In this edition, Claudia Velo shares everything you need to know about pastries in her delightful article, perfect for those with a sweet tooth. Fiona Barfoot returns with her 5 FAQs column, tailored specifically for our wedding edition.

Sweet Treats Baja Style

Julia Child said it best, “A party without cake is just a meeting,” and when it comes to wedding parties, most will agree that the cake is one of the key elements for the celebration to be complete. While the list of wedding cake and dessert trends for 2024 includes elements like grand, many-tiered cakes, metallic accent decorations, and sustainable and allergen-free desserts, all of which can be found in Los Cabos; if you want to enjoy some traditional flavors, you need to venture into the kitchens of local cooks and bakers to encounter a variety of treats that will give any celebration, including a beachside wedding or rehearsal dinner, a unique sweet touch.

Most of the traditional desserts of Baja California Sur are made with fruits that grow in the region, like guava, mango, and pitaya (dragon fruit), and some of the oldest recipes feature sweets made with dates and sugar cane.

The type of traditional sweets and desserts is a reflection of the history of the state, which grew around missions, usually built in areas where fresh water and date palms were found. Later, settlers established ranches that grew into important sugar cane fields with their sugar mills.

Another important sweet tradition came from the shared importance of sugar production and the necessity to preserve fruit in the hot desert: the manufacture of candied or crystallized fruits. From clear and sweet biznaga cactus candy known as “Acitrón” to candied orange peels and the jewel-like clear pitaya jelly; candied fruits are always present, whether to be enjoyed on their own or as part of the decorations of cakes and breads.

that is steamed in the oven providing a soft and airy texture. Lastly, there's the “Pastel de Datil,” a dense rich cake made with dates and pecans that resembles the texture of a rich banana bread. These are the delicious flavors that reflect the culinary spirit of Mexico and Baja.

In the southernmost part of the peninsula, the one treat that is present at all celebrations from christenings to family gatherings to weddings are “buñuelos,” crispy fritters made with a sweet dough similar to the one used for flour tortillas, with the addition of cinnamon in the dry ingredients and the use of butter instead of the traditional lard or shortening, as is the norm for tortillas. The dough is then rolled into thin circles, fried, and dusted with cinnamon sugar. Local chronicles show that the first buñuelos were prepared in the missions and they are a culinary tradition that remains to this day and is one of the most popular sweet treats in this area. Buñuelos are served with a warm syrup.

There are different preferences regarding this syrup. Some cooks will tell you that it must be a honey-like thick syrup made with “piloncillo.” Piloncillo is a raw form of cane sugar, traditionally shaped like cones, that can now be found in other presentations.

The flavor is very similar to dark molasses and if you were to prepare buñuelos, using a syrup made with one part molasses and half part water would be an excellent adaptation of the traditional flavor. Another very popular syrup is made with guavas that are cooked in a simple syrup.

The most traditional way to serve sweet treats at any celebration is by setting up a tempting display that is certain to include small turnovers filled with guava jelly, sliced mango jelly with cheese, dates with pecans and almonds, candied fruits, melcocha (small candies made with pulled sugar cane), and a beautifully decorated cake as the centerpiece.

Among the area's most traditional cakes is the “Tres Leches” cake, a decadent creation soaked in condensed, evaporated, and sweet milk. Another delight is the “Pastel de Elote,” a delicate and soft cake made with corn, often served wrapped in corn husks,

A word on churros:

Churros are made with a fermented enriched batter that is fried and then dusted with sugar. More modern versions are sometimes filled with chocolate, dulce de leche, or cajeta. While delicious, it is important to note that they are a tradition in mainland Mexico that dates to colonial times; however, they are not part of the culinary tradition of Baja California Sur. Having said that, they are an awesome dessert that can be found at many restaurants in the area.

For delicious guava-filled turnovers, go to Café Doce Cuarenta and ask for an Empanada de Guayaba. And do yourself a favor and try an amazing “Pastel de Elote” at La Pintada, next time you are in Cabo San Lucas.

You’re almost guaranteed a rain-free ceremony day, not to mention that the beach makes a stunning backdrop for your photos. Here are some of the top 5 questions we hear, when it comes to Weddings in Cabo:

1. Who can officiate the ceremony?

The officiant really sets the tone of the wedding. I love to recommend Reverend Scott J Polek, aka “The Reverend of The World” who has been living in and officiating ceremonies, in Cabo, since late 2020. The Reverend, who has officiated/renewed over 2000+ ceremonies in his 10 year career, left a flourishing wedding hapel in Las Vegas behind for the beauty and allure of Cabo. Never one to say “No” to his couples requests, the Reverend is well known for his theatrics, humor and of course, his trademark hat. 2. What activities can I offer my guests?

It’s fun to have friends and family celebrate you all week, but how do you keep everyone entertained? There is nothing better than being out on the water. My friends at Papillon Yachts are experts when it comes to private charters. Want to really impress? Why not have your ceremony and wedding party on a private yacht? 3. Should I hire a travel agent?

