The origins and uses of oudh, the famous perfume of Arabia, is an in-depth look at one of the most distinctive aromatic aspects of life in Jeddah, especially during the Eid al-Adha season when everyone celebrates this important holiday with traditional customs. I was planning to perform Hajj, but on the way out the door, I stopped near my kitchen and I accidentally closed the door on my foot! While I was performing Hajj, many pilgrims stepped on my injured foot…but I still completed my Hajj. Alhamdullah, it was successful. Mohanned Dawood

I was performing Hajj with my best friend and my sister 5 years ago. It was the year it rained alot. We did the jamarat while it was raining, and went running back home, afraid one of the moving cars would hit us. We were excited, scared, and also crying in the rain, because we got so much emotional that we were safe and still together and we finally did it! Danah Dhabban

Growing up, you hear different versions of people’s experiences when it comes to performing Hajj – it sounded like a difficult and exhausting ordeal. When my time finally came about four years ago, I was really worried about what I was about to encounter. But once I arrived, I can honestly say, it was the absolute best experience of my life. So, to all of those who have yet to perform this beautiful journey…don’t believe all those stories you hear, it is without a doubt the ultimate experience! Destination Jeddah’s RTM: (Recommendation of The Month)

This month’s selection is rather unusual since we’re recommending a day…the Day of Arafat. This day commemorates the Prophet Muhammad’s (PBUH) Last Sermon which took place on Mount Arafat. Most Muslims believe that this sermon ‘completed’ the religion of Islam and choose to fast on this day because it is a special time for forgiveness of sins, both for the past year and the following year. The people performing Hajj do not fast - they spend the day on Mount Arafat ‘standing’ in prayer. Many Jeddahwis like to visit Makkah on the Day of Arafat; it will be unusually empty (the pilgrims

will be on Mount Arafat.) For non-Muslims, Jeddah will seem quiet and free of traffic, so this time is a good opportunity to do some last minute shopping or go to the beach prior to the Eid holiday, which will begin the following day!

Thumbs up to... The Al Mashaar Makkah Metro Project

The Al Mashaar Makkah Metro Project is a metro line connecting the key Hajj locations of Mina, Arafat, and Muzdalifah with Makkah. The Metro will be able to accommodate up to 72,000 pilgrims per hour in each direction when running at full capacity for the 2012 Hajj season, however it has already opened at limited capacity for this Hajj. It will have an elevation of 8-10 meters and will provide transportation for Umrah & Hajj pilgrims along 18.1 kilometers between holy sites in Makkah. The Saudi-based Bahra Cable Company is integrally involved with this exciting project. They sell their products throughout the Middle East, Asia, Far East and North Africa, with many of their cables used in landmark projects throughout the GCC. The Makkah Metro is only the 2nd metro system in the GCC, but Muslims from around the world will use it.

Thumbs down to... Supermarkets That Keep Your Change

Ok, halalas don’t buy you very much these days, but money is still money. Saving your halalas in a change purse can quickly add up to the cost of a cup of coffee or a shawarma. Supermarkets that simply ignore the change you’re due or throw a pack of gum at you should wake up to the many charitable organizations would which love to receive donations of unwanted halalas. Kudos to Panda for taking the lead in donating to charity – now who’s going to follow in their footsteps?

Hajj Season in Jeddah

If this is your first Hajj season in Jeddah, welcome to a unique period. Here are some pointers on what to expect during this intensely Islamic time of the year…even if you’re not performing the pilgrimage, the spiritually festive atmosphere is infectious! Hajj affects daily life in Jeddah in several ways. As the fifth pillar of Islam, it consists of an annual pilgrimage to Makkah, the spiritual center of Islam. Pilgrims arriving by air first gather at the specially constructed Hajj Terminal in Jeddah in order to begin their journey by road to Makkah. It is the world’s largest annual pilgrimage; Hajj in 2009 saw an estimated 2.5 million pilgrims visit Makkah. Hajj is compulsory for all physically and financially able Muslims at least once in their lifetime - it is an impressive gathering of solidarity and submission by Muslims from all over the world. Considerable logistical and volunteer support is provided behind the scenes in order to ensure that this massive annual gathering proceeds smoothly and comfortably for the pilgrims. 10 DESTINATION JEDDAH

Hajj is a series of rituals performed both in and around Makkah in commemoration of important events in the life of Prophet Abraham (PBUH) and his family dating back to 2000BC. Prophet Muhammad (PBUH) performed Hajj in 631CE, at which time the pilgrimage became one of the pillars of Islam. The Hajj is followed by the three-day Eid AlAdha (Festival of Sacrifice). Jeddah During Hajj Amongst all the cities of Saudi Arabia, Jeddah is the most affected by Hajj. It is the entering point for the millions of international pilgrims, and the city’s atmosphere changes as it stretches to accommodate its newest visitors.


