THE STORY Coffee, a dark magical substance that turns “Leave me alone or die” into ”Good morning, Honey!“.The history of coffee is a rich and fascinating journey that spans centuries and continents. The story begins in the ancient coffee forests of Ethiopia, where legend has it that a 9th-century goat herder named Kaldi discovered the magical effects of coffee beans. According to the tale, Kaldi noticed that his goats became unusually energetic after eating the berries from a certain plant. Intrigued, he tried the berries himself and experienced a newfound vitality. From Ethiopia, coffee made its way to the Arabian Peninsula, where it became a popular beverage in the Arab world. By the 15th century, coffee was being cultivated in the Yemeni district of Arabia and was consumed in Persia, Egypt, Syria, and Turkey. The first coffeehouses, known as qahveh khaneh, emerged in the Arab world and quickly became vibrant centers for social interaction, intellectual discourse, and entertainment. Coffee's journey continued through trade routes, and by the 17th century, it had reached Europe. The first coffeehouse in Europe opened in Venice in 1645, and coffeehouses soon spread to major cities like London, Paris, and Vienna. These establishments became hubs for artistic, philosophical, and political discussions, earning coffee the moniker "the beverage of the intellectuals."


OF COFFEE In the 18th century, European colonial powers introduced coffee cultivation to the Americas. Coffee plantations thrived in regions with suitable climates, such as the Caribbean, Central and South America. The demand for coffee soared, and its economic importance became a driving force in the establishment of colonies. The 19th and 20th centuries witnessed the global expansion of the coffee industry. Coffee became a major commodity, and its cultivation spread to new regions, including Africa, Southeast Asia, and Oceania. The creation of coffee blends, advancements in brewing technologies, and the rise of multinational coffee corporations further shaped the modern coffee culture. Today, coffee is a global phenomenon, enjoyed by people from all walks of life. It has evolved into a diverse and dynamic beverage, with a myriad of brewing methods, coffee varieties, and flavors. Whether sipped in a quiet café or grabbed on the go, coffee continues to be a beloved and influential part of our daily lives, connecting people across cultures and continents.

TYPES OF COFFEE

There are many different types of coffee from all over the world. We are going to share some information about our favorites.

One standout origin is Colombian coffee, renowned for its smooth and balanced profile. Colombian coffee is often described as mild with a bright acidity, a medium body, and subtle notes of nuttiness and citrus. The diverse climate and high-altitude regions of Colombia, combined with meticulous cultivation and processing methods, contribute to the exceptional quality of Colombian coffee beans.

Moving to the birthplace of coffee, Ethiopia , one encounters a variety of coffee types, each with its distinct taste. Ethiopian coffees are celebrated for their complex flavors, floral notes, and a wine-like acidity. The regions of Sidamo, Yirgacheffe, and Harrar are particularly famous, offering coffees with fruity, spicy, and sometimes wild undertones.

In Central America, the coffee from Costa Rica stands out for its bright acidity, full body, and a nuanced sweetness. Costa Rican coffees often display a clean and well-balanced profile, making them popular among coffee connoisseurs.

In Southeast Asia, the coffee from Sumatra , Indonesia , presents a unique and full-bodied experience. Sumatran coffees are known for their earthy, herbal, and sometimes spicy notes, creating a distinctive cup that lingers on the palate.

Let’s start with a simple one: Cappucino...(Jakobs favorite)

Ingredients: 1 shot of espresso (approximately 1 ounce) 1/3 cup of milk (steamed and frothed) Optional Extras: Sugar or sweetener, to taste Flavored syrups (vanilla, caramel, etc.), optional for added flavor

Procedure: 1. Grind coffee beans to a fine consistency. 2. Brew a shot of espresso using an espresso machine or alternative method. 3. Steam and froth the milk using a milk frother or steam wand until it reaches a velvety, creamy consistency. 4. Pour the shot of espresso into a coffee cup. 5. Gently pour the frothed milk over the espresso, holding back the foam with a spoon until you've added mostly steamed milk. 6. Spoon the remaining foam on top of the cappuccino. 7. Optionally, sprinkle cocoa powder or cinnamon on top for garnish. 8. Sweeten to taste with sugar or sweetener if desired.

