orking in Sydney’s CBD as we do, and of course putting in long hours bringing you the best magazine we can, sometimes it feels as though we only see the world – and seasons – change from our 12th floor offices. So nothing says the start of summer at Woman’s Day like the Sydney Night Noodle Markets being set up across the road! For two weeks every October we can see the crowds and the food vans, and smell the yummy food… so this year I’ve vowed to walk over and grab something delicious. Of course if I can’t, there are always the tantalising recipes in our own pages – from our own favourite street food (that banh mi looks amazing!) to our fresh and tasty weeknight dinners, and those scrolls… yum!

Her dad Joe revealed she had a nose job in 2006 to help cure a breathing problem, but experts believe it’s not the only work Ashlee, 32, has had done. “It looks like she may have had antiwrinkle injections to create an eyebrow lift, soften her forehead and frown lines,” says Dr Stephen Lowe of Total Face Group, who has not treated Ashlee. She may also have had dermal fillers “to define her cheeks and enhance her lips”. Ashlee says, “[Plastic surgery] is a personal choice. I believe if somebody chooses to do plastic surgery, it [should be] for yourself, not for anyone else.”

In fact, Woman’s Day can reveal she’s so thrilled about their engagement, she’s moving to London along with Meghan! “Doria is part of the package,” discloses an insider. “Meghan can’t imagine not having her mum close by, and she wants her to experience royal life and the adventure she’s about to embark on. With an engagement announcement just weeks away, it’s rumoured Meghan has began moving her belongings into Kensington Palace. And since Harry’s home inside Nottingham Cottage is not much more than a pied-a-terre, the Queen is set to give him a new apartment better suited to raising a family. Woman’s Day can reveal the Queen has offered Harry and Meghan apartments eight and nine at Kensington Palace, Harry and William’s childhood home. It was given to Diana and Charles after their 1981 wedding, but in recent years has been used by members of the Queen’s domestic staff. “Harry’s determined to turn it into the perfect family home for them and their kids,” the insider says.
Meghan is said to be thrilled there’s a baby coming into her life sooner rather than later – Woman’s Day can exclusively reveal that her half-brother Thomas Markle Jr is expecting a baby with his fiancee Darlene Blount next year. Thomas – who already has sons Tyler, 27, and Thomas III, 25, from a former relationship – is the son of Meghan’s father Thomas Markle Sr. It’s believed Darlene, 37, is four months pregnant, bringing hope to a family that’s seen its fair share of troubles. In January, Thomas, 51, was arrested for allegedly holding a gun to Darlene’s head while intoxicated. ccording to insiders, Stu has been “obsessed” with Sophie for years – so it’s no surprise the pub mogul posted about his crush on social media ahead of appearing on the show. In Instagram posts that have since been deleted Stu, 44, shared a magazine page featuring Soph with the caption “#glamour”. And in another post, he uploaded a photo of Sophie on the first episode. “Very enjoyable,” he wrote.
As if he hadn’t made his feelings plain enough, he then allegedly told a friend he wished she was his girlfriend. Meanwhile, as a dad to four daughters, it’s important to Stu he gets their seal of approval when it comes to a new partner. And he already thinks his girls will love Sophie! “She’d make a great stepmum. PATTI’S MIR The much-loved star suffered a shocking fall that could have killed her – just months after she almost lost Bert

t was meant to be a relaxed family get-together after a rollercoaster year – including a secret health crisis with one of Patti and Bert Newton’s young grandchildren – that left Australia’s leading showbiz family feeling under enormous strain. Patti and Bert invited daughter Lauren and her husband, Olympic swim star Matt Welsh, to bring their four beloved grandchildren down to the beach house on Victoria’s Mornington Peninsula that has been their haven. But their own personal paradise almost became the scene of their worst tragedy yet last week when Patti slipped on wet tiles around their pool and smashed her head. Fearing the worst, Bert and Lauren rushed Patti – with her head wound still bleeding – to Victoria’s Frankston Hospital, after they were told not to wait for an ambulance. Once there, she was tested to see if she had suffered neurological damage. “Poor Bert was terrified. He was worried she had injured her brain and may have suffered a terrible injury,” reveals a family friend. “He and Lauren tried to keep calm, but there was quite a lot of blood and they moved very quickly to save her.” But brave Patti, 72, proved to be an “absolute trouper”, even posting a shot of herself on Instagram holding her hand up in a peace sign while flat on her back in a neck brace in her hospital bed following the harrowing ordeal last Tuesday. “Had a bad fall and hit my head,” she confirmed. “I’m

‘There was a lot of blood... they moved quickly to save her’ in public, she’s very bruised and battered from the fall. But she’s hugely relieved that she suffered no brain damage, as she knows 79-year-old Bert would not cope without her by his side. “They are the most loving couple in the world and Patti still does absolutely everything for Bert,” says the friend. “We’re all incredibly happy it’s turned out the way it has. The Newtons have had enough pain in their lives.”

