the start of your career? Practice, it requires a lot of hard work and practice. We as chefs wash, we cut, we cook, we do business, and we do everything. I also washed dishes at some point, some days; I’d be on duty for more than 15 hours and jump back in my kitchen to prepare for 100 people the night after. At times it gets so busy, ironically you forget to even eat so you have to be patient and try to do better, the more you do it the better you get, just keep practicing. Involve emotions in your food and believe in team work, the kitchen is all about team work. If you really love cooking don’t give up, ask for help, it is okay to ask for help. DESTINATION KSA 41

The meat falls apart at the slightest touch and the charred exterior gives the meat more depth and flavor. You are paying quite a bit, but this is worth all that and much more. This is currently, Khobar’s best rib joint, period.

The upward trend will only continue, due, in large part, to Mohammed bin Salman’s staunch advocacy of the arts. The forward-looking young Crown Prince has made the visual and other creative arts an integral pillar of his ambitious Vision 2030 national plan aimed at both the diversification of the economy and general societal reform. The government has earmarked 64 billion dollars to invest in the culture and entertainment sectors 68 NOV/DEC 2018

over the next decade, while the General Culture Authority (GCA), established in 2016, is planning 100 cultural events across the Kingdom in the coming year alone. Artists and other cultural workers are all abuzz with hope and excitement. The two most important statefunded institutions placing contemporary art center stage of the country’s economy and culture are The King Abdulaziz Center for World Culture (Ithra) and the Misk Art Institute. If the former, inaugurated by King Salman on December 1, 2017 foretells what’s to come, the future of Saudi art, design, and creative thinking bodes extremely well. Based in Dhahran, and backed by Aramco, Ithra includes museums, exhibition spaces, an auditorium, a cinema, a library as well as the Idea Lab, dedicated to research

in technology, science, and the arts. Ithra’s program serves as a catalyst for innovation and the empowerment of national talent, particularly among the youth. Its local agenda is coupled with an international one. The center, equally a global platform for cultural exchange, has organized several global exhibitions. The Misk Art Institute was founded by the Crown Prince as part of the Misk Foundation in 2017. Committed to heightening global recognition of Saudi art and optimizing art’s function as a form of soft power diplomacy, the artist-led institute has already collaborated with at least twenty partners, including Art Dubai and the Metropolitan Museum of Art. Within Saudi Arabia, the Misk Art Institute aspires to promote social awareness of the arts as a viable profession and reframe art as an important, inherent element of life and culture.

Headquartered in Riyadh, it will be opening a large cultural centre in 2020 encompassing exhibition spaces and artist studios, the latter particularly fulfilling a critical need in the sector. Ithra and the Misk Art Institute are powerhouses redrawing the Saudi socio-cultural and artistic landscape at the local, regional, and international levels. However, they would not have been possible had the terrain not already been prepared in the last decades by a rich grassroots contemporary art and design scene, based in Jeddah and other cities like Abha or Riyadh. artist, Ahmed Mater, associated with Edge of Arabia, to head the Misk Art Institute.

In addition to artist-led collectives and private initiatives like Princess Jawaher Bint Majed Bin Abdulaziz al-Saud’s al Mansouria Foundation, commercial art galleries also predate current state sponsorship of the arts. Changing national narratives around art, however, should help stimulate sales in the close to sixty art galleries across the country. The neighbouring healthy Emirati art market and the newfound global appeal of Saudi art will also strengthen the domestic Saudi art market.