A classic airy latte macchiato

Ingredients: 1 shot of espresso (approximately 1 ounce) 1 cup of milk (steamed and frothed) Optional Extras: Vanilla or flavored syrups, if desired Procedure: 1. Grind coffee beans to a fine consistency. 2. Brew a shot of espresso using an espresso machine or alternative method. 3. Steam and froth the milk using a milk frother or steam wand until it reaches a creamy consistency. 4. Pour the shot of espresso into the tall glass. 5. Gently pour the frothed milk over the espresso, allowing it to create distinct layers. The milk should sit on top of the espresso, creating a layered effect. 6. Optionally, add flavored syrups for extra taste. 7. Stir gently if desired. 8. Serve and enjoy your Latte Macchiato!

A basic and typical summer drink: an iced latte

Ingredients: 1-2 shots of espresso (approximately 1-2 ounces, you could also use more) 1 cup of cold milk (whole milk, skim milk, almond milk, or your preference) Ice cubes Sweetener (optional) Flavor syrups (optional) Procedure: 1. Brew 1-2 shots of espresso using an espresso machine or alternative method. 2. Allow the espresso to cool slightly, or you can brew it directly over a cup of ice. 3. Fill a tall glass with ice cubes. 4. Pour the freshly brewed espresso over the ice. 5. Pour the cold milk over the espresso and ice. 6. Add sweetener if desired and stir well. 7. Optionally, add flavored syrups for extra taste. 8. Enjoy your refreshing Iced Latte!

Cold Brew with salted caramel cold foam (Amelie’s favorite)

Ingredients: For Cold Brew: Coarsely ground coffee beans (about 1 cup) Cold water (4 cups) For Salted Caramel Cold Foam: 1 cup of cold milk (whole milk or alternative like almond or oat milk) 1/2 cup cream 1 tablespoons of caramel syrup A sparkle of salt Ice cubes Equipment: Coffee grinder Cold brew coffee maker or a large jar Fine mesh strainer or cheesecloth for straining cold brew Blender for making the cold foam Mason jar or glass for serving

Cold Brew with salted caramel cold foam (Amelie’s favorite)

Procedure: For Cold Brew: 1. Grind the coffee beans coarsely 2. Combine the ground coffee and cold water in a cold brew coffee maker or a large jar 3. Stir well and let it steep in the refrigerator for about 12-24 hours 4. Strain the cold brew using a fine mesh strainer or cheesecloth to remove the coffee grounds For Salted Caramel Cold Foam: 1. Whip the cream 2. In a blender, combine the cream, cold milk, salt and caramel syrup 3. Blend on high speed until the mixture becomes frothy and forms a thick foam 4. If needed, adjust sweetness by adding more caramel syrup or salt. Assembling the Cold Brew with Salted Caramel Cold Foam: 1. Fill a glass with ice cubes. 2. Pour the cold brew coffee over the ice 3. Top the cold brew with the salted caramel cold foam 4. Optionally, drizzle extra caramel syrup on top

Let’s try an italian summer version of a coffee: Affogato

+ Ingrediens: 1 shot of espresso (approximately 1 ounce) 1 to 2 scoops of vanilla ice cream or gelato

Procedure: 1. Brew a shot of espresso using an espresso machine or alternative method 2. Scoop 1 to 2 servings of vanilla ice cream or gelato into a serving cup or bowl 3. Pour the hot espresso shot over the ice cream immediately before serving 4. Optionally, garnish with chocolate shavings, crushed nuts, or a drizzle of caramel for extra flavor and presentation 5. Serve immediately while the espresso is hot and begins to melt the ice cream

COFFEE Pumpkin spice latte, the typical fall drink. So how can we make it at home? Ingrediens: 1 shot of espresso (approximately 1 ounce) 1 cup of milk (steamed and frothed) 2 tablespoons of pumpkin puree 1-2 tablespoons of sugar or sweetener (adjust to taste) 1/2 teaspoon of pumpkin spice mix (cinnamon, nutmeg, cloves) Whipped cream for topping Ground cinnamon or nutmeg for garnish (optional) Procedure: 1. If making a pumpkin spice mixture: In a saucepan over low heat, mix the pumpkin puree, sugar, and pumpkin spice mix. Heat and stir until well combined and slightly warmed. Remove from heat 2. Grind coffee beans to a fine consistency 3. Brew a shot of espresso using an espresso machine or alternative method 4. Steam and froth the milk using a milk frother or steam wand until it reaches a creamy consistency 5. Combine the shot of espresso with the steamed and frothed milk in a coffee cup 6. Add the pumpkin spice mixture to the coffee cup and stir well 7. Top with whipped cream and a sprinkle of ground cinnamon or nutmeg 8. Serve and savor your delicious Pumpkin Spice Latte!