The most visible sign of the approaching Hajj will be the influx of pilgrims. Traffic will increase exponentially as tourists arrive a few days early to spend some time in Jeddah prior to the Hajj, as well as those who linger on in Jeddah after their Hajj is complete in order to shop, visit family & friends, and sightsee. Day of Arafat The general atmosphere in Jeddah resembles the height of the Ramadan excitement, especially on the Day of Arafat. On that day, many Muslims around the world fast in remembrance and solidarity with the Hajj pilgrims who are praying at Arafat. Their heart-felt supplications strike a chord with all those who have already performed Hajj as well as with those who dream of one day embarking on Hajj. A Discussion About Dining... Hajj/Eid al-Adha cannot be discussed without including a mention of food. Muslims are universally meat-lovers…and never more so than during this holiday period! Meat, meat, and more meat is consumed in most Jeddah households on a daily basis, be it delicious liver for breakfast, kabsa for lunch, or lamb for dinner – it will all grace the tables of Jeddah’s residents. Forget about your cholesterol count for a few days – indulge in the variety of food on offer. And don’t be surprised if you get a knock on the door on Eid morning…it just may be a thoughtful neighbor sharing some of the sacrificial Eid meat with you!

Jeddah’s Eid! The Eid al-Adha holiday is traditionally spent celebrating with family, enjoying the beautiful beaches of Jeddah, and generally relaxing after the spiritually-charged Hajj experience. Many Muslims consider Hajj a life-transforming experience – residents of Jeddah cannot help but be touched by these pilgrims even if they themselves are not performing the Hajj this year. Happenings BREAST CANCER BOOK LAUNCH: Under the patronage of HRH Princes Sita Abdullah Al-Saud, Sheikh Mohammed Hussein Al-Amoudi’s Center of Excellence in Breast Cancer celebrated the publication of Dr. Samia Al-Amoudi’s new book on breast cancer, written in both Arabic and sign language. Her book aims to raise awareness about the importance of early detection breast cancer is more curable if caught at an early stage. The book is one of the projects launched by the Center of Excellence in Breast Cancer to spread medical knowledge, especially amongst the hearing-impaired and deaf community, as there is very little existing literature aimed specifically at this demographic segment of society. CREATIVE ‘FAIRY’ DISHWASHING EVENT: P&G’s Fairy brand released ‘The New Fairy’ dishwashing liquid with an innovative dishwashing challenge combined with a donation to The Youth Marriage Fund. Every dish washed resulted in a donation to this fund – 30,000 dishes were washed from one bottle! The amount raised was enough to purchase 54 ovens to help new couples equip their kitchens. The event took place at Danube, Red Sea Mall. The famous Saudi Arabian actor, Yousef Al Jarrah, Ammar Nagadi, Fairy Brand Manager, Khalid Al Darwish, Danube GM, and Hussain Baharth, Public Relations Manager from The Youth Marriage Fund also took part. CENTIMETER2 EXHIBIT: Architect Mohammed Jamjoom opened the ‘Centimeter2 Exhibit’ by the talented artist Fatimah Ba’atheem at the Red Sea Mall. The exhibit held more than 200 paintings and carvings as well as a tape measure in centimeters. According to the artist, the smallest details govern our everyday lives, and she named the exhibit ‘Centimeter2’ to remind her of that.

EXCS INTERNATIONAL EXHIBITION FOR LUXURY CARS: The Fourth Annual XS Luxury Car Exhibit at the Hilton was the place to be for car fanatics. The exhibit featured the celebrities of the automotive world as well as 70 of the world’s fastest and most expensive cars worth over SR80 million. The latest models on display included the new Mercedes-Benz CL, Aston Martin, Lexus, BMW, Cadillac, Audi, Porsche, and many more brands familiar to luxury car buyers. The Zonda Tricolori, a new offering by Pagani Automobili, was also on show. SAYEDATY MAGAZINE HOSTS DISCUSSION ON FASHION COPYRIGHT: Sayedaty Magazine had the initiative to host a small and friendly gathering with more than ten Saudi female designers that struggled from designer copycats and looking for a plan to avoid the damage they are causing them by copying their designs and putting their names on it. Designers like Eman Jowharji, Hanaa Samman, Mona Abulfaraj, Rotana Al-Hashimi, Salma Radwan, Fatma Abed and others shared their opinions and concerns, declaring that they are willing to give free internships to fashion design undergraduates to help them establish professionalism.

