Baking Cakes Then and Now— Scratch Cake or Box Cake? “To bake good things—put good things into them! There’s the start of the story. You can’t JHW OLJKW WHQGHU WH[WXUHV DQG GHOLFDWH Ă DYRUV ZLWK LQIHULRU LQJUHGLHQWV¾³ZRUGV RI ZLVGRP from a 1933 cookbook called All About Home Baking.

his cookbook was a wedding gift to Sue Purvis’s mother. You can tell from the book that it was a well used and well loved cookbook. It is absolutely fabulous and today could be called Baking for Dummies. It has clear, precise directions that anyone can follow. It goes through all the different types of cakes and

gives you a basic recipe and then different recipes that you can use for variations. %DNLQJ LV YHU\ SUHFLVH DQG , KDYH GLIĂ€culty with it. I am a cook that throws a dab of this and a handful of that into a pot, skillet, or bowl. That does NOT work with baking. I think my problem has always been in PHDVXULQJ WKH Ă RXU 7KH ERRN VD\V ´7KH

Also in this book are the two don’ts WR PHDVXULQJ Ă RXU 2QH LV ´GRQ¡W GLS XS WKH VLIWHG Ă RXU ZLWK WKH FXSÂłLW SDFNV LW GRZQ DJDLQ Âľ *XLOW\ RI

Maybe if I had read these directions forty years ago, my family would not have suffered through so many dry and heavy birthday cakes. When I followed the diUHFWLRQV H[DFWO\³VXUSULVH VXUSULVH VXUSULVH³WKH FDNH WXUQHG RXW PRLVW à XII\ and overall beautiful and delicious. Reading these directions for cake making and thinking about directions for making cakes today, 86 years later, makes for interesting then-and-now comparisons. 7KH ´WKHQ¾ UHFLSH IURP XVHV D ZRRGen spoon or a rotary beater. I cheated and used a mixer. To make the evaluation even more interesting, I decided to make the ´QRZ¾ FDNH IURP D 3LQWHUHVW UHFLSH XVLQJ D

cake mix and adding ingredients to make it taste more like home made. Below, I have typed each recipe exactly as written. Both cakes are Devil’s Food ZLWK D FDUDPHO WRSSLQJ 6WDUW WR Ă€QLVK WKH Ă€UVW WKH ´WKHQÂľ WRRN KRXUV DQG WKH RWKHU WKH ´QRZÂľ WRRN DERXW KRXU , ZDV YHU\ precise with the scratch cake, and its chocolate color was not as dark as that of the box cake mix. However, in a taste test with DERXW SHRSOH WHHQDJHUV WR P\ DJH the hands-down favorite was the scratch cake. In fact, 100% of the taste-testers preferred the scratch cake. Before I did this, I would have bet that the box cake would be the winner. It goes to show that, if in baking you follow the directions exactly, you will have success. So when it comes time for baking, many of them grab a cake box and add extra ingrediHQWV WR JLYH LW D KRPHPDGH Ă DYRU , NQRZ , GR LW TXLWH RIWHQ , KDYH D IROGHU RQ Pinterest that is just cakes made from a box with added ingredients. It is embarrassing to admit when someone asks for the recipe, but it is what it is. On Pinterest at balancingmotherhood.com, I found a recipe that is a modern version of the cake from the 1933 recipe. This cake was very delicious and would have been a favorite if my family had not tried the homemade one. This is perfect for a bake sale, for a neighbor, or for your family. Tea Honoring Ali Tirrell traditional southern tea at the historic home of Dr. Anne Henderson in Brookhaven, Mississippi, on February 3, 2019, honored Ali Tirrell, bride of Justin Hobbs, and was hosted by friends of the groom’s family. The guests were met in the lovely foyer by the bride; her mother, Liz Tirrell; and Danita Hobbs, the groom’s mother. Other family members in attendance were DeLois McClelland, grandmother of the groom; Deanne Allgood, aunt of the groom; and Abi Tirrell, sister of the bride, from Washington D.C. As guests enjoyed refreshments, they were entertained by pianist Steve Russell. The couple will wed in Miami Beach, Florida, on April 27, 2019, at the Confidante Hotel.

