As a supporter of local art talents in the Kingdom, Shock Saudi (Mahmoud Saleh Abbar Co.) launched Tag, its very first art session, with local graffiti group Ramz. PURSUING EXCELLENCE AT ROSEWOOD A conversation with Luke Noble, the new Food & Beverage Director Rosewood’s premium hospitality standards are soaring to new heights under the leadership of the new Food & Beverage Director. In his 22 years of service in the hospitality industry, Luke Noble has worked at a restaurant, cafe, lounge and events management company. He worked his way through the ranks and spent the better part of the previous decade in the five-star sector. A FASHION DESIGNER’S JOURNEY A career guide for designers aspiring to join the local fashion scene By Hina Zahir Imam

Study the Craft

Emphasizing on the importance of education, Dina Kattan says, “It equips students with problem solving skills and critical thinking, in addition to teaching them about the business of fashion.” Students can study fashion design formally in Jeddah at Dar Al Hekma – the first and most popular fashion school in the city, Jeddah International College, MITM University, or Future Institute. Nevertheless, there are many renowned designers who did not have the option of a formal fashion design education; their passion for the field led them to seek knowledge through other learning avenues such as internships or workshops and short courses.

Jeddah’s fashion scene is rapidly growing – this can both be an exciting and overwhelming time to be a fashion designer in Saudi Arabia. We spoke to Dina Kattan, Chairperson of the Fashion Design Program at Dar Al-Hekma University, about her insights on what it takes to become a fashion maestro. 22 DESTINATION JEDDAH SEPTEMBER 2017

As far as skills are concerned, a fashion designer must know how to execute their vision from concept to the final product. It is crucial to pay attention to details, possess knowledge of fabrics, colors and textures, and sewing, draping and pattern-making skills are also a must. “As much as fashion design looks like a glamorous career, it requires deep commitment and hard work,” explains Kattan.


Joining the Workforce

After graduation, the journey may seem uncertain as graduates struggle to find work in Saudi. “During their studies, students should seize opportunities, do internships, attend fashion events, network and get connected, and assist other designers. They must collect and prepare a portfolio, create a resume and send it to as many companies as they can,” advises Kattan. The road to success in the fashion business can be bumpy, and one of the biggest challenges for budding designers is finding a platform to showcase and market their work. “This is why they must identify their target market first, be creative in finding solutions, and use social media and magazines to market their products,” says Kattan. She adds that financial support and availability of some fabrics are also challenges that can be overcome by working on business skills and learning how to source fabrics, cost and a market to sustain their fashion brand. When asked what she would like to introduce to the local fashion industry, Kattan states, “We need more manufacturing and production facilities. Many designers source fabrics and produce garments abroad, so offering this service here will not only create employment opportunities, it will also help emerging designers find reliable local manufacturers.” DESTINATIONKSA.COM 23

Kholoud Ameen majored in sociology, but deep down knew she was born to be a designer. After becoming a wife and mother, she saw a part of herself in the fashion magazines scattered in her bedroom. Ameen then enrolled into a fashion design program and after graduation, she

launched her brand Meraki and her first collection Natura for Spring-Summer 2017, inspired by nature where each piece had a story of its own. Her second collection, Orphic SpringSummer 2017, was influenced by the elegance of a swan. Ameen is planning on releasing her third collection soon. meraki.ka

Manal Khaled started her journey by designing T-shirts and abayas, which lead to her first ready-to-wear collection in 2015. Her style is chic and casual couture which varies from jumpsuits and cocktail dresses to eveningwear. Khaled’s theme is oriental handmade pieces with

a modern twist. Her biggest challenge was proving herself among pioneers in the local fashion industry and finding the right people who could translate her vision. Her biggest inspiration is nature; she calls it man’s best teacher. manalkhaledofficial

MALIKAH AL IMAM

Malikah Al Imam, an architecture student at Dar Al Hekma, had an interest in collecting jewelry and redesigning them ever since childhood. Over the years, her passion grew as she started collecting unique material from countries she visited, and used them to create expressive art pieces. In 2016, she opened her online store Gypsy Accessories, an

extension of her personality as her style is bohemian and urban. Her goal is to give each piece its own adventurous spirit and unique design. Her biggest challenge is managing time between studying and boutique work, but with her supportive family, she is able to provide her customers with quality, handmade pieces. gypsy.hm