NEW LOMAR THOBE FACTORY: CEO & designer Loai Naseem opened the new Lomar thobe factory in Jeddah. It employs 140 people and produces 250260 thobes per day. This new factory will continue to produce the elegant thobes in both traditional and modern styles which customers have come to associate with the famous Lomar brand.

WORLDRIDERZ: Intrepid bikers Stephane Etienne and Paul Torriero passed through Jeddah on their journey from Sydney, Australia to Paris, France to raise money for WorldRiderZ - a foundation that funds research & treatment of Chronic Kidney Disease. Their journey of over 30,000 kilometres is being filmed for an HDTV documentary. DESTINATION JEDDAH 13

SWPF 2010: The Saudi Water & Power Forum’s 2010 theme “Sustainable Prosperity through Knowledge, Innovation and Cooperation” was about plans to transform KSA into a world leader in power, water and energy sustainability. Experts warned that rising demand and deep subsidies on fuel, electricity and water are draining the Saudi budget and reducing the country’s capacity to export oil, but Saudi authorities unveiled an agenda to tackle these issues.

ALDAR ALKHASA: Aldar Alkhasa Urban Development Company has completed the 2nd phase of The Headquarters Business Park, redefining the concept of luxurious business buildings on the Corniche. The Central Podium is an 11-story structure with a total area of 60,000 sq. mtrs. The Headquarters Business Park will include 250 villas as well as superior conference/event halls, restaurants/cafes, and a state-of-the-art health club. INJAZ-SAUDI ARABIA: The ‘2010 Student Company Competition’ award ceremony was the culminating event of a 12-week leadership & entrepreneurship program held by INJAZ Saudi Arabia. The Ministry of Education sponsored the event at which five winning companies; The Ideal Solution, Noor Design, IBS, Injaz Al Thagher, & Al Enfwan, an all female team, were selected for their comprehensive business models. The winners proceeded to the Annual MENA Regional Company Competition in Marrakesh, Morocco October 23-25, 2010.

RUBAIYAT INTRODUCES BRIONI TO KSA: Rubaiyat adds Brioni to its impressive range of leading luxury designer brands. Sheikh Abdalla Bin Zager, CEO of Rubaiyat, said, ” Rubaiyat’s ownership of the Brioni Franchise comes as part of our expansion plan in the

GOLD’S GYM 4TH IRON MAN COMPETITION: October 20th saw Jeddah’s Gold’s Gym hold their 4th annual Open Iron Man Competition. Sponsored by Gatorade (PepsiCo.), C.I.T Travel Experts, La Fontaine Resorts & Kaya Skin Clinic, the event included a live performance by DJ Akram and Jeddah’s Energy Freestyle Dance Crew. VIP guest Prince Turki Bin Thamer joined attendees for a variety of events developed by Gold’s Gym Fitness Department to determine who the Iron Man of 2010 was. The lucky winner enjoyed a trip to Dubai and a one day stay at La Fontaine Resort.

DAWN FOODS COMES TO KSA: Ahmed Abdul-Wahab Corporation has signed an exclusive contract with Dawn Foods, a food company specialized in producing confectionary ingredients, to distribute the international product in the Kingdom of Saudi Arabia. Founded in 1920, Dawn Foods is considered one of the largest companies worldwide regarding confectionary ingredients. This month’s adventure is to a beautiful site called Wadi Al-Shagga (also known as Al-Shagga Valley). Although it is incredibly gorgeous, it’s a well-kept secret that not a lot of people know about...until now, of course! It’s only 280 km south of Jeddah, with easy access on the coastal highway, but it is always better to have a 4X4 SUV along for that ‘just-in-case’ emergency. The last time the Three Travelling Amigos hit the road toward Al-Shagga Valley, we encountered a sand storm along the way, so we had to drive much slower than usual. Although we initially thought it would be a big mistake to continue on our journey, once we arrived there and entered the shelter of the valley, the wind died down and the air became still and clear.