Slander occurs when a person uses spoken words to injure others. Second, there is libel. Libel is the use of printed words with the intention of injuring others. Defamatory words must be spoken and/or published to a third party for defamation to arise. To better understand the above language, one can defame another by uttering words that impute guilt of the commission of some criminal offense, that falsely claim someone has a contagious disHDVH L H $,'6 RU WKDW IDOVHO\ FODLP VRPHRQH LV XQĂ€W LQ EXVLQHVV or lacks integrity in running the business. In the above examples, the law presumes the defamed person is damaged and injured, and that person only needs to put forth the utterance in court to be entitled to damages.

But, words are tricky. Our courts have held that calling people GHURJDWRU\ QDPHV L H 62% EXWWKROH HWF LV QRW GHIDPDWRU\ One of the better descriptions I have read in determining if words are defamatory was written by the Mississippi Supreme Court in 1953, and reads as follows: “A communication is defamatory if it tends to so harm the reputation of others as to lower him in estimation of the community or to deter third persons from associating or dealing with him, and in order to constitute defamation, alleged libelous matter must assail the integrity and moral character of the injured party.â€? Let’s delve a little more deeply into the concept of defamation. Suppose some person with a beef against you tells others that you are stupid, ignorant, have no judgment, are offensive, or have body odor. This gets back to you. Are such words actionable? Probably QRW VLQFH WKHVH ZRUGV DUH PRUH ´RSLQLRQ Âľ $IWHU DOO \RX ZHUHQ¡W accused of committing a crime, showing illegal conduct in business, having some communicable disease, or having acted in a highly immoral way. Now let’s assume that same person tells a third party that you cheat your customers by overcharging them, or that you sell goods that are not what you warrant them to be, or that you are shady in your business practices. Chances are you have a claim for defamation. Now, let’s muddy the word game further. Assume someone accuses you of hate or being hateful. This issue is exactly what is going on in a case against the Southern Poverty Law Center of Alabama. One, Gavin McInnes, who is an ultra-conservative, is suing the SPLC, alleging defamation because the SPLC has claimed and published in its literature that his organization, Proud Boys, is a hate group and, thus, should be boycotted. McInness maintains that KLV FRQVHUYDWLYH LGHDV KDYH EHHQ ´IDOVHO\ EUDQGHGÂľ DV KDWH WR WKH SRLQW WKDW YLUWXDOO\ DOO VRFLDO PHGLD SODWIRUPV )DFHERRN 7ZLWWHU HWF KDYH EDQQHG KLP WKXV FDXVLQJ KLP Ă€QDQFLDO ORVV 2U LV LW DOO true? The question now is this: has his reputation been falsely atWDFNHG ZKLFK VLWXDWLRQ LQ WXUQ KDV FDXVHG KLP Ă€QDQFLDO ORVV" There are so many charges of hate out there today that it will EH LQWHUHVWLQJ WR VHH LI WKH IHGHUDO FRXUWV ZLOO DVFULEH ´IDOVHÂľ KDWH charges under the umbrella of defamation. I think that branding VRPHRQH IDOVHO\ E\ DOOHJLQJ D IRUP RI ´KDWHÂľ FDQ EH YHU\ GHWULPHQtal and harmful and thus causes damages. I am very interested in the outcome of this and will be watching closely. MY THOUGHTS: 7KHUH LV DQ ROG VD\LQJ WKDW JRHV ´/RUG PDNH my words tender and soft today, for tomorrow I may have to eat them.â€? Always guard your tongue.

The Order of the First Families of Mississippi Fall Gathering 2018 embers and guests of The Order of the First Families of Mississippi met in Columbia, Mississippi, for their Fall Gathering on November 3, 2018. Columbia is known as “The City of Charm on the River Pearl.” The Welcome Party was held at 10:00 a.m. at the Governor Hugh White Mansion, the home of Bill and Ann Simmons. Situated in the midst of a twenty-three-acre landscaped and wooded park, the home was built between 1925 and 1927 by Mississippi Governor Hugh White, who served as governor from 1936-1940. In 1991, the Simmonses received the Mississippi Historical Society’s Award of Merit for exemplary restoration of this home that is listed on the National Register of Historic Places. Musical entertainment for the event was provided by pianist Julian Pernett Castilla on the grand piano in the parlor. The beautifully decorated dining table was laden with serving trays of delicious fruit, sweet breads, and cheese straws; and milk punch was served in an elegant glass punch bowl. Bloody Marys and Mimosas were served on the back porch. At noon, the gathering’s luncheon was held at the nearby Magnolia Grille. The guest speaker was Dr. Max Grivno, a member of the faculty of the University of Southern Mississippi since 2007. He presented a program entitled “Mississippi and the American Revolution.” The program was followed by the introduction of the newest members of the organization. Eighty members and guests attended.