Bayan Bamehriz, narrating the birth of her brand Khurafa Studio, says, “One night, I grabbed my old denim jacket and painted it over with random colors.� An English literature major, her style, which portrays her

personality, is based on humor, bold colors and vibrant energy. Each jacket features a unique Arabic saying that reflects the Saudi youth culture. She launched her collection of 12 denim jackets in February 2017, featuring unique pieces that are either sprayed or hand-painted, and conveying the message that one must always dream big. khurafastudio

TREASURE HUNTING IN THE OLD CITY Souq Al Bado and Al Alawi, Balad's historical markets By Nessreen Tamano and Nadia Sakkal

Souq Al Bado and Souq Al Alawi are gems nestled within Balad, saturated with history vendors beckoning, “Ashra riyal, ashra riyal, ashra riyal!” Wade deep into Balad’s historical district and find the entrance to Souq Al Bado, a long path that splits into many smaller lanes lined with shops on each side. Souq Al Bado is situated near Bab Makkah and is the go-to market for residents of the neighborhood of Badia.

As we entered the souq, we were greeted by a common sight – robust men pushing loaded carts and trolleys to their respective shops or spots.

Old women in abayas set up their wares along the main lane of Al Bado. Colorful displays of thobes are laid out on their crates at regular intervals, and the women selling them were quick to pull out our favorite colors and flaunt the full length of the garment for our viewing. When you visit, go the extra step and speak to these women, who have been breathing the musty air of Balad for decades; you’ll discover that they can share the dear secrets and many wonders of Souq Al Bado. What many don’t know is the governor of Jeddah, Prince Mishaal bin Majid, has authorized these women of various nationalities to sell their goods, which has allowed them to support their families. Give these old women a chance and you’ll discover vibrant garments that will cost you next to nothing. We found them selling bags of henna powder – a better alternative to the chemical cones that are commonly found in shops.

The Jewelry Market

Old milk tins are filled to the brim with bakhoor balls and oud sticks. These can beautify a room with their spirited fragrance reminiscent of olden Arabian nights themes.

On the right side of the central lane is a curious little shop; every inch of the space is covered with laces of every kind imaginable. Strips of black, white, silver, gold and rainbow colored laces hang from the wall, adorning it with shocks of colors and endless options. A meter of this and a meter of that will be enough to turn any simple outfit into a statement piece. Many shops display scarves on their walls and have them hanging from the ceiling. Cotton, linen and silk; take your pick – brightly printed, decorated with silver sequins or soft ones fit for winter. They make an excellent add-on for any outfit that needs a pop or color.

As we exited Souq Al Bado, we walked into an intersection bustling with honking cars and pedestrians making their way around Balad. Leaving the fruit and vegetable market for another time, we turned right, heading towards Balad’s jewelry market. On the side of the road was a woman selling bright goldcolored bangles in every size. We found a shop nearby that sells faux silver and gold jewelry – delicate or gaudy, you’ll find just what you need. Their renditions of traditional jewelry crowned the shelves.

For the final stretch of our trip we explored Souq Al Alawi, closer to museums and the Shafi Mosque. We found a vibrant spice shop that sells kohl, a traditional eyeliner and eyeshadow that's freshly powdered by grinding a mineral stone. The shop displayed a pot filled with a heap of the little stones and a fresh batch of glittering powder ready to be bought. In a courtyard where children chased a ball, we found a corner store dedicated to subah (prayer beads) and rings for men and women. These statement rings featured heavy polished stones that were mostly gigantic in size. Towards the end of the lane we found a wondrous shop that sells handcrafted goods like straw baskets and hats and traditional dolls.

For many of us, a visit to Al Balad is literally a walk down history lane. It’s the oldest area of the city and it’s the center that sprawled into the Jeddah we know today. THE FUTA REIMAGINED The futa, primarily used for loungewear, is a piece of cloth that men wrap around their waists. Originating from Yemen, it is also traditionally worn by Saudis from all generations and social classes. Giving it a modern twist, we repurposed futas we bought from Balad for a price range of SR 10-75 apiece into fashionable items for both men and women.

Traditional clothing is an important aspect of Saudi Arabia’s cultural heritage. Yet, in a drive towards modernity, this facet of our heritage is not as celebrated as it should despite its unquestionable beauty. In this issue, we pay tribute to the “Original Threads” that have been worn by women of different regions, honor their eclectic fashion sense and celebrate the beautiful diversity of the Kingdom of Saudi Arabia.

