Now it’s July we’ve firmly moved into festival season and many of you are heading off to the numerous festivals that take place this time of year. For all of you staying around Bristol for the summer there’s heaps to do within the city, and especially @ Hamilton House. If you’re not already following us on Twitter or Facebook join us @ Coexistcic to get the latest on all the events. Keep your eyes peeled for #ItGoesOnHere for up-to-date listing info and more... Introducing Community Conscious , an exciting new project based right here, in Hamilton House. A charitable arm of the Wellbeing Rooms, this group of therapists work together to provide a range of low-cost professional, complementary therapy treatments to vulnerable people in Bristol who would/ do not usually have access to them. Last month, Community Conscious completed it’s first ever pilot with Second Step in Hamilton House, offering treatments to fourteen service users and support workers over a six week period. This was enabled by a grant from Lloyds School for Social Entrepreneurs. “I feel more able to cope and have faith in my ability to handle what the day

brings. I hadn’t realised how powerful complementary therapies can be in helping to ease emotional and mental discomfort. I will definitely be recommending it to others as a way of aiding recovery.” Our clinic runs from 5pm – 9pm on Sundays and 10am – 9pm on Mondays. We are also offering regular yoga classes on Monday evenings for our partner organisations. Soba Noodles with Aubergines and Mango (serves 4)

Welcome

serves 4-6 What you’ll need: -120 ml rice vinegar -40 g caster sugar -1/2 teaspoon fine sea salt -2 garlic cloves, peeled and crushed -1/2 fresh red chili, minced -1 teaspoon toasted sesame oil -grated zest and juice of one lime -80 ml sunflower oil -2 medium aubergines cut into 2cm chunks -250g dried soba noodles -1 large ripe mango, cut into strips -1/2 medium red onion, very thinly sliced -a handful of basil leaves, slivered -a handful of fresh coriander, chopped

While you are prepping the rest of the ingredients bring a large pot of water to a boil. In the meantime, make the dressing by combining the vinegar, sugar, and salt in a small saucepan over medium heat. Cook, stirring, for up to 1 minute, or until the sugar dissolves. Remove from heat and add the garlic, red chili, and sesame oil. Allow to cool, then add the lime zest and juice Heat the sunflower oil in a large skillet and shallow fry the aubergine in three batches, until deeply golden. Transfer to a colander and sprinkle with a generous pinch of salt. Cook the soba noodles in a large pot of boiling water, per package instructions, or until just tender. Drain and rinse under cold running water. Shake off as much of the excess water as possible, then leave to dry in the colander or on a tea towel. If you’re not using the noodles soon, toss with a tiny splash of olive oil to prevent the noodles from sticking to each other. In a large mixing bowl toss the noodles with the dressing, mango, aubergine, onion, and most of the herbs. You can now set this aside for an hour or two before serving topped with the remaining herbs.
