from the editor

Bali

Tourists, Travelers, & Adventure-seekers... This June, Bali will be celebrating the culmination of the Galungan celebrations as they prepare for the departure of their Ancestors back to Heaven on Kuningan Day. While this is a deeply spiritual and religious day, it will also lend an air of festivity to the streets of Bali, and you’ll most likely get the chance to enjoy many Barong Bangkung performances by small Balinese children as they roam the streets accompanied by traditional musical instruments like cymbals and gongs. It is usually customary to give a small donation to the children while the Barong is performing - it is believed that Barong Bangkung roams the streets on this day to purify towns and villages - another charming appeal unique to the Island of the Gods. Be sure that you don’t miss out on any thrilling Balinese cultural events while you’re here – the island is so much more than shopping and beachclubs; while they are definitely part of the attraction, Bali’s breathtaking culture and people are what makes the island unique, and why we love Bali so much. Check out our Don’t Miss section to see what else you can view this month, and our What’s New and Hot Deals pages for the newest and most exciting value deals in June. Reviews are personally tried and tested testimonials by us for you – this month we’re featuring Mason Adventures and their tireless efforts to save the Sumatran Elephants in a setting that is almost the exact replica of its natural habitat in the village of Taro. They are Bali’s number 1 adventure operator for 3 decades now, and you can experience Bali’s land, air and sea with them! On the shores of East Bali’s exotic black sand beaches, you’ll find the spectacularly beautiful 5-star resort, Wyndham Tamansari Jivva Resort that is only an hour away from Ngurah Rai International Airport. Here, you can experience the real Bali amidst verdant nature and luxury settings. Hungry? We highly recommend that you visit Cocoon Beach Club in Seminyak for the most tantalizing and mouthwatering selections that could easily surpass any international establishment. The food here is so good, fresh and authentic that you’ll be sure to come back for more. The entire space is designed to maximize nature’s elements, and after a nice meal you could relax by the poolside with cocktails and light bites. In Ubud, Manisan Bali has surpassed all expectations as the go-to for the enticing flavours of the archipelago and those craving for Chinese should definitely head to Happy Chappy Chinese in Seminyak and Canggu for Bali’s number 1 Cantonese cuisine. Mason Adventures also offers a plethora of culinary delights at its Ubud Adventure Centre and if you’re thirsty for some quality, premium and authentic Japanese Matcha, head to Plaza Renon in Denpasar because O.Matcha has just opened its doors to all matcha lovers. If you’re in need of some medical care, BIMC Siloam Nusa Dua will provide you with world-class facilities and the best medical team available on the island. From minor ailments, major ailments, joints and bones to aesthetics, this is the ideal establishment in which you could trust. Pancasila Day 1 June 2018 This is the second year running for Indonesian citizens as they celebrate Pancasila Day – this day is an official public holiday as declared by President Joko Widodo in 2016. Although Pancasila Day has been acknowledged since 1945, the President has mandated the day to be a national celebration in remembrance of President Sukarno’s famous speech, “The Birth of Pancasila”, where he outlined five principles by which the new nation ought to be governed. It is interesting to know that these five principles are called “pancasila” because, in Indonesian, panca means “five,” while sila means “principle.” June 1st is also Indonesia’s independence from the Netherlands, after Japanese forces surrendered to the Allies at the end of World War II. Perang Pandan or Merkare-Kare 8 June & 30 June A mass coming-of-age ritual, Perang Pandan, which is also known as “Mekare-kare” and “Megeret Pandan”, is a unique and ancient Balinese tradition for the village of Tenganan in Karangasem, East Bali. Dedicated to Lord Indra, the Hindu God of war and sky, friendly duels between bare-breasted male villagers are held on this day, which also coincides with the village’s annual Ngusaba Desa ceremonies. An annual event that adheres to its own local calendar, the males of the village will bout each other armed with small rattan shields and thorny pandan leaves.