Just last month, Bert admitted he considered every day a blessing after he was told he had just a 50/50 chance of surviving the quadruple bypass heart surgery he underwent in November 2012. “Every morning is a bonus,” Bert, who was also rushed to hospital with pneumonia earlier this year, told the Herald Sun. “I wasn’t close to death, although on a couple of occasions I almost felt it,” he later quipped. “Every morning when I wake up I read the death columns
in the paper, and if I am not there we get up and away we go again. I think you have to go through it to realise that [with] we mortals, it is a fine line and I am grateful.” With the recent stress on Patti combined with her head injury, concerned friends are also hoping the transient global amnesia, which she has suffered from periodically since 2009, doesn’t strike her again. “She doesn’t deserve anything more right now,” says her friend. “She needs a break!” WD 19

According to our on-set spies, the mother-of-three is still doing her best to come to terms with what happened on the show and feels completely alienated. “The girls [Hannah, Sarah and Elyse] made no secret of the fact they didn’t want to work with Georgia. Pictures of the couple holding hands and playing with their four children at the opening of Lego House in Billund show they’re even happier than ever – much to the relief of the entire royal family, who are dealing with a country in turmoil. In fact, Denmark’s monarchy is in crisis, making it more important than ever for Mary and Fred to present a united front. Prince Henrik, 83, started the problem – embarrassing the royal family with angry outbursts about his wife Queen Margrethe, 77, even stating he did not wish to be buried next to her. However, when it was revealed he has dementia, the delay in the announcement of that illness only served to destroy the Danish royal family’s public image further. In fact, a survey shows that right now one in three Danes wants to change the royal house’s influence – with lower levels of trust in the monarchy than ever. A worried Queen Margrethe has since called on Mary, 45, and Frederik, 49, to patch up their differences and bolster the royal family’s commitment to the Danish people – even taking the throne if needed. In recent months, the crown couple looked to be drifting apart. “In hindsight, it was stupidity on a grand scale. But as a stage and TV actress I felt a need to be thin. I never saw myself as a beauty... but having been very sporty as a kid and into my teens, swimming and diving, as I got older I feared becoming fat.” Judy happily admits falling in love with former Hong Kong police detective-turned-actorauthor Bruce Venables in 1985 helped her conquer bulimia and her body image issues.

As they warmly embrace, Bruce, 68, still seems as smitten with Judy as he was when they fell in love all those years ago. “She never changes, that’s what I love about Judy, plus we both inspire each other, whether it be with our work as writers, or if either of us are momentarily feeling down,” he says.
THE WRITE LIFE “Sometimes Judy might look in the mirror and say, ‘Oh, I’m looking old – should I have a little something done?’ And I’ll say for God’s sake Jude, don’t. Be yourself, and we fall about laughing.” Judy, who recently had a double hip replacement operation, is now arguably better known for her novels than her acting career. “I started writing to pass the time between scenes on Home And Away, scribbling notes on the backs of scripts,” she says. “I try to write a new book every two years. Our house is a constant clatter of keystrokes – Bruce has written a stunning crime trilogy, and has just released his fifth novel, Eureka Run.”