The former, initiated by Meet Aarnout Helb in Amsterdam, is a museum and research center whose matchbox size has not prevented phenomenal outreach. The foundation’s permanent collection is diverse: the artists represented include Abdulnasser Gharem, Reem al Faisal, Lulwah al Homoud or Sami al Turki. It is, however, the Edge of Arabia that incontestably placed Saudi Arabia on the art world map. Established in 2003 by British artist Stephen Stapleton and Ahmed Mater –then later joined by Abdulnasser Gharem— Edge of Arabia launched in 2008 with its exhibition at London’s Brunei

Gallery that garnered a recordbreaking 13,000 visitors in less than three months. Stapleton, now also the International Director of the Misk Art Institute, told me that, Edge of Arabia has garnered more than 1,750,000 visitors at its exhibitions, disseminated over 100,000 books and catalogue, and reached over 500,000,000 through media and marketing. Saudi Arabia possesses its own pre-

modern and modern art traditions. It has, however, entered a new era in which the creative arts will play an increased role in collective identity, social change and the economy. Private actors have jumped on board too, like Art Jameel with its Hayy Creative Hub set to open in Jeddah next spring. The 17,000 sqm. complex will house

art and design galleries, comedy clubs, cafes, and a digital film studio. The secret of the Saudi contemporary art scene’s success is its bottom-up evolution. That the government is now in tune with the initiatives, dreams, and visions of the country’s cultural actors who led the way further sculpts a propitious path for a colorful tomorrow.

Jewelry has taken an important stature throughout human history and among different cultures. Preening was not the only reason of wearing golden and silver jewelry. They were also symbolizing important and holy meanings. ITHRA’S CREATIVITY SEASON New ideas discovered, industries disrupted, and dialogues started

Tanween by Ithra is the first and largest Creativity Season ever held in Saudi Arabia. Over 17 days, the initiative has spread creative thinking and enabled an environment for talented and creative minds. Attendance has been overwhelming and the fantastic programs of talks, workshops and exhibitions have been running full house. ‘Disruption’ was the main theme of the inaugural edition and was visible across the various discussions.

Tanween Highlights Introducing the speakers of the Season were social artist and actress Fatima Al Banawi, and filmmaker and actor Hakeem Jomah, both of them apt hosts for their diverse – and disruptive – professional backgrounds. American special effects designer and TV personality (of MythBusters fame) Adam Savage shared his passion for and experiences in creating objects, and gave a talk on how this helps us understand the world around us. Other speakers included, designer Tarek Atrissi, founders of Tamashee (a high-end footwear brand) Muneera Al Tamimi and Mohammed Kazim, and Raha Moharrak, the first Saudi woman to summit Everest. Also a crowd favorite was a talk given by Greg

Foot, a science communicator, BBC TV Presenter, and YouTuber. Interactive workshops were held at the Ithra building as well, on topics including design thinking, manufacturing, retail and technology disruptions, inventions, Arabic typography, and Islamic Geometry. Special art installations were displayed, featuring the talent of artists Abdullah Al Othman, Stuart Campbelle, Dana Awartani, and Majed Angawi. Panel discussions were another highlight of Tanween. The Made in KSA Panel discussed how technology and new material can help in leapfrogging global fashion capitals, projecting the Kingdom to the next stage. The panel comprised of Hatem Alakeel, founder of Toby; HRH

Nourah Al Faisal, founder of NUUN Jewels; Cyrille Fabre; Partner and Director of Bain & Co; Reem AlKanhal, Designer, and moderated by Julien Hawari, Co-Ceo of Mediaquest. The Creativity Season attracted artists, creatives, and tech enthusiasts from all fields and of all ages, and they also got to enjoy different experiences at Ithra – watching films at the theatre, visiting a state-of-the-art library, and museums as well as the Energy Exhibit. 1. Hike

As the winds howl, and winters bless the air, you should totally get your camping game going. A TALE OF TWO PEAKS

Two American brothers, Matthew and Eric Gilbertson, came to the Kingdom of Saudi Arabia to climb Jabal Souda (sometimes spelled Sawda) and Jabal Ferwa in an attempt to find the country’s highest point. Their goal was to reach the highest point in Saudi Arabia and to determine which mountain is indeed the tallest. The brothers were assisted in their efforts by the Saudi Climbing Federation, a government organization in charge of supporting the development of climbing in the Kingdom. 86 NOV/DEC 2018