Kuningan 9 June 2018 Kuningan is derived from the word “kuning”, meaning yellow. The Balinese believe that on this day, their ancestors return to heaven after visiting earth for the Galungan celebrations. As a symbol of gratitude, they make offerings of yellow rice placed in bowls made of coconut leaves. The bowls are decorated with figures of shadow puppets, which represent angels that bring joy and wealth to earth. In some villages, Barongs can be seen going from houseto-house followed by children playing traditional Balinese musical instruments. Ngerebong 17 June 2018 Petilan Temple, Denpasar The Ngerebong ritual is a sacred tradition involving mass trance usually held eight days after the Kuningan celebrations. During this ritual, male participants stab themselves with the traditional weapon, keris, without sustaining any injuries, not even a drop of blood - a rite said to achieve harmony between humans, nature and God. It is a reenactment of the age-old conflict between good and evil which acts a purification and purging of evil spirits. On this day sacred effigies from various temples in Kesiman including Barong and Rangda masks from over fifty local villages will be taken to Kesiman Temple and placed on an elevated open pavilion from which they could witness the whole procession. Bali Arts Festival 16 June – 14 July Celebrating its 40th year this year, the annual Bali Arts Festival has returned to wow visitors with one of Bali’s most awaited cultural events. Here’s your chance to witness traditional performances and cultural highlights of Bali and Indonesia at the Taman Werdhi Budaya Arts Centre in Denpasar. Hundreds of artisans from Denpasar and Bali’s eight provinces, neighbouring islands and even international art troupes will be on hand to showcase their talents. Aside to live performances, visitors can also enjoy handicrafts, paintings and sculpture exhibitions as well as a traditional Balinese culinary festival daily. This annual event takes place yearly on the second or third Saturday of June to the second or third Saturday of July. International Day of Yoga 21 June 2018 Celebrated annually on June 21, Yoga Day was internationally and officially recognized by the United Nations General Assembly (UNGA) on December 11, 2014. The Indian Prime Minister Narendra Modi in his UN Address suggested the date of June 21, as it is the longest day of the year in the Northern Hemisphere and shares special significance in many parts of the world. Yoga is a physical, mental, and spiritual practice that originated in India with a huge following across the world and in Bali.

about bali

Beautiful Island Geographically, situated between the islands of Java and Lombok, Bali is small, stretching approximately 140 km from east to west, and 80 km from north to south. The tallest of a string of volcanic mountains that run from the east to the west is Gunung Agung, which last erupted in 1963. Located just 8º south of the Equator, Bali boasts a tropical climate with just two seasons (wet and dry) a year with an average temperature of around 28ºC. The wide and gently sloping southern regions play host to Bali’s famed rice terraces, which are among some of the most spectacular in the world. In the hilly, northern coastal regions, the main produce is coffee, copra, spices, vegetables, cattle and rice. The Balinese have strong spiritual roots and despite the large influx of tourists over the years, their culture is still very much alive. The main religion is Agama Hindu Dharma, which, although originally from India, is comprised of a unique blend of Hindu, Buddhist, Javanese and ancient indigenous beliefs; It is very different from the Hinduism practiced in India today. Naturally creative, the Balinese have traditionally used their talents for religious purposes and most of the beautiful work to be seen here has been inspired by stories from the Ramayana and other Hindu epics.

The majority of Bali’s 4,000,000 people live, for the most part, in tight village communities with large extended families. The largest cities are Denpasar (the capital) and Singaraja in the north. The main tourist area stretches from Kuta to Seminyak. Kuta became a major attraction during the tourist boom of the 70’s because of its famous white-sand beaches, the surf, and stunning sunsets. Today, the stretch from Kuta to Seminyak is a major tourist destination, with hundreds of hotels, bars, restaurants and shops. Those in search of a little peace and quiet tend to head for the more serene resorts of Sanur and Candi Dasa on the east coast, or Lovina in the north. Nusa Dua, on the southern-most peninsula of the island, houses many five-star hotels. The central village of Ubud, in the hilly region of Gianyar, has also blossomed as a tourist attraction and is now considered to be the artistic and cultural centre of Bali.

culture

Beautiful Culture By the Bronze era, around 300 B.C., a fairly evolved culture already existed on Bali. The complex system of irrigation and rice production, still in use today, was established around this time. Photo Courtesy of Sonia

