EVOLUTION OF MT. BOUCHERIE ESTATE WINERY IS INSPIRATIONAL

Unlike its namesake volcano (that hasn’t been active for more than 60 million years), Mt. Boucherie Estate Winery is erupting with exciting initiatives. The architecturally stunning new Wine Experience Centre, which opened this year, is tangible evidence of Mt. Boucherie’s re-envisioning.

The continuous evolution of Mt. Boucherie can be seen in this flagship modern façade which dramatically features the surrounding vineyards and hills of West Kelowna and Okanagan Lake.

SUSTAINABLE VINEYARDS

The evolution begins in the vineyards, where the roots run deep and their legacy is highly respected and nurtured. Brett Thiessen, manager of viticulture, is proud to steward some of the oldest vineyards in British Columbia. They grow the best quality vinifera grapes on estate vineyards in the Okanagan Valley, Golden Mile Bench and Similkameen Valley, without the use of synthetic chemicals. The sustainable practices go beyond growing grapes to a partnership with the Okanagan Similkameen Stewardship Society (OSS) on Mt. Boucherie’s 80-acre property on the bank of the Similkameen river. Mt. Boucherie recognized the area as a sensitive riparian zone where deer fences and infrastructure were blocking wildlife. It’s here, in a cold spot on a floodplain, that Mt. Boucherie removed original posts, wires and vines from the previous owners.

In addition to restoring the nature corridor, catch ponds for floodwaters are being dug to create a breeding ground for the endangered spadefoot toad. It’s a wholeecosystem approach to increase beneficial biodiversity around Mt. Boucherie’s new vineyard and return space to crucial species of the area. Once completed, some 10 to 15 acres will have returned to natural habitat.

Thiessen maintains that sustainability is more than running a tight budget and being profitable by growing on every acre. “I plan to work with nature instead of against it, restore and give healthy land back to wildlife, encouraging them to be around our vineyard instead of inside it. It’s our way of giving some of it back and benefiting the entire ecosystem.”

The OSS partnership assists in identifying vulnerable species of plants and animals and monitoring the progress. OSS staff and volunteers help clean up the current infrastructure, and source and plant native tree and grass species. To learn more about OSS’s initiatives, visit osstewardship.ca/about.

WINE COUNTRY ACCOMMODATIONS

Watch for three exciting new private guest houses anticipated by October at Mt. Boucherie, with shuttles to and from the airport. The inspiration for these includes a taste of wine country living, with guest experience options planned including wine touring, dining, golfing, skiing and more.

NEW MENU, PRIVATE DINNERS

Responding to the reception of locals and guests, head chef Dan Carkner has expanded The Modest Butcher’s menu. They feature the best steaks in the valley, from sixounce tenderloin to 32-ounce tomahawk. There’s also a range of vegan and vegetarian options. The restaurant is open 11 am to 9 pm daily. The food and service is exceptional, while keeping the vibe modest and welcoming.

Private spaces are available for seated dining experiences— ideal for small celebrations such as birthdays, corporate events and Christmas parties. On the ground floor, the impressive Summit Barrel Room has a 400-square-foot digital screen for sharing presentations or special memories. WINE RELEASES

The recently released 2017 Summit, Mt. Boucherie’s flagship red wine, scored 94 points from Rick VanSickle in its first review. This proprietary red blend, with intense aromas and flavours of cassis, black and red fruits, fresh tobacco, cedar and distinct minerality, is $59.99. The Original Vines series is now available. Created from vineyards established in the ‘80s and ‘90s, these wines spotlight old blocks, keeping them distinct from Mt. Boucherie’s other families of wines. These small lots are crafted from estate vineyards in Okanagan Falls, Golden Mile Bench and the Similkameen Valley. Head

DESERT HILLS LAUNCHES FLORA & FAUNA SERIES

Taking a new direction in concert with its transition to organic practices, Desert Hills Estate Winery has launched a wine series called Flora & Fauna.