Jabal Souda has long been considered the countries tallest mountain, but there had always been some uncertainty as to its actual height, and some measurements showed Jabal Ferwa being taller. Using a sophisticated GPS device, they hoped to be able to put to rest the debate about which mountain was in fact taller. On August 17, they hiked through the rain and fog to the top of Jabal Souda. Upon locating the highest point, they took measurements

and found that Jabal Souda is approximately 3007 meters tall. The following day they hiked to the top of Jabal Ferwa where they again took measurements at the highest point. There they were able to determine that Jabal Ferwa is approximately 3009 meters tall, a full two meters taller than Jabal Souda. The device they used was a Trimble Geo 7X, which measured the elevation to an accuracy of less than 30cm, leaving no doubt that Jabal Ferwa is actually the tallest mountain in Saudi Arabia.

The brothers came to Saudi Arabia as part of their Country High Points project, in which they are attempting to reach the highest point in every country in the world. After this weekend, they have now been to the highest point in 111 countries worldwide. They are both graduates of the Massachusetts Institute of Technology (MIT) with PhDs in Mechanical Engineering.

They were joined by Majed Alnaji, the Director of Operations for the Saudi Climbing Federation, who organized the trip and helped the brothers obtain their visas. Also participating were Hattan Alasli, a Saudi guide and NOLS trained Wilderness First Responder, Roua Basaad, Albatool Baroom, and Iyad Aldalooj, with Ryan Olson photographing the trip. Jabal Souda and Jabal Ferwa are both part of the As-Sarawat mountain range, located in the Asir region of Saudi Arabia, near Abha. Jabal Souda, which is north west of Abha, is a popular tourist destination with a town near the summit. It has well-established trail and a gondola that can take visitors close to the top. Jabal Ferwa can be found south east of Abha, near the town of Al Harajah. It is far more remote and completely undeveloped, though the hike to the top is relatively short. Web: countryhighpoints.com

Nearly three months later, a group of women from across the GCC, including myself, were invited by Jeep to attend the launch of the new Cherokee SUV in Sicily, this was the first all-female trip of its kind. At the airport, the excitement was electric as 7 women set off to test a car that was designed by Irina Zavatski, one of the world’s most prominent automotive designers. On arrival, it became clear that this car is going to appeal to both men and women. As the clock struck midnight on 24th June 2018, women throughout Saudi Arabia (and around the world) did victory laps in a show of solidarity and celebration for the abolishment of the ban on female drivers.

On the exterior, the ageless redesign on the front end incorporates the safety-conscious daytime running lights and indicators which float effortlessly above darkened headlamps. New for the 2019 model is a lighter composite boot lid with handsfree power operation for ease of access. PLEASURE White, yellow, tender, smooth, soft, flavored, salted… Butter takes many forms, textures, colors and flavors. How can you tell the difference and how do you choose the best one? FIRST THINGS FIRST, WHAT IS BUTTER? Butter is the milk fat obtained by beating the cream pulled from milk. It consists, according to the regulations, of a minimum of 82 % of fats of dairy origin and of a maximum of 16 % of water in the form of droplets. NOT ALL BUTTER ARE CREATED EQUAL The best butter takes time to make. In Europe, the process of making butter is comprised of seven stages from milking, to the dairy to the packaging. Above all, it is necessary to respect the time of maturation, of churning, of kneading. The time spent is what gives added value to the product: the taste, the aroma, the texture. So of course you will have understood: origin is one of the most important factors when choosing butter. European butter is an entirely natural product in its pure state. Making 1kg of butter requires 22 liters of milk. And that’s it! By law, in France, only salt can then be added, to obtain a salted butter. Consequently, butter is stronger in colour during spring, as cows eat fresh grass. Summer butter is also richer in vitamin D: it is synthesized by the cow when it is exposed to the sun, which in turn is found in the milk and the butter. In Europe, cows eat grass in the meadow, that’s why you can find both white and yellow European butter!