It appears that the main religion around 500 A.D. was predominantly Buddhist in influence. In 670 A.D., a Chinese scholar (Yi-Tsing), on a trip to India, reported that he had visited a Buddhist country called Bali. It wasn’t until the 11th century that Bali received the first strong influx of Hindu and Javanese cultures. With the death of his father around AD 1011, the Balinese Prince, Airlanggha, moved to East Java and set about uniting it under one principality. Having succeeded, he then appointed his brother, Anak Wungsu, as ruler of Bali. During the ensuing period there was a reciprocation of political and artistic ideas. The old Javanese language, Kawi, became the language used by the aristocracy, one of the many Javanese traits and customs adopted by the people. With the death of Airlanggha, in the middle of the 11th century, Bali enjoyed a period of autonomy. However, this proved to be short-lived, as in 1284 the East Javanese King Kertanegara, conquered Bali and ruled over it from Java. In 1292, Kertanegara was murdered and Bali took the opportunity to liberate itself once again. However, in 1343, Bali was brought back under Javanese control by its defeat at the hands of Gajah Mada, a general in the last of the great Hindu-Javanese empires, the Majapahit. With the spread of Islam throughout Sumatra and Java during the 16th century, the Majapahit empire began to collapse and a large exodus of aristocracy, priests, artists and artisans to Bali ensued. For a while Bali flourished and the following centuries were considered the Golden Age of Bali’s cultural history. The principality of Gelgel, near Klungkung, became a major centre for the arts, and Bali became the major power of the region, taking control of neighbouring Lombok and parts of East Java.

The European Influence

The first Dutch seamen set foot on Bali in 1597, yet it wasn’t until the 1800’s that the Dutch showed an interest in colonising the island. In 1846, having had large areas of Indonesia under their control since the 1700’s, the Dutch government sent troops into northern Bali. In 1894, Dutch forces sided with the Sasak people of Lombok to defeat their Balinese rulers. By 1911, all the Balinese principalities had either been defeated in battle, or had capitulated, leaving the whole island under Dutch control. During World War II, the Dutch were expelled by the Japanese, who had occupied Indonesia from 1942 to 1945. After the Japanese defeat, the Dutch tried to regain control over their former colonies, but on August 17, 1945, Indonesia was declared independent by its first President, Sukarno. After four years of fighting and strong criticism from the international community, the Dutch government finally ceded and, in 1949, Indonesia was recognized as an independent country. The People

Life in Bali is very communal with the organisation of villages, farming and even the creative arts being decided by the community. The local government is responsible for schools, clinics, hospitals and roads, but all other aspects of life are placed in the hands of two traditional committees, whose roots in Balinese culture stretch back centuries. The first, Subak, concerns the production of rice and organises the complex irrigation system. Everyone who owns a sawah, or padi field, must join their local Subak, which ensures that every member gets his fair share of irrigation water. The other community organisation is the Banjar, responsible for arranging all village festivals, marriage ceremonies and cremations. Most villages have at least one Banjar and all men have to join when they marry. Banjars, on average, give membership to 50 up to 100 families and all Banjars have their own meeting place called the Bale Banjar. As well as being used for regular meetings, the Bale (pavilion) is where the local gamelan orchestras and drama groups practice. Religion

Balinese people are Hindu, yet their religion is very different from the Indian variety. The Balinese worship the Hindu trinity Brahma, Shiva and Vishnu, who are seen as manifestations of the Supreme God Sanghyang Widhi. Other Indian gods like Ganesha (the elephant-headed god) also appear, but more commonly. Shrines associated with the many gods and spirits, uniquely Balinese, are found all over the island. Balinese people strongly believe in magic and the power of spirits, basing much of their religion on this. They believe good spirits dwell in the mountains and that the seven seas are home to demons and ogres. Most villages have at least three main temples, namely: (1) the Pura Puseh, or ‘temple of origin’, facing the mountains; (2) the Pura Desa, or village temple normally found in the centre; and (3) the Pura Dalem, aligned with the sea and dedicated to the spirits of the dead. Aside from these ‘village temples’, almost every house has its own shrine. Some temples, for example Pura Besakih on the slopes of Mount Agung, are considerably more important and people from all over Bali travel there to worship. Offerings play a significant role in Balinese life as they appease the spirits and thus bring prosperity and good health to the family. Every day small offering trays (canang sari), containing symbolic food, flowers, cigarettes and money, are respectfully put on shrines, in temples, in front of houses and shops, and at dangerous crossroads. Festivals are another great occasion for soothing the gods. The women carry huge, beautifully arranged pyramids of food, fruit and flowers on their heads while the men might conduct a blood sacrifice through a cockfight. The gods are invited to descend and join the festivities with music and traditional dances to go with it. This kind of event is extremely exciting, memorable and well worth attending.

art & artist

Beautiful arts

With the arrival of European artists in the beginning of the 20th century, this soon began to change. Local artists started to develop their own individual styles. PAINTING