Take the Adham village exit. The valley is almost 100 km before Al-Qunfudah City, and only 10 km from the Red Sea Coast. As you enter down into the valley, you will see a huge sand dune on one side. Along the valley bed are lush, green trees, while moving to the other side of the valley you will face a rocky wall and then a high sandstone wall. Since there are so many different areas of the valley to explore, a full day trip is possible, but ideally you should spend the night, which is what we did. We gathered fire wood in order to build a fire to cook our dinner, (don’t forget to pack matches or a lighter!) We set up camp with a number of small tents, (don’t forget to invest in good tents which completely seal out the mosquitoes!) Spending the evening chatting and telling stories under the starry night sky...another once-in-a-lifetime experience. When we woke up, we could hear all kinds of birds singing. The variety of wildlife was astounding, but not surprising considering the presence of fresh water, proximity to the seaside, and the shelter of the valley with its many nesting spots. We identified several kinds of ducks, pigeons, vultures and many others which were not familiar to us. Some of the birds were sea birds like sea gulls and clam eaters and other types of big birds (one had a spoon-like beak.) It’s really a bird-lover’s paradise. There are also

numerous ponds and small waterfalls (yes, waterfalls in Saudi Arabia!). The valley is almost 10KM long and you can almost drive through all of it, although at some dead ends you have to exit the valley, drive alongside it, and then re-enter again. This valley is a pleasant surprise in the arid desert since you can see grass, many types of trees and most importantly, precious water. There are several types of small fish in the ponds, up to 25 cm long, in some cases. I think it’s a great place for people who enjoy fishing because of the peaceful atmosphere...but I’m not sure that I’d eat them...I’m more of a ‘catch & release’ type of guy. I really recommend Al-Shagga for a family 1 or 2-day trip, especially in the winter when the weather is cool and the water level is higher than usual due to rainfall. But since water exists all year long in this valley, you can visit at anytime of the year. We had a great time exploring Al-Shagga and discovering almost virgin spots in the valley - every time we revisit the valley, it changes due to the rainfall and looks different each time. A King’s Legacy: Celebrating the Life and Reign of

King Khalid Exhibition Open from 10/7-11/10

King Khalid bin Abdulaziz (1912–1982) was the venerated fourth monarch of Saudi Arabia. Hailed for the economic prosperity and stability he brought to the Kingdom, the life and reign of King Khalid is currently being celebrated at an exhibition organized by the King Khalid Charity Organization. The traveling exhibition, which is being staged in cities throughout the Kingdom, was inaugurated in Riyadh in June and since then has shown in Abha before arriving in Jeddah in October, where HRH Prince Khaled Al-Faisal, Governor of the Makkah Province, was the inaugural speaker. The exhibition, which will be showing until the November 10, 2010, is taking place in 26 DESTINATION JEDDAH

a specially constructed tent located on the Corniche, Al-Hamra Dist., south of the AlFurusuya Marine & Yacht Club. Documenting both the personal and political life of King Khalid, the exhibition focuses on seven themes within the life of the monarch. Each of the seven halls represents a theme; the decisions he made as a king,


travels and foreign relations, memories of the monarch, hobbies, personal and family life, religious life, and achievements. King Khalid was renowned for his modernization and his establishment of the second “Five Year Plan� which developed infrastructure and health care in the Kingdom and his inauguration of the Gulf Cooperative Council in 1981. He is also remembered for his quick reaction to the 1979 insurgent seizure of the Grand Mosque. The exhibition will continue on to the AlJanadriyah Culture and Heritage Festival in Riyadh before completing its tour through Khobar, Tabuk, Qassim, and Najran. Souk Okaz

A Celebration of Saudi Arabia’s Cultural History

Sociologists and cultural anthropologists marvel at the enduring ability of oral history to reveal characteristics of civilizations thought to have been lost in the sands of time. Arabic poetry and the art of story telling are examples of this tradition that endure till today. Souk Okaz is an annual event outside Taif which celebrates the pre-Islamic custom of poetry competitions

and recitations. The best poems were hung on the walls of the Kaaba; seven famous ones known as the ‘Saba’a Muallaqat’ are still studied by students of Arabic literature. Traders and artists would also gather at the souk to sell their handicrafts, spices, and perfumes; but the social and cultural exchanges which took place at this venue were of equal importance. After a long