Head winemaker Anthony Buchanan, assistant winemaker Rajen Toor and the cellar team were inspired to create a low-intervention series as a creative departure from Desert Hills’ classic wine offerings. Flora & Fauna reflects how making low-intervention wines mirrors the extra care and attention required in organic farming. With hand-picking as always, the process included some old-world foot-treading and wild fermentations to craft wines that are playful, textural and alive.

INTRODUCING THE RELEASES

First released was Desert Hills’ first sparkling wine, the 2019 Ancestral Method Sparkling––a blend of foot-tread Viognier, gently pressed Gamay, and Chardonnay, co-fermented, bottled while still fermenting, and then riddled and disgorged by hand. This ancestral-method sparkling bursts with crisp minerality, refreshing stone fruit, guava and white flowers.

The Amber Wine is 100 per cent Gewürztraminer from Desert Hills’ Sage Brush Vineyard and was fermented on the skins for 38 days, then aged eight months in concrete amphora. Absolutely glowing, it is full of fresh floral spice, candied ginger, blood orange and orange pekoe tea.

Born from fruit of the estate’s Three Boys Vineyard, the 2019 Pinot Gris shows soft passionfruit, cantaloupe and spiced tangerine. Wild fermentation was followed by 10 months of aging in neutral oak puncheons sur lie with no bâtonnage for a silky textured feel.

The whimsical label art by Furhouse reflects the playful style of Flora & Fauna. Stay tuned for this series’ availability near you as it arrives exclusively at restaurants and select stock lists.

Head Chef Andrew Kraeft’s new menu presents Canadian comfort food and Indian-flavoured features. The Black Sage Bistro is open daily, 12 noon to 7 pm, except Tuesday, when it is closed.

KISMET ESTATE WINERY – AN OKANAGAN GATEWAY TO INDIA

Located just off Highway 97 in Oliver, Kismet Estate Winery is a gateway to India, right here in the Okanagan.

This winery is owned by the Dhaliwal family, who immigrated to Canada from India in the 1990s. “We wanted to infuse our culture into everything we do at Kismet,” said operations manager Neelam Dhaliwal. “Telling our story by including our culture feels like the best way to really create our identity.”

All of Kismet’s wines have Indian names that resonate with the characteristics of the wine, such as Karma, Mantra and Moksha (and Kismet itself means “destiny”). Their estate restaurant, the Masala Bistro, uses these award-winning wines to create complementary, flavourful dishes, such as pani puri chaat (a popular Indian street food), barbequed meats, and freshly sourced Arctic char paired with tandoori spices, just to name a few.

In August, Kismet was nationally recognized for their outstanding wine at the All Canadian Wine Championships. The Oliver-based winery took home 10 awards, including a double gold for both their 2019 Pinot Grigio and their 2018 Syrah. Although Dhaliwal says receiving awards is always humbling, Kismet’s focus goes beyond producing world-class wine.

“It’s not just about producing great wine, it’s about giving our guests an experience to remember,” she says. “We’re never going to be the biggest winery, but we can be the most unique.”

STAY NEXT TO A VINEYARD

Building on that unique experience, Kismet is looking to re-open their guest house in the fall. Located across from their wine shop and right next to the vineyard, the recently renovated character home is an ideal getaway for families or couples. The home has two large bedrooms on the main floor, and two more large bedrooms, plus a multipurpose room, upstairs. It can accommodate up to 10 people. Staying at Kismet, nestled in the vineyards, is representative of what the Okanagan Valley has to offer. Keep an eye on the Kismet Estate Winery website for up-to-date details.

HAVE A KISMET WEDDING

If you’re looking to book a private event, or, due to the pandemic, you’ve had to scale back your wedding, Kismet has the venue for you. Nestled in their private vineyard, with a view of a secluded lake, this idyllic location is truly one of a kind. With only one wedding per week, guests have the complete focus of the staff, who make sure every detail is taken care of. Bookings are available from summer to fall, except for long weekends.