Until the start of the 20th century, the dominant form of painting was the portrayal of Hindu epics by painters and illustrators called ‘Sangging’. Aside from making large representational paintings, the ‘Sangging’ were expected to decorate everything from gourds, wooden altars, bamboo vessels, headboards for princely bed chambers and, in particular, they were expected to illustrate astrological wall hangings on bark paper or cloth. It wasn’t until the early 1900s that western influences reached Bali. The use of Asian symbols in the works of, among others, Paul Gauguin, Toulouse Lautrec and Camille Pissaro, created a new trend for Asian-influenced art and for European painters to move to Bali. Ubud’s fame regarding art can be traced to the arrival of the German painter Walter Spies and the Dutch Rudolf Bonnet. There is a much wider range of artistic styles today. Ubud Style

Influenced by the western use of perspective and everyday-life subject matter, the Ubud style is one of the most ‘expressionistic’ of all Bali’s schools. Despite this, Ubud’s art still retains many traditional features, including attention to detail and stylized characters. Batuan Style

Strongly wayang based (puppet). This style involves hundreds of intricately painted representations of Balinese life, filling every available nook and cranny of the canvas. Keliki Style

Keliki paintings measure 20cm by 15cm. They contain scenes of mythical and Ramayanic characters engaged in battle, good versus evil, on sinister backgrounds.

Pengosekan Style

From this village, on the outskirts of Ubud, a new style sprang up during the 1960s. It concentrated on just a few natural components, such as birds, insects, butterflies and plants. STONE CARVING

Stone carvings were mainly used to decorate temples and palaces. There is little difference between the iconography decorating temples and that of private buildings. Gateways represent the dividing line between the inner and outer worlds and as such are the recipients of some of the most fantastic carvings. Bali’s modern-day centre of stone carving is the village of Batubulan, situated halfway between the towns of Denpasar and Ubud. TEXTILES

One of the most striking things about Bali is the rich variety of cloths and materials that are to be seen in thousands of shops throughout the island. However, only a small proportion of these are indigenous to Bali. The myriad of batik clothes and sarongs available everywhere, are mainly imported from Java. Bali does have a very rich textile industry of its own. The beautiful Songket fabrics, worn by performers of traditional dances, are a good example. In Songket gold and silver threads are woven into the cloth to create complex motifs of birds, butterflies and flowers. Endek, or weft ikat, is another common method used in Bali. In weft ikat weaving, the weft threads are dyed to create the design and are then woven with plain warp threads.

The least common form of weaving to be seen in Bali is the Geringsing, or double-ikat, and it is perhaps the most sought after. In Geringsing both the warp and weft threads are dyed to their final designs before being woven together. With the exception of certain areas in India and Japan, this weaving technique can only be found in the small Bali Aga village of Tenganan, East Bali. WOOD CARVINGS

Wood and stone carvings have traditionally been featured largely in temple and palace architecture. Immaculately carved demons and mythical beings decorate pillars, door panels, lintels and window shutters with the object of protecting the buildings from evil intruders. Scenes of legendary figures placed within a floral dĂŠcor, set a more pleasant and educational tone. With the arrival of European influences, wood carving started to develop a long more innovative and commercial lines. Today, whole villages specialise in producing certain styles of work. The village of Mas, near Ubud, is the best known for its carvings of female figures, Buddhas, characters from Hindu epics, the traditional topeng (mask) and Wayang Wong masks. DANCE & DRAMA

Dance and drama have played a historically important role in Balinese society. Through this medium, people learned about the tales of the Ramayana, Mahabarata and of other epic stories from Balinese history. The following are brief descriptions of some of the more well-known dance-dramas that can be seen at regular performances throughout Bali.

| BALIPLUS June 2018

Baris - This is a warrior’s dance. It is usually performed by men, either solo

or in a group of five or more.

Barong & Rangda - This is a story about the struggle between good and evil.

Good is personified by the Barong Keket, a strange but fun-loving creature in the shape of a shaggy semi-lion. Evil is represented by Rangda, a witch.

Kecak - The most famous of the Balinese dances, originated from the Sanghyang dance choirs, holds its uniqueness in the entrancing ‘Kecak, kecak’ chant. The Kecak as a dance developed in the 1930s, in the village of Bona, where it is still performed regularly. Legong - This dance tells a story of princess Rangkesari being held captive

by King Lakesmi. Rangkesari’s brother, prince Daha, gathers an army to rescue his sister. The Legong is a very classical and graceful dance, always performed by prepubescent girls, who can be as young as eight or nine years old.