“We met on a blind date,” she says. “It was like a crazy comedy from the start. Bruce was deliciously laconic and I was ridiculously hyperactive. Chalk and cheese. At the end of the night, Bruce offered to drive me home, and we’ve been together ever since. “We wed in a backyard ceremony at our Bondi home in 1988, so next year we celebrate 30 years of marriage,” smiles Judy, famed for playing some of TV’s most iconic roles, including bisexual vixen Vicki Stafford on The Box and her 13-year stint as Ailsa Stewart on Home And Away. Now one of Australia’s favourite authors after selling more than one million books worldwide, Judy says she’s always tackled life, love and work with passion, but since turning 70 there’s an extra exuberance to everything she does. “My godmother lived to be 103, and she always said age was only a number, and that’s just the way Bruce and I see life,” she says. “What keeps you feeling young comes from within, and lots of laughter.” Judy says in the early days of their celebrated romance they made a pact to make one another laugh every day. “Bruce never stops making me laugh. He has such a gift,” she says.

t was supposed to be the trip of a lifetime for Renee and Chad Cary. The young Aussie couple were doing a 24-day trip across the States to celebrate their first wedding anniversary. Little did they realise they’d be caught up in the terror of the Las Vegas massacre as gunman Stephen Paddock opened fire in the worst mass shooting in US history, killing 59 people and wounding 527.

“It’s the sort of thing you see on TV but you never think it’s going to happen to you,” Renee, 28, tells Woman’s Day exclusively. “We just thank our lucky stars that someone was watching over us and we were the lucky ones.” The couple from Spring Farm, 65km south-west of Sydney, had enjoyed a night out at the Luxor

They were walking back to Caesars Palace, where they were staying, when the first shots rang out shortly after 10pm. “We thought it was fireworks from the festival, so we were looking up in the sky thinking, ‘Where are they?’” says Renee. Soon after, there was a second burst of gunfire. “We still didn’t really know what was happening, then a few people started screaming that there was a shooter,” Renee recalls. “Even then, because so many people walk around intoxicated in Vegas, we weren’t really sure what to believe. We still didn’t take it seriously, but we followed the crowd back into the Luxor and played the pokies. “Then we could hear shots again and suddenly hundreds of people ran in. There were people everywhere screaming. We took the elevator up to the rooms to find somewhere safe to hide, and we were walking the corridors banging on the doors begging for someone to open up. At this point I started freaking out and burst into tears.” Somehow they managed to follow a small group back downstairs, where they bumped into a hotel engineer coming out of the spa. He quickly ushered everyone into the spa lobby. “I said to Chad, ‘Are we trusting this man?’ I didn’t know who to trust,” Renee explains, her voice breaking. “We didn’t know how many shooters there were, we didn’t know where they were.

TWO ONES’ the crazed Vegas gunman “It did run through my mind that this could be it. We went in and sat down and were told to stay quiet and stay down. We all huddled up together and came up with a plan for what to do if he came through the doors.” At this stage, the only news the couple were getting was from social media reports.
SCARED AND IN HIDING “We heard that there were three shooters – one at the Bellagio, a shooter in the Mirage and shots fired at New York-New York,” says Renee. “By 12.30am we had no idea what was true and what wasn’t. We were tired and terrified.” When the group was moved to a room with a TV, they finally learned what had happened.
‘It did run through my mind that this could be it’ “Seeing it on the news, we realised just how close we were to being in his line of fire,” Renee reveals. “We could see the Mandalay Hotel from where we were standing looking up to the sky to see the fireworks. If he had turned his angle just a bit, who knows what could’ve happened.” It was only once a Las Vegas sheriff came on TV to say the suspect was deceased, and that police didn’t believe there were any other shooters, that Renee and Chad, 29, realised that they were going to be OK.
“When we finally felt it was safe to leave, at about 4.30 in the morning, it was surreal,” says Renee. “There were people wrapped up in sheets and towels against the cold. The strip was closed and there were people everywhere trying to get home.” Renee is heartbroken for the victims – but determined the terrifying ordeal won’t stop her getting on with life. “These things, as awful as they are, you can’t stop living. You can’t not go on holiday, or not go to a concert because you’re scared that something like this is going to happen.”

