Over the holidays or any time, it is always nice to kick up that afternoon cup of coffee, giving it a little more “oomphâ€? than your morning coffee. My girls and I love to try out different “add onsâ€? to our coffee, and this one was quite good. My daughWHU -RUGDQ IRXQG WKH Ă€UVW EDWFK D OLWWOH WRR sweet, so she suggested starting out with either 1 teaspoon or ½ tablespoon of syrup since you can always add to it. Your hubby RU VLJQLĂ€FDQW RWKHU FRXOG PDNH WKLV RQ D chilly November morning and serve you in bed. Hear that Jerry??? We found this recipe at Foxandbriar.com.

SIMPLE MAPLE LATTE V\UJLZ Z[YVUN JVɈLL 1/4 cup milk 1-2 tablespoons REAL Maple Syrup (Jordan suggests starting with ½ tablespoon, adding more until you reached desired sweetness.) Pinch of ground cloves Pinch of allspice Pinch of fresh nutmeg Add maple syrup and spices to the bottom of a mug; stir to combine. Pour milk into a microwave-safe jar, and heat for about 30 seconds until warm. Tightly screw lid onto jar and shake for a few seconds until milk is foamy. Pour hot, strong JVɈLL V]LY THWSL Z`Y\W ;VW ^P[O MVHT` milk. Garnish with more spices if desired.

This cake is super easy since the base is a box cake mix. It is even easier if you purchase cream cheese frosting in a can, and then stir in 4-5 tablespoons of maple syrXS 'XULQJ WKLV WLPH RI WKH \HDU , ÀQG P\self running around half crazy; and if I can ÀQG D VKRUWFXW WR PDNH WKLQJV HDVLHU , DP all for it. I used the yellow cake as directed, but I believe the spice cake would have been just as good. I found this recipe at Bettycrocker.com. The original cake called for pecans; and I substituted the walnuts, which I prefer in the fall.

MAPLE-WALNUT BUNDT CAKE Cake ingredients: 1 box Betty Crocker™ Super Moist™ yellow cake mix 2/3 cup water 1/3 cup butter or margarine, softened 3 eggs 1/2 cup maple syrup 1/2 cup chopped pecans, toasted Cream cheese frosting: 1 1/2 cups powdered sugar 3 tablespoons butter or margarine, softened 1 1/2 ounces cream cheese (half of a 3-ounce package), softened [HISLZWVVUZ THWSL ÅH]VYLK Z`Y\W Heat oven to 350 degrees (325 degrees for dark or nonstick pan). GenerV\ZS` NYLHZL HUK SPNO[S` ÅV\Y H J\W Å\[LK [\IL JHRL WHU" VY ZWYH` P[ ^P[O IHRPUN ZWYH` ^P[O ÅV\Y 0U H SHYNL IV^S ILH[ cake ingredients with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan. Bake 47-53 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely—about 2 hours. 0U H SHYNL IV^S ILH[ WV^KLYLK Z\NHY tablespoons butter, the cream cheese, and 3 tablespoons of the syrup with electric mixer on low speed. Beat in enough of the remaining syrup to make a smooth, soft MYVZ[PUN [OH[ ^PSS ÅV^ KV^U ZPKL VM JHRL :WYLHK MYVZ[PUN V]LY JHRL 0M `V\ ^HU[ [V add a little something extra, Healthy Maple Candied Walnuts (recipe on page 13) make a perfect topping. Jordan made these cookies for her children and their friends. She said the cookies were absolutely delicious, and the kids would not quit eating them. However, she made some changes to the recipe. She found the dough to be dry, so she added two splashes of milk (probably about 2 tablespoons) to help form a ball. She did NOT refrigerate them and was very glad she didn’t. The dough was easier to work with, and the cookies turned out so much better. She said the cookies were so good by themselves that she did not put the glaze on them. We found this on 3LQWHUHVW EXW \RX FDQ ÀQG LW DW +XQJU\FRXSOH FRP 7KH recipe below does not include Jordan’s changes.

MAPLE WALNUT SHORT-BREAD COOKIES (Note changes mentioned above.) 1 stick unsalted butter at room temperature 1/4 cup light brown sugar 1/3 cup maple syrup J\WZ HSS W\YWVZL Ă…V\Y 1VYKHU \ZLK ^OVSL ^OLH[ Ă…V\Y 1/2 teaspoon salt J\W ^HSU\[Z Ă„ULS` JOVWWLK 1 tablespoon sugar for topping (Milk--See note above in introduction.)

These nuts as a topping are not a necessity, but they certainly add to the taste and look of the cake. If you want to add them to the top of the cake and if using whole nuts, the directions suggest chopping them. I found this at texanerin.com.