dormancy after the Ummayad Dynasty when the souk was discontinued, it is exciting to see the resurgence of cultural history events such as this. Makkah Governor HRH Prince Khaled AlFaisal opened Souk Okaz on behalf of the Custodian of the Two Holy Mosques, King Abdullah, and expressed the sentiment that it will become one of the most significant cultural demonstrations in the world. He said, “Poetry is the history of the Arab. Arabs in the past were depending on poetry, more than any other literary form, to express

their emotions.” The Fourth Annual Souk Okaz Fair was held from Sept. 28 – Oct. 7, 2010. An event which is growing in size and popularity, this year’s souk included stalls of handmade Bedouin products, traditional foods, an antiques exhibition, folk dances, plays and live theater productions, and of course, poetry recitations. Judging by the enthusiastic participants and audience members, this souk is not be missed next year as it continues to attract growing numbers of tourists who are eager to witness this cultural treasure. Perfume of Arabia... Mmm…the scent of oud. Conjuring up images of paradise on Earth, one sniff of oud (agarwood) can transport you to a mystical, magical realm. It’s been compared to a blend of sandalwood, patchouli, and clove, but this complex scent is honestly indescribable. Traditionally used by men prior to Eid prayers and Friday prayers, it’s now popular amongst both men and women for various special occasions. Applied sparingly in pure oil form due to its scarcity and exorbitant price (SR7,500-SR15,000/ oz!), oud is predominant in the Middle East, hence the name ‘Perfume of Arabia’. However, designer Yves Saint Laurent and others have included oud essential oil in their new perfumes as an innovative way to introduce this unique scent to the West. Oud oil has a fascinating origin. Produced by only 8 varieties of the Aquilaria tree (an evergreen tree native to Southeast Asia), oud is the resin found in the heartwood of the tree as a response to an attack by a parasitical mold fungus. High quality resin comes from the tree’s natural immune response to this fungal infection. Agarwood is the name of the resin-soaked wood, but the fungus and decomposition process continues to generate a very rich and dark resin forming within the heartwood. This rare Aloeswood develops slowly over time, it can take as long as one hundred years or more in some cases. An inferior resin is created using forced methods where Aquilaria trees are deliberately wounded, leaving them more susceptible to a fungal attack.

Since only 7% of the Aquilaria trees found in nature are infected, enterprising businessmen from India to Indonesia try to cultivate the Aquilaria tree on plantations to mimic conditions of fungal infestation. Oud oil is used as a liquid, while the associated scent of bukhoor is actually the smoke of woodchips soaked in fragrant oils. These scented woodchips can be formed into small brick shapes for ease of use. Bukhoor is usually burned in a traditional incense burner called a ‘mabkhara’ which is passed amongst guests as a gesture of hospitality or simply to scent one’s home, clothing, or hair.

Spending all your time underwater zooming around like an eager tourist on a tight schedule? You might be missing out. Many of the really great reef fish are so interesting because of their diminutive size, amazing camouflage and bizarre appearance. Try slowing things down, working on your buoyancy, and drop your preconceived notions about what a fish “should” look like. Change your attitude, latitude, and trim, and a completely new diving experience will be revealed to you.

Soon enough you will be gawking and guffawing at some of Mother Nature’s neatest little critters that call the reef home.

Robust Ghost Pipefish (Solenostomus cyanopterus) Who ever heard of sea grass that swims? I was floating underwater at a leisurely pace one dive inspecting some sea grass when all of a sudden a handful of Robust Ghost Pipefish brushed past me and swam off. 46 DESTINATION JEDDAH

They looked so similar to the blades of sea grass that I had trouble telling them apart. This cryptic species is found in protected coastal waters, especially on coral and rocky drop offs 0.2-20 meters deep. swim inverted with their mouths pointing downwards and feed on tiny crustaceans that they suck in through their long snouts. They also seek backgrounds like sea grass and rocky bottoms where they can best blend in, which makes them especially difficult to spot.

Harlequin Filefish (Oxymonacanthus halli) Spotting the Harlequin Filefish is high on many divers’ wish lists. They inhabit coral rich areas of lagoons at depths of 0.5 to 30

meters and can be seen bouncing up and down in an inverted position amidst their habitat of Acropora coral. The Harlequin Filefish feeds exclusively on Acropora polyps, so slow things down the next time you pass by one of these delicate coral heads and you might be lucky enough to identify these elusive creatures. Harlequin Filefish are endemic to the Red Sea. They can usually be seen in pairs and occasionally even found in larger groups.