Wayang Kulit (Shadow Puppet) - Wayang Kulit is one of the great story-telling traditions of the Javanese and Balinese people. The wayang show usually consists of a small four-piece orchestra, which provides the musical accompaniment, around sixty ‘puppets’, carved out of flat pieces of water buffalo hide, and the dalang or puppet-master. The good characters speak in ancient ‘Kawi’, whereas the evil or coarse ones speak Balinese. The Bali Agung Show

The Bali Agung Show at the Bali Safari and Marine Park is an inspiring cultural performance dedicated to the entertainment of both local and international audiences. This spectacular show celebrated its 1500th performance on Jan 19, 2016. With regular scheduled performances over the past five years, the colossal and spectacular Bali Agung Show is arguably the longestrunning theatrical production in Indonesia’s theatrical history. Devdan’s “Treasure of the Archipelago” at the Bali Nusa Dua Theatre is a 90-minute show that takes you on a tour of the Indonesian archipelago with impressive acrobatics, effects and traditional dances. Performed 4 times a week every week.www.devdanshow.com. Calonarang

The Calonarang dance tells the tale of a widow queen, Walunateng Dirah from Girah village who possessed the ability to conduct powerful black magic. Her powers were said to be stronger than the King Erlangga’s, causing fear among all that nobody would dare to ask for her daughter’s hand in marriage. The widow, furious, placed a curse on the entire land and people began to die without reason, which caused a state-wide war. The King then sought the help of a Priest, Mpu Bharadah, who defeated Calonarang with his white magic. Ramayana

The Ramayana dance tells the epic love story of Rama and Sita whose love was too strong to be torn apart. Expect exciting scenes of treachery among the royal family, lost-in-the-jungle scenes, kidnappings, brave rescue missions by Hanoman the Monkey King, and a romantic ending where Rama is forever reunited with his love, Sita.

There are many diving sites in Bali that attract divers from around the globe. Some of the diving sites, like USAT Liberty Shipwreck and Amed diving sites are suitable for beginner divers. If you’ve not yet tried these sports, we recommend that you start at Sanur or Tanjung Benoa Beach where you can hire the necessary equipment, either right on the beachfront (at a beach club) or at one of the hotel-run dive centres. Instructions are available at these diving centres. Most of the centres offer International (PADI) diving certificates but be sure to check their PADI Resort Code as well, for the insurance and medical facilities. It is advisable to look for diving centres that have a ‘five-star’ PADI Approval Rating. Please note that Bali’s only decompression chamber is at Sanglah Public Hospital in Denpasar (see ‘Hospitals’ in the ‘Essential Info’ section for more info). BALIPLUS June 2018 |

O.Matcha at Plaza Renon Bali has opened its doors to bring you the perfect healthy drink to quench your thirst and satisfy your desire for a delicious drink that is both authentic and unique in flavour and presentation. The very first of its kind in Bali, O.Matcha serves hot and cold matcha that is unlike any other. Avid matcha lovers would know that matcha is specially processed green tea that comes in powdered forms and is dissolved in water or milk. The matcha used by O.Matcha is specially planted, harvested and produced in the Kyoto region of Japan, which is renowned the world over for its outstanding matcha and soy plantations that produces premium tea leaves and beans. When speaking to the Manager at O.Matcha, we were told that this is an important factor to the quality of the finished product as the natural spring waters found in the Kyoto region are found to be somewhat fresher and sweeter. A drink that we highly recommend that carefully represents all of the above is the Sakura Latte, a delightful white and pink concoction created with matcha, fresh milk and a sprinkle of dried Sakura Flower; a fantastic addition that rightly represents the beautiful and mystifying culture of Japan and its wonderful people. This is a seasonal signature drink at O.Matcha, as the Sakura Flower only blooms for two months in the year. The bright pink sprinkle of its petals lends the drink a sharp sour and salty edge, a perfect blend that balances out the sweet. 56

Another drink that is a must try is the Tokyo Style Latte, an interesting blend of brown and green, the latter the result of a clever mix of espresso, wasabi and Chai Spice. The first sip brings to mind the enticing rush of Tokyo, thanks to the wasabi’s unique flavour smoothed over by the earthy flavour of the Arabica beans and the exotic twang of the Chai Spice. Adventurous drinkers who love a spicy challenge would love this drink! Those who prefer

something a little bit more traditional can try the Brown Rice Tea, a non-dairy drink made of roasted rice and tea, gently coming together to produce a delicious, heartwarming drink that envelopes you from the inside out. The warm and welcoming interior of O.Matcha was inspired by a traditional tea shop in Japan, and was designed to allow guests to linger over a hot or cold drink while nibbling on light bites of handmade Japanese bread and snacks made only with natural ingredients including flour, rice and red beans. Seating is available inside in the cool and relaxing ambience of the store or outside under large parasols in the bright Bali sun. Other available items off O.Matcha’s extensive menu is the Vanilla or Matcha flavoured Ice Cream, Passionfruit, Kiwi and Matcha Smoothies, Shaved Ice, Juice, a plethora of hot and cold teas, coffee and chocolate drinks. Don’t forget to try a Light Matcha beverage while you’re there!