EASTERN PROVINCE SHARQIYA The thobe nashal is a familiar piece of the Eastern Province and is made up of a semitransparent material that can be used through multiple colors of base-clothing fabrics with a differentiation in metal threads and silk embroideries. The translucent style itself is typical of the hot interiors of the Gulf lands and is said to be derived from Najdi origins due to the share of the basic pattern with the age-old cotton thobe. The festive finery of the traditional garment comprises a sheer overdress accompanied by lavish sleeve openings and a head cloak. Its sequined embroidery holds representational motifs of flowers and birds and includes accent-pattern segments like panels and gussets. DESTINATIONKSA.COM 37


SOUTHERN PROVINCE

JANOUB The Bayt al Fakih is a southern-Arabian cottondress piece originating from Northern Yemen. It holds a societal viewpoint as one of the earliest and most authentic of pieces in Arabia. The traditional garment is seemingly distinct in design due to the astounding elements used through the application of colored braids and silver metal threads that are set to warmly complement the indigo-based cloth. Additionally, the thread used on the nomadic apparel showcases the popular form of the decorative elements used in design within the southern region of Saudi Arabia. The Najdi Bedouin women’s traditional thobe is a unique black garment tailored through the use of fine linen, soft cotton or lightweight wool. The Central Arabian attire is derived from the kaftan, a loose clothing item which holds variance to the robe and tunic, and is worn as an over-garment to one’s clothes in respect to the ruling of the Kingdom upon modest dressing standards, though it was once worn to ease the endurance towards Saudi’s heat through its flair in cool wear. Moreover, this conventional piece expresses gracefulness and comfort through the looks of its loose-fitting features and is suited to make the perfect maternity dress. 40 DESTINATION JEDDAH SEPTEMBER 2017

NORTHERN PROVINCE

SHAMAAL The traditional thobe styles of the northern region differ from the mainstream portrayal of Bedouin dressing styles. It's fashioned by the use of hand-loomed wool needed to tailor the deep-red and, in rare occurrences, green materials. The tribal dress of the north holds the finest of subtleties in design with the use of geometrically botanical motifs and embroidery against the ruby-colored fabric. The thobe itself is beltless and holds grand proportions to ensure loose-fitting features when in wear, similar to an abaya. No waist belts are worn to unveil one’s figures as the conditions within the region are extremely hot and such fastenings wouldn’t ensure comfort when attached. Overall, the fabrication presents the primary influences of the temperature, terrain and topography of the respective region relative to design.

This particular ensemble reigns in the region of Ha’il. The farther one goes up north, the heavier the fabric. That is due to the harsh winters of the northern region; winters that don’t compare to other regions of the Kingdom. Even the color of fabric begins to differ the farther you travel, becoming darker and more somber. 42 DESTINATION JEDDAH SEPTEMBER 2017


WESTERN PROVINCE

HIJAZ

The Hijazi women’s traditional thobe is a semitransparent, capacious gown made up of cotton gauze and is used in the design of multicolored fabrics. Its unique and customary style holds layered clothing items and presents beautiful embroidery components from head to toe. Though the Hijazi thobe is designed using small-scale sizing proportions, it’s cut in a similar manner to the Najdi thobe. The thobe styles of the western region design their cultural attire in an ideal manner with the intent of initiating one’s attention to the custom-made blouse. A unique addition to this is the zabun and the mudawwarah. The zabun is a traditional, princess-styled frock that is fashioned in the manner of a collar and is mainly worn by the townswomen of Hijaz. Meanwhile, the mudawwarah is a complementary headgear to the outfit with elaborate edging and a diamond brooch. Both accentuate the grace and detail of the Hijazi thobe.

Dana Eshki is a young Saudi fine artist. She says: “I don’t want to be an artist; I want to do something that will change the way the country thinks. I would like to contribute in simple ways.”

You can’t imagine the feeling when someone appreciates your piece

Eshki began drawing and coloring as a teenager, when “it was only a way to release energy.” Depicting in her own way the things she wanted to see, she created a free world for herself. It soon became a tool where she brought out all the negativity inside and around her and, later on, positivity as well. Her mother played a core role. Eshki defines a mother as someone who “wants you to be you” and opens the possibility for that. It all started when her mom handed her the key to success a studio. And Eshki knew exactly what to do with it.

Why art? “Because I like colors,” she replied when asked why she chose the arts. Her first experience with colors was when she painted the walls of her room by herself, in a time when DIY’s didn’t exist. She reminisces “it just happened, it was a feeling.” She acknowledges the finishing was flawed; nonetheless, when she took a step back and looked at her work, she noticed how pretty the feeling of the colors was. Eshki relies a great deal on feelings in the production of her works. Her paintings were initially dark, just as

her emotions were. As she learned to accept herself and understand the society surrounding her, her paintings gained more color and brightness, Eshki reflects. At that point, the young artist didn’t want to grow a career out of this field. Eshki didn’t want to limit herself, under the supervision of someone else’s imagination. Also, there was something inherently wrong with gaining stipends from her artworks. For these reasons, she didn’t get involved in galleries and exhibitions. As days went by, however, she learned that people liked her paintings. Even better, she realized that, if she received criticism, she would learn from it and improve. So when the opportunity came to participate in an exhibition, Eshki gladly said yes.