Deciduous Azaleas—Native Mississippians

T

here’s no doubt that spring is here when the Southern Indica azaleas start to put on their show. These VKRZ\ÂłVRPH PD\ HYHQ VD\ JDXG\³à RZering shrubs seem just to take over our southern landscapes before fading back into an evergreen supporting role for the rest of the year. However, this column is not about the beautiful Southern Indica azaleas, which, by the way, are from Asia. This column is about a couple of azaleas native to 0LVVLVVLSSL DQG RWKHU VRXWKHDVWHUQ VWDWHVÂł the deciduous azaleas. Many gardeners are not aware of deciduous azaleas. The main reason is that they are deciduous. They exist as sticks in the landscape through the winter months. For the typical homeowner, they are out of sight, out of mind until they bloom in spectacular fashion in early spring and then fade away again. 7KH Ă€UVW LV FRPPRQO\ FDOOHG SLHGPRQW or honeysuckle azalea, known botanically as Rhododendron canescens. The Ă RZHUV DUH EHDXWLIXO ZLWK WKHLU YDULRXV shades of pretty pink and delicate rose with white accents. As an added treat, these flowers are pleasantly fragrant on a calm,

early-morning garden stroll. In my travels around Mississippi during the annual spring horticulture marathon, I always stop and take pictures of these azaleas growing along the woodland edges of the highway. 7KH VHFRQG D]DOHD LV WKH )ORULGD à DPH azalea, Rhododendron austrinum. The à RZHU FRORU UDQJH LQFOXGHV \HOORZV RUDQJHV DQG ÀHU\ UHGV ,W LV D WUHDW WR GULYH along the I-10 corridor in the early spring and spot these azaleas growing in their native habitat from Mississippi to Alabama and on through the Florida Panhandle. :KHQ UHDG\ WKH à RZHU EXGV VZHOO DQG WKH GHFLGXRXV D]DOHD à RZHUV RSHQ RQ QHDUO\ QDNHG VWHPV 7KH à RZHU EXGV RQ WKH RXWVLGH RI WKH FOXVWHU ZLOO RSHQ ÀUVW IROORZHG E\ WKRVH LQ WKH PLGGOH 7KH à RZers can be up to 1.5 inches across, but it is the stamen and pistil that add charm and interest. These structures extend out of the à RZHU DQG DGG D GHOLFDWH WH[WXUH WR LW We have been growing a nice set of deciduous azaleas from the Sunbow series in the Mississippi State University trial gardens across the state. These deciduous azaleas, as the name suggests, are various shades of yellow, gold, and orange. 6RODU 5D\ KDV EULOOLDQW \HOORZ à RZHUV ZLWK

RUDQJH VKDGLQJ 6RODU *ORZ à RZHUV DUH RUange-red with yellow highlights that seem to glow in the landscape. Solar Flare has DOPRVW QHRQ \HOORZ à RZHUV ZLWK OLJKW RUange shading. All are part of the Southern Living Plant Collection. It is best to plant in a location that has ÀOWHUHG VXQOLJKW VLQFH GHFLGXRXV D]DOHDV evolved along the edges of woodlands. However, contrary to the belief that these should be strictly understory plants, many will do quite nicely in full sun. In fact, à RZHU SURGXFWLRQ LV XVXDOO\ KLJKHU LQ IXOO sun than in shadier locations. To help with drainage, always plant deciduous azaleas with the top of the root ball 1 to 2 inches above the soil level. Columnist Dr. Gary R. Amy follows in the footsteps of her mother, Dot Temple, who served as Audubon Pilgrimage Chairman in 1987, and of her grandmother, Catherine Reames, who was a coordinator of the kitchen at the Rural Homestead for many years. Amy has been married for twenty-eight years to Lambert Louviere; and they have two children, Jay and Mary Quin. Both children have participated in the event’s volunteer activities, including acting in the Audubon play, dancing with Sweet Maids and Maypole dancers, and working at the Rural Homestead. March 30 – 31 31st Annual Natchez Powwow Natchez, Mississippi The Grand Village of the Natchez Indians in Natchez, Mississippi, on March 30 and March 31, 2019, is the setting for this annual event. Native Americans from the Choctaw, Comanche, Kiowa, Natchez, Otoe, and Pawnee tribes, as well as other native and non-native dancers and singers, will be represented at the annual Natchez Powwow for traditional dancing and singing. As a traditional powwow, the Natchez Powwow is not a competition event; instead, it is people coming to enjoy the singing and dancing. The gourd dancing, which originated among the Kiowa tribe, is scheduled for 1:00 p.m. and again at 7:00 p.m. on Saturday. On Sunday, another Gourd Dance will begin at 1:00 p.m. Grand entry and inter-tribal dancing will start at 8:00 p.m. on Saturday and 2:00 p.m. on both days. Native American crafts will be available for purchase throughout the weekend. Craft and food booths open at 10:00 a.m. on Saturday and 11:00 a.m. on Sunday. A traditional camp feed for all singers, head staff, and dancers and their friends and families will be served Saturday evening at 5:00 p.m. Visitors are advised to bring seating. Treasured Ladies...and Treasured Letters