Vegas night of horror On the evening of Sunday, October 1, around 22,000 fans gathered to enjoy the Route 91 Harvest, a three-day country music festival in Las Vegas. Just after 10pm, rapid-fire gunshots rang out
and panicked concertgoers began running for their lives, jumping over barricades and climbing under cars to shelter from the bullets. In 72 minutes, 64-year-old Stephen Paddock had killed
at least 59 people and injured 527. The high-flying gambler shot into the crowd from the 32nd floor of the Mandalay Bay Resort and Casino. When police broke down the door, they found he had taken his own life. There were 23 guns and thousands of rounds of ammunition in the room. Paddock’s live-in partner, Australian Marilou Danley, from the Gold Coast, was out of the country at the time of the massacre. However, she was met by the FBI upon her return to the US. here is nothing more fun than participating in a team sport with your mates. And for the past two years, soccer-obsessed Marc ReichlerStillhard, who has Down syndrome, enjoyed playing for Yamba’s under-14s team as an extra player with the agreement of the entire competition. Marc’s teammates love and accept the 16-year-old for who he is. They know when he’s on the field, he enjoys the experience of being with his mates – running around in
the background and enjoying the odd kick and dribble. “Marc has a heart as big as Phar Lap’s – he’s always positive and brings joy to his teammates,” says his coach Rod Menzies. However, after a complaint was lodged by a parent of a rival team to the NSW’s North Coast Football, they have ruled the team must only field 11 players. “Marc is shattered – sport is his life,” says Marc’s mum Enid. “He knows if the ruling sticks his playing days are either over or will be very limited.”

Marc’s future playing soccer may be in jeopardy, but his school, McAuley Catholic College in Grafton, celebrates him for what he is. If the school can achieve these things, why can’t sport do likewise?” WD 39

Bush doctor Molly Shorthouse grew up in Arnhem Land and is committed to bringing modern medicine to the outback

A
s a highly qualified doctor and mental health expert, Molly Shorthouse is the kind of woman you’d expect to be straight down the line with her own health. But when she started having contractions announcing the impending arrival of her first child, son Noah, in October 2009, she didn’t follow her own advice and head straight to hospital. Instead, the bush doctor told her husband she needed to get to the beach, not far from her home in the remote Nhulunbuy region of East Arnhem Land in the NT. 40 WD
“My husband Aari was worried but followed my wishes,” Molly tells Woman’s Day. “The urge to be near the water was overwhelming.” So Aari took Molly to the beach, where she walked its shore, falling on her hands and knees to breathe through another excruciating contraction when it hit. “I was focused on getting through the pain when Aari yelled, “Molly, Molly, quick look at this. Look at this!” Molly turned to see a huge hammerhead shark swimming along the shoreline. Several hours later, as she gave birth to a healthy boy in the local
Gove District Hospital where she worked, she remembers everyone in the room experiencing the huge surge of energy she did, a spiritual wave she says has brought her even closer to the Indigenous Yolngu people of the area and their “extraordinary” culture. “The Yolngu believe my totem is Mana, meaning shark,” Molly says. “I think they are right – my son Noah has always been absolutely obsessed by sharks.” An awareness and respect for Aboriginal culture was something Molly and her siblings – twin sister Alice and her two younger brothers Daniel and Josh – grew up with as the third generation of her family living on the fringes of the small community of Humpty Doo, about 40km from Darwin. “We had a wonderful childhood,” she says of her life with “hippie” parents in one of Australia’s first solar communities with six other
families living sustainably. “We’d say bye to Mum in the morning and she wouldn’t expect to see us until dinner. We spent our time exploring the bush and making cubbyhouses. We had wallabies instead of puppies, and a giant python lived happily in our ceiling.” Molly, 40, never intended to be doctor – her parents were much

And even more, we need to be able to do it alone, without the backup of surgeons and intensive care up the hallway.”
After meeting Aari, 44, a pilot working in Townsville and Papua New Guinea, Molly followed him to PNG but it wasn’t long before they returned to Australia and Nhulunbuy, some 650km east of Darwin and 1000km from Cairns, the home of the Yolngu people. “I can’t explain how vital the role of elders are to someone’s overall health, and the importance

of being on their land,” Molly says. “I’ve seen young men on the verge of suicide taken to the homelands by elders, coming back strong and healthy again. “Suicide didn’t exist in their cultures prior to colonisation but today it’s the highest in the world. It’s horrifying. Aboriginal and Torres Strait Islander people have much higher rates of mental illness, chronic disease and incarceration than other Aussies.
“I learned so much,” she says. “I felt like I was standing on the precipice of a vast unknown, an immensely complex and sophisticated culture, the longest surviving culture on the planet. “I tell medical students and junior doctors, ‘Don’t come here to help, come here to learn.’ It makes you start from a place of respect, not cultural arrogance that our medical knowledge is somehow superior.”