HEALTHIER MAPLE CANDIED WALNUTS 1 1/2 cups walnuts 1/4 cup maple syrup 1 teaspoon vanilla extract, optional 1/8 teaspoon salt (plus up to 1/8 teaspoon more) Get out a piece of parchment or wax paper. Preheat a non-stick pan V]LY TLKP\T OPNO OLH[ 0[ÂťZ PTWVY[HU[ [V WYLOLH[ P[ Ă„YZ[ ZV [OH[ [OL THWSL syrup caramelizes properly. Add the walnuts, maple syrup, vanilla, and 1/8 teaspoon salt to the pan. Stirring almost constantly, cook for 2-5 minutes or until the syrup has caramelized. There should be no liquid left in the pan. The maple syrup coating will seem soft but will harden as it cools. Spoon the walnuts evenly onto the paper and spread. These harden within about 20-30 minutes, but let them cool for about 2 hours before placing them in an airtight container. When not kept in an airtight JVU[HPULY [OL` Z[HY[ [V NL[ H SP[[SL Z^LH[` 0U [OPZ JVU[HPULY [OL` JHU IL RLW[ at room temperature for several weeks.

Optional Maple Glaze: 1 tablespoon unsalted butter, melted [HISLZWVVUZ JVUMLJ[PVULYÂťZ Z\NHY 2 tablespoons maple syrup Pinch of salt Cream together the butter, sugar, and maple syrup. :PM[ [VNL[OLY [OL Ă…V\Y HUK ZHS[ HUK MVSK P[ PU[V [OL IH[[LY Stir in the walnuts, wrap in plastic, and refrigerate for a half hour. Roll the dough out on parchment paper. Cut with a maple leaf (or other) cutter, but leave the cookie in place, and just peel the dough away from the sides. You can keep the cookies pretty close together because this dough will not spread in the oven. Sprinkle the top of the cookies with the tablespoon of sugar, and bake in a preheated 350-degree oven for approximately 16 minutes. The cookie edges will be light brown, but the cookie itself will still be soft. Remove from the oven, and let rest on the baking sheet for a few minutes until the cookies OHYKLU H IP[ ;YHUZMLY [OLT [V H ^PYL YHJR [V Ă„UPZO JVVSing. Cheesecakes are among my family’s favorite desserts, and this one is perfect for fall. It is one dessert that we all have difficulty passing up. If you want it for Thanksgiving or Christmas or just for when friends are over, it is a dish you can make ahead; and as with most cheesecakes if you let it sit, it gets even better. I found this at NYT Cooking.

NEW YORK MAPLE WALNUT CHEESECAKE 3/4 cup graham-cracker crumbs 1 cup plus 6 tablespoons sugar, divided 3 tablespoons unsalted butter, melted 2 1/2 pounds cream cheese [HISLZWVVUZ ÅV\Y 1/2 cup grade B medium amber maple syrup 4 eggs 2 egg yolks 1/4 cup heavy cream 1 teaspoon cornstarch 4 ounces walnut halves (about 1 cup) 7YLOLH[ V]LU [V KLNYLLZ 0U H IV^S TP_ [OL NYHOHT JYHJRLY JY\TIZ ^P[O [HISLZWVVUZ VM [OL Z\NHY" HUK Z[PY ^P[O H MVYR [V JVTbine. Grease the sides of a 9-inch spring-form pan, and sprinkle it with the cracker mixture, shaking any excess back into the bowl. Add the melted butter to the bowl, and toss with a fork until the butter has moistened the crumb mixture. Scatter the crumbs evenly over the pan bottom; and press the crumbs into the bottom, using the bottom of a straight-sided glass. Bake for 10 minutes; remove from the oven and let cool. Raise the heat in the oven to 500 degrees. >P[O HU LSLJ[YPJ TP_LY ILH[ [OL JYLHT JOLLZL \U[PS P[ PZ ZVM[ HUK Å\Ɉ`·HIV\[ TPU\[LZ 4P_ [OL ÅV\Y ^P[O [OL YLTHPUPUN Z\NHY" HUK add it and half the maple syrup to the cheese in thirds, mixing after each addition. Add the eggs and the yolks to the batter one by one, beating after each addition. Add the heavy cream and mix again. Pour the batter into the crust and bake for 15 minutes. How on earth can you go wrong with a brownie, even one that doesn’t have chocolate? These brownies are a change of pace for the fall; and since they are made with oatmeal, you can tell yourself that they are healthy. I found these gems at Stephiecooks.com.