Spotted Shrimpfish (Aeoliscus punctulatus) Now you see them…and now you don’t. Photographing these flat and razor thin critters can be challenging, as they tend to hide behind corals and only show their laterally compressed bodies. These tiny, rigid-bodied, and spotted creatures glide at an amazingly great speed by fanning their delicate fins faster than the eye can see. They swim surprisingly fast and will require a couple of extra swim kicks if you plan to keep up with them. Shrimpfish are also known as Razor Fish because of their general shape and characteristically sharp-edged underside. They may be found solitary or swimming

in synchronized groups of up to 100, with each fish in a vertical position with his snout pointing down. Adult Striped Shrimpfish are approximately 15 centimeters long; they inhabit protected lagoons at a depth of 1-17M. Unlike most fish, Shrimpfish and their seahorse relatives don’t have scales. They have bony plates under their skin like a suit of armor. The plates provide protection from predators, but also make their body semi-rigid. Because of this, seahorses and their relatives don’t move their bodies in a wavelike fashion. Instead, they glide gracefully by fanning their delicate fins faster than the eye can see.

appetizer Kashk Bademjan - it’s roasted to smoky perfection, then mashed and served with fried onions and dried yogurt. The Esfenaj Sorkh Kardeh is a novel way of enjoying spinach served with similar accompaniments - it’s tangy and tasty and perfect to scoop up with the freshly baked Iranian flatbread. The signature main entree is the Kebab AlKhayam for two. A mixed BBQ plate of four different styles of kebabs offers a panoply of harmonious flavors. The chicken is served in two ways - either moist chunks marinated in yogurt and spices or minced into a kubidehstyle, while the meat is filet steak barg or a mixture of lamb/beef kubideh. All the meats were cooked to perfection, neither dry nor underdone. The Dandeh Kebab is also worth contemplating - the marinated lamb chops fell off the bone and quickly disappeared. But the dish not to miss is surely the Meggo Kebab. Giant prawns grilled in spices were executed with a skillful hand and attentive eye. They were simply stunning and may even introduce the only note of discord into your evening as you may be tempted to whisk the last prawn off the plate for yourself instead of graciously offering it to your dinner partner! Fish lovers will not be disappointed with the Mahi Kebab, generous chunks of marinated and grilled fillet of Najil that is worth ordering even if you’re a dedicated carnivore. Khushu Almatbakh is an online cooking show with simple and appetizing recipes. The program is hosted by Abdallah Shaheen who wanted to share his cooking experience with all Saudis to prove that cooking is easy and fun.

I see cooking as a fun process that leads to a great ending, especially when it is used to express care, love, and appreciation.” Shaheen doesn’t only cook inside his kitchen, one of the episodes was filmed on a boat where he went on a fishing trip and cooked the fish he caught. “I made fish seviche because I felt it was necessary to experience the freshness of a fish straight out of the water! I just marinated the fish in vinegar, lemon, finely sliced garlic with a pinch of salt, which infuses with the fish and cooks it due to the high acidity in the vinegar and lemon - we had a lovely, quick meal without even having a stove,” he said. “My program targets young Saudis and encourages them to enter the kitchen and learn how to cook their own meals in a fun, funky and easy going manner. I especially target students who study abroad because they don’t have anyone to serve them food and they are forced to eat out a lot. I want them to learn to eat well on a low budget, that’s what Khushu Almatbakh is all about.” Constant fast food consumption can harm the human body in the long run; it makes you unhealthy and drains you of energy. “Having lived abroad and experienced horrifying food poisoning I was inspired to start cooking my own dishes and once I did, I noticed how healthy I felt and how different I looked,” said Shaheen.

Conveying his outgoing, flexible cooking concept, Shaheen hosted a live cooking show in Red Sea Mall where he interacted with shoppers as they stopped for a taste of his appetizing dishes which were prepared in front of a live audience. Khushu Almatbakh is being broadcasted on plasma screens in Danube and many other supermarkets where shoppers also can stop and watch him cook on TV. Shaheen is now in the process of writing his first cook book where he will share his modern recipes with a twist. In the program, Abdallah Shaheen has a relaxed style of cooking and is sometimes messy. He throws together a mixture of ingredients to make simple yet tantalizing meals. “I’m trying to show young men and women how cooking can be fun and how it’s easy to learn because anyone can cook if they have the will to learn, especially with millions of recipes available on the Internet,” he said. “I also think that you can almost never make your cooking perfect the first time, but with time and practice you’ll be just fine. Al-Basali The oldest fish restaurant in Jeddah will cook in your house!