Sacred Places For those of you who feel like getting around Bali, this is your chance to get out and see the sights. The following pages let you know where to go and how to get there. So if you need a break from the beach, start reading... TEMPLES - COASTAL Tanah Lot - *I9 - Southwest Bali, Tabanan regency. Built on a large rock and cut off from the mainland at high tide, this is one of Bali’s most spectacular sunset sight. Uluwatu - *I11 - South Bali on Bukit Badung. This cliff-top temple - dedicated to the spirits of the sea - has spectacular views and is popular for viewing sunsets. During the Galungan festival, people from all over the island travel here to worship. Pura Jayaprana - Northwest Bali. Superb views of Menjangan island. The surrounding coral reefs can be seen from this temple. Pura Rambut Siwi - *E6 - Southwest Bali, (10km from Medewi), Another cliff-top temple with views of Java and on a clear day, Mt. Bromo. Pura Ulun Danu Bratan - *J4 - near Bedugul. This temple has several shrines which are located on both the lake’s shore and on various small islets. The following three temples are between Seribatu and Tampaksiring, north of Ubud. Pura Gunung Kawi Set in a ravine in Tampaksiring, the temples Candi’s are carved into the rock face. There are five Royal Tombs at the rear of the temple complex. Pura Tirta Gunung Kawi A water temple dedicated to the Rice Goddess. how to get around

Photo Courtesy Of Rustian Aditya Nugraha

Easy Riding car HIRE Car rental agencies can be found in all the major tourist areas. Prices start from approximately USD 30 a day for a Suzuki-style jeep (Jimny) and about USD45 for a new Kijang jeep. Organize and arrange your car rental needs for a holiday or business stay. Most rental cars in Bali are in decent shape, BUT you should check them thoroughly before signing any forms. Always carry an international driver’s license with you. Motorbike rental You can find bikes for rent almost everywhere. Prices usually start from around USD6/day for a standard 125cc motorbike. Scooters, affectionately called ‘Bebeks’ (Ducks), start at around USD5/day. Always check the bike before parting with your cash. In Indonesia you have to wear a helmet by law and carry an international drivers license! Bicycle/Mountain Bike Cycling can be a cheap and enjoyable way to get around and about. It does, however, take some fitness to ride around the more central and hilly regions! The northern coastal roads are ideal for longer trips. You can find bike rental shops in all the main tourist areas. Bemo Public transport in the form of mini-vans is by far the cheapest way to travel, although not the most comfortable! Tours Organised tours relieve you from the hassle of trying to navigate your own way around. You do have to follow itineraries however, so spur of the moment sight-seeing is not an option on these. Housed within a beautiful and antique reclaimed Joglo that’s been restored to its former glory, Manisan is nestled amidst the resort’s fragrant rice fields and overlooks a stunning cerulean blue pool framed by lush lawns and gardens. Originally sourced from Central Java and reassembled expertly in Ubud by architects Grounds Kent, the restaurant’s building melds age-old architecture with modern features and interiors. Well-designed, Manisan can comfortably seat up to 128 diners while remaining sensitive to the island’s rich cultural heritage. It provides the perfect setting to showcase the diverse and exotic flavours of the Indonesian archipelago in style. The menu at Manisan embraces the authentic flavors of Indonesia; as an archipelago, there exist a plethora of ingredients ready to be produced into a menu that you will cherish. Prepared with time-tested recipes to bring classic traditional foods back into your modern lives, each dish celebrates the spirit and diversity of the Golden Age of Indonesia. Now, Manisan will embark on an exciting new direction with the recent appointment of Chef Henry Alexie Bloem as Food and Beverage Advisor. Chef Bloem brings nearly 29 years of culinary experience from around the world to this new role. Originally from Bali, he has held senior positions at several starrated hotels and resorts around Indonesia. Throughout his career, Chef Bloem has always exhibited an intuitive determination in his pursuit to give traditional Indonesian cuisine the platform that it so rightly deserves. Chef Bloem said, “The unique and