O

ur mother would have turned ninety this month, having been born in 1929. It is impossible to think of her being that age, for she passed DZD\ ZKHQ VKH ZDV RQO\ Ă€IW\ VHYHQ years old. It will be thirty-three years this August since we lost her; and to this day, , ZLOO VWLOO WKLQN VRPHWLPHV ´, QHHG WR FDOO Mama and tell her‌.â€? It saddens me to see people be disrespectful of their own mothers, knowing, as I do, that mothers don’t last forever. When Mama was alive, she took great joy in her family, her children and grandchildren, and her brother and sister and their families. Her sister Jessie’s children called her Aunt Bunnie and would make a beeline to our house when they came to visit Mimi and Papa. I always thought they really came to see Aunt Bunnie; then the rest of us were greeted after they checked in with her. Mama’s sister, Jessie Lea, was our special aunt; and we always looked forward to visits from her and all her children. After I grew up and had a family of my own, Aunt Jessie and I corresponded the

old-fashioned way, through letters in the mail. She was great letter writer, and her OHWWHUV ZHUH DOZD\V Ă€OOHG ZLWK KHU ZLWW\ REservations on life as well as family news from Yazoo City. One observation I espeFLDOO\ UHPHPEHU ZDV WKLV ´7KH RQO\ ZD\ that teenage boys can get cool is to keep their heads stuck in the refrigerator.â€? Of course, Aunt Jessie’s refrigerator was always full of cold fried chicken and potato salad and an assortment of pies and cakes, so there was more than just cool air drawing the boys in. Whenever she had news of her husband, she would always say something DERXW ´\RXU 8QFOH 3DW 3DWWHUVRQÂľ LQVWHDG of just writing his name. She was a great letter writer and a great card sender even if the card for the occasion was about two or three weeks late, and it might just start RII ´7KLQNLQJ RI <RXÂľ LQVWHDG RI ´+DSS\ Easter.â€? Aunt Jessie was a wonderful aunt, mother, and grandmother; and we still miss her notes, reminding us that she was watching out for us. I really miss her real letters in the mail box; and I think of how people now will

never know the great anticipation of waiting for the mail carrier to come every day, hoping that maybe there might be a letter for you from some distant friend or relative. They won’t know the disappointment of opening the lid on the old mail box, only WR Ă€QG ELOOV RU MXQN PDLO RU MXVW D SODLQ empty box. All information is instantaneous now, so there’s little to anticipate in the United States Mail. Years ago, I wrote an article for our local paper, similar to this one, and sent it on to Jim Minter, who at that time was the editor of the The Atlanta News Constitution in Atlanta, Georgia. He used my article as the basis for one of his nationally syndicated columns, and it was a proud moment in my life. To be approved and recommended E\ -LP 0LQWHU ZDV DNLQ WR (OYLV VD\LQJ ´, think that you can sing.â€? The article I sent told of some old letters found in a trunk, letters that dated back to the late 1800s and concerned Buster’s grandmother Lilly Webb Richardson. Imagine coming upon a treasure like that, personal correspondence from another time. The detail was amazing, and the feelings and anxieties of the young mother were exactly the same as those of parents today. My question then was this: what will the people of the future have to read about their ancestors if there are no letters to connect them to the past? Emails and all that other stuff may be stored somewhere in WKH &ORXG EXW LV LW Ă€QGDEOH E\ RUGLQDU\ people? And if the grid goes down and the power is off for a few decades, will people remember how to communicate the oldfashioned way? I said it then, and I‘ll repeat it now, here in 2019: instant coffee, instant grits, and instant communication leave something to be desired; for something vital has been lost in the transition.