Located next to Al-Falah School in AlBalad District, Al-Basali proudly states that they are the oldest fish restaurant in Saudi. With over 50 years of experience, they’ve still maintained their traditional setting and old blue tiles, from washing your hands with Ariel detergent to the plates that look like they haven’t been changed since WWII. Best of all, they’ve maintained their delicious fish and seafood dishes served in huge portions. The service is friendly and homey, but if you’re a big crowd, it’s better to call in advance to reserve seating and even request special (and more expensive) dishes. They usually offer the catch of the day and an assortment of appetizers; ‘bakhamry’ comes highly recommended. It’s made of small pieces of fried bread, a bit like local donuts, but not as sweet - they’re supposed to be “outta this world”. Sadly, this venue is for men only… BUT despair not, ladies, Al-Basali is not completely resistant to change, they are opening a new catering department. Traditionally enjoyed during Eid al-Adha after the Hajj sacrifice, fresh lamb is available throughout the year, so you don’t have to postpone trying this tasty recipe. Although it seems basic, the combination and cooking method results in a delicious dish which the whole family will enjoy, especially if you ensure that the meat is cooked till melt-in-your mouth tenderness.

Ingredients ½ kg boneless lamb, cut into small chunks 1 tsp cumin 1 Maggi cube 1 tbsp minced garlic 1 green chili, chopped 2 fresh tomatoes, diced Ground black pepper, to taste

Preparation Method: Heat oil and sauté lamb till color begins to change. Add cumin, Maggi cube, garlic, chili, & tomatoes. Cook for 10 minutes on high till lamb browns. Then add some hot water, lower heat, and simmer another 10 minutes till meat is tender and a little thick gravy remains. Serve with rice or bread, accompanied by a fresh green salad.


Mystery Diner Steak House We were in the mood for steak, so we decided to try Steak House next to Stars Avenue. We had heard good things about their lunch special and their burgers, but we wanted to give their steaks a try. The interior décor, although a bit generic, is trying to recreate a ‘Cowboy/Wild West’ atmosphere with the wagon wheels, dark wood furniture, and generally American Western theme. 15 eggs 1250g sugar 875g flour 850g dark chocolate (melted) 850g butter (softened slightly & in small cubes) 400g chopped walnuts, if desired

Preparation Method: Mix together the eggs and sugar till well blended, but be careful to not over-mix. Gradually add in the flour, then the melted chocolate. Fold in the butter cubes, but be careful that the butter is not melted or too soft. Add nuts if desired. Bake at 180C for 30 minutes. Yield: 1 large 40x60 pan. Brownie batter could also be poured into individual, greased ramekins/serving cups for single servings, as pictured above.

We both ordered the Rib-Eye Steak with the Pepper Sauce, with the accompanying vegetables of the day. I lucked out with the baked potato with the works – it was much more interesting than the Cowboy Chips on my husband’s plate. The steaks were decent cuts of meat, although more attention should have been placed in the trimming stage – both steaks had tough, stringy tendons/connective tissue which we had to navigate around. But the complimentary sauces were tasty accents, plus the waiters bring a variety of steak sauces to the table without being asked – overall, the service was attentive without being fawning. For a casual family dining spot – it’s kid friendly & reasonably priced. I think it would be fun to go with a large group. It was a ‘good value for money’ meal, with the added advantage of being next to a nice mall where you can enjoy a postdinner stroll while doing some windowshopping. Hajj My Spiritual Journey

There are experiences that change us forever. For a Muslim, Hajj is definitely one of them. When talking about Hajj, people usually talk about its rituals and rites… but we’re already familiar with them. That’s why I choose to talk about my Hajj experience as my spiritual journey, because whether we realize it or not, each one of us takes a ‘Soul Journey’. Reaching Arafat, walking around Muzdalifah and getting to Mina, I could feel the presence and aura of all that was holy of people of the past, the imprints of their souls’ footprints still lingering, calling to me, and beckoning me to listen to their wisdom. There, I took a deep breath and filled myself with that scent that only Makah has…the scent of love, forgiveness, unity and equality. With my subha in hand, I headed back to my tent to read through my books of prayers and the Holy Qu’ran. On my walk, I came across all types of people of different nationalities, from Asia, Africa, Europe and different parts of the Middle East. Some were going to their tents and others peacefully sleeping outside on the ground. Different faces from all over the world, all luminous with faith, all sharing one feature - the feature of total submission to 74 DESTINATION JEDDAH