MAPLE WALNUT BROWNIES 1 large egg 1/2 cup rolled oats 1 generous pinch of salt 6 tablespoons butter, melted J\W Ă…V\Y 3/4 cup brown sugar 1 cup chopped walnuts 1/2 cup maple syrup 1 teaspoon vanilla Preheat oven to 350 degrees. Grease an 8x8-inch pan and line with parchment paper. Set aside. There and Back Again: An Art Retrospective he Brookhaven Regional Arts Guild presented a Retrospective of Art by Brookhaven native Derek Covington Smith throughout August 2018. Smith grew up in Brookhaven, Mississippi, where he graduated from Brookhaven Academy. At a young age, he taught himself how to draw and showed an aptitude for illustration and portraiture. By high school, he had started taking private lessons from Vicki Land; and through her guidance garnered several art scholarships and attended Copiah-Lincoln Community College in 2001, concentrating on painting and pottery. Among his teachers there were Tom Ross and Dr. Janet Smith, whom he considers his mentor. For the next sixteen years, he moved around the country. He held his first solo show in Orlando, Florida, and was invited to present his work in the Orlando Museum of Modern Art. Smith has spent the last three years in New York participating in private shows and exhibiting in galleries, and even popped up across the city with a traveling installation of hands to help viewers cope with their burdens by admitting and accepting the emotional baggage they carry. THNK1994 museum took notice of this popcentric artist and signed Smith as one of their three main artists; and with its promotion, he has been published in venues such as Rolling Stone, NYLON, Harper’s Bazaar, and W Magazine. Smith recently moved back to Brookhaven to build his studio and teach what he has learned. This past summer, he hosted three workshops and has been teaching classes downtown since August. BROOKHAVEN, MISSISSIPPI Lincoln County Public Library Art Collection Dedication of Regatta Series Painting by American Artist Stephen Scott Young November 8, 2018 E\ 3ULFH 2¡1HDO orn into a military family in 1957 in Honolulu, Hawaii, Stephen Scott Young now resides in Florida and Eleuthera Island in the Bahamas. Celebrated for his watercolor paintings of the Bahamian friends, neighbors, and residents among whom he has lived and worked for the past quarter century, this American master painter has been featured in numerous solo gallery and museum exhibitions; and his works are now in the permanent collections of many prestigious museums of art across this country. Formally trained at the Ringling School of Art in Sarasota, Florida, Young has painstakingly developed his own unique style; and despite inevitable comparison to the great American watercolorists who came before him—Winslow Homer, Andrew Wyeth, and Thomas Eakins—this artist, upon deeper evaluation, has obviously forged his own path from VWLPXOXV WR H[HFXWLRQ WR XVH RI PDWHULDOV DQG Ă€QDOO\ WR HPRWLRQDO DQG visual impact. 7KDW VDLG <RXQJ¡V HDUO\ WUDLQLQJ DQG SDVVLRQ SHULRGLFDOO\ UHWXUQ to his works in the time-honored technique of intaglio etching, a process made famous by the likes of Rembrandt and Whistler. A modern virtuoso with the needle while creating thousands of lines on copper plates, Scott Young personally considers his print making to be his most accomplished medium. In early 2016, Young became intrigued with the Bahamian traditions regarding the Regatta races. Local residents build their vessels with techniques passed down in their families from generation to generation. Young studied the history, the materials, and the people who make this yearly celebration special. He then explored a new technique of communicating his thoughts and impressions by employing black ink directly to the paper in various cross hatching patterns that he developed with the needle on the copper for his etching images. This base layer he then combined with experimentation using white casein paint (Casein is a milk-based opaque watercolor pigment.) to make washes and textures revealing the boats, the sailors, the ocean, and the island skies. The results so stunned him that he pursued the technique to its end and made remarkable paintings of this historic tradition. The Greenville County Museum of Art in Greenville, South Carolina, is scheduled to have a special exhibition of the Regatta Series in 2019. 8SRQ FORVH H[DPLQDWLRQ RQH FDQ VHH WKH LQĂ XHQFH RI <RXQJ¡V own etching technique and marks in these Regatta paintings as the crosshatching speaks clearly to his long-time use of the ink shapes in making pattern and composition through his printmaking. His watercolor skills and unique capabilities come through as one examines the use of casein glazing in and around the pen and ink marks.

The Lincoln County Public Library art committee was thrilled to locate and purchase this Stephen Scott Young original Regatta Series painting for the permanent collection, thanks to funds provided by the Dille Grant of the Mississippi Arts Commission. It is the fourth acquisition to the collection and is sure to add to the unique quality and diversity of the holdings. This new work will be unveiled at 5:30 p.m. on November 8, 2018, at the Lincoln County Public Library in Brookhaven. There will be a gallery talk by Dr. J. Kim Sessums, artist, collector, and personal friend of Stephen Scott Young. Having spent time with the artist in his studio and having contributed to publications on the work of Stephen Scott Young, Sessums will place the artist in the context of the $PHULFDQ ÀJXUDWLYH WUDGLWLRQV DQG GLVFXVV KLV ZRUNLQJ PHWKRGV 7KH public is invited.