Shortly thereafter, she realized there was unfulfilled satisfaction from her teaching job. Having a breakthrough, she thought about becoming a full time artist, later questioning herself “what will you do? Dana, you know how to sew and you like to color. Combine all these together and see what will happen.”

Then Came the Abaya The innovator painted on canvas; she cut the edges and sowed them onto the back of an abaya. People loved it. This was only the beginning of her entrepreneurial route – she is currently working on other projects including beginner art classes for children. Eshki has received both positive and negative comments for her work. DESTINATIONKSA.COM 49


Some people have asked her “why do you interfere in politics and why do you paint like this?” But it isn’t people that keep her going – it’s the realm of Art which makes her feel alive. She also foresees a brighter image of the art scene in Jeddah. Society at large is accepting it as something normal. Music is played in bazaars. It’s already noticeably better than last year, Eshki gladly explains.

Future Plans All this is working together for her benefit; she hopes to open an Arts institute with accredited certificates in Saudi Arabia soon. This will contribute in creating an art culture, and respect and appreciation for it as well. Her vision includes someone freely playing the saxophone in the streets, and someone else drawing on the city’s walls, without strict requirements from government officials. This will give back the country its esthetics, nature and fresh air. dana.eshki

The name Kaki is synonymous with food and beverage in the Kingdom. They’ve invested decades into providing Jeddawis with top food and service. And it's not just some calculated business venture. For the Kakis, food is not an industry; it’s a passion. Founded in 1998 by Sheikh Saud Kaki, the group took its first dip into the restaurant business with Il Gabbiano in Jeddah, an Italian cuisine restaurant that revived the love for pasta for many. At the time, Sheikh Saud Kaki’s idea was just to open a good restaurant, a place he and his family could visit. That dip turned into an almost 20-year long swim. Kaki Group has made its presence known over the past four years in Riyadh, as well. But what defines Kaki Group is the Kakis themselves. Dedication trickles down, and the Kakis are definitely dedicated. Their passion leads to creativity and innovation. Majed Kaki, son of the founder and current CEO of Kaki Group, recalls how both his parents would visit the family restaurants and eat there regularly. It is not impossible that at any given day you can pass by any of their restaurants and find him there, enjoying a meal or even cooking one.

Every pastry chef has a unique style of his or her own; ideas and techniques are as varied as they come. However, when it comes to using the ingredients, there is a consensus – culinary masters agree that the use of fresh, high-quality dairy products is essential to making the finest desserts. To help us understand the delicate beauty of European cream, Destination was whisked away to Singapore. There, renowned pastry chefs from different countries convened at the At-Sunrice GlobalChef Academy for the anticipated La Crème de la Crème pastry event.

The three-day gastronomic adventure successfully showcased the superiority of European cream. Ten international chefs, including Chef Mayada Badr from Saudi Arabia, were challenged to present their interpretation of this year’s theme: Blanc de Blanc (white on white). White offers its own culinary range and proposes new gastronomic sensations – an invitation to the chefs to use their pure imagination. The chefs were given complete free reign to create absolute masterpieces using a combination of new and classic recipes, and traditional and contemporary baking techniques. The cream, which is the hero ingredient, remains as the integral element in each cake – discreet, glossy, unctuous, and reassuring. We witnessed in awe as the pastry chefs defined, reimagined, and ultimately

created dreamy interpretations of the theme. They hustled and bustled in a kitchen that felt like an episode from Iron Chef. Another highlight of this edition was a special workshop with one of Paris’ top pastry chefs, Nicolas Bacheyre. We were able to see how European cream is able to elevate every creation. Our senses were titillated, surrounded by the scent of fresh vanilla and visually captivated as Chef Nicolas demonstrated to us how he has mastered the use of cream. DESTINATIONKSA.COM 73

European cream is instantly recognizable by its texture and highly developed aroma, characterized by its roundness, smoothness and a bright, fresh taste. Due to its high standards and authenticity, European cream carries strong values that reflect the professionalism of the top pastry chefs. During the workshop, we saw the difference the choice of ingredients can make especially in a delicate culinary art such as pastries.