COFFEE It is getting cozy, snow is slowly falling and it is time for a Gingerbread latte. Ingredients: - 1 shot of espresso (approximately 1 ounce) - 1 cup of milk - 1-2 tablespoons of gingerbread syrup (store-bought or homemade) - Whipped cream for topping - Ground cinnamon or nutmeg for garnish (optional) Gingerbread Syrup Ingredients (if making your own): - 1 cup water - 1 cup brown sugar - 1 tablespoon molasses - 1 tablespoon ground ginger - 1 teaspoon ground cinnamon - 1/2 teaspoon ground cloves - 1/2 teaspoon vanilla extract

Gingerbread Syrup Procedure: 1. In a saucepan, combine water, brown sugar, molasses, ground ginger, ground cinnamon, ground cloves, and vanilla extract. 2. Heat over medium heat, stirring frequently until the mixture comes to a simmer and the sugar is completely dissolved.


COFFEE Gingerbread Syrup Procedure: 3. Reduce heat and let it simmer for about 10-15 minutes, allowing the flavors to meld. 4. Strain the syrup to remove any solid particles. 5. Allow the syrup to cool before using. Latte Procedure: 1. Grind coffee beans to a fine consistency. 2. Brew a shot of espresso using an espresso machine or alternative method. 3. In a separate container, heat and froth the milk using a milk frother or steam wand until it reaches a creamy consistency. 4. Mix 1-2 tablespoons of gingerbread syrup into the espresso. 5. Pour the frothed milk over the gingerbread-flavored espresso. 6. Optionally, top with whipped cream and sprinkle ground cinnamon or nutmeg for garnish. 7. Stir gently if desired. 8. Enjoy your delightful Gingerbread Latte! This festive drink is perfect for the holiday season with its warm and spicy gingerbread flavor.

One of the best teas and Wanvisas favorite: Chai Ingredients: 1 cup of water 1 cup of milk 2-3 teaspoons of loose tea leaves or 2-3 tea bags 1-2 tablespoons of sugar (adjust to taste) 3-4 whole green cardamom pods 3-4 whole cloves 1-2 cinnamon sticks 1 small piece of fresh ginger, peeled and sliced Optional: a pinch of black pepper or a few black peppercorns Procedure: 1. In a saucepan, combine water, milk, tea leaves or tea bags, sugar, cardamom pods, cloves, cinnamon sticks, and sliced ginger 2. Place the saucepan over medium heat and bring the mixture to a simmer. Be careful not to let it boil over 3. Once the mixture is simmering, reduce the heat to low and let it steep for about 5-7 minutes. The longer it steeps, the stronger the chai will be 4. Add black pepper if desired for a bit of heat 5. Remove the saucepan from heat and strain the chai into cups using a tea strainer or fine mesh sieve 6. Sweeten with additional sugar if needed 7. Serve hot and enjoy your homemade chai!

CARAMEL

Ingredients:

1 cup granulated sugar 1/4 cup water 1/2 cup heavy cream 4 tablespoons unsalted butter 1 teaspoon vanilla extract (optional) A pinch of salt Procedure: 1. Measure out all your ingredients before starting, as the cooking process can be quick 2. In a heavy-bottomed saucepan, combine the granulated sugar and water, stir gently to combine 3. Place the saucepan over medium heat, allow the sugar to dissolve without stirring 4. Swirl the pan occasionally to ensure even heating 5. Once the sugar has turned a deep amber color, remove the saucepan from the heat, be cautious not to let it burn 6. Carefully add the butter and heavy cream to the caramelized sugar, the mixture will bubble, continue stirring, and add a pinch of salt 7. Allow the caramel to cool slightly before transferring it to a heatproof container, it will thicken as it cools. 8. Use the caramel immediately as a topping for desserts, ice cream, or COFFEE. If storing, keep it in a sealed container in the refrigerator.