RENEWAL AND GROWTH AT RUST WINE CO.

Keeping true to their values of renewal and growth, Rust Wine Co. is taking a bold step forward. For the upcoming year, the winery is embarking on an ambitious project to reinvest and rejuvenate several vineyards and facilities as well as the heritage building on their estate.

The 126-year-old cabin on the property has been lovingly restored to serve as a guest house. Kane Morgan, hospitality manager, said, “While it might seem like a small job to fix the cabin, it was a huge undertaking to get the details right. On such a project, it’s amazing the discoveries you make in the process.”

Initially, the heritage house will be made available on a limited basis to guests of the winery and in special offers to Rust Wine Club members.

WINERY EXPANSION

The winery building is the next construction focus. Over the winter, it will double in size to allow for expanded, fully on-site wine production and a renewal of guest services. The enhanced guest area will include an expanded deck with an outdoor tasting bar, allowing for a seamless integration with the natural beauty of the Golden Mile Bench.

Winemaker Ryan de Witte is elated that the production facility will

be purpose-built to “craft small-lot wines with a strong sense of place.” De Witte recently joined the team, and the 2019 wines released this summer were created in his signature artisan style. He works closely with winemaker Jeff Hundertmark at their sister winery, Mt. Boucherie, in West Kelowna. The collaborative winemaking team launched the single-vineyard program. Most recently, 2017 Merlot was released, and 2018 Zinfandel is on its way. Rust Wine’s Zinfandelspecific vineyard is unique in the valley, given Zinfandel is generally considered tough to grow in the Okanagan.

NOD TO VITICULTURE

Morgan attributed much of Rust's success to its organic farmer––Brett Thiessen, manager of viticulture. “Without such wonderful vines, the quality of our wines would not be possible.” Rust Wine’s ownership has been generous to resource operations, and viticulture also has been given the tools to ensure happy vines.

Thiessen manages the vineyards for Rust and Mt. Boucherie, including Mt. Boucherie Estate Vineyard (West Kelowna), South Rock Vineyard (Golden Mile Bench, where Rust is located), Lost Horn Vineyard (Okanagan Falls), Summer Breeze Vineyard (West Osoyoos), Ferreira Vineyard (Black Sage Bench) and Lazy River Vineyard (South Cawston, Similkameen Valley). While Thiessen’s plans to convert all the vineyards to organic practices may

require a few years, ultimately the goal is “increasingly honest and pure wines” and long-term sustainability.

With the patience of farmers, Da Silva Vineyards and Winery has followed a slow and steady path. Their inaugural 2012 Black Label Merlot represents an important milestone and is an homage to Da Silva’s history.

The journey began in 1955 when, with only a suitcase in hand, the Da Silva family immigrated to the Okanagan Valley from Portugal. They eventually leveraged their farming skills to purchase a Naramata Bench orchard in 1959. As the Okanagan Valley evolved, so did the family’s experience farming fruits, including grapes. The result is a profound understanding of growing sites and their nuances across the region.

The transition to add winemaking to the Da Silva portfolio started humbly with garagiste wine before Misconduct Wine Co. was established. From the beginning, the Da Silva vision was to create “wines of place” to reflect the grapes’ terroir. Richard and Twylla Da Silva were pragmatic in honing their skills and enriching their craft of winemaking.

With the success of Misconduct Wine Co., the Da Silvas were finally ready to put their family name up front as Da Silva Vineyards and Winery. Even now, their deep farming roots are apparent, as the vineyards come first. Whether premium or value-priced, each wine has a story.

LIMITED EDITION

Top of the tier, at $125 per bottle, the 2012 Black Label Merlot is a limited-edition production of 1,176 bottles numbered by hand. Fruit was sourced from Blenheim Hill Vineyard on the Naramata Bench and Lazy Dog Vineyard on Penticton’s West Bench.