modern artistic concept of Alaya Resort Ubud is my biggest source of inspiration to create a new menu that defines the gastronomy of Indonesian fine dining at our extraordinary restaurants. My vision is to give guests to exceptional dining experiences by introducing flavours that truly satisfy the taste buds and are remembered long after they return home.” In collaboration with Executive Chef Siharta and Food & Beverage Manager Krisna Decaran, Chef Bloem will revitalize all menus and motivate the kitchen team at Alaya Resort Ubud. He will draw on his extensive culinary knowledge and management skills to showcase authentic Indonesian cuisine with an elegance that complements the resort’s design aesthetic. As Food and Beverage Advisor, Chef Bloem has already launched a new signature dish at Manisan, which is his own version of Nasi Bira. This is yellow rice infused with kemangi leaves accompanied by dry salted fish, cucumber and eggplant. It is served with tasting portions of spicy honey grilled prawns, seared tuna fish, sambal matah, chicken betutu, minced chicken satay lilit, rice field escargot, vegetable urap and snake beans with two kinds of sambals and crackers. Whether at its outlet in Seminyak, Canggu and soon, Ubud, a meal at Happy Chappy is an entire experience that starts the minute you walk through its beautiful Chinese gates into a very regal and slightly mysterious black, red and gold expansive interior. From its wooden finishing, red lanterns, Chinese ornaments and paintings to the massive statue of the happy Buddha at the foyer; everything works together to give you that one perfect dining experience. Once you’ve had a meal at Happy Chappy Chinese, you’ll definitely be back for more - in addition to Dim Sum, there are Stir Fry, Steamed and 90

Cocoon Beach Club on Double Six Beach, Seminyak Bali has received many positive reviews and acclaims from new and returning customers from all over the world since its opening in 2010. This very coveted and popular beach club on one of South Bali’s most popular strips has won the hearts of many – the secret, according to its management, is to provide consistent stellar service, mouthwatering food and drinks at amazing value and a stunning beachfront location that is perfect for epic parties, sexy sojourns, fabulous cocktails and sultry days and nights by the poolside. Over the years, it has rightfully created a name for itself as a top destination for delicious dining and gourmet. With recently adjusted prices to meet the needs of its guests, worldclass and gourmet selections by the very talented Chef Ari can now be enjoyed by all who crave nothing less than an excellent dining experience at an amazing price. The refreshed menu clearly showcases available selections featuring Mains, Starters, Sides, Desserts, Burger & A Dog, Pastas, Salads, Pizzas and an expanded Local section. We had the good fortune to meet with Chef Ari who told 94

| BALIPLUS June 2018

us that a dish that is very dear and near to his heart would be the Ayam Bakar Kecap & Sambal Matah – Balinese Style Grilled Chicken, Fresh Chilli Sauce and Rice – as it is inspired by his dear mother who taught him to cook and learn all about Balinese herbs and spices from the age of 8. The tender and juicy chicken melted in our mouths, along with a plethora of fabulous tastes and sensations and the secret

to this, we were told, lies in the marinade. The same technique is also applied to the Lamb Shank, and we can guarantee that no other Lamb Shank in the vicinity is as tender, succulent and as moist as this! Preparation takes up to two days with the meat being thoroughly marinated to soak up the herbs and spices before arriving with flourish to your table. Those who prefer fish must try the Grilled Snapper Fillet with Fruit Salsa, Roasted Baby Potatoes and Spinach Puree; a fresh and tantalizing taste of the ocean that is cooked just right. If you’re planning to hang by the pool, have a Moroccan Spiced BBQ Chicken Wings or the Salt & Pepper Calamari with your cocktails and beers. Everything coming from Cocoon’s kitchens is beyond satisfactory – just ask anyone who’s been there! To complete our meal, we ordered the Mint Lemonade, a beautiful mix of brown sugar and mint and topped with Sprite, and the Berry Soda, with mixed berries, lemon juice and sprite. Every day during Happy Hour, grab the Buy 2 Get 3 offer from 5pm to 7pm from a list of Cocktails featuring Martinis, Margaritas, Mai Tais and Mojitos all at IDR 85,000 each. A bucket of beer is available for only IDR 115,000 with 4 Bintangs or 3 Heineken Light for IDR 100,000.