Allah’s greatness. No matter what nationality you carry, no matter how rich or poor you are, once the pilgrimage rites start, everybody is in white, walking the same path, shoulder to shoulder, performing the same sacraments and all surrendering to the same intense holy situation. In my own humble opinion, Hajj is a call to action for every man and woman on this earth…to embrace love, kindness, decency, the goodness in each and every one of us, to help and to give guidance to each other on how to get past our specific temptations, to be lovingly and truthfully honest with each other, to maintain boundaries with high standards of integrity, and to see that none of this journey involves violence, hatred or deceit. It is a call to be whom God has made us to be…equals.


Steps of Hajj 1. At designated areas, pilgrims shower and wear ihram (two pieces of unstitched cloth for men, or a modest dress that completely covers the head and body for women.) Wearing simple clothing emphasizes the spiritual equality of everyone. 2. On the first official day of the pilgrimage, the pilgrims depart from Makkah to Mina. 3. The pilgrims gather at Mina, where they spend the day and night in enormous tent cities, praying & reading Qu’ran. 4. On the second day, known as the ‘Day of Arafat’ the pilgrims leave Mina just after dawn to go to the Plain of Arafat. Pilgrims spend the entire day on/near the Mount of Mercy, asking Allah for forgiveness and making supplications. Muslims around the world who aren’t at the pilgrimage join them in spirit by fasting for the day.

5. After sunset on the Day of Arafat, the pilgrims leave to a nearby open plain called Muzdalifah, where they spend the night praying and collecting small stone pebbles for use the next day. 6. On the third day, the pilgrims travel back to Mina before sunrise. They throw the pebbles at three stone pillars that represent the temptation of Satan. 7. After the stoning, the pilgrims pay for the slaughter of an animal, usually a sheep or a goat, and donate the meat to the poor. This marks the beginning of Eid Al-Adha, the Festival of the Sacrifice, the second of the two major holidays in Islam. 8. The pilgrims then perform seven tawaf, or turns around the Ka’abah in Makkah. They also walk seven times between the two small hills of Al-Safa and Al-Marwa.

Welcome to Zaytuna College Although the religion of Islam is not new to America, the fledgling Zaytuna College in Berkeley, California hopes to educate a new generation of American Muslims as bridgebuilders. An offshoot of the famed Zaytuna Institute begun by Sheikh Hamzah Yusuf in 1996, this new college pledges to foster scholarship in Islamic theology and Arabic language, as well as firmly establish an American Islamic perspective that emphasizes that there is no contradiction between being a proud American and a proud Muslim. The Zaytuna College welcomed its inaugural class this past August. The name ‘Zaytuna’ means ‘olive tree’ in Arabic – and the founders’ dream is that this institute will indeed serve as the proverbial olive branch of peace between the Muslim community in America and the American society at large, especially in the post-9/11 climate of hostility and suspicion. The three co-founders Shaikh Hamza Yusuf, Imam Zaid Shakir, and Professor Hatem Bazian, are among the most well respected Muslim scholars in America. They all realize the importance of interfaith dialogue and social activism since they have been active in these fields for years. It is their intention to train future imams, leaders, and role models in order to demonstrate the compatibility of religion and culture within a purely American framework. Enrollment at Zaytuna College is open to people of all faith backgrounds, however basic profi-

ciency in Arabic is required. As Professor Bazian says, “The first universities that were established in the Muslim world, at that time they were open to all, and our principle is that knowledge belongs to all of humanity.” Farid Senzai, a member of Zaytuna’s management committee adds, “In fact, these kinds of institutions in the long term are absolutely necessary for bridging the divide that currently exists and the misunderstanding that many have about Islam and Muslims.” And what do Zaytuna students say? 18 year-old Faatimah Knight shares, “I want to grow in my faith, learn more about the religion that inspired my parents to convert from Christianity and be able to defend Islam during a time of stepped-up suspicion.” Website: www.zaytunacollege.org

Linguists acknowledge that pronunciation is one of the most challenging steps in learning a different language. For example, spoken Arabic has many different dialects, slangs and accents.