Before bottling, the wine was aged for 26 months in two French and two American oak barrels. In blind tastings, experts identified it as old-world style with gentler, cerebral nuances, refined and ready to drink or age.

Autumn is here and that means it’s harvest time. It’s a time of transition as the wineries focus on gathering the finest grapes for their winemakers.

2020 has been a rough year for businesses everywhere, and wineries are no exception. Many will still be open for tastings; however, several wineries are transitioning to online sales for the cooler months.

Purchasing wines online is a different experience from going directly to the winery. I love the anticipation of my wine purchases delivered to my door. It feels like a special occasion when they arrive. Around the expected delivery time, I listen a little closer for that knock on the door that says I’ve got mail!

And then, there it is, that carefully packaged box of sunshine in a bottle. You place your special delivery on the counter and open it. You can’t see the wine just yet. With new safety precautions in place, the lavender shop is seeing a steady stream of customers. As the sun sets on another Okanagan summer, cap it off with an afternoon visit to the Italian countryside—no passport required.

Tucked away in the foothills of West Kelowna, surrounded by a rustic Neapolitan garden and nearly endless rows of old vines, sits Ciao Bella Winery, an authentic little corner of Italy hidden right here in the Okanagan Valley.

Even before reaching the winery, guests will have already noticed the vineyard and farm-lined road has slowly whisked them away from the stressful hustle and bustle of the city below and carried them into a rural countryside not seen from the highway.

The warm and welcoming ciao! is how the Fiumes invite their guests into their winery as well as their home and famiglia. It’s another clue that you may have left the valley and magically arrived in Napoli.

While the winery grounds are reminiscent of the quiet Italian countryside, inside the wine shop it’s a lively Italian market. Stop and take a deep breath. That’s the aroma of fresh cappuccinos (available for patrons and designated drivers alike) and traditional Italian meats and cheeses, all of which are available at the little deli in the corner of the winery’s intimate tasting room. It’s in this setting that guests receive a friendly and knowledgeable tasting of Ciao Bella’s award-winning portfolio of artisanal wines. All are crafted in an authentic Italian style, and they almost always involve a story or two.

PICNIC TIME

Following this, guests can then relax in their own little corner of the gardens under the sun with a bottle of wine, a picnic and the company of friends (some of whom they may have only just met in the shop) as the sound of traditional Italian folk music plays softly in the background. Around this time of year, patrons will likely hear owner Roberto and son Antonio out in the vineyard with the

workers, calling out to each other in Italian while watching the harvest.

In the distance, rising above the Pinot Nero and Pinot Grigio grapes, you’ll see the cellar. This is a recent addition to Ciao Bella. It’s been fitted with the newest ecologically sound technologies. Those who find themselves already planning their return here will want to keep a close eye on social media for news of what surprises the Fiumes have hidden away in there for the coming spring. For now, there’s little more to do except enjoy your visit to the winery while whittling away the afternoon’s warmth with good friends and wine. After all, things do move a little slower here in Italy.

WINES OF NOTE

2018 Pinot Grigio is done like all Ciao Bella wines, in a classic Italian style. This off-dry white greets the taste buds with a vibrant burst of crisp green apples and finishes with a more gently subdued buttery flavour of ripened pears. All of this is coupled with a prominent citrus zest that follows from the nose onto the palate.

2019 Rosé is a perennial favorite among guests. It’s great for picnics and trips to the beach. This rosé is well known for its distinctive fruitful aroma and bold array of citric flavours.

2017 Pinot Nero has a subtle flavour of cherries accompanied by the more prominent profile of dark chocolate. This vintage is a fine illustration of why Ciao Bella has been recognized as the home of BC’s best Pinot Noir in the past.

Pinozannte is an Italian-style sparkling wine that dances across the palate and finishes with a smooth, lingering hint of honey. Pop a bottle and enjoy la bella vita.

