T

he seductive sigh of a cork easing out of a bottle of champagne has to be one of the sweetest sounds on earth but many people are terrified by the thought of using the bottle’s built-in pressure to remove the cork. However, Champagne Lallier brand ambassador Constance Delaire approaches the act of sabrage fearlessly. Her first tip for the perfect sabrage is to take a “very fresh bottle” (ie don’t shake, or even stir) that has been in the fridge and is sitting at 12 degrees, or even lower then remove the cage that covers the cork, as well as the foil around the neck. This gives the champagne cork the freedom to come out when induced to. “Locate the two seams that are on the bottle and do not shake the bottle. Then incline it at an angle of 35 degrees with the sabre in contact with the bottle. “Don’t have too much pressure in your hand or the bottle will feel it. It can feel your fear,” she says.

“Then place the knife down the seam three times very slowly and the cork will pop out very naturally.” Constance comes from a background in red wine, as her family were winemakers in Bordeaux, and she did a degree in oenology in France. She acquired her level 3 WSET diploma and tasted wine from all over the world but did not feel it necessary to study any higher. “I used to love red wine and maybe one day will come back,” she says. So how did she land up in the world of champagne, and more specifically, in Johannesburg, South Africa? “I came out for work three years ago and had a friend who did vinification in South Africa. I loved the wines, the food and the countryside but found it very complicated to get a visa here.” She worked at Groot Constantia as a winemaker for a short period and said her name aroused mild curiosity in South African winemaking circles.

STYLE ICON “I had to explain that I had nothing to do with the famous South African sweet wine, Vin de Constance, nor did I have any family connection with anyone at Delaire Graff Estate.� She was always interested in the blending process involved in champagne making and wanted a job working in winemaking and promotion. Then Champagne Lallier contacted her, saying that they loved her profile and wanted to create a job for her. It sounded like a perfect job but at that stage she did not know the blend so asked a friend about it who informed her that the champagne house was a very good quality boutique champagne which had


She worked at Groot Constantia as a winemaker for a short period and said her name - Constance Delaire - aroused mild curiosity in South African winemaking circles just increased their product, quality and production. Today she is the brand ambassador for Champagne Lallier and manages all the importers, the price negotiation and launches into different countries. Based in Johannesburg, she works with “the French Wine Guy�, Herve Delabesse, who started up a new importing venture earlier this year. His company Premier

Cru Wines imports Champagne Lallier, together with other boutique French wines and champagnes, and focuses on bespoke experiences to accompany the wine discovery journey. Constance represented Champagne Lallier at this year’s Absa Champagne Festival in Johannesburg, and performed sabrage for the duration of the three-day festival, while she introduced guests to her champagne. She was impressed by the event, especially the food, which she said was beautifully paired with the champagne. Constance is finding that Champagne Lallier is being well received in South Africa “The house style and vision for the champagne are: the art of drinking and eating well – gastronomy positioning; vintage based approach for NV Champagne, with 80 percent minimum of cuvees; Grand Cru vineyards on all cuvees and a style which incorporates precision, finesse with fresh and complex wines enabling high food pairing versatility,” says Hervé. With all this in mind he wants to focus on the fine dining market in Johannesburg. Cape Town has always been considered the hub of good food in South Africa but both of these discerning French palates agree there is a great deal of fine dining in this cosmopolitan city. In fact, they agree it is a bigger and better market. Constance has a good relationship with the city’s sommeliers and chefs, who have been introduced to Champagne Lallier. Constance and Hervé are currently involved as a team in tastings with high end hotels like The Saxon and will be doing more tastings with Roots restaurant at Forum Homini in the Cradle of Mankind in early 2019. Then it’s off to Cape Town for Constance, who will introduce her elegant brand to Capetonian palates as well. This “queen of sabrage” will need to have her sabre at the ready in the next few weeks for the New Year period!