F 3cm piece ginger, thinly sliced F 1/3 cup tom yum paste F 2 tbsp fish sauce F ½ cup lime juice F 1/3 cup brown sugar F 200g dried rice stick noodles F 400g baby buk choy, quartered F 200g shiitake mushrooms, thinly sliced F 400g chicken breast fillets, thinly sliced
F 3 small red Thai chillies, thinly sliced F ¼ cup coriander leaves 1 Place stock, water, lime leaves, lemongrass and ginger in a large saucepan. Bring to boil. Reduce heat and simmer, covered, 5 mins. Remove lemongrass and ginger with a slotted spoon. Stir in paste, return to boil. Stir in fish sauce, juice and sugar.
2 Meanwhile, place noodles in a large heatproof bowl. Cover with boiling water, stand 5 mins until tender. Drain. 3 Add buk choy to stock mixture with mushrooms, chicken and two of the sliced chillies. Simmer 4 mins until chicken is cooked through. Stir in noodles, simmer until hot. Season to taste. 4 Serve topped with remaining chilli, coriander and a squeeze of lime, if liked.
FRYING PAN BEEF & SPINACH LASAGNE SERVES 6 PREP 15 MINS + RESTING COOK 15 MINS COST $$$$$ F 1 tbsp olive oil F 1 large onion, finely chopped F 2 garlic cloves, crushed F 375g packet fresh lasagne sheets F 60g baby spinach leaves F 750g bottle bolognese pasta sauce F 1 cup water F 1 ½ cups firm ricotta, crumbled F 1 ½ cups grated pizza cheese F 1/3 cup small basil leaves 1 Heat oil in a large, deep frying pan over medium-high heat. Cook onion and garlic, stirring, 5 mins until onion softens. 2 Meanwhile, tear lasagne sheets lengthways into strips.
Put long strips aside, save any small broken pieces. Add small broken pasta pieces and spinach to pan with onion and stir gently to combine. Pour combined pasta sauce and water into pan. Mix gently to combine. 3 Place long pasta strips, standing upright on long sides, in the mixture. Sprinkle with both cheeses. Bring pasta mixture to boil over high heat. Reduce heat to low. Simmer 2 mins until pasta is tender. 4 Preheat grill. 5 Grill lasagne for 5 mins until cheese browns. Cover and stand 5 mins before serving. Top with basil.

If your pan is not ovenproof, cover handle with layers of foil to protect it under the grill.

1 Thread pork onto 8 x 23cm metal skewers. Set aside in a shallow dish. 2 SATAY SAUCE Stir all ingredients in a medium bowl until combined. Pour 1 cup over skewers, turning to coat. 3 Cook skewers on a heated oiled grill plate (or grill or barbecue) over medium-high heat 10 mins until pork is cooked through. 4 Meanwhile, boil, steam or microwave buk choy until tender. Drain. 5 Microwave rice according to packet directions. Stir in coconut and onion. Season to taste. 6 Serve skewers with buk choy and coconut rice. Top with coriander and accompany with reserved satay sauce for dipping and lime wedges. 43

Oil a shallow 2.5-litre (10-cup) ovenproof dish. 2 Coarsely grate zucchini. Combine zucchini, ricotta, parmesan, nuts, egg yolks, garlic, lemon thyme and chilli in a medium bowl. Season. 3 Spread passata into dish. Season. Spoon zucchini mixture into uncooked pasta shells and place in dish. 4 Cover dish with foil. Bake 30 mins. Uncover and bake a further 15 mins until pasta is tender and cheese lightly browned. Serve pasta topped with extra lemon thyme leaves. 44 WD
For a milder flavour, reduce the chilli used. Serve with a green salad.
1 Cook noodles according to packet directions. Drain. 2 Heat half oil in a wok over high heat. Stir-fry lamb, in batches, 3 mins until browned. Remove from wok and cover to keep warm. 3 Heat remaining oil in wok. Stir-fry garlic and chilli 1 min until fragrant. Add fish sauce, soy sauce, sugar and threequarters of lime leaves. Stir-fry until combined. 4 Return lamb to wok with noodles and tomato. Stir-fry 3 mins until tomato starts to soften and is heated through. Serve topped with Thai basil, peanuts and remaining lime leaves.

is crisp. Drain on paper towel. 3 Cook pasta in a large saucepan of boiling salted water 8 mins until tender. Drain, reserving 2 cups cooking liquid. Wipe saucepan clean. 4 Melt butter in cleaned pan. Cook mushrooms over medium heat, stirring, 5 mins
until golden and tender. 5 Return pasta to pan. Add chicken and peas. Stir in feta, cream, tarragon and reserved cooking liquid. Cook, stirring, 5 mins until creamy and heated through. Season to taste. 6 Serve pasta topped with prosciutto and leaves. 45

tortillas. Roll to enclose filling, folding in ends. Place burritos in dish and sprinkle with remaining cheddar and remaining cayenne pepper. Bake 25 mins until lightly browned. 4 Top burritos with remaining coriander. Serve with lime.