After two days of preparations and for us, a journey of discovery, the international chefs presented their masterpieces at Forlino. Their final recipes will be published in an illustrated recipe book, which will be a training tool for students’ annual workshops. Needless to say, as much as we revelled in the stunning aesthetics, we looked forward to indulging our palettes. Indeed, they were delicious. The complex techniques achieved flavors that take you through a process; others were surprises folded under cream that rendered it simple yet elegant at the same time. The dessert of Chef Sarah Ni from China wowed us with the intricacy in her work. The five elements were aptly represented through varying layers and flavors, all coming together through the clever use of the cream. When it comes to gorgeous sweetness, Michelin-star chef Nicolas Lambert created a pavlova that was insta-ready. As always, we were left

with a better understanding of fine ingredients and what Europe has to offer. But equally important perhaps is the gastronomic diplomacy that takes place through these events. The way European cream was adapted and honed by our star chefs to complement and in ways, infuse with their respective countries’ culture and palette is quintessential. European cream and the use of quality ingredients is not a practice or preference limited by geography. Rather, it is a universally accepted fact – top pastry chefs only use the best products to create the most wonderful desserts.

We would have to say that in terms of flavor, taste, and clever use of cultural elements (a thumbs-up in our books), Chef Mayada’s Huda is unforgettable, with its ice cream infused with hints of rosewater, a gahwa and halawa core that, to this day, we’re still craving. It was a showstopper.

HADDAJ WELL One of the Largest Ancient Water Wells In The World It continues to pour forth water 2,500 years on. Sitting at the edge of the Nafud Desert, the city of Tayma benefits from an abundance of groundwater. Haddaj Well historically was the main source of water to this ancient city and is believed to be over 2500 years 78 DESTINATION JEDDAH SEPTEMBER 2017

old. With copious amounts of water, much prosperity came to the oasis as it found itself in the midst of trade and pilgrimage routes. Though the water well is found in an easily accessible

part of town, our navigation system took us through maze-like streets that passed through date farm after date farm. There are so many palm trees that are cultivated in the city of Tayma that we have only come across such

understand why this water well has become a tourist landmark.

large numbers of trees only in Madinah and Al Hasa before. The cool and shady pathways felt like a tranquil haven. The rustle of the palm fronds and birdsong had a soothing effect on our senses after an almost 3-hour journey from Madinah. “It’s only a water well� was a thought that kept coming to mind as we were driving around the city. But when we reached it, the thoughts faded away and we were beginning to

The well is pretty huge measuring over 18 meters in diameter, this makes it the largest well in peninsular Arabia. It is architecturally intriguing as well; the wooden structure on top has been restored giving it much of an authentic feel and the bricks that hold the well together without mortar are a marvel in themselves. The time-worn bricks have scars of water all over them, but they still appear so sturdy that they seem to be good to stand for decades to follow.

As we reached the rim of the well, we were surprised that there was water in the well. The water was of a bright green color. There were even a number of fishes and turtles thriving in it. We circumambulated the well, with each side of it presenting something new to us. Some portions of the well had wild plants protruding out from the brick walls, they somehow just added to the splendor. The water seemed pretty deep as no matter how hard we tried we could not see the surface. It had a good amount of water in it even during the DESTINATIONKSA.COM 79


hot summer when many wells dry up. But the Haddaj Well hasn’t always been in use, in around the 5th century BCE, Tayma was abandoned, so the well fell into disuse for many centuries until Suleiman Al Gonaim restored it. The water well originally worked on a pulley system. Bucket loads of water would be pulled from the well by means of camels or oxen, which would at times even number close to a hundred. This water would then be put into channels and through these channels, the water would reach nearby farmlands. One can see these pulleys and channels to this day. Desert Kites The Ancient Arabian Hunting Technique By Mohammed Mirza

Desert kites were generally constructed on flat land between narrow deeply-incised valleys, where the surroundings would play a big role. In Saudi Arabia, the majority of desert kites are found in the Harrat Khaybar area which is close to Madinah. While archaeologists debate when this technique was created, desert kites are believed to have been built between 4000 BC and 2000 BC. The ancient hunting technique of using desert kites remained long forgotten till airplane pilots spotted them in the 1920s. Named “desert kites” because of their triangular shape, they were primarily used to capture gazelles and other wild animals. They are generally made of two low dry-stone walls arranged in a V-shape, but the enclosure could be in other shapes too. Called “Works of the Old Men” by Bedouins, the idea behind desert kites was to trap a large number of animals.

The game plan

A group of hunters would chase a herd of animals into the opening of the kite-like structure and capture them towards the narrow V-shaped end.
