Baba Ganoush

Aubergine is one of our favourite vegetables here at The Coexist Community Kitchen and luckily it is just about to be it’s moment. We were only just visiting Buried Treasure allotment over in Knowle West this morning and the aubergine plants were drooping under the weight of their lovely dark purple vegetables. Baba Ganoush is a typical dish found all over the Middle East and is perfect for adding to a mezze style meal or some kind of barbecued delights! The best way to cook it is on the barbecue with a skewer through the middle, making sure you don’t burn your hand when you pick it up. If you aren’t able to barbecue it then cook it over the top of the gas hob on your cooker, turning the aubergine until it is completely brown and wrinkly on the outside. Failing those two options, stick it in the oven with some olive oil

What you’ll need: -1 Large Aubergine -2 spoonfuls of Greek style yoghurt -2 spoonfuls (maybe more) of tahini -Juice of half a lemon -Olive oil to taste -A few pinches of cumin -Salt and Pepper to taste -Chopped flat leaf parsley drizzled over the top. When the brown and wrinkly aubergine has cooled down, scrape out the inside into a bowl leaving a very thin layer of skin behind. Grab the filling, add a few spoonfuls of greek style yoghurt, two finely chopped garlic cloves, a few pinches of cumin, salt and pepper and a spoonful or two of tahini. Squeeze in about half a lemon and olive oil then mix thoroughly. Finally sprinkle on some chopped up flat leaf parsley and serve with warm pitta or middle eastern wraps as a starter or part of a bigger sharing dinner!