Chef Ahmad Fraijeh , from Riyadh, Saudi Arabia, told us: “European butter is a key ingredient for baking pastries as it gives them a more velvety texture. As a chef, I would say that butter is an essential ingredient in most of the recipes; whether it is used in a sweet or savory preparation, in a sauce or as an emulsion, plain or even flavored. When butter is used, it has the power to enhance the flavors of your ingredients and makes baked goods more tender. This is a flavor enhancer that brings an additional richness to your dish. But butter also brings a velvety and gourmet texture to your creations; a good example to illustrate the magic of butter is to compare pastries & viennoiseries made with butter to the ones that are made without. The ones using butter will have a softer and more tender texture.If you wish to create top pastries or dishes and impress your family, I will always advise you to go for European butter and not any substitute! LA BELLE VIE BUTTER AND THE GOOD LIFE Destination makes its way through the Brittany countryside and onto the cobblestones of Paris to discover the rich history, and culinary tradition of French butter. By Jou Pabalate

Our journey begins in Nantes, a picturesque city in the west of France. It marries its long history with innovation. From reimagined spaces to culinary traditions finding modern renditions; Nantes is the urban nucleus of Brittany culture. We were already butter believers when we started the trip— what we wanted to understand is the secret behind French butter that makes it a cut above the rest. To get our answers, we had to start from the beginning of the process; the farms.


French Butter at Its Finest We headed to Machecoul near Nantes, the home of Bellevaire, a family owned creamerie, cheese maker, and cheese monger. They first brought us to one of the farms that produces the milk they use for making their artisanal butter. Arriving at the crack of dawn, we were met by Cyril, who together with his three brothers, runs a terroir. Brittany as a region is home to several PDO (protected designation of origin) areas. PDO products are produced and processed within a certain

region— where the environment and local traditions play a vital role in the maintaining the authentic flavors of a product. As a terroir, Cyril’s farm continues to produce quality milk that is unique to its territory. The rolling grass and temperature makes it a conducive place for grazing, with cows given the chance to roam from March to November. Milking is limited to twice a day, and there is deliberate process both in activities and dietary needs to ensure that cows are calm and happy. Hot milk collection on its own is unique to France. Adding to that,

Bellevaire also sets themselves apart as the only brand using unpasteurized milk in their butter and cream. Now at first, one might think that this doesn’t make much of a difference, neither does the 82% legal fat requirement exacted by law in the country. As it turns out, it does. Bellevaire’s butter is as artisanal as they come, their butter master noted that they’re the last folks to use a wood churner to turn raw cream into butter. The latter is also molded by hand. The result of all these elements, from happy cows, select farms, and keeping traditions alive in the family; is butter so good you eat it off a spoon.

We Can’t Believe It’s Butter One of our favorite stops is the Jean Yves Bordier Factory, where we first got introduced to the wonderful world of flavored butter. From chocolate chips, berry laced, to yuzu infused flavors, our palates took a tour de beurre.

Bordier Butter uses traditional kneading with wood to seal flavors within the butter. It also attributes to its silkiness before other ingredients, including customized levels of salt. We were fascinated to learn that renowned pastry chefs from all over the world order personalized butter from them directly.

During a special culinary workshop with Chef Tugdual Debethune, we learned how butter can enhance and elevate even the simplest of ingredients. French cuisine is known for its impressive use of techniques, but as Chef Tugdual so wittily showed us—it’s really about how you can pair and play with flavors. Butter can be effectively used for this purpose, plus when clarified correctly, can be withstand higher temperatures while cooking and can even be used to replace oil in confit.

Monsieur Francois was one of the amazing experts who took us on this trip through Brittany and Paris. A passionate cheese monger and hunter, Francois taught us how to get the most out of French Butter: • Butter absorbs flavors, which is why it’s great for cooking or if you want to transfer one flavor to another ingredient. • Keep your butter tasting fresh! Cover it while in the fridge to maintain its flavor integrity. • Experiment with flavored butter, Middle Eastern tastes included. You can start with ground nuts and work your way up to herbs and other spices.

• Egyptians used butter as a treatment for eye infections. • Butter was first used as an ingredient in the 1950s. • There are different churners throughout the years, but in the end you can make your own butter at home by simply whisking fresh cream as fast as you can. Strain the liquid buttermilk and the yellow globs left is butter.