Stand 5 mins.
2 GREEN CHILLI RICE Rinse rice under cold water until water runs clear. Drain. Combine rice with water, chilli, zest and remaining coconut milk in a medium heavy-based saucepan. Bring to boil, stirring occasionally. Reduce heat and simmer, covered tightly, 15 mins until rice is tender. Remove from heat. Stand, covered, 5 mins. Season to taste. 3 Meanwhile, heat oil in a large frying pan over medium-high heat. Cook carrot, capsicum and onion, stirring, 3 mins until softened. Add stock to pan and bring to boil. Place fish mixture on top of vegetables. Cook, covered, 10 mins. Uncover and add peas to pan. Cook 5 mins until fish is cooked through. 4 Serve fish with vegetable mixture, rice and coriander.

Replace polenta with sweet potato mash, if you prefer.

Fry bacon 3-4 mins until golden brown. Transfer to bowl and cool. 3 Preheat oven to hot, 200°C. Bake blind pastry case 10-12 mins until golden. Remove filling and bake a further 5 mins. Remove. Reduce oven to moderate, 180°C. 4 In a large jug, whisk eggs and cream together. Stir in green onions and mint. Season. Pour into pastry case. Top with bacon, zucchini, peas and feta. 5 Bake 30-35 mins until set in centre. Serve topped with mint leaves. Accompany with salad.

Stir in paprika, and cook 1 min. 2 Add rice to pan, mixing to evenly coat grains. Stir in stock and bring to boil. Reduce heat to low. Simmer, covered with a tightly fitting lid, 12-15 mins, until all liquid is absorbed and rice is tender. 3 AVOCADO SALSA In a bowl, combine all ingredients. Season. 4 Stir peas and tomato through rice. Season and cook, stirring 1-2 mins to heat through. Serve with parsley and accompanied with avocado salsa and lemon wedges.

Oozing with yumminess – and oh-so-easy to make! BLUEBERRY, APPLE & CINNAMON SCROLLS MAKES 9 PREP 20 MINS + PROVING COOK 45 MINS Sift 3 cups bread flour and 1 tsp salt into a bowl. Stir in 2 x 7g dried yeast sachets and 2 tsp caster sugar. Chop 100g butter and add to 1 cup warm milk, allowing it to melt. Whisk in 1 egg. Add to flour mixture and mix to a soft dough. Turn onto a floured surface and knead 2-3 mins until smooth. Transfer to a greased bowl and set aside 45 mins, covered, until doubled in size. Preheat oven to 180°C. Grease and line a large oven tray. In a bowl, beat 100g softened butter, ½ cup brown sugar and 2 tsp ground cinnamon together. Set aside. Punch dough and transfer to a floured surface. Knead gently. Roll out to a 20 x 30cm rectangle. Spread butter mixture over. Scatter with half punnet blueberries, 1 small chopped apple and ½ cup chopped pecans. Roll dough up from long side to form a log. Trim ends. Cut into 9 equal slices. Arrange cut-side up on tray. Brush with milk. Bake 40-45 mins until golden. Allow to cool 5 mins and transfer to a wire rack. GLACE ICING In a bowl, beat 1 cup icing sugar, 2 tbsp warm water, 5g butter and a few drops of pink food colouring with a wooden spoon. Drizzle over scrolls. Serve with remaining blueberries.