Crab-lovers can now rejoice as Sakanaya Fish Market by Ryoshi introduces exciting new dishes at its rustic outlet in Sunset Road, featuring all the delights of the world’s favourite crustacean. Four new additions are available beginning this month; the ideal light bites, the Crab Claws are delicious crab meat coated in flour, egg and breadcrumbs and then fried until cooked through. Great for children, you can also order this dish as an appetizer or to accompany any other crab dish. Another fantastic option are the Crab Cakes, a satisfying mix of crab meat, bread crumbs, parsley, salt and pepper with egg, mayonnaise and mustard. Both these dishes will be the perfect appetizer before the main course, such as the new Crab Meat Fried Rice also known as the Nasi Goreng with Crab Meat. A surprising and interesting new option is the Jellyfish Salad served with tomatoes and fresh greens. Typically made with sesame oil, soy sauce, vinegar, sugar, chili oil, and ginger and thinly sliced marinated jellyfish, this dish is very cool and refreshing to the palate with a unique texture and crunch. It makes for the perfect pickled dish to accompany your lunch or dinner. essential info

General Things

THAT YOU SHOULD OR SHOULDN’T DO...

do

don’t

...change money at a reputable looking location, use your own (or the hotel’s) calculator before changing!

...forget to bring your passport (or a photocopy of your ID) with you at all times-as well as a copy of Bali Plus!

...put on loads of high factor waterproof suncream (especially if you intend to spend a lot of time in the water).

...swim outside designated swimming areas. Currents can be very strong so swim between red and yellow flags.

...drink a lot of bottled water and eat a lot of fresh fruit - do your body a favour.

...do drugs! It could lead to death penalty. Enough foreigners reside in Bali in courtesy of the Govt. prison service!

...try not to step on offerings in the street (walk around them). ...be careful with your belongings at all times. Crime is on the increase and can ruin your holiday. Cases of handbag snatching have been reported so please leave important documents in your hotel safe (carry photocopies) and wear your bag across your shoulders! ...respect the slow pace of processions. If stuck behind one don’t honk your horn! ...haggle when buying (except on price-tagged goods). ...buy ‘lmmodium’ to relieve bouts of Bali belly.

...touch people’s heads - it is very offensive to Hindus. ...enter a temple during menstruation. Sorry ladies! ...forget to add salt to your food and to drink lots of water-you probably sweat more here than at home. ...worry too much about the ice - it’s government quality controlled in established bars and restaurants. ...forget to look and listen while crossing the road. Cars may stop, motorbikes may not! ...forget to reconfirm your flight 72 hours prior to flying.

...have a great holiday! 110

A Word of Advice ATTENDING CEREMONIES:

Remember these are serious occasions and should be treated as such. Religious guidelines: • Always wear a sarong and sash. • Do not walk in front of people that are praying. • Do not use a flash camera or point your camera into the priest’s face! • Never sit higher than the priest or the offerings. • At cremations, do not get in the way of the attendees - however important that photographic opportunity is! • Women are not allowed to enter temples during menstruation. N.B. When attending Special Ceremonies or Anniversary Celebrations as a guest or onloocker, small donations are gratefully received. Your donation will help in paying for the offerings, and upkeep of the temple.

DANGEROUS SPORTS:

Make sure you either have personal insurance or travel insurance that will cover any accident.

DRIVING:

In Bali, always expect the unexpected, always keep your eyes open and your mind on driving. Beware of motorbikes! It is best to rent a car with full insurance as this will save time and money if you are involved in an accident. You must use a helmet at all times and have a valid license.

MONEY CHANGERS:

Be very careful when changing your money. Always check the rate of exchange and commission (if any). Most importantly, always count your money before you leave the premises and, if you can, bring your own calculator as the ones used by some places can be a little ‘inaccurate’.

PETTY CRIME:

There have been a few cases of handbags being snatched after tourists have cashed money at Banks or Money Changers! Put your money away in your ‘burn-bag’ or hold onto your hand bag tightly! When changing large amounts of money please check each note carefully as there are a number of (noticeably) fake notes in circulation. When trying on garments do not take your jewellery off and leave it lying around - give it to a friend or leave it in the hotel safe. When at a spa - use the jewellery box or locker provided for jewellery.

SWIMMING IN THE SEA:

Currents and undertows can be strong. Always swim between the red and yellow flags and don’t swim too far out! Please, do not leave your belongings unattended on the beach.

Thank you for respecting these suggestions.