I sat down with Kathleen Campbell, a travel consultant that specializes in destination weddings, to get her tips and tricks on booking AllInclusive Resort destination weddings in Cabo. Kathleen mentioned that most brides start the process a year in advance. She works by contacting the wedding planner at your chosen resort to get the specifics on what documents and deposits are required and most importantly, is your date available? If you have a group of guests, the resort will usually give specialized group pricing, assist you in setting up pre-wedding festivities and help you with on-site vendor bookings, such as photographers and beauty experts.

4. How can I know what vendors I can trust?

From flowers to balloons to hair and photographers; there is no shortage of excellent vendors in Cabo. It can be overwhelming to try and pick a professional from another country. I highly recommend hopping on our Facebook page “Cabo: everything you need or want to know” to ask and get recommendations from people who have first- hand experience. Don’t forget to message Juan Pablo if you need a ride.

5. What about venues?

If you’re not opting for a resort wedding, there are other fabulous options! From one of our many gourmet estaurants jutting over the ocean, to a southern BBQ, to a beach picnic, you can find all the options in Cabo to fit your budget. Crafting Love Stories with La Floristería

Flowers are meant to be seen. As a symbol of romance, they decorate moments and milestones. They say “I love you”, “Get well soon” or “I’m thinking about you.” If there is someone that understands the importance of flowers it is Ximena and her husband Rodrigo, from la Floristería. Like many others they were forced to rethink their careers during the pandemic and discovered their new passion: flower arrangements. Ximena worked as an architect and Rodrigo in sales. They joined forces, each with their unique talents, and ventured into the flower industry.

As the wedding industry exploded in Los Cabos with more than 30 weddings a week during the season, the need for wedding vendors grew, including flower arrangements. Rodrigo and Ximena seized the opportunity and their business blossomed. “Flowers tell you how to feel” Ximena shared, “we get to help brides transmit their vision with arrangements.” Whether its a classic wedding with all white flowers or a colorful wedding with a lively color palette, flowers can elevate an event. They are the cherry on top and making their clients’ vision come to life has given Ximena and Rodrigo’s business a special sense of purpose. The day of, you can find them in the venue arranging the flowers themselves. “We put our whole heart and soul into our work. We make sure everything looks perfect, so it’s important we’re there!” Rodrigo told Destino.

The Impact of Community Initiatives in Baja California

Helping mothers nurture strong, resilient children is the corner stone of building a better future. In this edition of The Baja Bubble we explore the heart of a community-driven initiative dedicated to nourishing both bodies and minds, taking a look at how they are shaping local communities and leaving an indelible mark on the region. Sarahuaro is a foundation dedicated to empowering women and feeding children in Baja California Sur, Mexico.

We spoke to Nancy Brelos, the driving force behind Sarahuaro Foundation, who discovered her passion for community engagement after relocating to Cabo San Lucas and realizing she wasn’t quite ready for retirement. With a heart fueled by a desire to make a difference, Nancy became deeply involved in local initiatives, inspiring fellow expats to join hands in serving the community. As the head of Sarahuaro Foundation, Nancy's leadership and unwavering dedication have been instrumental in creating a ripple effect of positive change, touching the lives of countless women and children in Los Cabos.

At the forefront of this movement is "The Children's Kitchen," a program to feed children while in school so they can perform better academically. The kitchens are located in two Federal primary schools in the Gastelum neighborhood, not far from Downtown Cabo San Lucas. Here, a team of over 200 volunteer mothers rotate through the two kitchens to prepare 350 meals every day. These kitchens bring children more than just food, for them it is also a center of security and well-being.

The Children's Kitchen it's a testament to the power of giving and collective action. Through their selfless dedication, these volunteers fill the center with the spirit of giving back, creating a sense of pride and union in their community. Their hard work is an example of how true change is born and fueled by common people who commit themselves to make a difference.

Yet providing kids the nourishment they need is only part of their work. To truly help them grow we must also nurture their minds, giving them the tools and confidence they need to create their own path of success. This has been the mission behind Sarahuaro Center for Women's Development, who have served their community by providing education and opportunities to women who needed them.

This institution offers a variety of classes and services with the goal of giving women the skills and knowledge they need to thrive. From English courses to sewing workshops, they provide a way for women to become economically independent and self-sufficient.

By empowering women, Sarahuaro uplifts entire communities. As mothers gain awareness, they become able to break a cycle of poverty and open a door for a brighter future, for themselves and their children. This chain of change extends far beyond the reach of Sarahuaro, and touches countless lives, transforming every community in Los Cabos.

Sarahuaro Foundation teaches us what can be achieved when people come together under a shared vision. Their example serves as an inspiration to commit ourselves to building a future where everyone has access to better opportunities, regardless of their circumstances.