CARAMEL CUSTARD SCROLLS MAKES 8 PREP 20 MINS + PROVING COOK 45 MINS Prepare as for Blueberry, Apple & Cinnamon Scrolls, adding ¼ cup custard powder with the flour and ½ cup craisins with the yeast and sugar, to first prove. Preheat oven to 180°C. Grease a 22cm round springform cake pan. Punch dough. Knead gently on floured surface. Roll out to a 20 x 30cm rectangle. Spread with ½ cup thick custard. Scatter with combined 1/3 cup each toasted flaked coconut and chopped hazelnuts, 100g each chopped jersey caramels and chopped white chocolate. Roll dough from long side to form a log. Trim ends. Cut into 9 equal slices. Arrange cutside up in pan. Brush with milk. Bake 40-45 mins. Cool in pan 5 mins and place on wire rack. CARAMEL ICING Stir ½ cup brown sugar, 60g butter and 2 tbsp milk over low heat until sugar dissolves. Add 1 cup pure icing sugar. Drizzle over scrolls. Sprinkle with chopped hazelnuts and coconut flakes.

MAKES 4 (8 SMALL) PREP 20 MINS COOK 1 HOUR 10 MINS F 1kg half lamb leg roast F 2 garlic cloves, finely sliced F 1 tbsp oil F grated zest, 1 tbsp juice, 1 lemon F 1 tsp dried oregano F 8 small pita bread F sliced lettuce, tomato, red onion, cooked oven fries, to serve TZATZIKI F 1 cucumber, seeds removed, grated F 200ml tub Greek yoghurt F 1 tbsp lemon juice F 1 small garlic clove, crushed 1 Preheat oven to hot, 200ºC. Sprinkle over yeast. Cover and set aside 5 mins until frothy. 2 In a large bowl, sift flour and salt together. Make a well in centre. Add yeast mixture and yoghurt, mixing
to form a dough. Turn onto a floured surface and knead 10 mins until smooth and elastic. Transfer dough to an oiled bowl. Cover and set aside in a warm place until doubled in size. 3 TOPPING Heat a chargrill pan on high. Cook chillies 4-5 mins, turning until skin blisters. Transfer to plastic bag for 5 mins to loosen skins. Peel off skins and remove seeds, discard both. Transfer chilli flesh to a food processor with remaining ingredients. Pulse until finely chopped. 4 Preheat oven to 220°C. Punch dough down. Divide into 4 pieces. On a floured surface, roll each piece out to a thin 16cm round. Transfer 2 bases to each of 2 floured oven trays. 5 Spread bases with lamb mixture. Season. Bake 8-10 mins until topping is cooked and bases are golden. 6 Serve straight away topped with extra chopped parsley and yoghurt.

SERVES 8 Place 200g plain flour, 120g cold unsalted butter, 30g caster sugar and ¼ tsp salt in a food processor. Blitz until fine breadcrumbs. Add ½ tsp white wine vinegar and 3 tbsp water. Blitz and transfer pastry to work surface. Shape into ball and flatten into disc, wrap in cling wrap and chill for at least an hour. Preheat oven to 200°C. Allow dough to rest at room temperature for 30 mins and place on a lightly floured surface. Roll out to 3mm thick and cut out 8 circles, 14cm wide. Transfer one circle at a time to the 8 x 9cm-wide fluted tins and gently press pastry into corners. Place in fridge for 30 mins. Line pastry bases with baking paper and fill with baking beans. Bake for 18 mins until pastry is golden brown at the edges. Remove beans and paper.

ou probably know Fiona Falkiner from her time on The Biggest Loser, where she became everyone’s favourite contestant in 2006, before returning to host the show in 2015. However, a lot has changed since we watched Fiona’s weight-loss journey, which saw her lose 30kg. Nearly 12 years on, the 34-year-old plus-size model has worked all over the world, returned to our TV screens on The Biggest Loser

My other option is 1 poached egg with smoked salmon, or 1 slice of bacon and spinach on a piece of sourdough or wholegrain toast.”
Transformed and most recently launched her own activewear line in collaboration with Autograph. So, how is she looking so great right now? “I’m not a gym junkie, so I have to continuously keep myself motivated,” she says. “There are days I don’t want to get out of bed and exercise, but I know how good it is for my

Everyone has a set point. Think of the weight you’ve been for most of your adult life. This is the weight your body is most comfortable at, and it is the weight your body will defend. Whenever you put your body under stress, for example with dieting, it will work back towards its set point and protect this level of fatness. The only way to reset your set point is to trick it into a new set point by using the interval weight-loss approach.

Doing the same exercise every day is fine for general heart health benefits but it certainly won’t help you achieve your weight-loss goals. Go on a different walking route, incorporate some hills into your walk, or break up your walk with small bouts of jogging to increase your heart rate and ensure you are getting the variety you need for your weight-loss goals.