CIAO BELLA WINERY: VACATION TO ITALY IS CLOSER THAN YOU THINK BLAKE ALLEN

Strawberry Spinach Salad

2 Tbsp plus 1/3 cup extra-virgin olive oil

4 boneless, skinless chicken breast halves (about 1 3/4 lb), tenders removed

Kosher salt and freshly ground black pepper

1/2 cup chopped walnuts

1/4 cup red wine vinegar

1st grainy Dijon mustard

2 tsp honey

1 medium shallot, minced

6 oz loosely packed baby spinach leaves (about 6 cups)

8 oz strawberries, stemmed and quartered (about 1 1/2 cups)

3 oz crumbled goat’s cheese (about 3/4 cup)

INSTRUCTIONS:

Heat 2 Tbsp of the oil in a 12-inch skillet over medium heat until shimmering hot. Pat the chicken dry and season with 2 tsp salt and 1 tsp pepper. Cook, turning once, until just cooked through, about 10 minutes total. Transfer the chicken to a cutting board and let rest, loosely covered with foil, for 5 minutes.

While the chicken cooks, toast the walnuts in a dry skillet over medium heat, stirring occasionally, until evenly browned, 3 to 5 minutes. Transfer to a plate to cool.

In a small bowl, whisk the remaining 1/3 cup olive oil with the vinegar, mustard, honey, shallot, 1/2 tsp salt and 1/2 tsp pepper.

In a large bowl, combine the spinach, strawberries, goat’s cheese and walnuts and toss with enough of the dressing to coat. Arrange the salad on a platter or plates. Slice the chicken and arrange on the salad. Drizzle with some of the remaining vinaigrette, if desired, and serve.

Serve with a hunk of warm crusty bread and a glass of Volcanic Hills 2018 Rosé.

INGREDIENTS

2 cups all-purpose flour

1 tsp sea salt flakes

½ cup cold butter, chopped

1 cup grated aged cheddar

1 egg

2 cups heirloom cherry tomatoes, halved

2 Tbsp white balsamic vinegar

2 Tbsp lemon extra virgin olive oil

Sea salt and cracked black pepper

2 cups fresh ricotta

2 Tbsp buttermilk

1 tsp finely grated lemon rind

Fresh lemon thyme, to garnish

Fresh basil or pea shoots, to garnish

METHOD

To make the pastry, place the flour, salt, butter and cheddar in the bowl of a food processor and process until the mixture resembles fine breadcrumbs. Add the

egg and process until the pastry comes together. Wrap the dough in plastic wrap and refrigerate for 1 hour or until firm. Preheat oven to 180°C (350°F). Grate the pastry into a 28-cm round tart tin and press into the base and sides of the tin. Prick the base with a fork and cook for 20-22 minutes or until golden brown and cooked through. Allow to cool completely. Place the tomato, vinegar, oil, salt and pepper in a large bowl and mix to combine. Place the ricotta, buttermilk, lemon rind, salt and pepper in a separate bowl and mix to combine. Spread the tart base with the ricotta mixture and top with the tomato mixture. To serve, sprinkle with lemon balm, basil, salt and pepper.

Blueberry Bruschetta

Blueberries:

1 pint blueberries

2 Tbsp sugar

1 Tbsp balsamic vinegar

Lemon Chevre:

1 1/2 cups of chevre

Zest and half of juice of 1 lemon

1 tsp kosher salt

1/2 tsp pepper

Crostini:

1 baguette, cut into rounds

Butter

Garnish:

Basil leaves

Balsamic glaze

DIRECTIONS:

Combine blueberries with sugar and balsamic vinegar in a bowl. Let macerate while you prepare the chevre. Mix chevre, lemon zest and juice, salt and pepper together in a bowl.

Butter both sides of the baguette rounds and toast both sides until golden. Cool slightly. Top crostini with lemon chevre mixture, top with a spoonful of macerated blueberries, and garnish with basil leaf. Place all bruschetta on a serving platter and drizzle with balsamic glaze.