Interval weight loss is a scientifically proven way to trick your body into a new set point so you shred the kilos and keep them off forever. Wombat wanted an edible garden, something that served a purpose, but the backyard wasn’t big enough so we had to think small scale. Sticks loves bamboo and bonsai, and we also wanted to Hand-cut put a pool in there, so our idea was to keep a little Fire Pit bit of us out there too. When it comes to designing $3000 yours, make sure it’s functional, but also do what Whipps Design you love, not what you think people want to see.

Did Nanuq suffer? AMANDA SAYS Nanuq comes through and says he has passed over and tells me he was very close to Lena’s daughter. He knows she still grieves for him, even though he passed away almost two years ago. Nanuq tells me Lena’s daughter keeps a lock of his hair in a bag. He still loves his family very much and is happy they’re holding on to his ashes. He tells me the family got him when he was a puppy. Nanuq would like Lena to know it wasn’t her fault they didn’t find the tumour for a while. He was only seven years old when he passed over from bone cancer. He had osteosarcoma in his leg, and by the time it was found, it was too late. Nanuq tells me he also had a tooth problem, which kept bothering him. Lena’s parents come through with two other pets. Lena’s dad is personal and private, but Lena’s mum is lovely and a real animal lover. They’ve brought a dog they owned a long time ago called Biffa and a cat that belonged to Lena’s mum.
Even though Nanuq didn’t know Biffa when they were alive, she was there when he passed over and the two are really close now. LENA SAYS I reached out to Amanda because I wanted to find out if we’d left it too long before putting our beautiful Nanuq down. He was my daughter’s dog and the whole family loved him very much. It was extremely difficult to make the decision to put him down and I wanted to know if he was suffering or if we’d chosen the right time to end his life. I was completely blown away when Amanda mentioned Nanuq’s tooth trouble. We were planning to get the tooth removed,

This is so sad to see because he’s very intelligent, but he wants Ellie to know this and she’s not at fault. He really does appreciate everything she’s done for him. Australia’s quietest cafe Melbourne’s Tradeblock Cafe founder and teacher Amanda Joyce takes us behind the counter of what could be the country’s quietest and happiest cafe, where the chatter is carried out in animated sign language (Auslan). “It really is a magical and fun place to work and learn about the hospitality industry, workplace and life. The cafe came about because we wanted to establish an authentic workplace, which gave Victorian College for the Deaf students a practical way to learn beyond the classroom,” Amanda says.

orget falling in love with his female co-stars, Martin Clunes only has eyes for the show’s fourlegged friend, Buddy! Despite playing dog-hating grump Doc Martin – who has to pretend he loathes the mongrel on the show – Martin says as soon as the cameras stop rolling he’s quick to make a fuss of the 10-year-old dog, whose real name is Dodger. This season sees the arrival of another mutt, Bob (real name Paddy) who arrives on the Doc’s doorstep looking to move in. “The producer saw Paddy with the dog trainer when she’d just got him two years ago, and knew we had to find a role for him in this series,” says Martin, who has three dogs of his own – Jimmy, a Jack Russell; Penny, a Chihuahua x Jack
Russell; and Heidi, a cocker spaniel who recently gave birth to seven puppies! “You can see all this youth and exuberance in Paddy’s eyes. Dodger is still fantastic and keeps going to the end of the day, but Paddy is just mental and beautiful. I’ve fallen for both of them.” Martin says the rescue dogs have been trained to know he’s just acting when he’s being cross with them, so they’re not frightened of him on set. Of his role playing the curmudgeonly medic, Martin says it’s “the best job in telly”. “What could possibly match this: staying in the West country, surrounded by dogs and people I like? Tennis champ Serena Williams has revealed her newborn daughter’s initials are a tribute to her Australian Open win earlier this year. The star – who welcomed her little girl Alexis Olympia Ohanian Jr last month – tweeted, “Fun fact my daughter’s initials are AO as in the Aussie Open she won with me.” Serena, 36, was pregnant during her 23rd grand slam win in January.

Chris ‘fell back in love’ with wife Elsa Even Chris Thor Hemsworth’s marriage isn’t immune to problems. The actor, 34, confessed his career has put a strain on him and Elsa Pataky. “My wife and I fell in love, had kids, didn’t really see each other for a few years, then fell back in love,” he said.
